TOSHO GASTRO BAR-
La idea de montar el Tosho Gastro Bar surge de dos hermanos gallegos, Kike y Antón Castiñeiras, cocineros apasionados y creativos, que después de trabajar en el mundo de la restauración durante casi 10 años, cansados de producir comida en serie, como si de una fábrica de alimentos se tratase, decidieron echarle valor a una idea que les rondaba la cabeza hacía tiempo: crear un gastro-bar, donde poder dar rienda suelta a toda la imaginación culinaria que bulle en sus cabezas, para crear platos exquisitos, con toques muy personales, en una carta cambiante que no canse ni a creadores ni a comensales. Así, el Tosho Gastro Bar abrió sus puertas a principios de marzo, en la localidad costera de El Cotillo, y desde entonces no han hecho más que dar alegrías a los paladares que les visitan, muchos de ellos repitiendo una y otra vez, sorprendidos por la chispa y la exquisitez de los manjares que preparan. Macaronesia estuvo en este local, decorado con un gusto extraordinario, sencillo, moderno y acogedor, y esto es lo que probamos y aquí os contamos, para que se os haga la boca agua y no dudéis en visitarles y sacar vuestras propias conclusiones.
1. Vieiras a la plancha, sobre crema de espárragos blancos, flores de aloe y crujiente de gofio. 2. Gyozas: ravioli estilo japonés, relleno de gambas, col, cilantro, y jengibre, con esferificaciones de Wasabi. 3. Arroz meloso de conejo, boletus y setas ecológicas. 4. Empanada de Bacalao deconstruida: lomo de bacalao fresco, cocinado a baja temperatura, servido sobre el relleno típico de la empanada —uvas pasas, cebolla, pimiento, pimentón—, con un crujiente de trigo. 5. Carrilleras de ternera sobre puré de papa violeta con crujiente Tosho y chalotas.

The idea of setting up Tosho Gastrobar arises from two Galician brothers, Kike and Anton Castiñeiras, passionate and creative chefs, who after working in the catering business for nearly 10 years, tired of producing food in series, as in a food factory, they decided to work hard on an idea that had been going on in their minds for some time: to create a gastro-bar, where they could give free rein to all their culinary imagination, to create delicious dishes with very personal touches in a changing menu that does not bore either creators or diners.
Thus, Tosho Gastro Bar opened in early March in the coastal town of El Cotillo, and since then they have only delighted the palates of people visiting them, many of them revisiting time and again, surprised by the wit and delicacy of the dishes they prepare. Macaronesia was in this place, decorated with an extraordinary, simple, modern and cosy taste, and here we tell you about what we tried, so that your mouth waters and you don’t hesitate to visit them and draw your own conclusions.

Con 6 años, Benjamin Sanchis ya andaba correteando por el club de playa que tenía su padre en Francia, aprendiendo a nadar y jugueteando con las primeras espumas, sin ni tan siquiera imaginar que un día llegaría a surfear olas gigantes. Macaronesia: ¿Cuándo empiezas a darte cuenta de que el surf es algo realmente importante en tu vida? Benjamin: De joven. No vivía muy cerca del mar y estaba siempre esperando, como un loco, a que llegaran los fines de semana. Había posters de surf en todos las paredes de mi cuarto, veía todas las películas de surf que podía, y no paraba de limpiar mi tabla y de simular el surf encima de mi cama. M: ¿Qué es lo que más te apasiona de esta forma de vida? B: El estar siempre cerca de los elementos, mirando el mar, el viento... Cuando hay buenas olas el mundo se para. Es un deporte muy sano, para el cuerpo y la mente; cuando entras en el mar, olvidas todos tu problemas y sales siempre más relajado. Me apasiona también porque es un motivo para viajar y descubrir el mundo. M: Eres un surfista de olas enormes, ¿has tenido miedo alguna vez?, ¿cómo se supera? B: Siempre que entro en el mar y que hay condiciones serias tengo miedo. Hay que tenerle mucho respeto al mar. Y no sé cómo se supera, solo sé que hay que analizar bien lo que está pasando y tener la cabeza fría, estar concentrado, seguro de tu material, y no hay que hacer el loco. M: ¿Cuáles son las principales aptitudes que debe tener un surfista para surfear olas de ese tamaño? B: Primero, hay que querer hacerlo de verdad; tener ese fuego dentro. Luego hay que tener un mínimo de técnica. Es importante también estar con gente que te enseñe el camino. Creo que es algo que coges poco a poco, desde pequeño, no te levantas un día diciéndote que vas a surfear olas grandes. M: La ola más grande que has cogido tenía unos 30m, ¿te satisface surfear olas en otras condiciones? B: Estoy enamorado del surfing en general, surfear cualquier
condición, pero solo por disfrutar. Sí que es verdad que me gustan mucho las olas perfectas, con tubos largos, o grandes; pero me gusta también intentar surfear olas peores y mejorar mi nivel técnico, aunque comparado con el de los niños de ahora, está clarísimo que pertenezco a otra época. M: ¿Algún otro deporte? B: Sí, me encanta el boxeo, aunque soy muy malo. Creo que es un buen deporte, complementario al surfing, por el cardio, el stretch, el esfuerzo mental, y porque te ayuda a reforzar el cuerpo. M: ¿Cuáles han sido tus mejores experiencias? B: Creo que he aprendido mucho en Teahupoo; ganar el XXL Award de la ola más grande en Belharra (Francia); surfear olas increíbles en Irlanda; esa ola de 30m de Nazaré (Portugal), y también surfear en Jaws, en Hawaii. Estoy feliz porque tengo la impresión de que todavía, a los 36, aprendo, veo y hago cosas nuevas. M: ¿Cómo es un viaje de surf perfecto? B: Cuando surfeas tantas olas increíbles, que no puedes ni remar, ni caminar; e inmejorable cuando lo compartes con amigos. M: Tus objetivos a día de hoy… B: Intento perder peso y estar en forma para los próximos swells que vienen en el hemisferio sur (Indonesia, Tahití). Mientras vivo aquí, me entreno e intento surfear cada día. M: ¿Qué te ha hecho llegar hasta aquí y quedarte? B: Mi buen amigo Claude, del Restaurante La Vaca Azul, de El Cotillo. Me dijo que viniera a visitarle, y al segundo me enamoré de la isla y pensé que era un buen sitio para vivir, por su clima, sus olas, la gente y el ambiente tranquilo. Me gusta la vida de Corralejo, la tranquilidad de El Cotillo y, por encima de todo, el camino del norte. M: Algo más que quieras decir… B: Quiero darle las gracias a todos los surferos del norte de Fuerteventura, que siempre me han acogido y tratado muy bien. He hecho muy buenos amigos aquí.

At the age of 6, Benjamin Sanchis was already running around the beach club his father had in France, learning to swim and fiddling with the first foams, without even imagining that one day he would come to surf giant waves. Macaronesia: When did you start to realise that surfing was really important in your life? Benjamin: As a young man. I didn’t live near the sea and I was always eagerly waiting for the weekend to arrive. There were surf posters on all the walls of my room, I saw all the surf films I could, and kept cleaning my board and simulating surfing on my bed. M: What do you feel most passionate about regarding this lifestyle? B: Being always close to natural elements, watching the sea, the wind ... When there are good waves the world stops. It is a very healthy sport, for the body and mind; when you enter the sea, you forget all your problems and you always end up being much more relaxed. I also feel passionate about it because it is a reason to travel and discover the world. M: You’re a huge-wave surfer, have you ever been frightened?, how do you overcome it? B: Whenever I enter the sea and there are serious conditions I am afraid. We must feel a great respect for the sea.I don’t
know how to overcome the fear, you just must analyse what is going on, keep a clear mind, stay focused, sure of your equipment and not to do crazy things. M: What are the main skills a surfer must have to surf such huge waves? B: First, you must really want to do it; have that bug inside. Then you need to have a minimum of technique. It is also important to be with people who show you the way. I think it’s something you pick up gradually, from an early age, you don’t just wake up one day telling yourself you’re going to surf big waves. M: The biggest wave you’ve caught was about 30m tall, do you enjoy meeting other conditions? B: I’m in love with surfing in general, any conditions, but just out of joy. It is true that I really like perfect and big waves, with long tubes; but I also like to try surfing other waves and improving my technical level, although as compared with children now, it is very clear that I belong to another era. M: Any other sports? B: Yes, I love boxing, but I’m really bad. I think it’s a good sport, complementary to surfing on the heart work, the stretch, mental effort, and because it helps to strengthen your body. M: What have your best experiences been? B: I think I have learned a lot in Teahupoo; winning the XXL
Award of the biggest wave in Belharra (France); surfing incredible waves in Ireland; that 30m-wave in Nazaré, and also surfing in Jaws, Hawaii. I am happy because I have the feeling that still, at the age of 36, I’m learning, seeing and doing new things. M: How is a perfect surf trip? B: When you surf so many incredible waves that you cannot even paddle or walk; excellent when you share it with friends. M: Your goals today ... B: I’m trying to lose weight and get in shape for the next swells coming in the southern hemisphere (Indonesia, Tahiti). While living here, I train and try to surf every day. M: What made you get here and stay? B: My good friend Claude, from La Vaca Azul Restaurant, El Cotillo. He told me to come and visit, and I immediately fell in love with the island and thought it was a good place to live, because of its climate, its waves, its people and its peaceful atmosphere. I like the life in Corralejo, the peace and quiet of El Cotillo and, above all, the north road. M: Anything else you want to say ... B: I want to thank all surfers in northern Fuerteventura, who have always welcomed and treated me very well. I have made many good friends here. Fuerteventura is a paradise and so I hope it will remain.

EL CIELO EN MAYO Con la llegada del mes de mayo, el cielo de la primavera se nos muestra en todo su esplendor. El planeta Júpiter, acompañado por su cortejo de satélites siempre en movimiento, resplandece muy alto en el cielo y, único entre los objetos del Sistema Solar, nos deja ver con el telescopio sus sistemas de nubes de diferentes colores, el rasgo más característicos de su densa atmósfera. Entre las constelaciones, en el Oeste, el gigante Orión se pone pronto, dejando paso a otros asterismos más característicos de la primavera en nuestras latitudes, como la Vela, con su famoso sistema múltiple gamma (Regor), que contiene una de las estrellas más calientes de la Vía Láctea; en cambio en el Este adquiere protagonismo Virgo, que esconde un rico cúmulo de galaxias, que se dejan ver a duras penas como manchitas borrosas a través de nuestros telescopios. La primera semana nos propone también una de las mejores lluvias de estrellas del año, las Eta-Acuáridas, que nos pueden reservar más que una agradable sorpresa. Esta primera semana y la última del mes son las más adecuadas para observar el Cielo Profundo, en cambio las dos centrales tienen como protagonista a la Luna, que nos enseña sus inmensos mares y sus fascinantes cráteres, resultado del impacto de incontables asteroides. No pierdan la oportunidad de unirse a nosotros para descubrir los misterios del Universo, desde estos cielos tan oscuros que tenemos la suerte de gozar en Fuerteventura y su Reserva Starlight. ¡Cielos despejados para todos! The planet Jupiter, always followed by its court of satellites, is now very high in the sky and, unique within the objects of the Solar System. Through the telescope we can observe its cloud systems of different colours, the most famous feature of this thick atmosphere. Among the constellations, the giant Orion sets down quite early in the West, leaving the protagonism to other asterisms typical of the southern skies, such as Vela, with its famous multiple system Gamma (Regor), one of the hottest stars in the Milky Way and on the opposite side, Virgo attracts our attention with its rich galaxy cluster, faint objects hard
to see as blurry spots through our telescope. The first week of May proposes one of the best shooting-star showers of the year, the Eta-Aquariids, which will reserve more than one surprise. This first week, together with the last, are the best moments for the observation of the Deep Sky, while the middle of the month presents us the Moon, with its big seas and fascinating craters, consequence of the impact of uncountable asteroids. Do not miss the opportunity to join us discovering the mysteries of the Universe from the dark skies we are lucky enough to enjoy from Fuerteventura and its Starlight Reserve. POSTURA DE YOGA DEL MES: MARICHYASANA ¿PRACTICAS SURF? ¿MOLESTIAS LUMBARES?
MARICHYASANA «Torsión del Sabio Marichy» Por Agustina Cadel, profesora de Hatha yoga y Filosofía Vedanta. BENEFICIOS: La práctica asidua de esta postura elimina el dolor de espalda y mejora la digestión. Tonifica la columna vertebral, fortaleciendo la musculatura lumbar. Además, corrige las posiciones erróneas en las que, por costumbre postural o por falta de tonificación, colocamos los hombros. También mejora la respiración, porque aumenta el volumen de la caja torácica, y la respiración adecuada es primordial para ©Aloha Ke Akua, Asociación deportiva y cultural mejorar tu rendimiento en el agua. EJECUCIÓN: Siéntate a 90º, con las piernas extendidas sobre el suelo. Inspira profundamente y flexiona la pierna derecha, apoyando la planta del pie sobre el suelo, cerca de la cadera derecha. Mantén los glúteos en todo momento apoyados en el suelo y procura que la pierna flexionada no se venza hacia afuera o hacia adentro. Exhala adelantando el hombro derecho y abrazando la pierna por dentro, mientras que el brazo izquierdo rodea el cuerpo por detrás. Entrelaza las manos y permanece en la postura de 5 a 10 respiraciones profundas. Repite los mismos tiempos por el lado izquierdo. EVITA ESTA POSTURA: En caso de hernias discales. It tones the spine, strengthening the lumbar muscles. Moreover, it corrects erroneous positions in which, out of habit or lack of muscle tone, we usually place our shoulders. It also improves breathing, as it increases the volume of the rib cage, and proper breathing is essential to improve your performance in the water. COMPLETION: Sit at 90º with outstretched legs on the ground. Inhale deeply and bend
your right leg, resting the foot on the floor, near the right hip. Keep your buttocks flat on the floor all the time and make sure that the bent leg doesn’t move either outward or inward. Exhale advancing the right shoulder and hugging the right leg from within, while the left arm surrounds your body behind. Interlock your hands and remain in the position from 5 to 10 deep breaths. Repeat the same pose on the left side. AVOID THIS POSE: In case of herniated discs. If you suffer from neck pain, do not force the twist in your neck.

Ken Robinson Hace 4 años, Iciar Damborenea Boyano llegó a Fuerteventura, después de haber pasado períodos intermedios en la isla durante los últimos 10 años. Diplomada en relaciones laborales, Itxi, de Santa María de Getxo (Bilbao), decidió abandonar la vida de oficina y, después de emprender un negocio de hostelería en la isla, finalmente decidió dedicarse a lo que siempre le ha apasionado, el mundo de los niños. En noviembre del pasado año abrió sus puertas, en El Cotillo, su tiendita La tía Itxi, un lugar encantador, decorado con muchísimo gusto y donde podrás encontrar muchas cositas originales para tus pequeños. Macaronesia: ¿Te resultó fácil encontrar el nombre del proyecto? Itxi: Pues la verdad es que sí… No tengo hijos, pero tengo cientos de sobrinos de amigas, y siempre he sido un poco eso: «La tía Itxi». Ahora además voy a ser tía de verdad, así que con más motivos aún. M: ¿Qué encontramos en La tía Itxi? I: Siempre he pensado que los niños evolucionan en la dirección que se les facilite, y creo que es muy importante darles herramientas que les hagan desarrollar su creatividad, hacer cositas con sus propias manos, desarrollar la psicomotricidad… Así que lo que principalmente encontraréis en La tía Itxi son juegos didácticos, orientados a niños entre 0 y 12 años, pensados para su enriquecimiento y desarrollo personal. Juegos que potencian la creatividad, la imaginación, y que evitan la violencia a la que tan acostumbrados están los niños hoy en día. M: ¿Y qué otras cositas? I: Por otro lado también tenemos ropita y accesorios, muy originales y de una calidad excepcional, la mayor parte de algodón orgánico. Lo que nos define, por encima de todo, es la calidad y la originalidad. evolve in the direction they are provided with, and I think it is very important to give them tools enabling them to develop their creativity, do little things with their own hands, develop motor skills ... So what you’ll mainly find in «La Tía Itxi» are educational games aimed at children aged between 0 and 12, designed for their personal fulfilment and development. Games enhancing creativity, imagination, and avoiding the violence that kids are so used to nowadays. M: What other stuff? El sector LGTB está en auge en esta maravillosa Isla, es ahí cuando decidimos investigar e invertir en este negocio muy diferente y arriesgado, y ya en marzo de 2014 inauguramos el Club Km 22. M: ¿Tuvo una buena acogida? Km 22: En principio sí, sobre todo por parte del cliente turista, que es el que más demanda este tipo de locales. Todos se sorprenden al entrar al local y ver cómo es por dentro. Estamos entre las mejores saunas de Europa, por higiene, limpieza y por nuestros servicios. El .14
público local ha ido aumentando poco a poco. Nos sorprendió el que mucha gente local no sepa, y siga sin saber, lo que es una Sauna, nos preguntan ¿cómo es?, ¿qué es?, ¿qué se hace?, etc. M: Para despejar dudas, ¿quieres explicarlo? Km 22: La Sauna Km 22, es un local meramente para público masculino, ofrece mucha discreción, un ambiente selecto y discreto, diversión o relax y tranquilidad, servicio de masajes. Puedes encontrar lo que buscas sin el mayor problema. Cada 15 días, aproximadamente, damos fiestas temáticas con espectáculos de chicos. M: ¿A qué público está orientado? Km 22: Como te he mencionado anteriormente, al público masculino, gente selecta, educada, con clase, y muy discreta. M: ¿Cómo ves el desarrollo de Fuerteventura, en relación al turismo LGTB? Km 22: Sin duda alguna está en auge, cada vez más. La isla es visitada por este tipo de cliente, con la ventaja de que es un público selecto y con más clase del que visita otros destinos. Fuerteventura aún está por descubrir. M: Algo más que queráis añadir… Km 22: No dejes de venir a nuestro local, que no te lo cuenten, y que tampoco te cuenten lo que no es. Km 22: No doubt, it is gradually booming. The island is visited by this kind of customer, with the advantage that it is a select audience and classier than the one visiting other destinations.
