COVER STORY She is a hugely successful singer, dancer, actor and businesswoman, consistently voted one of the world’s most beautiful women. With two beautiful children and a string of new productions in the works, it seems Jennifer Lopez’s 47th year will prove to be one of her most remarkable.
The early years Completely self-made, Jennifer was driven and motivated from a very young age. Born in the South Bronx on July 24, 1969, she began taking singing and dancing lessons after completing high school. Things took off slowly but surely for the stunning Latino. She appeared as a dancer in some hip-hop videos (including New Kids on the Block) before she joined the Fly Girls, an all-female dance troupe starring on the television show In Living Color. This led to dancing work with Janet Jackson.
Screen queen At the same time, Jennifer was focusing as much attention on her acting career as she was her dancing. She had roles in several television shows (most of which disappeared as fast as they appeared) and made her first movie in 1995, My Family. Just two years later, she was cast in a lifechanging starring role in a biopic about the Latin-pop singer Selena – a role for which Jennifer was nominated for a Golden Globe award. The following year she starred opposite George Clooney in Out of Sight. In 1999, Jennifer turned her attention to her music career, releasing the huge hits that would turn her into a serious R&B star - If You Had My Love, Waiting for Tonight and Let’s Get Loud. The years that followed saw her cement her musical reputation with hits such as Love Don’t Cost a Thing and Jenny From the Block.
J Love While her dual careers in the entertainment industry were going from strength to strength, fuelled by Jennifer’s relentless drive and energy, her personal life was proving to be just as entertaining for her legion of fans. Relationships with P Diddy (Sean Combs), Ben Affleck, Chris Judd, Marc Antony (who went on to become her husband, and father of her two children), and most recently, dancer Casper Smart became tabloid fodder, turning Jennifer into the Elizabeth Taylor of her era. “I’ve been through divorce. I’ve been cheated on, just like every other girl in the world,” Jennifer told Self Magazine in 2015 while promoting The Boy Next Door, a psychological thriller that features her as a separated woman who falls in love with the high school-aged boy next door. Jennifer says her famous breakups have taught her one important thing – the value of solid relationships with your girlfriends. “I think I realised they were as important — if not more important — when I divorced Marc,” she told US Weekly. “I just realized that I had been through that (breakups) a couple of times and there they still were. Like they say, ‘Men come and go, but my girlfriends are always there for me’.”

Beauty and body Jennifer is known as much for her beauty as she is for her talent. Fresh-faced, curvy and bursting with vitality, the superstar seems to defy time, looking better and better each year. Jennifer told UsWeekly that staying in shape is no easy feat and she actually works hard at making sure her curves are in check. She revealed some of her tricks to staying youthful. “I don’t drink or smoke or have caffeine,” she told the magazine. “That really wrecks your skin as you get older.” And the food she loves to consume is mostly green. “We eat a lot of green vegetables, asparagus, brussel sprouts, broccoli and kale,” she said. She also says she does most of the cooking in her house. “I love to cook, I cook a lot of stuff, I love cooking Puerto Rican food because that’s what I grew up on.” Her breakfast is a 90-calorie chocolate Body Lab Shake. “By lunchtime, I’m starving,” she says. She mixes it up but a typical day is salmon and a veggie-packed salad. She loves broccoli, peppers and zucchini with a drizzle of vinaigrette on top. She usually has a protein with quinoa for dinner. “It feels like rice and beans, which I grew up with. And I like pork and chicken — especially Puerto Rican style!” Taking care of her skin is also a high priority. “I am rarely in the sun, but if I am, I wear a lot of sunscreen,” she says. “I’ve never been one to take a lot of sun, which is why my skin has maintained itself.” Sleep too is important, with Jennifer opting for plenty of shut-eye. “I love a good nine or 10 hours, but I can never get that” she has said. “So seven or eight is mandatory. If I don’t get it, I just don’t feel right. I start feeling crazy, I get emotional and I feel tired all the time.” What’s next? This year is set to be a very busy time for Jennifer, who turns 47 in 2016. As well as her ongoing role as a judge on American Idol, Jennifer also stars in NBC’s television series Shades Of Blue, with Ray Liotta. In January she also launched her three-year Las Vegas residency at Planet Hollywood Resort & Casino. “People who would never see me on tour will see me in this,” she says of the show, called All Of Me. “I’ve thought a lot about that. Like, if you came to see the Jennifer Lopez show, what would that be? What do I want to say as an artist? That’s what I’m trying to create,” she told USA Today. She said she watched old footage of Frank Sinatra and Elvis Presley, Barbra Streisand and Diana Ross to prepare. “I’ve set out to make my show feel intimate the way they did, by seeing the audience and interacting with them.” Whether it is business or personal, it seems there is very little the divine Jennifer Lopez cannot do.

Label speaks with the dynamic owner of chic eatery Mamasan HOW LONG HAVE YOU BEEN IN YOUR CURRENT ROLE? A little over 12 months but we’ve been non-stop since the venue opened in September last year. WHAT LED YOU TO THIS CAREER? After four years as an international flight attendant and having the opportunity to experience some of the best restaurants both in Australia and around the globe the one style of cuisine I always go back to is Asian. I felt a modern take on this particular cuisine was lacking here so after 12 months of research and planning we came up with the Mamasan concept. It also helps that I am a complete food fanatic!

WHAT DO YOU LOVE MOST ABOUT YOUR JOB? There really isn’t one thing that stands out, I really love everything about my work - from the day to day operation of a busy restaurant, meeting and greeting all our guests, to working closely with our head chef on menu design and implementation. One of the perks of this is that I get to test many amazing dishes before they make it to our menu! Also, seeing people enjoy what we’ve created makes all the hard work of running a restaurant well worth it. WHAT IS THE MOST SATISFYING EVENT OF YOUR CAREER SO FAR? A definite career highlight was finally opening Mamasan. Seeing all our hard work and planning finally coming to fruition was a monumental moment for me. IF YOU COULD CHOOSE JUST THREE DISHES FROM THE MAMASAN MENU, WHAT WOULD THEY BE? Our Glazed Lamb Ribs (spicy sweet sticky goodness), Spanner Crab Ravioli, and who doesn’t love the Mamasan Chocolate Brownie with the Salted Caramel fortune cookie chaser… it’s what dessert dreams are made of!

WHAT DO YOU ENJOY DOING OUTSIDE WORK? Any spare time I get I’m planning a new destination to travel to. I love experiencing the different cultures around the world and consider myself a bit of a food tourist (restaurant bookings come first before any other activity!) Spare time is limited with any new business so I also try to spend as much time with my fiancé JP and my family as possible. WHAT DO YOU LOVE MOST ABOUT THE GOLD COAST? Like most people, I love the lifestyle that the Gold Coast has to offer but THE most exciting thing about to hit the Gold Coast is that Sephora is finally opening here! (haha) My frequent trips overseas with my previous profession saw me become a bit of a makeup addict! It’s actually a really exciting time to be living on the Gold Coast - there are new businesses, including restaurants, that are of international standard opening here every month and finally we are able to have access to the same services and standards that our bigger city counterparts do. Now I don’t feel the need to travel so often because we have everything we could need here on the Gold Coast. I feel very fortunate to live in such a great city WHAT ARE YOUR PLANS AND HOPES FOR 2016? To continue with the success of Mamasan. ROCKING THE RUNWAY David Jones Autumn Winter 2016 launch danced onto the runway with a unique collaboration with the Sydney Dance Company to unite fashion, music and movement. The newly released ‘It’s In You’ campaign was reflected on the runway as guests experienced a true performance, choreographed by SDC Artistic Director Rafael Bonachela. David Jones Ambassadors Jessica Gomes, Montana Cox, Jason Dundas and Jesinta Campbell rocked to catwalk, along with international supermodel Catherine McNeil. The revolving circular platform served as an outstanding prop for models and dancers as they walked through the modern dance studio set, passing giant mirrors. The celebrated Australian designer family was joined for the first time by fresh international designers – Joseph, Phillip Lim, Versace, Alexander Wang and Maje made the Label cut. Our local designer loves featured lacy looks by Scanlan Theodore, Manning Cartell and Romance Was Born, flowing fabrics by Ginger & Smart, and shades of hot reds from Dion Lee and Camilla and Marc. Kaftans and co by Camilla had us booking our flights to Mexico, while Bianca Spender championed ladylike elegance with a cinched waist and ankle length. We are feeling the vintage vibes.

FASHION Where do you go for inspiration? It almost always starts with the stone, but then I am inspired by architecture, and this can inform how the piece is constructed. The construction of the piece is of the utmost importance to me. But this applies to any piece, regardless of its inspiration, and many of my collections draw inspiration from the cosmos, nature and the arts.

What pieces does every woman need in her jewellery box? Every woman needs a statement piece of high quality, big and bold yellow gold jewellery. This is a piece she can wear anywhere, with anything, and can be a signature piece.
BUNDA Fine Jewels became a household name through its sponsorship of The Bachelor Australia in 2013 and 2014. Founder and Creative Developer Ben Bunda gives Label an insight into his craft and creative mind. What experience with jewellery spurred you to enter the gemmology industry? I have an unique heritage as a contemporary jewellery designer in that my parents were highly respected antique dealers and restorers. A background in dealing in fine and rare furniture and objects from the past evolved into a passion for creating the fine and rare. And that begins with choosing a fine and rare gem. How would you describe your design aesthetic? It’s very challenging to limit it to a brief description, but it is very much informed by a deep knowledge of the history of design, across all areas. There is a strong architectural element, but many of the designs are also elegant and feminine. And the direction I take with each piece is pretty much governed by the gemstone.
What styles should we be looking out for this year? Yellow gold jewellery with a beautiful finish, and elegant contours, set with big interesting coloured gemstones. Deeply coloured tourmalines, especially cabochons; coral, in the right shade of red. Earthy, ochre-like tones, but also bright but sophisticated coloured stones like the right coloured turquoise, and the right coloured jade.
What has been your favourite collection or design to date? There are so many collections that I’m proud of, but I think my favourite would have to be Landforms. This was a collection created in collaboration with the Sydney Dance Company and Rafael Bonachela, and was presented alongside their program of dance of the same name. Although the ‘Light’ bracelet from this collection is one of my all-time favourite BUNDA pieces, what I liked most about this collection was in fact the process. The pieces were conceived as I watched the dancers rehearse, and I worked very closely with Rafael to get a true understanding of what had inspired him. And from this the collection was born.
What are some of your suggestions for engagement rings beyond the diamond? Any gemstone that resonates with the client can be suitable for an engagement ring - we have created engagement rings with opals, pearls and numerous coloured gemstones. The most popular after a diamond is the sapphire. Along with ruby, it is the second hardest gemstone after the diamond. It is generally a more affordable gemstone that lends itself to the same range of design possibilities as a diamond. And fine quality sapphires can be found in a beautiful range of colours. Which celebrity sported the best engagement ring of all time? Obviously Mariah Carey’s exceptional ring is top of mind at the moment, but then there is Elizabeth Taylor’s – hard to know which is more famous here, Elizabeth Taylor or the ring. Grace Kelly’s engagement ring was beautiful, large but elegant. And I always liked Diana, Princess of Wales’s engagement ring. A sapphire cluster is timeless.

STUFFED COURGETTE FLOWERS WITH TALEGGIO, COURGETTE PESTO AND TOASTED ALMONDS Serves 4 • Prep 20 mins • Cook 5 mins Ingredients 150g Taleggio, diced (1cm/½ in) 100g fresh ricotta 4 anchovies in oil, drained, finely chopped 1 tablespoon olive oil 12 courgette (zucchini) flowers salt and pepper 30g flaked almonds, toasted Courgette Pesto 12 small courgette (zucchini), from flowers 10 large basil leaves 1 tablespoon pine nuts ½ garlic clove 125ml olive oil 40 g grana padano, grated ½ lemon, juice 44 LABEL MAGAZINE AUTUMN 2016
Method 1. Mix together Taleggio, ricotta, anchovies and 1 tablespoon of the oil until smooth. Season to taste. 2. Remove flowers from courgette. 3. To make the courgette pesto, chop courgette and place in a food processor with basil, pine nuts and garlic. Pulse until finely chopped. Add remaining oil and process until smooth. Add grana padano and lemon juice and pulse to combine. Season to taste. 4. Split open one side of the courgette flowers and, using fingertips, gently remove stamens. Fill flowers with ricotta mixture and gently twist ends to enclose. 5. Place the courgette flowers into a bamboo steamer. Cover and steam over a pan of gently simmering water for 2–3 minutes, until filling is firm. 6. To serve, place 2–3 tablespoons of courgette pesto onto each serving plate. Top with courgette flowers and scatter with toasted almonds.

PINEAPPLE SORBET WITH PINEAPPLE CRISPS Serves 4 • Prep 10 mins • Cook 3–4 mins Pineapple Crisps 12 round pineapple slices, 1⁄3 cm (1⁄8 in) 250 ml water 100g superfine (castor) sugar Pineapple Crisps ½ large pineapple, peleed and roughly chopped 1 tablespoon lemon juice 75 g superfine (castor) sugar Method 1. To make pineapple crisps, heat oven to 90°C (190°F). Bring water to the boil in a saucepan. Add sugar and stir until dissolved. Remove from heat and allow to cool. Soak the pineapple slices in the syrup, Remove from syrup and arrange on baking paper on an oven tray leaving space between them. Dry in the oven for 3 to 4 hours. Remove from oven and allow to cool. 2. Meanwhile, add pineapple, sugar and lemon juice to a blender and mix until smooth. 3. Place into an ice-cream machine and follow manufacturer’s instructions or simply place the liquid into a tray and the place in the freezer. 4. Stir the mix every 5–10 minutes with a whisk—you need to break the mix and stir. Keep doing this process until an almost solid texture is formed. Keep in the freezer. 5. Serve with the pineapple crisps.

FEASTING IN FALL Spend your autumn roaming through the orchard. We can’t stop picking apples, figs, pears, persimmons and quince. Plums, peaches, melons and nectarines are at their peak, and your local grocer will be brimming with lemon and kiwifruit. In the veggie patch, you’ll find sweetcorn, zucchini, tomatoes, potatoes, eggplant, pumpkin, carrots and beetroot, as well as beans, cabbage, cucumber, snow peas, turnips and spring onion. This issue, we are falling for apples all over again for their versatility and unique flavour.
Rustic Fine Apple Tart The French tarte fine aux pommes is the ideal welcome to this season. Perfect as a warm dessert on a cool night, or as a decadent afternoon tea, this delightful tart feeds six (or four greedy diners). INGREDIENTS For the tart 375g packet of Careme All Butter Puff Pastry 80g finely chopped freshly roasted almonds 5 gala apples Half a lemon 50g butter, melted 1 tsp vanilla bean paste 100g dark muscovado sugar For the caramel sauce 50g butter 100g raw sugar A pinch salt 200ml pouring cream METHOD 1. Unroll the puff pastry on a flat surface on top of baking paper (Careme’s Puff is already the right thickness) and use a 25cm fluted tart tin as your cookie cutter. Freeze excess dough, though there won’t be much. 2. Scatter your almonds over the pastry and refrigerate on a tray until needed. 3. Preheat your oven to 240C. 4. Peel and core apples and rub with your half lemon if they start to discolour. 5. Slice whole apples on a mandolin and then cut in half, arranging on top of the pastry from the outside in. 6. Mix vanilla bean paste into melted butter and brush over the tart, then sprinkle 60g of the sugar on top. 7. Bake for 35 minutes and turn the tray every 5-10 minutes as you notice which side of the tart is browning faster. Turn the tart more regularly in the last 10 minutes of baking. 8. If you are taking this to a friend’s home on the same day, let your tart cool and get started on your caramel sauce. 9. Place butter and sugar in a small pot on high heat, stirring as the butter melts. Once the sugar has melted and starts to darken, add your cream and stir on low heat until your toffee melts in. Add the salt, remove from heat and allow to cool. 10. When you are ready to eat, put your grill on medium high. 11. Sprinkle over remaining sugar onto the tart, pour over a quarter of the caramel sauce and place under the grill for about one minute, rotating it occasionally until the sugar has melted. 12. MOO MOO’S MILLION DOLLAR MAKEOVER This month will see the unveiling of Moo Moo The Wine Bar + Grill Broadbeach’s million dollar renovation. Owners Steven and Autumn Adams and venue partner JP Duitsch say the renovation, from architects Studioplus*, will see the multi-award-winning restaurant emerge with a brand new, top-of-the-line kitchen; a stunning zinctopped bar; new lighting design, and more. The owners say they are excited about the renovations, but admit to being just a little nervous about such an ambitious undertaking. “It is a really extraordinary renovation,” Steven says. “It’s absolutely huge. We are investing a lot, so we have a mixture of excitement and nerves.” “Since we opened in 2005, it has been our mission to stay ahead of the game, and be the best at what we do. We are very fortunate to have achieved this, and the renovation is in keeping with that mission. “We are working with Studioplus, who designed Moo Moo Brisbane. We are going to bring in some of the elements of Moo Moo Brisbane in the renovation, so both venues will have that signature Moo Moo style, but it will still have a distinctly Gold Coast feel.” Steven says the place where the magic happens – the kitchen – will undergo a total overhaul. “The kitchen is going to be really spectacular,” Steven says. “It will be absolutely top of the line with a fantastic new grill, and a Series 600 charbroiler with both charcoal and wood under it.” When the doors open this month, Moo Moo will also unveil a completely new menu, and a new cocktail list. The restaurant and bar areas will also see extensive changes, most of which the vibrant restaurateurs are keeping to themselves. “We have had so many people asking us what’s happening, and what we are doing, so it has been sort of fun to keep it under our hats,” Steven says. “But we just can’t wait to unveil the new look on March 15. We have been taking bookings throughout the renovation period and we are expecting March to be a big month.” As any Gold Coaster will tell you, Moo Moo has been an institution in Broadbeach almost since the day it opened. In an industry where even the best of businesses can struggle to get a foot hold, Moo Moo captured the hearts – and appetites – of locals and visitors, quickly turning the restaurant into one of the most sought-after destinations on the Coast. It’s a fact that Steven and Autumn do not take for granted. “We are so grateful to our customers,” Steven says. “When we first opened Moo Moo, we could never have imaged the success we have had – it has completely exceeded our expectations, and we are just so grateful to the Gold Coast for embracing Moo Moo in the way they have. PROTECT YOUR CHILDREN BY USING WILL TRUSTS Ensuring the right assets go to the right people at the right time is an essential feature of everyone’s estate planning. But what happens when those people are your children or grandchildren? Assets gifted under a Will cannot be received by children under 18 years. Generally speaking, once children turn 18 years of age, any inheritance received by them is unconditional. Children are very vulnerable when money is concerned, especially teenagers, given the many distractions these days such as alcohol, drugs, gambling and peer group pressure. In order to protect your children and grandchildren from these risks, more and more people are setting up Testamentary Trusts in their Wills. Your children and grandchildren are protected when they are named as the beneficiaries in a Testamentary Trust. It is common place that trusted family members are appointed as the trustees and they handle the day-to-day management of the trust funds. An independent person, such as the family’s accountant or lawyer, are often appointed to oversee the trustees to ensure proper decisions are made in the best interest of your children and grandchildren. Testamentary Trusts are essential used for providing for children or grandchildren’s, education and ongoing maintenance and also protecting them from life’s mishaps. Richard Dawson of OMB Solicitors says, “Outside of superannuation, Testamentary Trusts have the most favorable tax treatment available to any trust arrangement and are an extremely safe way of protecting beneficiaries from not only themselves but also from their creditors and predators, for example, their ex-spouses.” The tax savings for Testamentary Trust beneficiaries who are minors 74 LABEL MAGAZINE AUTUMN 2016
are quite substantial compared with that of a normal Family Trust. Any taxable income received by the Trust during the financial year must be distributed to the beneficiaries. The trustees not only have an obligation but also a broad discretion to distribute the income to the beneficiaries of the trust. If these beneficiaries are under 18 years of age, they will be taxed at adult marginal tax rates. In the 2015/16 financial year, each child can receive $18,200.00 tax-free. The equivalent tax-free amount under a Family Trust is only $416.00. Put simply, the money otherwise paid in tax can be used towards your children / grandchildren’s private school education or university fees. Before preparing a Testamentary Trust Will, there are a number of issues to consider: • Who to appoint as your executor of your Will and/or trustee of any Testamentary Trust; • What percentage of your estate do you leave to your children / grandchildren on trust; • At what age do your children gain absolute control of their assets (if at all); • Are there any specific objectives you want to achieve from the trust (such as private education, university, asset protection and long term wealth management).
