Paddle Your Own Canoe: Scott Donaldson A New Zealander who entered global history for a mind-boggling feat of endurance is now a Matakana local. Two years ago Scott Donaldson kayaked across the Tasman, paddling solo for up to 16 hours a day. He arrived in New Plymouth after 62 days, having conquered 2200km of one of the toughest seas on the planet. As Jacinda Ardern said, he ‘stunned us all’. Words Kathy Hunter
So what drove him to do it? “Well, it wasn’t for the glory,” he says wryly. “It was about the personal challenge and also fundraising for asthma, which both my son and I have.” Asthma has been one of the driving forces in Scott’s life. Over the years, he’s used every breathing technique around to help nail it. “Your lungs are just another set of muscles that can be trained. Controlled breathing is brilliant for asthma, but it’s also key to any elite sports performance.” Scott’s twenties saw him competing nationally and internationally in endurance events such as Ironman and triathlons; multisport races like the South Island’s Coast to Coast and the one-off Mizone Length of New Zealand race – this last kicking off his love of long-distance kayaking. In 2000 Scott started his own sports coaching business working with endurance athletes. He coached Pam Dickson, who swam Cook Strait aged 55. “She didn’t have a huge background in swimming – it was the mental side of it that got her through,” he says. He taps his temple. “It’s all up here.” That’s it in a nutshell with Scott. The physical side of endurance sport is an interesting
challenge, but the mental side has a deep fascination for him. “If you’re paddling 16 hours a day for a couple of months it’s all about safety – eliminating poor decisionmaking and using logic, never emotion. You’re constantly assessing your nutrition, hydration and level of exertion along with wind, current and weather conditions.” “That’s all easy enough but when you’re sealed into a kayak compartment just a bit bigger than a coffin for days and nights in a lightning storm, the current’s taking you backwards and you can’t paddle – that’s when the mental challenge sets in and that’s the fun bit that really interests me.” The fun bit – seriously!

But their timing was great. Sarah’s stepfather, much-loved Omaha local Chris Martin, was wanting to step back a little from his business, Insite Security. “We came back and realised how incredible this area is. So I have a new challenge: learning the business.” Insite covers residential and business security from Puhoi to Waipu. The tech side of the business, mostly installations, was hit pretty hard by lockdown but the patrols have been busy.
“Yep,” he says. “If there’s an issue, you have to adapt positively, or it’ll become a bigger issue. And the most flexible muscle you have is your attitude. Some say we’re nearing physiological capacity for endurance, but psychologists see it differently. Ten years ago, running a marathon in under two hours was impossible, but now it’s been done. It’s hugely about the mind and there are many techniques to maximise that potential.”
And the great thing about having Scott Donaldson run your security business during a global pandemic has a lot to do with his experience. “You can choose to see things as a problem or a challenge,” he says. “And if social distancing is required – well, I’ve had plenty of practice.”

Spinning a Yarn for International Audience Earlier in 2020 the project ‘A Love Yarn’ was planned to be filmed in Canada by Canadian production company, Incendo but due to the outbreak of Covid-19 the script was adapted to be set in New Zealand and partnered with Screentime NZ. At the time New Zealand was the only ‘Covid-free’ country, clinching the decision to head south to shoot.
“Even though the script was written in Canada it felt like the writer already had Matakana in mind. The town fitted our script locations perfectly - it was serendipity,” says Screentime NZ’s Head of Production, Tina McLaren. Written by Becca Johanson, A Love Yarn is the tale of a quaint New Zealand yarn shop owner, Sophie Dale, played by actress Anna Hutchison (from Robert the Bruce; Encounter; Vengeance), whose world flipped upside down after learning her top supplier of yarn is stopping production. Much to her surprise, the charming yet stuck-in-his-ways Samuel King, played by Simon Arblaster (from Once Upon a Time; DC: Legends of Tomorrow; Wild Justice), has travelled all the way from New York to audit the business model of the farm. Desperate to keep her shop going, Sophie convinces Samuel to give her two weeks to learn the ropes of yarn spinning and raise enough money to buy the mill herself. Actress Anna Hutchinson, who lives in L.A., nearly didn’t make it into the project. “Anna was on her way back to New Zealand to be with family when we cast her. We had a few anxious days waiting for her to clear managed quarantine on the way in but she made it through two days before we began shooting.” “We were looking for a beautiful New Zealand
rural township,” says Tina,“something to really show off to the Canadians. We looked all over Auckland for the right location but Matakana ticked all the boxes. The distance from Auckland central, the picturesque nature of the township and surrounds, and the ease of filming. Not to mention the services (accommodation/food etc.) to cater for our crew staying for the week. Everything is of such a high standard and the township opened its doors to us and made us feel so incredibly welcome.” A Love Yarn’s Director, Peter Burger, has projects Filthy Rich, Until Proven Innocent and Matakuin chalked up to his name, and his last two films received a nomination in the category ‘Best Director’ at the New Zealand Film & TV Awards and at the Qantas Television Awards. Tanekaha Track Mangawhai Amateur fungi/mushroom photographer and enthusiast, Jeanette Vickers walks the Tanekaha Track, Mangawhai about 15 times a year and feels like she is on a treasure hunt.
“There is quite a feeling of euphoria about hunting for mushrooms and fungi,” she says. When she finds the first mushroom/fungi and depending what it is, she knows if it is going to be a great hunt or not. “At the beginning I spend time resetting my camera then take 3 or 4 photographs from different angles,” she says. “Then I move on repeating this process a hundred and fifty times more. It takes me four hours and then I turn for home bedraggled, wet and muddy from lying down, kneeling and sitting on damp earth, moss and debris. North and Natural Durham Farms is a certified organic farm of 340 hectares, set in the beautiful rolling hills of the Brynderwyns, Waipu. It was founded by families passionate about producing food as naturally as possible. Being certified organic means no nasty chemicals, pesticides or herbicides are used anywhere on the farm.
Crops and livestock are raised together
and at least 25% of the land is set aside as protected natural habitat. This is Durham
Farms approach to regenerative, “mixed” farming. It improves soil fertility so more carbon is stored in the soil and with the
improved biodiversity enables the natural environment to thrive.
To give nature a helping hand, the owners
are well on the way to planting over 30,000 native trees and plants, have fenced off over nine kilometres of waterways and are re-establishing over ten acres of
wetlands. There are healthy populations of
Hochstetter’s frogs, short and long fin eels, freshwater mussels and crayfish. Walking
through the farm, you will be struck with the amount of bird and insect life, a testament

that things are changing for the better by taking an organic approach. Durham Farms has a small herd of Jersey cows that are milked once a day. The creamy organic A2 milk is slow pasteurised on the farm to keep the goodness in and is sold in returnable glass bottles. Each bottle is sold with an organic seed “to grow at home” attached to the home-compostable label. A big part of the farming approach is to connect people back with the land and to understand where their food comes from. Visitors will see the Angus cattle, that are born and raised on the farm, walking through the hills. There are flocks of chickens in mobile chicken homes laying amazingly tasty eggs with naturally yellow yolks. In the farm garden, colourful edible flowers surround a variety of vegetables, herbs and chillies. To
help all this plant life, bee hives are dotted around the farm, with the bees collecting nectar to make beautiful raw honey. A small glampsite of two tents has been set-up beside a slow moving river on the farm. You just turn up with your clothes, as everything else is provided. From the glampsite, a walk has been created to allow guests to experience at close hand, what an organic farm is like. For Goodness Sake Located on the Main Street in the heart of Waipu you’ll find ‘Togs Togs Undies’. They opened their doors in early July, with a mission to provide healthy food to support well-being. Most of the produce is organic and grown locally – “locals supporting locals”.
The business was started by George Goffin in March 2019, and he operated out of a 6.2m long food truck over the 2019/20 summer in Ruakaka – serving only vegan food. It became a big success and he built a loyal following. As for the name? It comes from the classic kiwi ice cream advert asking us how far away from the beach can you wear your togs? Perfect for this beachy town with its surf club background. Covid 19 and the first lockdown gave George an opportunity to re-evaluate his business and passion for healthy food. Then a fabulous opportunity became available for George and his partner Amber Woods (who also comes from a hospitality background) to open a café in Waipu, giving them the opportunity to cater to more customers and to expand their

Following in his father’s legendary footsteps as a shearer seemed an inevitable option for Hamish Stewart as a teenager. Undiagnosed dyslexia meant his options were limited. But when a cooking apprenticeship came up at Masterton’s ‘Golden Shears’ Motor Inn where he was dishwashing, he grabbed it. Cooking took him to London and to Cafe Suze, a New Zealand wine bar where he gained experience in catering. He also spent six months on a kibbutz in Israel, gravitating naturally toward the kitchen. team pivoted their business model to open a shop front at their commercial kitchen at Greenwoods Corner in Epsom. The new Hamish Stewart Catering (HSC) Foodstore offers delicious, healthy, readymade meals at a reasonable price, with vegetarian, vegan and gluten-free options available. Think chicken tagine, teriyaki tofu and soba noodles, beef rendang, braised pork belly, mushroom stroganoff, chicken and fennel meatballs, beef bourguignon and more. Naturally, all their sturdy packaging is fully home compostable; it’s made of sugarcane pulp. You can order HSC Ready Meals online and Hamish delivers them around the city as well as in the Matakana area. “There’s lots of potential – people are buying for elderly parents, families with newborns, people just out of hospital and to stock up their bach freezers,” says Hamish. “But we’d also love to run an organic produce and food stall at the Matakana Farmers' Market. Our future definitely involves spending more time here.” As Hamish looks out at the glorious views over Whangaripo Valley, with lush vegetable gardens and sunbathing ducks in the foreground, it’s not hard to see why.

METHOD •F or this recipe, grind 30g of roasted coffee beans as you would to make a filter coffee, and put this in a coffee server (or any jug) and add 300ml of cold water. Put this in the fridge and leave it overnight to brew. •F ilter the coffee into another server or container using a drip filter and filter paper to remove the coffee grinds, to leave the clear liquid coffee. • I n your glass of choice, add equal parts vodka, cold brew coffee and coconut water over ice, to make an enticing, invigorating cocktail.

With incredible views and free-draining, sandy soils, Harbour Edge is the perfect place for New Zealand’s largest avocado orchard. Robyn and Hamish Alexander – perhaps best known for Southern Paprika in Warkworth and Bali Gardens at their home in Point Wells – along with the Inger Family are co-owners of the 405-hectare property on Tapora Peninsula, west of Wellsford. Hamish has been in horticulture his whole life. At boarding school, he was given a piece of land and met up with the caretaker after school to grow a vegetable garden. After a Horticultural diploma at Lincoln he went on to manage the family orchard.

Four years ago, the Southern Paprika team and the Inger family had the opportunity to purchase a former dairy farm and convert the property into an avocado orchard. Nick Common was hired to drive the project forward and now lives on the property to manage the operation. So far, over 30,000 avocado trees have been planted – and that's only on a quarter of the property.
At Harbour Edge Avocados, pruned off branches are left to compost at the base of the tree, and potting mix and plant-waste from Southern Paprika is repurposed as nutrient-rich mulch. “This is great for feeding and caring for the shallow roots around the avocado trees,” says Nick. “Avocado trees also like protection from frost and wind – and a good foliar feed with liquid seaweed during the growing season!”
Passionate about conservation, the Alexanders have also planted several wetlands and plenty of native trees on the orchard, and further areas are continuously being developed.
With food miles being something that people are becoming more and more conscious about, it's reassuring to see millions of tons worth of nutrient-dense food still being produced - both from Harbour Edge Avocado and Southern Paprika - within an hour or two of New Zealand’s largest population.
“One of my favourite foods is avocado pesto with basil and pine nuts on Vogels,” Robyn says.
Under Nick’s management, the three and four-year-old avocado trees are already producing a decent crop from July to October, although they will not be at full capacity until they are closer to ten years old.
“There’s a certain sense of satisfaction in growing a highly nutritious crop that sustains people,” says Robyn. “Especially this close to Auckland – where so much of our fertile land continues to be lost to urban development.”

• F inely chop the coriander, onion and chillies.

• Chop the mango into small squares.

• Chop the cucumber into really small squares.

•W ith a fork smash the avocados and mix with the onion, olive oil and salt, pepper or garlic salt. *Hint, before smashing the avocados chop them in 1cm cubes and let them rest in water for three minutes. This helps to slow down the avocado discolouration.
1 Mango Coriander Cucumber 1-2 Green or red fresh chillies (depending on how spicy they are or how spicy you like the guacamole) Salt & Pepper (garlic salt is a great option)
•A dd the juice of half a lime and taste it. Keep on adding more lime juice little by little, to your taste. •A dd the coriander, chillies and cucumbers to the smashed avocado mix and then finally add the mango. • Usually guacamole should be prepared just before serving it.

2 cups cashews (soaked overnight) 1/2 cup coconut cream 300g silken tofu 5 ripe strawberries 3 Arbonne Strawberry fizz sticks 1 tbsp strawberry powder 2 vanilla beans
TOPPING Dried figs 1/4 cup almonds 2 tbsp pumpkin seeds 1/4 cup chopped naked ginger
METHOD •T o make the base, add ingredients to a food processor and blend on high until well mixed. Transfer mix into a lined tin and press down firmly. Pop into the fridge while you prepare the next layer. •C lean the food processor and add desiccated coconut and oil and blend on high until a smooth mix is formed. Drain and add the cashews and tofu and blend until smooth. •A dd in the fresh strawberries, fizz sticks, strawberry powder and vanilla bean. Blend until smooth and fully mixed through. •P our on top of the chilled base. Sprinkle over almonds, pumpkin seeds, ginger and strawberry slices. Melt the honey and drizzle over the top.

Decadent Chocolate Ring Cake This long-time family favourite is quick and easy to make, and has a beautiful sponge-like texture. Delicious simply iced with chocolate icing, fancied up with the addition of roasted flaked almonds, ganache icing or sliced through and layered with cream, jam and fresh berries.
INGREDIENTS 55g Butter ½ tbsp Golden Syrup 2 Free Range Eggs 100g Sugar 110g Flour 1 tsp Baking Powder 1 tbsp Cocoa 1 tsp Baking Soda ¾ cup Milk
METHOD • M elt the butter with the golden syrup. Beat the eggs until fluffy, then beat in melted mixture and add sugar. • A dd sifted flour, baking powder and cocoa. Lastly, beat in baking soda dissolved in milk. • Pour into a greased ring tin. • B ake for 20-30 mins at 180 degrees celsius.

Willie van Niekerk smiles at me; “I have a saying – you can’t cut carrots with your fingers.” His face lights up as he elaborates on his twin passions of cooking and knifemaking. “For me, there’s a strong connection with food. When you’re making something lovely for your family, the knife is that interface between the person and the food. So, when you love your food and you love your family, I want to make a knife that can be an object of love as well.” Willie’s knife-making journey began when
he was just a teenager attending an outdoor survival course. “At the end of the first day, they took away all our gear so the knife we made that day had to serve us for the next three weeks,” he laughs. Fellow attendees walked up to two kilometres to come and borrow Willie’s creation and he won a prize for the most used knife over the three weeks. Willie had found his passion and continued to make knives part-time when he entered military service. “I became more driven to produce better knives. I was working in the
engineering shop so I had lovely machinery around to help improve my skills.”
There was always a steady supply of
requests for specialist, tactical knives
through Willie’s contacts with the military and, each year, he would make about 20 of those. However, two things helped him to expand his horizons.
The first was his introduction to the Japanese style of knife making in 1993. “It was totally different to what I was used to – still using

power hammers and other equipment but much more freehand. It was more about getting a ‘feel’ for the metal.” He was also introduced to the Japanese concept of ‘ki’ which includes the idea of transferring the spirit of the knife-maker into the knife and he was very taken with that. “I need to be at peace when I make these knives because I want to make things that people can use and love,” says Willie. “I like thinking about the joy people get when they cut that first tomato or onion,” he smiles. The second thing that led him down new paths was meeting his partner, Angela. “When I met Angela, I gave her a knife as a gift and she was quite shocked.” Angela soon gained an appreciation of the artistry of Willie’s knives and it was she who encouraged him to start making a range of kitchen knives. Angela has imposed the marketing discipline, making sure the collateral, website and packaging all present Willie and the knives in the best possible light. Karahu House Built over ten years ago, Karahu House still turns heads with its crisp contemporary architecture as you wander along the Omaha boardwalk.
The house, designed by Julian Guthrie Architecture, is located on a beach front site, connecting directly to the boardwalk, dunes and beach beyond. The design carefully maximises outlook, while ensuring privacy and shelter from the coastal winds. The layout places the primary living spaces on the upper level at the seaward end of the site. This position offers the best views of the bay, but also provides privacy from the walkway below. A low solid timber balustrade to the deck, spanning the full width of the house, provides a visual shield yet gives unobstructed sea views from within the house. On the ground level a series of exterior sliding timber shutters provide the flexibility to open or screen the house and inner courtyard from the walkway. The plan is stretched down the full length of the southern side of the site, wrapping around at both the east and western ends. The remaining central space features a lawn and pool courtyard area that has all-day sun and is sheltered by the building from both the prevailing winds and the sight of passersby. All rooms in the house open directly off a central double height ‘verandah’ space, which itself opens fully to the grassed courtyard. This space is deliberately ambiguous, being at once the central hallway and also an exterior loggia, with exterior finishes to both floors and walls further blurring the distinction. This space also serves as a sun-trap for the house, using the northern glazing and internal concrete walls to provide year-round thermal comfort. Slatted timber screens on the upper level glass assist with summer shading, and also provide privacy screening from the road beyond the site.
Connection between internal and external spaces is a primary design focus of the home. On the upper floor there is a seamless junction of hardwood flooring to decking. With the glazed doors slid back the area becomes one space. A discrete exterior staircase from the upper deck creates a direct path down to the lower living areas and also to the beach path. The form of the house is broken down into smaller modules creating a sense of separate areas within the whole. The palette of white concrete and timber, varying ceiling heights and offsets in plan reinforce this concept. Within the house this gives a sense of the bedrooms as being individual cabins entered via the verandah space, or from the external doors from each room to the garden boardwalk. The interior finishes include travertine stone paving to the ground floor and courtyard, with kwila floors and decking to the upper level. The use of timber and white is a classic nautical palette providing a timeless modern feel to the house. The kitchen features a leathered black granite island bench and stainless steel cabinetry for super hard wearing but stylish effect. This is a holiday home with all the luxuries and amenities of a primary residence. However, the informal layout, natural materials and the indoor to outdoor connections create a relaxed holiday atmosphere that ensure the family and their guests can just relax and enjoy the beautiful beach environment. www.julian-guthrie.com

Differences in natural and chemical sunscreens
Consumer consciousness is on the rise examining which products are the best for both our bodies and the environment. We look at the benefits of using natural sunscreens.
Natural sunscreens use physical blockers that act like mirrors on the skin in the sense that they reflect the harmful UVA and UVB rays of the sun. Generally they are in the form of zinc and titanium dioxide. Chemical sunscreens use UV absorbers that absorb UV rays into the skin with synthetic ingredients like oxybenzone and octinoxate to name a couple of popular ones. Why are these chemicals harmful?
It has been scientifically proven that oxybenzone, that is found in chemical sunscreens, kills off the algae that lives symbiotically with coral. This algae is responsible for removing corals’ waste products, oxygenating them and giving the coral its colour. They need each other to survive and so when the algae dies it leaves the coral exposed to bleaching and death of these lovely sea animals. Even one drop of oxybenzone in six and a half olympic sized swimming pools of sea water kills coral. We are dumping thousands of tonnes of it into our waterways and onto our reefs every year, and as a result the dead reef that normally protects coastlines from high impact waves is receding.

Collectable Trio
The latest creation to grace the walls of Morris & James (M&J) is this trio of feather panels, made by head potter Ian Foote. They are quite a departure from M&J’s brightly coloured signature pieces, the idea springing from an old black-and-white photograph brought in by a customer. Words Jess Roberts
Ian says bringing the panels to life was a lengthy process, beginning with the creation of three prototypes: panels of wet clay each overlaid with an enlarged feather image to trace over, then carving out the grooved feather strokes with a clay tool. Once dried and fired, these ‘negatives’ act like giant stamps - a fresh panel of wet clay is laid over the top of each one and rolled with a rolling pin to imprint the pattern. “That’s why it’s a bit fainter in some areas and more pronounced in others, because you can’t really see what you’re doing until you peel it off,” says Ian. “It’s a bit of a learning curve but it gives a nice ethereal look, with the feather almost fading into the background.”

After the first firing, the panels are brushed with white clay to bring out the texture of both the feather pattern and the clay surface. They’re then fired again - at a blistering 1000 degrees! - so that the white clay can melt and set. After this, Ian applies the final coat, a dark satin-matte glaze which is painted on and then rubbed off again, allowing the glaze to catch on all the textured parts of the panel. He says he’s still experimenting with how much of the glaze he rubs off, but likes the subtle, pared-back look that it creates. Ian’s office/workspace is a veritable Aladdin’s cave (if Aladdin was really into ceramics), tucked away in a corner of
the busy factory floor. It’s full of various experimental pieces, pots of paint, glaze samples and arty inspirational objects. He is already working on his next project - a new tile design painted with matte glaze colours, and says he enjoys the freedom that comes with having the showroom onsite to try out his new designs and creations. “I just do what I want and hope everyone likes it,” Ian grins. “Sometimes it works out and sometimes it doesn’t!” The Feather Panel sets retail for $595, and can be ordered by calling the showroom by email. 09 422 7116
