hese are the words that have marked our path while creating the magazine you have now in front of you. Even if our is a small world made of knives enthusiasts, thanks to the internet, sitting comfortably in our homes, we are able to reach anyone in the world that shares our passion. While continuing to support and develop our local Italian paper magazine, COLTELLI, we decided to act globally. We intend to create a bridge between different cultures, styles and crafts that up until now has not seen the light. It is our intent to support the share of knowledge, passion and ideas through this digital magazine. Our aim is to offer an outlook on the excellencies of the knife trade – both Italian and international – to professionals and industry savvy as well as to anyone that wishes to get a better grasp of this incredible world. Knives International Review, every month, will be sent free, to over 5.000 thousand knives manufacturers, craftsman and shops around the world and it will be also available on our web site www.caffeditrice.com. oselli is a Finnish famous brand of 1 Nordic knives. The couple we will talk about will take us back in time, when it was usual to carry a blade for the most various artisan works. The Grandmother is small and very sharp, particularly suitable for hardness. Even if cheaper than the women or kids, if properly taught above mentioned ones, it is capable and supervised. It has a blade of to give great satisfactions. just six centimeters, which is more The use of such a steel calls for a than enough for small tasks. The bit of maintenance. After each use Grandfather has bigger dimensions you have to clean and oil the knife, and is the perfect jack of all trades, avoiding to store it always in the even if it does not aspire to be used for hunting. For this task, there's the Hunting, which is almost identical to the Grandfather, except for a ten centimeters long blade, that makes it more suitable for the job but also bulky. In Roselli catalog you can find some UHC special steels variations and also the legendary and very expensive Wootz damascus - which contains between 1.5% and 2% of carbon that allows to reach 64-66 Rockwell degrees. For the normal production, to which our models belong to, it has been used the German W75 by Krupp, with an amount of carbon 2 between 0.7% and 0.8%. It is machine forged and tempered at 60-62 HRC 4

sheath. Nothing too complex about it. The profile of the two knives is very simple but, as often happens, very practical and exploitable. The sides are left in black forged, which keeps them from rusting. An oval metallic guard avoids the wear

out of the wood in the case of abrupt contacts with what is being cut. The Grandmother tang is hidden with a

small wrought protrusion at the end of the handle, whereas the Grandfather has his hidden inside the wood. The Roselli handle, like many Nordic knives, is made of curly birch, a variation that displays a lively pattern, often with darker dots or lines and stronger than the birch we know.The design varies from piece to piece, as you can see from the knives of this article. The richness in the details has been reserved to the biggest and expensive one.The producer name is iron branded on the wooden handle and it is not on the steel. As these are very handy blades, the design of the handle is different from one to the other. The small one carries a very agile, straight and with an oval section handle which makes it perfect for tasks of precision. The bigger one, that has to carry out a more ample set of duties, has a solid birch handle that fills the hand and offers a strong and firm grip. For the same reasons we find also a hint of a

guard where we can place the index when in a forward grip.The wood has been treated probably with wax so to avoid soaking, but not polished to ensure a good grip. The Grandmother is to be carried by the belt in a sheath of pale leather, closed with white stitches and metal rivets. Inside the sheath there is a protective plastic film that avoids cuts. The Grandfather can have a similar sheath, or you can choose the one made of birch and deer leather. Both do not require retaining systems, since the knives will be covered up to three-quarters of their handles. î ľ

FOLDER

SOLID TM1 is the first LionSteel folder that unites the monolithic Solid construction to a backlock mechanical scheme. The result is a digest of technique and, moreover, a practical and safe knife text and pictures by Tommaso Rumici

L

ionSteel was founded in 1969, in Maniago - Italy, by Gino Pauletta and his wife Cesarina Bazzo. At the very beginning they worked for other knife factories of the area. Then the first foldables were designed and sold directly. The first part of the name was inspired by a stone sculpture of a lion made by Gino's grandfather. At the end of the 90s, Daniele, Gianni and Massimo started to work in the company. In that period, LionSteel production was mainly focused on the Italian

market, and especially on the Sardinian one. During the first years of 2000, LionSteel took of on a renovation of the production process and of the product itself. IT, CNC, new designing softwares and new technologies were introduced in the still small lab. It was at that time that the most strategic and important decision was taken. Keep producing in their own facility in Maniago and concentrate all the efforts and energies inside the company, on the technology and the people working with them.

Step by step, this strategy ended up being winning. The innovation of the production process allowed LionSteel to create products that were always at the state-of-the-art, which in return sanctioned them as leader in the high-end knives making. So far the company has shown

qualitative standards. LionSteel was a pioneer in studying the processing of titanium, advanced metallurgy and CNC processes and this made the company a

worldwide author ity in these areas. As of now, the company has more than twenty employees and is directly present in 34 countries with over 90% of the revenues coming from abroad. Foreign acknowledgments One of the milestones of the LionSteel philosophy is to produce its knives in its plant, avoiding the sale of third parties products, especially those coming from the East. Ever y product is proudly made in Italy. LionSteel states that this is the only way you can really have a thorough control over product quality. Outside Italy, the production plant is well known, especially after having collected many acknowledgments in the famous international Blade show. The fir st one ar r ived in 2010, when the SR1 has been defined " M o s t i n n ovat ive I m p o r t e d Design". In 2012 the T3, built in collaboration with DPX Gear, was again appointed with the "Most Innovative Impor ted Design". 7

The ultimate acknowledgment came not too long ago, with the award of best company and best product. In Atlanta, TiDust Folder - the flag-ship of the entire line, has gained the most important " B e s t M a nu f a c t u r i n g Q u a l i t y Award", the Hi Jinx, designed by Ken Onion and produced for Columbia River Knife & Tool, was honored as "Overall Knife of the Year". In spite of all this success, the corporate mind remains the same. The LionSteel team does not want to rest on its achievements and

keeps investing in machineries and studying new solutions with the intent of maintaining the company at the state-of-the-art. TM1 After the success of SR1 and TiSpine, both frame-lock, LionSteel wanted to propose to its clients a different mechanical approach, and with the TM1 has launched a full-size folder with a pump lock. The design is by Michele Pensato, aka "Molletta", who collaborates with the company since the early

Lionsteel has been awarded with the prestigous “Best Manufacturing Quality Award” at the last edition of the Blade Show in Atlanta. The knife that made it possible was the TiDust, a special edition of the TM1. What makes the TiDust so special? The only difference is the handle. It's the first knife in the world that has been realized with the DMLS (Direct Metal Laser Sintering) technology. This special processing, which is part of the so called Addive Manufacturing, allows the creation of the whole handle starting from the 6Al4V titanium dust and using the selective fusion. The advantage is self evident if we think that TiDust gained in robustness - compared to the standard handles mounted on the TM1 - but has not gained in weight. As of now, the only disadvantage is represented by the costs of this technology. TiDust has been produced in just 100 units and, even if LionSteel did its best to contain the final pricing, they are offered to the public at 1,300 Euro. 8

both materials, it's through the touch that you feel the difference. The micarta feels like velvet, thanks to the cotton layers and seems to offer a better grip, whereas the carbon lets you feel the grooves along the surface of the handle. The two ver sion do not differ in their destination of use. The choice belongs only to matters of aesthetics and money. As already said, the lock is action pump, but instead of the usual single spring, we find two springs under the lever. In this way it is ensured a smoother functioning and a greater constancy in time. The dimensions of the locking tooth are quite generous granting even more safety to the system. At the same time the overall safety of the knife is extremely high, given the not abundant number of components. Even if the locking system feels granitic, the mechanics is extremely fluid dur ing the rotation. Mainly the merit is of the IKBS system which uses two ball bearings between the blade and the handle with extremely precise tolerances. The opening is controlled by the thumb through a screwed insert.The cutting edges are Sleipner steel, satin-finish or coated in black PVD. The edge has a consistent curvature and the last part of the spine, slopes diagonally. This gives the profile a touch of originality and offers a higher

adaptability as it takes the point in a central position in respect of the handle. The thickness on the spine is again generous, but decreases immediately to values more in line with a cutting tool, avoiding certain excesses already seen elsewhere. The brandings are just the way we like them: few, small and not in the bevels. They tell us about the producer, the steel, the Italian origin and the presence of the IKBS system. The name of the model is engraved on the spine of the blade, just before the opening insert. The clip is at the end of the handle, where we find also a glass breaker with a tungsten carbide point. The clip seems short, but as soon as is tucked to the pocket it feels just right. You can carry it tip up. The blade is firmly locked when closed so you don't need to worry for possible incidents. As said at the beginning, this is a full-size folder and therefore we cannot expect not to feel it in our pockets. On the other hand, compared to other competitor s models of the same size, it is extremely comfortable. Last but not least, left-handed people will be happy to know that the entire knife is ambidextrous, since the clip is easily reversible. TM1 with carbon handle are sold in an elegant leather case, which is an optional that you can request if you buy the micarta version. 

Solid, meaning that it derives from a single piece that has been milled using CNC machining stations. The level of this kind of work - which is the same used to create titanium monolithic handles, reached by LionSteel is incredibly high. Just look at the passages between the surfaces that show no interruptions, the spine and the sides are distinguishable only where the producer has decided to hint the disruption. The ergonomics are very well finished.The grip swells to better fill the palm of the hand and when holding it you cannot feel edges or imperfections of any kind. Even if the shape is the same for

An important French store - the Parisian Armes Bastille - has created the Randonneur, a new sporting knife brand in collaboration with the talented designer Fred Perrin. text and pictures by Tommaso Rumici

T

he French knife production typically is quite conservative, concentrating in the reproduction of great classical of the regional tradition instead of proposing modern sporting knives. Obviously there are quite a few illustrious exceptions to this rule, as the famous Fred Perrin, or the new generations of knifemakers that are emerging as Sacha Thiel or Bastinelli Creations, just to cite a few.

The Akeron brand A ke r o n i s a yo u n g b r a n d o f French industrial knifemakers, with production in France and is distr ibuted by the renown store Armes Bastille. Located in the center of Paris, the store was established in 1953 and offers a wide selection of industrial brands as well as custom from all over the world - in some cases the store acts also as a distributor.The philosophy under the new brand is completely

explained in the Radonneur series, which is the result of a collaboration between the Armes Bastille team and Fred Perrin, one of the most famous French knifemakers. The idea was to offer a straight knife, compact and adaptable, to be used in outdoor activities without leaving aside a careful design. The name Randonneur means literally "walker" or more elegantly said "hiker" or "wayfarer". Illustrious origins Fred Perrin is a famous French knifemaker, very busy in the filed

of tactical knives. He has a profound experience in the military and martial arts fields,which often transpire in his creations. One of his knives distinctive traits is the deep hollow for the index finger in the barycenter of the knife, thus offering more precision and safety when handling it. The one with Akeron is not the first collaboration in the industrial arena for Fred Perrin. In fact he designed for Spyderco: the Swick, the Street beat, the Streel Bowie, the Bi-fold, the Perrin, Spot and, the P.P.T., together with Philippe Perotti and Sacha Thiel.

The forefather The very first Akeron model was indeed the Randenneur: a small neck-knife extremely handy and very useful in the everyday life. The simplicity of this knife is only apparent as it's the result of a very careful functional study. Fred Perrin hand is immediately evident as soon you hold the knife, that is the extraordinary ergonomics that all his blades carry. The dimension are cut down, in particular the thickness of the blade as well as the weight are far less than other foldable. Nonetheless, the handle is

very comfortable it actually allows to work with precision and safety when directing the blade. Our sample carries black G-10 scales, with fixed pins, have a "ToxifiĂŠ" finish, which consists of a series of grooves that leave the surface uneven and make a better grip. The index groove offers a perfect and natural suppor t and the abundance of knurling on the spine of the cutting edge - thin and with grip, helps a lot the stabilization of the Randonneur when using the thumb. In any holding position that we'll need to use to finalize our

tasks, we can rest assured that our fingers will always find the right spot and, moreover, will always avoid the contact with the edge. Alenox is the steel used, and our sources tell us that it's very similar but not identical to the 440C, therefore perfect for a neck-knife which need to be sharp and at the same time resistant to sweat. Whichever the formula is, during the extensive tests on the edge of the Randonneur we were astonished with its performance. As a matter of fact the full-flat cutting-edge has much stronger influence on the

edge than what we thought. Through our testings we were happy to find out that the lower guard is properly developed thus ensuring more protection. The 3 mm of thickness is a perfect t ra d e o f f b e t we e n m a x i mu m robustness and weight containing. The blade design is very simple, drop-point with a strong point and aligned with the hilt: though finding something more versatile. In respect to other Perrin designs, were the tactical influence is more pronounced, this one is less aggressive and more focused on

6. The designer details are clearly shown on the blades of both knives. Not a strictly needed information, since Fred Perrin style is unmistakable 7. The black G-10 of the bigger of the two knives, has a surface treatment called "Toxifié", consisting in a series of striations that improve the grip 8. Should we want a more massive handle, we can simply wrap around the Mini tang a paracord, avoiding to choose between the various G-10 handles.

The Mini Randonneur Given the great success among the public, soon after the launch of the original, the Mini Randonneur was presented - which as the name suggests, it's the scaled version of the original one. The design goodness remains the same, so much so that all the considerations just made are applicable to the Mini Randonneur. The finger support change, the shorter distance of the tang causes the little finger not to find a collocation - honestly it's a price we are ready to pay in exchange for a lighter weight. The Mini, as the Randonneur, is offered with different kind of handles, but the sample we have doesn't have one. The handle is made of the tang, which is pleasantly boned to a fish bone. Of all the versions, this is our favorite since it's easy to carry at the neck and the weight is really reduced to the bare.Would we want a bit more grip, a little bit of paracord would perfectly suit the need. The blade is identical, aside its dimensions and the markings. On

the Mini we find the Akeron logo on the left side and the name of the designer on the right one. Cutting capabilities remain unchanged, even more amazing if we think that at first sight it looks like a pendant and not a real knife. The finishings of these small French are very satisfactory. True is that the inside of the fish bone there are way too many working signs, but on contact our hand never felt a sharp edge or an imperfection.We cannot really ask more from an everyday use blade. Kydex sheaths Both the knives we tested had rectangular Kydex sheaths with hindrances reduced at the bare minimum. Made from a single book-folded piece, they are closed with two folded tongues and a couple of metallic rings. They are clearly optimized for carrying them at the neck, letting a string or a chain through the two holes. Alternatively, we know there are more traditional solutions in leather, but we could not have them in our hands. The retention offered by the Kydex is safe, even if the area in the opening is a bit rough and needs some extractions before the knife can slide without resistance. The real and only disadvantage, typical of this plastic material, is the rubbing that eventually will ruin the bevels finishing.

What the Randonneur sheaths lack is the compatibility with the tech-lock, so in vogue these days, but we cannot think of it as a defect. A plastic loop would create an hindrance as big as the knife itself, therefore we prefer to carry our Randonneur on the neck or, alternatively, in our pockets. We want to thank our kind French colleague Frédéric Combe, without his collaboration we would not have been able to write this article.

T

he new Apnea9 by Mac, is a small fixed blade, ideal as a backup knife while diving, as well as the single knife to be carried in low risk situations, where it'll find its usefulness. The structure is extremely simple and very strong, since it's made of a single 4 mm thick piece of steel. The blade is symmetric and sharp, one edge is plain and the other is serrated, ready to cut into filthy nets or lines. Its hardness ranges between 55-56 HRC which is enough to ensure resistance in 14

event of stress and an easy sharpening. There are three openings in the metallic shape. The one on the blade is designed to straighten spears of spear guns, the one in the center of the handle is a shackle key and the one at the end of the handle is a lanyard hole. There are two ver sions, almost identical, except for the coarse coating of black PTFE, that you

can find only on the "BE" - the star of this article. The standard one is polished steel. Despite the finishing you choose, the resistance to rust is high on both knives as there are no interstices where salt can deposit. The producer logo is color

contrasted on both models. Even if the simplicity of the construction is quite extreme, the grip is really comfortable, with or without gloves. The two symmetric guards solidly rest in the hand and the curves from the second half of the handle ensure a proper grip for the safest use. All the edges have been smoothen so to avoid an early weariness of the hand. The sheath is made of two half shells that have been r ivetted together and made of semirigid

polymers molds to better withstand blows, bends and low temperatures and avoid cracks. Four holes and two wide loops give sufficient anchoring points to comfortably carry it on the belt, on limbs or on the BC. The entire surface has a thin and uniform coarse finishing, except for the area in the center of the anterior face, where you find the company logo. On the rear, "made in Italy" tells us that the product is completely made by the company, which has a great experience in producing molds for plastic materials. Finding the r ight compromise between retention and swiftness is a very important aspect of diving

blade design which has not been overlooked by Mac. T h e s h e a t h o p e n i n g h a s t wo dents where the guards can hook. When you need to use the knife, just lift one with the thumb - this will become a ver y natural and instinctive gesture. So much functionality does not correspond to a par ticular increase in dimensions, since the sheath remains flat, does not create bulkiness and is very light, just 17 grams. Knife and sheath together just reach the hectogram. The price, too, is ver y light and makes the Apnea9 affordable to everyone and easily replaceable if lost in low visibility situations.

he qualitative level reached by Italian knifemaking is being more often recognized outside its national boundaries , so much so, more and more companies choose Italy for the commissioning of their high quality knives, such as Spyderco, CRKT, Pohl Force and many other. Last, but just in terms of time, is the German Oberland Arms, known for the precision and reliability of its military and police force rifles. The project described in these pages has its origins in a document by Matthias Hainich - Oberland Arms CEO and great passionate user of blades, where he declines the main characteristics of a knife to Tecnocut (Italian company better known through its brand Viper). Based on his personal experience in carrying

Some weapons producers have in their catalogs cheap knives sold as gadgets, but really unable to catch the eye of blade passionates. Fortunately, others, as the German Oberland Arms, aim to high quality models by Editorial Staff

and using blades everyday, the Titan Sepp folder had to be practical, robust and functional as well as performing as its German rifles.

The specs

From the first draft of the specifications, this was going to be a titanium frame lock, with an open

handle, and a D2 blade of 95 mm with flat cutting edges, as on the previous fixed blade Black Sepp. For better ergonomics, the handle was

going to be curved and with areas to place the thumb on both normal and reverse grip. The liner was going to have a rounded serration, to ease the unlock. The opening pin was going to be removable and rounded, the stop pin inside the handle, and the screws black as the blade. Designed to be carried around frequently, the product was going to be pocket friendly, with no sharp edges that could ruin dresses. All of these precise specs can be

found in the standard Titan Sepp. It's a framelock, with handle made of two Ti6Al4V titanium plates of four millimeters and CNC machined, assembled with black screws and cylindric spacers that avoid dirt deposit. The shape of the handle is comfortable and safe, also suitable for bigger hands, with an index groove and a generous bottom guard. All the edges are smoothen and the surfaces have an opaque stonewashed finishing, perfect to hide usage signs.

Robust and durable blade

The blade is made of AISI D2 steel, tempered in a controlled atmosphere and has undergone

through a cryogenic treatment to better refine the final characteristics. The hardness range is 58/60 HRC, a perfect compromise between the sharpness durability, general robustness and sharpening easiness. Since it has been designed also for military purposes, the Oberland folder is only available with a opaque black PVD coating on the blade, where logo, brand and serial number are laser engraved. The outline is a drop point, very functional. The swedge takes half of the spine and makes the blade more aggressive. This is the only concession given to the design that, anyhow, does not have an impact on the functionality. Since this is 4

a tool for the same professionals that buy Oberland Ar ms rifles, the company preferred a 3.5 mm thickness - favoring cutting capacity and an actual use, instead of some imaginative abuses that sometimes we've see around. To comply with German laws, that do not allow carrying knives that can be opened with one hand, the folder is delivered with an ambidextrous opening pin, contained in a plastic bag. It will be up to the client to use it or not. Still the operation is very simple and you need a Torx wrench. The thumbstud will perfectly fall into its place, without sticking out from the scales and without being of hindrance in the pocket. 1. Unlike other weapon producers, Oberland Arms decided to include in its catalog high quality knives. And to have the expected high standard, has decided to commission them in Italy 2. The knife is given us in a black nylon sheath, closed with a zipper. The inside protects the titanium scales from blows and scratches while carrying it 3. 5. When closed, the Titan Sepp has regular hindrances, which make it easier to carry than what expected from such dimensions. Sometime you forget you are carrying it 6. Beyond the sensible tests, we took a step further. Here's a shaved nail and not a piece of the usual wood!! 7. After our tests the D2 blade was in awful conditions. A few strokes with some abrasive paste and got it back as new. It wasn't the PVD that gave away, but it was the smeared metal of the meat cans we used in our test 8. On this folder, brand marks are really cut down. We have only a logo on the left and on the right the Oberland brand with the serial number 9. The wire clip is very robust and is less visible than a folded plate. It's designed to let the handle stick out for a centimeter and half in order to keep the extraction faster

How does it work

The blades opens without jamming, sliding on metallic washers and stopping with a loud click of the titanium laminate. Already out of the box, the movement is perfect, but, as usual, it gets better after a little running in period. The lock is extremely sturdy, as we expect from a mechanism of this kind. The contact point between the blade and the elastic laminate is polished, so to avoid that the wear out of the coating may change the coupling ratio. During the life span of the knife, the wear of the materials is not a problem. In fact the framelock has sufficient travel to keep its functionality in time. The steel stop pin has four millimeters of diameter and it's caught between the two titanium scales. The blade has an indent that couples the same roundness of the pin, which expands the contact area and better distributes the stresses. When opened the knife is 22 cm long, and even if the structure is completely metallic, this ItalianGerman folder weighs less than two hectograms - the right light weight

that makes it easy to carry around even for long per iods of time. The wire clip is not a conventional choice, but it ends up being quite robust and it's less visible than a laser cut plate. In our case we can only wear it in tip-up position, both for right-handed and lefthanded, and it's shaped so to let stick out from the pocket roughly a centimeter and half of the handle - keeping the extraction faster. For more convenience it's possible to attach a lanyard in the hole of the posterior screw, and, if needed, you can link it to the pivot.

Field tests

Since we received a sample we could test the Titan Sepp on the field.

The knife lived up to what expected in theor y. It uncovered a great versatility thanks to its flat and of generous dimensions blade. We have tested it on different materials, but what really stroke us were not its cutting abilities - that were exactly what we expected, but the great comfort in using it. Unlike many other framelocks, working with the Titan Sepp for a long time does not tire out your hand. The PVD coating is very resistant and by using the knife it ends up only polished, without loosing its ability to avoid blade corrosion. Very positive is also the opinion regarding its carr ying as the it takes advantage from the steady a n d re s t ra i n e d t h i ck n e s s . Yo u won't feel the Titan Sepp, even if its

dimension is not exactly abridged. Even the clip, which was one of our unknown, passed our test as while holding the knife you do not feel its presence. In order to further corroborate the precision of the construction, we have taken apar t the knife and we assembled it back again. In the process we haven't found discrepancies nor variations of the couplings. Certainly, this folder is way too big to use it in a urban environment, but it suits perfectly a professional and outdoor use as the size is ideal. Above this size we start to consider a fixed blade. Of course our words make sense when the use of the knife is real and sensible. If you are seeking a foldable to break bricks or open car doors you should look elsewhere, maybe to oversized and more "tacticool" products. Each Sepp is delivered in a black nylon sheath - closed with a zipper - with a titanium-gray Oberland Arms logo that protects the knife from scratches and blows. As far this writing goes, the Oberland Ar ms knives can be bought directly from the producer website, or through armories or specialized shops that distribute the German brand.

BE AR GRYLLS PRO Ultimate Pro Knife by Gerber belongs to the knives created with Bear Grylls, a TV character known for his impossible missions in dangerous and wild parts of the world. Robust, resistant and tested for an intense use, it's the solution for those looking for a camping, hunting or generally for an outdoor blade by Gianluigi Guiotto

T

h e collaboration between the American manufacturer Gerber and Bear Grylls started few years ago. It gave origin to a very diversified line of blades that once in a while gets updated through some modifications that became evident by their use. And this is what happened to an integral that was presented to the market in 2011 and now comes back with the Pro abbreviation and some interesting improvements to the blade and sheath (still made in China). Ultimate Pro Knife, as all the models of the Bear Grylls series, is sold in a carton and plastic blister with a quite an intriguing design, which shortly summarizes the main characteristics of the knife. Inside the packaging there is a leaflet containing some basics on how to manage to get through survival situations. Though it's not a complete guide, it's still something useful to carry in the pocket of the sheath and get into the survival spirit. The blade is a straight edge drop point (in the previous version it carried a serrated portion and it was made of 7Cr17MoV steel) made of 9Cr19MoV steel, which is roughly the equivalent of a level between 440B and 440C. Therefore this blade compared to the earlier one should 20

be more strong - the full tang shape should grant it - and the edge should last longer. The tang ends with a flat based and serrated pommel that can be used as an hammer. It turns out to be very handy when you need to crack something hard, like a nut. The edge ends just few centimeters before the guard, creating an indent where the index finger can easily rest when working with precision, or when a

lever is needed - still paying attention in this operation since the edge is really very near. The spine carries an area of less than a centimeter without the black coating, which is destined to be used with the firesteel. Rubbing it with the blade does not present difficulties, but thanks to this little attention the edge won't be ruined. The handle is made of non-slip rubber with a Nylon core. It has three

holes, two near the guard (which contributes to the retention of the knife in the sheath) and one is at the end of the handle (where the whistle lace is fixed to). These three holes allow the knife

to be used as an emergency spite if tighten to a stick. On the back of the handle there are two areas with some lines: one is near the guard to host the thumb, and the other near the pommel which is used when the knife is handled as an hatchet, holding it by the end. Many of the changes are focused on the sheath made of rigid polymer with a pressure retention system. First of all, the area that holds the firesteel is waterproof thanks to the o-ring positioned on its base. In this version, it's no longer upside down and is solidly fixed (maybe a bit too much since you have to make a good effort to extract it) and losing it is no longer a chance. The grinder is new too, carrying a carbide stone substituting the classical diamond stone and positioned on the back of the sheath. The stone creates a V on which the blade can run on to be sharpened. In this way the sharpening is really an easy task. At the very end of the sheath there is a hole which ensures a dry enclosing for the blade. To carry it, you can fix it to the belt, both horizontally and vertically, but you can carry it in your backpack if 4 you use just the plastic part. In order to test the Ultimate

Pro we have decided to use it to cut some logs for the fire, and we managed to complete the task without pain in our hands and damages to the knife. We have used a log to beat on the knife that worked as a wedge and encountered no problems except for the few light striations on the coating of the spine. The blade coating, on the other hand, worked egregiously keeping itself properly adhering to the metal. The edge too kept its sharpness properly. To be highlighted is the comfort you feel with the handle, which during long working sessions, does not leave hand fatigued. î ľ

THE CHINESE CLEAVER W

ith its Pro series, Zwilling wants to address both kitchen enthusiasts and professional chefs by using the synthetic materials for the scales, a s re q u e s t e d by t h e hy g i e n i c regulations for the catering industry. This explains why the choice of blades is so wide and covers almost any kind of use. It comprises even unusual outlines as the paring knife as well as the Chinese chef's knife that we are presenting here. The cleaver, for us Westerners, is the knife with a long and heavy blade used by butchers to chop big chunks of meat or bones. This Chinese cleaver shares only its shape, but not its use when a chef uses it in the preparation of his traditional dishes. The use of this knife is far more similar to chef knives and the typical Japanese santoku, which the preparation of meat, fish and the 24

mincing of vegetables and herbs. In this latter use, the wide blade makes quick cutting strokes extremely safe, as it glides on the knuckles of the fingers. The shape similar to the butcher's tool may lead you wrongfully, but as

4. After the most stressful tests, we decided to head to the kitchen and evaluate its performance. The fact that you can close your thumb and index finger allows an excellent control over the knife

remains flat for the first two-thirds of the blade and it ends hollow in the last stretch. The edge is extremely 5. As you can clearly see from the photo, sharp, thanks to the steel used, which even the more stressful tests couldn't has been precisely forged through make the edge suffer. with the Friodur process in order to make it even more performing and flexible. It appears to be straight, but actually it's slightly rounded. This allows us to feel free to swing the knife towards the point or the handle, gaining a better contact with the cutter and making mincing easier. As already said before, even if the shape makes you think you can, you cannot chop bones or use it as a butcher knife to perform other heavy duty tasks. The cutting edge profile is clearly influenced by the Eastern culture, but the handle keeps the Pro series outline, created by the hand of Matteo Thun while revisiting the classical European three rivets design. Zwilling, in this way, offers the client a blade with some peculiarities and, at the same time, a handle that we are so accustomed to. The black POM scales are perfectly assembled. The tang and the pins are perfectly aligned with the surface of the handle and are almost unperceivable.The Pro series knives can be elegant even if they do not carry the researched wooden aesthetic typical of other series but that cannot be used in professional arenas. The peculiar geometry of the area between the tang and the blade, allows a proper grip with thumb and index finger, gaining in this way a superior control and a safe and precise use. The use of the Chinese chef's knife is immediately intuitive and practical, so much so that it can race to become the king of the kitchen, but of course this depends on your own cooking style.

FIVE YEARS OF FRIENDSHIP

The knifemakers national gathering held by La Britola lab in Valdobbiadene, has recently celebrated its fifth edition in a astounding location - deeply tied to the artisan tradition of cold weapons by Tommaso Rumici

T

h e city of Vittorio Veneto, specifically Ceneda, hosted the fifth edition of the Italian knifemakers gathering, organized by La Britola lab in Valdobbiadene. For the first time, the location was the recently restored sixth century loggia by Sansovino, an important change that brought the gathering in a square that attracted even strollers of the Sant'Osvaldo's fair. The place was chosen carefully, since Vittorio Veneto county has its origins in the unification of two boroughs (Ceneda and Serravalle) that stood in a area crossroad to deals between Italy

and Northern Europe and renown for the high quality of cold weapons that were forged there. Since the Middle Ages, the so called Mastri Spatarij (sword master craftsmen) used to work the metal from the near Bellunos' mines, rich in manganese, and forged with a technique called "a stoffa" - consisting in layering sheets of steel and iron at high temperatures so that they would weld and then tempering all at 11° C in the waters of Meschio river. Very soon the swords of Ceneda and Serravalle became so renown that many were the armies that

employed them. Even a sword made by Marson da Ceneda was used by King Gustavus Adolphus of Sweden during the Thirty Years' War, and now is displayed in Stockholm at the Livrustkammaren Museum. The founding idea of this gathering never changed. The organization does not aim to create a new fair, but instead, a moment of reunion between knives enthusiasts and non-enthusiasts, a chance to spread some culture and the opportunity for the Italian craftsmen to meet without creating rivalries and misunderstandings that are so detrimental to this environment. 1

Even if it lasted just one day - Sunday the event was full of interesting moments. The gathering opened in the morning with local authorities giving their welcome to the many knifemakers that arrived from every part of Italy. A memorial medal was given to all the participants, and a parchment and a Magnum bottle of Prosecco Superiore were given to the knifemakers that helped further develop the gathering by participating to all the editions: Feder ico Ambrosi, Gianfranco Castelli, Igino Ferrarini, Marcello Inconsi, Gian Claudio Pagani and Franco Vernazza. Mr. Pagani (aka Fra' Diavolo) has received another acknowledgment for his continuous research and preservation of the traditional knife. The show then opened its doors to the public and in the Public 4

Library of Ceneda, the researcher and historian Oscar de Zorzi held an interesting dissertation about the Mastri Spatarij of Ceneda and Serravalle in the XVI century. After a lunch of typical barbecued meets of the Treviso area called Altamarca, everybody got back to the exhibition which ended up being a round table between exhibitors and visitors on matters pertaining artisan knife making, techniques and historical and cultural aspects of this craftsmanship. In the square facing the loggia, during the day, many were the demonstrations of forging, knife production and leather working which further enriched the public. This gathering is part of a wider collection of cultural events called "Via dei Magli", which this year ended in Asolo, in the province of Treviso,

During the day, the loggia was flooded by a heterogeneous crowd of enthusiasts and non-enthusiasts. The opening of the exhibition saw the awarding of those knifemakers that by participating to all its editions, have effectively contributed to the consolidation of the gathering, which year by year becomes more interesting and wider. 4. A true thank you to all the volunteers that managed to keep up with the heat of the power hammers under the rays of a July sun

where it's 600 years that the Muson dei Sassi river supplies water to the wheel of the ancient power hammer. The closing took place the second Sunday of November and here power hammers came even more useful as mean of heating while enjoying chestnuts, polenta and vin brulè. î ľ

Next time you'd better take with you the Powersync Solar Wrap Mini by Bushnell which is a solar panel made of foldable polysilicon. The packaging we have here belongs to the line of products by Bear Grylls, a popular TV character known for his adventurous enterprises around the world. When folded, the Solar Wrap Mini, takes really little space, it's smaller than a 10 Euro bill and weighs only 88 grams. Once opened, you can hang it on the back pack, as you see in the picture, and let it recharge in the sun. On both sides of the cylinder, there is a USB port to attach the devices to be recharged and a mini-USB port to recharge the 2,200 mAh Lithium Ion battery pack inside the mat. As a matter of fact, in the Powersync Solar Wrap Mini there are two recharging systems: through the s o l a r p a n e l (which takes about 10 hours, and is quite long) or through the USB (which takes 4 hours). Once recharged, Bushnell declares that the Power sync Solar Wrap Mini is capable of recharging 2,5 cameras or two smartphones or one tablet. LM
