0 0 0 1 Somehow whisky and Christmas seem made for each other. Nothing beats a roaring log fire, a warming dram and being surrounded by friends and family, or just sitting and contemplating life with a glass in hand, so here’s a few suggestions for the festive season. Whiskies that always spring to mind at this time of year are those matured or finished in sherry casks as they tend to have the spicy, fruit cake flavours that are in keeping with Christmas. Glenfarclas and GlenDronach both produce excellent whiskies of this type, and it’s well worth investing in one of the mid age to older expressions from either distillery for the extra depth and complexity they bring, which (hopefully) over Christmas you’ll have the time to appreciate fully. Both do a splendid 21 year old and the single cask bottlings from GlenDronach have a fanatical following, for something with a real punch try the cask strength expressions from either distillery. They offer dried fruits, seasonal spices and sweetness aplenty but do be aware that you will almost certainly need to add a good few drops of water to get the best out of them. For a slightly less ‘in your face’ but still rich and decadently delicious dram then the Benromach 15 is perfect – one of our personal favourites of the year. If sherried whisky is not your style then you might like to treat yourself to Arran’s The Bothy, a limited release whisky which takes their trademark green apple, fruit and cream characteristics and supercharges them via a secondary maturation in quarter casks to produce a powerful vanilla sweet and spicy dram. Or how about the supremely elegant and complex BenRiach 16 year old, with a flavour profile that includes rich honey, vanilla with hints of cream, spices, toffee and apples? Alternatively, for a whisky that is not sherried but still very redolent of Christmas there is the Tomintoul 12 year old Portwood finish, whose final 20 months of maturation in port pipes introduces a beautiful fruity sweetness to the whisky. This is the ideal time of year to be sipping on a smoky dram and we’ve had some interesting new ones in recently. At the lighter end is AnCnoc’s Rascan, which combines smoke with the typical honey sweetness, green apple and citrus notes of the distillery for a dram that will appeal to those who don’t like their peat too heavy. At the other end of the scale, Peat’s Beast is a single malt that brings you the usual bonfires on the beach and peat moss that you would expect along with a fruity freshness, and in its cask strength form combines peat with sherry as it has been part matured in PX sherry casks. Whatever you are drinking this festive period, we wish you a very Happy Christmas and New Year. Sláinte!

Jolly October Ramblings! | The Advertiser | page 6 | Hello and welcome to the last ramblings of 2015. I came across a very intriguing article about the possible demise of sniffer dogs in certain circumstances due to the rise of sniffer rats! The incredible sense of smell that dogs have had “forever” has been extended by man, disaster rescue, tracking law-breakers, forensics and explosives, clinical diagnosis from samples (as in cancer detection dogs), early warning of medical emergencies such an impending diabetic coma, detecting gas leaks; whether cows are ready for artificial insemination and in locating termite infestations. However, the African Pouched Rat has already been involved for purely chemical detection. Explosives and landmine's. As these rats are naturally nocturnal, they need sunscreen cream on their tails and ears. With less common social bonding with their handlers, they will work with anyone. It is said that they can survey an area of 200 sq. meters in 20 minutes. With this speed of working, these rats have achieved amazing results in the land-mined areas of Mozambique. They have brought about the removal of 13,000 land mines from an area of 11 million sq. meters; their rodent colleagues are moving into Tanzania too. Their training is fascinating; their trained positive detection rate phenomenal . Because of their agility and relatively smaller size, such rats can complement the SAR dogs when it comes to searching the tight spaces in collapsed buildings. An increasing clinical laboratory use is in their ability to detect the presence of TB in mucus samples, including in the so-thought negative patient samples missed by standard lab techniques. In fact, one rat can screen 100 samples in 20 minutes – and get the exact TB strain. Whereas a technician with only lab stains and a microscope would take up to 4 days to do the same task. With cancer screening, rats may work alongside dogs to improving detection rates and even identifying the types of cancer. We have Christmas time and the New Year ahead of us, may I take this opportunity to wish you, my dear reader, a very happy, thoughtful and uplifting Christmas. May the New Year be an equally happy, healthy, fulfilling and prosperous year. May your pets continue to enjoy the high levels of support and care from your veterinary practice and to all the specialists that we can access. Please support the charities at your practice. We are principally looking to raise funds for Sunshine Rescue (our local cat charity) and the Labrador Rescue Trust, both wonderful charities that work so very hard. The LRT also offers a “forever” scheme for the dogs, should an owner not be able to look after their adopted dog any more. We serve clients from all professional military and support disciplines. As I’m writing this on Remembrance Sunday and having watched the Festival at the Royal Albert Hall the previous evening, may we also remember those who have given the ultimate sacrifice and think of their families trying to come to terms with this devastating loss, so much harder at Christmas. The courage of those left injured with life-changing consequences is so great, as well as those affected by their work as nurses and doctors in Sierra Leone throughout the Ebola epidemic. May we, in particular, also think of all those military dogs and their handlers killed or injured in the course of their duties to protect the lives of their colleagues and local people. This year’s Community Ball was an unprecedented success, with 164 partygoers gathered at Sudbury House for this year’s fundraising extravaganza. In total, close to £5,000, a record sum, was raised and this will be split between eleven charities including three local schools, the Faringdon Twinning Association, the Farcycles, the Pink Pigeon’s Trust, the Faringdon United Charity, the Pennyhooks Project in Shrivenham and Marie Curie Cancer Care. Over half of this was raised on the night from an auction of several exclusive “experiences” and a raffle made up of prizes generously donated by local retailers and companies.
The venue was filled to capacity for the first time in this event’s nine year history and guests enjoyed a delicious three course meal from the kitchen of the Magnolia Brasserie. There was even an impromptu appearance from Faringdon’s very own celebrity chef - Nick Bennett, currently appearing in the current series of “Masterchef The Professionals”. After service had concluded, local band “Locomotion” played two hours of Motown classics, which filled the dance floor until late into the night.
One party goer said afterwards “It was such a fabulous evening… full of fun, friends, funky dancing, fab food and frolics”. The provisional date for next year’s event is Saturday 19th November 2016. Photography: Daniel James Homewood

During the month of December, I imagine most people will be entertaining friends and family, which in turn will generate lots of leftovers. I have met many people who don't entertain the idea of leftover food, with everything not eaten being thrown away. Now, I think that is such a shame, as often cooked food reheated and eaten the next day will taste rather better than first time around. The flavours develop and marry to form layers of taste not experienced on first cooking. There are many old recipes that have lost their way and are hiding in the mists of time, just waiting to be rediscovered. Recipes using anything left over. Cottage pie, for instance, or rissoles. A good chunky pie or a curry. It seems to me that there has been a loss of kitchen management somewhere along the line? Our lives are being manipulated into believing we need to be very clinical and the food in the fridge must be labelled with a date or not reheated even. The skill has been lost in understanding, how much goodness there is in leftovers. So I thought a glance over one of my favourites, bubble and squeak with a little twist would do the trick. It's the perfect time of the year for it at any rate. Take equal quantities of potatoes, be it mash, roast or boiled, and vegetables. A mix is perfect, carrots, cabbage, sprouts, peas, what ever you have. Heat a large frying pan with some oil and a generous knob of butter. Peel and chunk an onion and soften that for around 10 minutes over a low to medium heat. At this stage, if you would like, add 150g roughly crumbled black pudding or even good strong cheese of your liking. Fry the black pudding for 5 or so minutes then slide the potatoes and vegetable into the pan. Stir well, crushing the potatoes- no need if it's mash! Then press everything down and leave to cook for around 7-8 minutes. Turn the bubble and squeak over in segments, pressing it down again so it forms a whole cake again. Leave to cook for another 5-6 minutes. To turn the bubble as a whole, you can, if you feel dexterous, place a plate or board over the pan then turning the whole caboodle so the bubble ends up on the board, sliding it back in to the pan to continue cooking. Even better than this, shape the mixture in to patties then cook for a few minutes on each side. Which ever way you decide, enjoy with almost anything! Warmed up roast meat and lots of gravy, sausages, a pork chop, some thick sliced ham or a chunk of roasted salmon. Delicious! Something Magical for Christmas… As with many indulgences that are entertained over the Christmas break, the time and inclination (and the constant reminder of snow promised by psychic weather informants) leans towards the ‘long drink’ by a roaring fire. My job amongst family and friends’ festive gatherings is to provide liquid refreshment, a role in which I revel as I spend the upcoming months ‘researching’ the perfect festive tipple. This year I have pulled the trump card with this latest find – Ca’ Rugate L’Eremita Recioto della Valpolicella 2011. A blend of the Italian grape varieties corvina, corvinone and rondinella, (the blend that makes up Valpolicella) that originates from the region of Veneto, Italy. This is a very interesting red dessert wine, made via a process known as ‘recioto’, whereby grapes are dried out in order to achieve a greater level of sweetness. The name recioto derives from recia, a term used for the lateral part of the bunch of wine grapes, those with the highest sugar levels due to greater exposure to the sun. These riper grapes from the outer edges of the bunches are hand picked during the last couple of weeks of September and are then laid flat in small wooden boxes that average around 6kg in weight. This permits increased air flow during the critical drying process. The grapes are then stored and dried in well ventilated rooms for around 6-7 months, which concentrates their flavours, sweetness and deepens their colour. The following March they are crushed, fermentation begins with natural yeast and the wine is filled into barrels, where it completes fermentation. The wine matures in wood, on its lees (expired yeast) for 10-12 months before bottling. The result is nothing short of spectacular! Rich, opulent steamed Christmas pudding aromas of raisins, sultanas, currants and spice, with dates and toasted oak. The aroma further develops on the palate with added spice; star anise and white pepper. The sweetness is mouth coating, however is cut through elegantly by the balanced acidity. The tannins are soft, subtle and well integrated and lead into a lengthy finish. Described as a ‘meditation wine’ for lingering on at the end of the meal, this wine pairs superbly with cheese – in particular gorgonzola or stilton, however, it is said that Recioto della Valpolicella is considered to be a great partner to chocolate due to the high acidity in cocoa. Traditionally, this wine is enjoyed with the local ‘sbrisolon’ biscuit, which is a variation of shortbread. Faringdon Business Breakfast Club This month it was foggy but only outside as a very good group with clear vision and focus gathered on the first floor of Sudbury House Hotel for our November meeting. We welcomed Luke Broadhurst from CIS, cloud experts and IT consultants to his first meeting. After nearly everyone had finished their breakfast we conducted a very informative 60-second ‘round’. Stephen Quirk did bring a ‘gadget’ that looked like a laser tape measure, with many requests to try it out at the end of the meeting. Neil Sleight selected another interesting ‘vinyl’ record, testing our ability to recall the era when McGuiness Flint were popular. We were treated to a fascinating property ‘Round-up’ from Andrew Brown and Christopher Marriot. Between them they provided an accurate picture of the residential and commercial property market in and around Faringdon now and in the future. It appears that there is a lot of dependency on Thames Water sorting out the sewage system before the planned new housing can be put on sale. Our next meeting will be held at Sudbury House Hotel on 7 December when we will be joined by Fairford and Lechlade Business Club in our ‘networking with neighbours’ series.

Why is it that ‘health’ sounds like something we have to eat but tastes really bad? What does it mean to live a ‘healthy life’? Is our health down to us or someone else’s responsibility? On our road to living a healthier life we may need the help of a health professional’s support. They may be able to tell you if you need to start or to stop something in order to improve your situation. Collecting data can help us find out where we are currently with our health compared to others. By monitoring our weight, size, exercise etc we can see change happening. This can be done by weigh-ins, body measurements, fitness trackers or filling in and updating a personal health questionnaire. Modern technology is ever more widely used to help us monitor change and even to diagnose illness when necessary. Building a support group around you with similar interests and goals will help you meet your long term aims. Spending time with those wanting to make positive change can make it easier to perk up your health. Making healthier choices over short term rewards, a well balanced diet, appropriate sleep, physical movement and mental rest are all going to help you improve your situation. This doesn’t always mean avoiding unhealthy food or exercising every day - it is about moderation and what is appropriate for you in the long term. Remember we are all individuals. A Cornish pasty now and again might just keep you on the straight and narrow for the long term! Take responsibility for your actions - do what you can do to improve your situation, be the best you can be, have fun and enjoy the benefits of your efforts. It is never too late to start. It doesn’t have to be hard to make changes that improve your current situation. Forget the excuses, focus on the many ways you can improve your health. Make your physical, emotional, and spiritual health a priority in your busy life. What will you do today to upgrade your health?

Far From Home Runners It’s 6am…you’ve been awake since 4.30 (love jetlag) and you’re fed up of staring at the beige walls of your faceless hotel room, so what do you do? A quick peek behind the curtain reveals a glorious sunrise over San Francisco bay. There’s only one thing for it – run! Now, anyone who’s ever visited will know – San Francisco is HILLY! However, it’s also known as a real runners’ city, so surely someone will have put some routes on the internet? A quick search revealed not just routes, but also that San Francisco is home to a very friendly running group, the San Francisco Road Runners, who welcome visitors to their Saturday morning club runs. A bit more online investigation and I’d discovered that they covered a wide range of paces (13 to sub-7 minute miles) and distances (3 to 10 miles) and their meeting place that Saturday was a mere two blocks from my hotel! It would be rude not to join them, really! A couple of hours later and I’d spent a thoroughly pleasant morning with a lovely group of people who welcomed me to their beautiful city, took me on a very enjoyable run (one girl even cut hers short so I wouldn’t have to navigate my way ‘home’ alone), and gave me a delicious breakfast! A perfect start to the day! Runners are, generally speaking, very friendly and look out for each other (we’ve all been the one struggling at the back!). So, if you find yourself far from home, I’d definitely recommend packing your trainers and checking out the local running club! Faringdon’s Far Runners are always happy to welcome runners of all abilities including those visiting from far afield. Our regular meetings are: Faringdon Market Place – Tuesday 6.30pm and Thursday 7pm and Faringdon Leisure Centre Saturday and Sunday 9am. Do come and join us!!

According to the NHS one in seven couples struggle to conceive which equates to around 3.5 million people in the UK. Two weeks ago I went to the Fertility Show in Olympia. The event was packed full of the industry’s top consultants and therapists who led talks on the latest advancements and best practices. There was solidarity and an unspoken connection in the room. Infertility is often a hidden problem because it is such a private and emotive subject. Reflecting on my own experience, when I was trying to conceive I remember how difficult it was to talk about getting pregnant. I remember walking down the street and at every turn there was a young baby or a pregnant woman. During this time, I particularly remember choosing what to confide and who to confide in. You know it takes three months for a human egg to mature and be ready for fertilisation. It also takes three months to produce sperm. In my practice, I have found it often takes three to four months for women, having a course of acupuncture, to get pregnant. There are a series of action steps that I walk my fertility clients through in order to prepare them for pregnancy: Ÿ Cycle – check ovulation and measure temperature throughout the month to help with diagnosis and plan when the optimum time to have sex is. Ÿ Nutrition – get the right balance of vitamins, minerals and food groups. Choose additional oily fish and leafy green vegetables, whilst reducing refined sugar and carbohydrates. Ÿ Exercise – get the right exercise regime. Believe it or not, you can over-exercise and this depletes you. Equally, under exercising and being overweight seriously damages your chances of getting pregnant. Ÿ Acupuncture - research shows acupuncture treatment increases blood flow to the reproductive organs, regulates fertility hormones and stimulates ovulation. *Search: BAcC fertility. Here’s what to do right now to prepare for pregnancy. Take some time out every day that is just for you. Reduce your stress hormones, which kill your fertility hormones.
