Business Update The merry month of May certainly turned out fine in the end with some cracking weather and a deluge of Awards for our businesses too. The Faringdon Community Awards honoured Sjoerd Vogt with the Clive Davis “Community Hero” award, partly for the work he does promoting FairTrade in Faringdon and the tourist sector. The winner of the business award went to Pat Thomas butchers noting his outstanding customer service, with commendations to the runners-up, Stay Grounded and The Faringdon Cobbler. The Muddy Stiletto magazine (which sets itself out as an urban guide to the countryside) was also handing out awards and competition was fierce; several local businesses reached the latter stages but there were no winners this year. There was success at the inaugural Vale 4 Business Awards where Richard Marsh of CIS Ltd scooped the Business Leader of the year award and Employer of the Year. This is a fantastic achievement given the businesses he was up against from across the Vale district. Well-done Richard! Closer to home, the District Council have withdrawn funding for our Town Team coordinator and this means that the Saturday markets are no longer viable in their current form. But where there is a will there is a way and local groups are already taking on responsibility for “Saturday Events” in the Market Place. Due to the bank holiday, our FBBC meeting was a bit later than usual this month – arriving in the middle of May. However, this didn’t deter members who wanted to hear from Su Copeland from Priddey Marketing. Su helped our members understand what they needed to do about the impending GDPR deadline – and demystified some of the myths that exist. She was able to give clear definitions on each of the terms surrounding GDPR and give members actions that they needed to carry out. Our next meeting will be on 4th June at 7:30am. As usual, we will be meeting at The Bell Hotel. This month we invite members to explain what they love about their job. We have a very wide range of businesses and services represented at our meetings and we welcome anyone who wants to promote themselves and can contribute to the local economy. All are welcome to join us for a great breakfast and good networking – though bookings are essential to ensure a breakfast is available. 01367 240241 Faringdon Bell Ringers We are persons of all faiths, ages and walks of life who meet at All Saints every Sunday morning to ring at the time of worship. We also ring to mark special occasions such as weddings, so we celebrated the wedding of Harry and Meghan on 19 May by making a joyful sound soon after the newly weds had left St George's Chapel. We have also rung for several weddings so far this year. Since last year, we have been marking the fall of Faringdon ringers during the Great War. A board in the ringing chamber lists each of these – G Haynes, A Walker, P Ritchings, F Ritchings and T Lardner – and extensive research by one of our band has revealed some of their history. Please could you get in touch if you can tell us anything about these men, who were clearly valued by the tower 100 years ago. In particular, August will hear us remembering the death of Mr Thomas Richard Lardner at age 18, whose family lived in Market Place and who lies buried at Tannay British Cemetary, Thiennes, but about whom we know nothing more. We meet at the tower every Monday evening to practise and improve our skills. If you would like to take part in the tradition of ringing church bells, please feel free to visit us on Monday evenings (7.30–9.00 pm) or during Sunday service ringing (9.45–10.30 am). We are a friendly bunch that always welcomes newcomers to the tower. Bell ringing is the ultimate team activity, whether you wish to provide a service to the community or take up a satisfying hobby.

Welcome to a new monthly rambling in all directions! With dazzling sunshine and a rash of high temperatures, hedgerow blossoms have exploded into colour, with sheets of bluebells and garlands of hawthorn flowers, succeeding the bright patches of lesser celandine and wood anemones. The air is full of scent and the sounds of blackbirds in particular from the early mornings until very late in the day. The ‘lazy’ drone of bumblebees has upped tempo and been joined by a chorus of honeybees and butterflies. Migrant birds have made best use of the change of weather and wind direction; swallows, house martins, sand martins and now the swifts are back, but I’ve yet to hear a cuckoo. I wonder if many of us will? Of course, with rising temperatures, come the heat strokes and owners taking dogs in their cars. One practice alone on one day dealt with five dogs critically-ill with heatstroke or ‘hyperthermia’, with only one dog surviving, even then hopefully not significantly mentally or physically impaired. Such dogs should never have been allowed to travel – would those owners have left another member of their family, a baby, likewise inside a hot car? Prosecutions may well follow. From one uncomfortable subject to another, Cats Protection is calling on all Members of Parliament to support the introduction of air gun licensing in England and Wales. The Air Weapons and Licensing (Scotland) Act 2015 and The Firearms (NI) Order 2004 requires every person who possesses, purchases or uses an air weapon to have a licence in those two parts of the UK. In their latest campaign information, Cats Protection say that “Over the last two and a half years, Cats Protection has monitored reports in the press of cats who have been shot with an air gun. During this time Northern Ireland has experienced the lowest incidence of shootings reported in the press compared to other parts of the UK. This suggests that the licensing legislation in Northern Ireland is working. In 2016, a total of 202 cats in the UK were reported in the press as being shot with an air gun. Crucially 90% of these attacks were in England and Wales.” As I write, the “Wake up to Lyme” campaign is being launched by the Lyme disease charity. My Practice, along with other vets, medical and community centres, have the opportunity to distribute awareness packs to everyone interested and wanting to know more about reducing the risk of this disease caught from ticks bites www.lymediseaseuk.com Dogs on holiday in tick-areas of the UK also have the risk of being bitten and the Borrelia bacterium then invading the body via blood. A vaccine is available for dogs frequently visiting these areas but, in general, more importantly, purchase products which repel as well as kill ticks and biting insects from your vet. Tick bites can go unnoticed until a rash appears. The smart tick “spits” analgesics, anti-pruritics, anticoagulant and molecules which reduce any attempt by the body to eject the tick, with its head buried in the skin. LDUK.com advise the following for people: 1. Avoid walking through long grass and stay on pathways. 2. Tuck trouser bottoms into walking socks, a sensible belt and covering bare arms. 3. Use a GOOD insect repellent when walking in wooded areas (LDUK.com recommend Mosi-Guard, which is DEET-free). 4. Check all the family in the walking party from top to toe and all crevices, showering when you get home 5. As with your dog, remove any embedded ticks urgently (technique also available on the LDUK.com website!). Some diseases are transmitted within 3 hours of the first “bite”! 6. Lastly, if you become unwell, or notice a rash, book an appointment urgently with your GP and mention your concerns about Lyme Disease. On a totally different direction, but still all to do with “bug life”, how about plotting a plot for pollinators – our many bees, butterflies and moths amongst others. Both Bumblebee www.friendsoftheearth.uk and the Butterfly www.butterflyconservation.org charities have great tips on how to get plotting. In the Butterfly charity web site, you can download a free guide to plants that can thrive even in one square meter of garden. Download and print this free guide to transform an area of your outdoor space into a pollinator paradise. Discover which plants are best for butterflies and moths, which to choose for a flowerbed and which are perfect for pots. The choices you make in your garden can impact on wildlife in many ways. Alan Titchmarsh has got some great advice to help you welcome pollinators into your garden and be kind to the environment. 1000 Few whisky companies would take the risk of completely revamping the flavour profile of their range so it was interesting to get the news recently that this was what Whyte and Mackay have done with their Jura whisky expressions. Whilst having been known since the revival of the distillery in the 1960s for their Highland style drams, Jura also had in its line up the slightly smoky Superstition and the heavily peated Prophecy and perhaps this is why they have decided to fix on a style that will be consistent across the range and identifiable as recognisably ‘Jura’. Although the new Jura combines Highland and Island styles to produce a dram that is fruity with a hint of peat, the peat isn’t of the big, heavy hitting variety found in many of the whiskies of its near neighbour Islay, but rather a more clean and subtle smokiness that just floats over the tongue. Additionally, having a definite house style for Jura hasn’t prevented Master Blender Richard Paterson and whisky maker Greg Glass from experimenting with different finishes, but the ‘DNA’ is still evident as a basis that is enhanced, rather than overwhelmed, resulting in some interesting whiskies emerging in the new range. Along with the tall stills that contribute to Jura’s light, fruity spirit, one of the constant elements is the American white oak ex-Bourbon barrels used as the basis of maturation, as this is felt to be part of the essence of Jura whisky. In the new line up the 12 year old has the majority of its maturation in American oak but then has a finishing period in Oloroso Sherry casks, which brings a sweetness to the rich, smoky and fruity Jura. As a contrast, the 18 year old has been enriched by Premier Grand Cru Classé Bordeaux barrels, resulting in a full-bodied dram described as having flavours of black forest fruits, bitter chocolate and coffee. The ability to re-imagine and reinvent is said to be what has allowed Jura Distillery and its working community to thrive, and it is this concept that has driven the development of one of the most fascinating of the new whiskies – the Seven Wood. In this expression, the spirit has been matured in ex-bourbon American White Oak, plus French Oak from six different areas - the reason being that the tightness of the grain of French Oak varies according to the area it’s grown in, so bringing different characteristics to the maturing spirit. This results in a multi layered whisky with, for example, wood from Vosges giving ‘almost milk chocolate characteristics’ and that from Bertranges bringing in ‘tropical fruit’. We were impressed by all three whiskies and they are currently available for tasting in the shop so if you get a chance pop in and let us know what you think about this bold move by Jura. Fran Thomas

carrie@thelotusretreat.com I am a holistic therapist. I run the Lotus Retreat in Faringdon, alongside a team of 15 beautiful and very talented individuals. Together we offer everything from daily yoga to massage, reflexology, acupuncture and beauty therapies. Like many others in my profession, it was probably always my "calling" but it would take many small battles, personal revelations and a bit of self-healing before I was ready to truly commit to this path. The problem was that at school I was a very high achiever. It was inconceivable that I would go on to study massage or reflexology or Reiki, these were not options given to me by my careers advise counsellor. It would have been seen by my parents as a colossal waste of money spent on a good education, a waste of my intelligence... and anyway these professions were not really on the career radar in the mid 1990's. So I went to University and pursued a BA and then an MA in English Literature (possibly one of the most enjoyable but useless degrees in the world), all the while drifting off to India at every opportunity then coming back to sit in my uni digs burning incense, meditating and reading the piles of esoteric books I would bring back. I was 21 when something happened to change my life, something too big to ignore. Throughout my teen years I had ongoing health problems. I went to many doctors and health professionals but each one turned me away with the same response - something along the lines of "take this pill and your symptoms will go away." Sympathetic smile. End of story. I would leave feeling angry and disregarded, and despite my youth I knew that this was not enough, that a huge part of what was presenting itself on a physical level was not being heard or understood. It was like a warning light going off in my (then) battered purple Peugeot and being told by a mechanic to just switch it off and drive on. Then, whilst visiting a friend in Berlin, I received a shamanic healing from a guy I met at a party. I was a little hung over and skeptical when I arrived at his clinic the following day but his treatment would not only completely cure my health problem but also explain to me its emotional and psychological roots. I was amazed. I didn't look back. Over the next five years I studied massage, reflexology, lymphatic drainage and later Reiki, drinking in all the knowledge I could. I pursued Tibetan massage training in North India and more recently Ayurvedic massage in Kerala. I trained in these things because I found them fascinating and because I could see the incredible power they had to understand and treat the whole person - mind, body and soul, sometimes with miraculous results. I now feel very blessed to have created the Lotus Retreat in Faringdon, and to be providing a peaceful, nurturing environment for practitioners to work together and for people to come and receive treatments, yoga and meditation. We also run accredited training courses in massage, reflexology and Reiki. By Val McDermid I’m truly an omnivore when it comes to my reading habits. With no particular favourite genre, I truly rejoice in mixing things up. We have seven bookshelves of varying sizes at home, and on these shelves sit a variety of different books. From Booker-Prize winners to beachy bonkbusters. From politics and history to a full set of Charles Dickens, as yet untouched and ready to be my next challenge. Following last month’s review of froth and frivolity with Miss Pettigrew, I’ve moved into darker territory for this month’s. I revisited Truman Capote’s true crime classic ‘In Cold Blood’, which tells of the murder of four members of the prosperous Clutter family by two drifters in Kansas in 1959. Never was true crime so compellingly told as it is by Capote, and it is the book that made his name. I enjoyed diving back into this after last reading it about ten years ago, and it has, down the decades, lost none of its impact. I also munched my way through the latest novel by the mistress of contemporary crime, Val McDermid – Insidious Intent.
McDermid plunges you straight in to the action, and grisly action it is. A body is found in a burning car, which is a starting point for an amazing roller coaster ride through the psyche of a killer who has covered all of his bases and mocks our heroes from a safe distance. I truly could not put this book down. I read it on the train to London, sitting down between meetings, on the underground, and was actually standing on the train platform at Marylebone Station when I was hit by the thundering twist at the end. So thundering that I had to read it three times before I took in what had actually happened. McDermid is a master at her game, and Insidious Intent has spurred me to follow the trials of Tony Hill and Carol Jordan from the very beginning. I’m feeling an ebay binge coming on; surely the start of my eighth bookshelf? Insidious Intent is available now from all good booksellers.

Seven things to know about cooking with wine We’ve all heard the saying – indeed it is one of the Chef’s privileges; to have a bottle open and at the ready for the purpose of cooking (and the intent to drink)! So, what’s there to know about cooking with wine? Is it not a matter of pouring it in? Here’s 7 things to know about cooking with wine. As in every ingredient, you need to have a grasp on how wine works in a dish and the best way of using it. Here are things to bear in mind: 1. The wine you use needs to be drinkable. This means that it should be clean and fresh and not corked. It shouldn’t taste like vinegar as it is likely to make your food taste also like vinegar! If you have leftover wine, decant it into a smaller container so that the air doesn’t get to it (making it oxidised). Wine that has been left open for 4-5 days (Ha-ha – unlikely in this household) is generally OK, however, if it has been in your cupboard for months on end – NO! 2. Don’t use wines specifically labelled ‘cooking wine’ as its highly likely they’re rubbish – poor quality and generally not much cheaper than a cheap bottle of wine! 3. Having said the above - don’t feel that you need to max out on the purchase of an expensive bottle of wine – inexpensive, ‘entry’ level wines are fine. The most costeffective way to use wine in your food is to take some from the bottle you’re planning to drink. Most dishes only require a small amount of wine (this creates the excuse of opening the bottle ‘for the cooking’ – nudge, nudge, wink, wink!). 4. The most versatile wines are crisp. Dry, unoaked wines such as Pinot Grigio and medium bodied, less tannic red such as Merlot. Wines with a great fruit profile such as Riesling or Gewurztraminer are harder to use, however can be dynamic in a creamy sauce. It’s up to you to experiment! (My weekend in the kitchen …. ‘experimenting’ with new wine style sauces!!). 5. Sweet or fortified wines such as Sherry, Madeira and Marsala are perfect for cooking. Just a small amount adds a depth via sweetness and the flavour profile. 6. Reducing a wine by simmering will bring out its dominant character – sweetness, acidity or tannin. It’s a great way to concentrate the flavour when you want to make jus or a dressing. 7. A wine-based marinade will tenderise meat but it will make it taste more ‘gamey’ if you do it for longer than a few hours. The marinade should be thrown away unless you plan to cook it for a long period of time. Armed with these tips – go forth and enjoy cooking with wine (with some, perhaps being added to the food)!
