A few months after moving from New Jersey to Nigeria, my children were invited to the birthday celebration of a one-year-old girl. The party had face painting, small chops, a bouncy castle, Chinese and Nigerian deejay, a candy centre, paddleboats and a fashion show. I believed I was a children’s party expert yet this toddler’s celebration was louder, livelier and more extravagant than any party I had ever attended. As I sat at a table enjoying the spectacle, a server plonked a bottle of Moët & Chandon in front of me as casually as if it were a bag of Pure water. Then he placed another bottle of Moët & Chandon Rosé beside it.

To me, champagne was a drink intended for rare and sacred occasions like my first anniversary. On that day, a year into our marriage, my husband and I toasted each other with a miniature bottle of Veuve Cliquot. We sipped champagne from the crystal glasses we received as wedding gifts and felt like royalty.

My generation grew up watching a TV show called Lifestyles of the Rich and Famous which touted “champagne wishes and caviar dreams” as the ultimate in luxury. The series showed scenes from the lives of oligarchs as they sunbathed on yachts with women in string bikinis lounging beside them. To me, casual champagne consumption was in the same league as owning a private jet. At this toddler’s party in Lagos, however, I was amazed to see guests guzzling champagne as if it were as ordinary as, well, Pure water. The server returned with champagne glasses. He with a small bow, handed it to me. As the evening drew to a close, I sought out Tola, the party planner. “It’s been unforgettable,” I said, earnestly. “You served Moët! This is the best party I’ve ever been to.”

Tola’s eyes narrowed as she studied me, trying to see if I was joking. “You mean,” I said, as comprehension dawned, “there are parties better than this?” What I learned in the years that followed is that champagne is a beloved and ubiquitous drink to a certain breed of Lagosian. Many people have informed me that Nigeria is the world’s penultimate champagne consumer, second only to France. Research doesn’t back this up although it does feel true. While Nigeria is the largest champagne importer in Africa, globally it ranks just outside the top 20.

Who would have imagined that a sparkling wine produced from grapes grown in the Champagne region of France could play such an outsized role in Nigeria? For some people in Lagos, an event is not considered worthwhile unless champagne is involved. I’ve seen champagne served at book readings, baptisms, board meetings, playdates, football tournaments and even in the VIP room of the nail salon. After my father-in-law’s funeral—a great man who lived a great life—we gathered with relatives by the lagoon and reminisced over drink was the perfect complement to the memories and stories pouring forth.

In 2000, I started working in hospitality and bartending in Lebanon. I enjoyed the job, especially talking to customers. I’ve attended many courses and have studied hospitality to train for my job. My favourite experience was World Class Week, a seminar in South Africa that provided continuing education in the

What do you think about Lagos?

What’s the most important skill a bartender should have?

A bartender should have knowledge and be up to date. Research must be done. There are always new items emerging, new spirits you should know about. It’s also very important to interact with your customers appropriately. You should know when to talk and when to listen.

Is there a drink you’ve made that you thought would be a hit but didn’t catch on? Gin Blossom, the cocktail I mentioned earlier, wasn’t as popular as I expected. I don’t know why people didn’t like it more than they did because I think it’s a very nice cocktail.

It’s still a fresh place to bartend. Not too many people know how to create unique cocktails.

What is your favourite drink to make?

I like to make Gin Basils. I also like making Gin Blossoms. It’s gin

What are some of your favourite ingredients to work with?

My favourite ingredients are all homemade. We make our own infusions and syrups at R.S.V.P.. We make fresh ginger, lavender, pineapple, jalapeno and hibiscus syrups. We make almost all the syrups we use ourselves. We also make chocolate vodka.

What are your plans for the cocktails at R.S.V.P.?

We are in the tasting phase of a new R.S.V.P. cocktail menu. When the tasting phase is complete, we will debut the new menu.

DIRECTIONS In a bowl, mix the garri, breadcrumbs, seasoning cubes, suya spice, garlic powder, ginger powder, dried herbs and pepper. Whisk your eggs in a small bowl and set aside. Place your chicken in the garri breadcrumb mix, move it to the bowl of the egg and place in there and back in the garri breadcrumb mix and set aside. Heat up your vegetable oil and deep fry your chicken at first on high heat for a minute and then on medium heat to allow the chicken to cook if you did not pre-cook it. Blend your ketchup and peppers and serve with the garri breaded chicken. .

Casper & Gambini’s Shaken and Stirred

Keeping with the theme of drinks, Sekemi headed to hip Casper & Gambini’s for a lunchtime drink and meal. Gambini's. I'd already been a year ago and thought the food was too basic for the high prices they charged. This month's focus of Lost in Lagos Magazine is drinks so I thought I'd give it another shot with an eye toward the drinks menu. Casper & Gambini's ambience is quite impressive. The wooden panels on the exterior of the building are eye-catching customers. When you walk in, you immediately notice the artsy decor. The contemporary lights on the walls, the light bulbs encased in metal on the ceiling, the wooden tables and the homey but upmarket interior were but can it keep them coming back? I guess it depends on your tastebuds. Speaking of drinks, the bar is quite nice. The bartender is female which is very uncommon in Lagos. The bar is situated in a cosy corner, giving the illusion of after work drinks with colleagues especially when it isn't too crowded. Customer service was commendable. The waiters were attentive and able to recommend items on the menu. I deliberated on my food for a while because I was keen to try something cocktail.

The only pronounced ingredient was the lemon. It was as if the chef cooked the rice in lemon juice. Alongside my meal, I had the Peach & Honey Rita that cost N3000. I found it challenging to select a drink because the menu doesn’t have descriptions of any of the cocktails. The cocktail was served in a martini glass with a slice of lime on top. I'd presumed meal. The waiter mentioned that it contained, peach syrup, honey, Irish cream, rum and was "a regular order for customers." I expected to be wowed by the distinct taste of honey, peach and Irish cream. Unfortunately the taste of these key ingredients didn't blend well. Instead of being a sweet cocktail as I hoped, it had a sharp fruity taste, almost like a bottle of children’s paracetamol, shaken and stirred. I also had a Red Berry Cooler. It was nonalcoholic, very refreshing. The best way to describe the Red Berry cooler is that it For dessert, I had the Chocolate Fondant with Vanilla Bean Ice Cream. The fondant was rather dry on the outside. I thought it should have been a bit more moist. The explosion of chocolate on the inside paired with the vanilla bean ice cream, however, made it pleasant to eat. I certainly didn't anticipate that the Chocolate Fondant would outshine my cocktail, especially when greeted with such an impressive looking bar.

Would I go back?

Yes. I'd like to try their Calamari and the Chicken Tenders. I've also got my eye on the Lychee Bellini and the Pomegranate Mojito. Maybe I won't be overly adventurous next time but I'd give it another go.

Made in Nigeria Palm Wine

Palm Wine is the most popular local drink consumed throughout Nigeria. Its popularity transcends recreational drinking. Palm wine also plays an important role at traditional ceremonies. The drink is an alcoholic beverage derived from sap in various species of palm trees. Once the sap is tapped from the trees, it is left to ferment and becomes alcoholic. Palm wine is a great source of iron. It improves vision, to the reproductive system.

Zobo

Zobo is a popular mauve colored cocktail that is consumed all over Nigeria. The main ingredient are dried red calyces and sepals of the Roselle plant (Hibiscus garlic, ginger, pineapple, water and orange, lemon and sugar syrup. Kunu

Pito

Pito is the sweetened by-product of Burukutu. When Burukutu is made, a thick sediment settles at the base. The more liquid brew at the top is called Pito. Pito is light, intoxicating and relatively cheap.

Omi Wara

Omi Wara, is another drink that is popular in the Northern part of Nigeria. The drink is made from water obtained from cheese.

Adoyo is made from ripe pineapple juice and supplements derived from sorghum or maize. The drink is high in ascorbic acid and has similar advantages to milk.
