Todos admiramos el increíble paisaje que genera la costa majorera: ese diálogo constante entre el océano Atlántico y la roca volcánica no deja indife rente a nadie. Esto dio lugar a salinas naturales que se fueron convirtiendo en explotaciones más com plejas. Las más importantes de Fuerteventura fue ron las Salinas del Carmen, las únicas que siguen en funcionamiento de toda la isla. Su Museo, renovado

recientemente, nos permite hacer un viaje a 1910, su época dorada. Don Manuel Velázquez Cabrera, dueño de las salinas por entonces, nos da la bienvenida a su casa. A través de una visita por su despacho, su estudio e incluso su dormitorio, nos presenta la historia de las salinas ca narias, sus peculiares métodos de obtención de la sal y cómo era la vida de un salinero. Para terminar, una

espectacular animación nos envuelve en el mundo de la sal. En el exterior visitamos las salinas, donde veremos a los salineros actuales en su faena diaria, extrayendo la sal según el método tradicional. El protagonista de nues tro recorrido será, sin duda, el saltadero: las olas del mar rompen contra el muro, permitiendo a las salinas obtener la espuma de sal y recorrer cocederos y tajos

Lo mejor del océano se concentra en esos pequeños gra nos, que dan lugar a una sal con un alto contenido en oligoelementos, de una pureza excepcional. El Museo ofrece la posibilidad de convertirnos en saline ros por un día, experimentando la labor tradicional de ex tracción de sal, típica de las Islas Canarias, en los tajos de la explotación, de mano de los propios trabajadores y con sus mismas herramientas. La renovación del museo nos permite vivir una experien cia única, que nos conecta con la cultura majorera de una manera inolvidable. Nuevas tecnologías, manipula tivos y actividades cuyo principal objetivo es mostrarnos la riqueza de la historia y la cultura majoreras, poniendo en valor el patrimonio de la isla. Turistas y residentes están invitados a este plan que pone de manifiesto que Fuerteventura tiene mucho que ofrecer además de sus playas paradisíacas.

All of us admire the incredible countryside generating Fuerte ventura’s coastline: that constant dialogue between the Atlantic Ocean and the volcanic rock doesn’t leave anyone untouched. That gave place to natural salt works that became more complex exploitations. The most important in Fuerteventura were Las Salinas del Carmen, the only ones that keep working in the whole island. Its museum, recently renovated, allows us to make a trip back to 1910, its golden age. Don Manuel Velázquez Cabrera, the salt works owner then, welcomes us to his house. Through a visit crossing his office, his studio and even his bedroom he presents us the history of the Canary Island Salt works, its particular methods to obtain the salt and what the life of the workers in the salt works was like. To end up, a spectacular animation involves us in the world of the salt. In the outside area we can visit the salt works, where we’ll see the present workers carrying out their everyday duties, extracting salt through the traditional method. The protagonist of our itinerary will be, no doubt, the breakwater: the waves in the sea break against the wall, allowing the salt works to obtain the salt foam and go through the kilnsv and slashers just pushed by the very waves. The best of the ocean is found in those little grains, which produce a salt with a high level of exceptionally pure trace elements. The museum offers the possibility to become «saltpan workers for a day», experiencing the traditional labour of extracting salt, typical in the Canary Islands, in the salt mining pits, monitored by the very workers and with their own tools. The renovation of the museum allows us to live a unique experience, which connects us with the island culture in an unforgettable way. Our technologies, manipulatives and activities whose main aim is to show the richness of history and the culture of the island, thus enhancing the value of the island heritage. Tourists and residents are invited to this programme, which shows that Fuerteventura has a lot to offer, apart from its paradise beaches.

EL CAMPEONATO DE SURF MÁS CONCURRIDO DEL AÑO EN CANARIAS

En su tercera edición, el campeonato autonómico e insular Promesas del Surf 2018 ha batido un récord que confirma la gran pasión que sentimos por el surf en Fuerteventura y que somos la isla con mejores condiciones para practicarlo.

Y es que este Campeonato, celebrado el pasado 21 de Julio en Playa Blanca, ha sido el campeonato con más inscritos de Canarias en lo que va de año y el que ha contado con más asistentes, habiendo superado con creces las previsiones de público.

Inscritos de todas las islas acudieron a Fuerteventura a la llamada del surf para demostrar sus habilidades sobre las olas en una jornada en la que las condiciones fueron óptimas, con un oleaje mediano y de potencia, que permitió a los participantes ofrecernos un bonito y reñido espectáculo. Surfistas como la joven promesa Andrea Buch, el conocidísimo Kalani Da Silva o el longboarder Alberto de Mario (speaker del evento) —nombres muy habituales en el panorama del surf en Fuerteventura—, consiguieron los primeros puestos en sus respectivas categoría, por su destreza y fluir en el agua. In its third edition, the island autonomic championship, «Promesas del Surf 2018», has beaten a record that proves the great passion we feel for surf here in Fuerteventura and that we are the island that enjoys the best conditions to practise it. The thing is that this championship, which took place last July 21st in Playa Blanca, has been that with the highest number of enrolled participants in the Canary Islands so far this year, apart from having far exceeded the audience’s expectations of attendance. Participants from all over the island responded to the call of surf to show all their skills on the waves on a day where the conditions were the best ones, with medium and powerful waves, which allowed the participants to offer a beautiful competitive show. Surfers, like the young promise Andrea Buch, the popular

Kalani Da Silva or the longboarder Alberto de Mario (the event speaker) – very habitual names in the surf panorama in Fuerteventura- , managed to get the first positions in their respective categories, because of their skills and his natural flow in the water. From Fuerte Tribu Club, the event promoter, and after the success of this edition, they confirm they are already working in the next one, «Promesas del Surf 2019», with new innovative ideas, initiatives that motivate the youngest to keep on practising day after day. CAPÍTULO 4:

De vuelta al mar, en este capítulo hablaremos sobre un mamífero marino que, si bien es común en todos los mares del planeta, en las islas Canarias es particular. Se trata del calderón gris (Grampus griseus), una de las especies de cetáceos residentes en nuestras aguas.

El termino residente acuña, en el caso de los cetáceos, a aquellas especies cuya población tiene lugar en nuestra área de forma estable en el tiempo, confirmación que viene respaldada por años de estudios e investigaciones en el archipiélago. Algunas de estas especies son el calderón tropical de aleta corta (Globicephala macrorhynchus), el cachalote (Physeter macrocephalus), el delfín mular (Tursiops truncatus) o el calderón gris, entre otras. En este caso, nos centraremos en el calderón gris, también conocido como delfín gris o delfín Risso. Es un delfín de gran tamaño, de entre 3,5 y 4 metros en los mayores individuos registrados. Llama especialmente la atención la forma de la cabeza redondeada (sin hocico) unido al desarrollo del melón (órgano de ecolocalización). Sin duda, lo más característico de este animal es la presencia de marcas por toda la superficie de la piel. Piel, que es muy especial, ya que cambia de color, desde los individuos juveniles y crías, color marrón a gris, hasta ser casi totalmente blancos en los individuos adultos. Éstas marcas en muchas ocasiones son cicatrices que tienen un origen muy diverso, generalmente causadas .12

por batallas entre individuos de la misma especie (territorialidad), o por otras especies de delfines, marcas de alimentación, depredadores, parásitos, de origen genético o por enfermedades de la piel. Las marcas de alimentación aparecen durante la búsqueda y captura de su alimento, siendo su preferido los moluscos cefalópodos (generalmente calamares y pulpos que atrapan en profundidad). Como muchos otros cetáceos odontocetos (grupo al que pertenecen aquellos cetáceos con dientes), tienen estrategias de vida muy variadas en función de la disponibilidad del alimento y, por lo general, se trata de un grupo que engloba a los grandes buceadores. El estudio del calderón gris comenzó en 2016 con el apoyo del Cabildo de Fuerteventura y la Reserva de la Biosfera de Fuerteventura. Además, cuenta con el apoyo del Ayuntamiento de Pájara y la Viceconsejería de Medio Ambiente del Gobierno de Canarias. Back to the sea, in this chapter we’ll talk about a marine mammal that, though being common in all the seas over the planet, is very particular in the Canary Islands. We are talking about the Risso’s dolphin (Grampus griseus), one of the cetacean species inhabiting our waters.

«Inhabiting» means, in the case of cetaceans, that their population has been regularly settled down for a long time, and this has been confirmed by different studies and researches in the archipelago for many years. Some of these species are the short-finned pilot whale (Globicephala macrorhynchus), the sperm whale (Physeter macrocephalus), the bottlenose dolphin (Tursiops truncatus) or the Risso’s dolphin among others. In this case, we’ll focus on the risso’s dolphin or, as it’s also known, the Grampus griseus. It’s a quite big dolphin, between 3,5 and 4 metres long among the biggest registered specimens. Its round head (with no snout) together with the development of the melon (echolocation organ) are particularly striking. No doubt, the most characteristic feature of this animal is the presence of marks all over the skin. This skin is very special, as it changes colour, from brown and grey when they are young to almost completely white when they become adults. These marks are, in many occasions, scars with a very diverse

origin, generally caused by fights between specimens of the same species (territoriality), or between other dolphin species. They can also be feeding marks or marks caused by predators, parasites, genes, or skin disorders. Feeding marks appear while foraging, cephalopod molluscs being their favourite (mainly squids and octopus they hunt in the depths). As many other odontocete cetaceans (group to which these cetaceans with teeth belong), they have very varied life strategies depending on food availability and, generally, it’s all about a group that involves the great divers. The research about the Risso’s dolphin started in 2016 with the support by Fuerteventura council and the biosphere reserve of Fuerteventura. Moreover, it counts on the support by the Town hall of Pájara and the Environment Vice-Ministry of the Canary Islands Government. TARTAR DE ATÚN con Crema de Aguacate y Mayonesa de Wasabi RECETA DE ISRAEL FRANCO ZUBIAGA, Chef de La Bodeguita de Corralejo

Tuna Tartar with Avocado Cream and Wasabi Maionesse RECIPE BY ISRAEL FRANCO ZUBIAGA, kitchen manager in La Bodeguita de Corralejo INGREDIENTES (para 4 personas) • 300g. atún fresco • 2 chalotas (bronoise) • 40 ml de soja • 15 ml de aceite de sésamo • Ralladura de 1 lima • Alga de Wakame • Semillas de sésamo • 100 g de crema de aguacate* • 40 g de mayonesa de wasabi* • Ensalada de wakame *PARA LA CREMA DE AGUACATE • 1 Aguacate maduro • 1 lima • Aceite de oliva virgen extra • Sal y pimienta negra. *PARA LA MAYONESA DE WASABI: • 20 g. mayonesa: — 1 huevo — Aceite de oliva suave — Vinagre — Sal • Wasabi a gusto

*ELABORACIÓN DE LA CREMA DE AGUACATE: Abrimos el aguacate a la mitad, retiramos la pepita, con ayuda de una cuchara sacamos la pulpa y la introducimos en un vaso mezclador donde añadimos el jugo de una lima; trituramos la mezcla con la turmix, emulsionamos (para conseguir una mezcla homegénea) con aceite de oliva virgen extra, ponemos a punto de sal y pimienta negra y reservamos en la nevera. *PREPARACIÓN DE LA MAYONESA DE WASABI: Cascamos el huevo en un vaso mezclador, agregamos un chorrito de vinagre, sal y una buena cantidad de aceite. Introducimos el brazo de la túrmix y trituramos sin levantar hasta que la mezcla emulsione (aquiera la textura deseada), una vez que empiece subimos el brazo de la túrmix de arriba a abajo suavemente. Cuando la mezcla esté preparada mezclamos con el wasabi a gusto con una varilla y reservamos. PREPARACIÓN DEL TARTA DE ATÚN: El atún tiene que estar muy fresco. Cortamos el atún en dados regulares de 1x1cm, colocamos en un bowl y añadimos la chalota picada muy fina, la ralladura de la lima y un poco de sal para abrir el poro del pescado; por último, añadimos la soja y el aceite de sésamo, movemos con suavidad de abajo a arriba con ayuda de una cuchara y probamos; rectificamos si fuere necesario y reservamos en la nevera el menor tiempo posible hasta el emplatado. EMPLATADO: Con ayuda de un molde colocamos en la base del plato la crema de aguacate, después ponemos el tartar de atún y, por último, añadimos unos puntos de mayonesa de wasabi. A mi me gustar decorar el plato con ensalada de wacame. ¡Buen provecho! Notas: La mayonesa se puede comprar ya elaborada si lo prefieres. El aguacate debe ser grande y maduro.

INGREDIENTS (4 people): • 300g. Fresh tuna • 2 shallots (bronoise) • 40 ml soy drink • 15 ml sesame oil • 1 lime grating • Undaria • Sesame seeds • 100 g avocado cream* • 40 g wasabi maionesse* • Wakame salad

*AVOCADO CREAM • 1 ripe avocado • 1 lime • Extra virgin olive oil • Salt and black pepper *WASABI MAIONESE: • 20 g. maionese: — 1 egg — Soft olive oil — Vinigar — Salt • Wasabi

*AVOCADO CREAM ELABORATION: We open the avocado in two halves, take the seed out and with the help of a spoon we remove the flesh and we put it in a mixing glass where we add the juice of one lime. We blend it with the mixer and emulsify to get a homogeneous mix with extra virgin olive oil, we add some salt and pepper and we keep in the fridge. *WASABI MAIONESSE PREPARATION: We break two eggs in a mixing glass and we add a splash of Vinigar, salt and plenty of oil. We introduce the mixer and blend it without lifting it up until the blend emulsifies itself (that is, until it gets the desired texture). Once it starts we lift up the blender softly, bottom up. When the blender is ready we mix it with the wasabi to taste with a hand mixer and we set it aside. TUNA TARTAR PREPARATION: The tuna must be really fresh. We cut it into regular dice (1 x 1 cm), we put it into a bowl and add thinly chopped onion, the lime grating and a pinch of salt to open the fish pores; finally, we add the soy drink and the sesame oil, we mix softly, bottom up, with the help of a spoon and we taste it; we check the salt if necessary and we set it aside in the fridge, not for too long, until we need to plate it up. PLATING UP: With the help of a mould we place the avocado cream at the bottom of the dish; then we add the tuna tartar and, finally, we add some wasabi maionese. Notes: You can buy the mayonnaise if you prefer. The avocado must be big and ripe.

Cada viernes, desde hace casi 2 años, la plaza pública de El Cotillo acoge el Mercadillo CotiArte, una iniciativa que nació de la mano y empeño de artesanos y artistas locales con la idea de desarrollar un espacio de creación, auténtico y colectivo.

CotiArte es el único mercado de tarde de Fuerteventura, en el que además de poder disfrutar de las distintas actividades que proponen, conciertos y actividades para todos los públicos, se puede apreciar una de las mejores puestas de sol de la isla. Y es que El Cotillo, por su belleza, por sus callejuelas marineras, y por el encanto que aún conserva de antiguo pueblo pesquero, es el escenario ideal para este evento semanal ya totalmente consolidado. El Mercadillo CotiArte es original y dinámico ya que todos los objetos expuestos son únicos y están elaborados a mano por los propios artesanos y artistas. De hecho, uno de los objetivos de la Asociación que lo organiza es potenciar la artesanía tradicional y artística, no aceptando materiales de reventa o producidos en serie. Productos únicos de cuero, macramé, orfebrería, textil, madera, reciclaje, esculturas, pinturas, retratos … Artesanos y artistas de diferentes países, residentes o de paso, comparten en este original mercado sus creaciones. Con este mercadillo la plaza pública de El Cotillo se convierte en un espacio de encuentro y convivencia cosmopolita y transgeneracional entre residentes y turistas, de todas las edades y nacionalidades. .18

Además, es un evento cultural en el que la Asociación organizativa nos trae cada viernes música en vivo, música de ambiente, performances, talleres infantiles y para adultos, bailes… Actividades gratuitas que nacen gracias a la colaboración y financiación de los propios artesanos que participan en el mercado y de los bares cercanos a la plaza. La plaza pública del El Cotillo es por todo esto accesible e inclusiva para el disfrute de todos. Venir a El Cotillo es fácil ya que está conectado con Corralejo por guagua directa hasta las 23h lo que permite al visitante después del mercadillo seguir disfrutando de la amplia oferta de ocio y gastronomía del pueblo. El mercado CotiArte cuenta con una variada programación que se publica semanalmente en su página Facebook «Asociación Cultural Cotiarte» y en pelladeocio (aplicación y web). Te invitamos a acercarte a este mercado cada viernes de 18h a 22h para disfrutar de su artesanía, de las actividades que proponen y de una tarde mágica en uno de los pueblos con más encanto de la isla, apoyando así esta iniciativa con tus compras de producto local y artesano.

CRAFT MARKET IN EL COTILLO

Every Friday, for almost two years, the public square of El Cotillo has been holding CotiARte flea market, an initiative set up by local craftsmen and artists who wanted to develop a creative, authentic and collective space. CotiArte is the only afternoon market in Fuerteventura, where apart from enjoying different activities —concerts and activities intended for all audiences— you can also appreciate the best sunsets in the island. And this is because El Cotillo, due to its beauty, its seaside alleys and the fishing village charm that it still keeps, is the ideal stage for this weekly event which is already totally consolidated. CotiArte Market is original and dynamic, as all the exhibited objects are unique and crafted by its craftsmen and artists. In fact, one of the targets of the association arranging it is to promote traditional and artistic handicraft, not accepting resale or volume produced materials. Unique leather products, macramé, goldsmith, textile, food, recycling, sculptures, paintings, portrays… Craftsmen and artists from different countries, residents or just passers-by, share their creations in this original market.

With this market, the public square in El Cotillo becomes a meeting point and a cosmopolitan and trans generational coexistence space between residents and visitors of all ages and nationalities. Moreover, it’s a cultural event where the organizing association brings us live environmental music, performances, children’s and adults ‘s workshops and balls every Friday. Free activities that are carried out thanks to the collaboration and financing of the very craftsmen taking part in this market and the bars that are next to the square. The public square of El Cotillo is accessible and inclusive for everybody’s enjoyment. Coming to El Cotillo is easy, as it’s connected to Corralejo by a direct bus until 23h, which allows the visitors to keep enjoying the wide leisure and gastronomic offer of this village after the market. CotiArte market has a varied programming which is weekly published in its Facebook: «Asociación Cultural Cotiarte» and in «pelladeocio» (web and app). El festival COTILLO LIVE MUSIC llegará el 17 de agosto a Fuerteventura en su primera edición para SORPRENDER con una puesta en escena espectacular. Una súper producción nunca vista en la isla donde el espectador vivirá una experiencia única. Ocho horas de la mejor música del momento en un enclave único, el acogedor pueblo de El Cotillo que ese día inaugura sus fiestas patronales. El recinto del festival contará con dos accesos diferenciados; el acceso general y el de la zona VIP. El general, en el que los asistentes podrán disfrutar del espectáculo a pie de pista y bailar hasta bien entrada la madrugada, tiene capacidad para 7000 personas. El Festival contará con puestos de comida, precios populares en las consumiciones y servicios de primer nivel. La zona vip estará en el lateral del campo de fútbol de El Cotillo en unas carpas en altura que harán que el espectador se traslade literalmente al cielo con acceso exclusivo al recinto. Esta zona contará con servicio de azafatas, catering durante toda la jornada, coctelería, barra libre hasta las 00:00 horas y acceso a primera fila, para que puedas casi tocar al artista. El show arrancará con las K-NARIAS que abrirán la noche y traerán la esencia canaria al festival con sus mejores hits, después se subirá al escena CARLOS BAUTE para hacernos bailar con sus grandes éxitos latinos; JUAN MAGAN pondrá el broche de oro a la noche, un indiscutible del electro latino que hará vibrar el estadio, literalmente, durante las dos horas de duración de su espectáculo. COTILLO LIVE MUSIC festival will get to Fuerteventura on August 17th to astonish us with an excellent staging. This will be a super production without precedents in the island where the audience will enjoy a unique experience. Eight hours of the finest contemporary music in an unparalleled location, the cosy village of El Cotillo, which inaugurates its patron saint festivities that day. The festival site will have two different accesses: the general one and the VIP access. The former, where all the attendants will enjoy the festival on the dance floor, dancing until the break of dawn, has a capacity for up to 7000 people. The festival will have food stands, popular prices for drinks and first level support services. The vip area will be at the sideways of the football pitch in El Cotillo, in one of the at height tents that will make the audience literally fly with a direct access to the enclosure. This area will have hostesses service, catering for the whole day, cocktail bar, free drinks until midnight, and access to the front row so you can almost touch the artists. The show will start with the K-NARIAS, who will open the event and will bring the Canary Islands essence to the festival with their best hits; then CARLOS BAUTE will follow to make us dance with his great Latin hits; JUAN MAGAN will be the golden clasp of that evening, an undeniable star of electro Latin music and he’ll make the stadium literally quake for the two hours his performance will last.
