f you are not one to get insanely jealous about someone who appears to have it all then there’s a lot to like about Natalie Portman. Apart from the stunning physical beauty she is also an accomplished Oscar winning actress, model, devoted mother and spokesperson for a variety of causes, animal rights activist and a firm advocate for women’s rights especially in developing countries. Oh! And she also has a bachelor’s degree in psychology from Harvard University no less. You recently won an Oscar for your role in “Black Swan”, giving you international recognition for your talent as an actress. Do you feel a sense of total achievement or are you the harshest critic of your own work? I think I am probably the harshest critic of my own work, even if I’m not a crazy perfectionist. But also I feel that the achievement comes from the experience itself, not from prizes. Prizes are obviously nice but the experience of making the film comes first.

Daily products in your make-up bag you can’t live without? I like the paw paw lip balm. My best friend lives in Australia and she sent it to me from there. I also like to keep a Diorskin Nude Compact with me.

Do you have any acting role models? I love Holly Hunter, and Isabelle Huppert, Juliette Binoche, and obviously Meryl Streep, Cate Blanchett and Julianne Moore, like a lot of people do. I met Isabelle Huppert after a play in Athens, in Greece actually. She did a very avant garde version of “A Streetcar named Desire”.

How does it feel to be Dior’s ambassador for the second year running? It’s a brand that I've admired for a long time. I think they have a lot of integrity, and such an amazing history, so it’s an honour to be part of Dior.

What is your dream role? I am really interested in playing something related to the feminist movement in the seventies. It is something I’d love to learn more about. It was not a long time ago, but even very politically committed women don’t know about it as much as they should.

You are a committed vegetarian. Do you believe in beauty from the inside? Can the right nutrition have an effect on the outer appearance? Absolutely! I can totally tell the difference with my skin depending on what I eat. Obviously, the more water you have, the more hydrated your skin looks. And sometimes I cut out dairy and when I do my skin looks so much better.

How do you choose your roles? It is a combination between the script, the role and meeting the director. Which part do you feel like playing at the time, how good the script is and how much I like the director. For many years you have supported several charitable organisations with different concerns – health, environment, homelessness. Your latest is Free the Children, an organisation acting for children’s education around the world. Can you explain why? I looked into schools a lot because I think the biggest way to affect the developing world is through education, particularly girls’ education. The more you educate girls, the more they have control of their own lives. If they have fewer children, they are more able to take care of them. They are also able to get better jobs and can feed, educate and shelter their children later on so it can solve a lot of issues in the developing world. They have a holistic approach to make sure girls go to school and stay in school. It’s been amazing working with them. 8

In what way does Diorskin Nude make-up correspond to you in particular? What is your top product in the range? I think Diorskin Nude make-up is really natural, and it makes you feel that it’s your own skin as it is very light. With the Diorskin Nude foundation, my skin looks great without feeling that I have make-up on. Was it easy for you to find your own style? It’s a process which never stops. Obviously, there’s some sort of core, an understanding of yourself that you’re always have, but the details change all the time. It’s a work in progress. What is a day in Natalie Portman's life like? I play with a lot of blocks! I spent most of the day with Aleph, who is 1½ now, playing, singing or changing diapers. I’m making food, cooking rice, pasta, vegetables and beans. In the afternoon, I have meetings or phone calls for my production company or I read scripts, then I have more time playing with the baby, or getting into the pool.

Local stories Dr John Flynn As befits his years of training and study, there is a virtual alphabet soup of letters denoting the many achievements of Dr. John Flynn over the years. Dr John Flynn, (MBBS, Dip RACOG, FRACGP, Dip.P.Derm (UK) FACCS) is the official description but there is one missing – F.B.D. or Ferry Boat Driver. “It was one of the many jobs I did to put myself through university,” he laughs. “I did everything from builder’s labourer to taxi driver and yes, driving a ferry on the Brisbane River. I always knew I wanted to be a doctor. My mother died way too young and maybe sub-consciously that was why I wanted to do something in medicine. My father John was an electrician and the first in his family to get some form of qualification and he appreciated the value in getting a good education.” Finishing his medical degree the young Dr Flynn moved to the Gold Coast in 1979 after early training at the Royal Brisbane Hospital to work at the Gold Coast Hospital as the surgical registrar and stayed there two years. “Unfortunately there were no positions available back in Brisbane so I transferred over to general practice and because I was always interested in sport I started studying Sports Medicine.” That involvement saw John working with the A.I.S. and Olympians who went to the Barcelona Games as well as an involvement with the Brisbane Bears, Gold Coast Rollers and other high profile sporting franchises. He is still involved with the treatment of high profile athletes in a joint programme utilising Monash University research technology and the use of stem cells in treating certain injuries. “Working in Sports Medicine actually dovetailed neatly in to cosmetic surgery,” explains John. “It is results driven and all about getting the best outcome for the patient. When I decided to make the move across there were various areas I had to study. There was an Oculo-Plastics Fellowship in America and a Diploma of Dermatology in Cardiff and I’m also board certified from the American Board of Laser Surgery. There are a number of areas you need to round out to complete your skills,” he explains modestly. In 1998 Dr. Flynn was admitted as a Foundation Fellow of the College of Cosmetic Surgery and served as the College president from 2003-2005 as well as serving time as the C.E.O. of the College. You have to marvel how he manages to live a life with so much time invested in further study, lecturing both nationally and internationally, operating, consulting and running the day surgery and practise at Cosmedic and Skin Clinic in Southport. “I love what I do and really enjoy the part I can play in making an improvement in someone’s life. You do get used to focussing and prioritising on whatever is at hand. That’s where all the training pays off,” he grins. Away from work he is married to Narelle, an accountant, and the couple have one son, Sean. Then, interview over, he takes his leave and heads off to do what he does best – care for his patients.

Lauren Pembroke Seen at many a function as the tall, elegant public face of Grand Motors Toyota, Lauren Pembroke has a job description that makes you tired. “Technically I am an executive co-ordinator but under that title I am involved on a daily basis with marketing, stock control and working as the P.A. to the general manager,” she explains. Lauren’s original dream was to be a ballerina which is a long way from her current job. “I grew up on a 10 acre block near Adelaide with my three sisters. Looking back it was an idyllic life – lots of fun and exploring the surrounds with all the other children in the neighbourhood. My daughter Cadence is now nine and I feel a bit sad she can’t experience that sort of childhood with all the freedom we had. I played lots of sports but my real passion was ballet and all I wanted was to be a professional dancer. However my parents moved to the Gold Coast when I was around 15 and there was nowhere here for me to do the training that was required to continue.” That passion was soon replaced by another when Lauren landed a job with Mercedes Benz as a trainee salesperson. “I was young and female so it wasn’t easy because sales is very competitive and everyone is trying hard to be the best. My first day wasn’t a great success either. At lunch I accidentally spilled tomato sauce all over my blouse so I went out and bought another one which impressed my then boss who could see I was determined to make it. The training was excellent and involved learning about every aspect of the car so that if a customer asked a technical question I had the answer. Luckily I’ve always loved cars so it was perfect for me. That first year I sold 45 cars which gave me enormous confidence. I’m often asked about the difference between men and women in selling. Personally I think it is because we listen more. I always try to gain a rapport with the customer and take something out of the conversation.” In 2002 Lauren moved from Mercedes Benz to Grand Motors Toyota. Still with the same group but this time as part of the team who operate the biggest privately owner Toyota showroom in Australia. “My role has changed over the years and now for example I have a part to play in the sponsorship with the Gold Coast Suns or Gary Ablett Jr. I am always looking for the next challenge and I’m working towards becoming a sales manager.” Away from work her interests are music of all kinds and being fit and healthy. “Recently I’ve been working with a trainer with weights and somewhere in there is the idea about becoming involved with body sculpting. The training is very relaxing because it takes my mind off work and makes me concentrate on something completely different.” Blessed with height and good looks it’s hard to imagine Lauren in better shape but whatever the task, this motivated young woman is certain to reach her goal.

trelise cooper What inspired you to pursue fashion? As a little girl, I always loved the dress-up box filled with my mother’s bejeweled 50s frocks. My father loved fashion and would take me shopping as a young girl with no limits; he instilled a love of shopping. I then got jobs as a house model in a shoe and fashion company. You have created a global empire without any formal design training, what kept you motivated throughout your journey? I have been motivated every day I have come to work. I love the constant change that is fashion, the stimulation that it brings. I love the idea, visualisation of that idea and its creation through to fruition. How has your personal aesthetic developed since establishing the brand in 1985? It has probably become more commercial with a twist, rather than as Avante Garde as I was as a young designer with only my own stores. Selling to other retailers has meant a calming down of my aesthetic. With over 300 global stockists and 12 boutiques, why do you believe the world has fallen in love with Trelise Cooper? I only design something if it has a point of difference. Each piece needs to have a distinction from what else is available. What qualities does the quintessential Trelise Cooper woman embody? Probably Julia Roberts because she was my first celebrity who bought a lot from my first delivery into the USA. Congratulations on your 2004 New Zealand Order of Merit, how have you incorporated a social conscience in your organisation? Giving back to society and contributing on a social level is a core value in my life and company. We have been involved in many fundraising charity events. In 2010 we led an all-women build for Habitat for Humanity at Fashion Week and then went with 50 fashion volunteers to Thailand and built eight houses in five days for Habitat for Humanity. I am the Patron of the Breast Cancer Research Trust in New Zealand and we are constantly raising money and profile for Breast Cancer in New Zealand.

How do your diffusion ranges Cooper and COOP by Trelise Cooper help you stay ahead in the fashion industry? Both are important as they each speak to a different audience. Cooper is the diffusion brand of Trelise Cooper and COOP is the junior, young, edgy, high grunge of our group. What was the catalyst for branching out into fabrics, fragrance and jewellery? I was approached by the manufacturers in each of those fields to create a licenced product that I designed but they manufacture and distributed. Femininity is a big part of your SS13 collection, what decade is your greatest source of style inspiration? There is no one decade for me, as I believe each has their own unique fashion story. I do love the 1920s, Victorian, 1950s and 1960s. Your latest collection has seen the revival of tea length dresses and adaptable minis, what are your tips for polished glamour? Beautiful hair and makeup, good shoes and a well-cut garment. What can we expect to see from you next season? Opulence, embellishment, textures of light and luminosity. Lurex, brocade, velvet, colour and detail. Aside from fashion, what do you pursue in your leisure time? I love collecting historical bits and pieces from small antique and bric a brac markets in the South of France.

When Wendy Miller arrives she positively bristles with good health. Tall, lean and wearing an athletic tank top with Lycra work-out pants, she looks the perfect poster woman for the benefits of clean living and exercise. Her age, as is the right of all women, will remain a mystery but her business is personal training. For the past 20 years she has put many high profile people through their paces and expounded to them the benefits of looking after themselves and maintaining a healthy lifestyle. The reason for this meeting is because Wendy has been asked to talk about her experience at Cosmedic and Skin Clinic in Southport. “I am healthy and fit but I noticed that as with everyone as we get older I was losing some fat from my face. For me the idea of having injectables or fillers in my face was simply tweaking my look and taking away the tiredness that comes with being up at 4am every working day to get organised to meet my clients. “Through a mutual friend I knew Dr. John Flynn so I didn’t have any worries or concerns about his ability or professionalism. The most important thing from my perspective was that I didn’t want to look like anything had been done. The entire procedure took 30 minutes. A local anaesthetic is administered so there is no pain and afterwards there’s a little bit of discomfort similar to the aftermath of a dentist. Dr. Flynn did the cheek area on one side of my face and then showed me in a mirror exactly the effect so that I could judge for myself if that was enough. The difference is only a few millimetres but my cheeks were firm, full and lifted but not in an obvious way. The procedure was done two years ago and I go back once a year to do what is necessary. There’s no bruising and no down time and the secret lays in the abilities of the expert, in this case Dr. Flynn, who is doing it. What made me really happy is that nobody has noticed, until now of course when this article comes out,” she laughs. “It has given me a lot more confidence, I’m looking healthier and I’m not presenting myself as so drawn and tired.” As she readies to leave for her next client Wendy explains what drew her to personal training in the first place. “I went to a little gym, started weight training and found I absolutely loved it. The difference in my own body was remarkable losing 40cm off my body in a month. From there I started studying, did courses and here I am more than 20 years later helping others achieve their goals. I know how to take care of my own body but I wanted that small amount of ‘help’ from Dr Flynn and the staff at Cosmedic and Skin so that I looked more like the woman I know I am.” 34

They’re the latest must-have for the cosmetic kit, but BB creams have us all a little baffled. German Dermatologist, Doctor Christine Schrammek, formulated the first BB cream in the 1960s to provide cover for her patients’ skin after laser and surgical procedures. The miracle balms then made their way to Korea and Japan during the 1980s and now make up 13 per cent of South Korea’s cosmetics market. The west has caught on to the trend and is offering BB creams without the whitening properties incorporated in Asian products. Glass bubbles Summer is here and what better time to check out Glass Dining & Lounge Bar.

It’s a new season and a new reason to come and join in the fun at Glass. As ever we have been privileged to host many parties and functions over the past few months. The Amor All Gold Coast 600 was run and won in October and as usual a host of drivers, pit crew, sponsors and promo girls came in to let their hair down during race week. There were also some executives from Walt Disney studios and guests from the MY Seven Star, which is moored at Marina Mirage, who enjoyed a relaxing time ashore while taking in the Broadwater views. Channel 9’s Getaway travel show highlighted our taste tours and progressive dinners recently and since the item was aired we have been inundated with requests to have what they had. The response has been truly amazing and gives us the chance to showcase what the Gold Coast does best – good times. It’s a great segue to our Yabby Lake and Red Claw winemaker’s degustation dinners which are becoming increasingly popular. My husband Billy and I have been lucky enough to have recently spent three weeks in France where we visited the Champagne region and generally overindulged on every level. Melbourne Cup was another huge day (and night) and while very few of our guests managed to pick Green Moon as the winner, a great day was had by all. won on the Cup, I still managed to lose. There is a suspicion that I paid out to the wrong people but it was all good fun. In late November we played host to the launch of the famous Love Drink. This carbonated aphrodisiac drink has been designed to enhance the sexual experience and the launch party was the perfect way to get things off with a bang. Glamorous girls, red carpet, photographers and dancers made for a great experience even before the first sip of Love. Don’t forget we also have live music on Sundays with Taj where you can kick back with a cocktail or beer and let the weekend roll on by with friends. Glass is also one of the few venues on the Gold Coast that is licensed to sell Moët Ice Impérial, the first and only Champagne designed to be enjoyed over ice. It has an intense fruity bouquet with the aroma of tropical fruits and is the perfect drink for a Gold Coast summer’s day. One of my favourite parties is the fun and frivolity of New Year’s Eve. This year our theme is White Night where guests are requested to dress all in white. Moët Ice Impérial will be served on arrival and at midnight plus you get live music and a four course dinner for $120 per head. I may be biased but to me Glass is one of the best venues for a party or function. We do many weddings, product launches and parties and the reaction is always the same – fantastic. Delicious Matt Preston indulges us in his favourite summer treats.

Tuscan Chocolate Tart Serves 8 200g dark chocolate (70% cocoa content) 100g butter 4 eggs, separated 1 tablespoon rice flour (or potato starch) 200g icing sugar 70g (½ cup) hazelnuts, toasted and skins removed extra icing sugar, to serve fresh raspberries, to serve crème fraîche, to serve

sugar to form a stiff batter. Stir in the chocolate and butter mixture. Whisk the egg whites until stiff, then delicately fold them into the chocolate mixture, lifting from the bottom of the bowl to the top using a thin-bladed silicon or plastic spatula if you have one. Pour the chocolate mixture into the prepared tin and joggle the tin so the mixture spreads evenly. Sprinkle the hazelnuts evenly over the tart and bake for 20 minutes. The tart should still be fudgy in the middle.

Preheat the oven to 150ºC. Grease a 25cm diameter ovenproof tart plate or metal flan tin. Line the bottom with baking paper.

When cooked, remove and leave to cool in a safe place. Sieve a fine dusting of icing sugar over the finished tart. Slice and serve with fresh raspberries and crème fraîche on the side.

Melt the chocolate and butter together in a metal bowl over a pan of simmering water. Stir well to combine. Whisk the egg yolks with the rice flour and icing

Tips & Tricks: Even though I’ve suggested rice flour here (because it’s a lot easier to find), the texture of this cake is better with potato starch.

Barbecued Butterflied Lamb Serves 4–6 juice of 2 lemons 250 ml (1 cup) olive oil 6 large sprigs thyme, roughly chopped 6 large sprigs rosemary, roughly chopped 5 garlic cloves, crushed 1 tablespoon cumin seeds, toasted and roughly crushed 1 x 1.5 kg boned leg of lamb (get your butcher to do this) sea salt and freshly ground black pepper lime zest, finely grated, to serve natural yoghurt with finely chopped mint leaves, to serve To make the marinade, mix together the lemon juice, olive oil, thyme, rosemary, garlic and cumin seeds in a large bowl. Add the lamb, cover it all over with the marinade and refrigerate for a minimum of 12 hours. Preheat a large grill pan or barbecue to high. Remove the lamb from the marinade, season well with sea salt and freshly ground black pepper and place on the hot grill pan or barbecue. Cook for 5 minutes on each side. Now, either continue to barbecue for around 20 minutes, turning once or twice more, or place the lamb on a tray and cook in a 180°C oven for 15-18 minutes, or until cooked to your liking. When the meat is cooked, leave it to rest for 20 minutes, loosely covered with foil, before carving. Serve with pita bread and garnish with lime zest and yoghurt mixed with finely chopped mint leaves on the side.

Pita Bread Makes 12 pita breads 310ml (1¼ cups) tepid water 1½ teaspoons dry yeast 1½ teaspoons caster sugar 450g (3 cups) plain flour ½ teaspoon sea salt 125ml (½ cup) olive oil Mix together the water, yeast and sugar in a small bowl and leave in a warm spot until the mixture foams (around 20 minutes). In a large bowl mix the flour and salt and make a well. Add the olive oil and the yeast mix and combine. Work the mix until it comes together and then turn out onto a lightly floured bench and knead for a few minutes until the dough becomes silky and smooth. Put it back into the bowl, cover with a tea towel and leave to prove for around 15-20 minutes. Preheat the barbecue to a medium heat. Divide the dough into 12 and roll out into flat, thin, even discs approximately 16cm in diameter. Brush the flat bread with some olive oil and place it oil side down on the barbecue. Gently brush a little oil on top as well. In a matter of seconds the bread will start to puff. After 20-25 seconds, flip them over and cook for 20 seconds more. Do not cook for too long or they will dry out too much and become crisp. When they are cooked, stack them one on top of the other and wrap them tightly in a clean tea towel to keep them warm and help them sweat a little and stay soft until ready to use.

RECIPES Jewelled Couscous Salad Serves 4–6 500ml (2 cups) water 185g (1 cup) couscous 40g butter 1 tablespoon honey 2 carrots, quartered lengthwise, then diced 1 celery stalk, diced 2 Lebanese cucumbers, diced 1 tablespoon cumin seeds, toasted and crushed 75g (½ cup) currants 70g (½ cup) pistachios 60g (½ cup) slivered almonds, toasted zest and juice of 1 lemon zest of 1 orange ½ cup coriander leaves ½ cup mint leaves sea salt and freshly ground black pepper, to taste te favouri uts our p l e b a l r the grill foodie unde

What is your earliest food memory? I’d love to tell you it was four generations of the family making tomato sauce down on our nonno’s allotment, but actually it is buying a World Cup Willy nougat bar from the milk bar at the end of my street. Willy was the cartoon mascot lion for 1966 World Cup; he didn’t make very good nougat but it was the must-have lolly for the under fives of the time. Your infatuation with cravats has extended to one of your book titles, Cravat-a-licious. When did they become a staple in your wardrobe? I’ve been wearing scarves since I was about 17. First, they came from Op Shops. I think I bought my first new cravat at the Harrods sale a few years later for $5; it was burgundy with gold spots. What are your tips for expanding the dining repertoire of a fussy child? Fool them! Or failing that, give them ownership of the dish. I’ve found that what they cook, they will tend to eat, even if it’s not very good. Having said that, my mother took a very different approach. She used to sit me on the back step with my dinner plate until I finished and I’m now distinctly unfussy. I might have resented her more if we didn’t have a perpetually hungry Border collie!

Dressing 250g (1 cup) Greek yoghurt handful of finely chopped mint leaves First measure out all your ingredients ready to assemble the salad. Heat the butter in a frying pan until melted, add the honey and cook the carrots over medium heat until softened. Season well with salt and pepper. To cook the couscous, heat 2 cups of water in a medium saucepan until boiling. Remove from the heat and add the couscous. Stir and allow to stand for a few minutes until the couscous absorbs all the liquid, then fluff with a fork. As texture is key, combine all the ingredients just before serving so the salad doesn’t get soggy and maintains its riot of textures. Combine the yoghurt and mint leaves to make the dressing and serve on the side to splash on the couscous. Tips & Tricks: If you can get barberries or pomegranate seeds, throw them in for extra crunch and colour.

(and some rather surprising secret ingredients). My wife is a fan of the jewelled cous cous salad or the slow roasted pork shoulder with roasted apples and very crunchy crackling. Is there a place in the world for ‘low-fat’ dairy products? Not if they are loaded with sugar! I admit I have low fat milk on my Weet-Bix most mornings, but I like Michael Pollan’s idea that we should only eat stuff our grandmothers would have recognised as food. What is your newest ingredient discovery? I tend to like to play with ingredients that are readily available. I think my latest has been with chilli pastes, sambals and salsa and how roasting red and green chillies can alter them wonderfully. Oh, and there are some amazing things you can do with frozen berries which keep some sunshine in my life over the winter! The magical gadgetry of the Masterchef kitchen bemuses us all. What is your favourite kitchen appliance? I’m not a fan of all that ridiculously expensive laboratory kit. I reckon all you really need to make tasty tucker is good knives, a wooden spoon and some good pans. Having said that, the modern kit in my kitchen that I do think is essential is a microplane for grating, a kitchen thermometer and a good blender/mixer. Oh and a good table top pizza maker and an ice cream machine are worth buying too, because nothing else can replicate their uses (although there are a couple of recipes for ice cream in the book that use technique rather than technology to make some serious good chilly sweetness without one!). Your latest book, Matt Preston’s 100 Best Recipes, shows us that we can indeed make friends with salad. What are your suggestions to accompany a Christmas feast? Given our magnificent climate and my European cultural heritage, I tend to want salads that reference Christmas flavours; like roast carrots tossed with sunflower seeds, dill, ricotta and a little honey dressing or a couscous salad full of raisins, pistachios, almonds, fresh soft herbs like parsley and a little lemon zest. These both go wonderfully with any bird like turkey or chook – and work just as well the next day as leftovers with slices of cold ham! The main thing for me is never to dress that salad until you sit down for lunch. Which of your best 100 recipes appears in your kitchen most regularly? The pastas, braises, salads, soups and anything barbecued are the regulars on the menu at home. The desserts, cakes and biscuits tend to be more special occasion stuff. In the restaurant industry that means being recognized by your peers in the Savour Australia Restaurant & Catering HOSTPLUS Awards and after a gala evening at the 2012 Queensland Awards the team at Moo Moo is still celebrating after scooping three major awards. Moo Moo Broadbeach received the top honour of being named Restaurant of the Year on the Gold Coast, an award that they have previously been honoured with in 2007. Vanilla Bean Panna Cotta with a Strawberry, Orange and Mint Salad Serves 10 Panna cotta 500ml pure cream 2 vanilla beans (split lengthways) 200gm sugar 500ml pure cream 3 Gelatine sheets Soak the gelatine sheets in cold water. Scrape the vanilla beans to remove the seeds which are kept in a pot. Add the first 500ml cream, sugar and vanilla – over high heat and stirring with a wooden spoon, heat the cream until the sugar is dissolved, but do not allow the cream to come to the boil. Add the soaked gelatine sheets, stir to dissolve. Remove from the heat, strain and allow to cool to room temperature. Whip the second 500ml cream to soft peaks. Cover and allow to rest at room temperature as with the cooked cream. When both creams are at the same temperature, fold whipped cream into the cooked cream and pour into moulds. Place in fridge to set overnight. Remove from the mould and place on serving plate. Salad 5 oranges 2 punnets strawberries 5 sprigs of fresh mint 100gm icing sugar 100ml 6 to 10 year old aged balsamic vinegar Peel and segment the oranges. Wash the strawberries, remove the stems and leaves from them and cut into quarters. Add to the orange segments. Wash the mint, remove the leaves keeping some for garnish, and roughly chop. Add to the orange and strawberries. Add the icing sugar and stir. Add the aged balsamic vinegar and mix through to create a smooth syrup. Allow to macerate for 3-5 minutes.

MARINA MIRAGE feature King Prawn and Spaghetti Aioli Serves 4 12 Fresh king prawns butterflied and vein removed 20 semi sundried tomatoes roughly chopped ½ onion, finely diced 1-2 birds eye chilli, chopped Italian parsley ½ lemon Sea salt and fresh cracked pepper 500g spaghetti extra virgin olive oil Clean and butterfly the prawns – set aside. Bring salted water to the boil. Cook pasta for 9-10 minutes or until al-dente. While the pasta is cooking start with the prawns. Heat a fry pan with a few good lugs of olive oil. Once hot, season prawns with salt and pepper, place prawns in shell side up reduce heat to medium and cook the prawns for 2 minutes on the first side. Turn the prawns and add the onion, chilli, tomatoes, and turn the heat down again to low. Add juice of half a lemon and 2 tablespoons pasta water. Take off the heat. The starch in the pasta water just brings the sauce together. Strain the pasta, add the prawns with a bit more extra virgin olive oil, check the seasoning also. Since the first-generation car was introduced in 1966, Corolla is officially listed as the world’s best-selling vehicle with more than 39 million units sold in over 140 countries.

1.2 million Australians can’t be wrong. Over the past 50+ years that is how many Corolla have been sold in Australia so when Toyota announced that they were releasing a sleek, sporty new hatch and Grand Motors Toyota asked if I would like to test drive it, the answer was an emphatic ‘YES’! Hope I didn’t sound too eager. First impressions count and the publicity blurb of ‘sleek, sporty’ was exactly right. A low, sloping bonnet and reduced overall height that accentuate the Corolla’s sleeker, more streamlined appearance gives the car the appearance of a ‘smooth operator’. That new look, which also carries through into the interior, has been attributed to the fact that this version of Corolla is the first to originate in Europe. The edgier styling combines smooth-flowing surfaces with sweeping lines all designed to provide a sense of agility that drivers expect in the hatch market. Cleverly the new interior layout has liberated more space for occupants and their luggage giving driver and passengers’ greater comfort and accessibility. Now how to explain ‘waku-doki’? No, it’s not a new dance move but a Japanese expression used to describe the philosophy behind the construction of the car and it caused a few smiles when I asked the Grand Motors team to please explain. Roughly translated it means that the new Corolla is a car that is fun to own and drive. Having zipped around town I can honestly say that it is most definitely ‘waku-doki’ and then some. The sharp styling is equally matched by the responsive acceleration, accurate steering and excellent ride comfort. That acceleration and responsiveness is because Australia gets only the most powerful engine on offer – a revised version of the existing 1.8-litre unit. Delivering 100kW the engine and its performance are designed to build on Toyota’s strengths of quality, durability, reliability, safety and fuel efficiency. In a word it works and beautifully. No fuss, no drama, you always feel in complete control and best of all, you look good driving it.

As with all cars there are technical aspects that need to be discussed. A lighter yet more rigid body shell and revised suspension, steering and seating position offer a more comfortable and engaging drive. These measures have resulted in a lower centre of gravity that improves high-speed stability and cornering agility. Corolla’s MacPherson strut front suspension has been revised while front and rear springs and shock absorbers have been fine-tuned for ride comfort, improved stability and excellent steering response. The electric power steering is more direct to provide greater response with better feedback and greater agility. Improved equipment levels and an emphasis on improved sensory quality and the use of lighting, font, colour and finish provide a more premium feel. The cabin is also noticeably quieter with extensive soundproofing to reduce engine and road noise. The new Corolla hatch maintains Toyota’s high standards in active and passive safety, with the aim of achieving a five-star Euro NCAP crash-test rating. There are many tests that are applied to all new cars involving all things technical and mechanical. For me the ultimate test involves children and going to the shops. The Corolla Hatch passed with flying colours on the school run and getting the children in and out at school. Now with a slightly lower profile it actually makes it easier for smaller ones to clamber in and out. While the hatch component makes loading and unloading the weekly grocery shop an incredibly simple procedure. Lots of space and ease of entry ensure you never feel like you are struggling with those cumbersome packages. There is a reason why Corolla in all its different guises has been so incredibly popular both in Australia and overseas. Stand Are you ready for your Body Corporate Levies to change again?

T

he calculation of who pays what levies in a body corporate has been contentious for some time. The major reason for this is that the Legislation has changed a number of times. It all started in 2003 when the then Labor Queensland Government introduced changes to the Legislation to make it clear that levies should be equal except where it was just and equitable for them not to be equal. This was interpreted by the Court of Appeal in 2004 to mean that everyone should pay the same amount of levies; unless it can be demonstrated that one unit in a body corporate has the effect of increasing the costs of running the body corporate. An example of this may be where a penthouse apartment has its own lift and the body corporate is responsible for monitoring the lift. After the Court of Appeal decision the legal system was flooded with bodies corporate responding to applications. The old Commercial and Consumer Tribunal saw the majority of these cases and for a period towards the end of 2009 it appeared that the body corporate section of the Tribunal did nothing else other than consider applications to make the calculation of levies equal. Obviously, when some unit owners have their levies reduced some must have theirs increased and this caused some concern and ultimately forced the then Labor Government in 2011 to amend the Legislation again to reverse the previous charges.

On 14 September 2012 the new LNP Queensland Government introduced a Bill into Parliament that will effectively require that the calculation of levies be equal once again. That Bill has now been sent to the Legal Affairs and Community Safety Committee which is required to report back to Parliament by 22 November 2012. Given the level of control that the LNP has over the Queensland Parliament it would seem a foregone conclusion that once the Committee reports back to Parliament the Bill will become law sometime towards the end of this year or early 2013.
