EASY-PEASY PEPPER JACK BREAD

INGREDIENTS

2 cups all-purpose four

1 cup pepper jack cheese (any favorful shredded cheese will do, but freshly grated cheese from a block will give you a fufer bread and Wisconsin cheese is the best)

1 teaspoon sugar

1 teaspoon baking powder

½ teaspoon salt

1 cup buttermilk (whole, not reduced fat, if you can fnd it)

¼ cup melted butter (Wisconsin unsalted butter or any unsalted butter, since it is usually a fresher butter)

2 eggs, slightly beaten

DIRECTIONS

0 1 . Heat oven to 350º. Lightly grease the bottom only of a loaf pan (9x5x3 or similar size) with shortening or cooking spray.

0 2 . Stir together dry ingredients and cheese in a medium size bowl. Mix the wet ingredients in a separate bowl and then add to the dry ingredients. Stir only until moist – it is okay if it is lumpy. Spread into pan.

0 3 . Bake 35-45 minutes or until golden brown and a toothpick inserted into the center comes out clean.

NO T E : This bread is so good warm with just a little bit of butter or as a side with your favorite spicy soup or chili! Great the next day with a sandwich, although it rarely lasts that long. Enjoy!
