August was a great month with a number of fantastic events and some exciting new businesses opening their doors in and around the town centre; all great reasons for people to come to Faringdon. September has not slackened off; the town markets are getting bigger and better, there was “Heritage Day” and the very first “Bangers and Beer Festival”, all contributing to increased footfall in the town. “La Bobina”, tapas & wine bar have reported an outstanding response from the community since opening. The great work by the Town Team over recent months has contributed to progressive development of the town. The team hopes to expand in the near future in order to build on this success. A recent proposal to reduce the number of Oxfordshire waste and recycling centres has caused concern for some small businesses and the general public if our local centre in Stanford-in-the-Vale was to close. There is a public consultation on these proposals until 5th October and you can contribute to this by visiting www.oxfordshire.gov.uk/waste

During the 60 second round a broad range of businesses and services were promoted, including financial support through mortgage and financing, e-cigarettes, tax returns with or without mediation, social media, hotel interiors, local entertainment venues, legal support, computing, voice recognition software and coaching using horses. Our speaker, Bayley Eyely, then gave us a fascinating and entertaining talk about Public Speaking, which has been rated in some circles as more scary than death! Bayley shared with us some of the tips and techniques that stars of stage and screen use in order to prepare themselves to speak in public. She emphasised the importance of warming up, posture, body language and perhaps most importantly the need to breathe. Tarte Tatin
Time has swung around again to my favourite time of the year. The leaves are turning burnished gold's and reds, the nights are becoming dewy and cool and apples and pears are dripping off of the trees. A time of plenty for the beautiful British Isles. There is an air of preparation. I've heard of quite a few people who are now making cider or perry with their harvest, or making the most of just simply juicing the fruits. Preserving too. Making the most of the land's creations. And there is nothing quite like the flavour of an apple picked from the tree and eaten or juiced directly. Chopped, spiced, bottled, purĂŠed. They are the taste of autumn sunshine. Another little gem found abroad are crab apples. These little chaps make stunning jelly but in days gone by they were actually used in pie baking. I can't quite imagine this due to the heavy tartness, but any recipe you may come across will have copious sugar included! So let's leave that behind in history and use what we know to be sweet, crisp and juicy; great for our modern palettes. Apples, and pears make fantastic inclusions to sweet and savoury dishes. Wedges of either, added in to a creamy casserole or chunkily chopped in to a wintry salad. Roasted pears with blue cheese make a stunning starter or just a plain and simple baked apple, drenched in golden syrup or honey. There are many possible ideas and recipes. But as these seasonal fruits are so perfect it's great to keep them as the hero. And easy puddings are always a hit so let's try this. Tarte Tatin. Take a frying pan that you can put in to the oven. Heat 3tbsp water with 100g sugar in the pan until dissolved and then bubble until golden. Add in 75g butter in cubes and melt that in. Then peel, cut in half and core 7-8 apples and lay them in the pan rounded side down. Bake for 30 minutes. Meanwhile roll out 300g ish of puff pastry and chill. Once the apples are cooked, lay the pastry over the top and bake for another 30 minutes. When it's cooked, let it relax for a few minutes then invert on to a plate. 0 0 0 1 Non-chill filtered whisky has become increasingly popular in recent years but what is it and does it matter if the whisky in your glass is chill filtered or not? The technique was developed in the 1970’s when some whisky was returned from America to its UK supplier because it was cloudy in appearance. Further investigation revealed that a strike at the dock where the whisky had landed meant that it sat out in sub-zero temperatures for a period of time and when whisky, at a strength of 46%abv or lower becomes chilled or has water added to it the fatty acids and esters naturally present in it clump together and produce a cloudy effect. Additionally, this clumping can lead to sediment forming and many whisky producers view these visual changes as undesirable as they believe consumers want a bright, clear dram. Chill filtering involves reducing the temperature of the whisky to around zero degrees Celsius and then passing it through a series of filters under pressure to remove the ‘undesirable’ elements. Speed of filtration, number of filters used and degree of pressure all affect how much residue is collected but the end result is argued by many to produce a whisky that is diminished in several respects. The claims are that whilst some of the esters removed have little or no effect others are vital contributors whose removal results in a loss of flavour. It is also proposed that some aromatic congeners are lost, as are fatty acids that contribute to a rich, viscous mouth feel, so overall the whisky will be perceptibly different to one that is not chill filtered. It’s an argument that rumbles on, as whilst there is no arguing with the difference in the appearance of whisky, if water is added, taste and mouth feel are far more subjective. However, with the current appetite for craft made, natural products then consumers increasingly want to enjoy their single malt ‘au naturel’ and don’t object to a slight haze. I personally have often felt that a non-chill filtered higher strength whisky can be as smooth, if not smoother, than a chill filtered one at 43%abv and this could arguably be due to a more viscous mouth feel. Some distilleries don’t chill filter any of their whisky, whatever its strength, and others avoid the need to chill filter by only bottling at 46%abv and above. Bruichladdich are particularly passionate about not chill filtering and other distillers that tend not to include BenRiach, Kilchoman, Ardbeg, Springbank, GlenDronach and Glen Garioch. Alternatively, a distiller may choose to bottle at a higher abv those whiskies in their range that they feel non-chill filtering suits (for example the Aberlour A’bunadh) and to bottle others at below 46%abv and chill filter them. Ultimately, as always, it’s down to personal taste and preferences but I have to admit a certain bias towards the non-chill filtered…

Mmmm! Blackberries and apples in a crunchy crumble – what a seasonal delight and, as for the picking, the dogs have helped (themselves) too! Early autumn bliss! Garden apples bowing the tree branches down, yet brambles are fruiting as well as still flowering. Pollen for those very important insect pollinators and fruit for us and our wildlife. Rowan berries are disappearing fast from our big rowan tree. Any chance left for some jelly, please, blackbirds? We should be alright for the sloes though! But with the apples come the wasps too – busily harvesting the soft apple flesh but occasionally getting “paralytic” and reacting wrongly when sat on, when an apple is being eaten, or walked on. Painful that it is, very occasionally seriously so, it has been found that wasp sting “venom” contains proteins called peptides that attack the lipids in cancer cell walls but ignore those lipids in healthy tissue cells. A study at Leeds University is working on this and the bigger implications that it brings in cancer therapy. Apple skin has also become a topic of discussion lately too, thanks to the work at Iowa University. The organic molecule called Ursolic Acid is now thought to be able, over a long enough period of time, to reverse muscle wastage so typical of human older age, as well as, I understand, acting as a form of anti-oxidant and as a help in cases of medical obesity management. Now, does that make apple cider more of a healthier option than before?! As I write, little Paella is in quarantine until November – a 4 week old male tabby kitten that was landed innocently in Portsmouth and was found by UK Border Agency staff in a container on the back of a Spanish lorry. He may have been born in transit or left by his mother. He has conjunctivitis but is getting better. One piece of good news in this very difficult time of refugee movement. I had a new pair of wellie boots delivered the other day – the smell…well, it took me far back to the days when we needed to don full protective kit at the Heathrow Quarantine facility to which the practice I was then working with was contracted to attend on any urgent or routine basis. The exact same uniquely smelling rubber boots. A long time ago but an immediate connection! I also was involved in the final stage of exporting of cats and dogs at the terminal itself – so I have a reasonable practical approach to the legal travelling requirements as well as the crates required for flying. The then practice included principally in its contract British Airways - and also Queensland and Northern Territories Aerial Services Limited - clients and their pets. Nowadays, issuing the new-style passports and getting all the veterinary requirements for pets (paperwork, vaccinations, blood tests, parasite controls and pre-flight health checks) done in an orderly manner and properly certified is an even bigger responsibility on both sides. So, with our Queen exempt from any passport requirement, this little kitten may one day get a UK Pets passport of his own! There is much veterinary activity going on to try to tighten up the relaxed, perhaps over-relaxed to the point of criminal abuse, regulations. We have congresses online and in “hard copy” dealing with all this, which will only be a very good and timely thing. Thinking of the current law, don’t forget that the last voluntary date for microchipping your dog remains the 5th April next year. I can only encourage those of you with dogs without a microchip to get it done as soon as possible and don’t delay giving your pet the security of re-homing should it stray and get lost or stolen.

Burn Fat Fast We all know that good health involves a lot more than simply having a strong physique, but having lean muscle is the key to healthy aging. As we age, we progressively lose skeletal muscle mass and strength, which may lead to the loss of functional capacity and an increased risk of developing chronic diseases. Reducing body fat and keeping muscle tone is important not only as we age but to maintain a healthy weight too. Combining a low-GL diet and a fat burning exercise workout you can lose fat fast, without going hungry or compromising your health. A low glycaemic load (GL) diet keeps blood sugars stable and causes more weight loss without necessarily reducing calories. (Glycaemic load is a measure that takes into account the amount of carbohydrate in a portion of food together with how quickly it raises blood glucose levels). For one serving of a food, a GL greater than 20 is considered high, a GL of 11-19 is considered medium, and a GL of 10 or less is considered low. Why not try a low Daily GL diet (45 GLs to lose weight, 60 GLs to maintain). There are many GL food lists available online! You could try also alternating ‘fast’ days on lower GL/calories – a total of 35 GLs/800 kcals with other days on approximately 50 GLs. This works well when weight loss starts to plateau. Remember to drink plenty of water when considering any diet. When it comes to exercise, alternating resistance and endurance exercises can give great results for most of us. To reap the best benefits of exercise, it is advisable for the average individual to combine a mixture of aerobic and resistance exercise and maintain suppleness and flexibility through stretching. Aerobic exercise makes your heart beat faster, such as fast walking , running, dance or cycling, it strengths the heart and burns calories. Why not try 20 minutes a day? Turn yourself into a FAT BURNER by interval training, resistance or strength training. Resistance exercise, which involves using weights or exercise bands, builds and maintains muscle which you will otherwise lose as you get older. The more muscle mass you have the more fat you will burn – even at rest. Resistance can also be provided by working against your own body weight! Interval training Interval training involves short bursts of high intensity exercise. Jog or walk briskly on a treadmill, then sprint for 30 seconds, slow down for one or two minutes and repeat. You can do this several times. This shortens the time needed for exercise to get the same results. General toning exercises These are specific exercises designed to tighten the muscles and to improve muscle mass and strength usually done with lighter weights and higher repetitions. The correct toning exercises also help keep your back strong. Toning exercises need to be balanced with aerobic exercises and stretching. Remember a healthy diet is important to provide the nutritional building blocks to enable muscle growth and keep body fat to an appropriate level.

From humble beginnings…… An Ironman! Question: is there a running group in Faringdon, if not does anyone want to start one? Answer: No, but yes!!! And so, one man’s desire for some triathlon training buddies gave birth to the Far Runners! Sadly, the man in question, Steve Diboll, has headed to pastures new, but the Far Runners like to keep in touch with old friends, so this month we bring you news of Steve's latest (spectacular) achievement, best described in his own words. Triathlon for me started with the Carterton Sprint Triathlon 2013. One year later, I signed up for Ironman Wales 2015 with its reputation as the hilliest course! A year of juggling life and three training disciplines required a partner willing to become a motivational coach, nutritional consultant and patience-of-a-saint type. A practiced nutritional plan and listening to my body were key. Numerous events followed: triathlons, 100-mile cycling events, a trail marathon and the Great North Swim. When struggling to stick to strict training plans, I simply exercised regularly and consistently avoiding boring repetition of routes or terrain. Tenby was incredible, with thousands of spectators. Cheering superhero-outfitted children, street parties and farmers on sofas in JCB buckets. The noise was deafening particularly on the marathon, which looped through cobbled streets. My lowest point came mid-marathon, bent double over a barrier with dizziness and sickness. Friends, family and strangers gave me the mental strength to keep moving forward. Tears were spilled by all, but thankfully most were tears of joy and disbelief. That day that will be etched into my memory forever, bringing new levels of mental determination to all aspects of my life. Thanks to Steve for sharing his inspirational story. You don't have to have an Ironman in your sights to be welcome at Far Runners, anyone who enjoys running at any level or wants to give it a try can join our friendly, supportive group. Caroline Somerset (1936 – 2014) & Ann Allen-Stevens – A Retrospective At Portwell Angel, Faringdon – October 2015 This retrospective exhibition is about two artists who met for the first time at an upholstery class in the Seventies. Discovering they had much in common, from a love of art to raising and caring for children, ponies and various animals, they eventually found the time to start painting as their children began to leave home. Ann and Caroline’s work make generous use of colour and show a freedom of style and form that creates not only eye-catching original works, but which also challenge the mind.

Acupuncture is recognised to be effective for a number of conditions (Search WHO Acupuncture). NICE provides guidelines for the NHS on best practice. The guidelines recommend that the NHS considers acupuncture for lower back pain and migraines. Acupuncture is more widely used within the NHS for musculoskeletal pain, the side effects of cancer treatment and for pregnancy. There are NHS clinics specialising in these circumstances emerging within the UK. The body of evidence-based research continues to mount, but there is still a lack of credible research to assess acupuncture’s impact on a series of common conditions. If you’ve ever been for treatment, then you’ll know that acupuncture often fixes your main motive for enquiry and as a side effect improves your sleep, reduces stress and regulates your period. For the next three months, I am delighted to be part of two pieces of research that will continue to challenge acupuncture’s effectiveness. The first, as part of the British Acupuncture Council: Anxiety UK study. I’m looking forward to working alongside industry leaders to assess acupuncture’s impact with people who experience anxiety. For the second I’m engaging with an acupuncture research body to observe the results of acupuncture on lower back pain. Conclusions to follow in future posts. It’s the combination of the nights drawing in, roaring fires and the general autumnal presence in the air that has led me to the rediscovery of a forgotten favourite of mine – the fruity Zinfandel. Commonly spotted in supermarkets in rosé form, this black grape variety has been claimed by the USA and particularly by California as their flagship variety. But….further investigation has revealed that this grape variety was known as Tribidrag in Croatia, where it was first noted in writings as early as the fifteenth century. Zinfandel is also known in Puglia, Southern Italy, as Primitivo. Zinfandel found its way to California during the Gold Rush, sometime between 1852 and 1857 and soon became widely planted as it thrived so well in California’s climate and soil. It is productive so is better suited to soils of lower fertility. It has natural high sugar content, lending itself to semi-sweet rosés. In dry still red wines, it can result in red wines of higher alcohol levels and gives aromas and flavours of red berry fruits such as raspberries (more so in cooler climates) and black fruits such as blackberries and plums with star anise and white pepper. Here’s a couple of Zinfandels to try: Calico Mane Zinfandel 2012 California Den Boer Wines £9.49 Intense and enticing, with pronounced aromas of chocolate, plums, damsons and blackberries. On the palate, the primary fruit delivers the depth of flavour detected on the nose, with well integrated supple tannins. The length on the palate is long. A great match with sausages, steak, red-sauced pastas, and BBQ’d ribs.
