Business Update The seventh Faringdon Chamber of Commerce annual ball was a record breaker in every sense of the word. It was the biggest event not only in terms of numbers and amount raised, but also the number of charities supported. The venue was full to capacity with sixteen tables and 135 people who were entertained by a choir and a string trio before being called into dinner. Chamber President, Paul Brame then opened the evening with an introduction from the event’s main beneficiary, Churches Together in Faringdon. After a three course meal, the evening’s entertainment started in earnest with a short set from renowned Oxfordshire swing and jazz band, The CNS Allstars. After a brief interlude for a raffle and the auctioning of a unique piece of cinematic history from the set of Les Miserables, which went to Nick Moore of Nick Moore Cars, the Allstars were back for a longer session which filled the floor until after midnight. This year’s event raised a total just over £3,300, with half of that going towards projects run by Churches Together in Faringdon, including the revamping of their website and other capital projects. The other half was shared between charities nominated by individual tables; each of theses will receive just over £100 each and included four local school PTAs, local charities Mission Motorsport, Faringdon Free Foods Project, the Faringdon Family Centre and the Oxfordshire Women’s Refuge.
There was also support for the new local running club, the Far Runners. Other beneficiaries will include Help for Heroes (last year’s main charity), the Alzheimer Society and the Philippines Typhoon Appeal. Several local businesses supported and sponsored the event by contributing financially, donating raffle prizes and inviting guests – some did all three. Notable contributions were received from Tesco Stores, Garden Games (who also provided Giant Jenga and Connect Four for those who didn’t want to dance the night away), Wicklesham Commercial Properties and Critchleys. Chamber members Den Boer Wines selected wines for the evening and Davenports Media printed posters, tickets and programmes. The date has been set for next year’s event already Saturday 22nd November 2014.

Life is a Cabernet! I don’t think that I would be alone in my reference to the noble grape variety, Cabernet Sauvignon as ‘King Cab’. Powerful and weighty, this grape variety produces red wines that are richly concentrated in fruit intensity, backed up with plenty of tannin. This can be traced back to the grape berry itself, being very small and of a thick skin, which contains the berry’s flavour (phenols) and tannin profile. The combination of this with the length of time the skins remain in contact with the juice in the wine making process create a very dark, opaque ruby wine with enough acidity and tannin to support lengthy cellaring. Additional flavour variables include the climate, soil and aspect of the region/vineyard (terroir), where for example, in cooler climates it shows aromas and flavours of black currants and bell peppers, where as in warmer climates, black cherries and black olives are present. Originating in the Gironde, south-west France, cabernet sauvignon is one of the widest travelled grape varieties. It can grow in a range of climates and can be produced as a single varietal wine or works well in a blend. Interestingly, the lineage of cabernet sauvignon has recently (1996) been discovered through DNA profiling to be that of cabernet franc (red grape) and sauvignon blanc (white grape). Not surprisingly, cabernet sauvignon features in Bordeaux as part of this region’s famous blend along with merlot, cabernet franc, petit verdot and malbec. At times, Bordeaux’s unreliable weather fails to produce fully ripe cabernet sauvignon. Borne out of financial necessity, blending with other grape varieties provides an opportunity to maintain production even when one grape variety may not be at its optimum ripeness. Cabernet sauvignon brings to the blend structure, or backbone, providing acidity, tannin and with it, potential cellaring or ageing. In leaner years, when ripeness is not fully achieved, adding a larger parcel of merlot and/or cabernet franc increases fruitiness and floral aromas and flavours. Cabernet sauvignon has a natural attraction to oak, which can be imparted during fermentation (in oak barrels) or during the ageing process. This adds complexity, and depending on what type of oak is used, imparts aromas and flavours of vanilla, coconut or spice, which harmoniously compliments the flavours of black currant and tobacco leaves. When matching with food, the strength of cabernet sauvignon should not be overlooked. It will easily dominate lighter dishes such as Neapolitan pasta, but pair beautifully with game, smoked or char-grilled meats. It behaves beautifully with lamb, as the fat composition balances with the tannin structure. If you are not participating in the nonsense of abstinence this January, then I encourage you to make your New Year’s resolution of trying King Cab as a varietal or a blend. All hail King Cab! Since the official opening on the 26th July 2013 The Pump House Project has gone from strength to strength. We now have upwards of 300 children and young adults each week taking part in a wide variety of clubs and activities, ranging from Beavers, Cubs, Scouts and Explorers to Dance classes, Parkour, Nerf parties, Unplugged Acoustic Music and Mission Fitness. We have now opened our Bouldering Wall, constructed by Mock Rock with a fantastic mural of famous Faringdon buildings (with a few comic twists) painted by the artist Simon O’Rourke. The wall has been designed to offer a challenge to all age groups. We are looking forward to seeing everyone come down and try it out. The Pump House Media team have been working with the Football Association to create promotional videos for a football coaching programme aimed at homeless adults and Soccercise aimed at young women. 2014 brings many new events: • Echodeco craft sessions for grownups on Wednesday mornings starting on 8th Jan. • Messy Monday craft for toddlers and pre-schoolers. • The long awaited return of slacklining, indoors over the winter. • Picnic Concert on 2nd Feb • Tea Dance on Sunday 23rd Feb and more throughout the year • Sondheim Sunday in May The Pump House Project is now also offering a venue for birthday parties with a choice of just hiring the building or booking a complete birthday package including supervised activities and party food. Firstly may I wish you, dear Reader, and your Family and all the pets, a very happy, healthy and prosperous New Year. Although we seem to have had at least 12 month’s notice, January always seems to creep round too quickly and last’s too long! As I write, the weather is more settled and much less windy; some of you may have relatives or friends badly affected by the recent stormy weather and tidal surges. Some Families have completely lost their homes. What are their feelings about the New Year, let alone Christmas just before? Whatever the weather, we have the vehicles to get the work done. This must apply to the carers of people who have personal care and mobility issues, people who rely on regular care whatever the weather. 2014 is a significant anniversary year for families who have had earlier generations of loved ones serving in the First World War. A new book has been recently published by Max Hastings called “Catastrophe – Europe goes to War 1914” in which he argues that the war was vital to the freedom of Europe as a whole. We will have time to reflect better on the men and horses who died for this achievement later in the Year. A number of you will be reflecting the loss of a loved member of your family during the year that’s passed and possibly still coming to terms with this loss. Here, I include the loss of a pet, which is equally devastating no matter for what reason the pet died. Sometimes a pet is lost very suddenly. There is a booklet available from our veterinary practice which can help you as pet owners understand your emotions. The booklet was created because Alex’s parents felt so helpless to do anything, not all Alex’s questions could be answered by them, especially why his pet had been taken away and why they couldn’t do anything to make the situation better again. Everyone started to feel a little bit better when Alex started a “book of memories” and began talking through it, with the feelings, memories and emotions it brought back. It is a very thoughtful booklet. Other help is available through The Blue Cross and SCAS. As a practice, we always try to recognise this need and have counselling training, to help our clients as well as the Staff.
So, what will the New Year bring? What do YOU hope to see or help bring about? Another comet?! More amazing results with tests on the DNA found in the femur of a hominid 400, 000 years ago? Better education for those who genuinely seek help and advice in keeping their exotic pets as well as they possibly can, to fulfil all the needs of that pet in terms of heating, humidity and appropriate feeding? With more demand comes more wild capture and then more issues with transport and trade. The almost astronomical, record donations to Children in Need to get to their intended good causes with due speed, will be matched by an equal awareness of the needs of the pets in our homes and all the animals and plants that are such an important part of the countryside around us. Mission Rabies will still be fulfilling its objectives throughout 2014 helped by our donations. Mr Nelson Mandela’s phrase that “education is the engine of personal development” must continue to have an effect on the lives not only in Africa but all around the World. ..and that we all find genuine, quality time to spend with our families and the pets who so enrich our lives at home… Good health and happiness to you all throughout 2014.

Going back in time is a treat in itself, when entering the Bobbin Bistro the trappings of a by gone haberdashery greet you, counters, shelves, storage draws, the great old stairway and wood panelled walls all highly polished and well used over time, the balcony and high ceiling all a thing of the past. The elegant figure of Delores stood to one side, her voice filled the room for everyone's pleasure. Greeted with a tankard of hot mulled wine was just the thing, being a cold winter evening. The evening started with our lovely host Mel Lane, perfectly dressed in wonderful burlesque attire, introduced the dancers and the undoubtedly talented Delores, answering peoples questions and making everyone feel most welcome. Dinner was served to beautifully decorated tables... the staff were nimbly back and forth to the kitchen with plates of hot main courses and steaming vegetables. A choice of tender sliced breast of Chicken with tarragon cream sauce. Pork apple & cider casserole or Field mushroom risotto, all piping hot. A choice of a bottle of wine per couple was offered, we has a superb South African Merlot, I am slightly bias being of African origins!... The food was succulent, tasty and well presented, most enjoyable. With that the show began, scantily clothed Lou Leigh entered the dance floor with feathers and fans to the beat of the music moving most gracefully, with her exotic gestures, high kicks and fleeting glances. The more the audience approved the more revealing she became, bidding farewell in a flurry of feathers. Desserts were then served... the choice of Apple tart, Chocolate fondant, Christmas pudding or South West (almost) Cheese board. Choosing the Apple tart it had crumbly crunchy pastry filled with juicy apple and spoons of freshly whipped cream. The other was Christmas pudding as tasty as it ought to be, with brandy custard, always an occasion in itself. With that the show continued! Tabitha Taboo, wearing a white sequined costume holding large white ostrich feathers, entered the dance floor... She danced effortlessly tantalizing the audience with her well curved figure as everyone cheered.. she was gone in a flash sadly, as the excitement grew. Delores then took to the stage once more entertaining everyone, a very talented well trained voice singing for her own enjoyment as well as others. With that the dance floor was full, everybody had a fun filled entertaining evening, which is recommend for a totally different good night out!....

YVONNE ROBINSON Yvonne completed a Fine Art with Drawing degree with the University of Bath in 2009. Her dissertation and final show was based on the theme ‘Lost to Sight’ still evident in some of her current work which suggests absence, melancholy and regret. These topics provide focus and a relationship to the pieces, portraying memories and reflections that are common to us all – home, family and the countryside around us. Yvonne joined the Faringdon Art Society in 2011 and her work can be seen at The Portwell Angel, Faringdon throughout January. Pasta!……. Winter can be a little bleak for some. I rather like it. I love the cold weather with the frost laying like a little smattering of icing sugar over the land. I love the dark afternoons so I can light the fire and feel snugly. And I also love the robust nature of our seasonal foods. Gorgeous brassicas with which you can do so much, although I think they are often just chopped and steamed or boiled. But there is so much more you can do. Kale, broccoli and cabbages are beautiful shredded and added in to a risotto. Crisp green cabbage is amazing roasted. Cut in to wedges then sprayed with a little oil, season and roast for around 25 minutes until it is just tinged with a little burn on the edges. Or add in to a chunky soup 5 minutes before the end of cooking. These wonderful green vegetables marry beautifully with lemon. And actually oriental flavours like sesame and soy sauce, too. In some Chinese restaurants, a good green cabbage is used to make what is billed on the menu as seaweed. It is a great substitute. But here, today, a beautifully simple pasta dish is on the cards. A good store cupboard supper if you have any unexpected guests perhaps? To serve 4 = Bring a large pan of water to the boil. Whilst that is coming up to heat, crush 2 cloves garlic and chop a red chilli. Shred about 100g cabbage and cut up 100g tender stem broccoli in to chunks. Into the boiling water add 400g spaghetti and cook in a rolling boil. For the last 3 minutes add the greens. Once the pasta has cooked, drain then add to the pan 50ml good olive oil along with the garlic and chilli. Cook gently for around 2 minutes then add the pasta back in to the pan. Turn in the oil then squeeze in the juice of a lemon and add the zest too. Season really well with sea salt and black pepper. Serve with lots of parmesan cheese. Add a couple of crushed anchovy fillets of you fancy a little kick! Happy new year everyone!

This month we will resume our tour of the distilleries of Islay, and the next port of call is Ardbeg – just up the road from Laphroaig and Lagavulin. As with the other two distilleries on the road east from Port Ellen, Ardbeg is scenically situated by the sea and with it’s tall white buildings and traditional pagodas makes an imposing sight. Ardbeg’s origins date back to the 18th century, and it was in private hands for many years but was acquired by Hiram Walker in the 1970s and had several periods of closures during the 1980s and 90s. It’s future became more assured when it was bought by Glenmorangie plc in 1997 and the premium branding they gave it was further enhanced when Glenmorangie plc was bought by Louis Vuitton Moet Hennessey (Ken and I were in the still room at Ardbeg when the news came through) and now their quirky marketing, that has involved alligators, tractors and Shortie the distillery dog, combined with a quality whisky has made Ardbeg somewhat of an icon. The distillery only has one pair of stills and its output is mainly very heavily peated (the exception being the lightly peated Blasda) but the presence of a purifier on the spirit still is said to contribute a fruitiness to the smoky, salty, medicinal, spicy nature of the whisky that gives Ardbeg it’s own unique character. The core range includes the always popular 10 year old with it’s complex cornucopia of flavours – lemon, lime, toffee, liquorice, coffee, salt, bonfire smoke, they’re all in there but so well balanced as to make a harmonious whole that is a real Islay experience. Also in the core range are two cask strength whiskies. The Corryvrekan is matured in a mix of ex-bourbon American oak and French new oak casks and its ‘swirling aromas and deep torrents of peaty, peppery taste’ are said to reflect the famous whirlpool that it’s named after. It has meaty, spicy, fruity, tarry, chilli notes, with star anise thrown in for good measure , and is a truly amazing whisky for those who love big flavours. The Uiegedail has more sherry cask influence which results in a smoother, more Christmas cake type dram. The smoke and spice are still evident but along with it there is raisins, treacle, mocha, and dark brown sugar. Another exceedingly well balanced whisky. Ardbeg regularly produce some extremely interesting special releases but, be warned, they are so sought after that they often sell out within a matter of hours. | The Advertiser | page 21 | Faringdon Business Breakfast Club There was plenty of festive cheer on show at the last meeting of the Faringdon Business Breakfast Club on 2nd December. A special 12 days of Christmas ditty from our chairperson and a special offer from the club’s treasurer, a tax consultant by day, for any people filing their return on Christmas Day. We heard a story of a night watchman who was afraid of the dark, the latest virus to affect the XP operating system. Looking to the new year, there was the cheery news that house prices are on the move again, in an upwards direction. After everyone had introduced themselves, it was time for a bit of speed-networking, as members were allowed three short sessions with anyone else at the meeting. This allowed people a more in-depth discussion of business needs, including or how referrals might flow, or working together, could lead to strategic partnerships. There was an update on the Coderdojo project which is hoping to go live from the end of January, initially for children from years 5, 6 and 7. At Dojos, young people between 5 and 17 learn how to code, develop website's, apps, programs, games and more. Dojos are set up, run by and taught at by volunteers. The Faringdon group are getting some hardware delivered in the next few weeks and when they get those, they will be on the look out for screens, SD cards, leads etc. The whole concept of the CoderDojo is that it is free to all to attend and once launched, they will be looking for projects from the local community – website's / apps / games that groups of children in the CoderDojo could create (eventually). It will be back to the usual format where after breakfast we will have a speaker. 2014 will kick off with a presentation from Malcolm Gee, one of Faringdon’s very own First Responders who will be giving us all a few first aid tips. We understand that this will be an interactive session! In addition, we have been promised some exciting news from our hosts, the Sudbury House Hotel, who will be sharing some further details of their plans for the hotel. FBBC, is an informal networking group which has been running since 2004. It meets on the first working Monday of each month at 7.30am at the Sudbury House Hotel. There is no joining fee and no restriction on who may attend, the only cost is your breakfast – just £10.
