S
ofia Vergara is the bombshell brunette from the hit TV series ‘Modern Family’ but not everything about her stunning good looks is completely natural. Relax folks, it's not the Ay Caramba figure or the Speedy Gonzales accent but in reality Sofia is a natural blonde. In the public’s mind she has become inseparable from the role of Gloria Delgado-Pritchett, and the reason is simple. “I’m simply playing myself,” Sofia explains. Sofia Margarita Vergara was born in Colombia one of six children who was always known by the nickname ‘Toti’. Those famous curves came early and were the cause of much insecurity. “I was, like, 14 years old, very skinny and I already had these huge boobs. And like all women, even though I’m now 40, we always have our insecurities as women. We’re never happy!" While those ‘huge boobs’ (32F since you asked) have been one of the reasons she is such a standout in ‘Modern Family’ she was initially advised to have breast reduction surgery by a publicist. In a recent interview she recalled the advice. “I was told to reduce my boobs because nobody would take me seriously in Hollywood. Luckily my mother almost had a heart attack. She said, 'God is going to punish you! You can’t cut your boobs!' So I listened to my mother and I don’t regret not doing it, because now it’s become a big part of Gloria."
She is the ‘Modern Family’ mama with the bombshell body, but as Label discovers, there's much more to our favourite Colombian than killer curves and a pretty face.

cover story
From left to right: Working the red carpet at the 2013 Golden Globes; a young, naturally blonde, Sofia in Colombia; as Gloria Delgado-Pritchett with Claire Dunphy (Julie Bowen) in the multi award-winning Modern Family.
“To be called the sexiest woman in Hollywood, at my age? It's fantastic!” Raised as a devout Catholic she was almost lost to show business when after two years of marriage and a son, Manolo, she divorced and studied dentistry at the University of Colombia for three years. It’s not difficult to imagine the reaction she would have received from any unsuspecting male patient when he walked in for a check-up. Two semesters short of completing her under-graduate degree she decided to pursue a career in front of the camera due to the increasing amount of modelling work she was receiving. The big break came when in 1995 when she was chosen to co-host "Over-the-Top", a Colombian travel series that sent her to report on exotic places around the world. It made her a star in the Latin American market and gave her valuable television exposure in the United States via the Univisión stations there. That led to more work in the United States which, after the murder of her brother Rafael during a botched kidnap attempt, encouraged Sofia to move to Miami, Florida with her son, mother and sister. She has become the first star to make the transition from Latin-American television to main stream acceptance in America. After a brush with thyroid cancer, which was treated with radiation and from which she has fully recovered, she scored her big acting break in English in the 2003 film Chasing Papi. Guest star work on television including a brief stint in Entourage before more film work in two Tyler Perry films – Meet the Browns and Madea Goes to Jail. Her latter day success on television has earned her roles in recent films, The Smurfs (2011), New Year's Eve (2011), Happy Feet Two (2011) and The Three Stooges (2012). Off screen she is almost the same as Gloria – loud, sexy and funny – which is possibly why the role is a dream for her to play. Her explanation in an interview with Esquire is that Latina women are like that and cited an example of the time when she first started working with Ed O’Neill on set. “When we were shooting one of the first episodes of Modern Family, our trailers were connected. 8
label magazine AUTUMN 2013
So I'm in my trailer screaming on the phone and he can hear me perfectly. I was having one of those "Oh, my God!" conversations with one of my cousins for twenty minutes. As soon as it ended, there's a knock on the door. It's Ed. "Sofia, are you okay?" I'm like, "What do you mean?" He said, "I thought maybe you were crying or having a heart attack or something." "Oh! No! I was just on the phone with my cousin. We were talking about someone else." So far she has been nominated for three Golden Globe Awards, three Emmy Awards and three Screen Actors Guild Awards for Best Comedy Actress. That high profile exposure has also led to Sofia starring in a commercial for Diet Pepsi with David Beckham as well as becoming the new face of Cover Girl. Latterly she has turned her hand to fashion, helping to design a line of clothing for K-Mart with the intended target listed as ‘soccer mums’. All that on and off screen success has meant that Vergara was listed as the highest-earning woman in US television, taking in US$19 million for the past twelve months on a list released by Forbes Magazine in July 2012. Not bad for a pretty girl from Columbia. Like any woman over the age of 40 involved in the cut-throat business that is Hollywood, Sofia has recognised the need to diversify. While she still tops the lists of hottest women in the world, no small feat considering the competition, Sofia is a producer and stars in the Colombian version of ‘Desperate Housewives’. She even braved the perils and the critics by guest starring for five weeks as "Mama" Morton in the revival of Chicago on Broadway. Her private life has settled down as well with a recent engagement to businessman Nick Loeb. Although the cultural differences still appear to astonish him. “He can’t understand how I can be screaming at my sister and then meet her for lunch but it’s so much better this way. You get it out in the open and then move on with life.” Whatever the future holds, Sofia Vergara has blazed a trail for not only her Latin-American sisters but for all women. The adage ‘never judge a book by its cover’ has never been more true and while in Sofia’s case the cover is physically stunning, she is one woman who uses the brains that almost had her as a qualified dentist and great natural beauty to achieve her goals. Surely that is the essence of being female – use your talents and don’t let anyone put you in a pigeonhole of their making.

Axis John Helgeson talks sight, sailing and success.
I
n a back room of his Pacific Fair business, Axis Optical, John Helgeson is recalling how he came to be an optometrist. “My initial intention at university was to be a dentist and I was into my second year of study. Back then the standard way for students to get much needed practice was when the police would bring 30 drunks from the watch house to the dentistry school and we would have to fix their dental problems. They weren’t the easiest patients and their hygiene was always a problem and that convinced me to change to optometry.” Born in Brisbane and educated at T.S.S., John was the product of a different system. “It was based on working as an apprentice optometrist as well as your studies. In a sense you would be indentured but I still maintain it turned out well rounded graduates because you acquired people skills and you were overseen by someone with years of experience who would give you the practical tips that all young graduates need to know.” After graduation in 1969 the opportunity to buy a practice in Cooma arose and so began John’s working life. “Life in those country towns was wonderful. Everyone knew and trusted each other; the country copper had autonomy to deal with things that would be a big fuss these days. I had a great time but after nine years I needed a break and sold up. I started two practices in Sydney at Windsor and Richmond but after a time the call to get back to Queensland was growing stronger. I’ve always loved all things
to do with the water be it sailing, power boats or jet-skis and the Gold Coast is the perfect place for that.” A short tenure in Southport in the mid 80s followed by a new practice in Ashmore City and another in the Paradise Centre in 1994 before John made the move to his current ‘home’ in Pacific Fair. “Again I built the business up and was able to get some of the most exclusive frames from Cartier, Choppard and Lindberg as well as Fred frames for sunglasses. Some of the Cartier frames can cost as much as $15,000 and they do sell very well. One of my big bugbears is that people never think to get their eyes checked. A routine test can pick up things such as glaucoma, macular degeneration, cataracts and diabetes or even in some extreme cases infections. Children should also be checked regularly because sometimes what is perceived to be a learning difficulty is simply bad vision. If people only realised what life would be like with limited or no vision they would be more diligent about the health of their eyes.” At a stage in life when he could justifiably start slowing down John is still actively involved in the day to day running of the practice. “My wife Ve and children Amanda, Rachel and Damien have been a part of everything that I have done and my son-in-law Tom Pascoe is now part of the team. It has been a wonderful journey. I still love the work and the interaction with the people who come through the door.”

Best Andrew McElhone discusses food, travel and economics.
F
or someone whose first career choice was freelance travel writer and who then switched to complete an economics degree, Andrew McElhone makes a mighty fine restaurateur. “Being a trained economist does have its moments but let’s face it running restaurants is so much more fun. I did aspire to being a freelance travel writer in my early twenties but that didn’t work out so I get my ‘fix’ by writing emails to friends and family detailing my travel adventures. The thing I love about running restaurants is that every day brings up new challenges and surprises whereas being an economist can be a little dry,” explained Andrew. As anyone involved in the hospitality industry will tell, running a restaurant is difficult enough but Andrew has three – Sage, Yellowfin and 1 Two 3 – all situated in the Broadbeach precinct. “There are pluses. There are a wide variety of meal choices for me at night and I keep fit by walking between the three. The other positive is that I have a ready pool of staff ready to cover illnesses or holidays. The down side is managing the different personalities and having to decide where to eat and of course I don’t have enough time to go travelling.” Away from the demands of work, Andrew is a keen surfer and swimmer. “Friends often joke about my love for the ocean and owning a seafood restaurant. There is a synergy there because I do see a lot of fish in the sea and I love serving fresh fish.” As with every owner, Andrew has put his own stamp on the restaurants.
14
label magazine autumn 2013
“I have my own distinctive point of difference to running restaurants. My fresh approach resonates with the fresh seafood at Yellowfin, my sunny disposition resonates well with Sage and my distinctive personality matches well the menu style at 1 two 3 Mediterranean. I like to think that what I am doing is resonating with the dining public. Having a restaurant is a very personal statement by an owner, so my philosophy seems to be working which pleases me enormously.” The juggling act that is the day to day running of a business that is so dependent upon good staff brings its own problems. “I want to retain my staff so I do this by engaging with them, talking about their lives, their relationships and of course their next plans for travel or anything else. I also make it a point of have incentives in the form of overseas trips for the best employee of the year. Gift vouchers for a massage or a restaurant meal are also good incentives as well. Congratulating them on good service is also a vitally important factor as they love the fact that they are valued.” All work and no play make Andrew a dull boy so away from the restaurant he spends time watching his son play Rugby or training with him for life saving duties. “My other great love is reading newspapers and keeping up with current affairs and the global economy around the world.” And of course finding new and interesting eateries to try – a man devoted to his work, yes, but still retaining the all important outside interests to bring balance to his life.

behind the brand
NATALIE MILLER Sand or sophisticated, Holster’s Jellies are made for walking.
Tell us a little about your background in design and fashion? I have always loved fashion however did not think I would work in the industry. Originally studied business marketing at university and fell into the position when my partner Ben started importing goods from Indonesia. With no formal training I started designing footwear and accessories for holster® about nine years ago. While your jellies look simple there are many elements in them that make them unique. Explain the concept behind the design? I wanted to create footwear that will stylishly yet comfortably take you from beach-to-bistro or pool-to-party without the need for a change of shoes. Your products are stocked in more than 45 countries and in some of the biggest stores in the world including Harrods, Harvey Nicholls and Selfridges. How difficult was it to crack the international market? After selling in Australia for a few years a UK distributor approached us, this was very exciting and after exhibiting at some of the big trade shows in the UK it opened up many doors. You pride yourself on your green credentials in the manufacture of your products. We are as environmentally friendly as possible using shoe boxes made from recycled materials and recycling PVC wastes. It is important all brands are aware of how to be as green as possible in this day and age of mass consumption and production.
Your original intention in 2001 with your life partner Ben Nothling was to have a surf wear label. Any plans to revive that plan? I think the surf wear market is covered in Australia so we will probably continue expanding our niche area of the market place.
Holster is proudly a Noosa based company – is it the laid back beach environment that lends itself to the design process? The lifestyle in Noosa definitely provides a beautiful backdrop from which to draw inspiration. Living in paradise inspires me to create the ultimate footwear that can be worn to complement this beautiful location and lifestyle.
What separates Holster from the rest of the ‘jelly’ footwear out there? Our jelly sandal moulds are designed and owned by holster®, opposed to many brands that copy and buy these styles from other factories. Our jellies are not only high quality, fashionable and functional but are also designed to please ladies and girls of all ages, budgets and tastes.
Are there any plans to branch out into other products? We recently released a select range of glam hard case clutches and are always looking for add on accessories that complement our footwear. Jellies will continue to be the main focus as we want to be the best in the world in this arena.
Away from work, what do you do to relax? I get amongst nature. Give me some fresh air and some sunshine and I am one happy girl. A stand up paddle on the Noosa River is very cleansing on my mind, body and soul.
You’ve had rave reviews from some very famous people. Name drop a little and detail your reaction when you read those compliments. Our biggest Aussie celebrity supporter is Dannii

Minogue who is often spotted rocking her holsters. It’s flattering as a designer to see people wearing their holsters and loving them.

sojourn with structure Collections showcased at the David Jones Autumn/Winter 2013 Fashion Launch will have you falling in love with your shadow. It was all about the dress at this year’s David Jones spectacular with zip-and go statements ready to be rocked by all ages. The chilly season means we can now play with our shoulder to waist ratio, befriend structure and slip into some Spanx for your sexiest silhouette. Forever-sexy pencil skirts are empowered by patterns deserving of their own pulse and blocks of Scorsese-red and cobalt blue are broken by slithers of clotted cream. The 1950s shapes are back with Josh Goot and Ginger & Smart refining tie-dye while Alex Perry flirts with the plunge in scarlet. Thurley indulges in brocade and Lover liaises with the full-skirted mini. Zimmerman reinforces lace as the new leopard with Miranda Kerr parading a peek-a-boo flare pant and embroidered blouse. Willow echoes 1960s mod while Alice McCall and Bec & Bridge ice their garments with embellishments of turquoise and jewels. As the princess inside us all needs her moment, Rachel Gilbert gives us the bedazzled party dress we are bound to see repeated at the next Label luncheon.

spoil someone you love with an edox watch For more than 129 years Edox have conceived and produced masterful timepieces. Their passion and love of fine detail have become a byword as has their ingenuity and commitment to producing superior watches. In 1883 Christian Ruefli-Flury was convinced by his beloved wife Pauline to found his own watch making company. The innovations since then have been leading the world from pocket watches to wrist watches, producing the first genuine world time watch and setting a world record for producing the slimmest quartz movement with a calendar. In recent years Edox have become the official time keeper for the Class 1 World Power Boat Championship, the WRC Championship and Dakar Rally. Elegance, dynamism, durability and technical innovation have represented the Edox philosophy for those 129 years and now 5th Avenue Jewellers in Pacific Fair are proud to have been appointed as the only stockists in Brisbane and the Gold Coast for these world renowned watches. It is the perfect fit for the Hannaford family who pride themselves on presenting only the best quality items for their customers. rescue N
ow that summer is over and the kids are back in school, it is time to take stock of your activities during the summer holidays. Understandably we spend a lot more time in the sun over this period and how often did we forget the sunscreen? We all know about the risk of skin cancers but how often we forget that a more insidious effect of sun exposure is ageing! Yes, wrinkles, lines, sagging – the problem here is loss of collagen and elastin. Luckily Cosmedic and Skin Clinic has access to the latest technology and research from Monash University Immunology and Stem Cell Laboratories and we are pioneering the use of stem cells and other regenerative cell treatments for your skin. Using a patient’s own stem cells derived from fatty tissue via a liposuction type of technique, we have very effective treatment options for facial skin regeneration. These adult stem cell therapies allow for maximum rejuvenation potential and are used in conjunction with different laser treatments often combined with a fat transfer to enhance the youthful contour of cheeks. The stem cells are attracted to areas in need of repair. If we use fractionated laser technology to create microscopic, controlled inflammation in the skin and then inject the stem cells, they act to enhance the repair process over and above that of the laser alone. Collagen deposition, remodelling and elastin repair results in skin tightening, smoothing and an improved lustre. In short, you can get the glow back! Did you know that the effect of the sun in developing skin cancers is cumulative? This means that over a lifetime we accumulate a dose of sun exposure. When we get to a certain point, we cross the threshold for developing tumours. To be clear, this is about the BCC’s and SCC’s or the non pigmented tumours. These are the more common ones and up to 75% of all fair skinned Queenslanders will develop at least one of these in their lifetime. Unfortunately for most of us the first BCC is a bit like the first float in a procession – there are a lot more already

on the way. This is because the damage has been done much earlier in life. Fortunately though, we do have some new and effective ways of dealing with these lesions in the very early stages without resorting to surgery. A new method of early treatment is called PDT or Photo Dynamic Therapy and involves application of a special solution which is activated using a special light. The resultant action attacks the tumour cells and destroys them without any surgical scarring. PDT is also useful in the precancerous stages as well and can help to repair sun damage which has not yet reached the skin cancer stage. Addition of Adipose Derived Adult Stem Cells helps in this repair process to also improve texture and quality of the skin. To safeguard yourself, you should have a skin check to see if you are at risk of these sun damage problems by having a free Visia Skin Analysis at Cosmedic and Skin Clinic. Our outdoor lifestyle is one of the great joys of living here. You do not have to shun the sun but you do need to be sensible. Remember that our skin is most vulnerable in the toddler age group up to pre-teens. This is where we start the process but unfortunately we don’t see the results until much later in life and by then the damage is already done and we need to enter into Skin Rescue mode. You will discover some amazing options to safeguard your skin when you make that appointment at Cosmedic and Skin Clinic – call 07 5555 7888 to find out more.

Put the cheeks in a large bowl or plastic container. Cut the vegetables to a rough mirepoix and scatter them over the beef with the garlic cloves and herbs. Heat the red wine and port in a heavy-based saucepan over a high heat. Bring to the boil, then lower the heat and simmer until reduced by half. Allow to cool a little then pour over the beef and vegetables. (Make sure the marinade is still warm, which helps all the flavours to penetrate the meat.) Leave to cool at room temperature, then cover and refrigerate. Leave to marinate for 24 hours. When ready to cook, preheat your oven to 110°C (230°F). Tip the beef and vegetables into a colander to drain, reserving the marinade. Set aside the vegetables and herbs. Lightly dust the beef cheeks with flour, patting to remove any excess. The flour is not used to thicken the sauce, but helps to prevent the cheeks from burning when you brown them. Heat oil in a large casserole or braising pan over a moderate heat. Season the beef cheeks and add them to the pan. Fry one at a time, until browned evenly all over. Drain on paper towels. Add reserved vegetables to the pan and fry until browned all over. Add marinade to the pan and bring to the boil. Lower the heat and simmer until reduced by half.
RECIPES
Grilled scampi tails with lemon and parsley butter Here the scampi (langoustines) are grilled (broiled) underneath a heat source, instead of directly on a char-grill or barbecue. Shellfish lends itself particularly well to this method of cooking, especially when brushed with a flavoured oil or butter that melts under the heat and bastes and infuses the delicate meat with flavour. Serves 4 • Prep time 5 minutes • Cook time 4 minutes
Caramelised chocolate pots
8 large whole scampi (langoustines) 150 g (5½ oz) Lemon and Parsley Butter (see below) sea salt
Serves 4 • Prep time 10 minutes • Cook time 40 minutes
Heat your overhead grill (broiler) to the highest setting. With a large sharp knife split the scampi lengthwise straight down the middle. Turn them so the flesh is uppermost and lay them out on a baking tray. Finely dice butter and scatter it over the surface of the scampi. Place under the hot grill and cook for 4 minutes until the butter is melted and bubbling and the scampi meat is just cooked.
Lemon and parsley butter Makes 200 g (7 oz) • Prep time 20 minutes 150 g (5½ oz) unsalted butter, diced 2 lemons ½ cup finely chopped parsley splash of brandy salt and pepper Put the butter in a bowl, cover with plastic wrap and leave in a warm place to soften (do not allow to melt). Grate both lemons over the butter to capture the spray and oils. Add the juice of 1 lemon to the butter with parsley, brandy and seasoning. Use a wooden spoon and mix well to combine. Roll the butter in baking paper to a sausage shape, twist the ends securely and chill until required. The butter will keep in a sealed container in the refrigerator.
500 ml (17 fl oz) milk 20 g (¾ oz) unsweetened cocoa powder 100 g (3½ oz) liquid glucose 100 g (3½ oz) best-quality dark chocolate, grated 4 egg yolks Demerara sugar Preheat your oven to 180°C (350°F). Stand 4 x 120 ml (4 fl oz) dariole (cylindrical) moulds, ramekin dishes or coffee cups in a deep roasting pan. Put the milk, cocoa and glucose in a heavy-based saucepan and bring to the boil. Remove pan from the heat and stir in the chocolate until melted and smooth. Allow to cool. Stir in the egg yolks, then strain the mixture through a fine sieve. Pour the mixture into the prepared moulds. Pour enough cold water into the roasting pan to come halfway up the side of the moulds. Cover loosely with foil and bake for 15 minutes. Lower the heat to 160ºC (320°F), remove the foil and cook for a further 20 minutes. Remove from the oven and allow to cool for about 20 minutes; the creams will still be quite wobbly. When ready to serve, sprinkle the surface of each chocolate pot with a thin, even layer of Demerara sugar. Caramelise the surface with a small kitchen blowtorch until the sugar melts to a shiny caramel glaze. If you don’t have a blowtorch, preheat an overhead grill (broiler) to its highest setting. Place the brûlée on a baking sheet and slide it under the heat, about 5 cm (2 in) from the heat. Watch carefully to make sure it doesn’t burn. Allow to cool for 5 minutes before serving so that the caramel layer will harden to a crisp, crunchy layer. labelmagazine.com.au

Feed the man
meat From customer to owner, JP Duitsch explains why he bought into one of our iconic eateries.
F
or J P Duitsch, his ownership of Moo Moo is somewhat reminiscent of that famous advertisement for Remington – he liked the product so much he bought it. “I was a great fan of this restaurant so when the opportunity came up to buy it, I jumped at the chance. On average I would eat here once a week and I was always meeting people here for drinks so it always felt like a part of me.” Of course perception and reality are different things and as he sits in his favourite spot overlooking the restaurant, JP acknowledges there has been a steep learning curve since he took over. “My background is business and running things but I have to confess that I was amazed at the number of small details that have to be taken care of to run a successful restaurant.” Born in Amsterdam, it was JP’s father who decided to bring his family to Australia. “My father was a real adventurer. He had come here as a young man in the ‘50s and always raved about the lifestyle and country. In Holland he built up a very successful concrete business and in 1979 he sold up and then my brother and I moved here with my parents.” Attending school at Surfers Paradise State School and then Benowa High meant that JP very quickly adapted to the surfing, fishing and outdoor lifestyle for which the Gold Coast is famous. “My father relaxed for a while but soon started up an army disposal store. Eventually we had three stores and one of my first jobs was grading the clothes when they came in. I worked there for about 20 years becoming GM. It became an empire because we shifted the focus to include camping equipment and outdoor furniture and also started manufacturing and distributing our products.” After more than two decades of hard work and responsibility, JP sold his share to his brother. “My idea was to travel about and see the world but I barely left the couch for six months. The opportunity to buy into the restaurant arose and here I am. The social and fun side of this place is great, interacting with the customers and making sure that everyone is having a good time but always there is a mountain of things to do back of house. It has been a year since the changeover and I have big plans. Sometime soon we will be replacing all the kitchen equipment and there is also a refurbishment of the dining area happening. It is a big investment but you have to constantly upgrade or else you get left behind.” As a customer and now an owner, JP is a devoted fan of the Moo Moo brand. “I eat here at least twice a week, trying different things every time. My favourite would be the Macquarie Downs V.I.P. Wagyu, which is a beautiful piece of meat. The secret is of course the 52

“The social and fun side of this place is great, interacting with the customers... but always there is a mountain of things to do back of house.” marbling but our executive chef, Alex Cameron, is fastidious about the preparation. He brings the meat to room temperature before he cooks it and then it requires only three minutes in total to produce the perfect steak. Another dish is the Moo Fire Chicken which comes with three different intensities of Tabasco. I love spicy food but the hottest sauce is literally fire in a bottle and I can’t get close to using it. The menu is redesigned every six months. It is a round table discussion between me, executive chef Alex Cameron and Brand Directors Steve and Autumn Adams to choose the new menu where we do a taste test and check the presentation.” Away from work, JP’s life has taken another turn with his recent engagement to Lauren Mitchell. “We were in Mexico on holiday. I organised a horseback ride on the beach and then conspired to get Lauren off the horse to take some photos and got down on one knee. Luckily she said ‘yes’ otherwise it would have been a very quiet ride coming back,” he laughs. The future for JP is looking good. The restaurant is performing well, his private life is settled and he is making a determined effort to remember as many customers as possible. “I can’t wait to get the improvements in Moo Moo underway and make the customer’s experience here even better.” A man with a plan who appreciates that what he is doing is a lot more fun than grading old army fatigues for resale.

ummer holidays have been and gone and what an amazing time was had by us at Glass and everyone on the Gold Coast. Beautiful weather, the accommodation houses reported great trade and we were rushed off our feet keeping up with the many customers who came in to enjoy the best that we can offer. Add the joy of seeing so many boats playing on The Broadwater from your table overlooking the Marina and why would you go anywhere else? The Magic Millions carnival in January is always a special time on the Gold Coast. The high flyers of the horse racing industry arrive in town to partake in the fun and frivolity of the big race day. Away from the parties and functions the serious business of buying and selling horses takes place at the Magic Millions sales area. We were privileged to welcome Gerry Harvey and Katie Page-Harvey with Princess Anne’s daughter Zara Phillips to the restaurant on one of the first days as well as a steady stream of owners, trainers and jockeys all eager to enjoy our hospitality. The Big Day Out, which was staged at the same time as Magic Millions, attracts a completely different crowd. Some of the headline acts including the Red Hot Chilli Peppers, The Killers and Animal Collective were just some of the top acts who dined at Glass. I’m happy to report that there was no rock star attitude with any of the groups. They were all great company and enjoyed the chance to kick back and relax before the big shows. As one of the few venues on the Gold Coast licensed to sell Moët White Ice, I am always amazed at the reaction when our customers try it for the first time. Designed to be served with ice and fruit, it is the perfect accompaniment to a warm summer’s day and is as refreshing as it sounds. The stylish white bottle in its own presentation stand is the first sign that something special is coming. Then the theatre of the opening, pouring, the adding of the ice and fruit and the first sip only add to the sense of occasion and celebration. As 56

our customers become more used to ordering it, they have begun pre-ordering their particular favourite fruit, putting their own twist on what has become a runaway success. Our new menu from executive chef David Pommiere has been delighting diners all throughout the summer season. A stickler for sourcing the freshest and very best produce, David is a chef who delights in producing food of a consistently high standard. Forever testing and tasting he has added some seasonal delights to our menu that have become extremely popular with regulars and newcomers alike. His oven baked four pin rack of lamb with scallop potatoes, pancetta wrapped beans, tomato concasse and lamb jus is a standout. Other new favourites are the crispy salmon fillet with creamy polenta and caponata salsa or the explosion of flavours in the tuna carpaccio served with ruby red grapefruit, tonka bean mayonnaise, salmon pearls and verjuice. As with any chef he loves to see an empty plate after a meal indicating everything on the plate was of the highest order. It would be remiss not to make mention of our all white New Year’s Eve Party. The restaurant was packed, the music was pumping and the guests followed instructions on the invitation and arrived dressed in gleaming white. I deliberately had the staff decked out in black so as to make it easier to spot who was working and who was partying although in the spirit of NYE as the night wore on that line got a tad blurred as we all joined in the fun. We have many more functions and wine dinners planned for the year and the best way to keep abreast of all those plans is to subscribe to the e-newsletter via our website. As ever myself and all the staff will be striving to provide you with the best service and food possible in 2013. May your glass always be half full,

T
he I Love FOOD Awards are unique in that they reward Australia’s favourite places to eat out as chosen by the Australian public. No gimmicks, no industry pressure – the awards are people power at their finest. More than 130,000 registered votes were cast last year and for the second time running the O-Sushi restaurants at Broadbeach, Byron Bay and Coolangatta walked away with the national prize and individual awards. ‘Best Japanese Restaurant’ and ‘Best Asian Restaurant’ are the titles the team at O-Sushi are justifiably proud of because it indicates that what they are producing in terms of food and service is resonating with the dining public. Co-founder Prayan Benglas believes that the secret to O-Sushi’s success is the constant interaction between the diners and the restaurants. ‘We’re fortunate that our customers give us feedback, both good and bad, because this allows us to carry on doing things that work and try and improve the things that don’t. We are especially proud of our excellent chefs that create the extensive menu that so many of our customers like, so much so that they keep coming back for more. Without that patronage and feedback, we would not be where we are now.’

isney’s fantastical adventure “Oz The Great and Powerful,” directed by Sam Raimi, imagines the origins of L. Frank Baum’s beloved wizard character. When Oscar Diggs (James Franco), a small-time circus magician with dubious ethics, is hurled away from dusty Kansas to the vibrant Land of Oz, he thinks he’s hit the jackpot—fame and fortune are his for the taking—that is until he meets three witches, Theodora (Mila Kunis), Evanora (Rachel Weisz) and Glinda (Michelle Williams), who are not convinced he is the great wizard everyone’s been expecting. Reluctantly drawn into the epic problems facing the Land of Oz and its inhabitants, Oscar must find out who is good and who is evil before it is too late. Putting his magical arts to use through illusion, ingenuity—and even a bit of wizardry—Oscar transforms himself not only into the great wizard but into a better man as well. What sets this movie apart more than anything else is the creativity and imagination of the many and varied costumes. There is no replica of the look of one character to another. This attention to detail also flowed down to makeup and hair design where the teams worked closely with the costumers to capture the unique look of each character. When audiences see “Oz The Great and Powerful” they may not notice the smallest costuming details, or the seamlessness with which the characters fit in their surroundings or the fact that

character looks aren’t duplicated, but they will feel that the Land of Oz is a living, breathing place that as fantastical as it seems, somehow feels as though it may exist. And it is the costumes that play a great part in delivering that feeling. Costume designers Gary Jones and Michael Kutsche designed, created and assembled nearly 2,000 costumes for the movie. Working on all sorts of characters from Witches to Munchkins to Quadlings and Tinkers, the two costume designers came up with special looks for all the fascinating and unique inhabitants of the Land of Oz. The movie also has three very distinct witches in the film, Evanora, Theodora and Glinda, who had to be costumed to reflect not only
“Audiences will feel that the Land of Oz is a living, breathing place that as fantastical as it seems, somehow feels as though it may exist.” their personalities but their surroundings as well. The witches are very clearly light and dark to contrast good and evil. A mercury green colour, based on the Emerald City design, was used to portray Evanora, Glinda is basically a white, pristine kind of girl while Theodora is a little more on the sporty, physical side. In addition to the principal cast, Jones and his staff of 60 costumers, seamstresses, textile artists, dyers and agers also created the clothes for all the diverse inhabitants of Oz, such as Quadlings, Munchkins, Tinkers, Emerald City citizens and Winkies. With creativity and imagination the costumes for “Oz The Great and Powerful” were created with each individual character in mind, whether they were main characters or extras. Essentially the movie is in a fantasy world while still being a period piece. The look is almost like a patchwork of different periods that makes it look like no distinct period giving it a fantastical feel. labelmagazine.com.au

Maharaja Polo Cup
olo, the sport of kings much loved by the social set, is coming to the Gold Coast. The announcement that India’s exclusive Maharaja Polo Cup tournament will be held on April 13th was made by Premier Campbell Newman during a high level trade and investment mission to promote Queensland’s relationship with India. “The Maharaja Polo Cup is an exclusive tournament held under the patronage of His Highness the Maharaj Raghav Raj Singh Shivrati of Udaipur, which is proposed to move between India and Australia annually, helping promote business and cultural links between the two regions,” Mr Newman said. The high profile polo match will be held in a specifically set up field at Doug Jennings Park at The Spit, Main Beach in a spectacular setting overlooking the ocean and Broadwater. With such strong government to government links, the tournament is being viewed as an opportunity for corporations and individuals to mingle with Indian royalty, the political, business and social elite of India while enjoying a sumptuous food station lunch prepared by international award winning Chef Luke Turner from Providore. Polo players of the highest skill level will add to the glamour and excitement while showcasing the beauty of the Gold Coast. Up to 5000 attendees are expected over the weekend. The excitement and prestige of the polo game will be preceded on Friday 12 April by an India/Australia Business Forum followed later that night by the exclusive “invitation only” Maharaja Polo Cup Gala Dinner. Both these exclusive events will be held at the luxurious six star Palazzo Versace Hotel, Gold Coast. The Business Forum will be jointly organised by the Kural Group with the Queensland Trade office to provide an outstanding opportunity for businesses eager to pursue further opportunities in India and Queensland. With Queensland being the fastest growing state in Australia and increasing investment and business opportunities opening up in India and the subcontinent, this rare business opportunity will offer delegates access to leading CEO’s, business executives, politicians and organisations.
April 13th 2013 Doug Jennings Park, The Spit
To reserve exclusive tickets at the Maharaja’s VIP Marquee at the event please contact infomaharajapolocup@kuralgroup.com.au or 0403 449 868
The tournament is under the patronage of Maharaj Raghav Raj Singh who is a member of the royal family of Udaipur and the Duchy of Shivrati which is a part of the Mewar dynasty. Educated in the finest institutions of India and England, the Maharaj also attended the exclusive Cheltenham College before completing his MBA at Edinburgh, Scotland. A keen polo enthusiast, he has won many tournaments internationally and has played with the likes of Prince Charles, Prince William, Prince Harry, the Sultan of Brunei, and Prince Rashid of Jordan. The Maharaj shares his ancestor’s enthusiasm for regal duties, championing the cause of his charity, Shivarti Trust, whose patron is H.H. Princess Catherine, Duchess of Cambridge. Through the Trust he has been able to provide educational and social benefit to the people of his region. The Maharaj Raghav Raj Singh and his wife Rani Shelja Singh were also privileged to be the Royal invitees from India to attend Prince William and Miss Catherine Middleton’s wedding in April, 2011. The Maharaja Polo Cup event is a two day event put together by The Royal Mile UK and the Kural Group as an initiative to promote Australia-India relationships. The Royal Mile (TRM) is a UK based company with significant Indian presence and market expertise. TRM has built a private network of high profile contacts from India and across the western hemisphere, through organizing prestigious networking events, dinners and film premieres and through bespoke sourcing of contacts on behalf of their client base. Their areas of expertise cover property, investments and private equity, with highly selective consultancy undertakings in key sectors such as energy, pharmaceuticals, food and health. There is no doubt that the best years of Queensland - India trade relations are in the future and enormous opportunities for both India and Queensland exist right now. The Maharaja Polo Cup event, incorporating the Business Forum and Gala Dinner, will provide corporate clients a unique opportunity to associate their brand with this fast growing market. labelmagazine.com.au

rav4 Three new engines for the Toyota RAV4 mean customers will spoiled for choice.
W
hat began as a fun cross over vehicle for the young at heart has been transformed due to its increasing popularity into a family runabout. The Toyota RAV has been all things to all drivers since it was launched in 1994. Now the next generation RAV4 is about to arrive at Grand Motors Toyota and the fans of this popular model are about to be spoiled for choice. The big news is that three new fuel-efficient engines including - for the first time – a turbo-diesel are on offer. Local customers for the 2013 RAV4 will be offered more engine options than ever before – two four-cylinder petrol engines as well as the powerful torque of a four-cylinder common-rail diesel. The new engines were revealed to the world at the Los Angeles International Auto Show late last year. Finally the Toyota designers and engineers were able to take the wraps off a boldly redesigned vehicle that features a sophisticated, dynamic and strong exterior and a spacious, high-quality interior. The popular mid-size SUV will be able to offer Grand Motors Gold Coast customers improved dynamic performance, greater refinement, smart packaging, outstanding convenience technologies and even better value for money. One significant change is a break with RAV4 heritage by the placement of the spare tyre under the cargo floor while the new tailgate is hinged at the roof. Grand Motors Toyota expert on all things RAV4, William Roopchard, is thrilled about the evolutionary changes believing that it will be even more capable and flexible to meet the needs of recreational and business users. “I really love the exterior design. It has a much stronger silhouette that reflects the sporty nature and real strength of the vehicle. It is perfect for our outdoors lifestyle. All of the changes have made the RAV4 even more attractive for young singles, couples and families looking for a spacious, comfortable vehicle that will suit all of their needs and is perfect for driving on a wide variety of road conditions. The three new engines are the perfect blend of performance and economy with impressive fuel economy and emissions performance. Coupled with the advances in agility and handling this is the answer to the needs of many motorists.” Exterior colours have also received a tweak with a number of new options available. Included are the ever popular ebony and glacier white with wildfire, graphite, blue storm, sandstone, liquid bronze and metal storm now available. Check details for which colours are available with which models. As an added bonus the RAV4 is backed by a 3 year warranty (or 100,000km, whichever comes first) and with capped-price servicing and surprisingly fuel-efficient engine technology, this is guaranteed to make car ownership a pleasure. With masses of versatile storage and cargo space thanks to flexible seating and car design features which can include heated front seats, moon roof and climate control, this is an SUV like no other. New RAV4 includes other driver-oriented improvements including an advanced all-wheel drive system, a better driving position, improved front and rear vision, and the safety of a more rigid body and seven airbags. Premium features on high-grade variants include a power-operated tailgate, blind-spot monitor, rain-sensing wipers and electro-chromatic rear-view mirror. Since the first generation RAV4 was launched in 1994 the vehicle has been hugely popular in Australia with sales of almost 200,000. The improvements to this next-generation model have expanded once again the customer base for this fun but eminently practical vehicle. The latest RAV4 is in Grand Motors Toyota showroom now and the staff can’t wait to introduce their new ‘baby’ to their customers. n my line of work, I see many clients who are stressed to the point where they are literally pulling their hair out as a result of anxiety, fear, frustration and anger surrounding their separation. I often hear the following about their former partners:-
He/She Said… “…if you leave the house you will get nothing.” “…the house is in my name therefore you can’t touch it.” “…you need to give me half of any government benefits.” “…I will just stop working and you will have to pay all the bills.” “…if you take the car without my permission it’s stealing.” “…you can’t change the locks! I can come in whenever I want, it’s still my house.” …the list goes on. Unfortunately, if this sounds like your situation, you are probably feeling quite confused and concerned. Clients in these positions are often nervous that they are doing the wrong thing and this fear can be quite debilitating. My advice? Don’t rely on what he/she said! Most of the time, these things are said to intimidate you and manipulate the situation. If you have been in a relationship with a power imbalance, you will know this to be even more so the truth.
Unfortunately, when people who enjoy power lose control over a situation, they tend to react and handle the situation in a number of ways. Some of the common ones include but are certainly not limited to the following:The “head in the sand” ex – the ex that refuses to deal with the break up, refusing to negotiate or discuss matters and electing to avoid the situation entirely; The “unreasonable and irrational” ex – the ex that makes unusual and ridiculous demands that simply cannot be met or make no sense. They cannot see reason despite all the evidence you give him/her; The “intimidator and harasser” – the ex that makes threats or makes things up to scare and intimidate you, sending you multiple messages or constantly calling you but never replies when you need an answer from him/her; and The “aggressor” – the ex that becomes abusive to the point that you are fearful for your safety. If you are nodding your head because you are dealing with someone like this now and/or have heard similar statements during your separation, you should call us now. We offer a FREE half hour, confidential discussion. You don’t need to go through the separation process on your own and certainly, you don’t need to stress when a simple phone call can bring you peace of mind. At OMB solicitors, we make it our priority to understand your unique circumstances, provide you with solutions and work with you to resolve your matter in a simple and timely manner.
