Kendall Jenner’s extraordinary journey from reality sidekick to seriously successful supermodel

I

t’s not an overstatement to say that Kendall Jenner’s name precedes her: the 19-year-old who is fashion’s latest It Girl has practically grown up in the spotlight. But the past year has seen the tall, lithe brunette carve out her own path as one of the most in-demand models of the moment. “This is a career that I’ve always wanted,” she told GQ Magazine. “And I mean, what else would I be doing? I probably would have gone to school to get the degree to go to work, when work was already there.” From her runway debut on Marc Jacobs’ Fall 2014 runway, to walking the Chanel couture show this summer at the special request of designer Karl Lagerfeld, Kendall’s casting in a dozen key fashion shows, multiple magazine covers and editorials, and one very coveted Givenchy ad campaign are proof positive that her star is rising. Her 30 million-and-counting Instagram, Twitter and Facebook followers only serve to hammer that point home. The gorgeous young brunette has also recently been signed by the Estée Lauder brand and will appear in digital, TV and print advertising campaigns and play an active role in creating social media content that will live on Estée Lauder’s channels as well as her own. Says Kendall, who admits to being a “huge fan” of their concealer, although you can’t imagine what she would need it for: “I’ve grown up with Estée; that was all my mom would use. I remember the old lipstick cases that were gold and mirrored. It’s such a family brand for me because it’s been there my whole life so it is crazy to actually be doing this today.” Of course the “mom” she is talking about is Kris Jenner, matriarch of reality TV’s juggernaut family the Kardashians. Dad is Bruce Jenner, now Caitlyn Jenner, possibly the most famous transgender female in recent history. “That’s not about me, so we can move on,” she says when asked about Jenner. She doesn’t allow paparazzi or media into every area of her life. Much of it, it has to be admitted, just not all. Since the Kardashians arrival on E! in 2007, the family has defied the laws of 15-minute reality TV fame while building a wildly profitable empire.

There’s a book, Kardashian Konfidential; a fragrance, Unbreakable by Khloe and Lamar; skin care and clothing lines, sneakers, swimwear, liquor and lipstick; and even Kardashian Khaos, the first “celebrity destination” store at the Mirage in Las Vegas. Kendall herself has two nail lacquers from the Nicole by OPI Kardashian Kolors nail polish, All Kendall-ed up and Kendall on the Katwalk, earning $100,000 for her OPI endorsements. She didn’t choose this, but it’s all she knows. Even before the Kardashian reality show, she says her family were always going to premieres and walking down the red carpet. “I mean my dad was who he is. He’s an Olympic athlete,” she said in the GQ interview. She also visited the Neverland Ranch. “I remember going, actually, and as I was leaving, Michael Jackson was coming in. And I was like, ’Oh, my God! That was Michael Jackson!’” And she remembers videos of herself when she was three or four years old, her mother filming her as she walked out with a handbag saying “I just did my makeup!” These days that little style princess has her face professionally made up, already appearing in a 13-page fashion feature in the December issue of American Vogue shot by Patrick Demarchelier – a lifetime dream for other models or celebrities. She’s also strutted the catwalk for uber designer Marc Jacobs’s fall/ winter 2014 show – another bucket list wish. Surprisingly, given her massive exposure to riches and privileges that few experience, she’s cute about it in a way that shows an innocent charm, not a calculated celebrity. “I had done Marc Jacobs before and I wasn’t really nervous for that; I was more excited,” she says. “But I was nervous when I got to Paris because I did my first show in heels, and I had a long dress on that I was afraid I would trip over.” After the Jacobs show, Kendall’s haute couture debut at Chanel quickly followed, as did her first high-profile advertising campaign for Givenchy fall/ winter 2014. She has since walked for leading designers such as Balmain, Dolce & Gabbana and Fendi, and graced the red carpets of the world’s most fashionable events including the Met Gala, Cannes Film Festival and MTV Video Music Awards. Born in Los Angeles, California Kendall was raised in a blended family with one younger sister, Kylie Jenner, and eight half-siblings including Kourtney, Kim and Khloe. She began modeling at age 14 when she was signed by Wilhelmina Models, has appeared in an episode of Hawaii Five-0 and dated One Direction singer/songwriter Harry Styles. Refreshingly, while her life may be anything but average, she is a typical teenager when it comes to things like crushes or makeup tips. 10

She thinks Angelina Jolie is “ridiculously beautiful” and loves Rihanna. “I feel like she kills it all the time (as a beauty icon),” she says. Mascara is her favourite beauty product and she always carrying lip balm and moisturiser because she flies all the time and her favourite nail polishes are royal blue and red. Statuesque, Kendall favours flats not heels, likes skinny jeans not boyfriend jeans and would love to be able to sing like Beyonce. She even has a “happy place”: “Santorini, where I am surrounded by my family.” Or maybe the $1.4 million two-bedroom, 2.5-bath condominium in Los Angeles she bought last year with her own money. “I’m super OCD, so everything is clean,” she says. Catwalks, weekend visits to Kim and Kanye, first class trips between Paris, New York and Los Angeles, hordes of paparazzi and adoring teen fans – Kendall admits her life is “really weird”. “I understand that it’s not normal,” she says. But it is normal – for her. She’s a new breed of celebrity, says Jane Hertzmark Hudis, Global Brand President of Estée Lauder “a modern beauty who represents a whole new generation of women who live, breathe and share beauty, fashion and life 24/7, on their own terms, in a visually compelling way”. And we can’t take her eyes off her, waiting for the next episode of her unreal life to unfold.

Spring/Summer at David Jones is all about fashion and creativity, inhaling all the exhilarating fumes to come off the powerful compound. The set up held On Seven at David Jones reflected the vibe of Daniel Johns’ recently launched campaign for Shot By Sound. Industrial rigging and LED lights adorned the runway to be graced by ambassadors Jessica Gomes, Montana Cox and Jason Dundas, with supermodel Gigi Hadid perched prettily in the front row. The parade featured 35 new collections and 220 looks, finished with makeup by Shu Uemura, and was closed by JETS showcasing their James Bond-themed swim looks. This season, we can expect to dazzle in high-sheen textiles as Rachel Gilbert paraded pastel pinks and Bianca Spender opted for baby blue suiting with a plunging neckline, also favoured by Ginger & Smart. Christopher Esber’s model strutted in a stripe-hot scarf dress, echoed in monochrome at Sabatini. Akira and Easton Pearson flaunted florals, while it was all about love for Romance Was Born. In under a decade, designer Paul Vasileff has established his label Paolo Sebastian as one of Australia’s leading couturiers. The 25-yearold’s gowns can be found from Kuwait to New York, bestowing exquisite beading, lace and luxury on Giuliana Rancic, Sonia Kruger, Carrie Bickmore and fabulous women alike. Paul gives Label a look into the making of his latest collection, The Nightingale. Your 2015-16 SS Couture Collection is exquisite to say the least. What featured on your mood board as you were dreaming up The Nightingale? Thank you so much. The mood board contained a lot of 1920s imagery, and I had a sample of ombré silk fringing. I hand sketched bird motifs, and there was a lot of intricate floral and feather details. What is the folktale behind the nightingale? There are a few different places that I took inspiration from, in terms of story. In Cinderella she sings ‘Sing, Sweet Nightingale’, and Oscar Wilde and Hans Christian Anderson both wrote stories about nightingales. It was a combination of a few ideas about a beautiful creature singing soulfully in the moonlight. How did you translate the emotions derived from the folktale into your designs? The folktales all describe a delicate, beautiful figure, and of course, there is often a lot of bird imagery. The feather details and bird embroidery are direct reflections of the symbol of the nightingale. The delicate tulle and sheer fabrics work to create that sense of fragility. The Nightingale Collection is extremely ornate. Tell us about the craftsmanship and colour-matching involved? In terms of the colour palette, everything needs to work together to complement a distinct mood. With this collection I wanted to show the world what the label is capable of. I sketched all of the nightingale embroideries myself and really focused on pushing our craftsmanship to the next level with silk and beaded fringing, a lace cape and romantic sleeves. To me, that focus on craftsmanship is what couture is all about. What is your most beloved gown of the collection? My favourite is the first gown, the sheer tulle column gown with nightingale 28 LABEL MAGAZINE SPRING 2015

embroidery and lilac ombré silk fringe. I really loved designing the intricate embroidery and the fringe detail; it was something really different for me. Tell us about your label’s relationship with lace designers Sophie Hallette this season? Sophie Hallette regularly make a point of sponsoring and supporting young designers, and we were honoured when a representative of theirs approached us. We were very excited, given that they provide lace for some of the biggest houses in the world. The cape that we created from the beaded lace has received a lot of attention, and we are really proud of it. Every one of your collections has a detailed back-story. Where do you go for inspiration when a new collection is on the horizon? It really depends on the story, and where the initial spark of inspiration came from. Each collection is different. I tend to look at storybooks, watch old films and sketch my ideas as they come. I will then often look at fabrics and colours and a few pieces will just start to come organically from that. For some of the collections I will also often research historical events or periods of time, as I’m inspired by a particular mood. Who would you love to see wearing a gown from The Nightingale? Falafel for Breakfast Q&A WITH MICHAEL RANTISSI

A new book from Israeli-born chef Michael Rantissi and his partner and ‘balaboosta’ Aussie girl Kristy Frawley opens up a world of Middle Eastern flavours and ingredients for the contemporary home cook. Grains and greens, generosity, pungency, sweetness, sharing… the unmistakable ingredients, flavours and philosophies of the Middle East. This is food that brings everyone to the table, and won’t let them leave. Michael Rantissi, chef and owner of Sydney’s uber-cool Kepos Street Kitchen, celebrates Middle Eastern food in his latest offering, Falafel for Breakfast, a collaboration with his partner Kristy Frawley. Michael grew up in Tel Aviv, watching his mum cook and feasting on the multi-cultural offerings of his neighbourhood. From relatively humble beginnings, he went on to train in Israel, Paris, and New York before arriving in Australia in 2005, landing a position in the fine dining restaurant kitchen at one of the country’s most celebrated restaurants - The Bathers’ Pavilion. From there, Michael continued to climb the culinary ladder with positions at Pink Salt, The 100 Group, and of course, Kepos Street Kitchen. Kristy’s culinary credentials are also impressive. Her passion for food ignited in her family kitchen and dining in the restaurants of Sydney, honing her hospitality skills in London and Sydney. No slouch behind the stove, Kristy is known as a talented home cook and for the past 16 years she has been the office manager at the iconic Bathers’ Pavilion. Together they have created an inspiring collection of recipes, opening the door to a greater understanding and appreciation of the Middle East’s hidden treasures --- tahini, baharat, halva, chickpeas, labneh, eggplant, honey, pomegranate, amba, dates, broad beans, pistachios, wild greens, ancient grains. The recipes go from basics like hummus, aioli and falafel, to Persian eggplant risotto, Cauliflower, cranberry and pearl barley salad; and Harissa-braised lamb with okra. LABEL: Share with us your early memories of food growing up in Tel Aviv. MR: My strongest memory is of street food when I was growing up in Tel Aviv. There are shops there that only sell one item only hummus, or falafel or just chicken kebabs. Mum would send my brothers and me to the baker to buy fresh pita bread or za’atar bread and we would always eat some of the bread on our way home because it was too hard to resist hot, delicious bread straight from the wood fired oven. LABEL: What are some of the food philosophies and lessons you have learned from watching your mother cooking? MR: Don’t leave the sink dirty! Use the best quality produce available to you. Make food the centre of your life. Feast everyday as it is your last day. Use a combination of flavours to enhance the meal. LABEL: What are some of the spices and cooking methods that represent a Middle Eastern dish? MR: My top three essential elements in Middle Eastern cooking would be olive oil, lemon juice and plenty of fresh herbs. The main spices used in Middle Eastern cooking would be cumin, coriander and saffron; and the main cooking methods would be cooking on charcoal so on a barbeque, wood fire oven roasting and also raw cooking due to the amount of salads and dips that are served. LABEL: What are your favourite recipes from the book; and why are they special to you? MR: Falafel – as it is the centre of street food in Tel Aviv and identifying symbol for Kepos Street Kitchen and the name of the book. Cauliflower salad – this dish is one of the most popular dishes at Kepos Street Kitchen so it was a given we would include it in the cookbook. It is very easy to make, delicious and healthy. Persian Pavlova – this cake has all the ingredients that I love – halva, nuts and chocolate. This recipe came about while we were experimenting with gluten free cakes at Kepos Street Kitchen. LABEL: Name your top three dishes –that you love to cook or eat yourself – from any culture? MR: I love Thai food – I never attempt to cook it at home so it is my go to take away. I also love a good pizza from a wood fired oven. And anything that Kristy cooks for me on a Sunday night because I don’t have to cook, specially her roast potatoes.

LAMB BURGERS

WITH MIDDLE EASTERN COLESLAW Including your guests in the preparation of a meal is a great way to entertain, and these burgers are ideal for a lunch party where you get the ingredients ready beforehand, and lay them on the table for all to make their own. SERVES 4 750 g (1 lb 10 oz) good-quality coarse minced (ground) lamb 2 teaspoons coriander seeds, toasted and crushed 1 handful coriander (cilantro), leaves finely chopped 3 tablespoons olive oil 5 tablespoons red harissa 1 teaspoon chilli flakes 4 tablespoons aïoli, to serve 4 brioche burger buns, toasted Middle Eastern coleslaw , to serve Put the minced lamb, coriander seeds, chopped coriander, olive oil, 4 tablespoons of the harissa and the chilli flakes in a large bowl. Season with salt and freshly ground black pepper and mix to combine. Divide the meat mixture into four equal portions and gently shape into burger patties with your hands. (Don’t overwork the patties as the meat will become tough.) Cook the burgers in a non-stick frying pan over medium heat for 2–3 minutes each side (for medium–rare), or to your taste. You can also cook them using the grill (broiler) or barbecue heated to medium. Combine the aïoli and remaining harissa in a small bowl. To assemble the burgers, toast the cut side of the buns. Place the bun bottoms on plates and add a dollop of the harissa aïoli, a handful of coleslaw and a pattie. Add another handful of coleslaw, another dollop of aïoli and top with the bun lid.

RED HARISSA MAKES ABOUT 1 KG (2 LB 4 OZ) 700 g (1 lb 9 oz) capsicums, roasted, peeled and seeded 6 garlic cloves, peeled 2 large green chillies 2 handfuls coriander (cilantro), leaves and stems washed and coarsely chopped 3 teaspoons mild paprika 2 teaspoons ground cumin 2 teaspoons ground coriander 2 teaspoons caster (superfine) sugar 2½ tablespoons red wine vinegar 200 ml (7 fl oz) extra virgin olive oil 46

Put the roasted capsicums, garlic, chillies and chopped coriander in a food processor and blend to a paste. Add the paprika, cumin, ground coriander and sugar and blend for a further minute. Add the vinegar and salt to taste, then drizzle in the olive oil slowly with the motor running until combined.

AÏOLI MAKES 750 G (1 LB 10 OZ) 5 garlic cloves, peeled 5 egg yolks 1 teaspoon dijon mustard ½ teaspoon sea salt flakes 1 teaspoon white wine vinegar 500 ml (17 fl oz/2 cups) light olive oil Preheat the oven to 170°C (325°F). Put the garlic on a baking tray and cook until lightly golden, about 7–8 minutes (if overcooked it will have a bitter taste). Cool the garlic to room temperature. Mash with a fork. Blend the egg yolks, mustard, salt, vinegar and garlic in a blender or food processor until well combined and smooth, scraping down the side of the bowl. Very slowly, drizzle in the olive oil while the motor is running, until the aïoli is well emulsified and thick. Always keep aïoli refrigerated. It will last in the fridge up to 7 days.

MIDDLE EASTERN COLESLAW SERVES 4–6 AS A SIDE DISH ½ red cabbage 2 carrots sea salt flakes 1 handful mint, leaves picked 2 large handfuls flat-leaf (Italian) parsley, leaves finely chopped 1 handful coriander (cilantro), leaves coarsely chopped 100 ml (3½ fl oz) extra virgin olive oil 4 tablespoons husroum (verjuice) Use a mandolin or knife to shave the cabbage finely and julienne the carrots. Place in a large bowl, sprinkle with sea salt flakes and press down on the cabbage and carrot with your hands to soften them. Add the mint, parsley and coriander to the bowl and mix well. Add the olive oil and husroum, and season with freshly ground black pepper. Toss to combine and serve.

MINI FIG & WALNUT CAKES WITH MASCARPONE CHEESE MAKES 8–10 The fig and walnut flavours go so well together in these lovely little cakes. You can make this recipe using a regular muffin or mini kugelhopf tray instead of the mini bundt tray we used here. 150 g (5½ oz) walnuts 110 g (3¾ oz/¾ cup) self-raising flour 75 g (2½ oz/½ cup) plain (all-purpose) flour 250 g (9 oz) unsalted butter, cut into cubes, at room temperature 100 g (3½ oz) caster (superfine) sugar 80 g (2¾ oz) fig jam 3 eggs TOPPING 250 g (9 oz) mascarpone cheese 250 ml (9 fl oz/1 cup) thin (pouring) cream 50 g (1¾ oz) icing (confectioners’) sugar 5 fresh figs 50 g (1¾ oz) honey

Put all of the filling ingredients into a bowl and mix together until combined, but don’t overmix. Remove the ruff puff pastry from the fridge. Roll out the pastry on a floured work surface, into a large rectangle 2–3 mm (1/8 inch) thick. Preheat the oven to 175°C (345°F). Line a baking tray with baking paper and set aside. Put the filling in a disposable piping bag and cut off the tip, 4 cm (1½ inches) in diameter. Pipe the filling lengthways onto the ruff puff pastry along the top edge. Brush the pastry with egg wash just beside the piped mixture. Roll the top of the pastry towards you over the piped mixture so the very top of the pastry sheet joins with the eggwashed area of the pastry. Press down to seal. Using a large knife, cut along the edge of the sausage roll. Repeat the process until all the pastry is used. Cut the logs into 12 cm (4½ inch) sausage rolls. Brush the sausage rolls with egg wash. Combine the almond meal, flaked almonds and chermoula for the topping and dip each sausage roll upside down into the topping mixture. Place the sausage rolls topping side up on the prepared baking tray. Bake for 30–40 minutes until golden brown.

Put the berries, vanilla bean paste, cinnamon stick, rosewater and sugar in a medium saucepan over medium–low heat and bring to a simmer. Cook for 15 minutes. Remove from the heat. When the water has been absorbed, remove the plastic wrap and fluff up the couscous with a fork. Put the yoghurt, icing sugar, Turkish delight and saffron in a bowl and mix to combine. Keep the elements in their separate bowls in the fridge until ready to serve. To assemble, use glasses or jars so that you can see the layers. Put 2–3 tablespoonfuls of the couscous in each glass, then spoon in the yoghurt mixture and top with the berry mixture.

Sweet, Sweet SPRING T

he delights you will find in the fruit shop this season are not your typical sweet sensations, which makes them all the more interesting to experiment with. Grapefruit, lemon, oranges, artichokes, asparagus, brussel sprouts, fennel, leek, peas, silverbeet, spinach and beetroot are at their peak in nutrition and flavour, but our dessert dynamo is rhubarb. My Rhubarb and Semolina Custard Tart is balanced between the sour rootling and the sweet, smooth custard, with a nice crunch from the shortcrust. Serve at room temperature to 10 greedy guests.

RHUBARB AND SEMOLINA CUSTARD TART • 1 x 435g pack of Carême Vanilla Bean Sweet Shortcrust Pastry • 8 stalks of rhubarb (dry ends removed) • 1 tbsp caster sugar • 2 tbsp raspberry jam Preheat your oven to 180C. Trace the outline of a 28cm tart tin onto baking paper and place on a baking tray. Cut your rhubarb to make an arrangement on the parchment that will eventually go on top of your custard tart. Top with sugar and bake for half an hour, until tender. Heat jam in a saucepan with a dash of water until it has a syrup consistency, then drizzle over the rhubarb and set aside. Cut a circle of baking paper large enough to fit the bottom of a 28cm tart tin, place it inside, then line with the pastry sheet, covering the bottom and sides evenly. Refrigerate for an hour, remove from fridge and line the raw pastry with baking paper, proceeding to fill the pastry shell with pie weights. Blind bake for 10 minutes in the preheated oven at 180C, remove weights and bake for a further 10 minutes until golden. 50

SEMOLINA CUSTARD • 180g caster sugar • 690ml milk • 1 tbsp vanilla bean paste • 360ml cream • 120g semolina • 190g butter • 2 eggs Combine sugar, milk, cream and butter in a saucepan on medium heat, stirring continuously. Once butter has melted, add the vanilla bean paste and bring to a simmer. Pour in semolina in a slow stream, whisking continuously until the mixture forms a porridge consistency. Remove from heat for 15 minutes and whisk in the eggs, one at a time. Pour the custard into the tart shell and bake for 20 minutes on 180C until golden. Cool to room temperature, then transfer your rhubarb art work on top of your golden custard.

ITALIAN MERINGUE • 2 egg whites • 100g caster sugar • 1 pinch cream of tartar Combine the sugar with a dash of water in a saucepan on high heat, using a sugar thermometer to track the temperature to 115C. Whisk the egg whites and cream of tartar in a stand mixer on medium speed until soft peaks form, slowly adding the sugar syrup once it reaches 125C. Continue mixing on medium speed for 10 minutes, slowing the mixer to low speed until you are ready to pipe the meringue onto your creation. Fill a large disposable piping bag with the meringue mixture and squeeze to create a meringue mountain in the centre of your tart. Use a blow torch to brown the exterior of your meringue and serve.

WHERE THERE’S A WILL, THERE’S A RELATIVE Richard Dawson looks at the increase in disputed wills, and suggests ways to reduce the inevitable emotional and financial cost of challenging an estate. We all know money does strange things to people, but perhaps no more so than when a large estate is involved. Never before has society seen an increase in challenging estates like we have today. With substantial rises in property prices, superannuation funds, life insurance policies and share portfolios, estate sizes have increased dramatically in the past 15-20 years – and along with it, challenges to wills and estates. In the 80’s and 90’s, it was commonplace for a person to own their family home and have a small bank account making up their life savings. Large superannuation funds and share portfolios have also increased people’s net wealth. These days, prime properties values and large superannuation fund proceeds often put estates into the millions of dollars and to some this is worth fighting over. Not only has there been a dramatic increase in estate sizes, we are also seeing an increase in the number of people eligible to contest an estate. Blended families are on the rise with almost one in two marriages ending in divorce. Step-parents and step-children make up a sizeable portion of contested estate litigants; so it follows that ‘Where there’s a Will – there’s a relative wanting to contest it’. For some, large asset pools make challenging an estate very attractive. In fact, it can often be commercially viable for disgruntled family members to do so. Some even feel it is their right to contest an estate if adequate provision has not left for them in the Will. What is more, generally the estate pays the legal expenses to settle the Will dispute unless exceptional circumstances exist. For a disappointed beneficiary it can seem like a win-win situation for them. If successful, not only do

they receive more than they did under a Will but the estate pays for the experience. Unfortunately, it is usually the intended beneficiaries who ultimately pay. Queensland law provides that where parties engage in disputed estate litigation, they must take part in mediation rather than having the dispute decided by a judge. Everyone knows disputed estate litigation can be very expensive and no-one wants to see the lawyers end up with all the estate. With this always in the back of their minds, parties will try to resolve the dispute with commercially sensible offers. Those offers decide who pays the legal costs. At the mediation stage, it is usually the estate that pays the costs. This means the intended beneficiaries come off second best because they have to, in effect, buy their way out of court proceedings and settle the dispute on commercial terms. While it may take some time to reach an amicable resolution, the emotional rollercoaster ride along the way often irreparably splits families apart. Some family dynamics dictate that dispute estate proceedings are inevitable, but with the right advice and proper estate planning these disputes can be easily avoided.
