Earning Sandra a 1996 Golden Globe Awards nomination for Best Performance by an Actress in a Motion Picture, While You Were Sleeping was the peak of the nineties romantic comedy period. Playing fare token collector Lucy Moderatz, Sandra’s character has a crush on regular passenger Peter Callaghan. On Christmas day, Lucy saves Peter from an oncoming train after he was pushed onto the tracks by muggers and Peter falls into a coma. When he wakes up, Lucy has embedded herself into his family as his fiancée.
Margaret Tate is a publishing executive ruling with an iron fist over her staff, until she discovers she is about to be deported to Canada. Promising her assistant Andrew Paxton (played by Ryan Reynolds) a job as an editor, Sandra’s character persuades him to marry her. But an immigration agent is suspicious of this sudden engagement and Margaret must travel to Alaska to visit Andrew’s family to prove her case. It’s there she finds she loves more than being Andrew’s boss.
Special Agent Gracie Hart is demoted to a desk job after saving a mob boss from choking and consequently causes a fellow FBI agent to get shot. In an effort to redeem herself, Sandra’s character must enter the Miss United States pageant as Miss New Jersey to combat a bomb threat. Unaccustomed to the grooming and deportment of pageant life, Gracie relies on her bold personality and tom boy skills to win the judges over, including an impressive glass harp number and some solid self-defence skills.
The 2009 biographical film was based on a book by Michael Lewis, The Blind Side: Evolution of a Game. The movie chronicles Michael Oher, who was drafted by the Baltimore Ravens, as he evolves from an impoverished minor to being adopted by Sandra’s character Leigh Anne Tuohy and her husband Sean (Tim McGraw). A truly beautiful story, the role saw Sandra win the Academy Award for Best Actress, the Screen Actors Guild Award for Outstanding Peformance by a Female Actor in a Leading Role and the Golden Globe Award for Best Actress.
There is a difference between executive producing and producing. Producing, you have no life for two years. You take everything personally, you want to kill everyone, you're depressed and angry, and then in the end you feel excited when it actually works. Sandra plays Lucy Kelson in a romantic comedy she produced, starring alongside Hugh Grant who plays George Wade. A dowdy, anxious and highly intelligent lawyer specialising in heritage preservation and environmental law, she fends off Hugh’s character George’s attempt at redeveloping Coney Island community centre. Playboy George hires Lucy who quickly commands all aspects of his life and finally realises she needs to draw some boundaries. But leaving is not that easy, as feelings and bad habits get in the way.
This flick is the height of comedic Sandra, as she plays FBI Special Agent Sarah Ashburn who partners with Boston Detective Shannon Mullins, played by Melissa McCarthy. The chemistry between the two makes for a hysterical watch as they take down a drug ring and several corrupt agents, while Melissa’s character manages to give Sandra’s a seductive makeover along the way. The box office felt the same way and The Heat grossed $229 million, while Sandra was nominated for a Critics’ Choice Movie Award for Best Performance by an Actress in a Comedy Movie.

Sandra is joined by George Clooney to star as American astronauts marooned in outer space after their shuttle is destroyed mid-orbit. It took more than three years to create the visual effects necessary to fill 80 minutes of the film, which sees George’s character Matt Kowalski give his life for Dr Ryan Stone (Sandra). Assuming she’s the sole survivor in space, Ryan makes risky decisions to ensure her survival and manages to land safely back on earth, with a few bumps and emotional bruises.

IME Fragrance
1
What inspired you to launch IME? About 10 years ago, I was working in television as a Production Manager and at the time I could feel a change was happening, and not in a good way. I’d just finished working on a production feeling deflated and uninspired. My husband and I had a three-month European holiday of a lifetime planned, and it was here that the idea for IME was sparked when we were walking through the Ufizzi Gallery in Florence. I realised that all the beautiful paintings on the walls were of women that had itty-bitty titties, pot-bellies and curvy hips - these were the Muses for the most famous painters of all time. I wanted women (ok, me) to embrace their beauty and passion for life again and I thought the best way to do that was to inspire a change; the Muse idea just came from that. Fast forward five years to 2012, skipping a burnout/nervous breakdown, leaving TV, becoming a reflexologist, moving to Illawarra and the birth of our first bub, the idea surprisingly bubbled to the surface again. Having been a natural therapist for most of this time now, I knew the impact that sensory stimulation can have on people’s lives. The sense of smell (via the olfactory nerve) is directly linked to the part of the brain that stores our memories and emotions, therefore stimulating an emotional response can affect moods.

What goes into the traditional perfumes we would buy at a department store that we need to be more aware of? Most mass-market fragrances that you see in department stores will still contain ingredients such as colours, phthalates, parabens, artificial and animal ingredients. No different to those harsh harmful chemicals you find in [many] skincare and cosmetic products. These are

never going to be listed on the package as, legally, it’s not a requirement, but I would definitely be steering clear of most celebrity perfumes or cheap massproduced labels you find everywhere.

What are IME perfumes made from? I wanted to keep things as simple as possible with our formulations because essentially, it's going on our body, and then into our body. We only use 100% botanical extracts and essential oils sourced from around the world for the scent part of the fragrance and a pure alcohol (grain) that we source locally from a third generation family run Australian company. The biggest ingredient of a perfume is the alcohol. Because this makes up the bulk of a fragrance, minimum 80-85% - making sure this was as pure and clean as possible was important. We use an un-denatured pure alcohol which means there hasn’t been any toxic chemicals added to it to render it undrinkable or had solvents added to help preserve and solubilise the scent part of the final fragrance. Un-denatured is simply a botanical material (cane, grape or grain) that has gone through several processes of fermentation and steam distillation. By keeping it clean you eliminate other chemicals such as phthalates, parabens, adulterants and artificial dyes that you really should avoid putting on your skin.

What process did you follow to become certified 100% natural by the Natural Perfumers Guild? The Guild is the only international organisation dedicated to 100% natural perfume. Their standards for certification are the highest in the world regarding the use of natural ingredients, I’m so proud of this certification. President of the Guild Anya McCoy, a professional

natural perfumer for nearly 30 years, said we met the submittal requirements in an exemplary manner, much better than most! In order to get certified I had to submit samples of all our perfumes, a list of all the botanical ingredients used in the perfumes, and a list of the names of the suppliers we use. This information was then reviewed by the NPG Review Committee who used their years of experience in sourcing, vetting materials, and evaluating perfumes to make a decision on the perfumes and whether we met the requirements of what it means to be ‘natural’ in order to meet certification standards. And we did!

How do you construct fragrances? All perfumes are constructed with three distinct layers. They are a carefully constructed set of layers known as notes. Top (head) notes - are your initial impression of a perfume, they dissipate quickly and are usually made of light, fresh and uplifting ingredients, like lemon, orange, pink grapefruit and peppermint. Middle (heart) notes - make up the body of the fragrance, these notes emerge as the top notes fade and are usually floral, warm and soft notes. They also soften the first impression of the base notes as they emerge, like lavender, geranium, chamomile and clove.
Base (bottom) notes - are rich and deep and form a strong foundation for the perfume layers to be built upon. They last the longest and help ‘fix’ the lighter notes, extending their evaporation process. The middle and base notes form the main fragrance of each perfume. Given that we don’t use a synthetic fixative to hold the fragrance, these notes are integral to the longevity of a fragrance also, like sandalwood, patchouli, vanilla and cedarwood.

BOW TIE RENAISSANCE Founder of Why Knot Ties Vince gives Label an insight into breaking gender boundaries with his fashion forward accessories brand.
What inspired you to establish Why Knot Ties? I would love to give some awe-inspiring story of the label’s origin. However, Why Knot started on a whim and was a combination of a few thoughts and ideas. I have always been interested in the psychology behind fashion and how looking good (or even thinking you’re looking good) can give someone the confidence to tackle the day with an extra skip in their step and be a better version of themselves. Furthermore, I found it kind of crazy how bow ties had been pigeonholed into a formal accessory for guys. And a boring one at that. Why is it important to breakdown bow tie gender boundaries? Historically, gender has been a restrictive concept. Gender has decided what job you can have, your level of education, your salary, if you can vote, and definitely what you can and cannot wear. While we’re trying to mend a lot of burned bridges and breaking down the rest of those boundaries, like fashion, is symbolically so important. We are using the bow tie as a vessel for breaking down these traditional barriers, seeing you can dress up or down with it, and as an accessory is low-key extremely versatile.

Tell us about your subscription service. Why should we look to bow ties more frequently as an accessory? The Why Knot membership service is the perfect way to keep your wardrobe looking fresh. We have plenty of different subscription formats. So, if getting a new bow tie every month is a little over the top, then your membership can deliver less frequently; It is up to you. Considering how versatile our products are, you can easily find opportunities to add a bow tie to your collection. Hell, if you’re like me, you seemingly have a wedding or event every month. What ties are trending this season? Colour! This season is all about colour and patterns and I love it. You can really show your personal flair to your wardrobe. Along with the addition of colour, retro is back. The 90s look, in particular, is making a comeback and has been used from the catwalk all the way to a Bruno Mars film clip. Basically, we have an excuse to dust off the overalls and chokers again! How do you select your fabric and patterns? When it comes to fabric and patterns, I like to include inspiration from my travels and places that I have been. I was lucky

enough to spend a few years working in the Caribbean and Central America (tough life, I know), and travelling I was able to embrace colours, styles and patterns from these places. As the label grows, I will look to include a range of different styles that are inspired by locations around the globe. Tell us how we can create custom bow ties online? With our custom designs, you can submit an enquiry or even an image of what you want. All you have to do is fill out the form on our website and we can work together to get your perfect bow tie designed. These are great for a special occasion or a gift. Many women have rocked a bow tie in their time. Who wore your favourite red carpet bow tie look? In my biased opinion, a woman in a bow tie is super sexy. The boss-lady look is an absolute winner. Diane Kruger at the Inglorious Basterds premiere was bigger than the film; she rocked a bow tie with suspenders and cut-off sleeves and looked awesome. Rihanna has also been known to rock out the bow tie tux look. Lastly, Janelle Monae also has a bow tie in her regular wardrobe and it is awesome.

MLM LABEL Label meets MLM Label founder Julia to discuss the brand’s evolution, winter collection and her advice for emerging designers. How has MLM Label evolved since its inception? Wow, this year it would have been 10 years since the beginning of MLM LABEL. I created the original brand alongside Fashion Agency at the time. It was originally a creative outlet and new challenge (I even coded the first website myself) with no career expectations. To this day, the brand has expanded to 150 Australians stockists, rolled out to the USA, Japan and Asia including numerous major department stores worldwide. Most importantly countless Media followers and loyal customers to the label.

What piece of advice do you deem most relevant to fledgling designers? You need to be in it for the love, wear many different hats and understand all aspects of your business includes the mundane things, which can matter the most!
Who is the MLM Label woman? She is feminine, relaxed, enjoyable, sophisticated and savvy.
What has been your biggest challenge as a businesswoman in retail and how have you overcome it? Aside for having to wear several hats as business owner, creative director, a boss, a mentor, a full-time mother, the biggest challenge is listening out to our customer and providing the best suited design, concept or even colour. Providing the best possible service to each and every
Where do you go to recharge your design drive? Time out is the most important thing for me, when I do get the chance to recharge, I either embrace some personal downtime or do something special with my beautiful little family such as travel or a simple outing.

What inspired you to create your own skincare range? In our lives we were reducing our toxic load and switching to a more natural lifestyle and Phoebe was pregnant at the time. Aaron whipped up a sensational stretchmark/belly cream and from that moment we were hooked and became weekend mix-a-holics. We were a little audacious but we saw a gap where more high quality, affordable natural skincare was needed and we went for it.

What was your first product and what process did you go through to get it into production? Our first product never actually went into production - it was a belly balm for Phoebe’s growing pregnant belly. But that belly balm did morph into the Anti Ageing and Repair Cream, which was our first product which actually made it into the big wide world. We used a contract manufacturer to help us create and manufacture the first cream, but these days we do everything in house so we can oversee every single detail and make sure everything is absolutely perfect.

What has been your biggest challenge as a beauty entrepreneur and how have you overcome it? Getting noticed. It is without doubt one of the most competitive markets in the world. A new brand seems to pop up every day. We overcame it by being the tortoise (slow and steady!) and treating people the way we would expect to be treated.

We keep our business lean and costs down, which means were able to keep working away at building Happy Skincare for years before we became profitable.

What is your skincare philosophy? Our philosophy is natural, safe, vegan, cruelty-free, Australian made products that help your skin. Our star ingredients would be MSM (a form of mineral sulphur) and our native Australian extracts. We are now getting to use great Australian flora like Emu Apple, Quandong, Illawarra Flame Tree and Snowflower, which is very exciting.

What really goes into your manicure? Miss Frankie founder Kara talks to Label about creating her cruelty-free, vegan and five-free range of at-home nail care.
POLISH Perfection Kara, tell us about your industry background. What inspired you to create Miss Frankie? I previously owned French Pink, a nail salon in Melbourne’s CBD, for 11 years. I absolutely loved my salon and had amazing clients, but in the back of my mind I’d always thought about doing something a bit different and creating my own brand. Working with nail polish every day, I knew the products well and noticed there was a gap in the market. When my lease was up last year, I decided it was time to take the leap and create Miss Frankie. How did your work as a manicurist and salon owner educate you in what customers would want to see in an athome range? After 11 years of manicuring and only ever doing natural nails (never gel/shellac or acrylics), I noticed more of my clients wanting a non-toxic polish that still delivered salon-quality results. Ease of application was also important, so I chose a brush design that was flat and thicker to ensure an even, streak-free coverage. What hidden nasties are in nail polishes and how can these affect our health? The main ones to watch out for are dibutyl phthalate (DBP), formaldehyde and toluene. The toxicity of these ingredients is debated, but they have been linked to hormone and reproductive

issues, allergic reactions and severe skin irritations. Why take the chance when there are alternative options that are so much better and safer for your nails? Why was being vegan, five-free and cruelty-free important to you? I wanted to create a brand that truly believes in what they preach. There is no need to have nasty chemicals in beauty products and it was important for me to show my customers that five-free doesn’t have to compromise on quality. I was also fortunate enough to find a great manufacturer in Australia that shares the same values and could produce a vegan and cruelty-free product. What is the story behind the Miss Frankie colour palette? With my first shade release, I opted for popular neutral colours that make achieving the perfect at-home mani super easy. I also wanted to include a couple of on-trend seasonal colours, such as Perfect Stranger, which is a deep, moody grey, and Pool Boy, an electric blue. When summer came around I moved away from the neutral palette and released three bright shades: Send Hearts Racing, On Vacay and One Night Stand. I love choosing the colours and names for the polishes – they need to speak to my customers and be a bit fun and playful.

What nail trends should we look out for this season? Deep cherry black, dusty rose and rich purple. I admire nail art, but I’m very much about keeping nails classic and sophisticated with a good, simple manicure. What has been your biggest lesson learnt in transitioning from servicing clients to product design? I think one of my biggest lessons was realising you can apply your skills in so many different ways. I’ve taken the knowledge I’ve gained from running a business and listening to my customers and used that to create a brand I am so incredibly proud of. Having a genuine passion and love for what you do will always shine through. I lost this in my previous business, but I now feel on the right path with Miss Frankie. Who would you be most excited to see wearing Miss Frankie? Honestly, I am genuinely excited when one of the mums at school drop-off is wearing Miss Frankie. But dreaming big, I would love to see Meghan Markle wearing "I Said Yes" – a soft, sheer pink – the perfect bridal colour.

REJUVENATE with RESIBO
E
welina, founder of Polish skincare sensation Resibo has struggled with acne for years, until a tip came in from the Asian beauty market. Cleansing with oils has been practised since ancient times but only recently has the routine been adopted in the west. “I thought this method could work for me,” Ewelina said. “I couldn’t then find any cleansing oils on the European market and it was too hard to order from Asia.” This is when Resibo was born. “For more than a year I was working on an ideal recipe - I blended over 60 oils and essential oils in different proportions,” Ewelina said. “When I thought I found the perfect one, I asked my sister to try it on herself as I wondered if it would also work for others.” An instant fan, Ewelina’s sister was delighted with her results and the focus group was expanded to her network of friends and family. “After a few months those people started to come back to me

and were actually willing to pay for more,” Ewelina said. “That was a signal for me that my idea might become a business; I could create a product that was missing on the market,” she said. “Now, Cleansing Oil is the bestseller of Resibo.”
“Eco-friendly also means some kind of minimalism,” she said. “Less products bought, but of the best quality; using the product to the very end (our airless tubes help that) and the possibility to reuse the box or to recycle it.”
Resibo was created out of love for nature and a rebellion against the hidden nasties in common supermarket shelf products. “From the beginning my goal was that our products were as natural as possible but also safe,” Ewelina said. Using certified natural preservatives, the 100% vegan and cruelty-free formulas are also PETA certified. “It is very important for me Resibo skincare was vegan, as I see no reason that we feel prettier at the expense of animals,” Ewelina said.
Ewelina believes high quality natural cosmetics offer more active ingredients, making them more effective. “Very often people who switch to natural care notice a bit of skin irritation at first, but as it passes after couple of days they can see how the skin condition improves significantly,” Ewelina said. “The initial irritation is just the reaction to such a concentration of active ingredients.”
“The product packaging is made by easily biodegradable material and there are no metal parts,” Ewelina said. “Additionally, the outer tube can be reused in many ways as for example a pencil holder, brush holder or container for cosmetic pads.”

As the cooler months arrive, Ewelina knows hydration is key. “In winter I try to nourish my skin more and protect it against wind and cold temperatures,” Ewelina said. “I recommend first of all our nourishing cream – in winter it will help many people for day as well as for nighttime, so will the nourishing body lotion,” she said. Recommending the Smoothing Serum for day and night use, Ewelina suggests mixing it in with your favourite face cream or foundation.

OO MOO The Wine Bar + Grill restaurant group is bringing greater texture to its renowned steak-led offering with the launch of its new restaurant menu. Hailing the changes as evolutionary rather than revolutionary, owner Steven Adams (pictured with his wife and Moo Moo Restaurant group co-owner, Autumn Adams) collaborated with group executive chef Trent Robson to bring more balance to the offering by tapping into foodie trends, embracing seasonal changes and meeting client tastes. Moo Moo regulars will notice that the specialty steak selection remains untouched – the result of its refinement just a few months ago. “We are extremely happy with the performance of the beef dishes – the consistency is there so there was no need for change,” Steven said. He is also thrilled to note that supplier, Jack’s Creek – a Wagyu and Black Angus specialist based in Gunnedah – was recently named the world’s best beef producer in the World Steak Challenge for the second consecutive year. “It demonstrates that we actively choose the best beef product that is available for our customers,” Steven said. However, keen that Moo Moo is not labelled as purely a steak restaurant, Steven and Trent have put great effort

into creating extraordinary non-beef options as well as lighter dishes with female clients in mind for this new menu. Steven is particularly excited about the Moo Moo Spicy Chicken Hot Pot, a fresh arrival on the venue’s increasingly popular list of shared mains. Saluting the approach of cooler weather and a surge in hot pot popularity, the dish soaks a whole chicken and vegetables in a delicious blend of apple cider, chilli and ginger. “It is something quite different for us, but with the hot pot on trend we felt it was a fantastic way to enhance our shared mains offering, which continues to work extremely well for us,” Steven said. With fresh seafood delivered daily, new lighter options include the Yellowtail Kingfish Sashimi accompanied by samphire, okra, chickpea miso and sake vinaigrette as a cold entrée. Bringing even more variety to the hot entrée selections is the Hervey Bay Half Shell Scallops with dukkah mayonnaise, coleslaw and sausage pork cheek or butifarra (pictured). An addition to the mains menu is the Crispy Wagyu Brisket Salad, proving a classic alternative for the light eater, while working in the house specialty.

The result is a heady blend of contrasting textures and flavours. “Winter or summer, it’s always good to have a salad available and this dish combines the richness of the beef with a crisp salad and riesling vinaigrette,” Steven said. A tantalising fusion of flash-fried beef brisket, bean sprouts, radish onion and bittersweet riesling vinaigrette, the dish joins fellow newcomers such as the Moo Moo Valencia Pork Belly, broadening the mains line-up. With pasta made fresh in-house every day, the Ragu Alla Bolognese with Truffle Pecorino is a must-try on the new menu. The new menu will also be introduced to Broadbeach sister-restaurant, Moo Moo Gold Coast, in the coming weeks. Moo Moo has also expanded its array of dining experiences with a two-course business lunch menu including a glass of wine for $45. POLENTA & MUSHROOM WITH WASHED RIND 150 g (51/2 oz) fine polenta 500 ml (17 fl oz/2 cups) vegetable stock 1 teaspoon salt 2 teaspoons dried Italian herbs 50 g (13/4 oz) chopped butter 100 g (3½ oz) grated romano cheese vegetable oil, for shallow frying 500 g (1 lb 2 oz) sliced mushrooms 4 garlic cloves, crushed 100 g (3½ oz) sliced washed rind cheese finely sliced spring onions (shallots), to garnish
Place the polenta in a heavy-based saucepan. Add enough water to moisten and leave for 5 minutes. Place the vegetable stock in a separate saucepan and bring to the boil. Gradually pour the stock into the polenta. Add the herbs and cook over low heat, stirring constantly, until it comes away from the sides of the pot. Add the butter and romano and stir thoroughly. Place hot polenta immediately into a greased loaf tin. Smooth the top and refrigerate until set which will take approximately 1 hour. Remove from the

loaf pan and slice into 3 cm (1½ inches) thick slices and set aside. Meanwhile, heat a small amount of oil in a large frying pan. Add the garlic and mushrooms. Stir until they begin to color, then add the remaining butter. Stir until golden. Season to taste. Place in an ovenproof dish and keep warm. Heat the vegetable oil in pan over high heat and cook the polenta slices until golden and crisp. Divide into four serves by placing mushrooms in the centre of the plate, top with the polenta and sliced washed rind cheese, then garnish with shallots. Serve immediately.

Melbourne has the largest Greek population outside of Greece and love Greek food! So on a mission we went to find a traditional Greek restaurant selling home style Greek food in Melbourne. We found it. Tsindos Greek Restaurant in the Greek precinct in Melbourne and this is my take on one of the delicious dishes we had, Greek Baked Cheese.
Crumble the homemade haloumi and fetta into a small flat baking dish, making sure the base of the dish is covered with the cheeses. Halve the cherry tomatoes and scatter evenly over the top of the cheese. Remove the seeds from the chilli and finely chop them. Scatter over the cheese. Place the sliced garlic and the thyme on top of the cheese and tomato. Remove the oregano leaves from the stalks and scatter over the top. Preheat the oven to 180°C (350°F). Once assembled, bake for approximately 10 minutes, or until the cheese is melted. Serve with crusty bread, smashed potato or lightly cooked greens of your choice.

RICOTTA CUSTARD 500 g (1 lb 2 oz) ricotta cheese 125 ml (4 fl oz/1/2 cup) pure cream 125 ml (4 fl oz/1/2 cup) milk 4 eggs 4 teaspoons cornflour (cornstarch) 2 teaspoons vanilla bean paste 125 g (4½ oz) caster (superfine) sugar
Preheat the oven to 140°C (275°F). Put all of the ingredients into a food processor or blender and process until smooth.Transfer the mixture into a jug with a pouring lip for easy pouring. Place a lightly greased silicone muffin pan onto a baking tray that will hold a little water. Pour the mixture into the silicone muffin pan holes. Pour 250 ml (9 fl oz/1 cup) water into the baking tray that the muffin pan is sitting on.
Bake for 20 minutes, or until they are firm when the tray is wobbled or a skewer comes out clean. When cool, and while still in the muffin pan, place in the fridge or freezer to completely cool before removing from the muffin holes. Notes Serve the individual baked ricotta custards with some whipped ricotta chocolate mouse, sweetened mascarpone, strawberries and strawberry coulis.

Why did you want to see tubs of delicious cookie dough being pillaged late at night in fridges across Australia? We’re glad you asked! When growing up, our favourite part of making cookies was when mum would let us lick the spoon at the end. It was these childhood memories that made us want to recreate this experience, in a tub, no need to bake and ready to eat anytime! We all get those cravings for something comforting and homemade, especially if you’re sweet tooths like us, but don’t always have the time or energy to do it yourself. So, now anyone can just open their fridge door, grab a spoon and dig in to some homemade deliciousness whenever they want.

What goes into your glorious tubs? We spent months taste testing and perfecting our recipes to make sure we got the flavour profiles just right! We’re proud to use only the best quality ingredients in our cookie dough with no added preservatives. Using Belgian chocolate and cocoa through all our chocolate based flavours and real dehydrated fruit in our Apple & Cinnamon and Raspberry & White Chocolate recipes, ensures we bring a premium quality product and flavour to our customers. What was your pioneer recipe and what process did you follow to get it from sample to sale? We started with the classic… Chocolate Chip. It was a lengthy process getting the base recipe right, which meant a lot of trial and error! We did extensive research and development, trying multiple recipe and ingredient combinations to ensure we created a premium taste that was safe to eat raw. Finding willing participants to test our creations amongst family, friends and strangers wasn’t hard but we conducted blind taste tests to ensure people gave honest and unbiased opinions.

Why can’t we bake direct from the tubs?
There are no eggs or milk and we use a heattreated flour, which makes it safe to eat raw. We have also had our dough lab tested to ensure our best before dates are accurate.
As we have taken out all the ‘bad stuff’ it means that we have also removed the rising and binding agents. So, if you do pop the dough in the oven, it ends up as a flat pancake. We think it’s better straight from the tub anyway!

Let’s talk delivery and storage. How do we look after our dough?
We want everyone to enjoy their Cookie Doh Co. dough in whatever way they like! We love to just grab a spoon and eat it straight from the tub, but a favourite is definitely mixing it in with ice cream. If you’re feeling a little more adventurous we’ve come up with several different recipe ideas for each flavour, which we send out with every order. A couple of our favourites are Chocolate Chip Peanut Butter Slice and Apple and Cinnamon Donut Balls!
Our dough can be stored at room temperature in the pantry for two weeks. This means that it is safe for us to ship our little packages of heaven Australia wide. When refrigerated, it will last for up to six months, if you can stop yourself eating it all in one go!

Cookies & Cream Swisse Roll INGREDIENTS 250g Cookie Doh. Co Dookies & Cream Dough 125g Caster Sugar 4 Eggs 75g Plain Flour 1 tsp of Vanilla Essence Icing Sugar Directions Preheat oven to 190C and line a 24cm x 30cm tray with baking paper. Combine the egg yolks, sugar and vanilla and beat with an electric beater. In a separate bowl, beat the egg whites until soft peaks form and then fold into the yolk mixture. Add sifted flour and fold to combine. Pour into pan and bake for 15 minutes (or until cooked). Remove from oven and cover with baking paper and a damp tea towel. Allow to rest for 30 minutes. Dust a piece of baking paper with icing sugar and place cake on top. Spread Cookies & Cream cookie dough over the sponge and then roll tightly. Keep covered with baking paper, seam side down and allow to sit for 30 minutes in the refrigerator before enjoying.

Raspberry & White Chocolate Dough 115g Caster Sugar 115g Butter 2 Eggs 115g Self-Raising Flour ½ Cup Fresh or Frozen Berries DIRECTIONS Preheat the oven to 180C and line a muffin tray with patty pans. Cream the butter and sugar together. Add the eggs and mix until combined. Gradually add the flour and mix. Fill the patty pans halfway and place them in the oven for 15-20 minutes or until they spring back to your touch. Once cooled, use a teaspoon to scoop out the centre from the top of the cupcake and cut the scooped component in half. Add a spoon of Raspberry and White Chocolate cookie dough into the body of the cupcake and place the removed sponge on top like wings. In a saucepan, heat the fresh/frozen berries and mash until a sauce is formed. Drizzle on top and enjoy! --------------------------------------------------

What motivated you to enter the realm of reality TV on Married at First Sight? I wanted to open my world, experience change and genuinely find love. At the time I was single and struggled to find the right person, so I put myself forward to change my life and that’s exactly what happened. I’m a ‘relationship’ kind of person so this was a positive but daring move for me. I crave a ‘big life’ and I was thrown out of my comfort zone, but that’s where you learn the most! How did your expectations compare to your experience? I didn’t expect the experience to be as hard as it was, I put my trust in my relationship and I believe I was a little naive in the beginning of the show. I didn’t have an easy ride, but so much came out of the experience and I’m better for it. Imagine your biggest insecurities and a cheating scandal coming through on national television... It also wasn’t a great experience having to face the
bullying and online trolls, but I refused to let it get the better of me, and I won. Congratulations on your new book This Goddess Means Business. How does it follow up on the lessons you taught readers in Don’t Mess with the Goddess? Thank you. My last book is an empowering guide for women to find independence and balance for a truly satisfying life through modern day spirituality. Mindset is everything! This Goodness Means Business has these important lessons but more focused on goddess business development for people who would like to start transitioning their side business into a full-time job. Key lesson here is, in order to have the life you dream of, you need to be very aware of your mind, body and thought and then you’re ready to take on the business world. What can readers expect from This Goddess Means Business? Women who are empowered can achieve anything and I think if you’re a business owner or looking to get into business, there are lessons you can learn. This book will help your business or personal brand get out there. Often people will get inspirational business advice from large businesses and influencers, often they don’t provide you with grass roots advice like cash flow, I teach people how to push through. Competition, how to handle it and use it to your advantage. Marketing budgets, how to get the best results etc. How do you want women to feel when they finish reading your book? I want women to take action. Feel like the goals are achievable. I want women to feel like they can apply different aspects of my book right away. Even if they take one or two things from the book. It will make

all the difference. When you’re running a business, you are the secretary, operations manager, marketing assistant and CEO and you have to individually manage that, but I want women to know, that you’re not alone and it is achievable. Tell us about your plan for you book launch soirées. Why is this a mustattend event? My book launches are more than just sit-down events with a book signing. My Goddess events are for likeminded women to engage, network, collaborate and share ideas. Plus, there’s wine! Why was it important for you to use your book to support anti-domestic violence initiatives? I have a social responsibility to my community as a woman and a mother to share my story and be an advocate for the cause. I’ve personally been affected and I understand what women go through and I want to give this issue more of a platform to initiate conversation and action. This is a priority. I didn’t know about some of these services when I experienced domestic violence and I want to share this with all women to let them know that you’re not alone and there is help for you. 50c of every book I sell will be donated to Momentum Forum Events "Kiss Violence Against Women Goodbye”. Where do you see your literary empire in five years? I’m a writer and always have been, it’s who I am! I definitely want to write more books. It brings me solace being a writer, but I really think that journalism will be my next move. Tell us about the process of getting Hills & West off the ground. What was it that convinced you a career change in your thirties was just what you needed? In October of 2014, I was coming back from a work trip in Singapore and London and I had a wake-up moment where I asked myself whether what I was doing was fulfilling me in a happy and meaningful way. I wanted to follow my passions and uncover unique experiences, cultures and people. I wanted to be inspired! I thought I had created and grown so many other people’s businesses, why not do it for myself.

What was your first product and what process did you follow in creating it? The Morgan 3 in 1 backpack, in black, is my first piece and has been the best seller to date. Since the beginning of my ‘corporate’ career I always had to do a lot of travelling. Over the years I had searched for the perfect travel bag with never much luck. I wanted to create a bag that was luxurious, practical yet affordable, with high functionality.

How do you source and curate your materials? I go to local makers and suppliers where possible. It’s important to me that Hills & West stays Australian Made and supports local makers and businesses. There is an element of quality care and craftsmanship that cannot be beaten. I love to be hands on in all steps of the making process and am often working alongside local leather and fabric suppliers where I typically spend hours looking at different hides and materials. The Weekender from the Traveller Collection has gorgeous linen lining that I tried so many difference thicknesses and blends before I was happy.

How would you describe the Hills & West aesthetic? Hills & West aspires to declutter and simplify, stylishly. The collections are catered to the busy lifestyles of the modern man and woman and are available at an accessible price point for quality handmade pieces. The Hills & West aesthetic is minimal, modernist-classic and suitable for any occasion.

How does Hills & West differ from other accessories on the market? When starting Hills & West one of the important guiding factors was to create a product that was handmade locally and supported other artisans and makers. I wanted to make unique pieces that were considered in both function, form and of high quality. I also wanted to keep the line of communication as open and faceto-face as possible, so I could convey my ideas and inspirations proficiently. I wanted to work alongside local artisans, so I could intertwine my learnings from Italy in an innovating way.

Who did you have in mind when designing your latest collection? The latest capsule collection is the Chevron Collection. It launched with 3 styles; Darcy Top Handle Tote, Parker Crossbody and Baxter Wristlet Clutch. Modernist architecture was a keyinspiring element on some of my recent travels. I wanted to achieve better design through simplicity of form, space, materiality, detail and colour. I wanted to create a product that let its user admire its
form without overstimulation so that they may occupy a space of internal serenity. The Chevron collection comes in classic ink black, midnight navy and has functional gold features. This cohesiveness allows the products to look fantastic on their own or be collected as a set. It was designed with the intent to be something totally different to what is currently on the market with the super stylish modern woman in mind. We have just added the little Lennie, a belt bag that is the ultimate hands free.

How does Hills & West give back to the world? Each year Hills & West donates 10% of its profits towards helping children around the world get access to education. I feel so blessed to have had the opportunity to follow my dreams and am deeply saddened that for many, this is considered a luxury. We make frequent contributions to the Rainbow Children’s Home in Nepal. I also work with Kiwanis International where I donate my time and make donations to strengthen communities and serve children. I also donate my products to
other charities such as the Starlight Foundation for their silent auctions as an additional way to fundraise for important causes.

How can we create a bespoke piece with Hills & West? This is such an exciting new part of my offering. Once again it was through listening to one of my first fabulous customers who asked what was next for Hills & West and wanted a new colourway on one of the bags. Many people have asked about new colourways, so I brainstormed with my manufactures about what could be done and the process and came up with a way to work creatively with people who want to personalise in the most detailed way. Typically this process begins with a phone consultation where we chat through your ideas and we can create a customised piece for you.

Where do you see your brand in five years? I have so many ideas and dreams it’s just a matter of money and time. I definitely see lots of collaborations with

other creatives. I am currently working with other gorgeous designers on a collaboration of some very wild designs for the practical yet colourful lady. I have also connected with six other strong Australian female founders who complement each other with the same ethos and vision. We are coming together to bring you the ultimate ensemble shopping destination. I would like to build on this and roll it out all over the world. I have already started a Hills and West HOME collection that will be evolving in the next year and will start to develop staples and more accessories that are all in line with the Hills & West ethos to add practical, luxurious finishing touches to your home. Ultimately, I would also like to take Hills & West development to other communities around the world where crafting my bags will help support communities that are not as well off as we are. From the beginning our mission has been simple - create exceptional pieces, while doing what I love and making people happy along the way.

South Africa Label travels to Madikwe Game Reserve in search of adventure.

ver since Robert Redford and Meryl Streep romanced us with their film Out of Africa, a love affair with African safaris has drawn many travellers to the South African bush.
the excitement starts, cruising over the countryside speckled with townships and farms, bushland and expanses of terrain for as far as the eye can see. Even from the air, wildlife can be spotted roaming below.

An African safari is an experience that many dream of and South Africa is the ideal place to make that dream come true - a country that will capture your heart and make you fall in love. Located about 90 kilometres north of the town of Zeerust is Madikwe Game Reserve. Although it is currently the fifth largest game reserve in South Africa, it is one of the lesser- known parks, making it a hidden gem.
On arrival at Jaci’s Lodges you will feel the luxury of the gorgeous safari-style accommodation but be pleasantly surprised at how it blends into the surrounding bush. What market gap encouraged you to establish Ziporah Lifestyle? The first “gap” we wanted to fill when we established Ziporah Lifestyle was for high-quality, fashion-forward and unique patterned towels. Everything was plaindyed in one or two colours only, or the traditional multi-coloured beach towel. No one was creating high-grade fashionable towels in unique patterns and colourways outside of a few high-fashion houses. Our product line just grew from there! Tell us about your materials and manufacturing. How do you select the artisans you collaborate with? Believe me when I say: we have boxes of ‘failed’ samples made by some manufacturers stored away. Invest your time and money into resourcing reliable and honest quality control agents when you manufacture any product overseas. Apart from the obvious hurdles such as language and time zones, a great manufacturing agent will take the time to understand your brand, ensure that your production checkpoints are met along the way, monitor the quality and precision of the product creation plus ensure that the final product is perfectly aligned to your design, quality intention and materials expectations. It’s so important to establish a great working relationship with a valued manufacturer (when you find them!) Pay extra for production if need be as that old chestnut about price and quality still rings true every time. We do not endorse child workers, unfair wage or work conditions in any instance. We adore your opulent use of metals. Where does your love of gold stem from? We have always adored gold (and other metallics) from waaaay back! The classic and eternal beauty of gold has always captured our imagination: the way it always works with any colour or design you give it, its long historical and classic allure, it’s permanency in any form, it’s exclusion from Trend-Cycles (it’s never ‘out’!). To us, it will always remain as a benchmark for luxury and value - the nightly news reports will still mention the value of Gold per ounce as a baseline for financial reporting! We love your Vesta and Vulcan rugs. What inspired your designs and where can we use these in the home? Vesta and Vulcan have almost created their own Cult status without even trying! Roanne and I were almost ‘obsessed’ with how the Romans coupled metal and metallics with colour, geometry and spiritual beliefs. Everything revolved and evolved around their Gods and the cycle of Life as they understood it. Our aim was to incorporate metallic thread floor rugs and bath mats into a design that was ‘typically’ Roman. That view of a never-ending and repeating cycle and geometry: you’ll notice that the Vesta and Vulcan rug design has no beginning and no end to it - it intertwines endlessly with and in itself. We created an ambitious design and then sourced a rug maker who could weave with metallic Lurex™ that they sourced directly from the Lurex™ manufacturer in the USA. These rugs were made to be used anywhere in the home; not just the bathroom. They are not technically “bath mats” (smaller, light, cotton rectangular mats) in the way that we know them traditionally. Think more hybrid and multi-functional. Sure, they fit perfectly in the bathroom as absorbent mats to dry
off on but many of our customers show them off as more permanent floor features in bedrooms, laundries, butlers pantries, entrance halls and powder rooms. Where do you want to see Ziporah Lifestyle in five years? We have started the process of creating new and intriguing lifestyle products: some of which will be available later 2018! We would like to see ourselves in five years as having a larger lifestyle product range, availability in more international stores outside Australia in order to promote and develop Australian brands, greater brand resource available to customer support: customers will always remain one of our key priorities and we never want to lose the personalised service we offer right now. The ability to source materials and manufacture products in Australia is a big one for us - five years is such a short time in many ways - and we have taken nearly four years to produce an exclusively-made product from Australia which is launching soon. Unfortunately, much manufacture in Australia has become rare. What homewares trends should we shop this season? Think brass and gold. Rich, earthy berry colours, more and more velvet, curved shapes everywhere. Muted pastels and colours; so, imagine the pastels and colours that you know and love and then tone them down a little. Bathrooms are looking to camo-green/muted olive for walls and matte metallic (especially gold and tiger bronze) for hard and tapware - these trends are both showing some serious style in bathing spaces in the coming two years! Do NOT worry! We are on to it.

HANAKO THERAPIES Founder Rachel Holm invites Label into the world of aromatherapy. What is aromatherapy? Aromatherapy is the therapeutic use of pure and natural essential oils. These oils are concentrated extracts from flowers, plants, trees, shrubs, resins and seeds. Essential oils are not only aromatic but are known for their therapeutic healing properties, promoting physiological, emotional and spiritual wellbeing hence given the name “Aromatherapy”. When applied topically, the Essential oils absorb into the skin, where it then penetrates the skin surface and enters the bloodstream, allowing the healing properties and effects to work inside as well as out. Inhaling essential oils can have many positive effects on the body, mind

and spirit. As you inhale you breathe in particles of the essential oils that travel down the windpipe and enter the lungs which then carry into the blood stream allowing the healing properties to take effect. Why did you explore alternative healing? In my early twenties I was having terrible female issues with extremely irregular periods, and after many visits to the doctors, specialists and having surgery, the issue still ongoing and no explanation for it. My cousin suggested I try her acupuncturist. On the first visit he started my period and a week later I went back, and he stopped it. We continued this cycle for a few months and I have never had an issue with it again and have gone on to have three babies naturally, which in my early twenties I was told having children will be very hard for me.

From here I did a lot of reading with self help books, I began meditating everyday and kept up a regular practice of yoga at least four times a week, but it wasn’t until I fell pregnant with my first that something really shifted for me. Being pregnant and a professional dancer definitely slowed things down for me and I really enjoyed and embraced the pregnancy and the change of life pace. It was during this time I researched different Energetic healing courses and received different Modules of study plans but couldn’t quite commit knowing that I would soon have a newborn and how I would juggle with the baby and two years of study. Three months later, my firstborn was stillborn at 39 weeks and four days, three days off her due date. It was such a devastating time, we were at the highest of highs and the next minute it had all been shattered and tipped upside down. But now more than ever, this deep internal drive to study energetic healing was calling, and a month later I sat in on an open day for the Diploma in Energetic and Spiritual Healing and my heart, as sad as it was at this time, sang and I knew I had to do it.

Doing the studies was absolutely amazing and so healing for me at that moment in time and, not only did I complete my Two Year Diploma in Energetic and Spiritual Healing, I also fell pregnant, shot a movie “Happy Feet 2”, had our baby girl Willow and still managed to get all my assessments and exams done. I think after what we had been through I felt, if I can get through that, I can get through anything. How do you give back to families who have experienced pregnancy and infant loss? When setting up Hanako, I knew one of the first things that I wanted to do was to donate a portion of each bottle sold to a charity that was very close to our hearts. We were very well cared for in Private Health when we lost Sierra, they immediately organised a grief counsellor for us where she helped navigate our way through this terrible time. We were guided so beautifully and well, and I was horrified to hear that not all families got that opportunity and that’s when I found “Bears of Hope- Pregnancy and infant loss”, a not for profit charity that helps to guide families during this devastating time and beyond, just as we had. What studies did you undergo to understand nature’s healing properties? I love studying and I think my studies will be never ending and a continuation on from what I have learnt so far. After finishing my Diploma in Energetic and Spiritual Healing, I continued further studies over in the USA in Aromatherapy and Apothecary, Natural Skincare, Kundalini Yoga Teacher training and, since returning home from the US, I have followed on in more studies in Advanced Aromatherapy. However, I also
think you learn so much from experience and while the scientific side is important I am also huge on following my own intuition. What was the first product you developed and how have you expanded your range? Our first product was ‘Happy Tracks’, a blend created at the time for Willow who was only two years old and suffered from motion sickness. I had scoured many a store shelf trying to find something natural and couldn’t find anything, so I decided to make up a blend for her for the road. We were going on a six-week long road trip across the USA. From here I began the I AM… range, which are our natural perfumes/body mists with an energetic purpose. There is one for all different states of being that not only smell amazing but also help support body, mind and spirit. They are a combination of pure essential oils, crystal infused spring water, gem and flower essences, bathed mantra and have an affirmation to set intention. We also have a range of Mummy and Baby products, Essences and Meridian blends which encourage harmony and flow around the body (based on Traditional Chinese Medicine) they are a combination of pure essential oils in 100% organic jojoba oil, each one has a different affirmation to encourage further awareness and these blends get placed on specific acupressure points around the body. What ailments can we overcome using Hanako products? For targeting particular ailments the Meridian Blends are a great choice. If you suffer from headaches, migraines, stiff shoulders, lower back pain, sinus, bladder
issues, stomach upsets to name a few, the ailment itself is the bodies way of saying “hey, I’m out of order over here”. You can read up on the different emotions and physical points and relate it back with one of the Meridian blends to encourage the harmony and flow around the body. Tell us about tailoring Hanako’s Alchemy Kits to our specific needs. The Alchemy Kit is a different kind of package, I love giving Healings but because of limited time with Hanako and little ones, I am not able to fit in many healings, so what we wanted to do was incorporate both the Hanako products and Healings together. This is where the Alchemy Kit came in. I can chat with you one on one and see what’s going on for you at present, I’ll then do an energetic tune in and see what comes from there then we choose what would be the best individual products to support you at this particular time. Meet ADAM BILSBOROUGH What was the trigger for you that first made you realise you needed to investigate a weight-loss surgical procedure? I lost a lot of weight doing it the ‘socially correct way’ by dieting and exercise and dropped quite a lot, but life happens. Everything about my weight was affecting everything in my life and I knew I could lose weight, but this time needed something to keep it off. Weight-loss surgery was the best answer. After many many months of research and study I decided that it needed to happen right away! Tell us about the journey for you to reach your first 50kg of weight-loss? It's not the easy way out and you need to really put effort and work into your diet and exercise around the surgery. As soon as the weight started dropping, exercising got easier and I became addicted. Even though I've lost 50kgs, this is just the beginning and it hasn't been a year yet. What daily activities are now easier for you and what new activities have you included in your daily routine? Everything, there's no question about it. I've become a personal trainer to specifically help those that were in my position and were like me. I want to be a role model and drive people not to be scared to take the first step and not be ashamed. How has the weight-loss changed your relationships and family life? Losing the weight has made me feel better about myself and made me appreciate things so much more. If I didn't get it, didn't lose the weight or ended up worse, who knows, I might not even have been in a relationship now, but I have a very beautiful fiancé and we are getting married at the start of 2019. I'm not scared to plan life and talk about kids because I know my health is on a better track!

What was the trigger for you that first made you realise that you needed to investigate a weight-loss surgical procedure? I have been a big boy since leaving high school and sporting activities. At the age of 21, I had lost 50kg from hard work at the gym, but over the years the weight came back on slowly. Tell us about the journey for you to reach your first 50kg of weight-loss? The journey has been pleasant so far, getting use to what foods I can stomach was the hardest, but now I’m over 6 months I know what to have and how much, also the drinking half an hour before or after eating.
What daily activities are now easier for you and what new activities have you included into your daily routine? My daily activities at work were always driving around the site unlocking buildings, whereas now I am walking. I walk the site multiple times before work to achieve my daily target of 30 minutes of walking and 4km distance as a minimum.

Walking, braving the morning temperatures and going around the block, about a 2km round trip. From time to time I’ll lift some weights, only 2kg ones but enough to turn my flubber from my arms into muscle.
How has the weight-loss changed your relationships and family life? My family life has changed dramatically from every angle. Being able to keep up with the kids on a daily basis is huge. My relationship has never been better with my wife, the new changes everywhere in my life are so worth everything I have done.
How has the weight-loss changed your relationships and family life? My relationship has never been stronger, I just returned from a trip to Phuket where I was able to swim daily showing my body off, not worrying about what people thought. The only downer is being lighter than my wife for the first time!
What does your vision for a healthier future look like now? I am competing in my first 10km marathon this year walking it but next year I will be running the 10km. I would never have entered this event without the surgery, we will be competing in the colour run as a family this year, once again another event I would never be able to achieve without this surgery.
What does your vision for a healthier future look like now? My vision for a healthier future is to continue the way I have been going, stay focused on what I can and can’t have and keep up with the walking.

HAVE YOU BEEN INJURED IN A CAR ACCIDENT? Do you know that if you are involved in a motor vehicle accident and you are the not-at-fault driver or passenger, your rehabilitation costs can be paid for by the insurer of the driver at fault?

t is common for people who have been involved in motor vehicle accidents to be left with ongoing symptoms attributable to the accident. On occasions these symptoms resolve quickly, however, often they require rehabilitation to support the recovery process.
to pay for the proper rehabilitation they require. Pursuant to legislation, a person injured in a motor vehicle accident in Queensland through no fault of their own is entitled to reasonable and appropriate treatment funded by the insurer of the vehicle at fault.
The main aim of rehabilitation after an accident is to: 1. Assist a person in returning to their preaccident function where possible; or 2. Assist a person in managing their ongoing restrictions caused by the injuries.
Most of the time the insurer will simply require a letter of referral for rehabilitation from the injured person’s treating general practitioner. From there, a treatment plan will usually be prepared by the relevant treatment provider and rehabilitation will be monitored on an ongoing basis to ensure that all the injured person’s needs are being met.
Rehabilitation can be expensive and is usually ongoing over a sustained period of time until a certain result is achieved. It can involve a wide range of treatments including specialist consultations, psychological treatment, physiotherapy, chiropractic treatment, return to work programs or even surgery. Often people may find themselves unable to work following an accident which can lead to financial stress and an inability
Often at the early stages of an injury it is difficult to tell how symptoms will progress. When injuries are somewhat minor in nature, there can be a tendency to overlook them and hope that they will simply resolve in time. This may not always be the case and a delay in seeking treatment can hinder the recovery process. It is important to discuss any symptoms
following an accident with a suitable medical practitioner as soon as possible. With proper treatment after an accident, less severe injuries can often resolve a great deal. When injuries are more serious and life altering, it is not uncommon for people to find that the impact of their restrictions takes a psychological toll on their lives. When this happens, it is important that the injured person discusses their feelings with their general practitioner so that an appropriate plan can be formulated. This can help to relieve stress and anxiety. Rehabilitation is also important as an injured person is obligated to mitigate their loss. This means that an injured person must take reasonable steps to decrease the extent of the loss arising from their injuries.
