verything happens for a reason. It is a mantra that American singing sensation Taylor Swift has followed for most of her life believing that everything, good or bad, is a lesson. The break-up of a relationship is the source for the lyrics to a song. Rejection by record companies when she was just starting out meant that she re-evaluated what she needed to do to be a success in the music industry. Having to put up with teasing, bullying and being humiliated at school led to the recognition that being different is a good thing even though at the time it was painful. Refreshingly normal, polite and well-adjusted but with a reputed bawdy sense of humour, Taylor Swift has quickly become the voice of her generation able to span such diverse genres as country, pop and rock, writing and performing songs that resonate with her audience. She was born on December 13th 1989 leading to a great love of the number 13, and raised in Wyomissing, Pennsylvania on of all things a Christmas tree farm. Her father, Scott Swift, is a fourth generation banker who worked for Merrill Lynch as a financial adviser. It was her mother, Andrea, who left work as a marketing executive to become a full time homemaker, who decided to christen Taylor with a gender neutral name, believing it would help should she decide to forge a business career later in life. Music became her obsession at 11 after seeing a TV special on superstar Faith Hill. “I saw how Faith went to Nashville so I made my own demo CD at home, pestered my parents to take me to Nashville, and then went up and down Music Row, handing my CD to the receptionists at all the record studios. I'd say, ‘Hey, I'm 11, and I want a record deal. Call me.’ I quickly realised that everyone in that town wanted to do what I wanted to do. So, I kept thinking to myself, I need to figure out a way to be different.” By chance a computer repairman showed her how to play three chords on a guitar, inspiring her to write her first song, “Lucky You”. Previously Taylor had won a national poetry contest with a poem entitled “Monster in My Closet” but now armed with the beginning of her musical talent she joined the two and her focus became song writing. “From those first three chords, I learned to play on a twelve-string, purely because some guy told me that I'd never be able to play it because my fingers were too small. Anytime someone tells me that I can't do something, I want to do it more.” By the time she had turned 14, her parents had realised that their daughter was determined to make it in the music industry and so moved to Nashville. A career was born. Overnight success is a very rare thing and because of her drive and taste in country music she was not treated well by her fellow students at school. “The kids at school thought it was weird that I liked country—they'd make fun of me. Junior high was actually sort of hard, because I got dumped by this group of popular girls. They didn't think I was cool or pretty enough, so they stopped talking to me. I played a hometown show about a year after my career took off, and they showed up, wearing my T-shirts and asking me to sign their CDs. It was bittersweet, because it made me realise that they didn't remember being so mean to me and that I needed to forget about it, too. And really, if I hadn't come home from school miserable every day, maybe I wouldn't have been so motivated to write songs. I should probably be thanking them! The most talented people I know and some of the most fascinating people I've met were the most uncool kids in their school.” Everything happens for a reason. In 2006, after mentoring and workshop sessions with seasoned musicians and writers Swift, signed a deal to record an album. She wrote three of the album's songs alone, including two singles, and co-wrote the remaining eight with other writers. The self titled
album, ‘Taylor Swift’ was released October 2006. It was described by the New York Times as “a small masterpiece of pop-minded country, both wide-eyed and cynical, held together by Ms. Swift's firm, pleading voice.” The success was due in part to her talent as much as her drive and determination to do everything in her power to get her album heard and played. “My mother and I used to stuff the CD singles into envelopes to send to radio,” she explained. In all Taylor spent six months on an extended promotional tour, even baking cookies and painting canvases to gift to radio station programmers who played her music. The tour included multiple TV appearances and in what was considered a revolutionary move for country music, she using her networking skill as a child of the internet to build a fan base via Myspace. That initial successful album has been followed by three more – Fearless, Speak Now and Red – each released two years apart. Her fame crossed over into mainstream media when in 2009 she was interrupted by Kayne West during an acceptance speech for winning the Best Female Video at MTV awards. Kayne believed that his friend Beyoncè was more deserving of the accolade and marched on stage to say as much in a tasteless rant. The outpouring of support Taylor received, the way she dealt with it and the subsequent coverage only served to increase her profile. Again everything happens for a reason! To date Taylor’s success has been extraordinary. From that initial home CD she has now amassed sales well in excess of 25 million albums, 75 million song downloads and with total career earnings of more than $170 million. Her ability to transpose feelings and fleeting feelings into music has drawn comparisons to Janis Ian but Taylor does it in a more approachable way. Besides love and romance, the subject of her writing includes parent-child relationships, alienation, friendships, and career ambitions. The songs talk to the very heart of teenage anxiety and with her good looks and genuine down home, country girl appeal, it is little wonder that she has become such a superstar. She has been described as the best ‘people person’ since Bill Clinton who would have succeeded no matter what field she chose. Her millions of fans are simply pleased that she articulated the hopes, heartache and anxieties of their generation. Taylor Swift’s ‘Red’ tour includes 64 dates across North America before arriving in Australia in December this year. simon Bennett Husband, father, triathlete, community charity worker and lawyer. With a pharmacist father and a mother who was a nurse, it is safe to presume that a medical career was at short odds for Simon Bennett. “I was at TSS in grade 10 and a pilot course was started in legal studies. I loved it because it really appealed to the logical side of my brain.” Sitting in his office at OMB Solicitors in Southport, Simon is that rare person who looks forward every day to going to work and dealing with the issues that cross his desk. “I’m someone who loves to know the answer to questions and is endlessly curious so the further I go in law the more I realise how little I know.” After school he attended Bond University in 1989 on a part Rugby scholarship. “I don’t consider myself to be a brilliant sportsman but I played many different sports and picked up most of them fairly easily. My position was fullback in Rugby Union at school which I played for Bond Uni and then also first grade. After I graduated from Bond I completed a post-graduate degree at QUT. My first job as a lawyer was with Robert Lehn who was my mentor. He was fantastic to work with because he taught me so much and was so encouraging.” From there Simon joined O’Keefe & Mahoney which in turn progressed to his becoming a partner in 1999 and OMB was born. “My area is property law and I’m recognised by the Law Society of Queensland as an Accredited Specialist in Property Law. It was an incredibly tough thing to pass. Out of the 70 lawyers who sat for the exams only 14 passed.” All work and no play make Simon a dull boy and away from work he has taken up triathlon. “I do like most sports and because my father was doing triathlons I had a go. The fact that if you get bored doing one aspect of training you can switch to another really appeals to me.” As a self declared ‘A’ type personality he threw himself into the training and competition and was rewarded by making the Australian
age team in the 35-39 years section. “In all I was selected for four world titles in Europe and North America including the one that gave me the greatest pride which was competing on the Gold Coast.” Another aspect of Simon’s multi-dimensional life is his work as the chairman of the Gold Coast Community Fund. “After my wife Kate and I were named as Gold Coast Ambassadors, I realised that the contacts we had could be put to good use. My life has been very fortunate and what I really love about the GCCF is that the people, charities or organisations that benefit are all local. More than 99% of every dollar we raise is given back to the community. In the past 10 years that’s more than $1.2 million and with an outstanding committee that is something that gives us all great pride.” For all those achievements the one thing that is sacrosanct is time with the family. “A normal day starts for me at 5am when I train. Then work begins at 7.30am and the sole focus is dealing with all that work entails. However when I go home that’s family time and nothing is more important. My children Zoe and Bailey with Kate are everything and on the weekends that’s my time with them.” Then, interview done, it was time to head to the pool for some training.. Anything worth doing is worth doing well and Simon does it better than most.

Talia Munro The Element of fusing fashion and functionality. Tall, blonde and beautiful, Talia Munro has the stature and presence to be noticed in any crowd. That presence is even more pronounced when she is draped in the creations she has chosen in stocking her Element boutiques at Marina Mirage and The Oracle. Born and bred on the Gold Coast, Talia grew up surrounded by fashion as a child. Her mother Jan was the catalyst behind her immersion into the business having five stores on the Gold Coast including manufacturing her own label for over 20 years. “Mum was a terrific mentor because I learnt all aspects of the industry from a very young age including working in the stores on weekends and then during school holidays. She taught me many aspects of retail operation. Out of all of those the two most significant are that it is important to work with people with whom you have a good rapport and you must enjoy what you do.” The notion that ‘Element’ is a family business has helped the growth of Element because mother and daughter support each other on many levels. “She and I have very similar taste, so it makes the decisions we are making regarding stocking certain lines and the running of the business itself very easy. We complement each other on so many different aspects that it gives us freedom when we travel separately knowing the business has been left in good hands.” The Element story began in 2002 when Talia, then 22 years old, opened her first store. “It was my most memorable fashion moment and the beginning of the Element name. It was in the Aria building in Broadbeach with our own cafe/bar adjoining the fashion store. We had great events and parades in those days and I was so proud to be running my own successful businesses.” In a business subject to change in styles and direction and challenge of the online world, Talia has managed to forge successful and ongoing fashion outlets that are a testament to her ability to stock

what the public wants. “When buying for the stores I pick pieces that I personally love and would wear but am always conscious of how it will merchandise. I think we have maintained our edge with such a lengthy trading history by keeping to our own style. Of course we have very loyal customers who we are very mindful of and always strive to provide a wide range of labels for all ages. The stores deal with tourists and locals alike so the feedback we get is always taken on board so we can continue to give our customers what they want.” In her shops surrounded by so many stunning designs Talia does profess to have a particular favourite. “Our own label ‘Elila’, which is named after my beautiful three year old daughter, is the most popular and best selling label we have. ‘Twin Set’ by Simona Barberi from Italy is another with great cut and style. As for jeans, the best on the market at the moment would have to be ‘Robins’ jeans and the new reversible ‘Blu-Lab’ jeans, both from L.A. Women will be amazed at how good they can look in these well cut jeans.” For someone so constantly immersed in the day to day fashion world what advice does Talia have for those seeking style advice? “I think it’s important for people to understand their body shape and to develop your own individual look. Behind the brand Anthony Cuthbertson’s talent has taken him on a fashion house tour from the UK to Australia. Now Creative Director at David Lawrence, Anthony divulges his inspiration, process to production and the significance of luxury. Your resume holds the names of some of the world’s most prominent fashion houses; at which do you believe you grew the most as a designer? I think I grew the most as a designer at Max Mara and Daks as I did so much travel with those brands. It inspired me to create specifically for the runway in Milan. As a UK native, how does designing for an Australian audience differ to that of European clientele? The weather is a key difference, I need to create collections that have distinctive seasonal looks but are appropriate for the lifestyle. The light in Australia is so bright so I need to really focus on the use of colour. Which architectural style has played the biggest role in your design inspiration? My work is really inspired by clean lines and sculptural shapes; the Bauhaus movement has really been a major influence. The work of Harry Seidler since I have moved to Australia has been on my mind when designing the David Lawrence collections. How have you evolved David Lawrence as Creative Director? I have really taken the brand and customer on a journey in the past couple of years as well as developing a DL signature and brand values that are a focus for the future. I have also concentrated on delivering a lifestyle for the customer that is modern and directional. Luxury and quality is important to David Lawrence. The DL Initiative collaboration with Fitted for Work is set to aid many disadvantaged women in dressing appropriately for job interviews. What drove this partnership? I was really passionate about this collaboration because David Lawrence is a brand for all women and we wanted to support such a great project. This was the perfect collaboration and gave me the opportunity to design such a great versatile dress for all women. Why do you believe a little black dress can go such a long way 24

for The DL Initiative? The black dress is the perfect item in any woman’s wardrobe that you can dress up or down and accessorise with pops of colour for work or social. The DL black dress with its signature seaming detailing really is a dress to empower all women. What motivated the launch of DL Atelier? I really wanted to create a new luxury level to the DL offer and create investment items that can be mixed back with the main line collection. Atelier is my laboratory of new ideas and a collection that is very fashion forward in its mood and styling. Who is the DL Atelier woman? The DL Atelier woman understands fashion. She loves luxurious, high quality fabrics and cuts. The collection is really about attitude and pushing the boundaries, a woman with confidence. I am very inspired by the style of Carine Roitfeld. The fabrics used in DL Atelier are particularly exquisite. How do you choose your materials? I start the process in Paris at Première Vision. This gives me great insight into what is new in the market. Then I take vintage fabrics and have them redeveloped to create modern textiles to be used in my collections. I also look at the touch and feel of the materials to create items that are luxury. What Spring styles are too fabulous to go without? I would have to say the dress as it’s also one of my favourite items to design in the collection. This season I have created a range of styles that are bold and confident in amazing digital prints as well as new shapes such as the neoprene bonded wasp dress. When you are not at the helm of David Lawrence, what is your perfect day off? I never really stop; even on my day off I am taking in everything around me. In galleries, restaurants, even in the park which is a great place to rest the brain and relax. If the sun is shining then it’s the perfect day!

Stem CELLS Dr. John Flynn talks about Stem Cells and their use in treating different problems.
I
t’s hard to imagine that within the walls of Dr. John Flynn’s Cosmedic and Skin Clinic in Southport a quiet revolution in treatment is occurring with the use of stem cells. “Firstly I have to explain that there are two major sources of adult stem cells. Those which are from bone marrow and are hard to get to and those extracted from your own fatty tissue, usually your stomach or buttocks. It is important to stress that these are your own stem cells not cells from someone else. Also it is important to realise these are not embryonic cells from an outside source. We have the ability at Cosmedic to utilise those stem cells harvested from your fatty tissue, or adipose. After the fat is extracted we concentrate, process and activate the stem cells and then inject the areas that need help,” explains Dr. Flynn. For most people that area would be joints – knees, ankles, shoulders – that have been affected by arthritis or wear and tear. “The joint is housed in a protective sac which tends to naturally limit the normal repair capacity, and the injected stem cells are hugely anti-inflammatory which leads to less pain and a much better life. It is better to repair the soft tissue in a joint but the ramifications of the ongoing research mean that there will be enormous benefits for people with MS or diabetes in the future. There is also the ability to inject stem cells directly into the heart of a heart attack survivor to help repair the heart muscle. While stem cell treatment has been around for more than 50 years, the understanding and benefits of the treatment are becoming increasingly better understood and utilised.” The most common application for stem cell use has been in degenerative knee joints and animal studies and the limited human trials conducted show a remarkable potential for pain relief and return to mobility. Stem cells however do not replace the need for joint surgery and they do not correct for instability and so they need to be utilised in conjunction with orthopaedic supervision and a good physio-therapy rehabilitation programme. The work at the Southport Day Hospital has been done in collaboration with Australia’s foremost stem cell scientist Prof. Richard Boyd of Monash University. A Stem Cell laboratory has been established at Cosmedic and Skin Clinic to harvest, cultivate and deliver stem cells in a variety of medical indications for use in various treatments. As with all discoveries there are other uses for the harvested stem cells. “On the cosmetic side the use can include replacing breast tissue after cancer treatment or in breast enhancement. PRP (Platelet Rich Plasma) is added to the stem cells producing a wonderful healing enhancer meaning the recovery time for patients is much faster. The benefit of combining the two is that the combination is so much better than each element on its own. When used after a laser treatment or a face lift, the treatment can lead to enhancement in collagen production, circulation and general physiology which in turn means a quicker recovery.” The real advantage of stems cells is that they reproduce into the different types of damaged tissue helping to heal and stimulate the 38

repair process after injury. The stem cells from the body’s own fat cells are inactive and not naturally available by the body for repair in this situation. The harvest process is in effect a wakening from hibernation for the cells. In the case of the most commonly treated joint, the knee, the treatments can be beneficial in delaying the more severe treatments up to and including knee replacements. “We’ve found that the best results with knees are when we have a series of treatments rather than injecting it all at once.” A recognised pioneer in the field of using adult stem cells in aesthetic medicine, Dr. John Flynn is enthused about the uses for this increasingly rich vein of medicine “The field of regenerative medicine and techniques using the patient’s own stem cells is an area of great promise with many effective applications,” he says. “Besides knees and other joints, inflammatory conditions such as acne and dermatitis can also be treated. Whilst isolating the stem cells takes just a few short hours, rigorous safety checking of the material takes another several days. At this point, the cells can be cryopreserved – or frozen – to be used by the patient sometime in the future, or reinjected into the patient immediately.” The cells Dr Flynn extracts are referred to as adipose-derived regenerative cells (ADRCs). Baked ricotta cheesecake 125g amaretti biscuits 125g digestive or wholewheat biscuits 125g butter, melted and cooled 400g strawberries, hulled and halved, to serve For the filling 4 eggs 115g (½ cup) caster sugar 600g ricotta cheese 160g (2⁄3 cup) mascarpone cheese 50g (1⁄3 cup) plain flour grated zest 1 lemon, plus squeeze of juice Preheat the oven to 180°C. Lightly grease a 23cm springform cake tin and line with baking paper. Put the amaretti and the digestive biscuits in a large sealable bag and crush with a rolling pin until fine crumbs. Tip into a bowl, add the butter and mix until all the crumbs are coated. Transfer to the prepared tin and spread evenly over the base. Bake for 10 minutes. Remove from the oven and allow to cool. Reduce the oven temperature to 160°C. To make the filling, lightly beat the eggs and sugar until the sugar has dissolved. Add the ricotta, mascarpone, flour and lemon zest and squeeze of juice and continue beating until well combined. Pour the filling over the biscuit base. Bake for 45 minutes, or until just set with a slight wobble in the middle. Switch off the oven, open the door a little and leave the cheesecake to cool completely. Spoon strawberries over the top before serving. Serves 8-10.
Pear, speck and radicchio salad If you happen to have chestnut honey in your pantry (and who doesn’t?), this is the time to use it. Otherwise, ordinary runny honey is fine. 2 pears, cut into wedges and cored juice ½ lemon 1 shallot, finely sliced 1 tablespoon honey 2 tablespoons extra virgin olive oil, plus extra to serve 1 head radicchio, broken into leaves 12 slices speck 250g goat’s cheese, crumbled or broken into chunks 50g (½ cup) roasted walnuts In a large bowl toss the pears with the lemon juice. Mix together the shallot, honey and olive oil. Add to the pears with some sea salt and gently combine. Toss in the radicchio and transfer to a large platter. Drape the speck over the salad and dot with the goat’s cheese. Crush the walnuts over the top with your hands and drizzle with olive oil. Serves 4. labelmagazine.com.au

Chicken, green olives, pine nuts and garlic 2 tablespoons olive oil 4 chicken marylands, thighs and drumsticks separated 10 shallots, peeled 4 garlic cloves, sliced 2 bay leaves 160ml (2⁄3 cup) dry white wine 1 tablespoon white wine vinegar 1 teaspoon soft brown sugar 310ml chicken stock 90g (½ cup) green olives 50g (1⁄3 cup) toasted pine nuts handful flat-leaf parsley, roughly chopped Heat the olive oil in a large frying pan over medium-high heat. Season the chicken with sea salt and freshly ground black pepper and brown the pieces all over for 15 minutes, or until golden brown. Add the shallots and cook for 2–3 minutes, turning them occasionally until they start taking on some colour. Add the garlic, bay leaves and wine. Let bubble for a few minutes and scrape the bottom of the pan to collect up the flavours. Pour in the vinegar, sugar, stock and olives. Bring to the boil then partially cover and simmer for 45 minutes, or until the chicken is very tender. Scatter over the pine nuts and parsley before serving. Serves 4.

pring has sprung and after Billy and I enjoyed a wonderful break in America we are back more enthused than ever about what Glass Restaurant + Lounge Bar has to offer. Our new menu by executive chef David Pommier has been warmly received by regulars and new diners alike. Particular dishes to receive the biggest raves have been the Four Pin Lamb Rack with chat potatoes and grilled zucchini. Another has been the crispy skin ‘Chinook’ Salmon Fillet served with warm Jerusalem artichoke and truffle tartufo salad. The vegetarian offering of Zucchini Flowers stuffed with Meredith Goat’s Cheese has also proved to be a real winner. Of course one of these columns would not be complete without a bit of name dropping. All of Australia is in love with Pink. The hugely popular singer snuck in for a quiet dinner with husband Carey Hart and thankfully was left to enjoy the night without being interrupted by fans. She must have said some complimentary things because a large number of her crew also came down to enjoy some down time with us. One thing that did become extremely popular during winter was our $40 two course lunch menu special. It is the perfect solution for those wanting to have a quick bite in fantastic surroundings. The options are plentiful and if you want an entree or main or main and dessert there are a lot of choices there to tempt you. Another innovation that is attracting the crowds is our Sunday afternoon relaxathon. With perfect Gold Coast spring weather, live music and great drinks and the tapas selections, Glass is becoming a favourite 52

I have three suggestions for those of you like to discover new things – try the Chachi Sangria, the Kiwi Chilli or maybe the Mango Margarita. I may be biased but they are quite truly delicious. The wonderful Matt Hollywood, who is entertainment personified, performed at Glass for the Shave Shop Australia Awards night. He is such a knockout of an entertainer that we are looking to stage more shows with the super talented Matt in the next few months. As ever Glass has hosted many functions of late but one that did stand out was Red for Ryven. Ryven Harris is a 5 month old Gold Coast boy who currently needs a bone marrow transplant to survive and the whole TSS community have got behind this cause as Ryven’s parents are both TSS Teachers. It’s always great to be a part of such wonderful community support. Everyone loves to hear good news about themselves and the team at Glass Restaurant + Lounge Bar is no different. We are over the moon about a cracker of a review on the Australian Good Food Guide website, agfg.com.au. It makes all the hard work worthwhile when you get such positive feedback. • Potato Head: It’s all about food, music, art and fashion and blending daytime beach party, upscale restaurant, and sophisticated nightlife. There are three restaurants so there is truly something for all.
• Bodyworks Day Spa: Has a great reputation built on the delivery of high standard massages and beauty treatments with premium customer service and traditional Indonesian healing techniques.
• Sea Circus: It’s neither a circus nor on the sea but this unique eatery is a combination coffee shop, restaurant, bar and den. The owner is Australian and takes his coffee very, very seriously.

ou need to keep food on the table, a roof over your head, pay the rent or mortgage plus find money for school fees, insurance, registration and the list goes on. Your health and your ability to earn an income are arguably a person’s greatest assets. What would you do if you lost the ability to earn an income? Your ability to work and earn an income is what keeps most of us going. If you are injured at work, a place that should be safe, then you may not be able to provide for yourself and your family. Traditionally, injuries at work have been physical injuries. We’ve all heard about these – broken bones, soft tissue injuries, sprains and strains. With everyone’s lives becoming busier and more stressful we are now seeing more and more the rise of psychological injuries in the workplace. Employers must establish and maintain a working environment that is safe and without risks to health. This includes the promotion and maintenance of the highest degree of physical, mental and social well-being of all workers. An employer owes a statutory general duty to cover both physical and mental health as well as safety. The rise in claims for psychological injuries seems to be emanating from conflicts with supervisors and peers. Among the many reasons for these conflicts are bullying and harassment, poor management practices, violence and threats of
violence in the workplace, lack of organisational support, poorly managed organisational change and a poor physical workplace such as over-crowding, excessive noise and poor ergonomics. If you are feeling stressed, mentally unwell, harassed or bullied, tell your employer. Give them the opportunity to make changes in the workplace. If your doctor gives you time off work as a result of the above tell your employer why you were on sick leave. If your employer doesn’t know what is going on then they cannot make changes. If your employer is on notice that your health is affected by what is going on in the workplace and they don’t make changes then they may be liable to compensate you for your injuries. If you have suffered an injury in the workplace, be it a physical injury or a psychological injury, you must report it to your employer immediately as you may lose the right to claim or make it an unnecessarily complicated process. If you are an employer and any of the above is occurring in your workplace, you risk statutory fines, possible imprisonment and common law claims from injured employees. You need to make changes. Whether you are an employer or an employee and you need advice on any of the above or if you need help in defending or making a claim, be sure to call OMB Solicitors.
