Gay, vegan and female – how Ellen broke all the rules of mainstream television to become a global phenomenon.

In Hollywood they call it the pitch. An agent trying to sell to a television network an idea for a show would start with, “I’ve got this idea for a TV talk show which will be one of the most popular series on television. It’s to be fronted by a female comedian who is gay and in a long term relationship who also happens to be a vegan.” You could almost hear the doors being slammed as he/she leaves the office. As unlikely as it sounds, the reality is The Ellen DeGeneres Show, which debuted on NBC in September 2003, has grown to be a global phenomenon attracting 2.75 million viewers daily in America. Whether it’s her quirky, down home humour, the way she gently points out some of life’s absurdities or her impish smile which shows off her striking blue eyes, Ellen has found a way into people’s hearts. Born in 1958 in New Orleans, Ellen grew up in Atlanta Texas before graduating from high school and then attending college. She dropped out after one semester taking a succession of odd jobs including work as a para-legal, waitress, house painter, oyster shucker and selling vacuum cleaners before she started doing stand-up comedy in small clubs and coffee houses. “I just like observing people – it’s something I’ve done ever since I was a kid, and I got really good at it. That’s a big part of why I became a comedian,” she explained in an interview in 2006. Her dry, wry, observational humour started to catch on and after winning a competition naming her as the funniest person in America she got her big break by being invited to appear on The Tonight Show with Johnny Carson in 1986. She would always tell jokes against herself and her early years. “I was doing stand-up at a restaurant and there was a chalkboard on the street out front. It said, ‘Soup of the Day: Cream of Asparagus. Ellen DeGeneres.’ Not even top of the bill over the soup of the day. Her stand up work continued and then her first foray into television began when she was cast as a supporting player in two sit-coms, ‘Open House’ and ‘Laurie Hill’ in the period 1989-92. Those roles lead to her own 1994 sitcom on ABC, ‘These Friends of Mine’ (later renamed ‘Ellen’ after its first season). She made TV history in April 1997 when her character and Ellen personally revealed that she was ‘gay’. “I didn’t choose to be anything other than a comedian,” she said at the time. “I just happen to be a lesbian, and I didn’t feel like keeping it a secret, so I announced it. It all turned into this whole big political thing.” Some regional television stations refused to air the controversial episode and major advertisers such as Chrysler pulled their commercials in protest. The show was cancelled the following season due to declining ratings after which DeGeneres returned to the stand-up circuit. In 2001, DeGeneres launched a new series, ‘The Ellen Show’, on CBS, but it too suffered from poor ratings and was subsequently cancelled. She continued her stand-up career and landed hosting jobs for the Emmy’s including a memorable effort after the 9/11 bombings in 2001. “I felt it was important for me to be here tonight,” she said during the telecast, “because what would bug the Taliban more than seeing a gay woman in a suit surrounded by Jews?” Never one to be accused of giving up, Ellen returned with her current show in 2003 and is signed to appear until the 2013/14 season. Her goofy collection of celebrity guests, signature dancing, quick fire comedy, crazy games and audience give-aways has made her show rocket to the top of the daytime ratings tree. That appeal has spread across the globe and the show is now seen in 16 countries including Australia. Ellen’s appeal resonated so strongly with SEA FM breakfast radio personalities Moyra, Paul and Baggs that they initiated a public appeal to get Ellen to bring her show to the Gold Coast. It began with social media pages and newspaper articles before culminating in a mass demonstration on Surfers Paradise Beach with live crosses to national TV breakfast shows. That in turn led to an invitation to go to Los Angeles for the taping of Ellen’s show and the chance to meet the star. “We invited her to come down under and she promised the Gold Coast she would as soon as her studio would let her,” said Simon ‘Baggs’ Baggott. “We’ll find out in season 9 if they will be making the big trip to the Gold Coast which will be amazing for our tourism. She was incredibly friendly and warm and we still keep in touch with the producers who have promised to let us know if she is coming down, so standby, we will let you know as soon as we find out.” The moral of Ellen’s story is being true to yourself and being honest with people about whom and what you are and they will accept you. The small town girl with the big dream has done what no one would have thought were possible – middle America and the world have fallen in love with Ellen.

The Flip Side of Heather Filippini Is it the money or the challenge? “It’s the challenge. For a woman going into business in a man’s world it’s the thrill of putting nice people into beautiful homes.” The speaker is Heather Filippini, the woman who established one of the most high profile real estate offices on the Gold Coast. So where did it all begin for this impeccably groomed, softly spoken woman. “I was raised in the Coonawarra region of South Australia, and from an early age I knew that I wanted to be a career woman. Starting work in a pharmacy and moving into cosmetics, I became the state manager for Yardley Cosmetics in both Victoria and Queensland and their first female representative. It seems strange to say but I’ve always had an instinct for making the sale. If you’re selling something you love it’s not difficult to sell.” The change from cosmetics to high end real estate was not an immediate move. Married with daughter, Sarah, Heather and her husband Frank Filippini moved to Sovereign Islands. “We wanted a change and it was a toss up between Noosa and here but I’ve always loved bright lights and the Gold Coast has such diversity.’’ Her life became a round of social engagements. Personable and easy-going she would host morning teas and welcome newcomers to the burgeoning estate. “If the Sovereign Islands sales’ team wanted something done they would ask me to host it. I did it all for nothing because I loved the lifestyle. In a strange way it ended up being good training for my real estate sales career because it introduced me to so many of the residents. My reasoning for changing over to selling was because I thought I could do a better job.” Sadly Frank had a stroke and passed away in early 2008. By her own admission it took her three years to deal with the loss. “There was no time to adjust because it was so sudden. We led an active lifestyle and were in the process of completing a large development. It was very lonely because for years we had always done everything together and now as a single female there were so many places I couldn’t go to alone.” With her daughter Sarah, she threw herself into work and continued to carve a niche selling the most expensive real estate on the Gold Coast. “My work was going well and I firmly believe that women make better real estate salespeople. Women are the ones who buy houses so as a woman you listen and are more intuitive. I started the first open houses and still organise functions including hiring a marquee for a Christmas party for the residents on Sovereign. The thing that has sustained me is the sense of community we have here. Having lived here for 22 years I’ve seen the children of some of the shopkeepers grow up to become adults. Those are the people who know and trust me despite everything they read in the papers and I am so grateful for that friendship and trust.” As for her future Heather has planned a trip with daughter Sarah to New York for a white Christmas. “I’ve got to the stage where I want to enjoy my life. If I feel like spending three months in France in a chateau I will. There’s still a part of me that wants to return to my roots in Coonawarra and have a winery. I spend as much time as possible there visiting family and my mother.” Whatever the next step, be sure that it will be done her way.

I have quite a few friends from who I draw inspiration for my designs. They’re quite fabulous and I know a lot of what is going on in their lives so I think about them when I’m designing a collection. Their ages vary from early 20s to about 60. The current winter collection appears to have a touch of 60’s rock chick mixed in with high street glamour. Is that an accurate comment?
That is a spot on description. The long scarves and big hats that can be worn with the winter collection work beautifully with the clothes. The words used most often when describing your designs are ‘timeless elegance’. You don’t appear to be a trend follower – more someone who wants his customers to continue wearing his clothes as part of 12

Retail is tough at the moment – what are your tips for survival? Try to remain energetic and inspired, have good staff, travel and do whatever you can to keep yourself on top of the game. Australia has different fashion styles e.g. Melbourne women differ from the Gold Coast. Do you allow for that with different stock in each locale? The Gold Coast is definitely different. Opening this store
in Marina Mirage puts our collection in quite a different direction and parts of the collection are aimed more at this market. We don’t have different clothes for each city but the Gold Coast has a different emphasis. Who is your style icon? The iconic designer Roy Halston from the
70s I suppose. There’s quite a few people from that era as well who had an influence such as Bianca Jagger and Jerry Hall but it’s constantly evolving.

Seven years ago Camilla Franks was a aspiring actor with an eye for design and detail. Today she sits atop a fashion empire, distributing her exuberant designs to all corners of the globe. “It has been an organic thing from when I was doing acting training and designing the costumes for my characters. People came to see me in these really bad plays and would ask about the clothes so I started making things. After I finished my acting training I decided to do a small collection and it grew from there. Fashion chose me, it was never planned – it felt right and I went for it.” Acting’s loss was fashion’s gain and Camilla’s vibrant, fun filled designs made a mark immediately. Dubbed the Kaftan Queen, the label has stuck and while she is aware of the one trick pony aspect, it is a tag she doesn’t worry about. “Ever since I started I’ve always done other garments. As a designer you want to be known for variety but if you’re known for one thing then it is up to you to educate the consumer.” The point of difference in all of Camilla’s designs is the handmade and wildly colourful material. “Each single piece is individually produced. Everything from a collar to a bust line is done specifically for the garment it is intended.” Of course every interview with Camilla has to make mention of the Oprah effect. “The effect was phenomenal. For that to happen and to have her friend Gail and Oprah’s stylist also come into the Paddington store a few times, was amazing. On a business level it was a major achievement and we had a huge spike in sales. It got so hectic we had to turn our on-line store off, not only nationally but internationally as well.” Oprah’s approval fitted in well with the design mantra of fitting any woman, any size, any age, making them feel glamorous. “Some designers I know have stated emphatically to me that they won’t produce any garments over a size 14. That’s really silly because that is the average size now. Every woman should have the opportunity to feel and look amazing.” As for the future, Camilla rattles off a series of projects that make you tired just listening. “There’s the new development with David Jones, plans for a collection for children and men plus a swimwear range and our jewellery designs. We’re also opening two new stores and of course the new range which is influenced by my travels. Babushka dolls, tropical fish in the Maldives and Mexico have all found their way into the designs.” From self-confessed average actor to global style queen the journey has been nothing short of remarkable for Camilla and it’s a ride that won’t be slowing down any time soon.

Design it and they will come. Remember this Australian brand name, Robb & Lulu, because it is taking America by storm. Named after partners Rob Zagame and Lulu McDermott, the label was recently showcased to Vogue, Teen Vogue, Glamour, Redbook and many more – with the majority blown away by the artistic influence in each piece and requesting feature stories immediately. Stylist to the stars Rachel Zoe also expressed interest, Tyra Banks pulled stock for her website typef.com and soon major boutiques were clamoring for stock. The buzz is due to the uniqueness of each piece. The formula used to produce a Robb & Lulu garment is essentially to take an intricate illustration or fabric creation by Lulu and fuse it with a unique garment design by Rob. The result is easy to wear, truly individual pieces that will ensure wearers stand out from the crowd, whether it be through an incredibly detailed illustration or a flamboyant, colorful print. The range includes dresses, scarves, tees, tanks, bikinis and lingerie for women and tees for men. Tees are adorned with beautiful Goddess/Warrior Princess illustrations, whilst the intricate, colorful fabric for the balance of the range is also designed by hand. You definitely don’t wear Robb & Lulu if you don’t like being noticed. The illustrations and fabric designs are created by Lulu starting with a drawing pad and pencil. Once the sketch itself is finalised, inks are applied and finished with a water-color wash, coloured pencil and paint or artist markers. The design is then scanned onto a computer so that final touches to the design may be made digitally. Designs are sent to an Australian printer for print either directly onto a tee/tank or onto fabric to be used for other garments. All printing and manufacturing of garments is carried out in Australia and best of all, they’re wash and wear. The Debut Collection which created such a firestorm of publicity in America will be repeated when the Spring/Summer Collection is launched here. Stand by, things are going to get super colourful. Face facts Why risk your health on a cut price surgical procedure in a foreign land?
It sounds tempting – travel to some exotic destination and combine an overseas holiday with plastic surgery and come back as a new you. While the price and the holiday may seem tempting it is important to compare what is available here with what is on offer in a country where you may not be able to safely drink the water. Any operation carries an inherent risk and there are several important questions you need to ask before you sign up for something that could quite literally cost you your life or result in emergency care. The anticipated holiday may end up being just recovery in a hotel suite without all the comforts of your own home. There are many things to consider when contemplating surgery overseas; is the person promoting the surgery medically trained or are they simply a travel agent or broker? Do they understand fully medical indications and contra-indications for surgery and will they be able to support you post operatively if you have medically based questions? Is the surgeon a member of the International Society of Aesthetic Plastic Surgery (ISAPS) or Australian Society of Plastic Surgeons (ASPS)? And importantly if having implants, is the surgeon using accredited implants with TGA or FDA approval or are they using copies or sample implants? Do you have a plan in case of any post-operative problems especially if English is not the native language? Most surgical complications will occur more than a week after an operation. If you have surgery overseas you may need to deal with a complication once you return home. Do you have full and real details of how the surgery was done, the sterility standards of the overseas complex or the details of any implants used? If you need a blood transfusion are you comfortable with receiving this in a foreign country? Insurance is compulsory for Australian doctors but may not be in other countries or the insurance policy may only cover a patient that is a national of that country. You may find yourself with significant expenses if there is a complication. The sad fact is most people travelling overseas for surgery spend more time researching the purchase of a household appliance than researching their surgeon and comparing ‘apples with apples’. Make an informed decision regarding your health and well being if considering having cosmetic or plastic and reconstructive surgery.

Dr Craig LAYT What does it take to become a specialist Plastic, Cosmetic and Reconstructive Surgeon? In the case of Dr Craig Layt it has been half a lifetime of study, dedicated training and continual updating of his considerable skills. Ristorante Fellini, the iconic Italian eatery at Marina Mirage, has introduced ‘sunset dinners’ allowing customers the opportunity to dine and enjoy the late afternoon skyscape. Having identified the cosmopolitan demand for customers looking for an all-day menu, diners can now enjoy a Fellini late lunch or ‘sunset dinner’ with the restaurant now serving meals from 12 noon right through to evening. The full menu will be available under the new trading times with co-owner Carlo Percuoco welcoming the extended trading hours as a chance for locals and visitors alike to experience Fellini’s famed cuisine at their leisure. “Over the past few years we have noticed people wanting to have lunch later and dinner earlier, so the partners of Fellini collectively decided it was time to accommodate this market,” said Carlo. “We’re excited about the extended trading hours and now is the perfect time to be enjoying our glorious spring weather. For years the staff have enjoyed the most beautiful sunsets from here in the restaurant. Now more people can enjoy long lunches or come in early for pre-dinner drinks and sit back and enjoy the best part of the afternoon with us.” Carlo said the extension of trading hours marked a historic moment in the restaurant’s history, having only operated separate lunch and dinner sittings since their opening more than 15 years ago. “We have never traded all the way through so this is a bit of a milestone for us,” he said. “It’s a sign of the times. We’ve noticed diners – especially those who are visiting from the bigger cities interstate – are used to being able to dine at their favourite restaurants at any time of day or night. We are meeting this demand while also being able to cater for our regulars who wish to make the most of the afternoons and evenings and enjoy a more flexible time to dine.” With a fresh new menu showcasing the spectacular culinary talents that come with years of experience in fine Neapolitan cuisine, Fellini remains one of the Coast’s most sought after dining experiences. The iconic Marina Mirage restaurant has been owned and operated for the past 14 years by the Percuoco family, including brother Carlo, sister Anna Cacace and partners Richard Burt and Raffaelle Di Benedetto. Custard Tarts Makes 18 1 quantity Sour Cream Pastry (below) Plain flour, for dusting 1 cup milk 1 cup pouring (single) cream 3 eggs 3 egg yolks ½ cup caster sugar 1 tablespoon natural vanilla extract Maggie Beer Sour Cream Pastry 200g chilled unsalted butter 250g plain flour 125ml sour cream To make the pastry, dice the butter, then pulse with the flour in a food processor until the mixture resembles fine breadcrumbs. Add the sour cream and continue to pulse until the dough starts to incorporate into a ball. Wrap dough in plastic film and refrigerate for 20 minutes. Roll the chilled pastry out until 3mm thick and cut to suit your chosen recipe. Step 1. Divide the pastry into 2 equal-sized discs before wrapping in plastic wrap and refrigerating for 20 minutes to rest. Roll a disc out to 5mm thick. For 7cm round (measured at the top) muffin or cupcake moulds, cut out 11-cm rounds from the pastry. Cut out a round and gently press into a muffin tin mould. Leave the excess pastry sticking up above the muffin tin
to make pastry case taller (which will give you some shrinkage allowance). Keep cutting out rounds and lining the moulds until you’ve exhausted the pastry sheet. When you’ve cut as many rounds out as you can, put the pastry cuttings back together, dust with the flour and roll it out again to cut out more rounds. Keep doing this until you’ve exhausted the first disc of pastry, then take out the second disc and do it all over again. You should have 18 lined muffin moulds. Pop the muffin tin in the fridge for 30 minutes to rest. Do not skimp on resting – this is crucial to the pastry not shrinking too much and becoming one big eggy mess in the oven. Preheat the oven to 200°C. Step 2. Place the milk, cream, eggs, egg yolks, sugar and vanilla in a large bowl and whisk until just combined. Transfer to a jug, and pour into the pastry cases, filling just over halfway – don’t be tempted to fill them anymore because the eggy filling will expand. Carefully place the tin in the oven and bake for 10 minutes, then reduce the temperature to 180°C and bake for a further 10 minutes. Step 3. Remove from the oven and allow tarts to cool in the tin for about 5 minutes, then ease them out with a butter knife. Serve straight away or store in an airtight container for a day.

RECIPES Confit Duck Serves 6 2 tablespoons sea salt 3 garlic cloves, peeled 1 teaspoon black peppercorns 1 star anise 6 thyme sprigs 6 duck Marylands (about 200g each) 2 kg duck or goose fat, plus olive oil for topping up Cherry Sauce ¼ cup red wine 680g jar morello cherries, drained, ¼ cup syrup reserved 2 tablespoons white sugar 2 star anise 1 cinnamon stick Step 1. Lightly pound the salt, garlic, peppercorns, star anise and thyme springs in a mortar using a pestle. You want the garlic to be slightly crushed and the spices cracked. Rub the salty mixture into the duck pieces, cover with plastic wrap and refrigerate overnight to marinate. Step 2. Preheat the oven to 120°C. Rinse the duck under cold water to remove the salt mixture. Pat dry and place in a casserole dish or deep roasting tray that’s just large enough to fit the duck in one snug layer. Heat the duck or goose fat in a saucepan until just melted. Pour over the duck, making sure all the pieces are completely covered – top up with a little olive oil, if you don’t quite have enough. Bake for 2 hours, or until the meat is soft and shrinking back from the bone. Remove from the oven. At this stage you can crisp up the duck skin and enjoy immediately or store the confit duck for later. If you’d like to store it, transfer the pieces to a large sterilised jar or container. Strain the fat into the jar to completely cover. Cool, then store in the fridge until you’re ready to serve. You can store the confit duck like this for up to 2 weeks. Poached eggs with Smoked Trout & Herbs Serves 2 100g hot-smoked trout, skin and bones removed, flesh flaked 1 tablespoon finely chopped dill 1 tablespoon finely chopped basil leaves 1 tablespoon finely chopped flat-leaf parsley ½ cup extra-virgin olive oil Juice of ½ lemon ¼ teaspoon sea salt 2 tablespoons white vinegar 4 eggs, at room temperature 4 thick slices toasted sourdough bread, to serve Freshly ground black pepper Step 1. Place the trout, dill, basil, parsley, olive oil, lemon juice and salt in a bowl and give everything a quick mash with a fork. Set aside until ready to serve. Step 2. Fill a large deep frying pan with water, add the vinegar and place over medium heat. Heat until little bubbles start to form and rise from the base of the pan. You want the water to be hot but not simmering rapidly otherwise the egg may break up. Crack each egg into a cup or small bowl and then slide them into the water. Poach for about 4 minutes, or until the eggwhite is just set but the yolk is still wobbly like soft-set jelly. Scoop out each egg with a slotted spoon. Slide onto a plate while you get the toast ready. Step 3. Spread each piece of toast with a spoonful of the trout mixture. Top with a poached egg and spoon over more of the trout mixture. Finish with generous grindings of pepper. 58

Step 3. Ready to eat now? Preheat the oven to 120°C. Heat a heavy-based frying pan over medium heat. Remove the duck pieces from the fat. You will need to scrape away the excess fat, if you’ve been storing them in the fridge. Add to the pan, skin-side first, and sear for 3–4 minutes, or until the skin is golden and crisp. Turn the duck pieces over and cook on the other side for about 2 minutes, or until warmed through. Transfer to a roasting tray and keep warm in the oven while you make the cherry sauce. Step 4. Pour off most of the fat from the pan, leaving about 1 tablespoon and put it back on medium heat. Pour in the red wine and let it sizzle for half a minute, using a wooden spoon to scrape off any crisp duck bits from the base of the pan. Add cherries and reserved syrup, sugar, star anise and cinnamon. Simmer for about 15 minutes to infuse the flavours and let the cherries collapse and thicken the sauce slightly. Serve the duck with generous spoonfuls of sweet cherry sauce.

So you want to be the boss and control your destiny? Owning your own business is not a simple task and with regulations and rules on top of the difficult financial climate you must be sure that all your ducks are in a row. From a legal aspect you need to ensure that before you enter into a contract to purchase a business that you consult your solicitor. Before you even get to a contract there are extremely important issues of structuring that must be considered. Don’t for a moment think you should just be buying in your own name, serious consideration should be had to owning the business in a company, trust or combination of these vehicles. This type of structuring when done correctly will provide asset protection and may also allow your accountant more flexibility when planning your taxation matters. The contract must be properly drafted to ensure that you are protected as this is the single most important stage of the purchase. A sensible business contract should allow you the opportunity to investigate all aspects of the business before you are committed to buy. You need to make sure the accounts of the business are

accurate and you should ensure your accountant verifies the figures. A trial period can be negotiated where you work in the business and get to see not only the workings but also the customers and the income. It is essential that the premises from which the business operates is secure as often there is a large amount of the goodwill attached to the position of the business. Therefore your solicitor must check the lease and ensure you have security of tenure. All licences and approvals must also be in place to guarantee that you will be able to operate the business. Issues with staff, ownership and transfer of assets, business names, websites and the like form an integral part of the process. Franchises are often part of business purchases these days and it is essential that you are properly advised on these agreements. Your solicitor will be able to guide you through the process and you will soon learn being The Boss simply means that you have responsibility for not only yourself but the whole business.
