Label at large Spring is in the air, it’s time to get lively, add top fashion pieces to the wardrobe, try a new look, and workout before summer. In this edition Label presents some quick fix cosmetics and professional beauty procedures. Try our decadent diet; we mixed the world’s most luscious food and menus from the Gold Coast’s best restaurants in a tempting seven day selection. We deliberately chose the most expensive ingredients and menu items. While we were often shocked at the cost of food items we were pleasantly surprised by the prices at local restaurants. It’s great to go out and about, dine on sensational food, see the sights and enjoy living in this beautiful part of the world. LABEL Tuesday night television is all about Keeping Up with the Kardashians. The show captivates audiences and this season’s series promises an even close look at the drama, the glamour, and the relationships. In the past year, the Kardashian’s marriages, break-ups, and babies have kept audiences enthralled. Watch E! The Kardashian-Jenner clan is all abut the scene, good, bad but never indifferent. Outspoken matriarch Kris Jenner and her affable Olympic gold medallist husband Bruce continue to create chaos. Offspring Kim, Khloe, Kourtney and Robert continue to live hectic over-the-top lifestyles while Kendall and Kylie enter the spotlight with a new set of troubles. See newly single Kim move into a gorgeous new home. Watch disaster unfold as Kris decides to celebrate with a house warming party at Kim’s house. The behaviour of the guests is as one would expect. They wreck the joint and cause high drama between mother and daughter.

Kourtney moves in with Khloe and Lamar but continues to work on her relationship with Scott. Scott shows up at Khloe’s house to take Kourtney and Mason to lunch but Khloe’ bars the door and Kourtney decides to move on. Kendall and Kylie are no longer quiet children. Bruce and Kris have their hands full with their youngest daughter’s career opportunities, first dates and not so ladylike behaviour. Meanwhile back in Australia, the Kardashian sisters have announced a global partnership with leading international designer Bruno Schiavi and his Jupi Corporation label. Kim, Khloe and Kourtney are working with Schiavi on a new brand of apparel, homewares and accessories. The range is expected to launch in Australia, Canada, Germany and Britain next year. Schiavi says the initial range includes a women’s fashion collection, handbags, belts, wallets and lingerie. “The Kardashian sisters are an inspiration to women of all ages and loved for their sense of fashion and style,” he says. “I am extremely excited to be working with Kim, Khloe and Kourtney across so many fashion categories and taking their brand to women in key markets around the world,” Schiavi says.

Diet and depravation seem to be natural partners but this diet defies the odds with delicious, nutritious and luxurious dishes. Gram-for-gram fat laden fast food is often more expensive than top quality treats such as lobster or lean beef. We sourced the best foods from around the world and our favourite restaurants to create a seven day menu for the slender gourmet. The essential elements are taste, nutritional value and pleasure. The only element we ignored was the budget. Start the day with a beautiful breakfast. Fresh foods are a favourite, preparation is usually no more than assembly although a couple of our favourites require a few minutes cooking. Enjoy a delicious cup of freshly made coffee or tea, mineral water or 200mls of freshly squeezed fruit or vegetable juice. The Decadent Diet daily energy intake ranges from 4000 to 7500kj with an approximate average of 5200kj. This is below the energy required for an average person to maintain their weight so more food can be added. If weight loss is the goal there is still room to increase the total daily energy intake a little and still lose weight gradually. Add fruit, non-starchy vegetables, dairy foods and whole grains. Satisfy hunger pangs with nutritious snacks. Enjoy a piece of fruit, a platter of raw sliced vegetables, a handful of cherry tomatoes, a tub of low fat yoghurt with a handful of oats sprinkled on top, or two to four wholegrain crackers with low fat cottage cheese and tomato. Add half a cup cooked cous cous to salads, 200ml of yoghurt to fruit salads. Relax with a low-fat milk based coffee on two days of the week or enjoy a glass of wine with one lunch or dinner. It’s all about taste, become a gourmet, enjoy natural flavours and avoid adding salt to meals.

Choose the coffee The world’s finest and most expensive coffee is Kopi Luwak or civet coffee at around $800 per kilo. It is produced mainly on the islands of Sumatra, Java, Bali and Sulawesi. The coffee is made from beans that have been eaten by the Asian Palm Civet and other related civets. The beans are pooped out, collected, cleaned, sun dried and lightly roasted to create an aromatic coffee.

A cup of tea can be a gourmet treat The current record for the most expensive tea is held by a rare Chinese green tea called Tieguanyin at $3000 per kilo or $15 a cup. The world’s most expensive tea bag is the PG company’s 75th anniversary collectable. The tea bags are decorated with 280 diamonds and worth about $15,000.

Sweet fresh water at a price Kona Nigari is the world’s most expensive water. The desalinated mineral rich water comes from the deep seas off Hawaii and costs $16.75 for 30ml.

Take two generous slices of fresh pineapple and half a punnet of fresh blueberries, drizzle with crème fraîche and top with crushed pistachios.

Make pancake with two dessertspoons of wholemeal flour blended with enough buttermilk to make a paste. Cook pancake in a non-stick pan for a minute each side or until cooked through, top with 10 sliced strawberries and serve.

LUNCH A slice of organic wholemeal bread with mixed salad leaves and three thin slices of turkey breast drizzled with balsamic.

LUNCH Glass at Marina Mirage is the perfect location at any time but sumptuous surroundings and superb food make a Monday lunch marvellous. Try the irresistible assiette of caviar served with traditional accompaniments and experience the sensory delicacy of Oscietre (five grams) lump fish (10 grams) salmon roe (10 grams) and flying fish roe (10 grams). Move on to a luxurious main course, we discovered several but the corn-fed chicken breast fillet filled with king crab, chive mousse, braised leeks, scorched tomatoes and foie gras cream won the day.

DINNER Waldorf Salad This tasty salad was created at the Waldorf Astoria, one of the world’s best hotels. This lighter version is enough for four people. Enjoy a generous serve and share the remainder with family or friends as an entrée or main course side dish.

Ingredients 2 cups chopped apples Juice of two lemons Half cup chopped celery Quarter cup chopped walnuts Quarter cup raisins Quarter cup halved seedless grapes 125mls light mayonnaise Pinch of ground nutmeg

Method Toss together apples and lemon juice. Stir in the celery, nuts, raisins and grapes. Add mayonnaise, mix well, sprinkle with nutmeg and chill.

DINNER Chill on Tedder in the heart of Main Beach offers a totally indulgent five course truffle tasting menu for $95 per person. We dined on creamed jerusalem artichoke and baby leek soup with shaved truffle and parmesan tuile followed by white asparagus and oyster mushroom risotto with truffle butter, shaved winter truffle, and white truffle oil. The next course was seared Queensland scallops with parsnip purée, crisp pancetta, truffle and white port jus with micro herbs. We then enjoyed a ballotine of pheasant pocketed with porcini and truffle farce accompanied by pomme fondant, braised red cabbage, oven-roasted baby carrots and shaved truffle pan juices. The final course was fillet of beef rossini wrapped in pancetta with potato rösti, griddled foie gras, buttered baby spinach, shaved truffle and pan juices.

White truffles are ascomycetes (tubers) that grow underground and cost the earth. The record price to December 2009 is $330,000 for 1.5kg. Truffles are usually served as fine slivers on top of other food or infused in sparingly used oil.

Wednesday BREAKFAST Poached eggs with caviar and wholemeal toast Gently poach two eggs while lightly toasting a slice of fresh wholemeal bread. Drain water from eggs, place eggs on toast and top with caviar.

Beluga Caviar is the most expensive food in the world costing up to $5000 per kilogram. Caviar is fish roe (eggs) and less costly varieties are available.

A gift of matsutake is considered very special. The annual harvest is now less than 1000 tons. This is partly made up by imports from China, Korea, and Canada. The Japanese Matsutake can cost as much as $2000 per kilogram.

LUNCH At fabulous Fellini we dined on the new degustation-style lunch menu. There are several options but we chose the seafood selection. The first course was homemade bread with extra virgin olive oil, roasted garlic and aged balsamic vinegar. This was followed by Tasmanian black mussels with roast capsicum, spanish onion, cucumber, chardonnay vinegar, parsley and a tomato infused chilli oil. We then enjoyed the baby zucchini flowers filled with spanner crabmeat, fried in a light yeast batter and served with San Marzano tomato salad, aged balsamic and extra virgin olive oil. The next course was squid ink infused pasta with sautéed prawns, calamari, zucchini, julienne tomato, chopped parsley and extra virgin olive oil. The final savoury course was grilled Tasmanian ocean trout served on potato, leek, tomato, zucchini, saffron and chives. We finished with panna cotta. This may sound like a huge amount of food but the dishes are small. Diners can enjoy the flavours and satisfy the appetite without over indulging.

Matsutake mushrooms have been an important part of Japanese cuisine for the past 1000 years. The tradition of giving mushrooms continues in Japan’s corporate world.

Tip the rice into a microwave-proof bowl. Sprinkle with saffron and pour on the hot stock. Cover with cling film, pierce film a couple of times. Microwave for six minutes on high, then six to eight minutes on medium until the rice is tender.

Friday BREAKFAST Eggs Benedict with parma ham Slice a piece of organic wholegrain sourdough bread in half, lightly cook two slices of parma ham or proscuitto in a none-stick pan while gently poaching two farm fresh eggs in water with a splash of top quality white wine vinegar. Place a slice of ham on each piece of bread, top with an egg and ladle half a tablespoon of homemade or gourmet prepared hollandaise sauce over each egg.

LUNCH Create a delicious light salad with organic baby spinach leaves, vine ripened organic tomatoes, a few slices of fresh fennel lightly blanched in boiling water and chilled. Top with a sprig of shallot and four chopped walnuts.

Macadamias are the world’s most expensive nuts. Native to eastern Australia and Indonesian Sulawesi this hard nut sells for $30 to $40 per kilo on the international market. The most expensive champagne in the world is Perrier Jouet Belle Epoque Blanc de Blanc. This sensational champagne is sold in hand-painted bottles at around $1500 each.

LUNCH A slice of organic wholemeal bread topped with fresh mixed salad leaves, an organic vine ripened tomato, three green olives and 30 gram of organic haloumi.

DINNER Yellow Fin serves ocean fresh delicacies designed to please the palate and satisfy the appetite. Try the entrée of barbecued baby octopus with grilled chorizo, herbs and roast garlic served on salad greens with toasted crispy pita bread. The signature dish is of course yellow fin tuna. The freshest fish is seared on a flat grill and served with baby spinach, walnut, grape and balsamic marinated bocconcini salad, cherry tomato dressing and toasted pita bread, it’s divine.

Nutty fruit cocktail with champagne

East is a superb nightclub with sensational dining facilities. Dress up, go out and enjoy a sensual trip through the cuisines of Asia. The menu is designed around fresh, hand picked produce of the highest quality. From an exquisite menu of temptations we chose the chestnut pâté. Chef’s creation of shoyu scented roast chestnut and red wine pâté with almond flakes, a crisp sun dried tomato tortilla and balsamic glaze is the perfect start to a decadent dinner. We couldn’t resist the crab lasagne. Imagine crab, prawn and seafood baked lasagne with abalone-spiked laksa-carbonara sauce dusted with coriander. It is sensational.

Separate the segments of half a grapefruit and a mandarin. Remove seeds from six red cherries, peel and cut an apple into small pieces. Chop half a banana into slices. Place the fruit the centre of half a rock melon and top with two teaspoons of crushed macadamia nuts. Enjoy the taste and texture with a glass of champagne.

Dessert was naughty but Saturday night comes once a week so we opted for the dessert sushi. This exceptional chef interpreted nigiri sushi with a mock wasabi made of green tea infused mascarpone cheese and a coconut-chocolate dip to substitute soy sauce. It was a playful ending to a gastronomic delight.

Sunday BREAKFAST Breakfast omelette Celebrate Sunday with friends and an extravagant omelette. The most expensive omelette in the world is served at New York’s Le Parker Meridien Restaurant. The $1000 dish consists of 300 grams of Sevruga caviar, a whole lobster, and six eggs. Try it at home with 10 eggs beaten with a splash of water, a little salt and freshly ground pepper. Take the meat of a whole lobster and two jars of black lump fish roe. Gently cook the lobster meat in a non-stick fry pan with 30ml of virgin olive oil. When lobster meat is cooked, add the eggs. Cook over moderate heat until the eggs form a firm base. Place pan under a hot grill until the omelette rises, drizzle the finished dish with fish roe and serve with crusty bread. It should serve six people and those who aren’t watching their weight can drizzle top quality virgin olive oil on the bread.

LABEL Many Gold Coast residents recently received Notices of Intention to Resume showing the Queensland Government needs their land to build the light rail system. OMB Solicitors senior partner Simon Bennett says land owners can lodge an objection to the light rail project but unless an objection is successful the resumption of land will proceed. Assuming the resumptions go ahead, the next step is to establish the amount of compensation to be paid to landowners. The process of determining the level of compensation is complex. Compensation can be decided by agreement or by the Land Court.

Property on the line Leading Gold Coast solicitor Simon Bennett looks at the impact of the rapid transit light rail project on landowners and bodies corporate.

“The Department of Main Roads is responsible for the light rail project. This department will pay individual land owners market value for resumed land as well as any reasonable valuation and legal costs. The matter is more complicated when property is owned by a body corporate,” Simon says. A body corporate involves numerous parties; these include lot owners, tenants, the resident unit manager and the body corporate as a separate legal entity. Simon says the 1967 Acquisition of Land Act regulates the resumption of land but prevents a body corporate from agreeing on compensation unless a motion is passed at a general meeting of the body corporate without any objections. “This means one lot owner can delay the process. If one party votes against accepting the compensation agreed between the body corporate committee and the government, the body corporate is unable to accept the offer. “The body corporate must then start Land Court proceedings to determine the amount of compensation to be paid. This is risky, the amount of compensation may be reduced and the body corporate may have to pay their own legal costs as well as those costs incurred by the government. “OMB Solicitors is experienced in protecting the rights of people involved in the resumption of land.
