Gigi Hadid As the newly endorsed face and body of Seafolly, Gigi is the perfect encapsulation of a sun, surf and sand lifestyle.

A

lot can happen in 18 months. Not that long ago, Gigi Hadid was just another beautiful California girl looking forward to playing volleyball for her high school. An obsession with Kobe Bryant and the Los Angeles Lakers (she wore the team uniform to school and even had her braces done in the team colours of yellow and purple), gave no hint that she was soon to become a global icon followed by millions and courted by some of the biggest names in the fashion world. And then, wham! Instant super-stardom. In true Hollywood style, she was discovered by former editor in chief of Vogue Paris Carine Roitfeld, who explained the reasons to Style. com “I was drawn to her right away because she was so different, and I love girls that are different — different from me, different from what everyone has seen before. I knew immediately that she was going to be a star. It is not just the look or the personality, but the feeling you get when you meet them. You believe they have what it takes and so you do everything to make it happen for them.” Gigi’s real name is Jelena Noura Hadid. Her mother, Real Housewives of Beverly Hills’ Yolanda Foster, was a top model in her day and went by the same nickname. Her modelling debut occurred when she was two in a campaign for Baby Guess, but she described her early years on set as little more than playing with toys while photographs were being taken. She has been described by close friends as humble, very funny and with a work ethic that belies her stunning good looks. Gigi is far from a spoilt girl playing dress ups for a bit of fun and pocket money. She appreciates the talented people working hard to make her look as good as possible and understands that modelling is a business that deserves her full attention.

Most importantly of all she has a real Aussie connection. Firstly her on/off boyfriend is Gold Coast pop star Cody Simpson. Secondly, she travelled to Melbourne last year as the star turn at the Melbourne Cup and loved the glamour, fashion and social whirl that hits Melbourne for race week. The final connection is her naming as the face and body of Seafolly. “My love for Australia is deep. Growing up on the beaches of Malibu, I have lived in a bikini for as long as I can remember and being the ambassador of such an iconic swimwear brand as Seafolly is something I’m very proud to be a part of.” Peter and Yvonne Halas founded the Australian-born company in 1975; today, the brand is celebrating its 40th anniversary and in that time has become one of the world’s most recognised swimwear brands. They also have a good eye for faces with the likes of Miranda Kerr, Martha Hunt, Behati Prinsloo, Jess Hart and Catherine McNeil working as past Seafolly faces. If they needed the epitome of a sunkissed blonde, then they couldn’t have chosen anyone better than Gigi. The images, Gigi’s first international campaign for an Australian brand, were captured by renowned fashion photographer Enrique Badulescu. The striking, quintessential beach girl displays her honeytoned figure and models the latest styles, colours and prints from the new collection. Add the confectioner-sugar sands, jade-green water and bright sun of the visually spectacular peninsula town of Tulum, Mexico and you have a series of stunning images that are a perfect representation of Seafolly as a brand. COVER STORY Seafolly aside, it has seemingly been non-stop for Gigi since she was catapulted into the public consciousness. Modelling and covers for prestigious international magazines such as Vogue, V Magazine and Harper’s Bazaar keep her constantly on the move. Then there is the new contract to be the face of Maybelline New York, ongoing work with Guess and a new role with Victoria’s Secret Pink. All this means that Gigi is making the most of her desirability and profile, linking herself with brands that are there for the long haul. That hard work has paid off with Gigi collecting the Model of the Year Award at the Daily Front Row Fashion Los Angeles Awards. With all that going on, it is easy to forget that she is just out of her teens, but she has a keen sense of her corporate responsibilities. Realising that she is the face of Maybelline, Gigi has made a conscious effort to step up her game with makeup. She was quoted as saying, “As I am the face of the brand, I’ve been trying to do cooler things, just to try out the different stuff.” Of course with super-stardom comes a collection of equally cool friends. Taylor Swift, Kendall Jenner are her BFFs and while she and Cody have decided to part due to the problems associated with maintaining a relationship while both pursue hectic careers, she seems settled and happy. She has explained in interviews the difficulty of maintaining good friendships given the unorthodox hours she works and her ever-changing schedule. “Because of my job, it’s really hard for me to plan things out in advance. A lot of the time, I don’t know when I’ll be getting off set. I feel like my friends understand that, so they say, ‘Just tell me when you get off, and we’ll figure it out.’ If I feel like it’s getting too late, I’ll tell them to have dinner on their own, and they can come over after and watch a movie. You just have to communicate with people—your real friends will understand your life. They know I’m not a bad person if I have to be on set till 1am.” Cooking is a hobby and especially so when she gets to prepare a meal for her friends and they can relax by watching TV together.

In this era of social media she has attracted a cult-like following of close to two million followers on Instagram. It is a cycle of perpetual motion - her fame and her following feed off each other to boost her profile, which in turn makes her more in demand for campaigns. It is a far cry from the modelling world of her mother’s generation where models were seen but not heard. “Now I can show the world your personality and stuff like that, but you can be a brand ambassador easily. You can connect with people much easier because you have a voice.” That tapping on her phone instantly reaching so many people gives Gigi a powerful voice for anyone considering using her for a marketing campaign. Her youth comes through when she was asked to share a beauty tip. The perfection of a full gloss magazine cover was a world away when she gave her tip for dealing with pimples, the scourge of teenagers around the globe. The answer apparently is toothpaste. The Gigi method, as passed on to her by her mother, is to put toothpaste on the offending area, wet some toilet paper and press it over the area. According to Gigi it dries like papier-mâché and holds in the moisture. In the morning you simply put a wet towel on it and the pimple is gone. If Gigi Hadid sounds almost too normal to be true, it is because she is in essence a thoroughly likeable, sweet young woman, raised properly and with good values. She has stated that rather than having a long-term plan, she has a simpler, more holistic approach. “What I’ve always done is set three goals for myself every day: Be nice, work hard, and make a friend. Those things open up more doors than just having one goal or a couple of things I want to achieve in five years.” As a brand that celebrates the simpler things in life such as sun, surf and sand, Seafolly couldn’t have chosen a better (role) model for their campaign.

The ups and downs of 25 years in fashion have produced a designing woman with a clear vision for the future. “Like a strong marriage: the longer you commit to something, the better it gets. From love, comes success.” The speaker is Sonia Stradiotto referring to her love for fashion, glamour and her flair for designing for BLISS Fashion Emporium. Her love of glamour was entrenched from her early years watching the black and white films of Hollywood’s golden era when sophistication and allure where the bywords for those great stars of yesteryear. It was doubly enhanced when she was able to see the celebrities and notables who flocked to the long gone Chevron Hotel in Surfers Paradise to hear her beloved father Nino entertain the crowds. “He passed on to me the true Italian aesthetic, that love of surrounding ourselves with beautiful things” she recounts. “I was theatrical as a child, loved dancing, and performing and especially watching my personal favourites - Rita Hayworth, Gina Lollobrigida and Sophia Loren - on the silver screen. The world of fashion runs in my family. My aunt created ‘Gown of the Year’ in 1957 and my mum was a tailor at the legendary Swiss House Boutique where I was introduced to the business at six years of age. My ‘job’ was arranging hangers and watching the merchandising and colour blocking being done in the back rooms but I was hooked from an early age,” she laughs. A traineeship at Myer and qualifications in Merchandising and Management followed, then at just 19 years of age, Sonia managed a chain of boutiques, developing an eye for focusing on fashion-forward styles and then creating her own garments at night and on days off, earning extra money to buy her first industrial sewing machine. Sonia quickly realised there was a “missing niche” in the market so she established ‘Pretty Woman’ in 1990. Her instinct was correct so much so that she could barely keep up with the demand for her designs. Starting slowly she realised the importance of dealing with her customers face to face at her home studio and slowly grew the business. By her 10th anniversary in business she had established an enviable number of loyal clients and won numerous South East Queensland Fashion Awards. In 2002, Sonia again saw a new need in the market and started wholesaling to boutiques around the country adding another notch to her fashion belt. A year later she re-emerged with new inspiration and vision, launching BLISS Fashion Emporium at Marina Mirage which was relocated to Broadbeach in 2005. A decade on and BLISS is still going strong in its new location. Sonia is ecstatic with the response and has happily celebrated a milestone that few designers get to achieve. The key to her success is having a unique product, fashion designs that strike a chord

with well to do business women, socialites and Australian celebrities. Quizzed about the celebrities she has dressed over the years, she simply smiles and says, “I refuse to sew and tell!” Her market speciality is the 35+ segment, women who are not afraid of colour or to express themselves in their clothing. From one-off couture pieces to Sonia’s “must-have” black jersey Travel Collection, something she describes as, “super skinny BLISS apparel which can be worn around the clock, around the world. I have become known for specialising in anti-aging clothing that flatters every physique with my own unique body contouring tricks. Women buy one piece and then after they see the effect, come back to me for more. Then they bring their sisters, mothers, best friends. It is that word of mouth recommendation from my loyal clientele which has been the cornerstone of my business success and which keeps me so passionate about what I am doing.” Sonia’s is happy to share her secret - she listens to her customers. “They’re extremely well-travelled and if they tell me they can’t find something, I do my best to create the pieces that suit their needs – practical but always above and beyond their expectations.” She is also a lover of people watching. “I regularly visit New York, Rome and Hong Kong and I take notes about people’s energy and behaviour. You can learn a lot from a seat in Central Park or a café in Rome.” She also draws ideas from scouring the globe in search of incredible fabrics, which she will only reveal are sourced in secret international locations. “To be innovative and not follow the pack, one needs to recharge one’s creative energy and keep a step ahead of all the challenges of today’s fashion industry.” “Surviving for 25 years in such a fickle, competitive industry as fashion is something I am very proud of,” says Sonia. “I have remained true to my brand pillars of quality, hand-made couture and my market has matured with me. I have wonderful children, and motherhood has blessed me with unforgettable moments. Leather Jacket – Viktoria + Woods A practical yet versatile statement piece – a leather jacket oozes street style and this one is soft, lux, restrained and surprisingly feminine. This jacket can be worn three ways - biker style, roll neck and asymmetrical. Lululemon Gym Wear: Whether it’s sunrise beach yoga, bike riding or gym with my partner, I pursue a very active lifestyle. Adding Lululemon Athletica wear was a “must” in my style pieces. RayBans with Crystal Cross Necklace: I love sunglasses, and I am a RayBan addict. They manage to fuse practicality with an iconic style. Whilst I have an addiction to RayBan sunglasses, this is only surpassed by the desire to adorn myself with crosses. Whether it be earrings or necklaces, they never date and it’s a signature style of mine. This particular piece is made of crystals and I bought it from Element in Marina Mirage.

THE ZUMBO FILES Zonuts Master Recipe You will need: 62.5 g (21/4 oz) fresh yeast 435 g (151/4 oz) cold water 1 kg (2 lb 4 oz) plain (all purpose) flour 25 g (1 oz) salt 120 g (41/4 oz) caster (superfine) sugar 50 g (13/4 oz) unsalted butter 450 g (1 lb) unsalted butter, extra,rolled out into a sheet Canola, vegetable or rice bran oil, to deep-fry MIX Put all ingredients, except the rolled butter sheet, into the bowl of an electric mixer fitted with the dough hook attachment. Start on low speed. Mix on low–medium speed for 2 minutes, then mix on medium speed for 4–5 minutes to develop the gluten. RISE Place the dough in a clean bowl and leave to rest, covered, for 30 minutes at room temperature, then transfer to the refrigerator for 1–2 hours to chill. ROLL Remove the butter sheet from the refrigerator 30 minutes before you’re ready to use the dough to allow the butter to soften slightly. On a lightly floured surface, roll the dough into a flat sheet 35–40 cm (14–16 inches) long and 15–20 cm (6–8 inches) wide. Lay the butter sheet in the middle of the dough and fold the sides in to make an open-ended parcel. Using the rolling pin, hit the folded dough lengthways to soften and flatten a bit and make the first roll easier. Roll the dough lengthways using the rolling pin, and continue until it’s about 5–6 mm (1/4 inch) thick. Fold the dough into thirds and repeat the rolling process. Rest for 30–60 minutes in the refrigerator. Repeat the folding and rolling twice more for a total of four times. Rest the dough for a further 30 minutes in the refrigerator. 46

CUT Line a tray with baking paper. Remove the dough from the refrigerator and roll it out to 6–7 mm (1/4 inch) thick. Cut out rounds of dough with a 6 cm (2½ inch) round cutter, then cut a small hole in the middle with a 1.5 cm (5/8 inch) cutter. Place the zonuts on the prepared tray. PROVE Fill your kitchen sink with warm–hot water to a level of about 2 cm (3/4 inch). Place a small dish in the sink and stand a wire rack on top so the rack sits just at the surface of the water. Place the tray with the zonuts on top. Cover the sink with tea towels (dish towels) and leave the zonuts to double in size. You may need to change the water a few times as it cools. FRY Half fill a saucepan or deep fryer with oil and heat to 180– 190°C (350–375°F) or until a cube of bread turns golden brown in 15 seconds. Carefully place the zonuts in the hot oil and fry each one for 30 seconds. Turn over and cook until lightly golden. Remove using tongs or a slotted spoon and place on paper towel to dry.

Watermelon, Raspberry, Buttermilk, Pink Grapefruit Makes 8 – 10 Desserts | Preparation: begin one day ahead. You will need: 8–10 red rose petals ‘Red Elk’ mustard microgreens

Compressed Watermelon 500 g (1 lb 2 oz) seedless watermelon Cut the watermelon into 2 cm wide slices. Put the slices into a cryovac bag, seal and extract the air in a vacuum machine so it compresses the watermelon flesh. (If you don’t have a vacuum machine, many butchers and other suppliers of the cryovac bags will allow you to return to have it sealed in the store.) Chill in the refrigerator overnight. Remove from the bag, cut off the green skin and cut the flesh into 1.5 cm (5/8 inch) cubes.

Pink Grapefruit Sorbet 350 g (12 oz) water 40 g (1½ oz) dextrose 150 g (5½ oz) caster (superfine) sugar 2 g (1/16 oz) pink grapefruit zest, finely grated 5 g (3/16 oz) sorbet stabiliser (see Glossary) 50 g (1¾ oz) lemon juice 400 g (14 oz) pink grapefruit juice Put all of the ingredients, except the grapefruit juice, into a saucepan and use a hand blender to combine. Put the saucepan over medium heat and, stirring constantly, bring the mixture to 85°C (185°F). Remove from the heat, pour into a container and allow to cool. Cover and refrigerate for 12 hours to mature. Remove from the refrigerator and add the pink grapefruit juice, then blend with a hand blender. Freeze in an ice-cream machine according to the manufacturer’s instructions. Store in the freezer until ready to use.

Rhubarb Compote 300 g (10½ oz) organic rhubarb, cut into 3 cm (1¼ inch) batons 50 g (1¾ oz) raw sugar

Preheat the oven to 200°C (400°F). Put the rhubarb into a roasting tray and sprinkle with the raw sugar to cover. Bake for 30–40 minutes until the rhubarb softens and breaks down, stirring occasionally. Once it is the texture of compote, remove from the oven and allow to cool.

Rasberry Vinegar Gel 300 g (10½ oz) Raspberry Purée (see Basics) 75 g (2¾ oz) caster (superfine) sugar 6 g (7/32 oz) pectin 325 NH 95 (see Glossary) 1 g (1/32 oz) agar-agar (see Glossary) 45 g (1½ oz) raspberry vinegar Put all of the ingredients except the vinegar in a medium saucepan and blend with a hand blender until the powders dissolve. Put the saucepan over medium heat and bring to the boil, stirring constantly. Add the raspberry vinegar. Remove from the heat and pour the gel into a square container about 1.5 cm (5/8 inch) deep. Leave to set then cut into 1.5 cm cubes.

Buttermilk Foam 4 g (1/8 oz) gold-strength gelatine leaves 20 g (¾ oz) cold water 60 g (2¼ oz) milk 340 g (12 oz) buttermilk Cut the gelatine leaves into small squares, put them in a bowl with the cold water and set aside to soak. Put the milk in a small saucepan and heat to 80°C (175°F). Add the gelatine and soaking liquid, stirring well. Put the cold buttermilk in a bowl and pour in the milk mixture. Pour the combined mixture into a container and stand in the refrigerator to set for 2–3 hours. Transfer the mixture into a siphon gun and charge with two N2O charges. Shake well, and store in the refrigerator until ready to use. Put the rhubarb compote in a piping (icing) bag. Pipe a 5 mm (¼ inch) layer of the rhubarb compote in the base of a stemless wine glass. Place 2 cubes of compressed watermelon and 2 cubes of raspberry gel on top in alternating positions. Make quenelles of the grapefruit sorbet and place in the centre of the glass. Use the siphon gun to cover the top of the dessert with a blanket of buttermilk foam. Decorate with a heart cut from a rose petal and ‘Red Elk’ microgreens. Serve immediately.

Moroccan Chicken Sausage Rolls Makes 10 You will need: 1 quantity Ruff Puff Pastry (see page 168) 1 egg, lightly beaten with 1 tablespoon of milk 150 g (5½ oz) almond meal, for topping 50 g (1¾ oz) flaked almonds, for topping 10 g (3/8 oz) chermoula, for topping

Filling 600 g (1 lb 5 oz) chicken mince 60 g (2¼ oz) almond meal 75 g (2¾ oz) parmesan cheese, grated 150 g (5½ oz) onions, finely chopped 10 g (3/8 oz) chermoula spice 20 g (¾ oz) salt 6 g (3/16 oz) pepper 90 g (3¼ oz) macadamia oil 90 g (3¼ oz) couscous 60 g (2¼ oz) mushrooms, diced 60 g (2¼ oz) raisins 2 g (1/16 oz) cinnamon 3 g (1/8 oz) ginger, grated

Put all of the filling ingredients into a bowl and mix together until combined, but don’t overmix. Remove the ruff puff pastry from the fridge. Roll out the pastry on a floured work surface, into a large rectangle 2–3 mm (1/8 inch) thick. Preheat the oven to 175°C (345°F). Line a baking tray with baking paper and set aside. Put the filling in a disposable piping bag and cut off the tip, 4 cm (1½ inches) in diameter. Pipe the filling lengthways onto the ruff puff pastry along the top edge. Brush the pastry with egg wash just beside the piped mixture. Roll the top of the pastry towards you over the piped mixture so the very top of the pastry sheet joins with the eggwashed area of the pastry. Press down to seal. Using a large knife, cut along the edge of the sausage roll. Repeat the process until all the pastry is used. Cut the logs into 12 cm (4½ inch) sausage rolls. Brush the sausage rolls with egg wash. Combine the almond meal, flaked almonds and chermoula for the topping and dip each sausage roll upside down into the topping mixture. Place the sausage rolls topping side up on the prepared baking tray. Bake for 30–40 minutes until golden brown.

Master Pâtissier Adriano Zumbo gives Label the lowdown on his new book The Zumbo Files, growing his empire and the sweet treats that started it all. We are salivating over your new book The Zumbo Files: Unlocking the Secrets of a Master Pâtissier. With 50 new recipes to try, what tastes can we attempt to replicate at home? There are heaps of different ones. There’s eucalyptus, honey and lemon, as well as earl grey, raspberry and milk chocolate, a pink grapefruit, watermelon, strawberry and rhubarb dessert and there’s the V8 diesel, which is eight textures of chocolate. In the savoury section there’s a hamburger pie, fish and chips pie, bangers and mash pie, Moroccan chicken sausage roll and a beef, wasabi and pea, we’ve got the pork earl grey and lemon sausage roll. In the back we’ve got a chapter on Zumbarons - burnt toast, chocolate brownies and Zonuts. There’s a heap of cakes. What features have you added to The Zumbo Files to make it user-friendly? We’ve added step-by-step photographs for basics, the pastry side of it, the macaron shell, the choux pastry, the Zonut dough, all the pastry you need for the savoury section. That’s the key stuff, getting a nice pastry is where a lot of people struggle, so we put in the step by step so you can see how it’s done. What do fans most commonly mess up when baking from home? I think they get a bit flustered and don’t take the time to plan it out. They go in a bit blind and don’t think about first of all reading the recipe properly, they don’t give themselves enough time. With pastry, you need to plan it out. Even for us professionally we plan it out. We might make one layer on a Tuesday, another layer on Wednesday and on Thursday we put it all together. Things take time to set or freeze, or whatever you have to do to get the nice layers and I don’t think people at home attack it that way. They give themselves two or three hours and they just try to smash it out and that’s where you see a lot of things go a bit pear shaped. They don’t have enough time to think about it and learn about it. In your test kitchen, what has been your craziest flavour combination of the year? So far this year it’s probably been the Italian dinner I did about a month ago. We did the Sanguinaccio, which is pigs’ blood, chocolate and spice. We made a soft serve and we served it inside brioche buns; it was pretty tasty. That same dinner, we did a cup dessert with watermelon, strawberry, salami and caramel. It was salted-caramelised salami, a bit of spice, and the watermelon and strawberry was quite refreshing. It feels like everywhere I look, there is a Zumbo-fied product for me to try. Was it always your dream to have your own TimTam

flavours? I never ever thought that was achievable. I ate so many Arnott’s Biscuits as a kid. I grew up in a supermarket and I used to eat a packet of Shapes everyday before footy training because I could, I was young, I had a good metabolism and played a lot of sports. To be able to work with a big brand and such an iconic product, it was a big thrill when they came to me and said ‘We’ve got this idea,’ and would I be interested and I was like ‘Sh*t yeah!’ It’s very surreal. What sweet treats are you enjoying most right now? I’m eating a lot of snakes. The only sweet things I eat at home are snakes, liquorice and custard out of a carton. There’s something about drinking custard out of a carton, the sweetness and texture of it. I remember when I went on Masterchef and I was getting prepped for one of my scenes, it was early morning and I took a carton of custard with me for breakfast and I’m sitting there drinking this carton of custard, because I was by myself in prep kitchen, and the judges George and Matt walked in and they were like ‘Oh my god, what are you doing?’ I was smashing this carton of custard, it was so funny. How do you maintain quality control with so many outlets? I employ about 120 staff all up, which is quite a lot. Keeping consistency has definitely been a challenge in the last year being in Melbourne and Sydney. This year, we moved to a central kitchen in Sydney, we’ve made a lot of change. Having a good head chef is key, but what I’m doing at the moment is just making it viable. What I mean by that is making sure basic recipes, how we work and how everything gets done in our kitchen is on the same level. The team behind you keep you up with consistency because I can’t be everywhere. What is next for the Adriano Zumbo empire? I want to write a few more books. I open a high tea room here in Melbourne next month. I would definitely love to get an Italian sweets concept off the ground. My parents are Italian and it’s my heritage. I don’t think there’s been much done with it in Australia, it’s all quite the same if you go to Italian pastry shops. Down the line I wouldn’t mind going back to where I started and that’s eating lollies. A big dream of mine is to have an artisan lolly shop one day. I’d have to go back to school and train again but it’s definitely possible. I’ve got an idea for a TV show, we’ve been thinking about doing a web series in the office and just doing it ourselves and seeing if it’s good and people start following it, someone can pick it up - great, if not, we had fun, that’s the main thing. When the first mobile phone went on sale 30 years ago, selfies, texting, video calls and apps were the thing of science fiction. As big as a house brick, the phones back then were hugely expensive, cumbersome blocks which required a strong back and endless patience to make that all important mobile connection. Today they are sleek, beautiful objects of desire and an important part of our day to day life keeping us connected with friends, family, the world and a source of endless fun and games. So if the brick was then what is in store for mobile phones in the future? Weatherproof and tough are the new buzz words. WINTER EXERCISES

The days are shorter and colder. Making the effort to get up and head to the gym is becoming increasingly difficult but you are guilt ridden because you KNOW you should be exercising. Here are five great exercises to do at home that will keep you in shape and make you feel good about yourself until spring arrives.

Jump Rope

This may sound like an invitation to go back to your school yard but skipping rope is an excellent way of building up strength and cardio. If you’ve never done it, one minute will have you out of breath and your calf muscles will be aching the next day. If you doubt its effectiveness look at the body of a top boxer – they swear by a session of skipping.

Stair Stepping

As simple as it sounds this is another exercise that has great benefits for your body. Hauling your body weight up the stairs in your home and then back down will do wonders for your cardio. If you don’t have stairs, grab the biggest book in the house and set it in front of the TV and do some simple steps.

Dancing

Dance like no one is watching is a simple statement but if you are at home alone and want to get moving why not put on your favourite dance tracks and shake that thang! It’s great fun, you will burn lots of calories and you can work on some killer dance floor moves without anyone watching you. Dancing is an excellent way to burn calories, and get your heart rate going while having fun. If you are in the privacy of your own home, there is no need to look like a pro or impress anyone.

The Plank

This is such a simple exercise to do because it takes next to no time. Get into a push-up position but don’t bend your arms towards the floor. Simply hold the position with your arms extended and back straight. If you can start with 30 seconds that is great but if not take your time and don’t strain yourself. It is a challenging exercise but does wonderful things for your core muscles.

Housework

Combine two things you probably don’t want to start and give your house a vigorous cleaning. Go as fast as you can with the polishing, sweeping and vacuuming and you will elevate your heart rate to an impressive level. Weird Insurance Policies The news that American songbird Taylor Swift has recently insured her long legs for $40 million is not the first time that a famous body part has been insured for an outrageous sum. Before Taylor signed on the dotted line other celebs to get their pins under cover included David Beckham, Jamie-Lee Curtis and Tina Turner. However when it comes to big numbers Mariah Carey tops them all. She has insured hers for a cool billion dollars. While she has resisted all overtures to bare her substantial assets, Dolly Parton has her breasts covered in another way having taken out a policy for $300,000 on her DD delights. Another highly visible body part is Gene Simmons’ snake like tongue. The KISS front man has slapped a value of $1 million on his in case of accident. Kylie Minogue hasn’t been left behind in this list either with her famous derrière being insured for $5 million. Considering her pert bottom is described as her best body part it sort of makes sense although how you would assess any damage is anyone’s guess. As the man who makes the stunts required to play James Bond look effortless, Daniel Craig was aware that there was an element of great danger in rolling with the punches. Because he does so many of his own stunts in the films he had his body insured for $9.5 million in the event that if something does go wrong, he will be shaken but not stirred. Another who knows the true value of his body is Rolling Stones guitarist Keith Richards.

His hands are his livelihood and the formerly hard living rocker has a policy to cover any accidental damage to his pinkies. Given he has one of the most recognisable voices in the music industry it makes sense for veteran rocker Bruce Springsteen to insure his vocal chords for the ‘boss’ amount of $6 million. Tom Jones was another singer to insure himself. Not as you would imagine for his voice but somewhat weirdly in this age of manscaping for his chest hair. When Merv Hughes was frolicking in the jungle for ‘I’m A Celebrity…’ his excessive hair was a cause for much discussion. At the height of his fame, Swervin’ Mervyn has his impressive moustache insured against accidental damage. It has also been reported that Canadian tennis star Milos Raonic, who sports a tonne of product in his mane, has also insured his tamed tresses for a considerable sum. Image is everything – even on a tennis court. As usual we have left the best (or worst) for last. First up is everybody’s favourite eccentric Shirley MacLaine. She has a policy which protects her against alien abduction and she’s not alone. Apparently around 20,000 people have signed up for the protection although how you make a claim when you have been transported to a space ship is anyone’s guess. The winner of the wackiest insurance policy goes to Van Halen front man David Lee Roth. To protect David from himself he had his sperm insured in case one of his groupies managed to get herself pregnant and launched a paternity suit. The value of the policy was $1 million which given the cost of raising a child many need to be reviewed.

Kate Bennett Scoots to Singapore on the new Boeing 787-9 Dreamliner Travelling to Singapore is always a treat - it is one of my favourite places to visit, with incredible shopping, a vibrant culture and plenty to do and see. Recently, I travelled to Singapore as a guest of Scoot to try out their Boeing 787-9 Dreamliner. Scoot, the low cost carrier of Singapore Airlines, have only recently taken the keys to the Dreamliners, which will service flights to Singapore and beyond. The Dreamliner is powered by two Rolls-Royce Trent 1000 engines and offers a host of inclusions - some standard, some optional - that make it a great choice for those looking for an affordable price without sacrificing on comfort. ScootBiz premium cabin offers 35 oh-so-comfortable seats with leather trim, plenty of room and a comfortable recline. The onboard Wifi and in-seat power is available in all seats (at cost in economy), and what a difference it makes not worrying about whether your phone’s battery will die before you land. The inflight food was great too, as airplane food goes. Overall, the flight was fantastic, and with Scoot offering prices as low as $199 from Gold Coast to Singapore, you would be hard pressed to find a better option. Arriving in Singapore, we were taken to our first hotel, Days Hotel Singapore. A very comfortable and convenient hotel, Days is perfect for business travellers and offers easy access to a host of Singapore’s attractions. In Singapore it is very convenient and cheap to take taxis anywhere. After a morning of taking in Singapore’s Balestier Heritage Trail, which tells the tale of Singapore’s remarkable journey from a British trading port to a modern city-state spanning almost two centuries, we enjoyed lunch at Whampoa Market where people travel for miles to sample the famed local fare. Our second hotel for the trip was the luxurious Ramada Hotel Singapore. Located next to Zhongshan Park, the hotel offers stunning views and the most amazing service I have received in a long time. The rooms are incredibly well appointed and comfortable, the restaurant is excellent and the hotel is located close to everything. I loved everything about this hotel and will definitely be back. Shopping, of course, was a highlight and Singapore never disappoints, with everything from the high-end labels we love to more offbeat local shops. We spent a wonderful afternoon at Tiong Bahru, built in the 1930s. Located to the west of Chinatown, the area has a rich, colourful past and is full of gorgeous art deco-style apartment blocks that have retained their charm (despite the area becoming a favourite with hipsters). If you get to Tiong Bahru you must check out Bincho for lunch. As always, the trip was over way too soon, but we enjoyed a very comfortable ride home, again on the Dreamliner. If you are looking to plan a romantic weekend away, or a few days away with the girl’s, I would highly recommend checking out Scoot to whisk you away in style, without breaking the bank.

NEW 2015 LAND ROVER DISCOVERY SPORT

Looks good, drives well and according to Chloe Maxwell, this new SUV is the perfect fit for her busy life. By Chloe Maxwell, Brand Ambassador for Bruce Lynton Land Rover As this is my first official motoring review, it is time to confess that I’m not your typical motoring journalist. Torque and traction are not my main interests, but as a busy mother with a very active life, I am concerned with the practicality of any car and how it copes with my demands of driving to and from school, shops or work. Firstly, let’s begin with the look of the new 2015 Land Rover Discovery Sport. Sleek and elegant are not words often associated with SUVs, but this has a style about it that was easy on the eye. Stepping inside, I was surprised at the amount of room in the cabin. It comfortably has the capacity to seat seven and can carry more luggage/shopping/sporting equipment than anything in its class. The one I drove had as standard: navigation, electric seats, 18-inch alloys, a rear-view camera and grained leather seats, which give you the impression of sitting in an exclusive club as you drive. According to the information pack I was given, it is a highly refined combination of performance, safety and efficiency, thanks to a body shell of high-strength steel and lightweight aluminium. On the technical front, it is available in both nine-speed automatic and six-speed manual in a 2.2-litre diesel model, or Si4 2.0-litre petrol engine and all powertrains are four-wheel drive. In my terms, it is blissfully easy to drive. It didn’t feel as though I was piloting a ‘truck’ through traffic. It was agile, responsive and nimble, due to the electric power-assisted steering. There are some other features that made an impression. It is the first Land Rover to feature all new safety features, such as the Pedestrian Airbag and Autonomous Emergency Braking System a technical term, which basically means it is designed to help the driver avoid collisions. The new 8-inch touchscreen infotainment system with intuitive controls and an expansive connectivity package is a winner. Easy to use and with an immediate response, it is a seamless addition and soon becomes a natural part of your driving. I’m not sure if Land Rover intended this when they were designing the Discovery Sport, but it is the best family-friendly vehicle I’ve ever driven. The boot has enormous space and with the lower loading lip, it is a dream to fill with the usual things that I seem to put into any car I drive. The fold-down occasional seats that enable the seven-seat layout are astonishingly easy to use. I actually thought that whoever designed this SUV had thought of my every need before they went off to the drawing board. Land Rover are synonymous with producing tough as teak vehicles and lately have combined that durability with creature comforts that are in keeping with the demands of modern motoring. The Discovery Sport is a compelling combination of off-road capability and on-road dynamics, and when coupled with the sleek and stylish interior packaging and safety innovations, they have produced an ideal family vehicle with an efficient powertrain that reduces fuel costs and environmental impact. The one time I did drive through difficult terrain, the Land Rover Terrain Response used its intuitive interface to precisely tailor the vehicle’s steering, throttle response, gearbox, centre-coupling, braking and stability systems to cope with what I was travelling over. Basically, it made all of the correct decisions for me while I simply steered. Pricing starts from $53,300 RRP (TD4 SE manual) and for anyone in the market for a smart, good looking SUV that is suitable for every aspect of modern life, this is the one for you. YOUR HOME, YOUR CASTLE Your home may be your castle, but with the wrong advice it could end up being a house of horrors. Simon Bennett outlines some of the recent changes to Queensland’s property law. In Australia, we have an underlying desire to own property. People traditionally have always felt safety with owning their own block of land. After all, our home is our “castle” but what happens when we want a new castle or alternatively want to buy an investment. The common misconception is that it is very easy. After all, it is just conveyancing is it not? Actually, no, it is not. In Queensland we currently have at least 20 pieces of legislation affecting any transaction when you buy or sell property. In addition, there are contract conditions and precedents created by previous cases to be considered. Sure if the seller wants to sell and the buyer wants to buy and you are lucky, your transaction might go smoothly. However, what happens if one party changes their mind, the market suddenly changes, or some other unforeseen event takes place? This is when you need an Accredited Property Law Specialist acting on your behalf. The Queensland Law Society governs all lawyers in Queensland and has as a part of its certification process a Specialist Property Law Accreditation for those practitioners who have met the quite rigorous requirements of being considered as a specialist in property law. The benefit of having such representation is that these experienced solicitors can hopefully foresee any problems in your transaction before they occur, saving you personally and potentially saving your deal. In Queensland the legislation has over the years become extremely complicated with many opportunities for a buyer who has changed their mind to terminate the Contract to Sell on very technical grounds. Quite recently the Queensland government has passed a

new legislation, the Property Occupations Act (POA), which has substantially changed the way property transactions are conducted in Queensland. This Act has changed property transactions forever and has superseded the Property Agents and Motor Dealers Act (PAMDA) which has been the cause of many of the recent difficulties. So, what are the major changes? 1. For a start the warning statement, Form 30C under PAMDA and Body Corporate Community Management Form 14, will no longer be required. They have been replaced by certain wording to be contained above where the buyer signs the contract. This represents a far simply process. 2. The five business day cooling off period will still apply but will be faster and simpler to waive, no longer requiring a lawyer’s certificate. 3. Residential property has been better defined so there is less confusion as to whether the property is residential or not. 4. Auction contracts have no cooling-off period and this will be extended to any registered bidder buying up to 5:00 pm on a second business day after an auction. 5. Agents’ commissions will no longer be capped and will be open for negotiation by the parties. These changes are positive and should inspire further confidence in the Queensland market, giving more certainty and less opportunity for technical termination of documents.
