The Chamber of Commerce AGM is being held at 7pm on Tuesday 14th March at Sudbury House Hotel. They have invited all of the new retailers to come and present on how they will enhance the retail experience in our town and contribute to the community. 0 0 0 1 It occurred to me recently that the various expressions of whisky that I enjoy are rather like the different people who I like to spend time with – there’s one for most occasions and moods. For example, when I just want an easygoing companion who will lighten things up and is good alone or in company then I pour a dram of the Compass Box Great King Street. This delightful blend of Lowland grain and Highland malt whiskies is a prime example of Compass Box’s skill at using a variety of casks to produce whiskies that are real crowd pleasers. Creamy and toasty, with plenty of dried fruit, citrus, apple, vanilla and spices, I’m happy to drink this with just a splash of water or with soda water as a long and refreshing drink, or it makes an excellent base for a cocktail. In the same way that, it is interesting to meet people that open your eyes to a new perspective discovering a whisk(e)y with a different taste profile can open up new possibilities. For me, discovering American rye whiskey was a revelation. These are whiskies whose mash bill consists of at least 51% rye and as soon as you nose one its distinctive spiciness is apparent and on the palate this joins with a freshness and warmth that differs quite considerably from the sweet, smoothness of bourbons. Often cited as the American equivalent to Islay whiskies (and not to be confused with Canadian rye), they have a zingy character which I find enjoyably different to the norm. There are also times when it’s great to settle down for a few hours of more serious conversation and I find that one of the whisky equivalents of this is the GlenDronach 21. This Oloroso and PX sherry cask matured single malt reveals its complex layers of flavour over a period of time so it is definitely a contemplative whisky. The nose is a symphony of aromas that take a little while to unpick but include burnt toffee, autumn fruits, some smoke, coffee and spices. On the palate is the typical sherry cask dried fruit and cinnamon flavours along with chocolate, espresso, some sweet caramel, citrus, soft fruits and other goodies! Finally, there is the old friends, the ones that will never let you down and you’re always glad to see. My personal choices in this category include Highland Park 30, which if I’ve had a good day elevates my mood to another level and if it’s been a bad day cheers me up! Rich, mellow and gently smoky, with a fudge like sweetness, some dark chocolate orange and spices – I just love it. Another always welcome old friend is the Lagavulin Distillers Edition, especially at this time of the year when it’s ‘iron hand in a velvet’ glove combination of big Islay peat wrapped in PX sherry is just perfect.

Hello and welcome to a new February, with sun, frost, rain, snow and ice all in evidence as the New Year rolls on. Our bird feeders are constantly busy but the most difficult part is keeping their garden water supply liquid! Signs of Spring are there already as I write – to enhance the winter jasmines and viburnum's – bluebell, daffodil and snowdrop spears cutting through unwelcome frosty ground. Our sheep now have a bird-proof, weather-proof self-feeder hopper, but to some sheep it’s sheep-proof as well, so those sheep will continue to have free access to high-energy mineral tubs already located nearby. With heavier snow due, as I write, the local Welsh hill farmers will be bringing their flocks closer to the farm buildings and the sheep due to lamb will be moved into wellventilated barns to prepare them for lambing. Thinking of milk, has anyone seen or drunk black-top milk yet? A piece on BBC Farming Today discussed this initiative recently; the milk is likely to be sold from bigger retailers as well as delivered straight from the farm and at a cost that is simply covering the true cost of milk production. The scheme has been launched by the Free Range Milk Marketing Board. Clear, fair contracts, a fair price for high quality UK milk, will allow better reinvestment by each farmer for the benefit of his carefully-husbanded cows and “followers”. The comment on a Facebook video was that not everyone necessarily buys the cheapest wine or beer to drink in a pub, but buys that they enjoy. With the black top saying “enjoy milk” on the cap, that seems to pull a pint in the right direction! Out of what are left of UK dairy farmers, over 700 have already signed up with several hundred remaining to be added within the next few weeks. Now for a one brave large retailer to set the bull, sorry ball, rolling! Moo-ving on to calcium and teeth, I believe that technology has now been advanced into the commercial world regarding caring for teeth with caries (cavities). This new technique prepares the tooth for treatment then uses low-power electric currents to move the minerals Calcium and Phosphorus into the weakened area – both found in milk amongst other foodstuffs – generally encouraging teeth to repair themselves without drilling/filling and local anaesthetic injections. The process, called EAER, Electrically Accelerated and Enhanced re-mineralisation, has been developed at King’s College, London’s, Dental Institute. Professor Pitts from the Institute is quoted as saying that “The way we treat teeth today is not ideal. When we repair a tooth by putting in a filling, that tooth enters a cycle of drilling and refilling as, ultimately, each ‘repair’ fails. Not only is our device kinder to the patient and better for their teeth, but it’s expected to be at least as cost-effective as current dental treatments. Along with fighting tooth decay, our device can also be used to whiten teeth.” Food for thought! Practice news this month is that we are welcoming a fully-trained animal behaviour counsellor to run our very important puppy parties, that we hold at the Practice once a week. The Canine & Feline Rehab facility is now very much integrated into daily practice services, with our trained physiotherapist busy on Thursday afternoons. One related service that I hope to one day introduce is a digital thermal imaging tablet/camera, to not only analyse gaits but to identify problem areas with the right preparation and follow up physiotherapy, chiropractic, hydrotherapy and laser treatments available via the Practice. We still offer the autologous platelet regeneration therapy procedure at this Practice. Wine Romance Caught in a Wine Romance Yep, it's Valentine's Day again. How to celebrate – with wine, of course. But more importantly- what are you drinking it with? Wine pairing needn’t only pertain to say, a Michelin starred chef’s tasting or your weeknight chicken dish. It can be applied to any number of situations wherein food is scarce. After all, wine tends to be part of life’s best and worst moments, anniversaries, breakups, birthdays, deaths and of course - romancing... So, on a day devoted to love and lovers, why not pair wine to one of humankind’s most pleasurable activities – eating, of course! While taste differs from one person to another, there are basic principles that one can follow when matching food and wine. There are some well-known traditional concepts, like the idea that red should be served with red meat and white wine with fish and poultry. But today’s multinational and delicately flavoured dishes, together with the vast array of wines available, make pairing wine with food far more complex. Here’s a few principles to follow: The complementary principle is the most widely used, with most wine drinkers choosing a light-bodied wine to go with a light dish, a medium-bodied wine to go with a fuller dish, and a full-bodied wine to go with a heavy dish. They may take it a step further by looking for similar flavours and textures, for example: Earthy flavours with earthy ingredients like mushrooms; citrus flavours with fruity ingredients like pear; herbal flavours with ingredients such as fresh herbs and so on. The Contrasting Principle When seeking out contrast in food and wine, the basic principle is to create two different tasting experiences on the palate. An example being the pairing of a smooth and creamy texture with a sharp, crisp wine. Another would be a full-bodied warm wine with a cold cheese platter. Once you have these two basic principles off pat, you can delve further into the world of wine pairing with these other rules. Note the dominant flavour Just because you have pork on your plate, doesn’t mean it’s the flavour of the pork that will stick around. Think about what else is on your plate and what flavours are strongest. Is your pork served with a tomato based sauce or is your chicken served with a creamy lemon sauce? It’s these flavours that really count. Acid requires acidity Any food with a high acid level will be complemented with high acid wine. Sauvignon Blanc or Champagne and smoked salmon works. Heat needs sweetness Alcohol intensifies the heat in food. If you pair a high alcohol, tannic wine with a spicy stir fry, you’ll know about it! To balance this out, serve a wine with some residual sugar, such as a Riesling or Gewurztraminer. Even if you’re not a fan of sweeter wines, you’ll be surprised how much the sweetness is altered once paired with spice. Tannins compliment fat Tannin is the astringent or mouth drying component in red wine that gives it structure, but without fat, it can leave a bitter taste at the back of your throat. The fat balances the intensity of tannins and gives the wine a softer, smoother feel. If you’re serving Cabernet or Malbec, which is loaded with tannins, pair it with textured food like steak, duck or lamb.

Let me start by saying it’s a dreadful title, and was much derided when it was announced that it was the title of Horowitz’s first Ian Fleming-estate approved James Bond Novel. I’ve never read any of Fleming’s original Bond novels, though I did go through a spell in my mid-teens where I set myself the task of watching every single Bond film I could get my hands on. That enthusiasm waned off in later years though, and I haven’t even seen the Daniel Craig films. I was drawn to Trigger Mortis because – as a Holmes obsessive - I’m extremely happy with Horowitz’s work on the Conan Doyle estate-approved Sherlock Holmes novels The House of Silk and Moriarty. Horowitz is a writer of enthusiasm, verve and style. A writer who honed his craft on television as well as novels, a cinematic quality is evident in both the Holmes stories and Trigger Mortis. The novel opens in typical Bond style, setting the scene with a mysterious German up to nefarious deeds in his adopted country, the United States. We then start the story proper with James Bond in bed with a lady in his elegant King’s Road apartment. But it’s not his regular lady, it’s everyone’s favourite legendary Bond Girl Miss Pussy Galore. Having escaped the United States following the Goldfinger affair, Galore is in hiding with Bond in London. But Bond’s masculine need for his independence soon asserts itself, and Galore becomes an inconvenience pretty quickly.

The plot speeds along at a fair old rate through Germany, and the high-octane world of Grand Prix racing, and back to the States where Bond, and his intriguing new companion Jeopardy Lane race against time to save New York City from calamity. There’s a despicable villain in the form of Sin Jai-Seong, and a heart-inmouth incident with a hole in the ground. I enjoyed this Bond novel tremendously. We have increased our membership to over 260 over the last three years, making us the largest business group in the area. It has been exciting to see the fruitful results of partnerships being formed via the page. Thanks to alliances made via the group, Richard Marsh of CIS Ltd has just won a major contract to provide the IT infrastructure for a challenger bank. The group has also facilitated a connection with an HR professional to help recruit resources for this new contract. Sheffords the Bakers was also able to secure a corporate contract for a meeting with a Surrey Building Society in December. Membership to the group is completely free. The only prerequisite is to sign up to our Constitution and group rules. We now have a standing invitation to the Town Team Forum hosted by the Town Council, where we can raise any concerns passed to us by our group members. We’re pleased to reveal we are in the early stages of planning a Summer Ball and the Faringdon Business Awards, which aims to recognise the hard work and commitment of local businesses based in Faringdon, and the surrounding area. Which Diet is Best for You? It’s one month into the new year and some of you will have already given up on your new diet and exercise programme. As we know all ‘diets’ come to an end at some point, some sooner than others. As always, this year we are bombarded with new diet books, magazine supplements, DVDs, Apps and TV programmes, each with a different way to lose weight, look great and be healthy. Some say they have gone through all the diets and know the best one for you, whether it’s the best value for money or gives you the best result. Most diets encourage us to focus on the new diet and not our current eating habits. I would say that for most of us, there is little need to go on ‘a diet’, but instead we can improve on what we are currently eating. By making what we eat better we can make a massive change to our health, wellbeing, weight and shape. Most of us are doing something right, we just need to fine tune our food and perhaps admit we’re buying the wrong things. Almost everyone I meet professionally says to me that they know what to do to lose weight and how to eat healthily - but they just don’t put it into practice. So why is it so hard? I think it’s usually because if you are looking for a quick fix - an extreme way of eating – then it’s not going to be easy or sustainable in the long term. So you’re probably going to fail! Failure brings disappointment, stress and sometimes depression which in turn can lead to binge eating or overeating - on foods that give a brief moments of satisfaction leaving you craving that feeling again, leading us into a cycle of unhealthy eating. So what to do? If you eat real foods not processed foods, if you eat real vegetables not pre-packed meals, if you eat real meat, fish and eggs and not reconstituted meat, then you are well on the way to making change to your body. Look in the cupboards and get rid of the rubbish snacks, look in the fridge and get rid of the minute meals, look in the freezer and throw out the microwave dinners. The bags of crisps, the chocolate bars, the biscuits, the fizzy drinks and the one cup hot drinks however low calorie they will all be making you fat. There’s no need to get stressed about a new diet – try cleaning up your act and start enjoying good, nutritious food that will make you feel better, fitter and healthier. Try doing this first: Improve what you eat, move a little more and change will come. There’s no need to get too hung up on whether you should dine out on chia seeds or quinoa when you are mostly eating processed food. By improving what you and your family eat you are more likely to get a long-term change that you can build on. As you start seeing the changes you will become more interested in improving the quality of the food you eat even more. Remember nobody is forcing you to eat rubbish - it’s your choice! Eating to be full is one thing – eating to be healthy is another. If you want to feel full then fill up on vegetables. Choosing to eat for health will help you lose weight and feel better. Eat better - Feel better. Start by committing to making one meal a bit healthier!
