Perthshire lamb with spring

vegetables, gnocchi & wild garlic Ingredients: 1 x 6oz lamb rump 500g peas 1 bunch of green asparagus 1 bunch of white asparagus 1 bunch of wild garlic 250ml lamb jus 100g gnocchi (recipe to follow) 20g wild garlic dressing

Gnocchi: 160ml water 85g butter 5g salt 225g strong flour 2 eggs 2 egg yolks 15g mustard 75g parmesan

Start by making the gnocchi and allowing it to rest in the fridge for a short while. Place the water, butter & salt in a pan and bring to the boil, sieve in the flour and mix on a low heat with a wooden spoon until thick and firm like a dough. Take off the heat and add to a food mixer, once slightly cooled then add the eggs one at a time then the yolks, making sure that it has fully incorporated before the next is added. Once silky, add the mustard, parmesan and a few roughly chopped soft herbs. Wrap in cling film and place into the fridge. While the dough is relaxing, blanche 400g of garden peas in salted boiling water and refresh in ice cold water, place them into a food processor and blend with a little of the salted water until you have a puree. Add the other 100g of peas and reserve to the side. For the wild garlic dressing, grate the parmesan, grind

Wild Garlic dressing: 50g parmesan Âź lemon zest 30g wild garlic 200ml rapeseed oil Pinch of salt

down the wild garlic with a pestle & mortar then add the cheese. Finely grated lemon zest with a pinch of good quality salt until you have a course paste. Slowly add the rapeseed oil until you have a thick dressing. Heat up a shallow pan, season and oil your lamb rump and seal it off, place into a pre heated over at 190*c and roast for 8 minutes. Once cooked, leave to rest for another 8 minutes while you blanch the asparagus for 2 minutes, the garlic for 20 seconds then season with a little salt as well as bringing your pea puree to the boil. To plate the dish, carve the lamb rump to your liking, place the puree on the plate, assemble the asparagus and garlic around the dish at top with the lamb, and add a little lamb jus and the garlic dressing to complete the dish. Bon Appetite!

Care to make a difference? Taking the first steps to becoming a foster carer is a big decision, but it can be one of the most rewarding decisions you will ever make. Currently there are children and young people across Scotland who need safe, caring homes, with adults who will help them look to a positive future. Children and young people who need foster carers may have suffered neglect and abuse, or their parents may have chaotic lives, affected by alcohol or drugs, and be unable to care for them. Care Visions is one of Scotland’s leading foster care providers and we are looking to recruit new carers across Scotland. You don’t need formal qualifications, but you do need some life experience and be willing to participate in our assessment and training programme. We provide an allowance when a child is placed with you

and ongoing support from a dedicated fostering social worker. Our foster carers can also meet up in local groups, to share ideas and information. If you are over 25, have a spare room in your home and want to make a difference to a young person’s life why not take the first step to becoming a foster carer with Care Visions?

If you are interested and want to talk to one of our team, please call 01786 477810 or email makeadifference@carevisions.co.uk and we can give you more information on what’s involved. That first call could be the beginning of a better future for a young person.

2017 MULBERRY BUSH MONTESSORI BALFRON 10k The countdown to the 2017 Mulberry Bush Montessori Balfron 10k is on – and this year an alteration to the traditional route will offer a new challenge for runners. With just over two months to go before the Sunday, April 23 event, race organisers are urging people to put their new year fitness resolutions to the test and sign up for the popular event, which regularly attracts more than 700 entrants. During its 10-year history the fundraising event in the Stirlingshire village of Balfron has gained a reputation among runners as a tough, yet rewarding test thanks to its undulating route along scenic country roads overlooked by the Campsie Hills. This year however, the route will take in more of the village itself, with a new 1.75km-long section which includes Balfron’s main street. Organisers hope the change of route will provide a fresh challenge and more of a spectacle for entrants and villagers alike.

course meant it wasn’t all that visible from the village itself. We hope to change that by bringing the event through the heart of one of Scotland’s most scenic villages. “We also look forward to welcoming the first runner home, who will set our new course record.” Appealing to both the serious runner as well as the weekend runner and first-time 10k-er, the event’s popularity has seen it consistently appear in the top rank of Runner’s World magazine’s league table. Since the first event in 2007, the Mulberry Bush Montessori Balfron 10k has raised more than £55,000 for the local schools and various charities.

Race director Nigel Johnson said: “Hundreds of runners sprinting down Balfron’s main street will be a thrilling sight and we hope to see lots more local spectators as a result.

The race, which starts at Balfron Campus at 11am, features an officially measured course, chip-timing, winners’ prizes plus goody bags including commemorative medal and T-shirt.

“For the past decade, the 10k has been the biggest participation event in Balfron’s calendar, but the original

Park Life Events April-May APRIL SPRING FEST LOMOND SHORES 1st & 2nd April.

Visitors to this year’s Springfest can get a taste of different cooking techniques with a packed line-up of demonstrations from inspiring chefs. Springfest takes place at Loch Lomond Shores on Saturday 1st and Sunday 2nd April and is one of the country’s largest free festivals. The festival is part of Scotland’s Year of History, Heritage and Archaeology in 2017, which will shine a spotlight on Scotland’s rich history and heritage. Most of the food and drink suppliers are either linked with Scotland, or use Scottish produce and are passionate about food and drink. This is also reflected in the cookery demonstrations scheduled to take place. Mark Williams of Galloway Wild Foods, one of Scotland’s top foragers, will be wowing crowds as he prepares a variety of quick and delicious snacks and meals made using the plants you can pick for free around Scotland. Mark will also be whipping up some delicious cocktails using wild ingredients and everyday plants. Festival goers will also get a sneak peek at the menu for The Shore, Loch Lomond, a new luxury venue from the team behind Glasgow’s 28 |

luxury 200 SVS events and spa brand which will be opening at Loch Lomond Shores later this year. Focusing on using high quality, local produce, chefs from The Shore have put together two tantalising dishes to demonstrate on the day, putting an innovative and tasty twist on traditional Scottish cuisine. Demonstrations from Glasgow-based The Experience and one of the festival’s favourites, Flavour Magic will be showcasing how to wow your taste buds with their amazing salts, spices and herb rubs, will round out the cookery demo schedule. The festival, just a short drive from Glasgow, Stirling and surrounding towns is free to attend and opens at 10am and closes at 6pm both days. Reading & Language Help Strong language skills are so important in our modern world, however many children and adults find reading and writing difficult, despite good teaching and additional support. Not only can this hinder academic progress, it also has serious implications for overall self esteem. Dyslexia is one of several barriers to learning and families can struggle to find help. In Stirling, however there is the unique approach offered by Cellfield which has successfully helping many people overcome dyslexia and similar processing difficulties. Cellfield is provided by teacher, Fiona Macdiarmid – known to many in Stirling as Director of the popular Kip McGrath Education Centre – and the Stirling Cellfield Centre is just one of several UK Centres providing Cellfield. Cellfield is based on neuroscience and brain plasticity research. The programme stimulates brain networks which process the visual and auditory aspects of reading to bring about sustainable improvements in reading and language processing. Clients can gain on average 2 years in their reading age; however gains in reading age

are only part of the story. Fiona explains: “everyone’s experience of Cellfield is unique but all our clients have found it helpful because it pushes their brains to work more effectively”. Once clients break through the barrier to their learning, “the benefits can be wide ranging” says Fiona, “in addition to improvements in reading and language, many clients tell us Cellfield is life changing because of the positive impact it has on overall confidence and self-belief. It’s a privilege to see the difference it can make to people’s lives”, she says. Contact Cellfield in Stirling on 01786 4475827 and visit www.cellfield.co.uk

Saving lives for 50 years

In 1967 a local group of friends and enthusiasts, with a love of the mountains, started the Lomond Mountain Rescue Team. As the team celebrates its 50th anniversary, it is recognised as one of the busiest Mountain Rescue Teams in Scotland averaging 25-30 callouts each year. The team comprises 35 volunteers whose aim is to provide emergency assistance to walkers, climbers and other members of the public in an area covering over 1000 square

miles in one of the most popular but geographically diverse mountain areas of Scotland, including the Lomond & Trossachs National Park. The Team is on call 24 hours a day, 365 days a year. All Team members are experienced hillwalkers and climbers, each holding a mandatory first aid qualification as a minimum, although many go on to qualify

at an advanced level. The Team is deployed in response to a call for assistance from Police Scotland. Our principal activities revolve around search and rescue in challenging, remote environments evacuating casualties and others in need, back to places of safety, often in poor or wintry weather or at night. The team are on hand to assist, where needed, with keeping people safe during outdoor events, supporting missing person searches, helping in major incidents such as flood and high snowfall, animal rescue amongst others. The Team operates from its base in Drymen where the team vehicles and equipment are kept. It costs approximately ÂŁ25,000 to run the team annually, which is only partially covered by government grants, the remainder the team finds through fundraising. As the team looks to the next 50 years of supporting outdoor enthusiasts, it is planning modifications to the base to improve training facilities.

More information, including ways to support the work of the team, can be found here: www.lomondmrt.org.uk

Take on the RSPB’S Wild Challenge! This April will be the fifth anniversary of RSPB Scotland Loch Lomond, and with our new circular path opening for the first time this spring, it’s now easier than ever to experience this special site for yourself.

Betina Finault copyright David Palmar (photoscot.co.uk)

RSPB Scotland Loch Lomond was purchased with the help of Loch Lomond and The Trossachs National Park, Scottish Natural Heritage (SNH) and a public appeal in 2012. Since then, we’ve been improving the site’s amazing mix of meadows, ancient woodland and floodplains for wildlife, and last year, we opened a Nature Hub and car park and ran regular events for visitors. This year, our new trails will open up access to new areas. Airey Woodland Trail winds through the woodland and into a meadow nicknamed ‘Orchid Field’ due to the abundance of orchids there in summer, while Viewpoint Path is fully accessible and leads out to the breathtaking views of Ben Lomond and Conic Hill.

Bug hunting copyright Margaret Thwaites

Soon, the woodland floor will be covered in bluebells and in summer, our ‘Twenty Acre’ meadow comes to life with 120 different species of flowering plants. Wild West Coast of Argyle will delight you with numbers from Steve Ray Vaughan to Clapton and Gary Moore to Jon Bonamassa. If you like the blues; they’ve got the blues.

Fri 26th - Sun 28th May 2017 £5 per day entry fee • Under 16’s free Strathyre Music Festival is back again for a 5th year. An eclectic mix of Rock, Folk, Blues, Americano, Traditional and Country; something for everyone. Hosted by top local band, Balvaig; this music event is considered to be Scotland’s largest community festival for 2017. With 50 acts, comprising 100 musicians over 3 days; this promises to be our best ever Festival yet. The Festival is opened Friday night by “Balvaig” who will aim to get you all in the mood for what is to be a great weekend of music. Whereas Balvaig will open the Festival, in true Scottish style we will end the evening with a Ceilidh courtesy of Stirling’s own Riverside Ceilidh Band. I hasten to add, no strangers to our Festival. Friday night over let’s move onto Saturday’s line up where we have plenty of musicians to entertain you to the wee hours. They include top south Lanarkshire band ‘Mid Town Riot, who will be making their third appearance. Directly after them we have Benedictus. Based in Dundee, they always can be relied upon to bring a huge following. To finish the evening we have top blues band ‘Mudslide’; regular visitors to The Strathyre Music Festival. This foot tapping, spine tingling, storming blues band from the

Sunday; it might be day three of The Festival but we aim to go out with a bang. We have a great selection of musicians for what will be our final day. Among them is local Aberfeldy girl Elsa McTaggart, accompanied on piano accordion by Mr Lister. Elsa will treat us to a mix of traditional folk, jazz and electronics. Last but certainly not least from the heart of Glasgow we have “Papa Shandy and The Drams”. For those of you that have heard them before at our Festival you know you will not be disappointed. For those of you that haven’t, then it’s a must. Performing a mixture of traditional Irish and Scottish music, folk, bluegrass and Ceilidh music; no better way to end the weekend. All this wonderful music for the princely sum of £5 per day. Children below 16 come free. All proceeds to next year’s Festival. Tickets available on the day or if you are passing pop into the box office situated in The Strathyre Village shop. Please be sure to visit the Market Place in the centre of our village. The Market will be open on Saturday morning at 11.00am and Sunday from 12 noon. With all local produce and crafts on display, it makes it well worth a gander. For the first time this year we have The Market Stage. Acoustic by nature; this is our second music venue in the village. If you fancy a slot email our Market Stage Manager, Andy Bates at andy@balvaig.co.uk.

Spring at Benview! Spring has sprung at Benview and we are pleased to see our greenhouses chock full again with bedding plants and our famous hanging baskets. You can order your baskets now and we’ll water, feed and pamper them until they’re ready for collection in May. We’ve troughs and planters too for doorsteps and windowsills. This year we have a super range of azealeas and rhododendrons in a wide range of colours, all suitable for our local slightly acid soil. They prefer a well drained, moist soil and we have some great ground cover plants in stock for underplanting. We all know there is nothing sweeter than fresh peas from the pod or a newly dug carrot, so if you like the idea of growing your own, our spring veg is available to buy if you’re looking for a head start on your summer harvests. We’ve everything from cabbages to cucumbers so drop in and have a good look in our greenhouses. It’s the healthiest and tastiest treat to pick your own produce so plan now

to reap the rewards this year! We’re all encouraging wildlife into our gardens and this year we’re offering companion plants to accompany our veg so look out for our insect friendly pollinator plant packs. Our mini gardens competition, open to all children from nursery age to P7s will be held this year on Saturday 3rd June. You can make your mini garden at home or you can drop in to one of our workshops during the spring weekend on Saturday 27th, Sunday 28th and Monday 29th May, no need to book, just come along any time. We’ll have containers, compost, stones, craft materials and plants available and we encourage you to bring special objects or toys with you to make your garden extra special. From Tuesday 30th to Friday 2nd June we’ll have drop in workshops from 3pm onwards if you’d like to come after school and make a mini garden. More details will be on our facebook page from mid May.

Date for your diary... Saturday 29th May to Friday 2nd June Make your own mini garden – drop in workshops at Benview – suitable for families with children from nursery school age.

Loch Venachar

Distance 7km Time 2Hrs

Take a walk on the wild side...

Stage 1 There is a car park on the left at the end of the public section of the road to Invertrossachs along the south shore of Loch Venachar. Begin the walk by following the forestry track which climbs gradually across the hillside from here. The route soon passes a bench near some electricity pylons. Keep straight ahead when another track joins in from the left. The next section of the forest has been clear-felled and now gives excellent views across the loch to Ben Ledi.

Stage 2 The tall sitka spruces soon block out the views once more (unless more felling has taken place). After another kilometre or more a fork is reached. Turn right here to reach an attractive little lochan almost hidden in the forest, a good place to spot Whooper Swans. The track climbs round the north side of the lochan before swinging to the right back into the trees.

Stage 3 The track now passes through a rocky little bealach or pass, with a small quarry on the right at the top. From here there are grand views over Loch Venachar. Almost immediately the track forks; take the right hand branch.

Stage 4 The track makes a long and winding descent to the shores of Loch Venachar where it meets part of the National Cycle Network, specifically Route 7 which runs from Carlisle to Inverness. Turn right along this, which is a private tarmac road at this point.

Stage 5 The route gives excellent views across the loch, especially of Ben Ledi directly opposite and the Venachar cafe on the opposite shore. Pass the Invertrossachs Scouting Centre and the Loch Venachar sailing club before the track eventually leads back to the start after around two and a half kilometres.

LOCAL PROPERTY MARKET BOOMIMG BACK TO PRE - 2008 PRICES & how to structure your selling fees

By Gordon Adams of G & S Properties

Having been through a few property recessions’ since 1970 they all recover in varying degrees but not as much as the latest one from 2007/2008. After the 2008 crash property prices across the UK fell through the floor, yet in Scotland although there was a substantial drop, but not as in the south. The canny scots had not over inflated their property market as much prior to the crash and therefor Scotland did not have as steep a hill to climb back up. In general prices today, up to £750,000 have never been as strong with houses selling often over home report valuations. We are also seeing this in our rental business where tenants are paying incredibly high rents, again possibly because of supply & demand. Although prices are booming in many sectors “prudence” is the watchword, never assume that you will obtain the price you aspire too and work on false hope – if you have decided to move then sell first. When it comes to the purchase of your new home your solicitor will not conclude the missive unless he can be assured you either have the purchase price in cash or you have an iron clad

offer from a lender, and the deposit to go with it.

you saving a few hundred pounds on the sale fees.

At G & S we warn our clients of accepting offers subject to surveys, loans, and the sale of the purchaser’s own home as this just starts uncontrollable property sale chains and when one fails, the whole chain above fails.

I have said it before “pay peanuts you will get monkeys”

By selling your property first you know exactly what funds you have available and that you are a cash buyer able to conclude without a suspensive offer – this will put you ahead of others making suspensive offers. In a rising market, as we have today you need an agent who can take advantage of the market conditions and filter buyers thus helping you to achieve the top price for your home. Remember having not purchased you are under no pressure to sell at the wrong price. Whereas buying first if your sale goes wrong pressure builds and the price of your house can only go one way - DOWN. Vendors often shop about to various agents to obtain the best deal in sale fees and costs, but, with these cutprice fees vendors perceive that they will obtain the same service as they will from a proper fee – This is not the case. Estate Agency is not about obtaining the cheaper fee deals but more about achieving the best price for your property with the least hassle and by paying a proper fee you could well achieve several thousands of pounds more on your house sale rather than

Whereas if vendors want to be sure of a best deal in fees the only way is to incentivise the agent with a fee commentate with the price the agent achieves - otherwise the agent will get nothing. There is a reason why “real” estate agents and some competitors command higher fees, as they can make you thousands in negotiating the top price. Undoubtedly an estate agent offering a cheap fixed fee will sell your property, but with no incentive to the agent, they will sell your house at any price and not achieve the highest price. Keep in mind some agents are not just working for the seller but for what the buyer has to offer the agent at the expense of your best price? another house, a mortgage, a referral or even a fee? So often we see vendors fooled into instructing an agent who has been given a high unrealistic value just to obtain the business with no hope of achieving that value, then after a couple of weeks advises to drop the price and still gets paid for obtaining less than their original valuation. Vendors should be strong with their fee choice and options, making it clear to agents if they cannot get the price they quote and eventually ask for a price drop then they will be dismissed with other agents instructed.

IF YOU ARE WISHING TO MOVE - NOW IS THE TIME TO GET INTO THE MARKET, RING ANY OF OUR OFFICES AND OBTAIN THE BEST AND PERSONAL REALISTIC ADVICE WITH A FEE STRUCTURE YOU CAN DESIGN. www.parklifescotland.co.uk | 79
