here’s a lesson for everyone in the success that is enveloping glamazon superstar Charlize Theron at the moment. A statuesque beauty she may be but acting was not the first choice of the South African born blonde. “I went to New York for three days to model, and then I spent a winter in New York in a friend’s windowless basement apartment. I was broke, I was taking class at the Joffrey Ballet, and my knees gave out. I realized I couldn’t dance anymore, and I went into a major depression. My mom came over from South Africa and said, “Either you figure out what to do next or you come home, because you can sulk in South Africa.” That sensible motherly advice had the desired effect as the young Charlize re-set her goals and began to explore the world of acting. She has described her ballet training as the source of her acting intuition. Acutely aware that her physical beauty could be a distraction, she would deliberately attend auditions wearing a big baggy T- shirt and loose jeans to allow those casting the roles to see her as much more than the sum of her spectacular physical parts. “Early in my career, I did make a very conscious decision to make sure that I was doing work that wasn’t necessarily given to me and that people didn’t necessarily think that I would be able to do.” She was already a well-defined movie star in movies as diverse as The Devil’s Advocate, The Cider House Rules and The Legend of Bagger Vance when she landed the lead role in Monster. Her transformation and searing performance as Aileen Wuornos, the Daytona Beach prostitute who became a notorious serial killer, earned her an Oscar in 2004 and set her on the path to Hollywood greatness. Roles followed in such diverse films as Hancock, The Life and Times of Peter Sellers, North Country, Young Adult, Snow White and the Huntsman and now her latest offering in the Ridley Scott directed Prometheus. Prometheus is a movie that is dear to her heart for a number of reasons, firstly the opportunity to work with the talented Mr. Ridley. “There is always that one director who’s like the dream, and Ridley was that for me. I used to always joke when I had bad experiences with first-time directors and would to turn to my producing partner and say, ‘I wish I was working with Ridley Scott! I want to be around someone who knows what they’re doing, and who takes control.’ He was always that guy that I kind of fantasized about working with so for me I always wanted it to work out, but I didn’t want to hinder the movie in any way.” The movie traces the adventures of a team of explorers who discover a clue to the origins of mankind on Earth, leading them on a journey to the darkest corners of the universe. This sci-fi thriller allows Charlize to strut her stuff as Meredith Vickers, an empowered woman whose character she spent a considerable time fleshing out with screenwriter Damon Lindelof. “When Damon and I spoke we really tried to explore how to make her more layered. That was when

I really got excited. Meredith is very different from anyone I’ve ever played. She’s a suit, essentially. She’s the machine that runs the machine that takes this mission into space and she comes across as very cold and frigid. It seems that it’s all about the economics for her and that she doesn’t necessarily come from one side or the other.” The film world of sci-fi has been a ground breaker, via Sigourney Weaver in the first Alien movie, in allowing female characters to be empowered. “I had a chance to play with that in Aeon Flux but Ripley is the classic, right? For any girl who ever saw that it was like, “Yeah! It’s time to dance!” I do think Ridley was the first person to take full advantage of how you could explore themes that mostly men in cinema had been allowed to explore. The great thing about him is that I think it lives under his skin. I think he has that kind of view of women. He naturally carries that. It’s a pretty special thing for a male director to have, an awareness of how to elevate it every single day, even if it’s not on the page. I think that’s innately in him because he feels that way about women. He likes those kinds of women.” Away from the screen Theron, who is about to turn 37, is known by those close to her as possessing a ready wit and a forthrightness that is, for a Hollywood star, uncharacteristically down to earth. She has been described by many who have worked with her as a ‘broad’ in the Ava Gardner mould – fearless, quick-witted, likes a drink, someone who swears naturally and readily. That old school glamour has come to the fore in a lavish ad for Dior’s J’adore Eau de Toilette (she has been the face of the fragrance since 2004). Using ingenious cinematic trickery, the director Jean-Jacques Annaud filmed her backstage at a fashion show with fellow ‘models’ Grace Kelly, Marlene Dietrich and Marilyn Monroe. She loses nothing in comparison with such legendary screen goddesses. She has no plans to walk from acting in the near future. “Once I say yes to something, I become super-obsessed about it – and I have an obsessive nature in general. How I want to play it starts at that moment. It’s a very lonely, internal experience. I think about the character all the time – I observe things, I see things and file things, everything is geared to what I’m going to do. You read the script and become obsessed with the character’s nature and her habits. When the camera rolls, it’s time to do my job.” Long may she reign. ELENI COMINO It’s the question every woman hears constantly – “What is it about females and buying shoes?” Sitting in her Chevron Island shop, Shoes on Chevron, and surrounded by shoes Eleni Comino smiles and comes back with her own question. “What is it about men and sporting equipment? It is always men who ask that, but, if you ask them how many golf sets, fishing rods, tennis racquets and yes, shoes for all the sports they have played and possess, they suddenly stop and think that maybe they are just as bad.” How Eleni came to be selling shoes by the seaside is a story that began in Byron Bay. “My parents were Greek immigrants from the island of Kythera and they had a milk bar and grocery store in Byron. My childhood was idyllic but I have been involved in retail from a very young age serving in that shop. Everyone from politicians to high court judges and visiting celebrities used to come in there. Looking back, the training I received in learning how to read people has kept me in good stead throughout my business life.”
Her life changed when at 21 she attended a dance at the much loved Cloudland in Brisbane. Eleni Feros, as she was then, saw Peter Comino, a young Greek man and he asked her for a dance. “He came from Charleville and we started doing ‘The Stomp’ which was all the rage back then. He joked that this was a rain dance out west but we had a great time. We just clicked in a really special way and within two weeks we were engaged and five months later we were married.” Eleni moved out to Charleville where Peter and she worked in the family business selling men’s and women’s fashion. “I was going from the beach to the bush but I loved the lifestyle and over time we had four children. By the mid 80’s Charleville was changing but luckily we got an offer to buy the business in late 1987 and sold up, packed the family in the car and drove down to the Gold Coast.” Kismet, fate, call it what you will but again Eleni’s life was to change by chance. “We were coming to Chevron Island to have lunch and I saw this shop with a sign in the window – ‘Summer Clearance’. Peter said to me that we would come back after lunch and while in the store I started talking to one of the girls and said that I was wondering what to do. Two days later she rang and offered me a job and I’ve been here ever since.” Sadly not every love story has a happy ending and Eleni’s beloved Peter developed oesophageal cancer. Within five months of the original diagnosis he had died. “One of the things he said to me before he passed away was that if this shop ever came up for sale I was to buy it. The family managed to organise his 60th birthday and we had a great party where we re-affirmed our wedding vows and he got to go around and talk to everyone there before the cancer got the better of him. He died in August 2003. In March 2004, Jenny Worger the owner put the business on the market. I told her I was interested, the sale was done and by July 2004 it was mine.” Eight years later the shop and her clients have become very much a part of Eleni’s life. “Most of my customers have become friends and I now have their children coming in to buy shoes. I specialise in European designs and stock the very best brands. I love coming to work because you never know who is going to walk through the door,” she says. Right on cue two women walk in and Eleni starts talking to them, casually asking the questions which will help her to help them make the right choice. A woman who loves people and a chat surrounded by beautiful shoes – who could ask for anything more.

The grande dame of Australian clothing design talks about her passion for fashion.
What was the catalyst for starting out in business on your own? You have to have passion, vision and drive to start out on your own. It was my love of fashion which pushed me and at the time I saw a need in the market for the understated, high quality product that was missing in Australian fashion. Was there something that you would describe as your ‘big break’ in the fashion industry? Working for someone else, learning how the fashion business worked. Being in the right place at the right time and gaining knowledge about the industry helped me to venture out and start my own label. Your reputation is founded on the impeccable elegance, cut and style of your clothes. Has that evolved over the years or has that always been your design mantra? I have always loved high quality, beautifully cut garments which enhance the body and flattering pieces that last. Do you design for a particular style of woman? I design for the busy woman, who is every woman today. Finding wardrobe solutions with minimum fuss achieves a great outcome. You started in 1965 which makes this your 47th year in business. In something as fickle as fashion what has been the secret to maintaining your edge? Fashion is about change and loving the need for change. Creating every collection is the challenge which keeps me motivated and interested. Retail has changed dramatically in the last ten years via shopping on-line and overseas purchases. How are you combating that and managing to draw customers to your boutiques? Retail is about service. We now also sell online through our e-store, offering a new convenience to local and overseas customers. Our service given in store by well briefed consultants who have great knowledge in how to maximise your wardrobe with a minimum of purchases, also provides a convenient service. Who or what has been your greatest influence in fashion? Different designers at different times have been influential. At one point in particular there was an era of Yves Saint Laurent and Valentino which inspired me. You have dressed many an Australian star for the red carpet. Are any of them particular favourites? We have many beautiful Australian celebrities and it’s a great honour that they love and wear what we create – Miranda Kerr, Megan Gale, Natarsha Belling, Rebecca Gibney, Dannii Minogue, Chris Bath, Lisa Wilkinson, Georgie Gardner and Sonia Kruger are just a few from a long list of that we love and there are many more. Did you come to fashion via design school or is it a God given talent combined with hard work and a great eye for detail? There weren’t many design schools in Australia back in 1965 so probably the latter – hard work is the most important attribute to being a success in the fashion industry and when you love what you do it’s not so difficult. What is your secret skill or talent? Understanding that a garment is meant to feel great and give you confidence, clothes that you buy should give you the feeling that it was made just for you. 16

MBFW sydney Never mind the weather, the forecast for spring/ summer is hot with bright bursts of colour.
It may be cold now but the fashion folk already have their summer hat on and showcased their Spring/Summer collections at Mercedes-Benz Fashion Week in Sydney. Colour, contrast and movement are the key trends with Manning Cartell, Carl Kapp, Zimmermann, Lisa Ho, Bec & Bridge and Talulah some of the stand outs producing collections for the summer fashion scene that oozes life and exuberant dressing. The enormous Overseas Passenger Terminal in Circular Quay was utilised to host MBFW with buyers, fashionistas, media and bloggers by the box load at every showing causing the terminal to burst at the seams. Naturally at any fashion week worth its invisible hem the celebrities garner most of the attention. The ubiquitous Lara Bingle, Jodi Gordon, Kate Waterhouse and Ruby Rose were just some to perch themselves front row and centre for the fun. Overall it was another week of impossible deadlines, stress and drama but that’s the business of fashion. 18

An example is Mister Zimi, the eclectic fashion label which is part Balinese colour and cut mixed with an Australian eye for what works here. The brand was unofficially born in 2007 when Zoe Paul and her husband Jimi travelled to Bali for a holiday. As with many tourists Zoe drew a few rough sketches, handed them to a local tailor and then received a delivery at their holiday villa addressed to ‘Mister Zimi’ – a combination of both their names. The initial item was a leather jacket which caused a minor sensation among Zoe’s friends when she returned home and who all wanted her to make something similar for them. From that point every holiday turned into a manufacturing mission, Zoe and Jimi would leave Australia with orders from customers and friends. When they returned their suitcases were crammed with everything from bikinis and bags to thigh high leather boots and summer dresses. A star label was born and realising that holidays were becoming work they made the decision in 2010 to buy a one way ticket to Bali and officially start the business using the original mistaken name. Scientists will probably scoff but if there is such a thing as a jewellery gene, the Hannaford family has it. What started many years ago in Adelaide as a business dealing in antiques and collectibles, very quickly morphed into a jewellery store specialising in fine stones and exquisite workmanship. Bill and Pam Hannaford moved to the Gold Coast in 1984 and opened a glittering show palace for all things bright and beautiful in Surfers Paradise, and 1993, to open in Pacific Fair. Today the business is run by daughter Nicole Hannaford-Daley. Her mother Pam is still involved on a day to day basis while Bill has stepped back from daily duties to concentrate on his great love of locating the very best stones in the world. For Nicole it has been a natural progression having spent her working life learning the business with her parents on hand to guide and mentor her along the way. “I’m the designer at 5th Avenue jewellers for the ‘Ti Amo’™ collection. Our family heritage is Italian and ‘Ti amo’ is an Italian expression of love. Using that term as our brand is a way of demonstrating our heritage and my passion for the very best stones and showcasing our superior design. This collection embodies everything that I believe in, all the things I’ve learnt in the family business,” she explains. For Nicole everything she designs flows from her love of natural stones. “The stone is the essential element. I create the concept for each piece, choose the initial stone and design around it. The multistone diamond pieces are my expression of classic styles. I am inspired by the world’s leading classical designers and the love of the business that has come to me from my family. business for decades and make a point of travelling to the world’s jewellery capitals to see the best of the best,” she says. Jewellery is in her blood and she is confident that this love of all things jewellery and gemstone will also pass on to her new baby daughter Grace. “She is such an inspiration for me and it was during the time I had with her at home, the motivation for my latest designs was born. I think that becoming a mother has changed my outlook on jewellery. The new collection you will see from me will include more dual purpose pieces – like a ring that can unclip and also be worn as a pendant. In these times, I feel that people will really benefit from buying the one piece of jewellery that can have more than one look.” These new and still under construction items will feature multipurpose pieces that can be worn to give the wearer varied looks for different occasions. Nicole is currently working on a matched pair of 3ct emerald cut Diamonds that will convert from a white gold drop necklace into a stunning pair of drop earrings. Nicole and her husband Darren (himself a qualified gemologist and master jeweller) are continuing to promote the beliefs set by Nicole’s parents. That is to love natural gemstones, offer the highest quality of service backed up by their extensive knowledge and not to give in to the pressure of the supposed ‘sales’ offered by many other stores. “Our credo is very simple. implant info Worried about the recent publicity regarding PIP breast implants? Dr John Flynn answers your concerns.
Breast implants have been in the news a lot lately and not always for good reasons. There is no doubt that breast implants are one of the most popular cosmetic surgery procedures requested. Most often it is because the patient feels she just “needs a boost” but more and more it is becoming about “putting something back” after having children. The reason that there are so many types of implant and a variety of surgical techniques is because everyone is different and it requires a considered process to determine what might be best for each particular patient. It is also important to put things into perspective and realise that breast implant surgery does pose potential risks. The usual risks of surgery relate to bruising, wound healing and the potential for infection but under expert care these things can be minimised and managed when they do occur. Important other issues relate to hardening of the breast implant (capsular contracture) and risk of rupture and leakage of silicone. Every patient forms a capsule around their breast implant and normally that is a soft, silky texture and presents no problems. Sometimes this capsule becomes thickened and firm and begins to contract. This in turn puts some pressure on the implant and makes it feel firmer. In more exaggerated cases it can feel quite hard and may need further surgery to correct this. Recently the issue of PIP implants has had prominence in the media due to the unauthorised changes to the manufacture of these implants in France. As a result the implants are no longer available and court action is proceeding, quite rightly, in France against the manufacturer. What do you do if you have PIP implants? Firstly, don’t panic! Discuss the issue with your doctor and get good solid advice. Problems relate to two potential problems. First, is the gel toxic? Second, do they need to be automatically removed? The answer to the first question is clearly NO! The gel is NOT TOXIC, despite some recent media reports to the contrary. The gel (the unauthorised gel) has been tested in Australia, UK and France and found not to be toxic. It has met all the ‘medical grade’ tests. 36

This point is critical to understand because it then makes other issues more easily resolved. Multidisciplinary panels of experts in Australia, UK and Europe have all assessed the evidence and agree that automatic removal of an intact PIP implant is not necessary on toxicity grounds. The gel does not affect breast feeding and does not affect an unborn child. There is more silicone in supermarket milk than there is in the breast milk of a woman with breast implants. So from this perspective if there is an intact implant it does not automatically need to be removed. What happens if there is a rupture or leak? In this circumstance we would treat this the same as for any other implant with a rupture. The implant needs to be removed and can be replaced with a different implant if desired. Removal and replacement of breast implants due to medical complications (such as rupture) is claimable on Medicare and private health insurance. It is important to realise that all implants have a potential for rupture. In the most extensive study reported so far, the “FDA Core Study” in the USA, it has been reported a general implant failure rate of about 10% at 10 years. Expressed differently, this is an annual risk of 1%. What we don’t know at the moment is whether the PIP rupture rate is the same or worse than this general risk. This information will be more readily available now that MRI scans have been used more frequently to diagnose implant rupture. There are some who as a result of the poor media reporting have simply become too fearful about PIP implants. The Medicare system has allowed rebates for such persons to be able to claim for a removal and replacement of PIP implants. There is still a cost however but at least this is mitigated by the Medicare rebate. Private insurance will also help out because of the item number, if you are in a fund. The American beauty pageant scene is to the outsider a bizarre world of beaming smiles and inane answers to questions about world peace. However when it comes to quick fixes and hiding problem areas those girls know every trick in the book. Here are some of the better ones for you to try at home. • Use duct tape to trim off those extra kilos. By taping the duct tape around the waist and stomach, you create the illusion that you’re a little bit thinner. • Beauty pageant contestants use hairspray for many things other than their hair. On your faces to keep makeup in place, spray it on your underarms that have been applied with deodorant to keep the deodorant from getting on clothes. Another trick is to spray hairspray all over your body to prevent jiggling when you walk. • Petroleum jelly has many uses but one trick is to rub it on your teeth to prevent lipstick getting on your teeth and also to keep your teeth shiny. • A quick remedy to puffy eyes is to put two spoons in the fridge (not the freezer) and then apply them directly underneath your eyes. • Hemorrhoid cream is a helpful tool to firm up jiggly bits, help get rid of cellulite and to temporarily tighten your skin. It makes your eyes look larger. • A handy tip if you need a quick tan is to mix cola with your suntan lotion. Whenever you’re at the beach, and you have some cola handy, mix it with your suntan lotion for a great tan enhancer.

julie goodwin’s salt and pepper squid Serves: 4 Preperation: 10 minutes Cooking: 10 minutes 4 squid tubes, cleaned Vegetable oil, for deep frying ½ cup (70g) cornflour 1 tsp salt ½ tsp ground white pepper ½ tsp cracked black pepper ½ tsp garlic powder ½ tsp ground dried chillies ½ tsp Chinese five-spice
Cut squid tubes open and lay flat. Using the blade of a knife, gently scrape the very fine membrane covering the squid to rough it up a bit. Score the squid in a criss-cross pattern and cut into strips about 2cm wide. Fill a deep-fryer to the recommended level with clean vegetable oil and heat to 200°C. Alternatively, half-fill a large pan and use a kitchen thermometer for temperature. Combine the cornflour and spices in a bowl. Toss squid through, coating thoroughly. Fry squid in small batches to maintain the heat in the oil. Each batch should take 1–1½ minutes to turn a light golden brown. Serve with lemon wedges, tartare or sweet chilli sauce, and green salad.
The key to tender squid is to cook it quickly so that it doesn’t end up tough. It needs to be served immediately after cooking. labelmagazine.com.au

RECIPES There are many different kinds of laksa in Malaysia. The Penang laksa that I grew up with is a fishy broth soured with tamarind that would be quite alien to the average Western laksa-eater. What we in Australia call ‘laksa’ is known in Malaysia as laksa lemak (‘coconut laksa’). This is the more common dish across South-East Asia, with near-identical versions found in both Singaporean and Thai kitchens. adam liaW’s laksa lemak Serves: 4 Preparation: 15 minutes Cooking: 20 minutes 80g dried vermicelli rice noodles 450g thin fresh hokkien noodles 1 litre chicken, fish or everyday soup stock 1 tbsp fish sauce 1 tsp salt 4 fried fishcakes, thinly sliced 2 chicken thigh fillets 125g bean sprouts 1 tbsp neutral-flavoured oil ¼ quantity curry laksa paste 400ml coconut cream 12 prawns, peeled and deveined, tails intact 200g squid, cleaned, scored and cut into triangles 8 fried tofu puffs, quartered Vietnamese mint leaves and fried shallots, to serve
This is a decadent dessert - perfect for the chocoholic! kate bracks’ Warm chocolate Pots Serves: 6 Preparation: 15 minutes Cooking: 40-45 minutes 375ml (1½ cups) milk 250ml (1 cup) Thickened cream 2 tbs dark cocoa powder 200g good-quality dark Chocolate, finely chopped 6 egg yolks 1 tbs caster sugar Preheat the oven to 130°C, and lightly grease six 150ml ovenproof ramekins. Place them into a large baking dish. Combine the milk and cream in a medium saucepan and place over medium heat. Heat until the mixture is steaming and then take it off the heat. Add the cocoa powder and dark chocolate and stir until the chocolate is melted and the mixture is smooth. Place the egg yolks and sugar into the bowl of an electric mixer and beat until smooth. With the beaters on slow speed, add a little of the chocolate mixture and mix until well combined. Add the remainder of the chocolate mixture and mix until well combined. Pour the mixture through a sieve into a jug. Divide the mixture evenly among the ramekins. Pour enough boiling water into the baking dish to come halfway up the side of the ramekins. Cover the baking dish with aluminium foil. Bake for 40-45 minutes, until the surface is set and there is a slight wobble beneath it. Remove the ramekins from the baking dish and stand for 10 minutes before serving. 50

Put the dried noodles in a heatproof bowl and cover with boiling water. Leave to soak for 10 minutes and then drain. Put hokkien noodles in a heatproof bowl, cover with boiling water and separate with a chopstick or tongs. Leave to soak for 2 minutes, then drain. Meanwhile, put the stock, fish sauce and salt in a small saucepan and bring to a low boil. Add the fishcake and cook for 2 minutes, then lift out and set aside. Add the chicken to the stock and poach for 5 minutes, then lift out, cool and shred. Blanch the bean sprouts for 30 seconds in the stock, then lift out and drain. Keep the poaching stock. Heat the oil in a wok or large saucepan over low heat and add the curry laksa paste. Fry for 5 minutes until fragrant and the oil separates from the paste. Add the poaching stock and bring to the boil. Reduce the heat and simmer for 2 minutes, then add coconut cream and cook for a further 2 minutes. Add prawns, squid and tofu to the wok and simmer for 3 minutes until the squid and prawns are cooked through. Adjust seasoning with fish sauce, sugar or lime juice if necessary. Put the noodles in serving bowls and top with the chicken and fishcake. Add the hot laksa soup and top with the blanched bean sprouts. Scatter with Vietnamese mint and fried shallots.

First impressions count and nothing makes an impact quite like the entrance to Glass in Marina Mirage. Through the double door to be greeted by a smiling co-owner Shanan Harmelin, you see on your right the expansive open plan kitchen where a team of chefs is working quietly and efficiently over a wide variety of dishes. This is obviously not the place for any colourful Gordon Ramsay inspired outbursts from the kitchen brigade. Down the passageway on the polished timber floors to the main restaurant and you are greeted with a stunning marine vista like no other. Your eye is first drawn to the luxury boats moving gently at their berths with a stunning blue sky as a backdrop and then around to the wide expanse of the Broadwater and it’s constantly changing seascape. An air of relaxation pervades all as you are taken to your table, chairs are pulled out and fresh white linen is expertly flicked out and on to your lap. Let the dining begin! A restaurant lives by the food that is presented and here is where the promise of the décor is matched by presentation on the plate. A popular starter is warm ciabatta accompanied by olive oil, confit garlic, goat’s curd with sticky balsamic. It is as delicious as it sounds and a perfect preparation for what is to follow. Oysters done in a variety of ways are available but for something different try them natural with chilled citrus and basil gel. Scallops, pork belly, prawn risotto are featured on the entrees but for that extra buzz for your taste buds try the roasted baby quail wrapped in Serano ham with drunken sultanas, sage, cannellini bean and apricot puree. As good as it gets. Now for the main event – this is where executive chef David Pommier gets the chance to really showcase his skills by bringing together all those years of culinary expertise. Isolating one dish from the many including veal rack, free range chicken, barramundi, baked lamb rump, whole sole and roast pork is a difficult ask but the crispy skin ‘Chinook’ salmon fillet seasoned with lavender salt and served with a smoked seafood croquette and baby beetroot mousseline is a stand out. A variety of subtle flavours will transport you to a state of gastronomic bliss. Having come so far it is fitting on your dining adventure that you savour the mild excesses of the dessert menu. Again choosing just one is a difficult task but the coconut and Amarenoo cherry soufflé topped with a decadent Bourbon flavoured, Belgium white chocolate sauce is worth the slight feeling of guilt that will accompany the dish. Life is to be enjoyed so savour these moments and mouthfuls. Casual by day, chic by night, Glass has been created to enhance the natural beauty of the Gold Coast. Ingredients: 50g pistachios, finely chopped 50g green olives, stoned and finely chopped 1 bunch fresh coriander, finely chopped 3 - 4 tablespoons freshly grated white bread 2 eggs, beaten 1 clove of garlic, finely chopped Lemon juice to taste Salt, black pepper 5 small lamb fillets Olive oil Small wooden skewers/toothpicks, soaked in water Ingredients Balsamico Sauce: 1 shallot, finely chopped 4 tablespoons balsamic vinegar 1 - 2 tablespoons sugar 3 - 4 tablespoons olive oil Preparation: Mix pistachios, olives, coriander and egg and blend in enough freshly grated bread to make a spreadable mixture. Season with salt and pepper and add lemon juice to taste. Halve the lamb fillets lengthways and quarter. Spread mixture on one side, form into rounds and fix each with a skewer. Preheat grill with griddle to setting 9 (small grill setting 8) and grill lamb fillets for 5 - 7 minutes, to taste. In the meantime brown the shallot in hot oil. Add vinegar and sugar and reduce at medium heat. Add salt and pepper to taste. Sprinkle over lamb fillets on griddle prior to serving. Tip: Lamb fillets can also be cooked using the fan-assisted oven grill at 220°C (third shelf from bottom). To do this, preheat oven and tray and grill fillets on the hot tray for 7 - 9 minutes.

making the moo Experience the difference that time, care and careful handling can make to beef that has been dry aged.
Dry Ageing – it may sound like every woman’s worst nightmare but if you are discussing beef it is in fact highly desirable. In short, dry-aged beef is the result of premium cuts that have been hung to dry for various lengths of time resulting in a steak that is like no other you have ever tasted. The process involves extra care and expense as the beef must be stored at near freezing temperatures. Not all beef is suitable for this treatment as the process requires meat with a large, evenly distributed fat content which is usually associated with only the top grades of meat. The key effect of dry aging is the concentration and saturation of the natural flavour. Seldom do you see dry-aged beef outside of the very best restaurants or up market or boutique butcher shops. The process changes beef by two means. Firstly, moisture is evaporated from the muscle. This creates a greater concentration of beef flavour and taste. Secondly, the beef ’s natural enzymes break down the connective tissue in the muscle, which leads to the tenderest beef. At Moo Moo The Wine Bar + Grill at Broadbeach On The Park, under the direction of Executive Chef Damien Draper, our very own In-House dry aged Black Angus Rib Eye has been hung for six to eight weeks at a temperature of between four to eight degrees. To further enhance the taste sensation our pasture fed beef comes from the lush green range around Gippsland in Victoria and is never more than 30 months of age. Why pasture fed? The answer in one word

is flavour. As it ages it develops a better flavour profile as the bone imparts marrow richness to the meat which is hung in complete rib sets and then taken away for bone sawing and cutting to produce a beautiful rib fillet on the bone. The Moo Moo recommended serving size is a flavoursome 400 grams and is always accompanied by lemon to enhance the intensity of the beef and match the rich flavour which could best be described as smoky or woody. On the palate it is soft and supple due to the sinew breakdown which occurs during the controlled ageing span. Unlike normal cuts of meat, Dry Aged beef does not benefit from cooking past medium. A normal steak can accommodate ‘well done’ but as it is hung, Aged meat loses moisture so for the best result it should be seared, sealed and then slow cooked to a perfect medium rare. As you would expect to pay more for a bespoke suit so it is for this cut of beef that has been invested with time, care, consideration and love. Accordingly the price tag is a touch higher but for the beef aficionado it is well worth the slight extra expense as it has a flavour like no other. The Born This Way Ball is an Electro-Metal Pop-Opera; the tale of the Beginning, the genesis of the Kingdom of Fame. How we were birthed and how we will die celebrating,” she said. The last word on the Gaga experience should go to the Lady herself when questioned back in 2008 about her sudden rise to fame. “I’ve always been famous, it’s just no one knew it yet.”

Based on the Yaris platform, Prius c has a longer interior and more legroom and hiproom front and rear than Toyota’s popular compact car. Standard features include smart (keyless) entry and start, automatic air-conditioning, 6.1-inch touch-screen display audio, CD player, Bluetooth audio streaming and phone connectivity, USB port with iPod connectivity, a 3.5-inch colour thin-film transistor multi-information display, 15-inch wheels with a full-size spare, cruise control, foglamps, power windows and mirrors, and 60/40 split-fold rear seat. Safety is also standard with seven airbags, reversing camera, vehicle stability and traction control, anti-skid brakes with brake assist and electronic brakeforce distribution, and hill-start assist control. High-grade Prius c i-Tech is $26,990 – just $3,000 extra for upscale features including satellite navigation with live traffic updates, alloy wheels, self-levelling LED headlamps with washers, power retractable exterior mirrors, a larger rear spoiler, premium seat coverings and interior trim. Engineers adapted Toyota’s Hybrid Synergy Drive technology to the smaller Prius c platform by reducing the size and weight of major components, while also improving efficiency. Weight reductions include more than 40kg from the redesigned hybrid system, and an air-conditioning unit that is thinner, lighter and more efficient. Prius c, like all new Toyota vehicles, is covered by Toyota Service Advantage with a capped price of $130 for each of up to six scheduled services in the first three years or 60,000km. Owners of Prius c wishing to keep their vehicle in pristine condition can choose from a range of Toyota Genuine Accessories specifically designed to protect their car. A successful business partnership can be a wonderful agreement but if it goes wrong, look out! “We’re breaking up!” It is a situation many people are familiar with in the context of a personal or family situation but away from the personal aspect is another area that is fraught with even more pitfalls. The complexity of the breakdown of a relationship with partners in business has the potential to create even more legal minefields and in many ways these separations of a partnership or business can be even more difficult and complex. Just as in a normal relationship the business connection often starts in a honeymoon period. This is where the business partners get together filled with enthusiasm and good intentions and set off on a business life together filled with wonderful ideas of creating or operating a commercial operation together. It is at this juncture that wise heads should prevail and seek professional advice. It is essential at this time that the potential partners sit down and consider all possible scenarios, the good and most importantly the worst case scenario. Just as a business plan is an essential tool to enable any business to chart the path ahead so to it is essential that the partners consider how the partnership may be determined if things were not to progress well. All parties should consult a solicitor who is experienced in these matters who will listen to all sides and then draw up a Partnership Agreement, Shareholder’s Agreement or a specific business plan with every contingency accounted for especially in the event of dissolution of the partnership. These documents will be, for want of a better word, the blueprint for all concerned parties and will set out the relationship between those parties and the business. Having the agreement or plans in place can save friendships, ruinous expenses, anger and frustration as they clearly and concisely spell out the sharing of profits, expenditure and duties within the business. Most importantly should the business fail or one party wish to sell, they can set out the perimeters where the partnership can be dissolved and the options relating to selling either a share or the whole of the business to the satisfaction of all involved. In basic terms, when a partnership dissolves there
are a number of likely alternatives where two partners operate that business and they are: 1. Party A buys out party B 2. Party B buys out party A 3. The business is sold 4. The business is wound up and the partnership dissolves. In these litigious days it is better to be prepared for all scenarios and imperative that forward planning is undertaken at the beginning or formation of any business partnership to avoid costly and time consuming disputes later on.
