Business Update
March has been an eventful month for many businesses across the UK. Digesting the pros and cons of remaining or leaving the EU (more on that later), the dilemma and calculations for many small businesses who find themselves paying the new living wage and deciphering the Government’s budget. The good news from the budget is the rise to the small business rate relief threshold from £6,000 to £15,000. This would mean that many of the businesses in Faringdon town centre will now be paying little or no business rates. The Chamber of Commerce held its AGM at the beginning of the month, followed by a well-attended presentation that was open to all business people in the town. Titled “Faringdon – Destination or Dormitory”, Keith Slater, a retail consultant and director of the Oxfordshire Town Chamber Network gave an interesting presentation on the struggles retailers face in smaller towns along with solutions that can be implemented to overcome them. A fantastic example of just one of our unique and niche businesses in Faringdon, Geo4D, gave an insight into the work they do. Our hosts, The Sudbury House, then told us about their plans for 2016 which can only attract more people to our great town. Finally, the developers of the 4&20 site gave an update on the progress of their project; spades going in the ground in the next few weeks and hoping to complete by late autumn. So you could be topping up your local Christmas shop from Waitrose or Aldi this year. Following a marked interest from local businesses and the public in general, there will be a debate on the EU referendum at the Corn Exchange in the evening of Friday 3rd June. Further details to follow next month. Many of the shops in the town centre will be staying open late, giving another opportunity to the people who work out of town chance to see what is on offer in Faringdon. Keep your eyes pealed for more information.

0 0 0 1 Most people have heard of single malt whisky and bourbon but not many have come across rye whiskey, which is a pity as it is a complex, fresh, spicy drink, full of character, that is a delicious alternative to other styles of whiskies. This is the oldest type of whiskey to be made in America and the USA is still where it is most commonly known (although not exclusively, as we shall see). Historically, it was the Germans who brought a rye distilling tradition to the USA but Scottish and Irish immigrants also turned to the easily cultivated rye as a replacement grain for barley. Rye was mainly produced in Maryland and Pennsylvania and was the dominant whiskey in the USA for many years but prohibition from 1920 to 1933 meant people had to drink whatever they could get hold of and that was most likely to be smuggled Scotch and Canadian whisky, ultimately leading to a change in the tastes of American whiskey drinkers. Whilst bourbon must have a mash bill of at least 51% corn for rye, it has to be a minimum 51% rye. The actual percentage of rye is often greater than this and to it, is usually added corn or wheat, along with some malted barley to aid fermentation. Rye is a grain that brings a distinctive spicy bitter sweetness to the whiskey, along with fruit, richness and softness. It is very full bodied and has a warmth which stays with the palate in a very pleasing way and is full flavoured in a way that has been compared to Islay malts. In recent years there are signs of a possible renaissance of rye whiskey and this may be partly because of the modern whisk(e)y drinkers desire to find new flavours and partly due to renewed interest in whisky cocktails, as the Old Fashioned Manhattan and the Sazerac are all intended to have rye included in them to be at their best. Although originating in Maryland and Pennsylvania, nowadays a good proportion of rye whiskey is made in Kentucky, including the iconic Michter’s brand that started in Pennsylvania in 1753 and Rittenhouse Rye from Heaven Hill – both of which I can thoroughly recommend along with my all time American rye favourites to date, the High West rye whiskies from Utah. 100% rye whisky is notoriously difficult and expensive to produce but when a producer is brave enough to do so the results can be spectacular. There is a small Californian producer who distils 100% rye whiskey but the 100% rye most easily available in the UK is the stunning Millstone Rye created by Patrick van Zuidam at the family distillery in Holland. This rich, velvety smooth whisky has a wonderful mouth feel and flavours of fruit, honey, vanilla and spicy pepperiness combine to give you a true impression of just how special rye can be.

| The Advertiser | page 6 | Welcome to this month’s article. NATIONAL PET MONTH, 01 April to 02 May 2016. I have added extra comments and my own opinions National Pet Month’s Top 10 Tips are: 1. Think carefully before getting a pet and learn about its special requirements. Work/life/home balance; doggy-day care?;child friendly; allergies; special needs of husbandry; talk to breeders and seek advice from other responsible owners and your veterinary practice. Ownership costs will be significant; many Practices offer Pet Health Plans to spread the typical costs. Purchase bone fide puppies, preferably not imports – ask to see at least one or two generations of sire and dam. Be prepared to be questioned by good breeders – at the base of that will be the welfare of the puppy and living his or her entire life in one responsible, knowledgeable home. Going on holiday with your pet? Also learn about possible poisoning risks, such as chocolate, grapes and their derivatives, lily flower pollen, chewing gum xylitol..… 2. Ensure your pet is sociable and well trained. So many ways to work together with your pet to make them a responsible citizen, starting early and ongoing. Many local dog training clubs and also schemes through, for example, the Kennel Club. 3. Provide a nutritious and well balanced diet. Essential for welfare and on-going good health. Many information sources available to research and all veterinary practices have expert access to many quality pet food manufacturers. I’ll also throw in raw meat diets into the mix! 4. Provide suitable housing and bedding. Allows regular checks on your pet, especially for maggots if in warm/hot weather when rabbits are kept. Handle with respect and in a loving, skilled manner and always feel comfortable to approach your Practice for impartial, open advice and reassurance. 5. Clean up after your pet and worm it regularly. This gives so much bad press – maybe it’s not pleasant [ part of Top Tip 1] – but makes so much sense and shows responsibility to others. Worming according to pet lifestyle and age composition in the family household. Do not give dog spot-on's to CATS unless the packet specifically says that the products licensed to do so. 6. Protect against disease. Your vet can provide you with advice. Vaccination according to best, current practice – parasite protection, skin or gut; travelling abroad. Vaccinations related to cats, dogs, ferrets and rabbits typically. Kennels require Kennel cough vaccination in addition to full vaccination; vaccinated cats are much preferred in Catteries. 7. Prevent unwanted litters and neuter your pet when appropriate. Charities are still overwhelmed by avoidable, unwanted litters; litters brought in from other countries with diseases incubating inside them. Early spay of kittens now regularly carried out before adoption and by veterinary practices. 8. Groom your pet regularly. This allows regular inspection, close-up, of feet, undersides, ears and teeth; some cats need more patience! 9. Control your pet and ensure it is properly identified. Being socially aware and responsible to others, yet mindful of your pet’s own welfare needs and safety. Be aware of the yellow lead/collar/coat of newly rescued dogs – dogs who will feel threatened by too-close approach from anyone until they get their confidence back. Or even those dogs recovering from infectious disease, like Kennel Cough, where nose-to-nose close contact can be one way of contracting the disease – the owner is satisfying the recovered dog’s welfare needs but IS being responsible towards other dogs and their owners. Microchipping is now compulsory. Failure to comply, even to keep up-to-date records, attracts a BIG fine. 10. Take out pet insurance for dogs, cats, rabbits and horses to cover against unexpected veterinary fees and third party liability.” Many ways to get advice through comparison sites or, better still, get your facts from FCA-authorised veterinary practices, who can talk in depth about their nominated pet insurer. Parenting is an adventure with a guidebook that you have to write yourself. Families come in all shapes and sizes and navigating through the ups and downs can be tricky sometimes. We’d like to help. We are Milly and Olivia and together we are MO Training and Consultancy, based in the Rookery at 35, Marlborough Street, Faringdon. We run parents’ evenings to support our work in primary and secondary schools where we teach students and train staff, and we train foster carers and adopters in Swindon. The things we talk about include attachment, behaviour, communicating compassionately, consent, safer relationships, sexual health, alcohol and other drug use, emotional Wellbeing, mental health, and internet safety. We are offering monthly informal sessions in the warm, friendly atmosphere of the Rookery on a Friday evening. Our aim is to support local parents and carers by providing an understanding of child and adolescent development, communicating effectively with children and young people, and creating strategies that support a peaceful and positive family life. The sessions will start at 7pm with refreshments available until 8pm from the Rookery Coffee Shop. We are offering these sessions on a PAYF (pay as you feel) basis. The sessions link together, although there is no obligation to come to every one as it is not a formal course - there will be no need for writing and we won’t set any homework. Leafy Greens! This is the perfect time of year for beautiful leafy greens. The weather is warming, bringing a certain carefree sweetness to anything growing right now. It's rather lovely to see vegetables ready to harvest having come through this rather miserable winter. But just take a meander through the allotments or peep over a neighbour's fence at what might be peeking through the dark brown earth. It's miraculous I always think. When I cook, I often ponder at how incredible the world of food is. We have so much variety. Tastes, textures, colours, shapes. It's fantastic really. And as Spring becomes us, we start to see this variety we love, become larger. So try to branch out and cook a little differently. Add a touch of lemon, or smoked garlic. Stir greens in to a risotto or a chunky vegetable soup. Or roast wedges of Spring vegetables. Floret cauliflower and slice in to halves. Throw in to a baking tray with sprouting broccoli and thickly sliced red onion, dowsing with some good olive oil or rapeseed oil. Season and roast for 15-20 minutes. Sprinkle with some grated cheese, like a hard ewe's milk cheese, then roast for another 5 or so minutes. Serve with poached fish or your favourite Faringdon sausages. But I'm rather partial to a touch of cream and when the weather is a little chilly, bake something warming. I've chosen to use a ewe's milk cheese here. It's bang on in season at the moment. Take some cauliflower, broccoli and red onions. Cut everything in to even sized pieces, placed into an ovenproof dish. Add some oil and toss the vegetables to coat and season. Roast for 15-20 minutes until just tender. Stir through a couple of handfuls of spinach leaves and also 100g blanched Spring greens. Mix together 250ml double cream with 100g grated ewe's milk cheese, 2 tbsp grainy mustard and generous seasoning. Pour over the vegetables then scatter with a little more cheese and around 25g breadcrumbs. Bake for approximately 15 minutes until bubbling and crunchy. Serve straight from the oven with roast chicken, black pudding sausages or an oversized piece of gammon! Lesley Holdship Hare in the Woods 07754 086316

Advanced driving is “planned driving” that makes safe and efficient use of road space. It is confident and decisive driving where you are: Brighter evenings: British Summer Time is on the way and the weather is starting to improve. Many of us will now be driving to or from work directly into strong sunlight. To improve your visibility in bright conditions it is important to keep your windscreen clean and free from streaks and smears. Make sure your washer bottle is topped up at least once a week, and that the washer jets are aimed correctly. You should also check the condition of your wiper blades as they will perish and tear over time. You should also make sure that you can use the visor to block out the bright sun when it is low in the sky, without obscuring your view of the road ahead. See if adjusting your seat will help with this, but of course, only do it while you are parked up safely! Foggy Mornings: As the weather is still changeable, we might encounter fog or mist as we travel around the county, especially in the mornings or in the evening. Whilst it might seem obvious to most of us to switch on the lights as darkness falls, many will neglect to do this when the days are dark or cloudy. It’s also useful to use lights if it is raining in order to be seen. Even if you think you can see perfectly, can other drivers see you? Many modern cars have daylight running lights, which are a great idea – but don’t forget that they tend only to be fitted at the front of your car, from behind you might still be completely dark. If you are driving in a line of cars and you are the only one with no lights on, you might be invisible, and turning vehicles might mistake you for a gap in traffic! (Crunch) A common problem at this time of year is the incorrect use of fog lights. Some drivers put their fog lights on if it is raining, or if fog is forecast later in the day or at some point along their journey. I am sure there are people who switch their fog lights on in January, and don’t turn them off until May! This causes dazzle for everyone around them, and is every bit as dangerous as not using your lights at all. As a rule of thumb, use your fog lights as you would use your wipers in the rain. Once the fog has gone, turn your fog lights off. If you enter another patch of fog you can turn them on again. Look for the indicator lights on your dash board, and remember that you have switched them on.

Spring is glorious and has truly arrived. It is a season of dramatic change. Plants find it easy to make changes and once again a new flower begins to bud. For people, change can be hard. Does Carbohydrate Become Body Fat? Why Do Carbohydrates Make You Gain Weight? When you eat food, the body digests the macronutrients: carbohydrates, proteins and fats. Anything it can’t digest, like alcohol or fibre or toxins, either pass right through or, if it makes it into the bloodstream, gets filtered by your liver. If you eat more fuel than your body needs the body is forced to store this excess - we are all very efficient at fuel storage! Every type of carbohydrate you eat is eventually converted to a simple form of sugar known as glucose. All the bread, pasta, cereal, potatoes, fruit juices etc. that you consume eventually end up as glucose. While glucose is a fuel for our body, in excess it’s quite toxic, so the body has evolved a way of getting it out of the bloodstream quickly and storing it in your cells. The liver and muscles store some excess glucose as glycogen. This is done when your pancreas, sensing an abundance of glucose in the bloodstream after a meal, secretes insulin which makes glucose enter muscle and liver cells. However, once those cells are full, the rest of the glucose is converted to fat. So when we eat too many carbohydrates, the pancreas pumps out insulin - but if the liver and muscle cells are already filled with glycogen, their cells start to become resistant to the effects of insulin. Since the glucose now can’t get into the muscle or liver cells, it remains in the bloodstream. The pancreas senses there’s still too much toxic glucose in the blood and pumps out even more insulin, which over time causes the insulin receptors on the surface of those cells to become resistant. If we continue to eat high carbohydrate diets and exercise less, the degree of insulin resistance increases. Unless we take steps to reduce carbohydrate intake and increase exercise, we can develop several problems. 1. Intake of refined carbohydrate is enormously stressful to the body. Raised levels of blood glucose can cause inflammation. This inflammation leads to stress which causes the release of the cortisol hormone shutting down fat burning in the body. 2. Constant high intake of sugars raises insulin which inhibits the fat-burning enzyme lipase, preventing stored fat to be burnt easily. So as you eat more sugar, less fat is converted into energy and you continue to get fatter. 3. Insulin resistance not only prevents sugar from entering muscle cells, it also prevents amino acids from entering. So now you can’t maintain your muscles and, as your body gets confused thinking there’s not enough stored sugar in the cells, signals are sent out to start to cannibalising your precious muscle tissue to make more sugar! So you get fatter and lose muscle. 4. Not getting the sugars into the cells leaves your energy levels low, which makes you hungry for more carbohydrates and less willing to exercise. 5. When your liver becomes insulin resistant, it can affect the thyroid which further slows your metabolism. 6. After your body converts carbohydrates into glucose, any leftover fuel gets converted into glycogen. Your liver and muscles store glycogen as energy and quickly turn it back into glucose when it’s needed. Glycogen tends to make muscle tissues hold onto extra water, making the number on your scales go up! So when you cut back on carbohydrates, you might lose weight rather quickly. You’re using up all of your glycogen storage, forcing your body to release extra water. Reversing the negative effects of eating a diet high in carbohydrates will improve your health and well being. Exercise has a major impact on improving insulin sensitivity since muscles burn your stored glycogen as fuel during and after your workout. In 2013 Alison Davis started running meditation classes and workshops from a studio in the garden of her home in Shrivenham. Alison has been very pleased with the level of support she has received locally and how the business has developed more widely in her response to her client’s requests. She now covers meditation, relaxation, meditative art, Chakra dancing, self healing, visualisation and more. She has produced 5 CDs including a CD for teenagers helping with exams and life post school. Alison has been benefiting personally from mediation for over 30 years living in both India and Hong Kong, developed her interests in a number of adjacent fields. Once she decided to bring her experience and benefits to others she qualified at both the British School of Meditation and the British School of Chakra Dancing, to add to the Reiki Master she achieved in India. “I felt that I had benefited so much over the years from all that I have learnt and practised, that I knew this would be relevant for others and that gave me the confidence, to establish the practise at Shrivenham” said Alison. Having started with basic classes in meditation and breathing techniques, Alison soon realised that people’s needs were broad and different. “Having been approached by people who needed help through illness, stress, bereavement and to de stress, I realised I needed to widen the classes and workshops I offered. A class run for a daughter struggling with exams led to the creation of the Teenage Meditation CD which has proved very popular. Thus age has proved no barrier to what we can do together, as I now have male and female clients of all ages.” In order to bring the best out of all who attend workshops, we focus not only on meditation techniques and knowledge with a strong emphasis on breathing but also on developing artistic creativity. This requires no basic talent or skill and maybe achieved through dance, art, drawing or creating a vision board, connecting us to our own energy through visualisation, colour, chakra and much more. Alison is always delighted how people can surprise themselves with what they can do. This year’s release of Bordeaux wine has drawn huge expectations as it has everything suggests that 2015 will be a great year, some claiming that it may well be one of the greatest ever! There has been huge anticipation about the potential of the 2015 Bordeaux vintage as well as the wines from several other regions in France. The weather conditions were close to ideal for Bordeaux, Burgundy, Champagne and the Rhône last summer. Hours of sunshine and average temperatures were the highest since records began (Getty). The proof will be reported once the first tastings of the ‘primeur’, or ‘raw’ 2015 Bordeaux get underway, officially the beginning of April. Many of the prized Chateaux invite wine experts and traders from all over the world for advanced tastings from the end of March. Denis Dubourdieu, Professor of Wine at the University of Bordeaux and one of the most successful winemakers of Bordeaux is quoted: ‘I don’t think there can be any doubt. This will be an exceptional year, in line with memorable years like 2009 and 2005. Everything about the growing year was perfect and from what I’ve seen at the wine making stage and in the barrel later on, this is going to be a wonderful vintage.’ The vines flowered early in warm sunshine; the tiny grapes appeared perfect in dry weather; they turned purple in ideal conditions of slight drought in mid-July; they expanded and ripened in warm, dry August with a little rain; and they were harvested in a dry autumn with cool nights. The 2015 vintage of claret (red Bordeaux) will not be mature for 3-4 years, but not for up to 10 years or more in the case of the leading and most expensive chateaux. The vintage’s reputation will be made in the interim by the scores granted by the leading wine critics. A great vintage for 2015, to be claimed a fifth time in the recent 16 years implores the question: Is global warming providing exceptional Bordeaux years more regularly? It would appear so, however some people fear that climate change will alter the character of Bordeaux wines, making them more powerful, fruity wines lacking the austerity and finesse of their predecessors. Cyber Insurance Are you at risk in this electronic world? Today’s hackers are more innovative than ever. Rather than just running up charges on your credit cards, they are looking to extort money in exchange for the “safe” return of your private or corporate information, or access to it. These more innovative hackers hold information as ransom. They request a payment against the threat of blocking your access to, or making public, sensitive correspondence, photos and files held on the computers you use at work and at home. When the “hacker” is in receipt of the “ransom” payment, he (she) usually follows through on the promise so as not to endanger the potential of future ransom payments. Hackers can identify profitable targets from online profiles, company websites, and public records. Their research will often include more intrusive tactics such as intercepting email correspondence, eavesdropping at public Internet locations, and accessing online accounts. A main collection point for hackers to collect data seems to be e-mail; from where they can gather enough information about you and your business from simple eavesdropping on your e-mail traffic. In many cases, they will gather your password information and access not only your computer systems, but also the pass-worded systems that you might use – including, of course, bank accounts and credit card accounts. The more they learn about you, the more dangerous their actions can be. Most “low key” ransoms are currently set below £500.00: an amount that it is cheaper to pay than argue about. However, if access is gained to corporate data banks, then the stakes multiply exponentially.

How might you mitigate your risk? 1. Keep your personal data to yourself. Avoid giving anyone the opportunity of developing a personal profile on “you”. 2. If you employ staff at any level encourage them to follow these principles. Your corporate data is vulnerable to the accidental actions and inactions of your staff. 3. Never send bank details, passwords, etc. by e-mail. Encrypt your e-mail communications that contain sensitive information to minimise any possibility that intercepted mail might be read. 4. Avoid clicking on links from incoming e-mails; especially if you do not know the source. The source of e-mails can easily be masked, so take care. Look at the address carefully. 5. Your e-mail account is the gateway to your information – account statements; password reset processes, and more. Ensure you use e-mail account passwords different from your e-commerce website passwords. 6. Consider using a secure e-mail facility (RPost for example).
