Business Update This month Faringdon hosted a meeting to share experiences and discuss the future of the loyalty card schemes that are operating here, Wantage and Abingdon.

We then heard from our guest speaker, Guy Chatburn of Rewardingvisits.com, about how social media and cross-selling opportunities might be used to encourage loyalty in the future.

The meeting was well attended and there were reports from the scheme administrators elsewhere in the district, as well as a lively debate about what we can do to encourage people to shop locally.

Whilst on the subject, don’t forget Independent’s Day on Friday 4th July, a national campaign, aiming to encourage shoppers to support their local independent businesses (both retail and non-retail) which the Chamber of Commerce is supporting.

You should also note that now is the time to contribute to the consultation draft of the Faringdon Neighbourhood Plan. This is available at www.faringdonplan.sebs.com or for inspection at the Town Council’s offices and the library. You have until Friday 27th June to have your say.

Noise levels rose as the members gathered from 7.30am for coffee and to swap ideas before the usual excellent breakfast was served at 8am. Club Chairman, Paul Brame, kicked off proceedings by welcoming the new members. Each member in turn then briefly introduced their business and the kind of opportunities they’re looking for.

This month our guest speaker was Val King who gave a presentation about the work of the Nasio Trust. Val herself is a volunteer who by day runs the Rooflight Co. She began with a story. Irene Mudenyo, an elderly local woman in west Kenya, found a baby in a field. He had been abandoned, and ants had begun to eat the skin off his back.

When Irene took Moses, as he was named, to the police, they just shrugged. So Moses was placed in an orphanage.

But Irene continued to take an interest in him, and when he failed to thrive, she took him away. One thing led to another, and she set up a charity!

The Nasio Trust is not just another orphanage battling against impossible odds. Their aim is to support poor children and their guardians in the community – which allows them to make a difference to more children. Two day care centres have been established, one in a rural location, the other in a town.

Lets Talk about Whisky

In a picturesque location at the top of Loch Indaal, with the Paps of Jura just visible in the distance, you will find Bruichladdich distillery, with its trademark aqua blue on the woodwork contrasting with the white walls of the buildings. Founded in Victorian times by the Harvey family from Glasgow, it is set around a courtyard and was designed as a model distillery that would enable the production process to flow efficiently – from the arrival of the grain through to the eventual departure of the filled casks at the pier over the road.

This Islay distillery has had a chequered history but its purchase in 2000 by a private consortium led by Mark Reynier was really the starting point for its current reputation of juxatoposing adherence to traditional equipment and methods with originality and innovation. Over the last 14 years it has evolved to be one of the quirkiest distilleries around, due in large measure to the very special people who are involved with it, including the renowned master distiller Jim McEwan, Its tall stills produce light, floral whisky and, until recent times, only very lightly peated malt was used. When distillation restarted in May 2001 with the new owners they continued to use lightly peated malt but one of their first innovations was to also distil using a very heavily peated malt, naming the range Port Charlotte so as to differentiate it from the unpeated expressions. These expressions were later joined by the super heavily peated Octomore.

Each of these ranges benefits from the lightness and elegance that is the house style. For the unpeated whiskies this results in a dram that has delightful notes of fresh sea air, citrus and vanilla.

The peated whiskies are always a real surprise because the heavy hit of peat you would expect is integrated with the delicateness of the spirit resulting in a mix of sweetness and smoke that dances across the tongue.

The distillery’s experimentation involving maturation in various cask types, and the use of organic and local barley in different expressions, resulted at one time in there being a constant stream of new releases, rather like an eager child showing you what it can do. However, there were some real gems that emerged at this time and some of these can still be found in the now more restrained core range and occasional limited editions – including the clean, fresh taste of the Islay Barley whisky, the creaminess of the organic expression and the sophisticated richness of the Black Art series.

There is not enough space here to do justice to the many aspects that make this such a unique and loyalty inspiring distillery. It’s takeover by Rémy Cointreau in 2012 will have had some impact but the company have promised to retain the individuality that ‘Laddie’ fans love and so the story continues.

Understanding the use of oak in wine making

Oak was traditionally used as a vessel in which to store and or transport wine. As wood naturally decomposes, it is tricky to pinpoint the date of its use historically. But to give you a rough idea, the Greek historian Herodotus made note of the Mesopotamians shipping vino along the Euphrates in barrels made of palm wood. Summary – it has been used for some time!

Over the past 30 years or so, the use and importance of oak for the purposes of fermentation and ageing has been understood and used to a much greater extent.

The expression of wines being ‘over-oaked’, tasting somewhat woody or distinctively oaky, can imply that simply, the oak is ‘under-wined’! The grapes used to make the wine lacked the depth of flavour to stand up to the fermentation process taking place in an oak vessel. When made with suitable fruit, oak adds complexity and texture to white wine e.g. Chardonnay based Meursault, while ageing red wines in oak helps to soften the tannins, which gives a suppler and complete wine that will age better in bottle.

The effect on the resultant wine varies according to a series of choices made by the winemaker: French vs American Oak: French oak has a tighter grain, higher tannin and lower aromatics, giving more supple, savoury notes of coffee, cloves and smoke, whist American oak provides more obvious sweet vanilla to creamy coconut aromas and flavours.

New vs Used Oak: New barrels impart the most flavour but are expensive £500-£700 each and are usually reserved for the production of premium wines. Many winemakers use a mix of new and used oak barrels to avoid over powering more delicate wines and adding mixed complexity. By their third use, the barrels’ effect on the wine is relatively neutral.

Light/Medium vs Heavy Toasting: The greater the depth of ‘toast’ or charring that the inside of the oak barrel receives during its construction, the lesser the degree that the wood flavour/tannin is leached into the wine by the alcohol.

Aromatic white grape varieties such as Riesling and Viognier are usually matured and fermented in stainless steel tanks as the pure grape aromas that are central to the character of their wines rarely benefit from the exposure to oak.

Talk to the Vet!

Welcome to this month’s selection …

There’s a few difficult topics that need to be addressed with your help.

An interesting piece on Radio 2 recently, asking whether chickens stop you being lonely.

People have been re-energised by keeping chickens, preferably being ex-Battery birds; older, retired people or those in nursing homes who once kept these birds at home or on the farm, return to happier memories of childhood. People with depression may have this opportunity given to them for the first time later in life, with a gift of an incubator, and the birds taken to shows when that person joins a local club and gains the chance to meet like-minded enthusiasts. Care home residents have benefited as do very young urban school children when they meet chicks in the classroom. One gentleman said that his grandfather kept himself very fit mentally and physically by a life-long battle between the local fox population and his chickens – with the bonus of course of really fresh eggs!

Now, for a short piece on seasonal rabbit health – diets, rabbit personal hygiene and maggots – sadly too common this time of year. Along with good hygiene in the hutch and good diets, there are some products licensed to prevent fly-strike or myasis, although some of these products may need to be applied very frequently. Please ask at your veterinary practice for further details. They will be able to give you advice on keeping your rabbit’s damp-prone areas dry and protected.

Rabbits affected with myasis will show lethargy and depression once deeper levels of the skin have been reached by the maggots, together with dehydration, shock and the classic putrid smell. To prevent diarrhoea clogging the fur, a suggested diet is as follows – ad lib hay and grass, up to 20% nutritional “weeds” like cow parsley, chickweed, plantain and sow thistle (LIMITED amount of dandelion and clover), vegetables such as broccoli, carrot TOPS, sprout peelings, cauliflower leaves and even fruit tree leaves and hazel twigs, ONLY 2% of extruded pellets (NOT the muesli type) and water ad lib of course.

Going back to previous discussions on passport for pets, before “harmonisation”, 8000 pets entered the UK via Heathrow in 2011, then, after “harmonisation”, 150,000 in 2012, reducing slightly to 140,000 in 2013. Internet-purchased puppies still remain a big concern to the profession along with fraudulent passports and undeclared entry into the UK. As a profession, when this is involved, the practice will inform the local authority who will then pass the investigation straight to Trading Standards. A new pet passport will be introduced later this year which will tighten up a lot of the problem areas – more tamperproof, harder to forge and to provide more information in order to trace the animal back and the veterinary practice that issued the passport. There will also be a “valid from” date. Veterinary practices themselves will store much more information to help with the tracing.

Very Sad!…

Many animal welfare and veterinary organisations are calling for an end to slaughter without pre-stunning for all animals.

EU and UK law requires all animals to be pre-stunned before slaughter to render them insensible to pain until death supervenes. But non-stun slaughter is permitted for certain communities. We have given our support to the BVA, RSPCA, HSA, FAWC and FVE who conclude that scientific evidence shows that non-stun slaughter allows animals to perceive pain and compromises welfare. This is an extract of a recent appeal send to me from our British Veterinary Association (BVA), who were involved in an interview in a short film on a recent BBC Country file programme. We must differentiate between religious and non-stun slaughter. Our concern does not in any way relate to religious belief but to the animal welfare compromise of non-stun slaughter.

We note that - over 80% of UK Halal slaughter is pre-stunned - the hindquarters of animals killed by (non-stun) Shechita can enter the market unlabelled While non-stun slaughter is permitted we call for clearer slaughter-method labelling and post-cut stunning to improve welfare. Non-stun slaughter affects millions of animals. We support a good life and a humane death for all animals.

Food sensitivities, intolerance's and allergies Most people who have a food allergy know about it as symptoms often express themselves very quickly after consuming the food. The problem with intolerance's and sensitivities is that symptoms can be much milder and take much longer to show up, so they are not often associated with the particular food that triggered them.

We are sure many of you will know someone, or will have at least heard of someone, that has given up a particular food group, if you haven't already tried it yourself.

A few examples of common foods that people avoid are gluten, wheat and dairy. While these foods are not inherently bad for you they are the most likely to cause reactions in people, exacerbated by years of over consuming them.

There are two common camps of thought in regards to this topic. Either people think that everybody should avoid them, or that it is all a big exaggeration and not to be concerned about it.

We like to take the middle ground and believe that food intolerance's are more prevalent than some might think, but by no means should everyone cut out these problem foods without a reason.

We would suggest that everybody should try to eliminate them for one month and see if they notice a change. After one month of going without you should have a big meal with a lot of that particular food and see how you react to it. If you are fine then it is a good sign that you can continue eating that type of food, however, if it makes you feel bad or express any symptoms that may have cleared then unfortunately you will be a lot better off without it.

Some common symptoms of food intolerance can be; Bad skin, Rhinitis/Sinusitis, Bloating, Stubborn fat loss, IBS, Migraines, Joint pain to name but a few.

If you are experiencing any of these symptoms or are willing to see if you will notice a benefit, we would recommend giving the elimination diet a try.

What foods to choose;

1 Gluten 2 Wheat 3 Dairy 4 Eggs 5 Nuts 6 Nightshades These are the main offenders, in order of priority, to try first.

So give it a go, see how you feel, at the very worst it will make you get more variety in your diet as you find replacements to your normal meals!

Berries

There are many flavours that capture the taste of summer for me, but one of my favourites has to be the home grown berry. I cannot even contemplate buying strawberries from Spain or raspberries from Morocco. I love to savour the English-ness of berries in season here.

The season is just beginning. Beautiful jewels of colour splashing our gardens, allotments and shop shelves ready to be eaten any way we choose! Quite often the best is just plain and simple with a dab of cream and perhaps a glass of fizz. But berries lend themselves to so many recipes. Let's start off by mentioning that most of the berry family go brilliantly with savoury dishes. Try pan frying duck breasts until tenderly pink, rest whilst you sauté raspberries or sliced strawberries in a little butter. If you feel bold, flambé in a slug of brandy then serve with the duck. Or try steaming lemon sole fillets then poach a few berries in a little wine with a touch of sugar. Dress the pearl white fish with the beautiful pinky tinged sauce.

Then of course anything sweet goes. Cooked berries are fantastic, oozing an amazing aroma and tasting beautiful.

Why not wrap a batch of strawberries in foil with a little sugar then place over your barbecue once you have finished cooking your sausages. Let them cook for 15 or so minutes then serve with coconut rice pudding.

Fill a lovely roulade or make a wobbly jelly or whizz up strawberries with sugar to taste then add to bubbly, 1 part strawberry, 4 parts fizz.

The possibilities are endless.

Try this recipe for wonderful pudding for White chocolate and berry tart, great for a touch of al fresco eating.

Roll out shortcrust pastry. Just roll is really good actually, so if you are not in the frame of mind to make pastry, just buy some! Line a 7 inch Victoria sandwich tin with the pastry, trim and bake blind. Mix together 200ml whipped double cream with 100g creme fraiche and 150g melted white chocolate. Once the pastry has cooked and cooled, spoon in the cream mixture then pile on mixed berries. Serve just as is or glaze with warmed strawberry jam. Add a little sunshine and away we go!

Honourable Bandit - A Walk Across Corsica

By Brian Bouldrey Terrace Books - University of Wisconsin Press Brian Bouldrey teaches creative writing at Northwestern University in the USA, has already written six books and edited several others; including three volumes of Best American Gay Fiction. So in coming to read Honourable Bandit - A Walk Across Corsica (my first of his books), I wasn't quite sure what to expect - but somehow had a feeling it would probably be anchored within the parameters of good writing.

Suffice to say, I wasn't disappointed.

A textured, snapshot view of the Corsican hiking trail through Brian Bouldrey and his German friend, Petra's eyes, does indeed, make for an interesting, if not overtly American travelogue, that is both thoughtful and philosophical.

Thoughtful, because of the gentle considerateness of the writing, philosophical because of some of the issues contained within the actual writing: “If you steal a loaf of bread, you go to jail, if you steal a railroad, you're a senator” “I do my best thinking in crowds oddly enough, at the symphony or during a play, dull plays are best for thinking, my playbill is always coated with notes scrawled in the dark concert hall or theatre, sad inscrutable scribble and useless once the lights are on.

“When walking, the only thing that can save me from my own shallow thoughts is civilized conversation with a fellow walker”. '' Shut up, stupid German girl, Shut up, stupid American boy”. (Jet Lag) Comfortable, colourful and simultaneously witty, Honourable Bandit is a pleasant and slightly provocative read, that although perhaps a little too opinionated for its own good, although said dictum could just as readily be applied to most writing, is still nevertheless distinctive enough to linger.

Tim Miller - he who wrote 1001 Beds has been quoted as saying: ''A remarkable achievement, deeply felt, humorous and extremely wise, Honorable Bandit takes the reader on a journey across Corsica, but even more takes us on a charged - Dantean at times - journey that explores the nuanced corners of life.

Our most intimate infernos, purgatories and paradeisos, all on one island.''

To a degree, I cannot help but agree - as there really is a very deep sense of thought taking place amid these 234 pages. As for Dantean thinking, I'll leave you with the following excerpt (from 'Lammergeier'): ''I must rephrase my wonder - how is it that beautiful things, come out of ugly things?

There is Dante again, betraying his own personal hatred, his own voceru, until it turned into lyric in The Inferno. Picasso's Guernica transforming genocide, if not redeeming it. What art after all, isn't begotten of pain?

Could something beautiful come out of all the terrorism all our military manoeuvres?

And who will do the transforming?''

Live at the Tithe II Saturday June 14th 2014 Despite the gales and storms of June 2013, the team that organised "Live at the Tithe" at The Great Barn in Great Coxwell, are determined to have another go Saturday June 14th 2014. Starting at noon, there will be continuous live music, Morris dancing, Highworth Silver Band and a range of craft stalls. There will be magic shows for the children and a range of "hands-on" activities in the Art Tent especially designed to bring out the creative sides of adults and children alike. We are especially delighted to welcome the renowned children's author and story-teller Neil Griffiths, to this year's event. Neil grew up in Highworth, began his teaching career here and has achieved international acclaim through his "Storysacks" project. Children will be enthralled by what Neil has to offer.

Live music during the day will be provided by many individuals as well as local bands such as Blondes with Beards, Ponderosa, Chalice and the exciting band of youngsters, Missin' Rosie. The culmination of the day will be a ticketed concert in the Great Barn featuring the award-winning acts, Jez Lowe and Megson. Jez is a world-renowned singersongwriter and Stu and Debbie Hanna (Megson) represent the exciting modern face of acoustic music. The concert will have a distinct north-east England flavour.

Over the past few months we have received reports of criminals obtaining a person’s private financial data (specifically credit and bank card details) through an elaborate deception. At the moment this appears to be confined to certain areas of Southern England, with high net worth individuals being targeted.

The thieves contact an individual by telephone purporting to be from their bank or credit card company, suggesting that they have been targeted by criminals and need to give a variety of personal data ranging from bank and card details through to details about security at their house and personal possessions.

The victim is then encouraged to call their local police station and given the correct telephone number to do so. The criminals are able to keep the victim’s telephone line open, intercepting the call to the police and confirming everything is in order.

In some cases victims are advised to box up their valuables and told a ‘Police officer’ will visit to collect them for safe keeping. A ‘security password’ is then given to reassure the victim and authenticate the next stage of the deception, which involves a subsequent visit to the victim’s home to remove the items previously identified as being at risk.

Advice for our clients Be aware Ÿ Trust your instincts. If something does not feel right, it is better to be safe than sorry. Ÿ Always be suspicious of any cold calls, as this is not the way banks or credit card companies usually conduct their business. Ÿ Never reveal your full passwords or login details. Banks never ask for your PIN or for a whole security number or password. Ÿ Do not give any sensitive information, details of your domestic security, potential periods of un-occupancy or details of any valuable items. Ÿ Do not hand over possessions or documents. Police do not remove an individual’s personal possessions on the off chance that a crime may be committed.

It is far better to avoid a claim altogether rather than go through the complicated process of making a claim, re-issuing all of your credit and debit cards, and making detailed statements to the police.

What to do if you feel you are being targeted Ÿ Suggest that you will contact your bank / building society / credit card company for further clarification and hang up. Use another telephone if available or wait until the next day to make the call if you can. Use a number from official printed documentation you have and not one given to you. Ÿ If you wish to respond more quickly, use a different telephone (with an alternative phone number such as a mobile phone) to call your bank, credit card company or the Police. Alternatively, call a trusted person (family, friends, neighbour) first and if this deception is happening, you will know that the person on the other end of the line isn't your trusted person. Ÿ If someone calls offering a ‘security password’ or even visits your home purporting to be from the Police to remove items, do not let them in or hand over any possessions or documents, but call the Police as soon as possible.

How to call for help As already stated, use a different telephone (a different telephone number such as a mobile phone).

Call 999 if you feel you are under threat. The Police have confirmed that it is fine to call 999.

Call 101 non-emergency line if you feel calling 999 is not appropriate and the matter is not of an urgent nature.
