ROBERTO BUZZOLAN Roberto hails from Florence, Italy and was just 11 when he got his first camera. He set up his bathroom as a dark room; his mother was unimpressed. He came to professional photography via an arts degree, the fashion industry and avantgarde window-dressing at the fabulous Luisaviaroma department store. Roberto came to NZ in 1992 and had various studios around Auckland before moving to Matakana eight years ago – suddenly he was planting olives and hunting pigs. He has four children and is hoping to go back to exhibiting his work some time soon.

The quiet farming community of Whangaripo Valley is an unlikely spot for one of the world’s biggest motorcycling websites. But local Chris Hunter is considered by many to be a global expert on custom motorcycles. However, less than a decade ago he’d never ridden a bike. It’s all down to three things, reckons his wife, Junction editor Kathy Hunter: “His inbuilt appreciation of design, the way he soaks up information and his crazy work ethic.” Brought up in small country town in Wiltshire, England, Chris had a lot to deal with as a kid. He was the victim of a medical accident which resulted in profound deafness at the age of two. He pulled a fresh pot of tea off a table which scalded him severely; the wrong antibiotic during the treatment damaged the nerves in his ears. A number of other burn victims at the time experienced the same dreadful result. His parents got him into speech and lip-reading therapy rather than sign language, and Chris credits this decision for the professional life he’s led. Before he started Bike EXIF, he was in advertising for over two decades; more than half of that as an award-winning creative director. Anyone who knows him would never think of him as disabled – the idea is almost laughable. In the late nineties, he met his wife Kathy one New Year’s Eve in a bar in London’s Covent Garden. “Kathy inveigled me into coming back here with her,” he says. “I didn’t know that going to New Zealand is like Hotel California—you can check out, but you can never leave.” “In reality, it was the best thing she could have done at that point,” he admits. “The work-hard, party-hard culture in London was becoming a health hazard.” They had three children, all three years apart, in Pt Chevalier and Laingholm, then work took them back offshore. During a four-year stint in Sydney, Chris bought a Vespa for his commute. He loved being on two wheels, and began to pay more attention to motorcycles. After passing his full licence test, he upgraded

from the Vespa (which he still has a soft spot for) to a much more substantial machine—a beautiful white Moto Guzzi V7. Surfing the net to satisfy his new passion, he noticed a niche in the market big enough to drive a truck through. “Custom bike sites all seemed to be about blinged-out, garish choppers,” he says. “But there was a growing movement for lighter, faster customs, inspired by the Norton and Triumph ‘café racers’ of the 1960s in England. This was already big in Japan, and spreading to Europe and Australia.” That was 2009. Sitting at the kitchen table after work, Chris taught himself everything about blogs and how they worked; from the design and coding to writing (his particular strength) and search engine optimisation. Chris knew that the sort of people who liked these bikes would also be picky about design. Photography was also critical, so he called the site Bike EXIF. (EXIF data is the information attached to every digital photograph, which tells you about the camera it was taken on and which settings were used.) Chris loved the buzz of Sydney, but Kathy grew homesick for rural life. So the family became part-time members of a 300ha farm cooperative an hour north of the city, on the edge of a national park. It was here that Chris had his first taste of farm life, animal husbandry and physical labour – chainsaws were a revelation! When it was time to move back to NZ, it was he who insisted they move to the country. He set about turning Bike EXIF into a thriving business driven by advertising and sponsorship income. Today, the site has become the go-to bible for custom fans everywhere. It now averages over two million page views a month, with a cult following in the USA, UK, Germany and France. The social media numbers are equally huge: over 400,000 Facebook fans, 250,000 on Instagram and a whopping 1.9m followers on Pinterest. (That’s nearly ten times as many as Oprah.) In the festive season, the annual Bike EXIF wall calendar is regularly the #1 moto publication on Amazon.


Chris has also edited both editions of The Ride, a bestselling custom motorcycle coffee-table book from the Berlin art publisher Gestalten. (The New Zealand launch of the first book was at The Vivian Gallery in Matakana, as part of a high-end bike show curated by Kiwi bike racing legend Graeme Crosby.) Most recently, he’s launched an online shop – no bikes for sale, but a hand-picked selection of the most functional and beautiful gear any biker could wish for. On their lush 5 hectare lifestyle block in the Whangaripo Valley between Matakana and Wellsford, the couple raise half a dozen beef cattle every year. Kathy and teenage daughter Maddy ride horses over the neighbouring farms, younger son Tom thrashes his motocross bike around the paddocks, and there’s a motley collection of hens in the orchard. Eldest daughter Alex teaches drama at local schools. Chris is a slave to his dog, a blue heeler, and also adores their two cats, who return the sentiment. As well as the Moto Guzzi, he owns a beloved 1970 Series II Land Rover, and spends hours on a John Deere ride-on with a beer in hand, mowing the edges of their 800m driveway. While country life is enjoyable, it’s nicely tempered with regular invitations to attend, sponsor or judge motorcycle events around the world, with ‘Wheels and Waves’ in Biarritz in the south of France a regular stop on his global itinerary. He still literally works from the kitchen table however… usually with a cat on the keyboard and the dog at his feet. www.bikeexif.com

Natalie Keane is a stylist, costumier, milliner, food stylist and florist. She lives in a cottage in Whangateau with her two children. What was your first job?

Once I’d finished that I was lucky enough to get a few great jobs in a row: Aalto Country Colours in Newmarket, which honed my eye for colour; ECC Lighting in Newton and the Boiler Room with its amazing industrial furniture.

Favourite pieces of work? The remake of Katherine Mansfield’s Bliss in 2011 was really good for hats. We found a family who did bird taxidermy, they supplied the whole pelts. I made this over-the-top Edwardian hat using a whole peacock pelt. Then there was the dreamy week when I was commissioned to make botanical head-dresses – a magical mix of floristry and millinery. And there’s been some very satisfying food styling in ads along the way. I’ve just finished making a hat for the remake of Goodbye Pork Pie, an emerald green felt cloche, which I’m really looking forward to seeing on screen. I have plans in the pipeline for my own range of hats and hopefully lots more fantastic styling along the way. It’s very good for the soul. Natalie’s workroom is full of hat blocks, fabrics and feathers but she’s also hugely preoccupied with providing healthy food for her growing kids. There are homemade preserves, bread stuffed with seeds and nuts and a lively brew of kefir (“more probiotics than any capsule!”) on the kitchen bench. TE WHAU WALKWAY

Matakana’s stylish new dental practice has started very well indeed. The delightful young dentist, Dr. Vivek Jain, is from Kolkata and studied dentistry in Bangalore (now Bengaluru) in Southern India. He came to New Zealand in 2011 (an aunt already lived here) and completed his studies in Otago five years ago.

The brand-new Te Whau walkway in Snells Beach has just opened with a fair degree of ceremony by various happy council people and the odd MP. Costing $225K and taking four months to construct, it links the bottom corner of Goodall Reserve (the huge park behind the Snells Beach Library) to Dawson’s Landing, where the boat ramp is. The walk meanders along an arm of the river; it’s an excellent gravel path with a number of bridges and steps. Native planting has been carried out alongside the path since 2010. Could a modern-day, New Zealand-made ark be a contender for solving the current housing crisis? Designer and inventor Coll Bell thinks it’s a possibility. He’s created a portable, self-contained house that can be floated on pontoons and can be taken fully off-grid. And due to the fact that it’s technically a boat (although this is currently under debate), it may not need council consent.

Fast-forward a few years, and Ark Designs have just gone into full production. Coll, as he does, has moved onto design other stuff, but has handed the reins of the ark business to his daughter Mel and son-in-law Anton Parker. There’s a certain serendipity to the fact that this couple are now involved with an ark, since they met when they were both crewing super-yachts in the Mediterranean.

A few years ago, Coll was being driven nuts by the price and the amount of paperwork involved in getting a sleep-out consented. A boat-builder by trade, he conceived a cunning plan. If boats don’t need consent when they’re on your property, it would follow that if you were living in something that floated, or could float, then it shouldn’t need a council consent either. He went and got a pencil.

It was a ridiculously rock’n’roll life they had back then. Anton has raced and managed yachts everywhere from Alaska to Antigua, from Italy to Japan. They worked as a team for much of that time, with Mel cooking and Anton sailing. They’ve worked for Roger Taylor from Queen and entertained Larry Page from Google.

They still occasionally get calls to come and hit the decks, but Mel and Anton’s life now is a far cry from the seafarin’ one. Based in the Whangaripo Valley between Matakana and Wellsford, they now have gorgeous, five month old baby Lilly. They’re on a small piece of land with an excellent vege garden, some sheep and chooks. And the new business is starting to bring in calls from all over the country; wherever people want some extra space that has character and integrity, and doesn’t come with screeds of expensive paperwork to deal with. The Ark has impeccably nautical styling and terminology, right down to the head, the galley and very cute circular hatches. Round windows – what is it about them? The whole thing is lined in ply – stylistically speaking, it’s very now. The base rests on large pontoons, which can be used for either flotation or water storage. And it has to be said: these Arks do float beautifully. There are two sizes, the standard or the mini, and plans are underway to create an even smaller treehouse or garden playhouse version, too. In fact, an interested party is heading to the States very soon to meet with Pete Nelson of the Treehouse Masters TV series to inspect special clamps they’ve developed to hold treehouses to their designated trees.

The standard Ark is 4.8m x 6m, the complete version of which can include a compact bathroom, a galley kitchen (with natural macrocarpa bench), living space and a mezzanine floor that fits a queen mattress, reached via a retractable loft ladder. It can be fully self-contained: a solar panel used for lighting and water pressure, gas for cooking and water heating and a nil-discharge worm-based toilet system too. All guttering and plumbing connecting the pontoon water tanks to the bathroom and kitchen is included. The Mini Ark is 3.3m x 3.3m – under ten square metres, which doesn’t need a consent at all, and is a perfect cabin for a single or couple. You can opt for just the shell of either Ark only (with interior walls and mezzanine), and install all the interior extras yourself – irresistible bait for a DIY enthusiast. But Coll and Anton have created a perfectly concepted and designed small space, and Anton, a self-confessed detail obsessive, delights in putting it together to the highest possible standard. To Coll’s great satisfaction, the Ark has confounded the council, who have been scratching their heads over how to classify it. In fact, the Ministry of Business Innovation and Employment has been called in to make a judgement on whether the Ark is a house or a boat. Coll chuckles. “They seem to have big problems with all three, especially innovation.” If the Ministry judges the Ark to be a house requiring consent, progress is already being made to create a ‘multi-proof approval’ which will cover the Ark in any situation. There are now Arks in New Plymouth, Tinopai, Helensville and even Pakuranga, with plans for more further afield in Blenheim and Wellington. Coll’s happily involved in carting the basic materials to the various sites in his little truck, meeting Anton there and helping with the build. He’s still hoping that the Ark will prove to be a boat, and has a twinkle in his eye when he says, “Anything which finds a way around Len Brown’s Revenue Making Activity is a good thing.” Revenue Making Activity? “Oh, some people call it a Resource Management Act.” www.arkdesigns.co.nz

“I enjoy using my traditional blacksmith skills, working with iron to produce fine personalised pieces for my clients.” So says Mike Johnson of Brocton Forge Ltd who has been working with iron for over 35 years. He honed his blacksmithing skills following his four year boilermaker apprenticeship in the UK back in the seventies. Over the years Mike has developed a passion and specific expertise in working with all things metal. Mike moved with his family to New Zealand 18 years ago, initially settling in Invercargill. He quickly developed a strong client base and a solid work reputation in the Queenstown and Wanaka areas. It was a natural progression to relocate with his family to Central Otago where he continued to build his business. “I am fortunate that I’ve never had to advertise or require logos on my work vehicles – it was all word of mouth.” With their children grown up and Mike’s eldest son attending university in Auckland, Mike and his wife decided to seek a new and different life in Warkworth. Mike’s work is always varied, spanning everything from candlesticks, iron doors and furniture, to ornate balustrades and chandeliers. “While blacksmithing can be seen as traditional and from the past, the modern blacksmith has to adapt and meet the needs of the times,” says Mike. “Some of my work is very artistic.” There is a thriving market for high-end, bespoke metalwork, and people come to Mike from throughout NZ for something a little different. Helping people understand what works best with metal and interpreting their ideas is a large part of Mike’s work. “I enjoy being able to work with my clients to ensure that they are getting what they want and, in most some cases, ultimately getting a unique piece of work.” Mike is currently working on automated iron entrance gates. “I design and manufacture the gates and have a strong working relationship with an electronic automation expert who provides me with high-quality, reliable electronic parts sourced from Italy.” Despite a busy work schedule, Mike is trying to find time to indulge his passion for artistic iron sculptures and art pieces for which he has some great ideas. Four years ago, a number of small businesses got together to discuss how they could take their products and services to the growing wedding market on the Matakana Coast. They mostly worked from home, and thought it’d be great if they could somehow present themselves as a group to potential clients. The Weddings Matakana Expo was created to do just that.

Fiona and Melita of Destination Matakana organise and host the Expo at the Matakana Country Park. They’ve created a website and a print directory showcasing local products and services for anyone planning their wedding on the Matakana Coast. St Leonards, Matakana St Leonard’s Anglican Church is situated in the heart of Matakana village just opposite the Four Square. White walls reach to a sky-blue roof, white roses grow in the quaint, stone-walled church garden, and the trees beyond are currently putting on a fiery display of autumnal colour. Whangateau Hall Whangateau Hall sits in an idyllic spot along Leigh Road surrounded by acres of green fields and just a stone’s throw to the water. The dramatic tidal shift here makes for a serene setting. Since being built in 1889, this hall has hosted many fabulous events and is a treasured community icon. St Michael and All Angels Church, Leigh Leigh Church, officially St Michael and All Angels Church, can be found atop a hill along Hauraki Road, right next door to Leigh Library (one of the cutest little libraries around). Warkworth Masonic Hall Warkworth Masonic Hall is in the centre of Warkworth on the edge of the lovely Lucy Moore Memorial Park and the Mahurangi River. It was built in the Greek Revival style in 1883 and is a Category 2 Historic Place. With a maximum capacity of 100, hireage by the hour varies from $8.80 - $11.00. Mahurangi West Hall Mahurangi West Hall is a hive of activity and standing proof of locals pulling together with a common goal of restoring and renovating. This pocket-sized hall was built in 1885 and seats a mere 30 (more at a squeeze standing up), but the large marquee site overlooking the picturesque Pukapuka Inlet allows for another 200 or so guests. Puhoi Church In the heart of the historic Puhoi Village you will find the beautiful Puhoi Church, officially named the ‘Church of Saints Peter and Paul’. Constructed by skilled Bohemian immigrants over 130 years ago, it’s one of the oldest Catholic churches in the area. It will seat 157 people, plus 40 ‘young and nimble’ up in the choir loft. Pakiri church + War Memorial Hall Pakiri Church is a lovely old Methodist church built in 1926 and gifted to the community about 10 years ago. It holds 50 people. A donation towards the restoration is suggested in lieu of hire fee - others have paid $150-$200. With no electricity or toilets, many parties choose to book the memorial hall across the road too. This can seat 120 comfortably, with a maximum capacity of 150. Full hireage is $300 plus bond of $250. Wild and windswept Pakiri Beach is a two-minute drive away – perfect spots for wedding photos abound. seven Insider Tips for Brides To Be Having worked on over 300 hundred weddings I can tell you that most wedding day blips can be easily prevented. Here are seven of my top tips for making sure your wedding day runs smoothly. 1. Have a fall girl (or guy). Choose a friend or family member or hire someone to cover the big day. Make sure they have all your suppliers’ names, contact numbers, and payments made so they can sort any issues without worrying you. 2. Research your day. Check the tide, sunset time, weather forecast and any other big factors that may book out suppliers and accommodation. 3. Book it in. Google Calendar is your friend - book your appointments with alerts so you know you won’t forget the dress fitting or cake tasting.

4. Double-check your bookings. Don’t leave anything to chance, re-check delivery times, addresses, and order details with all suppliers two weeks out from the wedding. 5. Shop local. That way help will be close at hand if you need it and delicate items like flowers and cakes will look fresh. 6. Meet your photographer, celebrant and venue liaison in person. It is so important to have key people who can put you at ease on the day. 7. Relax and enjoy your day. Everyone is there with love and support for you both. It’s Murphy’s law that something will go wrong, don’t let it get to you, and you will have the best day of your life.

Writing your own vows can be overwhelming. The best place to start is to read lots of different vows. You can find heaps of examples on Pinterest and Google. As a celebrant, I also provide couples with sample vows. You don’t have to start from scratch - borrow your favourite lines and remix them. Or use an inspiring line to get started then write the rest yourself. Think about including these three things in your vows: what you love about your partner, the promises you are making them, and how you see your future together. It’s OK to be funny, a lighthearted line or two adds some laughter and personality, just make sure to end on a heartfelt note. Keep it short and sweet, this will help relieve the nerves and give more weight to your words. If you have other things you would like to be said this can be incorporated into the rest of the ceremony. On the day focus on your partner and make eye contact, don’t forget to breathe and take a moment to feel the love. October to December: Gorgeous peonies bloom for only three short months of the year, so if you are wanting these delightful blooms in your bouquet you need to get married between mid-October and midDecember (although the season does sometimes extend into December). These gorgeous big headed blooms come in whites and lemons, soft blush and bright cerise pinks, rich wines and gorgeous corals. Highly sought after blooms so book them early.

2. December to February: Lots of lovely foliage abounds – eucalyptus, ruscus and silver dusty miller. They can look lovely with sea holly as seen in this Bohemian beach bouquet including the last of the summer peonies, hydrangea and kangaroo paw.

4. April to June: Roses are still in plentiful supply with lots of gorgeous colours including David Austin roses. Gorgeous lisianthus in pinks, green, purple, white, peach and antique plum are still around, so make the most of these. The splash of antique plum in this bouquet works beautifully with the touch of peach in this gorgeous NZ rose, Campanella. The full petals have ruffled edges – stunning!

5. June to August: We love to make flower crowns and here we have lovely spring flowers including anemones, ranunculus, berries, soft spray roses and viburnum flowers. These few winter months are generally quieter times for weddings, but a winter wedding can be so gorgeous with berries and roses in your bouquet. Spring flowers too are making an appearance: tulips, freesias, daffodils, stock, and anemones. Proteas and leucodendrons are plentiful.

Roses, spray roses, hydrangeas, sweet peas, sea holly, gypsophila, dahlias, lizzianthus, carnations and sweet peas are all in abundance – as well fragrant white gardenias.

3. February to April: Roses are plentiful and range from exquisite David Austin beauties in soft peach to huge Columbian roses available in divine colours all year round (some of these need to be ordered months in advance though). New Zealand-grown roses are plentiful too, also with many colours to work in with your theme. Hydrangeas will start coming in now, in both large and small posy sizes. Dahlias, lisianthus and Queen Anne’s lace are plentiful and so are fragrant tuberoses. 6. August to October: All the spring flowers continue, some with very vivid colours, like the orange ranunculus in this bouquet. Orchids are also around now and are worth thinking about as these can make for an exotic or dramatic bouquet. Flowers available during this time are freesias, roses, tulips, alstromeria, calla lilies, stock, cymbidium orchids and Singapore orchids.

No, I'm not a cake maker – I don't think I have ever knowingly made a cake and I can’t say I'm even a cake eater! My angle is that at the weddings I have attended I find myself not greatly interested in the cake – it’s the cake stand I have issues with. It seems this beautifully crafted piece of sculpture (the cake) more often than not sadly ends up upon a tin-foiled piece of cardboard or a stainless steel stand which would look more suited showcasing a leg of ham!

Now that we’re having weddings at Puhoi House and Barn I’ll be viewing a lot more wedding cakes than most and felt something had to be done! Hence the forming of H&S Hire. First on the list: cake stands. H&S has gone about restoring, designing and creating a series of eleven 14” stands (3 pairs and 5 singles) – all a little different but still with a design ethos that comes under the umbrella of a grand, opulent, English-come-French country house style. Wedding cakes was the brief, but they also make fabulous table centers for flowers or fruit - in fact, anything, really. Champagne buckets? Yes, I have a problem with those too, so they’re next on the list. And then there's the candelabra! Plate stands for hire from September 2016.

Susan Vize at Chocolate Brown says, “Many of our cakes tend towards the rustic and casual – we don’t do fondant icing – but this cake has a vintage feel I think.” We agree – it has an elegant, art deco look to it. Inside all that luscious white chocolate ganache is a surprise – delectable dark chocolate mud cake. “We send these cakes out as ‘blank canvases’ and brides can decide to decorate them further or leave them simple,” says Susan. Sizing is not a problem – the experienced bakers at Chocolate Brown can add separate cakes to feed as many happy wedding guests as you have.

The croquembouche was supposed to have been invented by one-time personal chef to Napoleon, Antonin Carême. He included it in an 1815 cookbook. French baker Christian Herbulot at the new La Patisserie, Matakana has made it one of his specialities. Profiteroles can be filled with crème Anglaise or mousse and can be dipped in caramel or chocolate before binding with caramel filaments. Head pastry chef Amanda Casci says, “We can theme them to order with decorations, and you can make them as big as you like!” Christian once made one nearly two metres tall for Peta Mathias’ birthday.

Yes, you can have your cake and eat it too! This simple, elegant wedding cake is refined sugar-free and gluten-free, yet totally delicious and super-decadent. Amber came up with the recipe when her best friend in England, India Waters (the daughter of Roger Waters from Pink Floyd) asked Amber to make her wedding cake. The cake has three tiers of vanilla sponge made with either spelt or a glutenfree flour blend laced with a little rosewater. Each layer is filled with homemade raspberry and chia jam (also refined sugar-free) then covered with a vanilla and white chocolate butter-cream (which can be dairy-free if necessary). The cake is now a firm favourite with clients.

The new angle on cutting down on sugar is seeing the cheese cake becoming a popular option. The cheeses can be cut in the usual way, then doled out as cheeseboards with special fruits and crackers for each table, or portioned out as gifts after the wedding.

Amber Rose has been a personal chef to Sadie Frost and Gwyneth Paltrow among others. She now lives in Leigh – watch out for our profile on Amber in the next issue of Junction.

The cheeses used for this cake were St Augustine, a very creamy, brie-style cheese, and Saint Malo, a semi-hard, nutty, pecorino style. Whangaripo Buffalo Cheese’s Marin Blue would also be a delicious addition, and a little Mt Tamahunga cheese on top (it’s a pyramid shape) could be cute. Louise M is well known as a highly experienced wedding photographer in Matakana. But she’s now offering a special extra service – a personalised Boudoir Session. “Everybody is beautiful,” says Louise. “With all that time and effort you have put in to looking your best – why not capture the memory with a fine art photo session?” Louise prefers to shoot her Boudoir Sessions with natural light and in black and white; she says that this gives the images a timeless feel. She’ll come to you for the shoot – it’s all about feeling comfortable and confident. “It’s a lot of fun and can also be really liberating,” she says. “I’m very relaxed myself about these sessions – perhaps because I’m Swedish! – and it’s great to be able to bring out the bride’s true beauty in this way.

We can shoot in your own home, outdoors, at a hotel – it’s totally up to you.” Louise says that a clever bride might opt to book a Boudoir Session for when she gets her trial hair and makeup done before the wedding. “You might as well get an added bonus from your investment!” she says. Some brides have a little book made up of their session and give it to their partner-to-be as a wedding morning gift. Louise is happy to offer tailor-made sessions as a hen party activity – shooting the individual sessions separately of course, although, “you could do a group shot as a bit of fun at the end!” she says, with a cheeky twinkle. the top gun of drones - marc herbulot Snells Beach resident Marc Herbulot is a photographer who’s seeing a lot of growth in his business: drone photography for real estate. For homeowners, a fantastic aerial shot is a key weapon in the sales strategy; it’s a treasured shot too – marking memories of a loved home. However, the public can be negative, talking about safety fears and privacy invasion. So Marc took a pro-active approach, cloaking his business in accountability and professionalism. Unlike most drone operators who fly under a Part 101 Civil Aviation course, Marc took a leap further, achieving Part 102 - the only photographer in the greater area with this hallmark. Blood, sweat and tears, he reckons! But Part 102 gives him commercial capability. He can now fly above 400 feet, has extra rights around permission to fly, and a full suite of insurance. All added strengths to Marc’s service, but for him the key benefit is safety, “A drone is an aircraft – things can go wrong, skill is involved. Having this certification makes me accountable to the CAA. I’m required to fill out forms, file sketches of my flight plan – basically be as buttoned-up safety-wise as I possibly can, whilst still capturing a creative shot. Her business, Shona Stevenson Makeup Artistry, was established in 2010. After graduating with excellence from the Cut Above Academy in Auckland, Shona knew she wanted to specialise in wedding makeup. And she wanted to do that here, in the region she knows and loves. batch10 It was two years ago after a fishing trip when Brent Robinson and his mate Gordon McKerchar first had the idea of putting honey into bourbon whisky. They went right ahead and mixed some up – it wasn’t half bad. It took a while, but they finally came up with the best mix using raw, single apiary honey from the backwoods of Puhoi. It’s a dark, smooth honey from multiple flora, including kahikatea, rewarewa and pohutukawa, as well as manuka. “It’s one of the top three in the States,” says Brent of the bourbon itself. “But it’s also top secret. I can say that it arrives in big oak barrels from Kentucky.” Bourbon is currently one of the fastest-growing spirit markets in the world. There are other honey bourbon products out there, but most tend to use a flavoured syrup rather than actual honey. There’s a sediment in the bottle – it’s the raw honey binding to the oaky pigment in the bourbon. Brent says, “We do a filtered version, but most people find that it’s just not the same. They just shake up the unfiltered bottle; they love the velvety warmth.” Testing hundreds of combinations for the perfect blend, they hit the jackpot with the tenth batch of the final infusion. They tossed it around among their friends, who called it, for want of a better name ‘batch10’. It stuck, and people raved about it. Brent and Gordon started to wonder if they should market it. They took a punt: lucked out on the award-winning, New Zealand-designed bottle, and put it out there in a few shops just before Christmas 2015. It was gone in a flash. The team is now quite excited. They’ve gone into full production. At the end of May, batch10 Honey Bourbon sold into some major stores and restaurants, and is well on its way to becoming the next big thing. • 1¾ cups fresh cream • 500g mascarpone • 2 cups espresso coffee • 26 x sponge finger biscuits • 1 cup batch10 Honey Bourbon • Cocoa powder for dusting Preparation 1. 2. 3.

Place the cream in a bowl and whisk until soft peaks form then fold through the mascarpone and set aside. Combine batch10 Honey Bourbon and espresso. Quickly (or not so quickly if you like your batch10 Tiramisu a little more generous with liquid - there’s nothing worse than a dry tiramisu) dip both sides of the sponge fingers into the espresso mixture and use them to layer the base of a mid-sized serving dish. Spoon half the cream mixture over the layer of fingers (not your own fingers… the ones in the dish) and then dip the remaining sponge fingers before placing a second layer upon the cream layer and spooning over the remaining cream mixture. Dust the top with cocoa and refrigerate for at least an hour prior to serving. For best results refrigerate overnight and serve the following day.

The question remains as to what you do with remaining espresso/batch10 coffee blend – well you drink it of course. It’s delicious.

Puhoi Coffee There’s a boutique coffee roaster situated in the historic village of Puhoi. It was established in 2007 by Daphne (left) and Darryll Hollamby and has an emphasis on organic, fair trade practices. “We use a blend of 100% Arabica beans from some of the best coffee regions in the world such as Ethiopia, Indonesia and Brazil – all sourced from farmers using organic practices and bought at economically sustainable prices,” says Daphne. “We produce both medium and dark roasts, using a hot air roaster.” Puhoi Coffee is a smooth, well balanced blend. Plastic lasts forever, that’s why it is so useful - and yet nearly 60 per cent of plastics in New Zealand are used once as packaging, and then chucked away. This single-use plastic is the scourge of the oceans - nine out of ten seabirds have eaten it, more than 260 species from fish to whales to sea worms are affected by it and it’s responsible for 72 per cent of rubbish on our beaches.

I would give the Ecology Trail (4km) at Tawharanui Regional Park an eight of ten for these things alone: white sand beaches, rocky coastline, blue-green bays, native forest and views of the spectacular outer Hauraki Gulf. However, what really sets this trail apart for me is the section from the coastline and up through the valley to the paddocks at the crest of the hill – the Basilica of Bird Song.

Plastics are made from a mix of fossil fuels and chemical additives, including BPA. Many are known cancer-causers or hormone-mimickers (creating birth defects and fertility problems), and yet everything we buy comes wrapped in it.

It’s easy to just keep strolling through this section, chatting to friends or family, but I urge you to STOP, LOOK, LISTEN! In this small valley, and through the cathedral of trees at its head, you will hear and see the most beautiful bird life.

Plastic Free July started in Australia in 2011 and has spread to 85 countries. It offers punters a chance to attempt a different kind of diet; a life with less.

Go quietly, whisper, stop and wait – the birds will come to you. In the the 15-odd minutes we had between other walkers, we saw and heard bell birds, tui, fantails, saddlebacks and a half-a-dozen others I couldn’t identify.

It’s the 50th anniversary of Leigh Volunteer Fire Brigade this year. It’s a pretty significant amount of time to have been fighting fires, and they’ve got something else to celebrate as well. Several of them have recently scored significant wins in the grueling Firefighter Sky Tower Stair Challenge. Errol Murray won the ‘donned’ (wearing full kit) category overall. Carmel Simmonds was the second woman in the same category and first in her age group (Grand Masters). Another member, Martin Lefley, was second in his age group (Grand Masters) in the donned category. It’s a fairly mind-boggling feat for most of us. Donning their full kit, which weighs in at 25kg, each firefighter must run up all 51 flights of Sky Tower. “It gets pretty gross in there,” Errol admits. “A few hours into it, those stairs have got blood, sweat and tears on them – and there’s always a few that throw up towards the top, too.” The Challenge has been going since 2005 when 88 firefighters raised $17,500 for Leukemia and Blood Cancer NZ. This year, on 28 May, 850 firefighters raised an incredible $1,161,000. The Leigh crew can now go back to thinking about how to raise a final $10K to pull together a renovation of their station in its 50th year. The décor hasn’t changed since the seventies and the kitchen cupboards and loos are actually starting to fall apart. It’s long overdue.

Robbie Torkington is the longest-serving member of the Leigh brigade; he’ll be getting his double gold star this year for an amazing fifty years of service. Stephen Paddison, the Chief Fire Officer, has held his position since 1995. Barry Davies and Tony Enderby are also long servers; Tony’s writing a history of the Leigh Fire Brigade at the moment. The youngest volunteer, a local 16-year-old, has just joined. “We’re not too badly off right now for volunteers and we have a wealth of experience, but we do need more young people coming up through the ranks to train,” says Deputy Chief Kevin Lawton. In addition to the usual car crashes and cliff rescues (the Leigh crew are the area cliff rescue specialists) the brigade were involved with a large bush fire on the Tawharanui Peninsula at the end of March. They always get at least three defibrillator scenarios a year – they’re all fully trained in CPR and stabilisation of patients. And with the amount of time it takes for an ambulance to get to Leigh or Pakiri it’s nice to know that if you’ve dialed 111, you can request ‘first response from Leigh’ and have the fire crew there quick-smart. They’re all about community involvement though, and Errol pulled off a doozy this summer. He masterminded the inaugural Whangateau Raft Race, which brought the whole community together for a brilliant event at the beach. “The Matakana Fire Brigade won this year, but next time we’ll sort them out,” says Errol, with a mock steely gleam in his eye.

Matakana artist Jenta Griffin has gained third place in the Fieldays No. 8 Wire National Art Award with Pater Prime – a 2.75m high wire sculpture which is part man, part bird. The award challenges artists to create innovative artworks using at least fifty per cent No. 8 Wire. Established in 1997, it’s partnered by Waikato Museum. Well-known sculptor Brett Graham judged the awards this year. He said, “Pater Prime is an imposing piece due to its size, and has a sense of freedom. Given the inflexibility of the wire, it’s impressive that Jenta Griffin was able to give his work such a feeling of movement.” He added that the bird-man concept, as well as being mythical, resonates with the popular culture of super-heroes. Jenta works from home in Omaha Valley Road. He was brought up in Freemans Bay, opposite Philippa Blair and with Tony Fomison next door. He remembers coveting Lego but it was far too new and exotic. Instead he crafted stuff from old bricks, clay and the broken glass from car windscreens. “Treasure,” he says. He’s a builder by trade to pay the bills these days, but even that is a creative outlet. He now works in a range of materials including bronze, wood, paint, ceramic and found materials, but it’s his first time working with wire. “It was hard at first,” says Jenta. “I nearly gave up, but got really angry with it instead. That worked. Then I calmed down and figured out ways to use leverage to get the curves I wanted. I had pretty sore hands for a while.” He holds them up, nicked and scarred. Jenta believes that myth and legend are often overlooked within our rational society, and his work references deities, self and the nature of beings, both human and animal. And the title? Pater is Latin for Father, and also a reference to deities; and prime is of course a number being only divisible by itself and one – but also a nod to the concept of ‘primal’. “The winged man is a primal

When we last visited botanical stylist Annie Oxborough, she had settled in to a new barn home just outside Warkworth. Well – she’s on the move again, this time to the middle of Matakana. Very soon, she and her partner will be taking over a beautiful old villa on ten acres, right opposite the Stables. “I’m ridiculously excited!” Annie says with characteristic enthusiasm. She’s landed a contract with the Stables to be their official in-house stylist and provider of floral deliciousness. She’s over the moon about it. “I’ll literally be able to trot over the road with armfuls of flowers and gorgeous wedding-y stuff. Too easy!” Meanwhile she’d love to find a buyer for her current house in Viv DavieMartin Drive, Warkworth. She has a soft spot for it and would like it to go to someone who’ll appreciate it. “This place is perfect for someone like me who needs a separate studio and peace and quiet to create,” she says. “There’s a huge man-cave garage for the bloke in your life, too. It’s five minutes out of town but you can’t hear anything but the birds. There’s a nashi pear hedge, feijoas and a communal persimmon orchard – hello! And it’s a cool community out here.” The property is on a full hectare. The sunny and stylish black barn they’ve been living in has three bedrooms, but they’ve had architect’s plans drawn up to build a stunning home at the top of the hill, with views across Warkworth and Dome Valley. The Matakana Pub: Their quiz night happens every Wednesday (not in school holidays) at 6.45pm and it’s free! Fergus Riley is the quizmaster (and also part-time winter barman – in summer he’s a farmer). He would call himself a ‘spermologist’ – as opposed to a ‘spermatologist’. The former, he tells me, is the Latin word for someone who collects trivia. Or seeds. The latter studies… well, you get it. “Everyone’s super friendly,” says Fergus. “Come on down – I’ll just stick you in a team if you don’t have your own. Too easy.” There’s a $40 pub voucher for first prize, but – get this – the other teams go into a prize draw for $50 off their next quiz night’s food. Cunning plan.

Now that winter’s settling over us with its snuggly duvets and roaring fires, it can be hard to rev up and get out there. Leigh Sawmill Café: Out at Leigh they take their quiz pretty seriously. It’s on the third Thursday of the month, $5 a head, teams of six and the pot is halved between the winners on the night and the eventual championship game. There are teams that have been going for years. Revered quizmaster Petrus van der Schaaf writes all his own quizzes, and comes up from Auckland to do it (his daughter lives in the area so he’s nearly a local). He eyeballs his demographic and queries accordingly. “I tend to write for an age-group of 30-60,” he says. “It’s a classic mix: sport, geography, history and what I like to call general ignorance. 6 August Springboard Community Works in Snells Beach is one of those exceptional community resources that not many know about. They work with at-risk young people – supporting, mentoring, training and counselling for the best possible outcomes. Their annual fundraiser is coming up: an auction, dinner – and live music donated by supercool dancefloor-fillers, Whitechapel Jack. It’s at Ascension Estate on Saturday August 6, from 6pm onwards. 24 June - 15 July Belinda Barnao Art Matakana is now showing paintings by NZ artist Belinda Barnao, who’s recently moved to the area. Belinda has, by necessity, developed a style of painting that’s all her own – since she is legally blind. At 21, the promising artist was stricken with a rare eye condition, Stargast’s Disease, which robbed her of all but some peripheral vision. Despite this, she enjoys a healthy art career, much of it in Australia. Belinda works fast and boldly, but there is always room for what she calls ‘mysterious’ input. www.artmatakana.com
