Background information FW Intertrading Company, aromatic coconut business, was established in 2015. The company came into existence partly because the owner enjoyed drinking water from young coconut. The concept is that beauty is skin deep. Having to peel off coconut husk in order to drink its water is quite a job because one must remove all the husk if both water and the meat are to be conveniently consumed.

She could easily obtain quality whole green coconut from a friend who has been in coconut business for quite some time. The water and the fresh brought her joy.
With such positive impression, she started preparing whole coconut and asking Thai and foreign friends to try it. They all enjoyed her preparation of Thai young coconut. A Korean friend even wanted to take it back to Korea after tasting it. The idea was if it tasted so good it would sell well in Korea. She so asked around how to go about exporting coconut. 13
Unfortunately, she came across discouraging comments from a friend as young coconut would remain fresh for only a few days after being peeled off its husk. She and that friend so formed a
partnership and carried out experiments on how to export fresh coconut. They came up with a method to obtain young coconut with long shelf life. The coconut remains fresh and tastes fresh when delivered to consumer. This was how the business on aromatic coconut water took off and the product has since been in high demand worldwide. 14
Coconut quality depends on harvesting time When aromatic coconut trees are full grown, harvest can be carried out every 20 days to obtain a coconut bunch. If the coconut is not ripened, the meat is very thin and translucent. This is so-called 1-lay coconut meat. The coconut water obtained at this stage is slight sour and tangy. It is not desirable to consume this kind of coconut. A little more ripened, the meat is milky white on the outer layer and clear gel-like on the inner layer. At this stage, known as 1 ½ layer, the milky white layer being twice as thick as the gel-like layer, the coconut water is optimally sweet and aromatic. In the next stage, the water is still pretty much the same but the meat is 2 to 2 ½ layers thick, slightly less tender and more solidified.

The most popular coconut tree suitable for coconut water harvesting is aromatic green dwarf, Cocos nucifera L., especially from Angthong orchard. The coconut tree bears large coconuts that do not crack easily after husk removal.

Aromatic coconut preparations There are 3 types • Delicate series (ready-to-eat). The top half of coconut shell is removed showing coconut meat. It is ready for consumption and can be stored at -18 degrees C for up to one year. Once thawed and refrigerated at 0-4 degrees C, the coconut can keep up to 30 days. • Diamond series. The top husk is partially removed exposing the whitish fiber underneath. This preparation is commonly served in many hotel restaurants. Refrigerated at 0-4 degrees C, it can keep up to 2 months. • Driblet series. The entire husk is completely removed, easily held in one hand. Refrigerated at 0-4 degrees C, it can keep up to one month. 18

For delicate series, coconuts are methodically packaged in boxes. Domestic shipping requires icecontaining stylofoam box. For international shipping, it requires cold storage with temperature control at -18 degrees C for the entire journey. Each box, plastic sealed, contains 24 coconuts arranged in 2 layers of 12 each, with each coconut being individually padded. Such 416 boxes can be stacked up in a shipping container, or some 9,984 coconuts per container.

They differ in form and size but they all taste the same. These processed coconuts are available in different preparations. For example, the delicate series which is ready to serve, with top half of the husk and shell removed and coconut meat exposed, each coconut weighs about 450-500 grams. For driblet series, with the husk removed and intact shell completely exposed all around, each coconut weighs about 400-500 grams. For diamond series, with the crown of husk removed, each coconut weighs about 700-1,000 grams. These preparations are subject to seasonal availability. 22

Unique characteristics of Lamai aromatic coconuts Each month, some two million coconuts are sourced from different contracted farms of about 400 acres of plantations. For delicate series coconuts, the upper half is removed to expose the meat. They can keep frozen for one year. The taste remains the same as Day 1, the day of coconut processing. Thus, thawed coconut after being frozen for one year will taste fresh similar to the day it was purchased.
