MEET THE Sylvy Earl MILLINER A true master of her craft, Sylvy’s pieces make the ultimate racing accessory. The master milliner unveils her design background, discusses her latest collection and gives Label her Spring Racing style tips. Where did your love for millinery begin? I’ve always loved beautiful accessories, experimenting with the way things are constructed, and making things by hand. For me, millinery is the perfect combination of these things. What educational path did you follow in pursuit of your career as a milliner?

What is your favourite to style and why?

I love them all! I love Derby Day for its glamour and sophistication (monochrome never goes out of style), Oaks Day for its femininity, and beautiful prints and textures, and Cup Day for its colour and vibrancy.

I completed my formal millinery training at TAFE.

What are some of your favourite clothing labels to pair with your designs?

How would you brand aesthetic?

I aim to create millinery that is sophisticated, modern, and feminine, without being too fussy.

I have recently collaborated with Lover on a Spring racing look, which I’m so excited about. I love clothes that are modern, playful, smart, and feminine without being too girly, and I think Lover achieves this perfectly.

Tell us about your latest collection of millinery. What inspired their creation?

If you could crown anyone (living or dead) with one of your incredible pieces, who would it be?

My latest collection is inspired by simple, classic shapes, with a contemporary touch. I have used fresh, neutral toned straws with wide, elegant brims, and easy to wear headband styles with detailed florals, beading and metallics.

I’ve been lucky enough to work with Emma Freedman, racing royalty, hat lover and style queen, a number of times already! Emma has great style, knows what works for her, and isn’t afraid to make an impact with her millinery.

What millinery trends do you think we will see at the Spring carnivals this year?

When you’re not in your studio, what is your ideal day off?

Wide brimmed hats, straw boaters, crowns with beautiful details, and a little bit of romance with florals, bows and flowing ribbons.

Unfortunately, there are no days off in the lead up to Spring Carnival! But, an ideal day off would include a bit of baking, brunching, and visiting an art gallery.

What aspects of a headpiece catch your expert eye at a race track?

MAnnInG C Ar TeLL The Manning sisters Cheryl, Vanessa and Gabrielle talk their latest collection, global expansion and Spring Carnival racewear. How has Manning Cartell evolved since its inception?

What Manning Cartell pieces should we wear to the races?

It has evolved quite organically. Currently direct retail makes up 85 percent of our business, however when we first launched Manning Cartell it was 100 percent wholesale. We’ve established an incredible team in our six standalone boutiques who make the in-store experience special for our customers. We also sell internationally, having just launched Manning Cartell in the US through a partnership with Barneys New York. The beginning of our global expansion.

With such a diverse range, there is a piece suited to everyone’s race-day style. The Everest Carnival Silks will be auctioned off on the Australian Turf Club’s eBay page with proceeds going to Sydney’s Dress for Success charity. If you can get your hands on one of these silk garments you will be wearing a unique piece that you can be sure no one else has.

Who is the Manning Cartell woman?

Formal footwear is a must. Ladies, get your heels out and men, your best dress shoes. There’s no footwear more race-day appropriate!

The Manning Cartell woman is fearless with a modern style and an adventurous spirit. Robyn Lawley, who wore one of our Everest Carnival Silk garments to Colgate Optic White Stakes Day, is the perfect example of this. Tell us about your plans for our spring wardrobes. What inspired your latest collection and what can we expect to see from you this season? Our Spring Collection is all about modern florals, saturated brights, head-to-toe looks that make a strong visual statement such as print on print or tone on tone. The collection combines 90s’ minimalism and 80s’ futurism and celebrates sustainability and bold, feminine styles for women of substance and strength.

What aspects of footwear deem them race-appropriate?

What are your favourite millinery pairings? A personal favourite of ours was the first Everest Carnival Silks design that Robyn Lawley flaunted at Colgate Optic White Stakes Day. She wore a dress inspired by Winx’s winning silks pattern, combined with the red, white and black colour palette of Colgate. This beautiful combo was perfectly paired with a Nerida Winter headpiece.

Let’s talk racewear. What will we see trending trackside this spring season? The Australian Turf Club is encouraging racegoers to leave boring behind at Everest Carnival this spring. In a world first, we’ve collaborated with the ATC to create a range of garments inspired by the racing silks worn by the jockeys themselves. The collection is called the ‘Everest Carnival Silks’.

Meet Eliise Maar

ELIISE MAAR JEWELLERY is known for its luxe-minimal aesthetic, growing a fast fan base since its launch in 2015. Born in Estonia, Eliise brings a unique quality to her handcrafted pieces, which celebrate her roots and are inspired by her surroundings, architecture and geometry. The Melbourne-based designer divulges her methods, materials and the jewellery trends of the season. Where did your jewellery design journey begin? A lot of experimenting with different things to find what I'm truly passionate about. I did a lot of ceramics and painting in the beginning, then started making jewellery as wearable art from all sorts of materials handy and been evolving ever since. What was the first piece of jewellery that made you fall in love with the industry? It was the simplest little silver ring that we made together with Victoria Mason. She showed me how to solder the wire and I just absolutely loved the intricacy behind something that simple. How would you describe ELIISE MAAR aesthetic?

I think my jewellery can be styled in many ways. You can get that really minimal and strong look and also when stacked and layered it’s like bohemian chic. What inspires your pieces? A lot of it comes from what I'm surrounded by in everyday life - nature, architecture, geometry. What process do you follow when creating your pieces? I do a lot of daydreaming, I must admit. I explore before putting anything on paper or starting to make something. When creating a piece, I follow my instinct and trust my judgement. There are a lot of designs that never see the public eye.

What are some of your favourite materials to work with? When creating a piece, I love working with wax – it’s an inexpensive way to test out designs in 3D before committing to anything. From metals, I'd say platinum is my favourite. I love the colour and strength of it. Which stones are most on-trend For me they and Morganite.

What is your favourite way to style pieces from your latest collection? I love mixing and matching the textured pieces with either more simple and smooth styles or with gemstone bands. I think the gem bands compliment the Frost texture really well and balances the whole look by adding a bit of lifting sparkle as a contrast. My favorite at the moment is the Lavish Fine Black Diamond Band, I wear it as a pinky ring. Who would you be most excited wearing ELIISE MAAR and why?

I think anyone who shares my brands values; wants a locally made and personalised unique piece of jewellery that lasts a lifetime. In terms of style, if I had to pick someone specific, then Florence Welch from Florence and the Machine is supercool.

The SWIM STArS Vacay Swimwear founders Jordy and Corey speak to Label about the breaking into the design market, the destinations that inspired their pieces and injecting vibrancy into men’s swim style.

Where and how did Vacay Swimwear begin? Corey: Vacay Swimwear all began in our last semester of university, when Jordan and I both really struggled to shop a good quality pair of swim trunks that not only fit well but were unique and high quality. It all initially started for this reason… to be able to dress ourselves! Jordy: All designs are strongly inspired by the destination they are named after. An example of this was when I was travelling through Monte Carlo and noticed a lot of pink and white striped sun umbrellas, it was from then, the elegance of the pink and white classy striped Monte Carlo print was born! I believe that people have a stronger connection with travel destinations rather than fashion icons themselves. For this reason, we carefully think of our designs from iconic destinations as our consumers have a stronger connection with where they’ve been.

What has been your biggest challenge in fashion design and how have you overcome it? Jordy: Being two young lads with marketing degrees stepping into the world of fashion, we lacked any education in good old fashion dress making. Our biggest challenge we faced was how we want the shorts made, from the measurements, the way they were sewed, how big we wanted the pockets the length of the shorts...the list goes on. We overcame this obstacle with lots of research and trial and error! If you could dress anyone in Vacay Swimwear, who would it be? Corey: It would definitely have to be David Beckham or Cristiano Ronaldo. These guys are the pinnacle of class and have a sense of style that can't be imitated. Every girl wants to be with them and every guy wants to be them. This is definitely the Vacay man! Where design

The idea for Bulldog Skincare For Men was born whilst I was shopping for skincare products for my wife. I was buying some of her favourite products when I noticed that there were no straightforward skincare options for men which contained natural ingredients. I quit my job in the Summer of 2006, and set about building the company with a friend. We launched the first set of 6 Bulldog products into a leading supermarket chain in the UK in the July 2007. How does Bulldog Skincare For Men differ to your typical supermarket brand? Firstly, our products have been purpose built for men. They are not just a men’s version of what was initially a women’s brand, as you could say for our competitors such as L’Oréal or Nivea. Secondly our products work really well and I believe superior performance is a big differentiator for Bulldog. Bulldog’s products are effective at getting the job done and use natural ingredients. Men are interested in simple and more natural formulas, but they are highly motivated by performance and results too. What skin concerns does Bulldog Skincare For Men target? We want to target the broad set of regular skincare concerns that men might face. In the UK, where Bulldog is most established, we have four main product families; Original, Sensitive, Oil Control, and Age Defence. We also offer a lot more than just standard skincare products as is evident with the Beard care products we offer and with the more advanced eye care and face mask products that feature in some of our product families. We want to launch as many of these products in Australia as we can. Our best-selling Original Range is for everyday skin maintenance for men with normal skin. Each product within the range contains aloe vera, camelina oil and green tea. 70% of men will experience skin sensitivities at some point in their lives. Growing facial hair, shaving and a variety of external aggressors can cause redness and skin irritation. Our Sensitive range is fragrance free and has been designed to sooth sensitive skin. The key ingredients within this range are baobab oil, oat oil and willow herb. Our Age Defence range contains a potent blend of antioxidants which help to fight free radical damage, which is a major cause of skin ageing. These are rosemary, echinacea and vitamin E.

How does Bulldog Skincare For Men achieve an eco-friendly status? It’s great if people recognise this ambition in Bulldog to be more eco-friendly. We’d like to inspire the rest of the industry to move in this direction too. For us there are lots of things that go into being more environmentally responsible. I’ll share a few examples. Recently microbeads have become a hot consumer interest topic – and rightly so. Since our launch in 2007, we never used plastic microbeads (well before the UK ban took place). Instead, we used natural exfoliants in our first ever face scrub and have continued to do so ever since. More recently, in January 2018, we became the first men’s skincare brand in the world to use plastic derived from Brazilian sugarcane in our tubes. In the UK, our most recent innovation is our Original Bamboo Razor. What is your skincare philosophy? Keep it simple. Cleansing and moisturising are key. Use our Original Face Wash and Original Moisturiser twice a day for just two weeks and you will see the difference in your skin, which will look fresh and feel smoother and more hydrated. You might even get some compliments too! These two steps are non-negotiable and don’t take any longer than the time it takes to brush your teeth! We should all have time to do this. Tell us about your expansion into the Australian market. What made Woolworths the ideal partner? Bulldog is now in 25 different countries, and we are working with some of the biggest and best retailers in the world like Target (USA), Boots (UK), Carrefour (France) and Olive Young (Korea). We look for retail partners who share our aspiration to grow the men’s skincare category, and who see the opportunity in helping to support a brand that is approaching the challenge of recruiting more men to these types of products in a different way to the standard brands already in this space.

DMK Danné Montague-King We chat to Australia’s Director of Education at DMK Debbie Dickson about the brand’s rich history, skincare breakthroughs and Spring skin secrets. Tell us about the history of Danné Montague-King. What was the brand’s original focus and product range? Danné is the founder who suffered with very bad acne as an teenager. His parents took him to several dermatologists with no real solutions for his skin. He still recalls how desperately unhappy his skin made him and how self conscious he was. He always tells the story of when he had to go to a party with his family. He would find the darkest corner and stay there all night, so people wouldn’t see his skin. This was his motivation to study botanical science and chemistry and develop a skin revision system that really worked and provided results for skin conditions.

It is funny when I get asked about products, I here Danné ringing in my ear, he always says “I hate the word products.” DMK is a concept. So we do professional skin revison treatment to revise the skin back into a healthy balanced state and then we prescribe a home care regime to support and maintain the results. DMK obviously specalises in acne, pigmentation, scarring, rosacea and reactive skin (sensitive), stretch marks.

The most common misconception is that people think that using something that dries out the skin will get rid of acne. Acne skins do have a fast oil flow but they also suffer from trans epidermal water loss because of the increased androgens. The thing to remember is that the skin is on a feedback mechanism, so if you strip the oil and dry it out this send a message to the sebaceous (oil) gland to produce more oil so you are make a fast situation even faster.

As we move from winter into spring, how should we change our skincare routines? Winter is very drying as we go from warmth, to cold, and back to warmth. So I would recommend getting a really good treatment to exfoliate any dead cell build up, then increase the circulation to bring fresh blood, nutrients and oxygen to the skin, improve lymphatic drainage and stimulate the fibroblast cell to enhance collagen production. Follow with a multivitamin, mineral, amino acid and essential fatty acid infusion. Then, at home, you don’t need as many rich lipids in your product as in winter. Use products that increase

free water levels and waterproof the skin (barrier repair therapy). You tend to sweat more and have more oil in summer. Also, in summer obviously be vigilant with applying sunscreen.

What are the biggest mistakes you see women making with their skincare routine? Probably thinking “I will just use this for a couple of weeks and then I don’t need to use it anymore and it will stay like that.” Consistency is the KEY in life, the more consistent you are, the better you will look in the future.

What stimulated you to launch Herbs + Heart? I’m curious, stubborn, and a mild hypochondriac, all wonderful beginnings of what eventually lead to become Herbs + Heart. It started with my own skin troubles during my teenage years, and as every overly paranoid person, I took to Google to enquire on how I could best help myself. I stumbled upon the many DIY home remedies and experimented a lot with my own skin, with incredible results. How does Herbs + Heart differ to a typical skincare brand? Our products focus on being multi-functional in their application within a beauty routine. With products that have the flexibility to be used for a number of different ways, users can overall reduce the products they use, simplifying their routines down to the bare minimum without compromising on happy and healthy skin. What skin woes can Herbs + Heart treat? Unhappy Skin! For us, skincare woes arise from unbalanced skin that is deprived of the key nutrients and care it needs in order to heal and restore itself. What is the ideal Herbs + Heart skincare regime as the weather changes from winter to spring? As the weather changes, and the air around us gains humidity, this added moisture to our environment is great for our skin. I do however have a personal bias for Manuka Honey and Calendula. Manuka Honey’s complex architecture of essential vitamins and Amino acids provide the building blocks of collagen, whilst the methylglyoxyl factor (MG) has been shown to increase collagen cross-linking and promote structural integrity of collagen in skin cells. Honey also makes an excellent face cleanser that does not disturb the delicate acid mantle of our skin. The hygroscopic nature of honey draws out the dirt and grime trapped in hair follicles and facilitates the free flow of natural oils. Upon contact with water, honey produces natural hydrogen peroxide, gently exfoliating away dead skin cells to reveal clean, bright skin. As a natural humectant, honey draws in moisture into the skin. This hydration helps to further enhance the skin’s elasticity and cell regeneration, as well as promote healing. Calendula is well known for its supreme ability to promote fast healing in wounds and aid regeneration of skin with minimal scarring. In celebration of Binny’s tenth anniversary, Label meets founder Belinda Watson to understand her inspiration, creative process and the pieces you need in your spring wardrobe.

Which fashion icons have inspired your designs?

Where and how did Binny begin?

This year I have spent most of it planning a garden. And settling into my new number one role as a mum. It is our tenth year, so I really feel we are in full flower in more ways than one. Even more serendipitously florals are MASSIVELY back. Such a refreshing change after the relentless minimalism of the past few years. Finally, the pages of trend reports are full of colour, print, florals and fun. So, expect lots of pretty colour, spots and flowers. And always… prints!

Binny started in 2008 when I couldn’t find anything fun and what I loved to wear to all the events my friends and I were attending – 30ths, engagements, weddings. After starting two brands from scratch for other companies and being involved in all sides of the business, from sales to design, I took a deep breath and decided to start in a dusty old garage in my share house in Tamarama, Sydney. How has Binny evolved since its inception? Originally created to satisfy an opportunity in occasion dressing, I now focus on two seasonal collections annually that tell a tale that is memorable to me. I started out with a tiny 12 piece signature collection that would easily fit back into my range now, which makes me happy as the handwriting is less trend driven and rather classic items I always will love. However, now I struggle to keep a collection under 50 pieces. This year marks the tenth anniversary of Binny, after years of doing everything myself I now have an amazing team helping me with everything from production and PR to packing! Who is the Binny woman?

I always adore the obvious such as Chloe, Dolce, Gucci. I am really drawn to the print-driven designers and trawling the international shows is one of my favourite pastimes. Always a bit eclectic with classic thrown in. My designs are mainly inspired from travel, art, books, life – it changes every time. Tell us about your plans for our Spring wardrobes. What inspired your latest collection and what can we expect to see trending this season?

What has been your biggest challenge as a businesswoman in retail and how have you overcome it? Making all decisions solo and the pressure mounts as the business grows. But I have gotten a lot better at not worrying about it. The only thing that has helped with that is experience, making mistakes and learning from them. Finding the right people to work in the specific areas you need and finding the right balance has also proved challenging but so rewarding when the right person comes along. What piece of advice do you deem most relevant to fledgling designers? Be unique.

We recently sent out a questionnaire to our loyal mailing list clients. We found out the majority of our clients are 30+, mums and have an interest in all design from art, interiors, fashion - both high street to high end, from what they read to where they shop. She has a love of colour and print and appreciates the uniqueness and details.

Where do you go to recharge your design drive? Back to the farm. Clear skies, crisp air, open fires and my family.

Mila Kunis won a place in our hearts after her first big gig on That ‘70s Show at 14, playing Jackie Burkhart, an endearingly self-impressed teen. Born Milena Markovna Kunis, the 35-year-old moved with her family from Ukraine at seven from her hometown of Chernivtsi. Growing up in the Soviet Union, Mila’s mother was a physics teacher and her father was a mechanical engineer, however they chose to leave for Los Angeles for a better future for their children.

sTeak wiTh kale, TahiNi & sesame greeNs REDUCED CARB • SERVES 2 PREPARATION TIME: 5 MINUTES COOKING TIME: 25 MINUTES

INGREDIENTS > 1 tbsp coconut oil > 2 cloves garlic, finely chopped > 200g kale, thick stalks removed > 1⁄2 courgette, trimmed and cut into half-moons > 125g midget trees (tenderstem broccoli), thick stalks cut in half lengthways > 150ml hot chicken stock > 2 sirloin steaks > salt > 30g tahini > 3 tsp sesame oil > 2 red chillies, de-seeded and finely chopped > sesame seeds, to serve

Melt half of the coconut oil in a large frying pan over a medium to high heat, then add the chopped garlic and cook for 30 seconds. Add the kale, courgette and midget trees and fry, stirring regularly, for 3 minutes. Pour the hot stock into the pan with the greens. Reduce the heat to medium and cook for 5 minutes, stirring every now and again. In the meantime, heat the remaining oil in a frying pan over a high heat, and gently lay in the steaks. Cook the steaks for 4 minutes on each side, turning them regularly as they cook. Remove the steaks to a plate to rest and season them with salt. Check the vegetables are just tender, then take the pan off the heat. Mix the tahini with the sesame oil in a small bowl. Serve up the greens topped with the sliced steak, red chilli, sesame seeds and a drizzle of the sesame and tahini dressing.

INGREDIENTS > 2 large sweet potatoes (600g), scrubbed clean > 2 tsp olive oil > salt and black pepper > 40ml rice vinegar > 2g caster sugar > 1 red chilli, de-seeded and finely sliced > 1⁄4 red onion, finely sliced > 1⁄4 cucumber (80g) de-seeded & cut into thin half-moons > 2 x 200g skinless and boneless cod fillets > 30g tikka masala curry paste > 2 burger buns To serve 1 tbsp fat-free Greek yoghurt 1 tomato, thinly sliced 1 tbsp coriander, chopped

Preheat the oven to 200°C (fan 180°C/gas mark 6). Cut each sweet potato in half lengthways, then cut into eight long, thin wedges and scatter over one layer on a baking tray. Drizzle over the olive oil along with a good pinch of salt, toss to mix then roast in the oven for 25 minutes. Mix together the rice vinegar, sugar, red chilli, onion and cucumber in a small bowl and leave to steep, giving it a mix every now and then. Coat the cod fillets in the curry paste then place onto a baking tray lined with parchment and roast in the oven for 15 minutes, by which time they should be just cooked through. When the fish has only 5 minutes to go, cut the buns in half and place in the oven to toast. To build the burger, spread a little yoghurt onto two bun halves, load up with sliced tomato, lay the fish on top then scatter the cucumber mix over (drain off the excess vinegar). Finish with the coriander and squash the remaining bun halves on top. Serve with the sweet potato fries.

*Feel free to use any type of white fish or even chicken breast instead of the cod fillets.

miNi sTrawberrY PaVloVas SWEET TREATS • MAKES 6 • LONGER RECIPE

INGREDIENTS > 4 eggs, whites only > 200g caster sugar > 1⁄2 tsp white wine vinegar > 1 tsp cornflour > 400g strawberries, stalk removed & berry cut into thin slices (pound-coin thickness) > juice of 1⁄2 lemon * Use a clean mixing bowl > 3 tsp icing sugar to whisk up the eggs and > 400ml double cream sugar and don’t rush when > 3 digestive biscuits spooning in the sugar.

Preheat the oven to 180ºC (fan 160ºC / gas mark 4) Place the egg whites in a large clean bowl and whisk well until light and fluffy and able to hold their own weight. Add 1 tablespoon of sugar and whisk for about 30 seconds before adding another. Continue this process, ensuring you don’t add more than 1 tablespoon of sugar at a time, and giving the mix a good whisk until all the sugar is used up and the egg whites are very stiff and glossy. Add the white wine vinegar and the cornflour and whisk again. Continue to whisk for a good 2–3 minutes to be sure that all the ingredients are absolutely mixed together. When you are happy with the mix, dollop six large mounds of meringue onto a flat baking tray lined with non-stick baking parchment. Using the back of a spoon, push the centre of each mound down a little to create a nest shape. Slide the nests into the oven and immediately reduce the heat to 100ºC (fan 80ºC/gas mark 1⁄4). Leave the nests to cook like this for 30 minutes, then turn the oven off and leave to cool. Meanwhile, mix the strawberries and lemon juice in a bowl, then sieve over the icing sugar. Leave to sit until you’re ready to eat. Just before serving, whisk up the double cream until it’s just thick enough to hold its own weight. Carefully sit the mini pavlovas on a serving plate, dollop on some double cream and top with the strawberries. Crumble over the digestive biscuits and serve immediately.

Sometimes you need a stiff drink to shake off the winter chill and nothing does that quite as well as a Nuclear Daiquiri. Traditionally using over proof rum we’ve made our own variation utilising The Broadside Navy Strength Gin and Native River Mint.

First, we want to dry shake the cocktail. Dry shaking is where you shake a cocktail with egg whites with 1 or 2 cubes of ice in an effort to emulsify the whites. Once that is done we want to open the shaker, fill it up to the top with ice, and shake again. Once you’ve reached a nice dilution, which is usually when the tin is getting frosty, open the shaker, double strain (pop the big springy strainer into the top of the shaker and pour the beverage through a fine strainer, which is sort of like a tea strainer) into a pre-chilled pretty cocktail glass.

PLANT PERSPECTIVE with Botanica™

Founder Lesley Williams talks modern interior greening and the magic of mossariums. Tell us about your enchantment with plants. Where did your Botanica™ journey begin? I love plants and the idea of being amongst the rainforest and nature. Growing up, we had a section of the garden that was totally overgrown with monstera, tree philodendron and ivy. I remember going on adventures through the foliage with my sister as children. That nostalgic rainforest adventure was sparked again when my partner and I moved to the Adelaide hills about 5 years ago. We have big trees, natives, ivy, mosses and I think subconsciously I wanted to recreate that place… but I didn’t have time just yet to dedicate myself to such a project! At the time my only green thumb activity was nursing some sick phalaenopsis orchids to better health under a large hand blown glass cloche. The amount of moss that was thriving as a byproduct under the glass sparked an idea. A tiny rainforest on my counter might be the next best thing to having a big rainforest of a backyard. And that was the birth of our first product, Sanctuary the mossarium. What is a mini-mossarium and how does it work? Terrariums are for all sorts of tropical/temperate plants but a mossarium is generally a closed, microclimate to collect and display mosses. It works very simply - as the moisture from the moss evaporates, it condenses in the lid and drips back down to hydrate the moss, eliminating the need for constant misting as moss dries out pretty easily when kept indoors. Just as the phalaenopsis moss did once hydrated more regularly, moss in a mossarium begins to grow in height and become brighter in colour (NB when moss is dry, it’s not dead but rather dormant until the next rain). What are some of the common issues with small terrariums and what makes the mini-mossarium a better option? I love working with all types of terrariums but there were a few things I identified that could perhaps make starting one an option for more people.

Terrariums can be hard to keep clean. Generally there is only a small opening to access the moss or plants inside and cleaning the glass is a real skill! Mixing plants and mosses can sometimes be problematic too because their needs are slightly different. Some plants are dying off whilst others are thriving and you do need to get in there to clean up a bit. You can let your terrarium go wild but after asking people their opinions, they loved their terrariums when they first got them but once plants started breaking down (naturally) and regrowing in weird and wonderful ways it can get a bit mucky in there! So why not start small, just with moss…. see how things go? Moss receives nutrients via its tiny leaves, so the hydration Sanctuary provides works great. Moss doesn’t need soil, just place the moss over the Sanctuary domed base. You can lift the lid to trim moss or clean the lid. The base acts as drainage for excess water and also hides any dirt. Side vents provide a little airflow which mosses do enjoy. Our silicon bases are also dishwasher safe when it’s time to refresh. It’s a neat and easy-care option for a touch of greenery on your desktop. What climates can we choose from and what plants are best suited to each environment? If you would like a super hydrating climate, our Rainforest and Sanctuary are perfect products. You can experiment with particular mosses and plants that enjoy a humid or moisture rich environment. For a more traditional looking arrangement we have Temperate for indoor plants such as peace lili, palms, baby monstera, birds nest fern and orchids. Semi open is our Biodome. We are able to use the same plants as above (thanks to the ventilation in the domed glass top) but the water schedule is significantly reduced. A fortnightly check is all you need. All of the range requires natural light for your plants to thrive and keep a nice balance in the terrarium.

What are your favourite species to see flourish? I have trialled many mosses over the last two years but my favourite is still the moss we stock, which is Racopilum Cuspidigerum. It’s a pluerucarp moss that branches out and upward, depending on the amount of light it has access to and loves a moisture rich environment. You can also give it a haircut every so often which is fun! Which Botanica™ styles are most on-trend for Spring’s home décor themes? TOKYO A Travel Story by Jules Ingall

Tokyo is Japan’s Capital and the world’s most populated city with over 35 million residents. Yet somehow, they manage their numbers well and unlike many other popular tourist cities, you don’t feel overwhelmed by crowds. In addition to its size, Tokyo is also one of the safest cities in the world with crimes against tourists very rare. You can feel comfortable in walking the streets at night with the lowest per capita crime rate in the world. These are just a couple of the reasons that Japan is considered one of the world’s greatest cities to visit, but there’s plenty more. Number one is its excellent transport system. Trying to move millions of people around a large city is no mean feat, however the Japan rail system handles the numbers with ease and efficiency. It is also relatively simple to use and well priced so a great way to transport yourself around, particularly if you are a tourist and unfamiliar with area. Shinjuku Station is the largest and most central station with an estimated 3.7 million passengers passing through every day!

As far as navigating a foreign city, particularly with their written language being characters rather than the alphabetic letters we are familiar with, translating and deciphering signs can be tricky. Luckily, the local Japanese people are extremely helpful and friendly, always keen to offer advice or directions. Many of the young Japanese speak fluent English which helps, although it is always advisable to learn a few basic words and phrases to get you by.

As a first time visitor to Japan, the expectation is all about sushi and Geisha girls. Funnily enough however, to spot a Geisha girl in Tokyo city is unusual, you generally need to move further out the more rural regions where the art of Geisha is a time honored tradition. There are certain places in Tokyo city where you can view a Geisha exhibition such as the free show at Asakusa Cultural Centre, however for an authentic experience you are more likely to find them in Kyoto about 3 hours west of Tokyo.

Whilst in Tokyo, hotel options are endless. There is everything from luxury penthouse suites for $20,000 per night to the “capsule” hotels which are literally that, a tiny capsule that is only suitable for a place to sleep at very low prices. One great option if you are looking for an all-round choice is the Shangri La Hotel. Firstly because of their excellent standard and quality but also because it is located directly above Tokyo’s main train station, thereby being a great central location for tourists. It sits on top of an office building so the hotel starts at a high level already meaning every floor has amazing views over the city, none more than the Horizon Club Lounge on the top level of the hotel. Perfect for an afternoon cocktail. If you chose to stay here, it’s highly recommended upgrading to a room with access to this lounge. Well worth the additional cost. The extra level of service at the Shangri La is also second to none.

Sushi on the other hand is something that has to be experienced when visiting Japan. Whilst it is a misconception that Sushi is an everyday food in Japanese culture, the sushi that you do find in Tokyo is incredible. It’s as much about the rice as it is the fish and sometimes, not even necessarily fresh fish. There are variations of sushi, such as tuna, that are considered best after certain preparations or aging. Either way, there are so many options for Sushi in Tokyo, from the freshest sashimi at the World Famous Tokyo Fish Markets to the stalls in the undergrounds shopping centers and of course, the sushi bars dotted all around the city. Beware however, many restaurants are very small, only housing a minimal number of diners so it isn’t always a case of “walking in off the street”.

Things to do

If you’re looking for ways to fill your days in Tokyo, here are a few of the many great things to do:

Ginza is one of the main shopping regions of Tokyo filled with high end stores, chains like Apple, Zara, etc, bars and luxury brands – the buildings themselves are worth the visit alone, they are stunning. The food hall under Mitsukoshi department store is insanely good. Stock up on food here. Overall Ginza is a great district and even if you don’t spend any money, it’s an interesting people watch and window shop kind of place. It’s also where Shibuya Crossing is located, this is one of the busiest crossings in Tokyo. Marunouchi Street is located in Tokyo city near Tokyo station and is full of high end, beautiful shops and restaurants. Great for a wander and lots of laneways with lovely quaint little restaurants. The Tokyo Fish markets are the worlds largest and busiest fish market. They are absolutely mind blowing. Well known for their live tuna auctions, but make sure you check before you visit as these are very limited in numbers and at times are not open to the public at all. To visit the auctions, you have to be prepared to arrive early, around 4.30 am. The easiest way to arrange a visit is probably via the concierge at your hotel. Ramen food stands are located all over the city and they are delicious. As many of the restaurants only have seating for 20 or less people, once they are full, you either have to queue for a long time, or find somewhere else. This makes the Ramen stalls not only quick and easy, but also really cheap. Omotesando is a really pretty avenue lined with Zelkova trees starting at Meiji Shrine all the way down to Omotesando Station. This is also where Takeshita Dori is located. If there is one place you need to go in Tokyo, this street is it. Home to the Harajuku teenage fashion culture, Takeshita Dora is lined with all the quirky Japanese youth fashion boutiques. There are also fantastic market food stalls in the area to sample some local treats.

Asakusa is well known for it’s historic neighborhoods and areas. There is also a beautiful Sensouji temple and Shrine which is the oldest Buddhist temple for ordinary people. A short walk across the river to the Tokyo Sky Tree. Although this is a broadcasting tower, there is also a restaurant and observation tower giving the most amazing panoramic views over Tokyo. This is currently the tallest structure in Japan so as you can imagine the views are incredible. From the Asakusa region, you can also get on board the Tokyo river cruise for around AUD20 per person and take a leisurely cruise down the Sumida river to the region of Odaiba. Odaiba itself is probably best visited in summer. The location for quite a few of the 2020 Olympic Games venues including Beach Volleyball, there are nice beaches and parks to enjoy the sunshine. It sells itself as an entertainment district with restaurants, theme parks and interesting structures. The Tokyo Tower in the Shiba-Koe district is a communications tower and is the second tallest structure in Tokyo (apart from the Sky Tree). By Day, it is red and white, but at night, all lit up, it looks exactly like the Eiffel tower. Tokyo’s Imperial Palace is generally closed to the public, except on the Emperor’s birthday and New Year, however a walk around the exterior is still really interesting and the Imperial Household Agency and the East Gardens are accessible

After a feast, head up to the top floor of SO Sofitel’s new 1927 bar, the coolest rooftop pool bar in town, where the chilled tunes and chilled drinks with names like “Tiki Timebomb”, will have you murmuring “What kids?” in the time it takes to shake a cocktail. Dance, chat, and luxuriate on the laid-back loungers, and fabric-swathed cabanas, or take a sneaky dip in the infinity pool that overlooks the city skyline. Maybe a night or two at the beautifully refurbished Swissôtel The Stamford, with hours of retail therapy right under your hotel at the popular Raffles City Centre shopping mall? After a stress-free, silent sleep, in cool, cotton sheets and in a huge bed -all to yourself, it is time to strike a pose in the shops selling Kate Spade, Coach, Furla, Chanel, Dior, Rolex. Oh no wait. That’s in the movie. Laying you on an Egyptian cotton-topped massage table, the therapist will pummel the school pick-up up traffic knots out of your aching body, leaving you feel revitalized. As the spa is right next door, at the adjoining Fairmont, after the massage you can sink into a hot bubbling Jacuzzi, - without dodging rubber duckies - and sweat it out in the steam room, before serenely wandering back to your room, where the bed has been magically made up and the bathroom is gleaming. Your Business, Your Dream. Buying or selling a business can be a stressful time. Your business is often your dream and the motivation and income source for your family. But the process of buying or selling a business can be difficult and requires expert assistance.

STeP One Investigate the business that you are thinking of buying. Do your due diligence.

STeP TWO Seek expert legal advice to draw up the contract. This is a critical stage as the contract will set out the essential terms of the purchase and sale. Is the contract subject to finance, verification by your accountant of the financial records or the assignment of the lease of the premises? Are there licences or approvals that are required to run the business? Will there be a restraint on the seller or its entities conducting a similar business for a time in a certain area? Are there staff required to remain in the business and on what basis will they be offered employment? This is vital and your legal representative should be able to draft a contract that protects you and ensures that you will only be buying a business on the terms that suit you. Drafting of these conditions is an important task and the detail is often critical.

STeP Three Once the contract is negotiated and signed, it is time to satisfy those conditions, get your finance, check the financials and obtain the landlords consent to assign the lease or grant a fresh one. Again, the documentation here is vital and it is important that you and your lawyer communicate clearly.

STeP FOUr So the conditions have been approved and it is time for settlement. Your lawyer will have conducted the

necessary searches and from these it will be clear what adjustments need to be made at settlement. Documents need to be checked and liaising with your bank regarding finance. Settlement will need to be coordinated with the seller and their financier, the landlord, and the buyer’s financier so that all parties are satisfied to proceed. It is essential for all parties that these matters follow the correct procedure as the buyer wants to ensure they take over the business with all items in place to continue its operation without any impediments or debts. The seller needs to be sure that upon the completion they receive their money for the sale and have been released from all liabilities, including personal guarantees of the business moving forward.

STeP FIVe Once settlement has been effected, your lawyer should attend to any loose ends which require attending to, including lodgement of forms, registration of transfers, releases or any other items to perfect the completion and transfer ownership to the buyer and away from the seller. Whilst the exact process varies from transaction to transaction, the skill and knowledge of your legal expert should be relied upon to ensure the transaction proceeds.
