Scarlett Johansson Wife, mother, and the highest grossing actress of all time Tucking into a bowl of delicious French onion soup at the Howard Johnson diner in Times Square, Scarlett Johansson pondered her next move. Her audition had gone as well as expected and she was quietly confident of winning the role. Nothing quiet about it actually, she was desperate. Desperately hoping. But her face gave nothing away. She concentrated on the soup, letting the tangy liquid sit on her tongue, before sliding slowly down her throat, her swinging legs keeping their own beat on the cracked vinyl of the booth. As the joint-youngest of five children in a family where money was scarce and public assistance was needed to help buy food, Scarlett knew that French onion soup was a rare treat. Every moment was savoured. As it happens the then eight-year-old did indeed have a successful audition and made her professional acting debut in the off-Broadway production of Sophistry with Ethan Hawke. But that measured approach while living each moment to its fullest, the undeniably worldly air and the absolute ability to march to her own drummer, so evident in that New York café, still sets Scarlett apart more than two decades later. Now, of course, she is the highest grossing actress of all time, a wife, a mother and very much in demand, able to pick and choose her next project at will. Yet, still, she prefers to totter on the edge of the unexpected, seeking out those decidedly unconventional roles and adding a handful of superhero thrillers into the mix, keeping the critics off kilter. Scarlett is one of those lucky people who was born knowing what she wanted to do with her life. Her father, Karsten Johansson a Danish architect and mum Melanie Sloan, from an Ashkenazi Jewish family in the Bronx had settled into life with three children when Scarlett and her twin brother Hunter came along. Her mother, a film lover, signed the children up to a commercials agency but Scarlett’s heart beat for the big screen and she soon followed her turn in Sophistry with a role in North starring Elijah Wood in 1994 and a minor part in the Macaulay Culkin franchise, Home Alone 3. “I always had the chance to do whatever I wanted to do, my parents were very open about that,” she says. “Acting has been a passion of mine. I wanted to be in musicals as a kid, and took tap dance, so for me it’s a dream come true, my childhood was filled with things that I loved to do, and also very normal things: I lived in New York, I have a family life and went to a regular school. If anything, I look back and think, ‘Wow, I did a lot of things that a lot of people don’t get to do in their lifetime’.” The young Scarlett was rarely without work and along the way garnered an Independent Spirit Award for Best Lead Female nomination for her performance in Manny and Lo (1996) and widespread attention as Grace MacLean, a teenager traumatised by a riding accident, alongside Robert Redford in The Horse Whisperer. 8 LABEL MAGAZINE SPRING 2016
COVER STORY But it was Lost in Translation (2003) that really saw the world sit up and take notice. Her quirky yet innocent portrayal of neglected college graduate Charlotte opposite Bob, a tired aging actor played by Bill Murray found much-deserved acclaim, and Scarlett quickly followed that up with a stylish performance in the Girl with a Pearl Earring. Those films brought two Golden Globe nominations and Scarlett’s star was truly on the rise. The then 18-year-old actress seemed non-plussed with the attention declaring with that confidence only teenagers can muster, that she had a solution for the problems her burgeoning stardom would bring. “I’ll just walk around with a big pair of sunglasses and continue to eat at McDonald’s,” she said with a touch of mischief. If only it were that easy. “I don’t think there’s any kind of preparation for sudden celebrity,” she said once the true magnitude was realised. “I think you almost have this slight nervous breakdown when that kind of media attention happens. I mean, you’re doing the same kind of thing that you do all the time, only you have to make these weird adjustments. Like, you’re buying a slice of pizza and somebody’s outside photographing you which is weird – that’s not normal! It’s very uncomfortable.” Scarlett, though, went about her business, her husky voice and luscious curves keeping her on top of those Sexiest Women lists, her unforgettable face on the cover of magazines and her obvious talent in box-office successes. Well-trodden paths may be a safe haven for most people making their way but for Scarlett, who seemed naturally averse to caution, they were way too boring. She chose risk instead, even though she concedes it was difficult to navigate, and opted for movies like In Good Company, A Love Song For Bobby Brown and The Spirit. A huge fan of Woody Allen, she appeared in Match Point in 2005 for which she got her fourth Golden Globe nomination as well as Vicky Cristina Barcelona. In between it all Scarlett found time to do an album of Tom Waits covers, not Top 40 material mind you, but just another nod to her determination to do those things that make her happy. In 2008 she married actor Ryan Reynolds and was, by all accounts, content. Her professional stock continued to rise, more so after she won a Tony Award for her impressive Broadway debut playing Catherine in Arthur Miller’s A View from the Bridge. “It was strange to think that this show is going to go on whether it’s good or bad,” she joked before opening night. “They will let the audience in at some point, and they will see it, and we are going to be exposed for better or for worse. “Being welcomed into this community has been a dream come true for me. Ever since I was a little girl, I wanted to be on Broadway, and here I am.” Despite her success, life has not always been good to GQ Magazine’s Babe of the Year. She divorced from Reynolds in 2011 saying, “It was horrible. Of course it’s horrible. It was devastating. It really throws you. You think that your life is going to be one way, and then, for various reasons or whatever, it doesn’t work out”.

Scarlett Johansson & husband Romain Dauriac In September that year she was also named as a victim in a hacking scandal with intimate photos meant for Reynolds put on the internet for all to see. Scarlett was furious and called in the police who arrested the hacker. “It wasn’t just me,” Johansson says. “It was others. I don’t want to be a victim and say, ‘Oh, well’ and just hide my head in shame. Somebody stole something from me. ... It’s sick. I don’t want people like that to slide.” Professionally, Scarlett was restless and feeling uninspired by her job and the roles being offered to her. Despite her penchant for the quirky, she was keen for a big blockbuster with a female role she could sink her claws into. Enter Natasha Romanoff, the Black Widow. She courted the role in Iron Man 2 dying her hair red for her first meeting with director Jon Favreau and relished playing the sexy mysterious action villain. Of course Black Widow also featured in the Avengers, which earned $1.5 billion worldwide and its sequel bringing Scarlett a legion of fans she was never previously exposed to. “I wanted to prove to myself that I could do it,” she says. “I wanted to stretch myself physically, out of my comfort zone, and still succeed. I’m probably like most actors. We have huge egos, and you want to know you can be successful, no matter what. I don’t want to be pigeonholed in one genre or budget or whatever. “I don’t think anybody could have predicted how successful it would be. It was bananas. Totally bananas.” Clearly, Scarlett is not just a well-known actress will millions in endorsements and a very bankable face. The 31-year-old is a tireless charity worker, is quick to add her voice to the fight for gender equality, she is a political campaigner and an aspiring director. She is also a mum, to Rose Dorothy, almost two, who she had with husband Romain Duariac. It is a job, she says, that she is still getting accustomed to. “The biggest joy that I have is looking at my daughter,” she says. “When I’m just hanging out with her and we’re doing silly stuff and if I make her laugh, the feeling of joy I have is explosive. If I can make her laugh and she gets a big smile on her face, that’s pretty much it. If only you could actually bottle that and carry it around.” The family splits their time between New York and Paris, where Romain, a former journalist is an art curator. While Scarlett is still feeling her way, she says it’s their similar interests and their interest in each other that keeps them going strong. “We like to go out and go dancing. Other times, we like to sit at home and eat Thai food and watch House Hunters International for four hours,” she says. “And we’re interested in each other’s worlds. He’s interested in my weird, alien entertainment world. It fascinates him because it’s so different than what he knows. And I like to go to art openings with him and talk about art and emerging artists with him. That’s his passion.”

How did you begin your career in fashion and what was your path from there to launching Vale? I was never set on launching a brand initially, however Vale was born after a multitude of career paths. Since I was young, I’ve always had an interest in altering vintage pieces in some way, which spurred me to study fashion. From there, I met with talented photographer Darren McDonald and experienced life on the set of a fashion shoot, ultimately fuelling my love of the industry. I went on to become a sales agent for some of Australia’s leading designers. This gave me the foundations I needed to begin the Vale venture! 2. As true denim devotees, we must know... What was the denim piece that began your love story with this versatile fabric? A pair of vintage jeans I have had since I was 18 that wear with me. That’s the thing about denim, its classic nature means that it actually just gets better with age. 3. What are the key denim pieces for a capsule wardrobe? Our Earth Layers Denim Jacket is the perfect fit - just like you borrowed it from you boyfriend. Paired with the Quartz Classic Jean, a semi-fitted classic cut, it allows anyone to wear that double denim look.
5. Who is the Vale woman? The Vale woman is you, it’s me, and it’s your best friend. She loves fashion although she isn’t afraid to take a gamble, whether on colour or a subtle nuance in the design. It is about looking your best not matter what. 6. Where do you seek design inspiration? I am always looking for inspiration, although street style is my ultimate muse. Seeing a friend or even a Vale devotee influences me season-on-season. I love seeing how each of them interprets the look, what shoe they pair it with or how they layer their pieces. For the colour palette, however, I always I look to the landscape of Australia – the sun, the sand and the sea are constant sources of inspiration for me when designing the collections. 7. What is your ideal day away from your desk? In a park beside the ocean, with friends. Chilling on a big blanket with pillows, a good glass of vino and a cheese board - Fourme d’Ambert of course.

Recently there has been a bit of a movement back towards the more traditional engagement rings, but the halo still remains popular. Custom-design is also on the increase. What is one piece of advice you would impart to brides and grooms to be when it comes to choosing rings? I would always suggest, as much as possible, to get a wedding ring in high carat gold or platinum. Wedding rings are usually a small fraction of the overall cost of the wedding, and really are the only thing that you carry on a daily basis after the day… except of course the happy memories. Are there other pieces of jewellery associated with weddings? We have made lots of different things for weddings, from crosses to crowns! Creating your dream day The team at Songbirds, responsible for so many magical matrimonies, share the secrets to a wonderful wedding. When organising a wedding, what are three pieces of advice you would give to brides and grooms? We want to encourage our brides and grooms-to-be to come with a “don’t be afraid to ask” attitude. Our job is to make the planning as fun and pleasant as possible with keeping their budget in mind. We find that once the guest list is determined the planning can be a smooth and areas can be identified easier with knowing the estimated guests. But most importantly, never stop laughing! I would remind them that they are in this journey together and laughter is truly the best medicine. What are the essentials when planning the wedding and reception? One of the best reasons for having a wedding with us at Songbirds Resort Retreat is the food! Food and drinks are such an important component for a wedding, not just food that tastes amazing but food that can ‘wow’ those guests is essential. A great venue that can hold both the ceremony and reception are also important when considering a venue for the big day. What are some of the most interesting wedding trends you are seeing at the moment? Lighting is playing a big part in the big day more, interesting or trendy lights are added to venues and set up for the day. Another trend is that there are more ‘foodies’ these days and savvy couples are incorporating elements of fruit, fragrant herbs, succulent plants and other elements of food to centrepieces, or their floral arrangements. Why do you think Songbirds has been so popular for so long with bridal parties? Songbirds has been popular for a few reasons for our bridal parties. Our number one reason is the food. We have been awarded with the AGFG Chef Hat Award for the past five years. Our couples also love the luxury villas right on site, it allows the bridal parties to get ready for the big day and enjoy more time together in a paradise setting. We create a very relaxed ambience from beginning to end. What is the most memorable wedding you have been part of organising? My recent couple was a joy to work with from the start, they looked forward to every step of the process. It was wonderful to be part of their process. I feel with each couple, I create a new friendship and amazing memories.

Serves 20 Ingredients For the mixing bowl 150g self-raising flour 300g plain flour 75g Dutch cocoa powder 1 tsp bicarbonate of soda For the pot 3 espresso shots 375g butter cut into small pieces 375g dark cooking chocolate 825g caster sugar For the small bowl 6 free-range eggs 60ml vegetable oil 190ml buttermilk 1 tsp vanilla bean paste For the icing 1kg icing sugar mixture 250g softened butter 100ml cream 1 tsp vanilla bean paste 1 tsp fine sea salt To toffee 300g caster sugar 1/2 cup water To decorate Your selection of flowers and greenery. Method 1. Preheat the oven to 160C. Grease and line the base of two 23cm round cake tins. 2. Sift the mixing bowl contents into a large bowl that will eventually facilitate the batter and stir to combine. 46 LABEL MAGAZINE SPRING 2016
3. Add the butter, chocolate and sugar to a small pot. 4. Pour your espresso shots into a measuring cup and fill to 270ml with boiling water. Add to the pot and place on a low heat, stirring until it melts and is smooth. Remove from heat. 5. Mix the small bowl contents gently until combined and whisk into the pot. 6. Pour the pot into the mixing bowl and mix until well combined. 7. Divide the batter amongst the two cake tins and bake for an hour, or until the cakes bounce back when lightly touched with your fingertip. Remove from the oven and cool completely. 8. For the toffee, firstly, do not stress. This is fun and simple once you get the hang of it. Lay out a sheet of baking paper, about 30cm long. Next to it, grab several small kitchen items such as spice containers, salt shakers, sauce bottles and rolling pins. Arrange these lying down, side by side with a small gap between each. This toffee gym will give your crown some height. 9. Add toffee contents to a saucepan and boil on high heat until the mixture begins to colour. Remove from heat and swirl the pan until the entire mix is a golden hue. Cool for a few minutes, so the mixture thickens slightly. 10. Pick up a metal spoon and dip it into the toffee. Drizzle the toffee onto the baking paper in whatever pattern takes your fancy, making sure all lines are at least 3mm wide. Once you’ve taken a few minutes to complete your drawing and you can see it beginning to set, drag the baking paper over your toffee gym and pull the paper down around gaps between the items to add shape. 11. For the icing, mix butter and sugar with an electric mixer until combined, then slowly add the cream, vanilla and salt. Beat until pale and fluffy. 12. Set one cake, flattest side down, on your chosen platter and spoon half the icing on top of it. Flatten it out but still leave the layer thick. 13. Place the second cake, flattest side up, on top of the icing and fill any gaps between the cakes with more icing. Using a kitchen spatula or palette knife, smooth a fine layer of icing on the outside of the cake, leaving the top bare. 14. Crown with toffee after gently peeling the baking paper off your masterpiece and add flowers.

THE TRUFFLE COOKBOOK Rodney Dunn, former food editor and founder of The Agrarian Kitchen in Tasmania, explores the wondrous truffle in his new book The Truffle Cookbook. While truffles are becoming easier to source, there is still not a lot of advice out there on how to cook them, and so began the idea for The Truffle Cookbook. Featuring over sixty truffle recipes across cheese, soups, pasta, seafood, meat, vegetables and desserts, including potato croquettes stuffed with truffle butter, seafood and truffle risotto and truffled custard tart, Rodney shows us how to make delectable truffle recipes in our own kitchens.
Goat’s Cheese and Truffle Baked in Pastry Serves 4 as a light meal

The tang of soft, creamy goat’s cheese pairs so well with the fruit paste in these pastries. If you can, make them a day or two ahead of time to allow the truffle to infuse into the cheese, then bake them just before serving.
”
200g log of firm goat’s cheese 4 sheets of filo pastry 50g butter, melted 40g fruit paste, such as quince, plum or apple 10g finely shaved black truffle 1. Preheat the oven to 180C and line a baking tray with baking paper. 2. Using a sharp knife, cut the cheese crossways into four rounds. Place a sheet of filo on a clean surface and brush with butter. Top with the remaining sheets of filo, brushing each one with butter as you go. Cut the pastry sheet into four rectangles by cutting it in half lengthways and then crossways. 3. Place a heaped teaspoon of fruit paste at one end of each pastry rectangle. Top with a round of goat’s cheese and a sprinkling of shaved truffle, then roll up to enclose. Brush with butter and place on the prepared tray, seam-side down. Bake for 20–25 minutes or until golden brown. Serve immediately scattered with extra truffle.

Truffled Macaroni and Cheese Serves 6

Making a killer macaroni and cheese comes down to using some really good cheese: a nice cloth-bound aged cheddar, something with a deep nuttiness like comté, and a good parmesan such as reggiano or grana padano. If you like, smoky bacon is a welcome addition – just sauté it first before stirring it into the sauce.
”
300g macaroni 800ml milk 1 fresh bay leaf 100g butter 100g (2⁄3 cup) plain flour Pinch of freshly grated nutmeg Sea salt and freshly ground black pepper 100g mature cheddar, coarsely grated 130g gruyère, coarsely grated 80g (1 cup) finely grated parmesan 20g finely grated black truffle 120g (12⁄3 cup) fresh breadcrumbs Crusty bread and green salad, to serve (optional) 1. Preheat the oven to 180°C. 2. Bring a large saucepan of salted water to the boil over high heat, add the macaroni and boil for about 8 minutes or until the macaroni is tender. Drain and set aside. 3. Heat the milk in a saucepan with the bay leaf until just warm – you don’t want it to boil. Melt the butter in a separate saucepan over medium high heat until foamy, then add the ¬our and stir constantly for 1–2 minutes until the mixture leaves the side of the pan. Remove the pan from the heat and add the warm milk a little at a time, whisking after each addition until smooth and combined. Return the pan to medium heat and stir until the mixture begins to boil. Add the nutmeg and season to taste. Add the macaroni, cheddar, gruyère and half the parmesan and stir until melted and combined. Remove and discard the bay leaf, then stir in the grated truffle.

4. Spoon the macaroni cheese into a 3 litre baking dish and scatter over the breadcrumbs and remaining parmesan. Place in the oven and bake for 40 minutes or until golden brown. (Alternatively, spoon the mixture into smaller dishes for individual servings, scatter over the breadcrumbs and parmesan and bake for 25–30 minutes.) Serve immediately with crusty bread and a green salad, if you like.

Kate Bennett travels to the stunning Sofitel Bali Nusa Dua Winding up the driveway to the warm Balinese welcome in the lobby of the Sofitel Bali Nusa Dua, it is hard to imagine we are only 15 minutes away from the hustle of the airport, and are now ensconced in a luxurious resort on a white sand beach in Bali. The pool access room, is a cool quiet sanctuary, with the most enormous fluffy king sized bed, and couch, desk and huge bathroom with French amenities. The glass sliding doors open to reveal a private terrace and swimup nook, and a set of steps right into the warm waters of the main pool, from where we can wade around hundreds of meters of secluded waterways and end up on a stool at the pool bar with the daily “Happy Hour” cocktail in hand. The scent of frangipanis hung heavy in the humid air as the sea lured us to the beachfront, where we lapped up sunny rays, and a BBQ satay lunch, washed down with an icy Bintang. Drawn to the beachside massage daybeds, with billowing white curtains, we had all the cares of the world kneaded out, and smoothed over, before we got dressed up for our celebratory dinner at Cut Catch and Cuccina. This poolside restaurant was perfect, as we have differing palates, one a fish lover, one a carnivore, and both loving rich desserts. The Balinese three piece band strummed happy songs – and we knew we had found paradise. As we strolled through the private pool villas, laid out in a village fashion of laneways, we came across the wedding chapel – Jewel Box right on the edge of the sand, and reflected on what a romantic location it would be to tie the knot. But the beat of the music was calling us to Nikki Beach – the world famous club at Sofitel, where they have DJ’s pool parties, White Parties and amazing Sunday brunches. Tonight we were content to sit on a couch on the beach and sip fine champagne together. Breakfast at Kwee Zeen is an “experience” rather than a meal. Torn between fresh juices, fruits, eggs every which way, an array of noodles, traditional Balinese dishes and exotic pastries, all washed down with a heart-starting coffee. A visit to Vietura seemed in order, to enjoy a facial with an energizing oxygen blast, that truly did seem to knock a few years off. But then the real treat, a 90 minute Balinese massage at So Spa, which commenced with the traditional bell, and finished with a little whimper, from me, as it ended. As our room came with Club Millesime benefits, we enjoyed happy hour drinks and canapés, newspapers and books, and a relaxed and intimate breakfast one day, followed by a morning lounging by the private pool. Sadly, as we departed, we realized we had relaxed more deeply than ever before, and had not even wanted to leave this beautiful haven. LARGER SEATS Canadian aviation company Bombardier has unveiled a plane designed for heavier-set passengers who struggle to fit in standard aircraft seats. The middle seats in the CS100 passenger plane are 48cm wide, larger than the 44cm offered by Boeing and the Airbus 319 (45.7cm). Window and aisle seats are also wider (47cm) as are the aisles themselves, luggage bins and windows. Bombardier says the modifications were made with the comforts of the modern-day passenger in mind with people today, on average, taller and heavier than in previous decades. The CS100 can carry between 100 and 150 passengers and will be a boon for passengers wanting extra space. The first of the fleet is already being operated by Swiss Airlines.

A Super Will Superannuation today forms a large part of peoples’ wealth outside of owing the family home. Many people in fact salary sacrifice their income into superannuation because of the tax benefits to do so. Currently in Australia there is over one Trillion dollars invested via superannuation. When a member of a super fund dies, their member balance is paid as a superannuation death benefit. Most people believe their superannuation is distributed in accordance with their Will. Whilst this might be true in some cases, the Trustee of the super fund decides who the death benefit is paid to. All superannuation funds allow members to complete a Binding Death Benefit Nomination (Nomination) colloquially known as a ‘Super Will’. The Nomination is binding on the Trustee and directs them how to pay the death benefit. The Nomination must be given to and accepted by the Trustee before death for it to be binding. One very important reason for preparing a Nomination is that in most cases it will overcome the family contesting the death benefit. This avoids the death benefit being caught up in expensive contested estate litigation. What is more, the Trustee will usually pay the death benefit almost immediately to the beneficiaries whereas contested estates often drag on for years. Richard Dawson, the estate planning partner at OMB solicitor says, “Anyone with superannuation should always have an up-to-date Nomination to ensure their super is protected. Nominations are easily downloadable from super fund website but in the case of self-managed super funds, the Nomination should be prepared by an experienced estate planning lawyer.” Given the large value of superannuation these days, Richard is seeing an increase in this area of litigation simply because people are not protecting their super by preparing a Nomination before they die leaving the death benefit open to attack. Richard recommends preparing a Nomination and reviewing it at least every three years to avoid expensive litigation. Special milestone for miracle twins born 15 weeks early Every parent dreams of that wonderful first cuddle with their newborn baby, but new parents Carly Been and David Bretnall had to wait weeks for that special moment. Their twin boys William and Edward were born almost 4 months premature at the Gold Coast University Hospital in June this year, weighing only 800g and 900g each. Specialist around the clock care in the hospital’s Neonatal Intensive Care Unit helped these tiny brothers overcome severe respiratory and other health problems, and they finally made it into mum and dads arms when they were five weeks old. “We wouldn’t have made it through this without the amazing care and support we have had in NICU,” said mum Carly. “The boys are progressing well, and our medical team has told us we might have them home by their actual due date, which is the 19th of September.” In their initial weeks, the brothers had to be treated in separate cots in NICU, but were finally reunited at 7 weeks and placed in a twin cot together, and then graduated to their first ever bath shortly after. “Being able to give them their first bath was a huge milestone for us,” said Carly. The babies were first time users of a specially designed bath recently donated to the NICU by the Gold Coast Hospital Foundation. The bath allows for vital equipment attached to babies to stay in place, and also for unobstructed monitoring by medical staff. Funds to purchase the bath were raised for the Foundation as part of the Gold Coast’s Give Me 5 For Kids appeal. The Gold Coast Hospital Foundation is a self-funded charity. Through the purchase of medical equipment for Gold Coast hospitals and public health care facilities, to the funding of critical services such as the Cancer Patient Transport Service, the Foundation helps relieve distress and hardship for patients and their families affected by medical crisis.
