Faringdon Business Breakfast Club October 2014 Once again a wet morning greeted a very well-attended meeting of the Faringdon Breakfast Business Club in Sudbury House Hotel on 6 October. It was great to see some new faces and also to see newer members returning to support the Club. We were treated to a technical brief on the merits of using a mono-pod by Stephen Quirk before launching into the opening round of ’60 second pitches’. Our speaker was Keiran Hearty from IGIVEU who introduced us to his book ‘How to eat the elephant in the room’ before moving on to his topic of Belief and Fear – two words that control your business. Quoting experiments with rats and introducing affirmations such as ‘I cannot fail’ made the time go very quickly and before we knew it, it was nearly 9 o’clock. Lets Talk about Whisky

We’ve already had several people come in to do their Christmas shopping, so I thought now would be a good time to take a look at choosing whisky for a gift. First of all, a quick reminder of some points to remember if you’re buying for someone else. Ÿ Do you know what style of whisky the person you are giving the gift to likes? A look through their current whisky collection may give you some answers or some casual questions dropped into conversation… Ÿ Are they happy to try whisk(e)y from a country other than Scotland? Ÿ What’s your budget? If you’re looking for a smooth, light to medium style of dram then the new Auchentoshan American Oak is delicious, with a beguiling mix of vanilla, peach, grapefruit and cinnamon. Or you could go for the refined elegance of a Japanese whisky with the Yamazaki Distiller’s Reserve, another very smooth whisky but this time with a red berry flavour and a subtle, incense like spiciness that comes from being partly matured in Mizunara wood. Other whiskies to consider include those from Aberlour, Glenkinchie, Benriach and Balvenie – not to mention one of our top selling whiskies, the AnCnoc 12 year old. For those wanting a richer and/or sherried whisky then you could consider Balblair, a little gem from the Highlands. Their 1999 2nd release, with its Christmas cake aromas and full bodied, sweet spiciness, is perfect for this time of year. Another Highlander, GlenDronach, always makes our top ten of recommended whiskies as they produce some stunning examples of sherry cask matured whiskies – particularly their single cask and UK special editions. Our ‘curved ball’ in this category is the Amrut Kadhambam – an Indian single malt that has been matured in rum, sherry and brandy casks, resulting in a rich, full bodied and delicious whisky. As an introductory peated malt the Japanese Hakushu 12 year old, with its elegant style and a delicate overlay of light smokiness, is ideal and may even convert the non peat lover. For those who love a big hit of peat then a Lagavulin or Laphroaig always goes down well but for something a bit different you could buy a Kilchoman. Established in 2005 but already producing some great whiskies with plenty of peat balanced with a certain amount of sweetness, it’s proving very popular. For something completely unexpected then go for one of the limited release peated AnCnocs from Speyside. The light, subtle flavours that are the spirits DNA have been combined with a big peaty hit that results in whisky that could easily be mistaken as coming from Islay but has its own unique character. Hopefully this will have given you some pointers on your Christmas gift buying. Next month we’ll look at stocking fillers for the whisky lover.

With so many memories, and new memorials such as the Welsh one in Langemarck and tributes to all those affected by events between 1914 and 2014. Remembrance Sunday 9th Nov and Tuesday the 11th Nov will take on an even more “personal” note this year. We are having our eyes opened by roles being played and stories told by service men and women of their experiences throughout those 100 years. Photography, research and writing, has brought much insight to us with talks and exhibitions. I was watching a BBC programme following a small group of famous bag-pipers who served in the trenches. The sounds of battle were recreated by experts in their field - and barely, just barely, could the strong chords from those pipers be heard leading their colleagues into battle. As a mark of respect, I will direct my thoughts in this direction for this important month. The feeling that we’re ALL involved in one way or another has been heightened by the participation in the donations of ceramic red poppies all around the moat at the Tower of London. Ceramic artist Paul Cummins and stage designer Tom Piper are bringing the “Blood Swept Lands and Seas of Red” art installation to life, along with the volunteers. Each poppy represents a British military fatality. The total numbers have reached 498,750, but the Tower of London Remembers The First World War project, is looking towards the last one, the 888,264th poppy. At a recent BVA meeting in London, a talk was given by founder Allen Parton, of Hounds for Heroes, set up as a direct result of his inspiring experiences with Endal, his faithful “Hound” for 15 years. Together with Family, close support and Endal’s innate and trained abilities, Mr Parton described that his life, scattered and almost lost after 5 years in hospital into tiny pieces of a jigsaw, was, piece by piece brought together again. Mr Parton said that there are over 900,000 injured service personnel currently in the UK and Hounds for Heroes fully funds the £20,000 necessary to train and care for each dog for its lifetime of service. There are currently 16 “cadets” in training at a training centre in Hampshire. Hounds for Heroes are discussing plans to place dogs with service personnel experiencing mental health problems, such as posttraumatic stress disorder. Going back to that project, the inspiration for the entire project and the clear skill of the hand-making poppy team of Mr Cummins’ came about by the artist reading an entry in the will of a Derbyshire infantryman, written before being fatally wounded in the Somme, knowing as he wrote that everyone was dead and surrounded by their blood, leading him to pen these words: “ The blood-swept lands and seas of red, where angels fear to tread”. But, some angels did tread; in particular this forward-thinking Officer, created a training school for service dogs in Essex and became highly respected for his skills in training techniques for rescue dogs, particularly Airedales and Bloodhounds, his own War Dogs. These rescue and casualty dogs were trained to find the wounded and dying, carrying useful medical supplies to those able to use them. These dogs had to be very special with high endurance, using their enhanced ability to listen for signs of breathing, even if bodies were partially concealed. They either stayed by the side of the wounded man or group of men, possibly even under gunfire, or quickly returned to their handler in the stretcher team, leading them back to the injured man. All the armies had dogs, over 50,000 in total but the actual number is thought to be much higher. The breeds most suitable were the German Shepherd Dog (all armies), Doberman, Airedales, Bloodhounds and later the American Pit Bull terrier cross. Many uncounted others were pet dogs, mascots, and trench “ratters”. It’s interesting, unless I have been advised wrongly, that the RSPCA was the “official” animal charity appointed by the War Office for WW1 the sole supplier of animal aid, working of course with the Army Veterinary Corps. The Blue Cross, recently renamed, then worked with the French Army. Both charities were heavily involved with the care of all those thousands of horses as well as serving dogs, also assisting in the return of a percentage of them (Rabies aware hence quarantine) to the UK. Not many “War Horses” though. I hope that you’ve found this as interesting, inspiring and humbling as I have through researching this article. Walking through the large wooden doors into Restaurant 56 I found myself being taken back to the days of Downton Abbey, the splendour of panelled walls, magnificent wooden staircase, beautiful paintings and shimmering candelabras was all quite breathtaking and most importantly warm and relaxing! We were welcomed by a charming young lady Claire, who showed us through to the garden lounge which had large soft comfortable chairs, a fireplace, walls adorned with very interesting paintings and subdued relaxing lighting. Drinks and a selection of canapĂŠs consisted of six intricately made canapĂŠs each bursting with its own flavour, roasted almonds and a selection of olives. If these were an example of the meal we had ahead of us, it would be quite a treat! Claire rejoined us and we opted for the food and wine tasting menu, each course served with a tasting measure of recommended wine. We were shown through to the dining room, the walls were wood panelled to waist height with the most spectacular floral arrangement in the centre of the room, elegant silver service table settings and very comfortable chairs to enjoy the meal ahead. Claire and her lovely colleague Jessica would alternately bring in the courses, starting with freshly made brown bread made with Guinness and white seeded bread, with hand rolled butter, salted and unsalted for choice. Our wine tasting courses started with a New Zealand wine, light and easy, very refreshing to compliment chicken liver parfait, orange, savoury granola. I can honestly say the best I have had and the presentation was a work of art. Just the right amount of time passed before being presented with; French white wine with a beautiful floral bouquet, matched perfectly with the course of poached then roasted breast of quail, autumn truffle, cauliflower and sweetcorn. The quail was slightly pink inside, it melted in your mouth and was a picture on the plate. French white wine grown on the banks of the Loire was served with Cornish Plaice, crab fregola, artichoke and celery. Even my companion, who is not a fish lover, didn't leave a morsel on the plate, that said it all! Next came a French red wine. When the Californians started producing wine they took a vine from France. France was then hit by a plague which wiped out all their crops, but they were able to take a cutting back from the Californians, replant the vines, et voila! This is what we were drinking, very smooth and the aroma was lovely. It was at this point that I asked, "who selected the wine"? Claire said four of the top management sit down, including Chef, and choose from a large selection of wines in order to find the perfect wine for each course. What a super job! Ballotine of rabbit and cured ham pistachio risotto, heritage carrots and grelot onions accompanied the French red wine, it was gone in an instant! Believe it or not, I don't eat rabbit or risotto! I am now reformed. The desert wine presented was sweet but just right and partnered Eucalyptus, Pear and Coffee which was refreshing and cleansed the pallet. To finish. Valrhona bahibe chocolate delice, English quince and walnut praline ice cream. Chocolate heaven! A perfect finale to an outstanding meal. Claire and Jessica's knowledge of each wine and dish was extensive and very impressive! There is an A La Carte Menu available which is reasonably priced and I would thoroughly recommend you dine at Restaurant 56. We are extremely lucky to have such a fine dining restaurant on our door step. My compliments to the Michelin Starred Executive Head Chef, Andrew Scott and his excellent Sous Chef Nick Bennett. Squash

Squash‌ There are some lovely little treats that grace our tables throughout our ever changing year. Seville's in January, rhubarb in the spring, asparagus in May and squashes in October and November, and on if kept well. This amazing fruit is related to the melon. Take a little sniff and look at the seeds. You'll see the similarity. Anyway, squash and pumpkin are so versatile but I think that they get treated to much the same treatment most of the time. Soup, roasted or in a risotto perhaps. I’m not saying this is a bad thing, all these ways are good, but it's great to ring the changes and do something a little different. In the shop, we love to cook squash on the vegetable tart we make. Some ready rolled puff pastry is all you need. Top with a layer of cream cheese then season, scatter over some cubes of squash and bake for 30 minutes. Remove from the oven then scatter over 200g beetroot cubes and 200g crumbed feta. Bake for another 15 minutes. And that idea can form a basis for most vegetables, summery or wintry! But I love to get a little more hands on. So let's make a bread dough. To serve 2, take 150g strong flour and mix in to that 1 tsp easy blend yeast and 1 good pinch of salt. Bring together to a dough with 100ml warm water. Use a table knife for the job, the dough wont stick to it like crazy. Turn on to a lightly floured surface and knead for 8-10 minutes until the dough is silky and elastic. Try to get to the stage where you have no flour at all on the surface. Too much flour will dry the dough and be very slippery to knead. You never can get a purchase on the counter to really stretch the dough. Rest for a moment whilst you get the squash diced and blanched. Peel and wedge 2 red onions too. Roll the dough out to around the size of an A4 piece of paper. At this stage you will need a good dusting of flour and keep checking the dough is not stuck to the counter. Place on to a baking sheet then rub with olive oil. Scrape over a crushed, plump clove of garlic then scatter over the squash and onion. Finely chop 8 or 10 sage leaves and scatter these over too then lastly 200g crumbled feta cheese. Bake for 20 minutes until bubbling and crisp. Serve with plenty of wintry salad leaves. revisit a not-so-mainstream red wine grape variety, pinotage is in order. The aim was to make a new variety able to produce grapes that ripened consistently, providing flavours that were reminiscent of the great wines of Burgundy. Typically, the colour of pinotage is a very deep to opaque ruby, with savoury aromas of earthiness and brambles. For me, the flavour profile is focused on primary fruits; rich, ripe plums, blackberries and mulberries with a subliminal savoury note. Pinotage hovers around 14 % abv mark, and the tannins are often grippy. Problems that have arisen with this grape variety is that it is hard to achieve a lower alcohol content and it is noted that it can sometimes show ‘spiritness’ that can be described as acetone in flavour. Most of the world’s plantings of pinotage are in South Africa, where it originated and is considered to be the country’s flagship grape variety. It is also grown in New Zealand, California and interestingly, experimental plots of pinotage are now planted in Germany.

Ruby in appearance, on first approach this wine shows great intensity of rich, ripe plums, mulberries and blackberries with a hint of white pepper. The palate delivers what is detected on the nose with more; cherries, strawberries and a hint of star anise along with a touch of earthiness. The tannins are approachable, well integrated and supported by the primary fruit characters. The length on the palate is medium, with a savoury finish. Rich and flavoursome, a great accompaniment with my beef casserole!

The pub is very welcoming with beautiful wooden beams and solid stone walls adorned with pictures, memorabilia, paintings and a hint of nautical attire making you feel very much at home on the banks of the River Thames. Ordering takes place at the bar as there is no table service. We purposely went for the Super Steak Night which is a selection of cuts, locally supplied by Lechlade’s Cutler & Baylis butchers and costs £25 including a bottle of wine for two! Great price! We were overly hungry so opted for an extra course. I had a prawn cocktail which looked and tasted perfect. I immediately thought when it was placed in front of me, “just what I'd like to sit down to for a business lunch or ladies get together midday”; the salad was crisp and fresh with thick crusty bread and the prawns perfect with a thousand island dressing. The brie wedges were piping hot and crisp on the outside while deliciously runny on the inside, the salad was crisp and the cranberry sauce tasty, both plates were clean when finished! After a short pause, enough time for the first course to go down, we had the main course brought to the table. I am very fussy about my meat, I like my steak medium, still pink inside but not bloody! When it arrived it was just right! The steak was served with large crunchy chips, a big onion ring filled with mushrooms and a side salad with fresh coleslaw, plus a choice of sauces, I opted for the creamy mushroom sauce. It was delicious, being accompanied with a nice, smooth Rioja. With the live entertainment just beginning in the main bar, we decided to spoil ourselves with a Key Lime Pie topped with cream on a biscuit base served with lemon sorbet, delectable, and a country apple pie, just like your Nan used to make, just right. We left for our short drive home very well fed. The Riverside is a wonderfully relaxing and welcoming place and a definite recommendation to dine out at.

October 12th 2014 meant only one thing to Faringdon’s Far Runners the Oxford Half Marathon (OHM)! So why would 20 apparently sane people spanning six decades in age choose to spend Sunday morning running 13.2 miles around Oxford? You may be thinking ‘they wouldn’t – they’re clearly all bonkers!’, so let’s find out. There were many reasons: chasing personal bests, exorcising the ghost of races past or achieving something they wouldn’t have dreamt possible a year ago. For several runners, the inspiration was a charity close to their heart. Amongst those raising money was Suzi Carthy, herself a survivor of cancer, supporting Prospect Hospice who had cared for her late friend; read more about Suzi’s inspiration here: http://bit.ly/1pxMuOK. Friends Helen Mattingley and Lisa Holmes, who’s only been running 5 months, raised money for another local hospice, Sobell House http://bit.ly/1tgo6WJ. For the second year, several runners joined Dylan’s Marathon Challenge http://on.fb.me/1wmuCdL, raising funds to keep Wiltshire Air Ambulance flying. In true Far Runners style, the aim was for everyone to achieve their personal goal, whether that was Rachel Whiting’s fantastic 1 hour 45 or simply completing the course. That afternoon, our Facebook page was ablaze with messages thanking club mates for their company or for keeping them going. Precious minutes were added to some times, but that’s how we run: we encourage, support and look out for each other. I joined the group earlier this year and it is thanks to all of the group that I was able to get through the gruelling 13 miles...’. Penny Carter-Francis echoed her words: ‘When I joined back in March...to be able to run the OHM in 7 months was something I never thought I’d do...it’s all down to joining Far Runners’. The more race-experienced Austen Roberts said: ‘I'd done 10ks as it's always good to have targets but I really missed company. Far Runners gave me like-minded people who didn't care if I was fast or slow but were just keen to have a go...I had a great time, a new pb!’

NUTRITION - Where to start?

There is a lot of contradictory information on food and complicated food labelling. A lot of us are distracted and short of time when we make our daily food related decisions. We are all individuals with different levels of health, physique and personal tastes. We have to work out what works for us when it comes to eating correctly for our body type and age, but certain nutritional principles will always apply to all of us as we are all human beings. Take away: Not all diets will work for YOU! You need to find a healthy eating regime that suits and that you are able to maintain as a way of living for the long term. As health professionals we are always reading the latest information on nutrition and we spend a lot of time helping our customers discern what is relevant and correct, what is rubbish, or headline grabbing articles that do not give the full story and contradict what we read only the day before. With 24 hour access to social media we have all become experts and are happy to give our advice! Takeaway: Consider the source before you act on the information! Remember there are no miracle cures – not yet anyway! Do food manufacturers have our best interests at heart? They sell us diet foods; low calorie, low fat foods and artificially sweetened drinks that they say are good for us. Takeaway: Most of them are unhealthy and we would be better off making our own meals from scratch. Yes you can eat diet foods occasionally but they should not be what we eat on a daily basis. Remember, reading articles in glossy magazines are usually snippets of research or new fad diets. One month supplements are good for you, the next month they are bad for you and it can all be in the same magazine. Articles are made ‘sexy’ to get you to purchase the magazine and are usually accompanied by, or sponsored by, a food manufacturer trying to sell you something. They can leave us very confused and not sure what to do for the best. Takeaway: Question what you read, do some of your own research before believing articles and diet product information. Focus on eating healthily - only once you have done that then, you can look at ways to improve your results by evaluating and understanding information you read in magazines. We grab food and eat on the go in much of our daily lives. We eat snacks not because we are hungry but because we can and because we have usually had a disappointing meal beforehand. They give us a momentary ‘buzz’. Instead, get back to basics, sit down and eat food that you prepare yourself and take the time to enjoy it. With all the modern labour saving devices around us surely we can find the time to prepare our own healthy foods and avoid convenience snacks that tell you they are healthy and make massive profits for the big food companies. FARINGDON FLOWERS Times are changing for Thanks A Bunch! After 8 years of successful trading we are moving the business to focus on weddings, funerals, parties and special events, we will also be taking orders for Christmas wreaths and centre pieces, orders to be in by Friday 19th December. Orders for cut flowers for Christmas also need to be in by Friday 19th December for delivery on Monday 22nd December and Tuesday 23rd December. The shop will close on Friday 7th November 2014 and from then, you will be able to place orders via phone and e-mail.
