Business Update
This month we all have the chance to vote on the important matter of leaving or remaining in the European Union. Faringdon will be hosting a debate to discuss the issues, which is free and open to all. See page 20 for details. Another vote you will be asked to cast later this year is one to accept the Faringdon Neighborhood Plan. This is in the final stages of scrutiny by the district council before being returned to the town to decide whether to proceed with the plan or not. One thing we do not have to vote on is the Queen’s Birthday celebrations. The Town Council, Town Team, retailers and other local organisations have been working together to make it a truly memorable weekend. Keep an eye out for details of the various events happening in and around the Market Place over the weekend of June 11th and 12th. Two weeks later on 24th and 25th June it is time for, “Live at the Park” when Tuckers Park will play host to a great line up of bands as well as entertainment and stalls to make it a great event for all the family. It was entirely appropriate that the mainly fine weather of the weekend set us up for a fascinating insight on ‘Permaculture’ from Milly Carmichael. It was great to welcome a new member, Sally Edgington, who treated us all to one of her wonderfully decorated cup-cakes. Mine did not last long! Featured in the 60-second ‘round’ were appeals for customers in Antarctica, a project to build a tidal lagoon in Swansea, the opportunity to have something valued at Perry Bishop’s office in Faringdon amongst various aspects of advice on Auto-enrolment through to warnings on dividend payments and of course our monthly ‘vinyl’ spot featuring ‘The Cure’. Truly the extended reach of FBBC is global in every sense of the word. Our speaker, Milly Carmichael, gave us an intriguing view on the way in which business can benefit from the recognition of natural systems that have, until recently, looked principally at aspects of agriculture and horticulture. Milly spoke with great passion about the 3 core ethics and some of the 12 design principles used within Permaculture, illustrated in part by a comparison into the industrial and natural elements involved in making a cup of tea. There were some very positive interpretations about the features and characteristics of chickens and how they reflect different features of business systems either directly or indirectly. After a few questions and announcements of other networking and training events the meeting closed almost exactly at 9am.

0 0 0 1 My first stop of the day was Benriach Distillery Co’s HQ and bottling plant near Edinburgh Airport which, with seven bottling lines, is no small outfit. I expected to see wooden barrels everywhere, but as Alistair Walker my host explained, that is a very inefficient way of moving whisky down from the distilleries. Instead, it is decanted from the casks into road tankers while the casks remain at the distilleries for re-filling. As well as Benriach Distillery they also own Glendronach Distillery, always a great seller for us, being Sherry cask matured, although only a handful of distilleries do so, with stocks going back 50 years or so, the releases are rich in flavour and desirable worldwide. Just the opposite is Glenglassaugh Distillery their third and latest acquisition. Using some of the softest water in Scotland reflecting in the whisky, they have three expressions one of which is peated. Then on over the Forth Bridge through sleety rain and over salty roads to the tiny farm distillery at Strathearn. Using basic micro brewery equipment and two Portuguese stills with no spirit safe, just the distiller tasting the clear spirit as it came out of the spirit still condenser. At the end of the distillation the spirit becomes weaker but the flavour increases, the skill is to have a balance of both. I was allowed to taste which was an education! They make both Gin and Whisky (still maturing), which demand different flavour profiles so the skill of the distiller is paramount. Staying with friends in Dufftown, the next morning was spent on the distillery tour. First the little heard of Glenallachie Distillery, owned by Pernod Ricard, the lightweight whisky is used for blending apart from a few independent bottlings of which we stock two. Next the tiny farm distillery at Ballindalloch which opened in 2014 and like Srathearn, no whisky ready yet! Returning via Cragganmore, Cardhu used in Johnnie Walker blends and Macallan - with a huge new distillery, biomass plant for recycling distillery waste and warehouses being constructed. On to the new Dalmanuch Distillery, built on the site of the old Imperial Distillery, now collectable with ever increasing prices to match! No steam visible here as reclaiming heat, energy is an all important cost factor in whisky production, the older working distilleries emit vast amounts of steam condensing in the cold air! The afternoon was spent with Glenfiddich’s iconic Coppersmith Dennis McBain, who took me to Forsyth’s in Rothes. Forsyth’s make and repair every vital part in the distilling process - stills, spirit safes, washbacks, underbacks et al. The workshop is alive with flame and noise, ear plugs are essential! Vast sheets of copper are heated then manipulated into shape by men with great mallets and mechanical hammers shaping the larger parts. Like a jigsaw each part is made and fitted together. A very skilled and physical job. Outside the completed stills destined for the new Macallan Distillery could be seen as testimony to the skills used inside. All too soon another tough day is over!

WELCOME to another month, when rain has fallen for days, the temperatures have risen, grass is shooting upwards and the glory of the British hedgerow has been spreading West and North across our countryside. This reminds me of the BBC Dawn Chorus programme on the 1st May, as the earth rotated that day. starlings in Moscow, still imitate the horse drawn cab drivers’ whistles, nearly 100 years ago. Those hedgerows also unfold like that birdsong. The air is rich in the heavy scent of blossom from apples and cherries to hawthorns, with primroses and violets in the hedge bottoms. It’s such a joy to walk down country lanes, crossing streams and waterfalls – all the time spotting new plants, new blossoms and the wind in the trees. Let alone the view! On the other side of the hedge, big lambs are running to their dams for a little extra milk. The view from the village of Dungworth in Sheffield is equally rosy at the, Our Cow Molly farm business. This busy farming community created a brand, that convinced the City’s baristas that “Made in Sheffield” milk was best and it’s taken off from there all around the City. Only a few hours old, fresh milk is delivered the next morning in strawberry and white ice-cream coloured refrigerated vans. They won the category of The Future Food Award at the 16th BBC Food and Farming Awards, with one judge describing it as, a model that could save many more of the UK’s struggling dairy farmers. Dairy farmers are struggling at the moment. At least three major milk processors have announced cuts to farm gate prices for June. The reason is said to be the “continuation of the impact of depressed markets resulting from strong supply and high cow stock levels”. To put that in perspective, NFU Dairy Board Chairman, Michael Oakes, has said that even the most efficient dairy farmers cannot survive with prices at their current low levels. He said that there was no question that this is the most difficult time many dairy farmers have ever faced, with milk prices far below break-even levels. It makes Our Cow Molly even more worthy winners and the example that has been officially recognised may make all the difference to other dairy farmers. So in the news we have Molly the Cow and her friends, then Pero and Cap, two working sheepdogs. Pero returned to the Welsh farm of his birth after being sent to work on a new farm near Cockermouth, Cumbria. This 4-year old dog took 12 days to complete a 240 mile journey back to Mid Wales (Penrhyncoch). No one reported sighting him and, yes, he is microchipped. Apparently, he took off one month after arrival, while herding a flock of sheep. I wonder what was going through his sharp, intelligent mind. He arrived without the sheep on the 8th April, so presumably the sheep weren’t that keen to travel?! Cap, on the other hand, is a Donegal boy, sold at Skipton, 16 months old, for £15,000. A record price, seven times the average price for a good dog. He goes back to a farm in N. Ireland, to work. Being related to a champion dog and putting on a great display of skill and talent on auction day, Cap made history that sale day. The owner, Mr Padraig Doherty, said that Cap put on a sparkling display and that he is a special dog with genuine power and has a calming effect on sheep. Good luck, Cap! There is so much to know in the world of wine, where like most things, the truth is stranger than fiction. Here are some interesting facts worth pondering over: Ÿ There are over 5,000 wine grape varieties in the world— many of which have multiple names. Ÿ The Book of Jonah is the only book in the Old Testament that contains no reference to wine or the vine. Ÿ The Romans mixed lead with wine to improve preservation, flavour, and texture. Unfortunately, lead is poisonous. Ÿ Of the wine sold in restaurants, 55% is red wine. Red wine becomes lighter in colour as it ages, but white wine becomes darker. Ÿ There are more chemical compounds in wine than in blood. Ÿ 90% of wine produced in America comes from California. Ÿ The average number of grapes it takes to make a bottle of wine is 736. But that can vary widely depending on things like grape variety, condition when picked. For example, plump berries from rain or small ones from a dry growing season. Ÿ There are an estimated forty-nine million (49,000,000) bubbles in a bottle of Champagne. Ÿ The largest cork tree in the world is in Portugal. Barbeque Chicken! Mark Matthews Tree Surgery & Garden Care Ÿ Stump grinding Ÿ Hedge cutting Ÿ Lawn mowing Ÿ Turfing Ÿ Fencing Fully Insured The lighting of a barbecue is a lovely thing! Whether it's a gas or a charcoal, both will give you that delicious feeling of freedom of cooking out-doors. It's a special feeling that you can not really describe, but perhaps it's just taking us back to our roots of cooking in the open air. I like to keep a barbecue quite simple. Yes, it's lovely to be able to marinate, chop, squidge and skewer ingredients but I also think a good quality burger or an extra delicious sausage can't be beaten. Plump for your favourites and then don't hurry the cooking of them. Make sure you have the time to stand and keep turning things. Then you will truly have a wondrous meal, it will make all the difference. Just remember that you give time to your food on the stove so do the same on the barbecue. And accompanying things are a necessity, too. A really good potato salad, cooled roasted tomatoes dowsed in balsamic, cubed boiled beetroot mixed with green pepper, curly parsley and a little vinaigrette or ribboned cucumber mixed with a little rice wine vinegar, salt and sugar. All of these things are simple and quick. But if you do want to crank up the flavours and textures on your meats there are a hundred and one things you can do. Squeeze together minced lamb with fragrant cumin and coriander and press on to skewers to make shish kebabs. Or mix in to your beef mince capers, gherkins and cubed mozzarella then shape into burgers. Just experiment if you have time! Chicken is the favourite, I feel of many. Cutting it in to cubes and skewering is a good option for the cooking side of things. It cooks far more quickly keeping it more moist. But I love a bone in my chicken, the flavour it brings. A favourite recipe for me is a tandoori style chicken. I sometimes buy a paste and add a little extra to it but more often than not I keep it very simple. Mix together 4 tablespoons of Greek style yogurt - the total 0% fat works well - with 1 tsp of each, ground cumin, ground coriander and paprika a squeeze of lemon, a crushed clove of garlic, 1cm ginger grated and a good pinch of salt. Rub on to 4 thighs and 4 drumsticks. Leave to marinate a bit. Light the barbecue and cook the chicken over a low to medium heat for 25-30 minutes. Whilst it is cooking make a lovely yogurt dressing by mixing together 200g of the Greek yogurt with a piece of cucumber about 4 cm long grated, 2 tsp of mint sauce and a pinch of salt. Keep Yourself Young I am sure we would all like to live longer, and medical advances mean that we are - but longevity without health has its issues. This is nicely portrayed in the Greek myth about Tithonus, a prince of Troy. After the goddess Eos kidnapped him, she asked Zeus to make Tithonus immortal so they could be together forever. Unfortunately, Eos forgot to ask Zeus to keep her lover eternally young! But when loathsome old age pressed full upon Tithonus, and he could not move nor lift his limbs, this seemed to Eos in her heart the best counsel: she laid him in a room. There he babbles endlessly, and no more had strength at all. Every day billions of cells in your body die and are replaced with new cells. According to some information that I have read recently: Ÿ Cells in our digestive system are replaced every 5 minutes Ÿ The liver is replaced every five months Ÿ A new covering of skin happens every four weeks Ÿ Our heart is replaced every six to nine months Ÿ Your liver is capable of renewing and repairing from as little as 25% of its tissue Ÿ The adult skeleton completely regenerates itself about every 10 years Ÿ Recent studies indicate that even brain cells may regenerate With all that information in mind, how much we move, what we do each day, and of course what we consume can affect how well that regeneration process works. So if we are eating processed foods with almost no nutritional value, putting chemicals into our bodies that shouldn’t be there, consuming high quantities of sugar that can suppress the immune system or cause inflammation, drinking large quantities of alcohol that deplete vitamins and inhibit mental processing, we are negatively affecting regeneration. Heavy caffeine consumption can dehydrate us, deplete nutrients and stress our nervous system. Eating foods cooked in or containing poor quality fats can stress the digestive system and damage cell membranes. We all do it but don’t always think of the consequences of our poor habits. You could argue that it does not matter as our body regenerates anyway. But surely the more we do to keep our body’s processes functioning at their peak, the better the life we can live. Why settle for operating at less than optimum? Taking medication out of the equation, and by that I mean the stuff that can keep us alive when we are unwell, why wouldn’t we want to make sure that, as our body is regenerating quietly in the background, we give it the best chance to do so in a way that keeps us young and fit for longer? Eating fresh vegetables high in nutrients and fibres nourishes and protects our bodies from disease and helps our gut to perform optimally to extract all the goodness from our food. Now that summer is finally with us, it is a great time to get outside and get active. Take a look at the GO Active project organised by the Vale of White Horse District Council. This initiative helps people get more activity into their everyday lives. GO Active Gold focuses on the over 60s in rural villages across the district. Visit their website www.getoxfordshireactive.org for details of all the activities available, but here are details of some starting in June. With Euro 2016 just around the corner, why not try “Walking Football”. Aimed at the over 55s, you can get fit and have fun at your own pace! These one hour sessions take place at Watchfield Recreation Ground on Thursdays at 11am and Kingston Bagpuize with Southmoor Colt’s football pitches on Mondays at 11am. The cost is £2 per session. Or you can try you hand at Tai Chi and increase your balance, strength, flexibility and memory. These one hour sessions cost £3 each and the first one is free. Meet at Watchfield Village Hall on Mondays at 1pm. For our Active Women project, there is a women and girls’ touch rugby course starting on Tuesday 14 June at Faringdon Leisure Centre (from 7pm until 8pm). The Community Crochet Garden is working in association with the Pump House Project Charity to create a beautiful crochet flower garden. People of any age, gender or crochet ability are warmly invited to take part in this free, collaborative project. The group meets every Wednesday morning, and some Sunday afternoons, from 9:30am until 11:30am at the Pump House Project in Faringdon to enjoy tea, cake and a chat while they crochet. New crocheters are invited to come along and learn how to crochet flowers with all the necessary materials provided. The garden has already expanded to include a host of crocheted creatures and local nursery and primary school children are making clay flowers and animals that will be incorporated into the final display. For anyone interested in being involved but hesitant about crochet there are many other ways to join in, from assembling flowers to guiding visitors around the garden when it is on show. The garden will be displayed in the Corn Exchange during the Faringdon Folly Fest from July 29th to 31st and the flowers will be sold to raise money to support the activities run by the Pump House Project.
