Label discovers what makes the ‘Whirling Dervish’ of American fashion run so fast and how motherhood has calmed her restless pursuit of perfection.
W
ho is Rachel Zoe? How did a young woman with no formal fashion training become one of the most influential people in the fashion industry? It is a question that has been asked many times before but in essence fashion is her drug. Born in New Jersey in 1971 as Rachel Zoe Rosenzweig she reportedly rang her father on the first day of her job as a magazine fashion assistant in 1993 and told him that she would happily do the job for free because she loved it so much. Today she is THE fashion stylist in America achieving fame most notably for her work with celebrities. Fashion houses, beauty firms, advertising agencies and magazines editors are also clamouring for the Zoe touch and while her bread and butter work is stylist she has recently branched out into designing her own brand and range. Her first big break as a stylist was working with Jennifer Garner making sure that she was the centre of attention at the 2003 Emmys. In a town where image is everything that success did not go unnoticed and soon she had landed other high profile starlets such as Cameron Diaz, Paris Hilton, Lindsay Lohan, Keira Knightley, Anne Hathaway and Kate Hudson. However it was her partnership with Nicole Ritchie that really established her name. The then BFF of Paris Hilton became a media and fashion world darling when they helped launch the boho-chic look that consisted of large clunky jewellery, loose-fitting dresses and shirts, paired with an ultra slim frame. The size zero phenomenon was born and with it a round of controversy about body image and eating disorders. As the person deemed responsible for the skinny look, Rachel had to defend herself against all manner of accusations most particularly when a model died from an eating disorder. “Before I came along there were skinny women such as Audrey Hepburn, Twiggy, Veruschka and Kate Moss. I didn’t invent this look and everyone forgets that I also work with people who are a normal size.” That success was the catalyst for her first book. ‘Style A to Zoe: The Art of Fashion, Beauty and Everything Glamour’ was
co-written by Rose Apodaca in 2007 and made it to the New York Times Bestseller List. Everything you wanted to know about living a stylish life from a celebrity stylist's point of view was discussed including tips on home décor, dressing stylishly, travel, and entertaining. The next step of course was to become a reality TV star in her own right and The Rachel Zoe Project was born in 2008. The series followed the life and daily world of Rachel and her two fashion associates, Taylor Jacobson and Brad Goreski, as well as her life with husband and business partner, Rodger Berman. Goreski has since left to start his own TV show ‘It’s a Brad, Brad World.’ The fourth series focuses on Rachel dealing with Brad's departure as well as her pregnancy with Skyler, her first son with Rodger. As someone with the power and position to make or break a brand it wasn’t long before she branched out into releasing her own products or combined with manufacturers eager to jump on board with her personal vision for how something should look and wear. Judith Leiber handbags, Piperlime Shoes and Samsung mobile phones were just some of the companies clamouring to be associated with ‘the stylist to the stars’. In 2011 she released her first contemporary collection of footwear, separates and handbags with her love of vintage-inspired, 60s and 70s style showing through. For all the fabulousness that she has now Rachel still remembers how her life was not always smooth sailing. She suffered as a teenager from ‘Mean Girl’ syndrome when the girls at her school were ultra petty, picked on her for being different and didn’t want her to be successful. You have to wonder what those same girls are thinking now of their former class mate. “As far as I can remember, every dime I ever had went towards something extravagant,” she recalled of her life. For her it was about buying the very best that she could afford. “I would rather spend more, buy fewer items and have them forever.”

With husband Rodger Berman overseeing the operation, Rachel Zoe Inc. has ballooned into a huge operation with around 30 full time staff, and offices in New York and Los Angeles. She has well over 1 million Twitter followers and in December, the company’s digital-media arm, Zoe Media Group, which produces The Zoe Report, expanded to include e-newsletters Zoe Beautiful and AccessZOEries. Rumours of a fully fledged production company continue to swirl but as yet it is still under wraps. While styling remains her true passion, her obvious adoration and fascination with son Skyler has meant a change of focus for this human whirlwind. The ready-to-wear collection has become Zoe’s top priority. Done in partnership with global supply-chain-manager Li & Fung Limited, the collection cleverly has a mid-range price point perfect for the aspirational shopper who wants the look but can’t afford the high end price range of the top brands. She also has an extensive jewellery collection, taking inspiration from her personal vintage collection, and a highly anticipated cold weather accessories line of hats, gloves, belts and scarves. All this design activity doesn’t mean that she would abandon the clients and friends such as Jennifer Garner, Cameron Diaz or Eva Mendes who helped to make her a household name. “If Eva e-mails me,” she says, “I’m there.” From the fashion obsessed young woman who would have worked for nothing in the industry to a styling superstar and now designer, Rachel has made it to the top through hard work and a strong belief in her own talents. The final word should be her advice to all women in a quote about how to look your best without really trying. “When you look like you’ve stepped out of a catalogue, that's never good. artist For Marcus Edward talks about customers, cut and career.
L
ike so many people, Marcus Edward’s life on the Gold Coast began with a holiday. The family, after their stay, returned to Melbourne and then made the move north in 1991. After attending a few years of high-school here Marcus decided that school wasn’t what he wanted, so at the age of 16 he left to begin his journey and find a career. After a move back to Melbourne, Marcus fell into hairdressing, and began his apprenticeship with a boutique salon in Doncaster. “It was definitely the beginning of my passion for hair. Although after 12 months into it, my parents decided they were missing the Gold Coast and that it was time to move back.” When Marcus moved back to the Gold Coast he met and soon married another young hairdresser Alicia Robinson. Within a few years they had completed their respective apprenticeships and with very little money and a young baby, decided to open their own salon in Southport. “We opened the salon with only me, Alicia and an apprentice, but that didn’t stop us from setting our dreams high.” The motto was great customer service, loyalty, great hair and friendship. “We learnt a lot in those first few years in Southport, understanding our clients’ needs and educating ourselves in both business and in the fine art of hair.” Ambitious and hard working, growth and expansion were always the aim of this young couple. Whilst Alicia was pregnant with their second child and working part-time, Marcus concentrated on building a base of loyal customers believing that they would be the best investment possible. In 2003 “Marcus Edward Concept Salons”
was established, opening at Q Super Centre, Mermaid Waters. “We spent a lot of time on design for this salon, wanting to create a great space for our team to enjoy and a relaxed environment for our clients to be comfortable within.” With the success of this salon the Marcus Edward brand has branched out in many directions including the opening of other salon locations throughout the Gold Coast and a Marcus Edward hair care range. As well opportunities arose including working at Melbourne and Sydney Fashion week, magazine session styling and tending to needs of visiting celebrities who had heard of the amazing service and skill in the salon. “The team we have built up has contributed enormously to our success. The team is trained in the latest techniques and are just as focused on delivering perfection as well. They inspire us both.” Two years ago more excitement for the Marcus Edward brand when they were given the opportunity to refurbish their current salon at Marina Mirage. Marcus had the privilege of working for the previous owner whilst finishing his apprenticeship many years ago. “It was a great feeling to be back in that environment and to be a part of that particular community again. It was almost like going home.” Away from work Marcus enjoys football and basketball and is a huge fan of the Titans and the Bulldogs NRL teams. But most of all he loves spending time with his family and is blessed with two children, Jordan and Bella who he describes as his pride and joy. “The Gold Coast is a fantastic place to raise children; I still wake up in the morning loving the life I have in the best place in the world.”

bonnie Bonnie Rodwell talks about her dual life in two countries with two businesses.
F
or Bonnie Rodwell, businesswoman extraordinaire, her ambition drive and determination to succeed came from her early life. “My mum was a stay at home mother and really the most beautiful soul who never complained about her heavy load bringing up 6 children on a shoestring. My dad was tough and it was those lessons that taught me to be independent. I was driven by the need to never have to be dependent upon anyone for money.” Best known on the Gold Coast for her stewardship of the award winning restaurant Songbirds in the Forest, Bonnie’s initial success in life came about via knitting and the famous BONZ line. “BONZ started in New Zealand in 1985. I was at Auckland International airport and some American tourists asked where they could get a hand-spun, hand-knitted sweater similar to the one I was wearing. I went to the stores in the airport and they all had Fair Isle prints and other old fashioned items. I decided I would start a small business designing hand knits and have them made. I wholesaled for many years in NZ. My first retail store was in The Rocks in Sydney, then in Cairns, then Surfers, then the QVB building in Sydney.” A woman of enormous and restless energy, the success of BONZ was due to many factors but Bonnie has a simple philosophy. “Hard work plus good staff, a clear vision, huge passion and good weekly reporting,” she explains. “Even though I’m here working with Songbirds and away from BONZ a lot of the time, I have dedicated staff that are totally aligned with my business philosophy. We talk daily if necessary and have weekly Skype meetings.”

With such great success and so much on her plate, why then the decision in 2004 to buy Songbirds? Bonnie laughs at the memory. “My background is in admin and marketing, not restaurants. I had worked in restaurants and even managed one for a short time and so had some understanding – or thought I did – however I must have been a nightmare for Daren and Lisa Glasgow (my first Head Chef and Restaurant Manager and now owners of Chill) in those early days. This is the hardest game I know; hospitality can be great fun some of the time but just damn hard work for most of it.” Away from work Bonnie loves travelling to exotic places to unwind – except for the essential early morning updates via email. Relaxation is a simple formula – red wine with her many friends and meditation. She speaks with great love and affection for her 21 year old son Oscar describing him as her greatest achievement. “I’m looking forward to being a grandmother and passing on the skills I have learnt to the next generation. The rest of my life will hopefully be more about taking time for me and enjoying some inner peace. I’ve invested a great deal of time in business and personal growth over the years and I’m hoping that I’ll have the opportunity to guide others starting out. I’d also like to live in another country, learn the language and immerse myself in the local culture and get involved in helping those local families, especially the women. There’s so much still to do!” It is hard to imagine Bonnie ever slowing down as she scurries through her daily life but whatever the next chapter brings she will do it with great enthusiasm and integrity.

Behind the brand Bianca Spender was never going to be an ordinary girl. With the launch of her latest collection, she divulges the secret to stepping out of her parents’ shadows – practicality, perseverance and Paris. What attributes do you bring to fashion design that sets you apart from everyone else? It’s difficult to answer. I aim to create what I call ‘modern poetry’ in design. I like organic movement and draping fabrics around the body. In contrast, my tailoring has a sharper cut with innovative construction to add an edge to softer lines.
two feet. Over there no one knew who Carla Zampatti was. There were people from all over the world working in Paris, this made it competitive but inspiring. The French are strong about being an individual so it was a place and time where I got to experiment with my own style and creativity.
You started by completing a bachelor of commerce degree at the University of NSW before changing career paths. What brought about that change? It was important for me to learn about business, but I realised when I had finished that I wanted to create what I was going to sell. Then it was about discovering whether I had the passion to make fashion work as a business. Obviously I have been around fashion all my life but I had to decide whether I wanted to do it for myself. I found because the business of fashion is complex, my education has been essential. It’s a completely different discipline to what I learnt but it really has been a great help to me.
With the increasing dominance of online trading how hard is it to maintain a presence at street level? We do have an online presence, which I like to think is practical and easy to use. To maintain street presence you do need to provide that extra level of attention through your stores. Your staff has to be passionate about the product to truly engage their customers. Each season I show my collection to our consultants, explaining the print, colour, form and details of the designs. This adds another layer to the product which they can relay to our customers, making it more of a one on one experience with a personal connection.
Your father John Spender was a politician, lawyer, diplomat, judge and your mother, Carla Zampatti, is one of the most revered names in Australian fashion. What the key things they have taught you about life and business? My mother is very instinctual and taught me to trust your instinct. I can be quite analytical so this is important for me to remember. My father has shown me how I can do anything if I try and try. This perserverence meant that I found myself living in Paris speaking French fluently despite never being great at French in school.
You describe your sizes as being generous. Explain that? It’s a reaction to my customer base. Every woman is different so it’s about finding a balanced fit to suit more women.
Following in the footsteps of a famous parent in any field is always tough. How did you find your own ‘voice’ in fashion? I went to Europe and worked in Paris for three years. I wanted to be in an environment that was a blank canvas, to stand on my own
How do you relax? I’m a very active person so it can be anything from swimming to bush walking, dancing, cooking or playing games. When I get together with friends, we always end up playing games over drinks, anything which makes me laugh helps me to relax.

What is your secret skill or talent away from work? I love gathering elements from nature and making objects. With my son we sculptured a Christmas tree out of gum nuts, twigs and twine. I love sculpture and find it is a very creative outlet and getting the children involved teaches them to be playful and imaginative with their environment.

Spring into summer Something for everybody was the pattern at the annual fashion extravaganza that descends upon Sydney for the 2013 S/S showings. MBFWA, or Mercedes-Benz Fashion Week Australia, is a giant celebration of fashion and culture that descends upon Sydney in April. Fashion designers, red carpet celebrities, bloggers, fashion tragics and retailers merge into one big ball of style, design and jangling nerves. From the more than 100 designers, literally from Aanchal Chanda to Zsadar, here are some that caught the eye of Label. Toni Maticevski is famed for his glamorous evening wear but took the minimalist tack with his pared back interpretation of red carpet dressing. Bronx and Banco were sexy, chic and oh so cute with a range that used delicate, flirty material in strong block colours and commanded plenty of attention from buyers. New Zealander Kate Sylvester drew inspiration from the men of Marilyn Monroe, no jokes about it being a large collection please. For Manning Cartell it was metallic everything with netting and soft leather used to tone down the edges. A contrast to that futuristic look was Talulah’s ‘Chasing Rainbows’ collection with flowers and floral mosaics mixed in with bright explosions of colour.

Tattoo begone A tattoo does not have to be forever. Cosmedic and Skin Clinic have ways to remove your unwanted ink.
T
he art of body tattooing has increased in popularity over the last decade and so too has the demand for tattoo removal. At Cosmedic and Skin Clinic we have been using laser to treat tattoos for over 15 years. Not all clients who seek tattoo removal wish to have all of the artwork completely erased. A variety of life changes influence the reason that clients seek tattoo removal, some clients may simply wish to fade their tattoo so that a different design can be placed over the original tattoo, other clients may only wish to remove part of a tattoo such as a name or a symbol of love that has faded. Weight loss or weight gain and ageing skin may contribute to undesirable changes in the way a tattoo looks. No matter what your reason for seeking to remove a tattoo or part of it, we understand how life changes and what may have symbolised your beliefs and likes at some point in your life do not necessarily reflect the person you are today. Having a tattoo removed is not as easy or quick as getting it in the first place. The removal process can take anything from two to five treatments and sometimes more sessions will be required to achieve complete removal of the ink. It is important to choose the clinic based on their expertise and experience in the art of tattoo removal as the process can take several months of treatment. Treatment of tattoo removal at the Cosmedic and Skin Clinic is done by qualified laser licensed nurses with over ten years experience in the art of tattoo removal. It is impossible to give an accurate number of treatments required for tattoo removal as all tattoos are different – the depth of the ink and the amount of ink in the tattoo is often variable – however in our experience most tattoos that consist of outlines usually fade significantly after a few treatments. Tattoos that have blocks of dense coloured ink will take longer to remove and coloured ink will be more difficult to remove than black ink requiring more treatments. To understand how lasers remove tattoos we need to understand how tattoos are done. The ink used to create the artwork in the tattoo is placed in the dermal part of the skin with either a needle or tattoo gun. The particles of ink are too large for the body to remove and therefore they remain trapped in the dermis. The goal of the laser treatment is to remove the tattoo without damaging the surrounding tissue and the upper layers of the skin. You may be surprised to learn that the laser does not actually remove the tattoo

ink, it is however a tool to assist your body’s own immune system to remove the particles of ink from the dermis. The laser light is absorbed into the tattoo and shatters the particles of ink into tiny pieces it’s then up to your body’s immune cells to pick up the tiny particles of ink and carry them away. This process occurs over several weeks and is the reason that your treatments are spaced out over a period of several weeks to months. Not all lasers are suitable for tattoo removal. At the Cosmedic and Skin Clinic we have four different types of lasers however only one of our lasers is used for tattoo removal. Our clinic uses a Q-Switched Nd Yag laser for tattoo removal, which is considered to be the gold standard for tattoo removal. The Q-Switched Nd Yag laser is a high powered laser which delivers energy in extremely short pulses delivered in nanoseconds. When the laser beam comes into contact with the colour in the ink it creates a photo acoustic effect which sounds like a popping noise, this is the ink being shattered into small particles for removal by the body. Different wavelengths of light are used to treat different colours in the tattoo. Very short powerful pulses of laser light help the preserve the upper layers of the skin and reduce the potential for scarring. Lasers or IPL machines which do not have the capacity to fire quickly and deliver high energy, increase the risk or scarring and are not as effective in the removal of tattoos. Tattoo removal treatment is not the most comfortable treatment to have done however because our clinic is a medical clinic we are able to provide your laser treatment practically pain free. Photos are taken before the commencement of each treatment so you can observe and track the process of your treatments. The treatment process takes only a few minutes and you are able to return to work after your treatment. Chicken and Chorizo Paella Serves 4 • Prep time 10 minutes • Cooking time 50 minutes 4 to 6 chicken drumsticks Sea salt and freshly ground black pepper 2 tablespoons olive oil 250g smoked Spanish chorizo sausage, casings removed, cut into 2.5mm-thick rounds or wedges 1 brown onion, finely chopped 1 red capsicum, cored, seeded, and diced 5 garlic cloves, finely chopped ¾ teaspoon sweet smoked paprika Large pinch of saffron threads 2 cups medium-grain white rice, such as Spanish Calasparra or Italian Arborio 3½ cups reduced-salt chicken stock 1 medium tomato, halved, seeded, and finely diced 2 tablespoons chopped fresh flat-leaf parsley Preheat the oven to 200˚C/180ºC fan-forced. Season the chicken with salt and pepper. Heat a paella pan or 30cm heavy ovenproof frying pan over medium-high heat. Add the olive oil, then add the chicken and cook,
turning occasionally, for about 5 minutes, or until the chicken is browned on all sides. Transfer to a plate. Reduce heat to medium, add the chorizo to the pan, and cook, stirring occasionally, for about 2 minutes, or until browned. Add the onion, capsicum, garlic, paprika, and saffron and cook, stirring often, for about 3 minutes, or until the vegetables soften. Add the rice and cook, stirring often, for about 2 minutes, or until the rice is coated with oil and the mixture looks dry. Stir in the stock, 1 teaspoon salt, and ¼ teaspoon pepper. Return the chicken to the pan, arranging it in a single layer and evenly spaced. Increase the heat to high and bring to a simmer. Transfer pan to the oven and bake, uncovered, for about 30 minutes, or until the rice is tender and the chicken shows no sign of pink when pierced at the bone with the tip of a small sharp knife. A sign of a good baked paella is crisp rice around the sides of the pan. Let stand at room temperature to allow the rice to settle for 5 minutes. Sprinkle the paella with the diced tomato and parsley and serve hot.

New York Cherry Cheesecake Serves 12 • Prep time: 15 minutes • Cooking time: 1 hour 45 minutes, plus 1 hour cooling time and at least 8 hours refrigerating time • Storing: The cheesecake can be refrigerated for up to 2 days. Butter for the pan Crust 12 whole digestive biscuits 3 tablespoons sugar 75g unsalted butter, melted Filling Four 250g packages cream cheese, at room temperature 1¼ cups sugar 2 teaspoons finely grated lemon zest 1 tablespoon lemon juice 1 teaspoon pure vanilla extract 4 large eggs Sour Cream Topping 2 cups sour cream 3 tablespoons sugar Cherry Topping 500g fresh cherries, halved and pitted 3 tablespoons sugar 1 tablespoon lemon juice Position a rack in the centre of the oven and preheat the oven to 180°C/160°C fan-forced. Lightly butter a 23cm springform pan with 8cm-high sides.
To make the filling: Clean the food processor bowl, then blend cream cheese and sugar until smooth, occasionally scraping down the sides of the bowl with a flexible spatula. Add the lemon zest, lemon juice, and vanilla; pulse to combine. Add the eggs and pulse until blended. Pour the filling into the crust-lined pan. Place pan in a large roasting pan. Pour in enough hot water to come halfway up the sides of the springform pan. Bake for about 1 hour 15 minutes, or until the filling is set except for the very centre when the pan is gently shaken (the cake will become firm when chilled). Meanwhile, prepare the sour cream topping: In a medium bowl, stir the sour cream and sugar to blend. Spoon the sour cream mixture onto the hot baked cheesecake and smooth it over the top. Continue baking the cheesecake for another 15 minutes, or until the topping is set. Let the cheesecake cool in the pan on a rack for 1 hour. Run a sharp paring knife around the edges of the cheesecake to loosen it from the pan sides (leave the sides in place). Cover loosely with plastic wrap and refrigerate for at least 8 hours, or until the cheesecake is thoroughly chilled. To make the cherry topping: In a medium bowl, combine the cherries with the sugar and lemon juice and toss to coat. Let the cherries stand at room temperature, tossing occasionally, for about 30 minutes, or until juices form. Remove pan sides from cheesecake. Cut the cake with a large sharp knife (dip knife in hot water after each cut to moisten it and wipe it clean) and transfer to plates. Spoon cherry topping over and serve.
To make the crust: In a food processor, grind the biscuits into very fine crumbs (you should have 11/3 cups). Add the sugar and melted butter and pulse until moistened. Press crumb mixture evenly onto the bottom and 4cm up the sides of the pan. Bake for 12 minutes, or until the crust is a shade darker. Cool on a rack, then wrap three layers of wide heavy-duty foil around the outside of the pan.

Sliders with Red Onion Marmalade and Blue Cheese Serves 4 • Prep time 10 minutes • Cooking time 40 minutes Red Onion Marmalade 45g unsalted butter 3 medium red onions, halved, cut into 5mm-thick half-moons ½ cup sugar 1 cup dry red wine ¼ cup red wine vinegar Sea salt and freshly ground black pepper Quick Aïoli ½ cup mayonnaise 1½ teaspoons lemon juice 1 teaspoon Dijon mustard 2 garlic cloves, finely chopped Sea salt and freshly ground black pepper Sliders 750g lean beef mince Olive oil, for coating Sea salt and freshly ground black pepper 8 slider buns or wholemeal dinner rolls, split in half 1 cup crumbled blue cheese (125g) 60g baby rocket (about 3 cups) To make the marmalade: Heat a large heavy frying pan over mediumhigh heat. Add the butter and swirl the pan to melt the butter. Add
the onions and cook, stirring occasionally, for about 5 minutes, or until they begin to soften. Reduce heat to low and cook for about 12 minutes, or until onions are tender. Sprinkle in the sugar and stir well. Add the wine and vinegar and cook, stirring often, for about 15 minutes, or until the liquid is reduced and syrupy. Season to taste with salt and pepper. Reduce heat to very low and keep warm, stirring occasionally. Meanwhile, make the aïoli: In a small bowl, whisk mayonnaise, lemon juice, mustard, and garlic together. Season to taste with salt and pepper. Set aside until ready to serve. To make the sliders: Prepare an outdoor grill for medium-high cooking over direct heat. Shape the beef mince into 8 patties slightly wider than the diameter of the buns. Set the patties on a baking tray, coat them with a little olive oil, and season with salt and pepper. Brush the cut sides of the buns lightly with olive oil. Transfer the patties to the grill and cook for about 3 minutes, or until the bottoms are browned. Turn the patties over and top with the cheese. Grill, covered, for about 2 minutes longer, or until an edge of a patty (not covered with cheese), pressed lightly with a forefinger, feels slightly resilient, for medium-rare. Remove patties from the grill. Add buns to the grill, oiled side down, and grill for about 1 minute, or until lightly toasted, with grill marks. Remove from the grill. Spread the buns with the aïoli and mound the rocket on the bottom halves. Top each bottom half with a patty, followed by a generous amount of the marmalade and the upper half of the bun. t has been another hectic season of parties, events and satisfied guests at Glass Dining & Lounge Bar. Late in May we were privileged to once again host a welcoming cocktail party to help launch the Sanctuary Cove International Boat Show. The ‘Out of the Blue’ party had a blue jeans and deck shoes dress code with the added bonus of fund-raising for the Bravehearts child protection organisation. Lachlan Baker was a stand out as he performed some of our favourite arias with colartura Liza Beamish from the raised stage in the restaurant. A great night. Another sensational function was the Slim Magazine lunch. Money raised was to aid Uncles & Aunties as well as the Gold Coast Community Fund. The 150 women, (with a few men along for the fun), got to enjoy some stunning fashions from the Marina Mirage boutiques and solved the problems of the world over several glasses of chardonnay. As ever a few ladies opted to stay until the sun had set but the rule is still the same – what happens in Glass stays in Glass. We also hosted the annual Leukaemia lunch which was a great success and proves again how generous Gold Coasters are when it some to helping those less fortunate. This is an offer almost too good to refuse. On Saturday afternoons Glass hosts the Moët/Hennessy master classes. You get to learn the ins and outs of everything that is good and great about the magnificent products associated with these brands with an array of cheeses and nibbles plus the obligatory tasting of the finest French bubbles. While we are always striving to present the very best food, wine and service, it is extremely gratifying when the hard work and dedication is recognised. Glass was good enough to be one of the few to be acknowledged in the Brisbane Times Good Food Guide with a distinction for our amazing wine list. On the food front there is a lot to look forward to because executive chef David Pommiere has some exciting new changes planned for our winter/spring menu. Some of his culinary delights to be included are stuffed baby squid with smoked salmon mousse and baby vegetable salad, Provencal lamb cutlets with lavender braised chat potatoes in eggplant and blood orange purée and for the dessert lovers a dark chocolate and caramel mousse plate with honeycomb, confit orange zest and crisp wafer. I’ve tried them all and they truly are delicious. Don’t forget to come along and enjoy all the fun of our Super Sundays with the soulful sounds of Taj. Sit overlooking the Broadwater in the winter sun and relax as you enjoy our set lunch menu and a glass of whatever takes your fancy. Plate Up Ten years young and evolving faster than flash fried food, the Noosa International Food & Wine Festival (NIFWF) held in May has come a long way since the first tentative function with 150 guests. Today the festival is renowned around the globe with many of the world’s top chefs making the trip to participate in what has become a culinary must-do for gourmands. Kitchen stars from the recently released 50 Top Restaurant Awards who attended were Best Restaurant Asia winner Yoshihiro Narisawa, Ben Shewry from Attica, Sydney’s Peter Gilmore from Quay Restaurant, Mauro Colagreco from France, Thai whizz David Thompson, and Andre Chiang from Singapore. Their collective cutting edge use of technology, taste, design and art were crowd favourites as they showcased their skills, happily passing on the tips and secrets that have allowed them to rank among the world’s best. 62

Who’s who For foodies nothing beats the ability to get up close to the culinary stars at NIFWF. In no particular order here are some of the Australian stars who were on show and what they literally bring to the table. Adrian Zumbo: Who doesn’t love patisseries which means there is a lot to love about one of Sydney’s most celebrated patissiers. His love affair with confectionary, combined with his Parisian training, resulted in a cult like following for his deliciously decadent offerings.
Noosa Dreaming Why Noosa? For NIFWF director and famed local restaurateur Jim Berardo, it was a long held dream. “World class chefs had been coming to Noosa and the Sunshine Coast for years. They knew from personal experience what Noosa had to offer and we wanted to further establish the culinary reputation of the region which is why we created the festival. As well, we wanted to show why we had fallen in love with the region – the beaches, the hinterland and the people. The food and wine producers in the area are among the best in the world. The festival was a means of showcasing their produce and allowing those same producers to get to know the restaurants.” The level to which the festival has risen has amazed even Jim but like everyone involved with this unique mix of culinary and country, the journey has been an amazing and ever-changing adventure in the culinary arts.
Matt Moran: TV appearances and running the hugely successful Aria restaurants in Sydney and Brisbane plus the Chiswick in Sydney have given Matt an enviable profile. His buzzword is ‘seasonality’ insisting on producing the best meals from the freshest produce. Ryan Squires: Having worked across the globe, Brisbane diners should be thankful that Ryan chose the sunshine capital to open his Esquire Restaurant. With a multitude of awards, including the 2013 Gourmet Traveller’s ‘Hottest Restaurant in Queensland’ gong, he is as forward thinking as they come. Mark Best: This former electrician has literally blazed a trail through the culinary ranks after his late life decision, he was 25, to pursue a career behind the stove. His Marque Restaurant in Sydney has become a byword for the best of the best consistently winning awards and recognition around the world.
Highlights This year’s festival opened with a world first – Edible Music – not slow roasted sheet music but a gala concert featuring Jane Rutter and the Queensland Virtuosi Orchestra. The unique programme featured chefs slicing and dicing with the musical background proving the rhythm to their work. The frenetic paced Flight of the Bumblebee was not allowed. Cocktails on the beach – what could be better? Well if the cocktails are part of the World Class Cocktail Competition then a lot better. Guests could kick back on the sand and help judge the best ‘shake it and make it’ practitioner under the keen eye of Tim Phillips, the world’s best bartender. The Qantas Premier International Dinner was a standout of the week. An eight course degustation dinner with premium wines at Berardo’s Restaurant and Bar, the night featured the efforts of many of the top chefs. Best of all seating was in tables of ten so guests were able to mingle and mix. ollywood is about the deal. Can ‘a project’ get a bankable star to sign on the dotted line thus enabling the money to be invested that will ensure the film will be made? Literally the producers need all the stars to align before any pre-production can start and they leap into the great unknown of whether a movie will be a hit or go straight to DVD. So which stars are bankable and able to produce a great return on investment and the biggest bang for their buck? The names might surprise you. 1 Natalie Portman Thanks to the $350 million success of the low budget hit ‘Black Swan’, this 31 year old American/Israeli beauty tops the list. She is spreading her wings away from acting by producing and directing several films of late. 2 Kristen Stewart Don’t let anyone tell you that vampires are bad luck. Her role as Bella Swan in the last two hugely successful Twilight series earned Kirsten a cool $25 million. Not bad for working in dim light and without mirrors. She also has an endorsement deal with Balenciaga to be the face of a new perfume entitled “Florabotanica”. 3 Shia LaBeouf There’s a very real chance you’ve never heard of this 26 year old actor/director. He does however make money through his association with the Transformer movies. Stating that he no longer intends to star in any future movies from the franchise so his bankability may take a rapid transformation – down. 4 Robert Pattinson This English born actor has made his mark as another of the deathly white young things who palely loiter in the Twilight series. Given his star appeal it’s amazing he is not higher than his co-star Kirsten Stewart but away from the vampire genre his other movies have not been very successful. 5 Daniel Radcliffe Harry Potter has certainly cast a spell over the life of Daniel whose personal wealth from the movies is estimated at well over $50 million. From 2001 to 2011 he played the young
wizard but has insisted on forging a career for himself away from the Hogwarts School. 6T aylor Lautner Another of the Twilight stars who because of the success of the five films which first hit the screens in 2009 has rocketed on to our list. His role and physique as Jacob Black has made him a sex symbol and the highest paid teenage star in Hollywood in 2010. He is also a highly skilled martial arts exponent proving he can do more than bite. 7B radley Cooper Thanks to the enduring success of The Hangover series, Bradley has produced considerable return on his acting fees. At the ripe old age of 36 he was named as People Magazine’s ‘Sexiest Man Alive and last year received his first Academy Award nomination for his work in the ‘Silver Linings Playbook’. 8D wayne Johnson From his semi-professional football to a career as The Rock in professional wrestling, Dwayne understands show business and performing like few others. From his first leading role in The Scorpion King, he has managed to cross over into mainstream movie success providing a ready audience willing to share in his next cinematic adventure. 9A my Adams This list has nothing to do with ability or creativity and even though Amy Adams is one of Hollywood’s most respected actors her pay cheque is still small in comparison with much bigger names. Label’s pick departures Bernard Fanning When Bernard Fanning sings, Australia stops and listens. Departures is the much anticipated new solo album of the highly acclaimed former front man of Powderfinger. Over 10 tracks filled with synth, bustling beats and energy, the listener is taken on a journey of pure joy where Bernard is simply having fun. A multi-instrumentalist who plays guitar, piano, keyboards and harmonica, his solo music is generally described as a mixture of blues and acoustic folk. Recorded in late 2012 in Los Angeles’ famous Sunset Sounds, Bernard gathered some of L.A.’s best session musicians and placed himself in the hands of legendary producer Joe Chiccarelli. “I realised I’d benefit a lot more by having someone really experienced who could guide where the record went.” He was also determined to fully utilise the musicianship and skills of the musicians booked to help him achieve his goals. “There’s so much fear surrounding session musos, mainly because meddling artists don’t allow them to fully express themselves. I wanted these dudes to make a real contribution because I’d spent so much time in writing this record,” he explains. The lyrics are filled with eternal themes of loss, rebirth, relocation, death and children. In a short period of time his father died, Powderfinger broke up; he left Brisbane for Spain and welcomed the birth of his second child. “Living in Spain and being unable to communicate with the locals teaches you to observe and so I concentrated on moods and textures. And I love how muscular this record is – it’s a really big sound.” Departures is an album of great merit filled as it is with insights, soul and energy.

Grand Motors Toyota has embraced the ‘social network’ and is now using Facebook to interact with their customers. Facebook Facebook has become the greatest social connector in the history of the world but it has uses other than posting what you had for dinner or your relationship status. Grand Motors Toyota has embraced the new medium by launching their own page as a means of connecting with their supportive and loyal customers and supporters or followers through its Facebook page. The page gives customers the chance to view the great range of new, used and demonstrator vehicles as well as book a service and see current specials. While the Southport-based business has been servicing the Gold Coast and surrounds for nearly 50 years, the dealership’s executive coordinator Lauren Pembroke said the Facebook page is rapidly changing the way that customers and Toyota loyalists interact with the dealership. “Every day we put something quirky up there, a fact, something humorous or some advice,” said Ms Pembroke. “We also have people who post testimonials about certain cars and those that give advice or give advice via an opinion to those who have asked a question regarding their Toyota. It’s a wonderful forum for people to learn more about their car and stay in touch with everything that is new and exciting at the dealership or Toyota in general. It’s about 74

Here we go
again Ben Strangman discusses the latest legislation changes to body corporate law.
F
or over forty years OMB Solicitors have been providing legal services to our clients. Never in my recollection has an issue been as divisive as the changes that are continually being made to how the levies that people pay in bodies corporate are calculated. In my view there are two reasons why the continual changes are so divisive. The first is that changes in the legislation can have a very real affect on the value of property by changing the costs associated with owning that property. For most Australians their property is the biggest investment they have. The second is that while a body corporate is responsible for a number of different functions, it is first and foremost a community a community where people live, form friendships and call home. The previous changes to the legislation required committees of bodies corporate to make a decision. Unfortunately there was only one lawful decision that a committee could make and that was to increase or decrease what various owners paid in levies. This placed volunteer committee members in an extremely difficult position. It put them in a position where it looked as though they were the ones increasing or decreasing what owners paid in levies. In my view, this was completely unfair on those volunteers. Without volunteers in bodies corporate, the sense of community would be removed from a body corporate and the costs would increase as people have to be paid to do the tasks done by the volunteer committee members.
On 27 March 2013, the latest legislation governing how levies are calculated in the bodies corporate in Queensland obtained royal assent. This means that bodies corporate and lot owners are yet again going to have to go through a process that is very stressful and, in our view, pitches neighbour against neighbour. These changes to the legislation are likely to have a significant impact on the levies paid by individual lot owners. Some lot owners will now pay more levies while others will pay fewer levies. At OMB Solicitors, our dedicated Body Corporate team has worked with our clients to deal with the various changes to these rules over a number of years. We understand that changes in the way levies are calculated can be challenging to lot owners and have developed a process designed to make the transition as transparent and cost effective as possible. We have assisted in the transition from one regime to another in small bodies corporate and the larger, more high profile bodies corporate here on the Gold Coast. While the constant changing of the legislation does little to provide certainty, there is one thing that all bodies corporate can take as a certainty‌ every body corporate in Queensland will be affected by this latest change in the legislation.
