Foodie Retreats with Corey Campbell Words Kathy Hunter

Globally-renowned chef Cory Campbell wasn’t really equipped to deliver his own baby roadside at 9pm in Matakana, a week after 2020’s first lockdown. But he rolled up his sleeves and got on with it, and although he felt the presentation could have been better, eight months later both his wife Kim and chubby Arlo seemed unscathed. The family, including two-year-old Aiden, had been here just a few months then. Cory’s from Newcastle, north of Sydney and a keen surfer, so the Matakana Coast was a big drawcard. Kim is a naturopath originally from Nelson; they found Matakana while on holiday by googling ‘Farmers' Markets’. They came, they ate, they were hooked. Cory has worked as executive chef in some of the best restaurants on the planet, including Noma in Copenhagen, Vue de Monde in Melbourne, Bangaroo House in Sydney and Kokomo Island in Fiji. As a 17-year-old apprentice chef at Newcastle’s TAFE, Cory was influenced by the Italian side of his mum’s family. “It was the joy around food at those family gatherings I loved, and I quite liked cooking up feeds for my surfing mates, too,” he says. But a dinner at Sydney’s Rockpool restaurant was an epiphany. “The plating, the theatre, the surprise factor, just blew me away. It was a whole new level.” In his early twenties Cory backpacked

through Europe, collecting food experiences. In 2004, aged 23, he began cooking at an Italian restaurant in Copenhagen, near the recently-opened Noma. He was befriended by Noma’s young head chef René Redzepi, and when Cory had visa problems, René got him a job at ‘Noma’. To date Noma has been voted best restaurant in the world four times for its reinvention of Nordic cuisine and almost spiritual respect for ingredients and producers. Cory revelled in that philosophy for five years and even today says, “I’m just a cook – it’s the fishermen and farmers passionate about their produce who are the real hard-working heroes.” By 2009 Cory was back in Melbourne, helping Shannon Bennett to transform his epic restaurant Vue de Monde from traditional French to contemporary Australian. He introduced indigenous ingredients, sent degustation guests home with breakfast bags and introduced a commitment to zero-waste and sustainability that banned single-use plastics, including (gasp) clingfilm. Cory met Kim here; as host, she was the all-important first contact for guests. After six years at Vue de Monde, Cory stepped aside, and Kim changed direction to study naturopathy. Matt Moran convinced Cory to become executive chef of his three restaurants in Bangaroo House, where he

wowed Sydneysiders with his boundarychallenging food. But Sydney was just too busy for Cory and when the position of executive chef at luxury Fijian island Kokomo came up, he and Kim thought, ‘perfect!’ Cory rejuvenated the menu and philosophy, while Kim offered wellbeing options. All was rosy until they came here on holiday pre-Covid – and fell in love with Matakana. There’s been some welcome family time for the couple with their boys over lockdown. Cory has helped his mate Ben Bayly with his new restaurant Ahi at Auckland’s Commercial Bay and cooked some private dinners, and Kim’s new naturopathy practice is now flourishing. Now the couple has begun a new venture together: curating luxury retreats including yoga, swims, naturopathy workshops and of course, beautiful food. After a global rollercoaster spanning nearly two decades, Cory says, “We’re so lucky to have landed in such a beautiful place with creative, likeminded people and amazing produce around us. As well as Kana Retreats and my private dining, I feel like there are some exciting opportunities for collaborations and bespoke events around the area.” Bring it on. www.kanaretreats.com corycampbellchef@gmail.com

Wild Honey Stacey Johnston’s first introduction to beekeeping, was assisting her mother, with a net table cloth wrapped around her head, and socks on her hands!

“Mum had five or so hives in the backyard for years, and this obviously developed in me, the love and appreciation for bees,” Stacey Johnson says. “Pete and I have had beehives in our backyard for 25 odd years, while we brought up our family of four children in Waitoki. We were keen hobbyists, who loved honey and nature, with no real intention of ever becoming full time Beekeepers, let alone having a sustainable business from selling honey!” Mahurangi Honey started about five years ago, when Stacey was made redundant and decided to sell their excess honey at the Warkworth market on a Saturday. “The interest and feedback was so encouraging, we decided to increase our hive numbers and give it a go! Pete kept his building business going, and I picked up other work, while we set up our Beekeeping business with our own certified extraction room in the basement.” This gave them complete control of the purity and perfection of their honey products from start to finish - building the hives, queen breeding, harvest, separating the blends, bottling, marketing and finally sales. The business has now been self-supporting for two years, and they say they are forever learning and developing new products. Finding a better solution than the plastic

honeycomb boxes has had Pete playing around with ideas, and inventing a flax framed shell, which are placed in the hives. “While these look beautiful, we are not sure if they are viable on a semi commercial scale!” they tell us. “I love the fact that we manage to have very little waste. Everything is used, and the byproduct of the honey harvest is particularly valuable.” After extraction in January, the bees clean the wax scrapings, which are then melted down and turned into beautiful healing balms, wood and leather polishes and candles. Pete washes the sticky leftover wax cappings, making a honey water, which he then ferments with a mead yeast, giving an amazing alcoholic drink that also serves as a tonic. ”Our only waste product is the plastic film wrapped around the pallets of jars and this we roll up and save!” Being artisan beekeepers gives Stacey and Peter the advantage of having a unique product that is pure, raw and unheated. ”We believe in handling our bees gently and ethically, leaving a surplus of honey for winter, using organic methods for mite control and keeping our hives close to home.” Most of the apiary sites are situated on the Mahurangi West Peninsular. This reduces both the food carbon footprint and the risk of catching AFB disease from other beekeepers travelling from distant high risk areas.

“The raw honey is really what it's all about for us - it's outstanding in flavour, purity and health benefits. Our specialty honey is the Pohutukawa and this year’s batch is as white as milk, the purest we have ever seen! Our Pohutukawa honey is delicate and salty sweet and loved by children. The public feedback motivates us to continue on this buzzy allconsuming lifestyle of beekeeping, which is certainly not what we expected to be doing in our middle age years!” The couple believe in supplying local outlets, supporting Farmers’ Markets and keeping their Certified Manuka prices realistic and affordable. “With the Covid climate impacting the way people shop,” says Stacey, “I have been really heartened to see New Zealand supporting small business and shopping locally.” While the beekeeping lifestyle has had its highs and lows, Stacey and Pete have now settled into the reality of running an artisan honey business and feel very fortunate to have a sustainable lifestyle on this beautiful peninsula working with nature, for the love of bees. Follow their beekeeping story on Facebook or Instagram @mahurangihoney. www.facebook.com/mahurangiwesthoney www.mahurangihoney.co.nz

PLANT LOVE “The name says it all! We wanted to share our love of plants with people, helping them enhance the look and feel of their indoor spaces, plus enjoy the many benefits indoor greenery provides. Our very clever, plant loving designer developed a brand identity and logo that I believe beautifully encapsulated these key ideas and aims, with a love of plants at its heart. It’s clean and simple, with a natural, earthy feel - like a beautiful house plant! I love the homely little house with a vibrant plant in our logo - that’s exactly what we’re helping Plant Love’s customers achieve, so it just feels right. We're green down to the roots, so the main colour choice was easy. Next up, we're launching a new website!” Corrinna Henderson. www.plantlove.nz | @plantlove.nz Designer: Bex of Hellobrand | www.hellobrand.co.nz

LOVE NAILS Angela Munroe of Love Nails wanted to rework her existing branding - to reflect something a bit more "special and indulgent”, so she engaged designer Steph Roberts from the Simple Signman. Steph says, “I ask clients to bring in packaging that they love, screenshots of existing branding and we talk through colours, layouts and their demographic.” “The logo we created needed to be beautiful and reflective of her craft. It is usable in a simplified diamond form or the more elaborate floral collection - perfect on the business stationery. The window frosting reflects a mirrored logo on the back wall at midday, giving a twinkly glimmer of the goings-on in the busy salon while allowing for privacy. It's vital to think of all aspects of usage when creating your brand.” www.instagram.com/lovenailsnz Designer: Steph Roberts | thesimplesignmanmatakana@gmail.com

HONEST CHOCOLAT "They say people eat with their eyes, so it’s really important to us that our brand reflects our chocolates! Our aim is to maintain a timeless, clean and simple aesthetic, with a feeling of joy and luxury. The circle in our logo reflects our chocolate bonbons, which were the first product we developed. The circle is used in different ways throughout our packaging, such as the cut out in our tablet boxes to see the chocolate inside. The stripes on our bonbon boxes are a nod to Nico’s French roots. My background is in interior design, so creating a brand and designing our packaging has been something I have learnt along the way." Emily Bonnaud. Shop 1, 2 Matakana Valley Rd, Matakana www.honestchocolat.co.nz Designer: Emily Bonnaud - Creative Director at Honest Chocolat

THE GOOD BLEND “The Good Blend branding was created by Christie at Proof Design. I had an idea of what I wanted to achieve but Christie brought this to life. She developed a clean, natural looking visual identity for me which represents my business and communicates the personality of The Good Blend perfectly. I spend hours refining my recipes to maximise the benefits and create the most delicious smells and consistencies. It was important that the packaging reflected the quality and care I take during development. Christie did an excellent job of this allowing each blend to have a personality of its own and giving the range a sense of careful curation. I love the packaging design of my range, as Christie incorporated the soap colour of each range into the packaging, making each category easily recognisable." PETE & MARY’S “Our business was largely inspired by our grandparents: the creativity of Mary and the love of food that we shared with Pete. That's why it was important that our branding not only represented us and our generation, but represented them and theirs. We feel that it does this perfectly. It was also important that the branding was able to grow alongside us and be attached to a variety of products. We never want to limit ourselves. The classic font and timeless colour choices have definitely done this. We chose Clare Cato to design our brand because we love her style both personally and professionally. Having used her in other projects we knew that she would understand exactly what we needed.” Suzannah Hemus. 21 Queen Street, Warkworth | www.facebook.com/peteandmarys.eatery Designer: Clare Cato | www.clarecato.com

MATAKANA WATER “What we love about our branding, is that it looks and feels authentic to our world class quality mineral water. We are conscious of keeping everything as local as possible, and when looking at Bex of Hellobrand’s work, we knew she could capture what we were seeking. She met with us at home, which is on our land where the water is drawn from the aquifer, nestled in a valley with pristine native forest. We believe in being good stewards of the water and keeping our footprint light. Bex connected with our vision and values - we all live and breathe the Matakana region. The harmony of earthy tones, natural colours and timeless yet modern organic vibe Bex blended, represent the water.” Nick van Hoppe. www.matakanawater.co.nz Designer: Bex of Hellobrand | www.hellobrand.co.nz

PRIMROSE & CO. Sarah Primrose designed all of her own branding from the logo, packaging and website. “At the very beginning a friend and I collaborated to create the Primrose Bees Wrap logo. I wanted our brand to feel strong, organic, clean and fresh, modern and timeless.” “Our brand name best represents who we are as it is our family name, and also named after the English Primrose flower symbolising new life, new beginnings and progress. We were initially called ‘Primrose Bees Wrap’ even though from day dot we have made natural body products using organic ingredients. As we developed new products to reduce waste and chemicals in our own home, we have increased our range. It was time to change the name to align with our identity and values as we grew.” www.primroseandco.co.nz | www.instagram.com/primroseandco_nz Designer: Sarah Primrose at Primrose & Co.

THREADBOX DESIGN & SUPPLY CO. “We both came from a design background and ended up screen printing, so the name ‘Threadbox’ fitted perfectly.” Kyle and Ali Robinson initially started in 2012 with a script font. “That didn’t last long and we changed it to the current core branding. It’s pretty simple and clean, and has remained our main branding ever since. We still love it! As we do a lot of branding for our customers I guess it’s our style to try and keep it clean.” “We were looking for a brand logo that was strong, wouldn’t date, and one that we could run across all media. Although it took a while to come up with the name it stuck and works for all aspects of our business - branding, web design plus everything else.” 021 934 723 | www.threadbox.co.nz Designers: Kyle and Ali Robinson at Threadbox

New Studio Showcasing Talent Since opening its doors ECM Tattoo has been the talk of the town. Tattooist Ethan Gray has been booked out weekly, having the opportunity to design and tattoo a wide variety of styles and has been loving the diversity. “It’s a great feeling having someone leave happy with what you’ve just created for them.” Owner Leigh says the feedback from their customers so far has been very humbling. “Ethan is smashing it! He's a friendly, professional and keeps a freakishly clean workspace, which in a tattoo studio is essential.” “We have people stopping by daily just to chat and check the place out. It’s got a great vibe and the locals have blown us away with their support.” Big things ahead as they welcome new member Melissa Kay to join the team. Melissa is originally from California and has been tattooing for over 13 years, a keen artist herself with a love of florals and winged creatures her style is more traditional and packed full of colour. “Melissa will add a great vibe to the studio, she’s bright and fun, and it’s awesome to have a female tattooist on board.” All in all it’s a rad space, the team love working there and that in turn reflects in the feel of it. Fresh, clean, comfortable and decked out with plenty of modern gadgets to keep you entertained while being tattooed. No Excuse for Bad Design OTO group is an architecture and design studio focussed on creating spaces and objects of a high quality that are borne out of experimentation and play. Furniture is an excellent exercise in reduction and rationalisation, a lesson that passes over into their architectural work. For every building that Oto designs, a custom furniture piece is built for that space - their own way of putting a physical touch onto their projects. “We design these pieces to be a statement that reflects the values of the wider building,” says Oto Architect Nicholas Dunning. “Our furniture is not drawn on paper beforehand, rather we approach the proposition of building by tinkering with the material at hand, playing with dimensions and sketching directly with solid timber. It is the antithesis to the months that take us to design buildings, it is a careful harmony of spontaneity and rigor.” This approach affords them an opportunity to experiment and to work with their material rather than imposing design ideas onto materials. “Our passion for furniture making is borne from our general zeal for making. Our homes and studio are filled with things that we have made. We are creators at heart and it is a pleasure to make things that bring others joy.”

During their time in Denmark and Sweden studying and practicing architecture, their appreciation for the craft of design grew exponentially, and they saw how beautiful buildings were married with beautiful items of design. Finn Juhl, Arne Jacobsen and Alvar Aalto became strong sources of inspiration - masters of their craft that would design entire town halls and churches, all the way down to the cutlery and door knobs. “It was here that we saw that there is no clear line between what is architecture and what is not. We do not see ourselves as one thing or another, rather we design and we make and there is no task too small or great, everything around us should be designed with a fusion of functionality and charm.” They love their pieces to be enjoyed in all homes, and see them being passed down the generations and cherished for decades to come. The aim for the future is to have a full suite of furniture available to the public: “A furniture line that reflects our design principles and fits perfectly into any of our homes.” Whether it be chairs, tables, stools or lamps...there is no excuse for bad design. www.otogroup.nz www.instagram.com/otogroupltd

Step Back in Time When we think of the fifties, we think rock’n’roll, hamburgers, poodle skirts, driveins and furniture with bright colours and chrome edging. It conjures up a happy era that can now be replicated in your own home; create a curated look using furniture from American Retro Furniture, which has recently relocated its showroom to Kaiwaka. American Retro Furniture owners, Grant and Lesley Jacobs share a passion for furniture, classic cars and collectables, and used their past experience of over ten years running two furniture businesses (Country Charm Furniture and Silverdale Furniture Restoration) to import unique and fabulous retro furniture direct from the USA. “I love that fifties furniture has bold colours with clean, simple lines and design,” says Grant. “It’s cool, funky, bright and can tie in with your classic car or caravan from the

1950s and 60s; it brings back those fun memories from your childhood days.” adds Lesley. “We constantly hear ‘my grandmother had a table and chairs like that!’, bringing back feelings and memories that modern furniture won't.” To date the couple’s greatest achievements were supplying the authentic 50s style chrome and Formica diner furniture for the new ‘Bernie’s Diner and Car Museum’ in Kaikoura and ‘Viv’s Kitchen’ in Sanson. Well worth a visit if you are looking for inspiration! There are many colour and style options for people wanting to add a bit of fun to their next project, whether it be a new home or renovation, styling a man or girl cave, or even for commercial applications. The retro furniture is brand new commercial grade, manufactured in the USA and looks amazing in any style of home or business.

They can even supply components such as polished aluminium trim/edging and chrome table legs, or even pedestal bases for that finishing touch. Grant and Lesley continually attend shows, including car shows, Swap-Meets, vintage events, Field Days and many other festivals around New Zealand, hooking up their display trailer and driving the length of the country to enable car enthusiasts, retro lovers and all other general public to talk to them face-to-face, and have a look at their genuine American diner furniture. Give Grant or Lesley a call or pop into their new showroom to discuss how you can turn back time on your next project. Open by appointment only so please call first to ensure they are available to meet you. www.americanretrofurniture.co.nz sales@americanretrofurniture.co.nz

Your Home, Your Story

Interior designer, Shanly Simpson believes that everyone’s home tells a story. Shanly left home at the tender age of 17 with $50 in her pocket. Forward more than three decades, and you have a humble Kiwi girl with quite a story to tell. Crossing paths with international interior designer, Faye Resnick, 20 odd years ago, was the event that changed her destiny. Under the renowned designer’s wing, Shanly honed her skills as she worked with clients like Paris and Nikki Hilton, Caesars Palace, the Palms Hotel Las Vegas and Fendi Beverly Hills, to mention a few. These were exciting times, rubbing shoulders with Hollywood royalty and learning so much about her craft in the process. Still, there is never any place like home. She missed New Zealand and its people, and so in 2012 she left Los Angeles behind with a dream to make interior design accessible to New Zealanders of all walks of life. It’s her opinion that “everyone (not just those with the financial means) should live in homes that reflect who they are and what makes them happy”. Shanly doesn’t subscribe to signature styles as she wants to tell her clients’ stories, not her own. Her influences and inspirations are forever evolving. She’s drawn to the angles, shapes and materials of architecturally inspired pieces. Beautiful, comfortable, and timeless design focusing on function and simplicity is the cornerstone of her design process. Shanly is also a big advocate of decluttering, believing you should be ruthless and get rid of anything you do not love, need or regularly use. This will make your mind calmer, your home look bigger, cleaner and tidier. It’s her mantra that “your first step towards design Zen is letting go”. She also advises her clients to breathe before they buy, to be patient and take their time to think about what they want from every space in their house. If you buy a large piece out of scale with the rest of a room, it is both challenging and expensive to visually correct that mistake. “Measure twice, buy once!” Keep an eye out for Shanly’s online store launching in April 2021. It will feature a beautiful collection of rugs, cushions, throws and custom-made New Zealand furniture. www.shanlysimpsondesigns.com 022 043 1350

Straight to the Point After years of spending their summer holidays renting other people’s houses at different beaches around the area, in 2018 Debbie and Andrew Tubb decided it was high time that they built a holiday home of their own and Sentinel Homes stood out as the builder of choice. Words Leah Botherway | Photos Louise M Photography

After scouring the region for the perfect location, Debbie found a few different sites and took along Ursula Gilchrist from Sentinel Homes to assist in making the all important decision. Sold on the picturesque backdrop of mature trees along the southern boundary of the property, Debbie and Andrew decided that the Sandpiper Avenue subdivision in Point Wells would be the perfect place to build their dream holiday home. Just a short drive or bike ride to the markets, wineries and, most importantly, the beach.

It’s not only the proximity to Auckland that was a major drawcard, but as a painter and ceramicist, Debbie was enticed by the lively art scene that Matakana offers, and she loves to spend her weekends checking out the local galleries and exhibitions.

maintenance, “dog and sand-friendly”

Debbie had a clear idea of what she was looking for in terms of design and layout. Ursula Gilchrist introduced Michael Cooper Architects to design the home for the Tubbs as he was best suited to the aesthetic Debbie described: a simple, yet low-

The finished product is a simple, yet

“striking” pavilion style cedar house that

completely fits the brief of a beautiful and relaxing holiday home, and the Tubbs as we envisioned,” says Debbie.

aesthetic, but practical. The location of the garage creates an internal courtyard that expands the living and dining areas and provides a private area for people to relax away from neighbours and passers-by. Using her interior design knowledge, artistic eye and, of course, Pinterest, Debbie designed the plywood, custombuilt headboards in each of the three main bedrooms of the house. These headboards each have built-in floating bedside tables with all of the unsightly cables and power sockets cleverly hidden away within the interior of the headboard. With the main house containing three bedrooms for Debbie, Andrew and their two children, a guest room was also built at the back of the garage and fitted out with bunk beds to accommodate “the overflow” that often comes with having a home near the beach. It was this “overflow” that was a major consideration when it came to both the layout of the home and the selection of furniture. From the internal courtyard with its private alfresco dining and living area, through to the open kitchen looking over a large indoor dining table that Debbie hand-selected to accommodate friends and families at dinner parties during the colder months. Andrew and Debbie absolutely love their weekends at Sandpiper Avenue, so when the time comes, they have every intention of joining the ever-growing Point Wells community and making their weekend home their permanent home. www.mcooperarchitects.co.nz www.sentinelhomes.co.nz

Creating the Future with Fire In her studio stuffed with paintings, drawings, prints and ceramics, Helene Carpenter has a stack of tiny sketchbooks filled with watercolour coastal landscapes. They’re beautiful, but she’s briskly practical about them. Words Kathy Hunter

“I walk the Mahurangi Peninsula every morning, mainly to source new colours. But the landscape, clouds and light change so fast, and watercolours are quick. It’s how I start my day.”

ago, a wrenching move that’s turned out unexpectedly well. During lockdown, Helene began walking and rediscovered pottery; now she’s deliriously, delightedly making variations on ‘wobbly’ vessels.

Helene’s originally from the UK and has an honours degree in Fine Arts from London’s UAL. She spent 18 years in Singapore, supporting herself and her two daughters with her studio practice and has lectured and exhibited extensively in Singapore, New York, London and Australia. But it’s here she now feels truly at home.

“They’re a sign of the times,” she says. “We’re all allowed to be wobbly at the moment.” But there’s more. On one of her daily walks, she began digging in the estuary and discovered a layer of dark green, sandy clay which reminded her of green-lipped mussels, a mollusc she’s fascinated with for its ability to clean around 350 litres of harbour water a day.

Takatu Studio, a connected warren of quirky spaces, has been running since 2015. Helene works here and sometimes hosts other artists who share their knowledge in workshops: cyanotypes, printing, textiles, drawing and painting and creative practice. “The practicing arts community here has an amazing wealth of experience and talent,” she says. Sadly, her beautiful home and garden in Kaipara Flats was a motorway casualty, and Helene moved to Scott’s Landing a few years

ART

It seemed a natural progression to incorporate clays dug from the Mahurangi into her vessels. She’s glazing them with sands found in the same bays, creating ceramics whose molecular structure is literally part of the harbour. The colours are beautiful: blue-green glazes over cream or white clays flecked with grey – one glaze is a spectacular glittering blue-black. “Over lockdown, like many, I thought about the

past and what the future might look like. As I dig, I think about ancient geological layers,” she says. “British potter Bernard Leach said pottery is about ‘changing the mutable to the durable by the action of fire’. So I suppose I’m creating something for the future, using materials from past environments.” The work also addresses a deep-seated urge, present in much of Helene’s work, to connect with the idea of home. Helene’s interactions with other local artists have spawned a new collaborative community, with group shows and further workshops planned. Currently there’s a pottery group on Mondays, life-drawing on Thursday evenings, and a Saturday drawing class for teens. There’ll be a winter workshop with boundarypushing potter Martin Ward on creating glazes from natural materials. “An old Indian lady in Singapore told me, ‘every day, count the flowers in your garden’, a metaphor of course, for counting your blessings. And right now, I have many.” www.facebook.com/takatustudio

Delicate Botanical Tattoo Designs

Juliane (Julie) Visser always loved drawing and body art as a girl growing up in Germany. She moved to Warkworth (her husband’s native home) from Munich, Germany in 2012. Having dreams of opening her own studio and in 2018 this became a reality. “We focus on two key parts: the art itself and the experience of getting a tattoo,” she tells us. “Firstly, through my fine line designs, I help people express themselves, their connections to loved ones, to memories or simply beauty. My client’s stories are often deeply inspiring. We collaborate to create meaningful designs that are unique, delicate and beautiful. I’m inspired by my love of nature, the local environment, and botanical art globally.” Secondly, how she designs the client’s experience. “We want people to feel calm, relaxed and confident throughout the process. Good communication is essential to achieve this.” The studio is private, light and calming

in a garden setting with views out over the township. To ensure privacy visits are by appointment only, although clients are welcome to bring a friend. For those interested in getting a tattoo, you would need to provide the following to assist Julie in making your vision a reality. Firstly, she requires a description of your idea, reference pictures or drawings are helpful here. An image of yourself showing the size and placement of the tattoo helps her with scale and image layout. Then you need to decide if colour is for you, or you want classic black. “Generally, communication and exchange of ideas happens via email first,” she says. “Often clients know what they want their tattoo to represent and I help them visualise this. If the design is complex or large, I create a rough concept which we then detail based on the client's feedback.”

She also provides a range of unique “wannados” (in other words designs she wants to do) which are as simple as choosing one you love. “Importantly we agree on the design before the appointment so when you arrive at the studio everything is prepared and we can focus on the desired size and placement.” Julie deeply appreciates the trust people give her with their tattoos, especially if it’s their first. “I love the moment when they first see their finished tattoo.” The feedback from her clients has been overwhelmingly positive, often describing the experience as “spa-like” and commenting on how gentle she is with a needle. “Moving forward I want to keep doing what I love, increase awareness of my art, and continue to help people feel more beautiful.” www.instagram.com/julie.tattooart julie.tattooart@outlook.com

Bountiful and Beautiful Acquiring 15 years’ experience within the hospitality industry throughout Australia and New Zealand, twin sisters Natasha and Melissa have gained a wide range of skills within the field. From dishy to management and everything in between they both can do it all, with both favouring their own particular areas of the trade. The pair picked up the business from an early age and found a natural interest within the industry. After hosting the occasional event for friends and whanau the sisters soon realised a passion and satisfaction that came from creating grazing tables or platters constructing something deliciously beautiful out of food. Recognising there was a niche within the area for this kind of small business and deciding why not go for it? That’s when

the idea of Take Two Collective Grazing came about. Adopting the food pyramid concept when it comes to choosing the appetizing goods for their tables and platters, applying an arrangement of artisan breads; the best cheeses and deli meats; fresh and dried fruit; pickled and raw vegetables; chutneys and delicious dips all in the brightest most delightful colours. Not forgetting to top it off with that little something sweet, with hopes of completely satisfying the individual's consumption needs. Focusing on sourcing produce locally and New Zealand made where possible, using the freshest and tastiest produce available, with intentions of taking eating with your eyes to the next level.

“Our favourite part of the job is designing

a fully styled Grazing Table and the whole procedure from start to finish. Sourcing

the flowers, décor, greenery and produce, envisioning, researching, the boundless

thoughts and ideas to formulate the final

product. Not to mention the reaction of a

glowing pregnant wahine or beautiful bride when they see their table is just something

special that makes this venture so fulfilling,” Natasha says.

You can find them on Facebook or Instagram

and message them via both platforms for more information or bookings.

Fermentation Workshop with Trish Allen & Marianna Van Ginkel Asked how she got into making sauerkraut, Trish replied, “I married an Austrian.” Trish’s late husband, Joe Polaischer, came from the mountainous area of Steiermark where the summer growing season is very short and vegetables don’t grow during the snowy cold winters. In the old days, before refrigeration, cabbages and other vegetables were preserved by fermentation, which enhanced their nutritional value and saw the people through the long winters. That was back in the 1980s and Trish has been fermenting ever since. “I got to like the taste!” says Trish. “In Steiermark the herb caraway grows wild, so it’s usually added to sauerkraut, giving it a delicious distinctive taste.” Trish also learned how probiotics found in sauerkraut and other fermented foods improve the balance of bacteria in the human gut, aiding the digestive process and helping to maintain healthy gut flora. And since over 70% of our immune system reside in our gut, it makes sense to eat probiotic fermented food every day. Fermentation is the oldest and healthiest way of preserving food and every culinary tradition around the world utilises fermentation. Co-tutor, Marianna Van Ginkel, has been

making fermented foods for over 15 years and is grateful for the unseen work of the beneficial microorganisms in her kitchen. In this workshop Trish and Marianna will demonstrate how easy it is to include naturally fermented foods in the diet that are tasty and simple to prepare. They’ll cover the basics of making classic sauerkraut, kimchi, beet kvass and other vegetable ferments. They’ll also go through the magic of Scobys for making Kombucha, grains for Kefir, and vinegar mothers for turning apple or grape juice into vinegar. Simple raw cheeses, made from Kefir or Caspian Sea yoghurt will also be demonstrated. Trish is fascinated by the new and exciting area of research: the gut-brain connection. “Serotonin is a hormone (neurotransmitter) that leads us to feeling happy, calm and content. Gut bacteria have a crucial role to play in helping the body make serotonin, so how amazing to think that supporting good gut health by eating probiotic foods like sauerkraut could make us feel happy!” Sunday 11 April, 9am-4.30pm. Meet the Head Chef KERRI JOHNS AND SARAH WILLIS - RAVISH Kerri and Sarah are the culinary talent and brains behind Ravish, located on the corner of Matakana and Sharps Road (next to Green with Envy). After becoming friends they quickly realised that they shared the same passion for food and fresh ingredients. “By collaborating our individual styles and flavours, and a cheeky little road trip north to purchase our first kitchen, Ravish was born,” they say. They source their ingredients “locally and wherever possible”. “Our salad greens come from over the fence at Ray's Rockets, eggs from Whangaripo, salmon from The Smokehouse. We feel very fortunate to have such wonderful local producers.” Kerri enjoys creating fresh salads using seasonal produce and bringing them together with a yummy dressing, while Sarah’s Oaty Caramel Slice, Ginger Crunch or Dark Chocolate Brownie are heavenly. www.ravish-hq.com | www.facebook.com/ravishHQ

CAMERON COOK – BRICK BAY After being in the industry for 27 years, Cam finds himself in a position at Brick Bay where he gets to work more closely with nature and seasonal produce. Brick Bay farm supplies his kitchen with fantastic ingredients year round. Most notably Brick Bay Lamb, which grazes on coastal grass, seasoned by easterly winds with sea salt from Kawau Bay. Local Warkworth butcher, Rob processes the lamb into a variety of cuts to tie in with the seasonal menus. Cam’s currently working with Rob on developing a lamb merguez sausage for the launch of a new Brunch menu in March. Cam really loves the sustainable shift in food and making the most of great ingredients without over processing. To him, food and cooking is simply about caring for the produce, the environment it comes from and sharing what it has to offer with others. www.brickbay.co.nz | 09 425 4690

Meet the Head Chef BRANDON – LEIGH SAWMILL Brandon joined the Leigh Sawmill team as Head Chef last November and has quickly made his mark on the menu. Boscaiola Pasta is currently his favourite dish on the menu; the ingredients are so simple, but how fire, heat, and timing are used determines the flavour and success of the dish. Cooking in Leigh has been refreshing as he can use more fresh, local ingredients and has a strong relationship with local suppliers; one of his favourites to work with is Lee Fish. What Brandon enjoys most about working Leigh Sawmill is that the whole team is like a family. Everyone respects each other and works together. He is grateful to have more involvement in all aspects of the business, making it a position that will be memorable throughout his career. 09 422 6019 | www.leighsawmill.co.nz

BRODIE BENNETT – BENNETTS OF MANGAWHAI The French kitchen is often compared to the military. Rigour: discipline and precision are required in every battle just as they are in a Sunday lunch shift at Bennetts Café. Brodie Bennett spent four long and hard years learning the art of French cuisine in Provence and Paris before moving to Melbourne and Wellington to expand his skills. Today alongside his right hand man Joey Odi, he has developed a daytime menu based on local, seasonal produce. He is working towards opening evenings at Bennetts. www.bom.co.nz | 09 431 5072

KAHUI CASSIDY – TAHI BAR Chef Kahui Cassidy’s love of cooking started when he was a child. Growing up on a marae in Taranaki, his father and uncle introduced him to the craft and discipline of cooking and the joy of bringing people together through food. As a young man, Kahui was classically trained in French cuisine, going on to win accolades during his time as Head Chef for award-winning local wine makers, Mahurangi River Winery and Restaurant. Now Head Chef at The Tahi Bar and Kitchen in Warkworth, he says his favourite dish on the menu is his “Dad’s Mussel Fritters”, which are homey, good Kiwiana tucker - reminiscent of the sea and sunny days by the seaside. The recipe is the same one Kahui’s Dad taught him, just with a few secret gourmet alterations to make the fritters even more delicious. 1 Neville Street, Warkworth | www.thetahi.com

Amazing Tea The healing properties of natural plants have been in use for over four thousand years. Even pharmaceutical drugs we have today have their origins in natural plants. Whether you are drinking tea for health benefits, or simply enjoying the flavour, the perfect cup of tea will always bring a moment of relaxation to your day and soothe the soul. Teas can be made up from leaves, seeds,

fruits, flowers, roots and stems of plants, each having its own unique flavour and property, and although you can have one simple flavour on its own, we can also get creative and make blends to suit our individual needs. The list of teas is endless, so here is a list of the top nine herbs of today and a brief description of their benefits.

Green Tea – Perhaps one of the most known herbal teas, known as one of the oldest medicinal herbs, and has been used for its antioxidant properties as well as many tea ceremonies, thought to bring in harmony and balance. Chamomile – Commonly known for its benefits in sleep. Also good for digestion and is said to be the all-round comforter. Nettle – High in iron, so a rich source of energy for the physical body. Excellent in any blend as a good base to work from. Lavender – Many know this flower as an aid in sleep, as it calms the mind and emotions. A very relaxing herb that adds a lovely touch to any blend and also has an antiseptic property. Peppermint – A bright and cheerful herb. One of the most useful herbs, both as a drink and in food and has been used for centuries. Excellent for chest complaints and a general boost for the body. Rose Buds – A delicate flavour that will bring another level to any tea. Said to bring harmony into one’s body. Said to be the queen of flowers. Ginger – This heart-warming goodie, will help anyone through the cold winter nights. Good for circulation and digestion, and part of an all-round body tonic. Dandelion – Used in many detox teas, it can aid in the removal of toxins from the body and roasted has a similar taste to coffee. Fennel – An interesting flavour of aniseed, this little delight will help settle your tummy at night. Perfect to add to a blend of sleep teas. Whatever your thoughts on tea and how you use them, get creative and have fun! A whole new world of tea can be right at your door. The Wise Teapot have created their own unique blends, stemming from their passion for working with clients on a deeper, more personal level, to create a blend that is tailored to their individual needs. Composting Made Easy Sustainable Kaipara share their top tips for successful home composting.

Waste audits show that around 50% of household waste sent to landfill is food waste. Not only does this mean that the food waste sits in landfill producing methane (a harmful greenhouse gas), but it means we miss out on returning all those valuable nutrients to the soil.

Dog Etiquette When Out and About Dogs come in a range of personality types. Not all dogs have a naturally social temperament. Some dogs are nervous, others have had negative interactions and feel anxious. These dogs and their owners need space while out walking so they can exercise in peace and begin to re-learn that the world isn't such a scary place. Photos Little Doves Photography

By law, we are all required to have our dogs under control, even the friendly ones. So if your dog is a 'happy-go-lucky' kinda pooch who loves to run up and greet others, let's take a look at some skills and tools you can use to manage your dog to make walks fun for everyone. Distance – Creating space around

distractions is the easiest way to manage your dog. It's so much more tempting for your pup to investigate that dog/bird/takeaway carton the closer they are. If your dog is offlead and you don't think they are going to respond to you in time, put them on the lead and walk past the distraction safely or move to a new space where you can trust them to be off lead again.

Manage – If you have a young or overly enthusiastic dog who's not good at responding to you, then invest in a harness and longline. The harness takes tension off your dog's neck so they can safely run and play while the longline gives them freedom to sniff and explore at a distance. This setup is fantastic for taking the worry out of walks! Distract – Playing games is a great way to distract your dog. Start a game of chase by running away from dogs you think need space and encourage your dog to run after you. Or, if your dog is food motivated simply throw some treats in the opposite direction and walk away. Reinforce – To encourage better behaviour around distractions, it's important to reward your pup when they listen and come back.

Take a high value treat only used for recall, or bring along a favourite toy to build focus. Becoming more exciting than the distraction is a great way to get your dog to engage with you. So, remember dogs are usually on a leash for a reason. They might be training, recovering from injury or just frightened of other dogs or people. If their owner looks like they're trying to avoid you, do the right thing and give them space. Sniffers dog training offers one-on-one training and behaviour modification consultations throughout Rodney. They use simple and effective training tools to show owners how to motivate their dogs to follow their lead. 021 083 22083 www.sniffersdogtraining.com

Community Rallies Around Pong the Penguin When an injured little Blue Penguin was found floundering at Kawau Island, a kind family picked her up and travelled land and sea to deliver her to The Animal Sanctuary in Matakana. The penguin, quickly named Pong, seemed paralysed in her right flipper and both legs. Shawn Bishop of The Animal Sanctuary believes that Pong had been hit by a boat or jetski. Since Pong could wiggle her tail, she didn’t think it was spinal damage, and that there was a chance of recovery. After intensive care over the holidays, Pong was X-rayed by vet Andrew of the Farm, Pet & Vet Clinic in Warkworth. This revealed a broken collarbone, a notch in the flipper bone and a badly broken leg. The flipper and collarbone were healing quickly, but the fractured leg needed surgery. Animal

Homeopath Lynn Millett of Warkworth, who regularly volunteers her services at the Sanctuary, contacted the Animal Referral Centre (The ARC) in Albany to see if they would operate. Incredibly, The ARC took on Pong’s case without charge. The ‘Dream Team’ they put together included Mike Farrell, Orthopedic Surgeon and Anne Wyer, Emergency Vet and penguin-lover. They even contacted world renowned penguin expert Romain Pizzi in Scotland to have him design a Pong-specific anaesthesia protocol!

while they heal. Several caring neighbours

Leigh resident Katie O’Higgins transported Pong to The ARC for surgery, and Lynn Millett brought her back the next day. Pong now has a titanium pin, a state-of-the-art bone sponge which cuts healing time in half, plus an external frame holding the bones together

village to raise a child…well it has certainly

and friends have purchased and delivered boneless fish (Pong eats $15 worth of fish a day!), while others bring home clean

containers of fresh sea water for Pong’s feeding and water exercise. Sanctuary

volunteer Olive is Pong’s primary carer,

and works with Shawn for Pong’s physical

therapy three times a day. That is a whole lot of humans, all working hard to give this little blue penguin the best chance of recovery and hopefully release. They say it takes a taken a community to save this penguin! www.animalsanctuary.co.nz

BLOOD ON VINES, A MATAKANA WINE COUNTRY THRILLER WILL BE LAUNCHED AT THE VINTRY ON SUNDAY 21 MARCH AT 3PM. In New Zealand’s Martinborough, an ex-wine maker is murdered. Meanwhile north of Auckland, the long hot summer is over and the tourists have left the Matakana wine country. A tranquil atmosphere descends and warm autumnal winds sweep across the grape-laden valleys.

With the harvest due, grapes sit bursting upon manicured vines awaiting the pick. Within this vista of peace, a rampage of death is about to rock the community to its core. Will it be their shared history that sees them being picked off one by one?

Four friends, a shared past, a common enemy. Please join us for a complimentary glass of wine and nibbles. This event is supported by Matakana Village Books

Amethyst Dance Academy Research often puts dance ahead of other physical activities in the variety of health benefits that it brings, such as stress reduction, increased serotonin levels and a sense of well being, and Sonya Lewis has seen firsthand how important this is to older dancers. Sonya Lewis (RAD RTS) founded the Amethyst Dance Academy in Wellsford and Warkworth in 1996. The ballet and jazz school saw thousands of young dancers come through the doors, and some have gone on to professional careers in dance, fitness or teaching - others found a lifelong love of dance, and appreciation for the artistry and discipline. After a break to support her own dance kids, Sonya received a message from a former student asking her to consider starting adult classes and this prompted the start of the rejuvenation of the school, but with a difference. No longer interested in the demands of teaching children, Sonya is now specialising in teaching adults and senior ladies. The seniors' ballet classes have been developed for older learners, and as a registered and qualified teacher with the

Royal Academy of Dance for over 25 years, Sonya has called upon her experience in modifying the classes to suit. There are three classes available for seniors - beginners, intermediate and experienced. The beginners class is suitable for the novice, or the dancer who did a few years of ballet as a child. The intermediate ladies have danced for a year now and are doing slightly more difficult steps, and the experienced class consists of ladies who danced up to late teens and are now doing Grade 7 level, complete with barre and turns. The adult classes have two levels - beginners and experienced. These ladies range in age from 18 to 45 years, and still enjoy working on the difficult steps with an increased range of movement, including the big jumps and harder turns. The classes have proved so popular that a

new beginners seniors class has been added into the timetable. Seniors class beginners Monday 11am-12 noon Seniors class intermediate Monday 12pm-1pm Seniors class experienced Monday 1:15pm-2:15pm Seniors class beginners Tuesday 1:30pm - 2:30pm Adult beginners - Wednesday 6pm - 7pm Adult experienced - Friday 6:30pm - 7:30pm Classes are "pay as you play" and cost $10 per lesson. The classes are full classical ballet Royal Academy of Dance style and are held at the Methodist Church Hall in Warkworth. For all enquiries phone Sonya. 021 061 2270 | 09 422 3452

STEM is for Kids! This year there's a new club in town, The Mad Scientist’s ‘STEM’ Club, run by a local mum, and specialist STEM teacher, Lyndell Ryburn who is passionate about providing kids with fun and challenging science.

Lyndell is an Australian qualified primary teacher with over ten years experience teaching, including as a STEM teacher. When she saw kids being empowered to design prototypes to solve problems, adapt and challenge their own thinking, she was hooked and her love of STEM was born. STEM is a fabulous integration of Science, Technology, Engineering and Maths taught through fun hands-on challenges that requires thinking outside the box to solve. STEM creates critical thinking, it increases Science, Technology, Engineering and Maths knowledge and develops cooperative teamwork skills, while helping build the next generation of innovators. But most importantly, the kids love it! STEM is designed to be child led. Lyndell will set a challenge and provide the resources and equipment and the kids will work together to create a solution. Why Is STEM Important?

Teachers today have the mammoth task of educating and preparing children for jobs that do not currently exist such as occupations in the STEM field. STEM occupations are growing more rapidly than other occupations. In 20 years 80% of jobs will require technical skills. (USA Bureau of Statistics) Last year New Zealand’s 13 year olds recorded the lowest ever test results in Maths and Science which is terribly sad when science is so much fun! Children are natural born scientists, all that mess they make at home is essentially a science experiment: what will happen to the integrity of the raw egg shell if I throw it on the carpet? However the aftermath of science experiments aren't always appreciated at home, but are welcomed and encouraged in the STEM Club. STEM Club is for children from 5-12 year olds. 9-12 year olds work together with Lyndell’s support and guidance while 5-8 year olds require an adult to assist with bringing their imagination and creativity to life. 021 0277 1902 | themadscientist.stemclub@gmail.com

Sandcastles in the Sand Summer is well and truly here so grab your bucket and spade, spray bottle, masonry trowel, spatula, and maybe some books on sandcastle building and get down to the surf beach at Mangawhai because you could carve out a sand sculpture at the inaugural Mangawhai Sand Sculpture Competition! The competition is being held at the Mangawhai Heads surf beach (right by the surf life saving club) on Saturday 27 March 2021, and is open to all age groups both amateur and professional as an individual or as a team. Register for the competition on the day, 27 March between 10am and 12 noon at the

event HQ marquee on the beach, with a gold coin registration fee going to the Mangawhai Surf Life Saving Club. The event is being organised as a community based “ fun filled family day out”, with the sand sculpture competition, bouncy castle, sausage sizzle (laid on by MSLSC), drinks and ice cream vendors, competition cash prizes up for grabs and lots, lots more. Hot sun. Salty air. Rhythmic waves. A little boy is on his knees scooping and packing sand with a plastic shovel into a bucket. Then he upends the bucket, lifts it up and to the

delight of the little architect, a castle tower is created. All afternoon he will work. Spooning out the moat, packing the walls. Bottle tops will be sentries, popsicle sticks will be bridges and a sandcastle will be built. When: Saturday 27 March 2021, 1pm-3pm Where: Mangawhai Heads Surf Beach Mangawhai Restrictions: None. Open to everyone. Admission: Free. Competition Entry Fee: Gold coin with all proceeds going to the local surf life saving club.

Waipu Women’s Fishing Competition The Annual Easter Weekend Waipu Cove Women’s Fishing Competition is rapidly approaching and the excitement within the community is building. The Competition has been running successfully for many years now and is held within Camp Waipu Cove. The Camp kindly hosts the event, supports the competition organisers and sponsors the $500 Cash Prize for the heaviest Snapper. The Competition is 100% not for profit, with registration fees being used to purchase prizes for the fabulous female anglers and all proceeds from the Fish Auction are donated to the NZ Breast Cancer Foundation. A charity that is very close to the heart of the competition. The event is the only fishing competition on the calendar for most of the participants and

for some women, it’s their only opportunity to get out on the boat all year. It’s always a fantastic day for all and the participants always come to prizegiving with a huge smile and some new cherished memories. Registration, weigh-in, prizegiving, The Annual Easter Raffle Draw and The Fish Auction are all held at the Village Green at Camp Waipu Cove. Ladies, organise your skipper and head to the Village Green on Friday 2 April between 5pm-9pm to register. Fishing commences 7am Saturday 3 April and weigh-in is between 3pm-4pm. Prizegiving and the Fish Auction will commence at 5pm. Fishing is permitted from land, beach, boat,

jet ski or kayak but it is strictly women only! Get a copy of the rules at registration to check the fishing boundaries and conditions of entry. The organisers are seeking sponsorship and donations so please get in touch if you have something to contribute to the prize pool.
