A BIT ABOUT ME:
A RESTAURANT WEEK PROMISE
Friday: My alarm blares at 5:00 a.m. I get up to give my dog his pills. Today is Parent Teacher Conferences, so I pack a lunch box and head to school. I snack through 40 online meetings with parents. My legs transform into cooked spaghetti, and I stumble to my car in the afternoon. I arrive at home, trembling. My son makes me a sandwich for dinner because I am unable to stand. Conferences are hell for introverts.
Saturday: I remain dead. I will never recover from having to speak to other people. My head is full of putty. I lie down and doze.
Sunday: I wake up feeling semi-normal. I make my son pancakes, eat a couple and read an old Stephen King novel. I finally feel like I am on vacation. The entire family has a Zoom call in the evening. I am pleased to hear that my daughters are thriving at their universities.
Monday: To my dismay, I have grown old. I go to the doctor’s for my first mammogram. I do not appreciate having my bosom squashed. A lady like me should be cherished, not manhandled by a machine. My husband phones from his
mom’s house, where he is overseeing her home repairs. He grills her a salmon fillet as we chat. I have the self-restraint not to ask why he doesn’t cook in Lagos.
Tuesday: I take my son out for breakfast. To my surprise, he does not linger over our meal. He wants to go home to study! We stop at the grocery store, and he buys a can of an energy drink called ‘Prime’. It tastes like acid rain. I ask my son if the beverage is banned anywhere. He takes a swig and says, “Probably.” In anticipation of my fast, I eat as much as I can, including a cold sausage while standing in front of the fridge at 9:00 p.m.
Wednesday: On doctor’s orders, I am only allowed clear liquids. I drink a black coffee in the morning, while video chatting with my younger daughter, as she studies for a quiz. At 8:00 a.m., I open my first sachet of Picolax. The powder sizzles when I add water, which alarms me. As I drink the laxative, I read the warning label: “Please ensure that you have access to a toilet at all times, following each dose.” I drink a Cool Blue Gatorade, which doesn’t taste as blue as I had hoped. I drink lemonade, an iced tea and a Grape Gatorade. At 4:00 p.m., I have my second Picolax. My eldest daughter messages to check if the

poop storm has rained down yet, and I reply in the negative. I lie on the sofa and scroll through 2024 Restaurant Week menus. I imagine what I would order at each establishment. I would have the chicken spring roll, jollof spaghetti and chocolate cake at one place. At another, I pick miso soup, Thai red curry beef and cheesecake. After I select a samosa, butter chicken with naan and gulab jamun, I begin drooling. I vow to visit these restaurants during Restaurant Week. It is easy to take beautiful food for granted. I promise myself that on each day going forward–when I am authorised to chew–I will live life to the fullest. Then the fugue descends, and my stomach cramps. I take two tablets of Dulcolax and ride the brown wave through the night.
Thursday: I am back at the doctor’s for my first colonoscopy. This means a camera takes a video of my lower intestine, while I watch on a giant monitor. I am displeased by the disarray. If not for the fentanyl they administered, I would be angry with my colon for not cleaning up before company came. I sleep for the rest of the day.
Friday: I bake a cake, then I grade poems, make slides for my English literature students and read Hamlet. In the evening, I write a magazine column about my week. I fall asleep thinking of all the restaurants I will try during Restaurant Week, and how much I will enjoy them.

With over 15 years in hospitality, Dhiren Pawar, Director of Operations at SJM Ventures Ltd, leads Shiro, Hard Rock Cafe, and Breeze Beach Club in Lagos. Holding qualifications in Bakery and Hotel Administration from India, he’s been key to the company’s growth since moving to Lagos in 2016. Outside work, Dhiren is a family man, a motorbike enthusiast, and a proud collector of baseball caps.
Lagos is fast becoming a hub for different culinary destinations. What are your thoughts on the Lagos restaurant scene?
Lagos is a melting pot of vibrant culture and flavours, and its diversity is reflected in the wide variety of restaurant options available today. Over the years, many restaurants have opened their doors to the people of Lagos, offering everything from local Nigerian cuisine to international flavours. I see a lot of fusion food being experimented with, which shows the creativity and enthusiasm of chefs and restaurant owners. It is a fantastic time to be part of this evolving space, and I am happy to contribute to its success.
Tell us about Shiro and how it contributes to the Lagos culinary and restaurant scene.
Shiro was introduced to Lagos in 2016. At that time, if I remember correctly, there was only one restaurant offering Japanese cuisine. Shiro entered the market offering rich and diverse flavours of Pan-Asian cuisine. Our menu features dishes inspired by Japan, China, Thailand, Vietnam, and Korean cultures, broadening the palate of our diners. We also offer a bespoke Teppanyaki cooking experience.
We emphasise authentic, high-quality ingredients, which truly deliver the best culinary adventure, combined with an opulent and inviting ambience. If you notice, we have very high ceilings with a lot of natural lighting, open space, a three-level indoor dining area, indoor plants, outdoor dining space, and huge statues—not to mention the unmatched
Asian hospitality. Altogether, it gives you a feeling of warmth and truly transports you out of Lagos to the Asian continent. No one else offers a space like this in Lagos.
We believe every detail contributes to a cohesive experience that lingers in the minds of guests long after they leave, which is what keeps them coming back for more.
How do you adapt Shiro’s offering to cater to the diverse preferences of Lagosians while keeping an international appeal?
It’s very important to us to understand our market audience and build on that. As we offer a diverse variety of PanAsian cuisine, we find that dishes like rice, spices, and peppers resonate well with Nigerians. Once we understand the palate profile, we introduce a healthy mix of dishes that appeal to local diners while keeping the integrity of the original dish, like our Suya Maki at Shiro and the Suya Burger at Hard Rock Cafe. It all comes back to the overall guest experience, which plays a pivotal role in positioning us on par with international restaurants worldwide.
What trends have you noticed in dining habits or preferences in Lagos recently, and what are some of your favourite or least favourite things you see restaurants in the industry doing?
Lately, I’ve noticed that establishments are heavily focusing on entertainment, sometimes at the expense of the quality of food and beverages. I understand the need to give consumers an immersive experience, but the success of a
restaurant depends on the quality of what is served. Yes, guests might be drawn in by entertainment like live music or themed events, but if the food doesn’t meet their expectations, they are less likely to return, which results in a shorter shelf life for the restaurant.
At Shiro, we prioritise our culinary experiences while maintaining an engaging atmosphere. We host special events, but these complement our menu offerings rather than overshadow them. In the long run, I believe the restaurants that will thrive are the ones that strike a strong balance between engaging experiences and high-quality food and beverages.
As customer experience and customer service become increasingly important, what do you think the future holds for the hospitality and service industry?
Customer service and the overall guest experience are crucial in forming a guest’s impression of a restaurant—or any business, for that matter. While many establishments recognise this, there often seems to be a gap in the level of training and expertise provided to the staff. Especially in the hospitality and service industry, I see the need for dedicated training centres. This will not only equip staff with essential skills like communication, problemsolving, conflict resolution, and menu suggestions but will also provide a deeper understanding of the industry’s nuances. For example, a well-trained server can engage guests with menu selections, suggest wine pairings, and respond to questions confidently.

Could you please share a few tips for people looking to enter the market?
Entering the Lagos market can be an overwhelming and challenging endeavour. First, understand your target audience—a mix of locals and expats—and conduct thorough market research. Plan your menu thoughtfully and embrace local ingredients, as imported options can be very costly. Be
prepared for the long haul; this is not a business that will yield quick returns. It requires a lot of patience, perseverance, and passion.
Continued financial investment is also necessary. Beyond the initial setup costs, you need to budget for staff salaries, inventory, marketing, and maintenance. Reinvent yourself as the market and audience evolve. Stay up-to-date with industry trends and be willing to adapt.
It’s a journey that requires a strong foundation, commitment, and dedication. If done right, the results can be significant in the long run.

Meet Harsh Dayalani, a Lagos-born chef trained at the Culinary Institute of America and seasoned under Michelin-starred chefs in New York. After working in Philadelphia’s hospitality scene, he returned to Nigeria in 2020 to join his family’s company, Smridu Nigeria Limited. Now, as co-founder of Chapter, Lagos’ first modern Indian restaurant, Harsh is redefining the city’s dining experience.

Can you tell us a bit about yourself and your career journey so far?
I was born in Lagos, Nigeria, where my father settled in 1980. Though my roots are Indian, when people ask where I’m from, I always say Nigeria or Lagos is home. I studied at ILS, the Indian Language School in Ilupeju, before deciding to pursue my dream of becoming a chef, which led me to the U.S. for my studies.
I studied for two years at the Culinary Institute of America in New York, graduating as a chef, followed by a bachelor’s in professional studies in wines, beverages, and hospitality. I then spent a year in Napa Valley, where I became a certified sommelier. Afterwards, I worked in Manhattan under a Michelin-starred chef for two years, then headed to Philadelphia to complete a master’s in hospitality. Back in New York, I organised events for top brands like Moët, Diageo, and Bacardi, and helped a friend launch an Asian restaurant in Philadelphia, overseeing the entire beverage program and hospitality. Then COVID hit, and though I continued travelling to the U.S., I always felt the pull to return to Lagos and build something in the hospitality industry here. As you know, Nigeria has always been an immense place for growth for hospitality.
I returned to Nigeria in 2020, just as things were picking up in Lagos. My uncles, who are my mentors and former executive chefs with Taj Properties—a well-known hospitality brand—had started a catering company, Smridu Nigeria Limited, around 15 years ago. Smridu caters to oil companies and distilleries, managing canteens, corporate guest houses, and restaurants, while also operating our own guest houses. We even handle offshore operations, managing rigs and ship provisions. This is the foundation of our corporate presence.
When I came back to Lagos, we sat and discussed opening the first modern Indian restaurant, which had never happened in Lagos before. Of course, there are Indian restaurants in Lagos. I know, you know, Nigerians love Indian food as well. So we wanted to be the first ones who did modern Indian food and that’s how Chapter was created.
As a professional, what are your thoughts on the Lagos restaurant scene and what do you think sets it apart from other global culinary destinations?
I appreciate that in Lagos or Nigeria in general, the culture of hospitality and getting together has always been there. Even when families meet on a Sunday for brunch, it’s all about a community. You see people having wholesome or important discussions around the food. Food brings people together, so there’s that. I think the restaurant scene is also growing on a large scale. People appreciate the growth of the hospitality scene here and are opening up restaurants. In the past 10 or 15 years, we’ve noticed that Nigerians are ready to experiment with different things.
Tell us about Chapter and how it contributes to the Lagos culinary scene.
Chapter Lagos is the first modern Indian restaurant in the city. What we plate is from all over India and we infuse it with different spices and elevate the dishes in a way that still takes you back to your typical old-school or grandmother’s way of cooking. While we create an experience, we still want people to be educated about Indian food. We boast of using local
blending the best local Nigerian ingredients with the essence of Indian cuisine.
How do you integrate other global food trends whilst maintaining the unique Indian-Nigerian flair in your menus?
We try not to overcomplicate things and every guest has a different palate, so we create a base for them and educate them. When we use unique flavours or spices, we make sure it’s not overpowering for each guest. It all comes down to making them comfortable with what they eat. Our guests come in from all around the globe and if they want something that’s not on the menu, we try our best to get them that as well. It is a little bit challenging but our guests must leave with a memorable experience! Also, I’d like to add that the focus of our catering industry is A to Z Nigerian food so India, is just 2% of what we do but over 90% of our catering efforts centre on Nigerian food.
What lessons have you carried into the business postpandemic?
During the pandemic, a lot of people started becoming chefs at home and post-pandemic, when the restaurant hospitality scene finally opened up, people were more explorative. Their palates started getting more experience with trying different things and it became more of a community thing. They were, of course, definitely frustrated with sitting at home so they wanted to come out to try different places, restaurants, and bars.
I think the concept of home catering has also increased because people started hosting a lot of parties at home too and wanted restaurants to come and cater in their comfort zone. This opened a whole different spectrum of the hospitality field. So It’s nice to see that post-pandemic, a lot of businesses are thriving, including Chapter.
As customer service and customer experience become increasingly important, what do you think the future holds for the hospitality and service industry?
Customer experience is very important. Previously, when people opened restaurants, they were more concerned about the customer experience than service. Now post-pandemic, it’s been more focused on service. In fact, when we opened Chapter, I travelled to the
the lack of customer service or training so I spent an entire month for my business only on customer service. I can proudly say 95% of my guests have left saying service has been fantastic because it is key.
A lot of restaurants lack that but I think right now and with time, a lot of managers are focusing on improving, which is really impressive. In the past, a lot of restaurants in Lagos focused on the design, interior, and aesthetics of their space, making sure it was pretty. Some people didn’t and still don’t worry about the food. So there is a growth in hospitality. Irrespective of the current situation, there’ll always be growth because people still want to experiment with new things.
Could you please share a few hospitality or customer service tips for restaurant owners looking to enhance the experiences of their guests?
Like I have emphasised, customer experience doesn’t start and end at your restaurant. It starts at your restaurant but ends once the guest gets home. It’s how you’ve made them feel special, wanted, and how you follow-up with them. That’s when you know you’re not just a restaurant, but you’re a hospitality business. It’s when you take the extra mile or step to make sure of their comfort and this is very important. You can’t satisfy everybody but they want to see that as an owner or a manager, you want them to feel special. That’s what they want.

To spice or not to spice may be the question in some parts of the world, but never in Nigeria, where our delicious cuisine is known for its bold flavours and heavenly heat. In this article, I hope to take you on a journey through a carefully selected list of Nigerian spices. Although not every item on this list may technically be a spice, I believe that mentioning anything we use to season our food is worthwhile.
Uda Seed (Negro Pepper)
This brown, twig-like spice is extracted from trees in Senegal, Ghana, Brazil, and, of course, Nigeria. Don’t let its medicinal properties detract from its delicious, smokey, and earthy taste. Additionally, it has some bitter notes and a strong peppery edge. Uda seeds are used for dishes like Pepper Soup and Suya.
Scotch Bonnet
With a Scoville rating that would terrify some, Nigerians love to use the Scotch bonnet pepper wherever applicable, naturally. Like most peppers, the Scotch bonnet is grown on trees and is used in many Pepper Soup and Jollof Rice recipes. The juxtaposition of its fiery heat and its sweet, fruity taste make it a true staple in Nigerian cuisine.
Ehuru (Calabash Nutmeg)
Famous for its distinct aroma but not lacking anything in the flavour department, Ehuru is a must-use spice for many. It is popularly used by Igbos in delectable dishes such as Abacha and Nkobi. The taste of Ehuru has been compared to that of common nutmeg but with a more natural and woody impression on the taste buds.

Dawadawa is a seasoning that can never be overlooked. This is not just because of the enormous trees it is harvested from but also because of its unique umami flavour profile. Dawadawa can be found in pots of Okro Soup all over Nigeria and can even be used to make Moin Moin even more delicious.

Scotch bonnet peppers are not just used when freshly harvested, they are also dried to produce Cameroon Pepper. While this does take away the fruity elements, it concentrates the heat, which many Nigerians appreciate. This is a very

Polycystic Ovary Syndrome (PCOS)
Polycystic Ovary Syndrome (PCOS) is one of the most common hormonal disorders affecting women of reproductive age. It is characterised by irregular menstrual cycles, elevated levels of androgens (male hormones), and polycystic ovaries. The condition can lead to various symptoms including acne, excess hair growth, and weight gain. However, its most significant impact on fertility is due to its effects on ovulation.
During perimenopause— the transitional phase leading up to menopause— women may experience symptoms such as hot flashes, night sweats, mood swings, and irregular periods. While natural menopause signifies the end of a woman’s ability to conceive, some women may still conceive during perimenopause if they have occasional ovulation. However, fertility declines significantly as menopause approaches.
Women with PCOS often experience irregular or absent ovulation, which makes it challenging to conceive. The hormonal imbalance prevents the ovaries from releasing eggs regularly, which can lead to difficulties in becoming pregnant. Additionally, PCOS is associated with insulin resistance, which can further complicate reproductive health. While managing PCOS can be challenging, various treatments such as lifestyle changes, medications like metformin, and ovulation induction agents can help improve fertility outcomes.
Uterine Fibroids

Fibroids can interfere with fertility in several ways. If they are located in the uterine cavity (submucosal fibroids), they can distort the uterine lining and affect the implantation of an embryo. Fibroids that alter the shape of the uterus or obstruct the fallopian tubes can also impede sperm and egg passage. Additionally, fibroids can contribute to miscarriages if they affect the blood supply to the uterine lining or create an environment that is less conducive to pregnancy.

The SideBar, their in-house restaurant, allows you to refuel with a meal before diving back into the racks, or better yet, you can start with a bite and then get inspired for your shopping spree. It’s perfectly situated for the ultimate blend of fashion and food lovers.
As I stepped into Miskay, I couldn’t help but notice how thoughtfully
massive—but that intimacy works in its favour. Indoor greenery gives the space a fresh, vibrant feel, almost as if you’re dining in a little garden. The seating is arranged so you have your privacy, with small, intimate tables lined straight down the room. Despite the
recharging post-shopping or simply stopping by for brunch, it feels like a chic hideaway tucked into one of Lagos’ trendiest spots.
I was surprised by how much fun I had reading the menu, especially
the breakfast and brunch section. They’ve earned a reputation for their indulgent brunches, and you can tell why just by glancing at the offerings. But the dish that caught my eye, without a doubt, was The SideBar Roast Chicken—perhaps because it was an eponymous dish, and I was curious to see what the hype was about.
It was a half-roasted chicken slathered in herb butter. According to the menu, it was supposed to be paired with sautéed spinach and served alongside their homemade gravy—but only the economy knows what happened to that. The side was a bowl of Herb rice that had me raising an eyebrow in delight.
Let me tell you, I thought the chicken would be the star of the show through and through, but the herb rice…Oh, the herb rice! It was a brilliant collaborator in this culinary act. The balance of herbs and seasoning gave it depth, while the grains were perfectly cooked—
worry vanished as I picked up my knife, reminding myself why I was there—to savour every bite, but mostly to defend my foodie critic reputation. For a moment, I considered the famous bottomless mimosas I had my eye on before arriving, but after such a hearty

FRENCH TOAST OREO CRUMBLE WITH CARAMEL DRIZZLE
Ingredients
French Toast
4 slices Brioche Bread (1m each)
1 cup Evaporated Milk
1 Egg
1 tablespoon Vanilla
1 tablespoon Sugar
Oreocrumble
1 pack of Oreos biscuits
2 tablespoons Butter Caramel drizzle
2 tablespoons Sweetened Yogurt
1 tablespoon Milo powder or 1/2 teaspoon Cocoa Powder Water
Instructions
Cut 4 thick slices of brioche bread, about 1 inch thick, and set aside.
In a large bowl, whisk together the milk, sugar, egg, and vanilla. Soak the bread slices in this mixture.
Butter a pan, then toast the soaked bread on both sides until golden brown and crunchy.
In a blender, combine a sachet of Oreo biscuits and

1-1/3 cups Vegetable Oil
1 cup Light Brown Sugar
1 cup Granulated Sugar
4 Eggs
2 teaspoons Vanilla Extract
1 cup Dried Fruit
3 cups Carrot (grated)
Instructions
To make the carrot cake batter, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl. In a separate bowl, mix vegetable or coconut oil, sugar, eggs, and vanilla extract until well combined. Gently fold the wet mixture into the dry ingredients, being careful not to overmix.
Add grated carrots and dried fruit. Pour the batter into two greased 9-inch pans and bake at 350°F for 3035 minutes or until a skewer inserted in the centre comes out clean.
For the carrot sauce, bring 2 cups of water and 2 tablespoons of butter to a boil in a pot. Add carrots and cook until they are tender. Blend the cooked carrots with a bit of the cooking water, a dash of milk, and honey until smooth.
To prepare the cauliflower steak, preheat the oven to 400°F. Slice cauliflower, then coat with a mix of yaji, white pepper, cayenne, and oil. Place on a greased tray and bake for 10 minutes on each side until golden.
To serve, spread a layer of carrot sauce on the plate, drizzle with honey and yoghurt, place the cauliflower steak on top, and finish with a slice of carrot cake. Garnish with a lemon wedge and enjoy!
Once combined, strain the mixture and pour it into glass bowls. Then, place the glass bowls in a baking sheet and add some water to the sheet.
Bake for 30 minutes at 160°C.
After baking, refrigerate the brulees for 2 hours. Then, add brown sugar on top and caramelise the sugar with a blowtorch.

Fine dining in Nigeria is still taking its first leap as culinary expertise gains ground. With emerging chefs and restaurants expanding the region’s food and dining scene, some establishments are pushing this narrative more than others. It’s safe to say that among the passionate, some are more focused and direct in hitting the nail on the head—particularly in major cities like Abuja, Lagos, and Port Harcourt.
Among these are The Burgundy by Chef Stone, The Colony Privé by Chef Taylor, and Lórien by Isi Adeeko, which has been the talk of Buj since its opening on October 31, 2024. Together, they have transformed Abuja’s food and fine dining scene into something internationally outstanding. Recently, we witnessed world-renowned Michelin restaurant CEOs and chefs visiting some of these establishments, which is truly remarkable.
The Burgundy by Chef Stone, an internationally recognised culinary giant, offers a 7-course PanAfrican fine dining menu featuring an exciting blend of aromas, spices, and flavours, paired with some of the world’s finest wines and knowledgeable sommeliers to immerse you in a whole new universe. Chef Stone has toured Europe and is currently exploring Africa,
bringing home cultures and flavours from these countries to create uniquely exquisite dishes that leave you wondering, “How?!” But it works, and we applaud him for this remarkable achievement.
The Colony Privé by Chef Taylor, acknowledged as one of Africa’s top culinary influencers, offers a nostalgic and awe-inspiring experience of food, fashion, and culture in a nomadic supper club style with everchanging secret locations. If you ask me, that’s pretty smart and exciting. Their recently concluded dining event, Havana Night, left everyone in shock and enthusiasm with its incredible food and fashion theme.
Lórien by Isi Adeeko, an entrepreneurial giant and restaurateur, is a more recent restaurant that promises to blend French cuisine in an ingenious style with African culture—something we haven’t seen in this part of the world. Truly a first of its kind, we cannot wait to see where they transport us.

LOMO CAFE
Hi, let me tell you about the winner of the 2023 award for top-performing restaurant in Abuja. If you enjoy your tea, coffee or smoothie with a good book, then you’ll love Lomo Tea Cafe in Jabi, Abuja. Extra points if you are a remote worker who needs a place to work for the day or have meetings.
Have I mentioned the most exciting part about this restaurant? It is library-themed! There are several books of different genres and languages on the shelves, some old books to stir up a little nostalgia in you, taking you places as you get lost in the pages. I found Diary of a Wimpy Kid, a personal favourite from my childhood and the book from which the famous vampire diaries series was adapted, on the shelves, too, which was quite nice.
Lomo Tea Cafe is famous for different tea flavours, such as milk tea, caramel tea, kiwi tea, matcha, and other juice blends. It has an Asian theme, and some of the books on the shelf are written in Chinese. I also found a receipt printed in Chinese inside the pages of the book that I was reading, so I’m guessing they allow foreigners who visit to
get tickets so they can pay in the language they understand.
The restaurant also offers Mandarin classes for kids, teens and adults on select days of the week so if you’ve been meaning to learn Chinese, this is your sign. The menu is very diverse with different cuisines leaving you with so many options. I ordered the chicken shawarma sandwich and fries with the Lomo caramel tea. My friend had chicken tacos and Lomo milk tea. I picked up the vampire diaries, and read them as we ate. If you’re a fan I’m happy to report that Elena Gilbert is as annoying as she was in the series.
Lomo Tea Cafe is a great place to get together with your book club members. There’s a VIP section if you’re a private person. All in all, I can see why Lomo Tea Cafe won the award for best restaurant of the year. They deserve it.
