Wonderful Indonesia without a Visa The government of Indonesia has extended a visa-free facility to 169 countries and territories.

Aside from the beautiful and exciting destinations, nothing lifts the mood of an avid traveler better than a free visa. After all, a visa-free facility eliminates one more barrier standing between a traveler and his destination. Indonesia, the largest archipelago in the world known for its pristine beaches, lush tropical forests and diverse culture, has recently extended its visa-free facility to no fewer than 169 countries and territories. The policy to grant visa-free facility to a much larger number of countries and territories was made as part of the government’s efforts to boost the country’s economy through tourism. The government has announced its aims to reach 20 million visitors by 2019. Presidential decree no. 21 of 2016, which was signed by President Joko Widodo on March 2 this year, details the policy’s terms and conditions and encloses the list of countries.

meetings and transit visits, is valid for up to 30 days. It is non-extendable and non-convertible. Entry and Departure Point There are designated points of entry and departure as well. But visitors need not worry, as, according to the Indonesian Directorate General of Immigration, there are up to 124 immigration checkpoints composing of 29 airports (including Soekarno-Hatta, Tangerang, 30 kilometers from Jakarta; Halim Perdanakusuma, Jakarta; I Gusti Ngurah Rai, Bali; Juanda, Surabaya; Hang Nadim, Batam; and Kuala Namu and Polonia, Medan among others), 88 harbors and 7 land borders. Visitors may enter and depart through all of the listed checkpoints. The full list, along with the list of countries, is available on the Directorate General of Immigration’s website.

Visitors from enlisted 169 countries and territories, which include the United States and Australia, are required to have their passports with minimum validity of six months and a return ticket upon entry. Meanwhile, nationals of Afghanistan, Cameroon, Guinea, Israel, Liberia, Niger, Nigeria, North Korea, Pakistan and Somalia, still need a visa approval from the Immigration Office in Indonesia prior to their travel. The visa-free facility, which is granted for the purpose of leisure or tourism, family, social, art and cultural, governmental, educational, business

Indonesia has come a long way in granting free visa for short visits. The government had previously granted visa-free status to neighboring Southeast Asian countries, such as Thailand, Malaysia, Singapore, Brunei Darussalam, the Philippines, Cambodia, Laos, Myanmar and Vietnam, as well as territories and countries, such as Hong Kong, Chile, Morocco, Peru and Ecuador, through presidential decree no. 69 of 2015. Later last year, it amended the policy with presidential decree no. 104 of 2015, which added 75 other countries eligible for the visa-free facility.

pon entering Inaya Putri Bali, we were mesmerised by the beauty of the resort. But this is not just another tropical paradise; it is a destination based upon a very interesting philosophy.

Inaya Putri Bali is built on a mission to transport each guest closer to Balinese culture, the people of the island and their sacred traditions. Upon arrival, you will be enchanted by the resort’s soaring entrance, fashioned after a traditional Balinese rice barn or “jineng.” Throughout, the resort’s spectacular spaces resound with the spirit of Bali. The penglipuran is the focal point, connecting the resort’s seven themed villages,

each with its own identity, distinguished by impressive Indonesian stonework. Located in genuinely traditional countryside, Penglipuran Village is a characteristically unique community. All the houses and daily life within the area are dedicated to preserving authentic Balinese social and cultural life. Contrasted with the resort’s cutting-edge facilities, the impressive design takes on new meaning. There are seven themed villages at Inaya Putri Bali, each village named after a Balinese goddess or “dewi”. The villages are called “puri,” meaning a place where the goddess lives. Here is the philosophy of each puri.

Puri 1 Goddess / Dewi Shinta – Symbol of love and purity, Dewi Shinta was the wife of King Rama in the Ramayana epic, who had to prove her purity through a “trial by fire,” which the colour red represents. Vibrant hues and flames are decorative elements that highlight the rooms in Puri 1, with details such as flaming candles to complement the concept.

Puri 5 Goddess / Dewi Uma (Durga) – Goddess of Beyond, representing the personality of Uma – patience, sharpmindedness, firmness and staunch principles. The rooms in Puri 5 are highlighted in silver and black hues, creating a contemporary atmosphere. Strong and elegant pieces of art form the focal point of the rooms.

Puri 2 Goddess / Dewi Rukmini – Goddess of Beauty and Gracious White represents fortune, appreciation, respect and admiration. These are the shades experienced in the rooms inside Puri 2. White elements are featured throughout the entire decor.

Puri 6 Goddess / Dewi Sri – Dewi Sri, the Goddess of Fertility, is worshiped as the protector of life (birth) and fertility, as well as a symbol of Mother Earth in Balinese Hinduism. The rooms in Puri 6 have an “earthy” look and atmosphere, with lots of yellows and greens.

Puri 3 Goddess / Dewi Parwati – Goddess of Universe in Sanskrit, Pārvatī means “mountain spring water,” which represents the element of Mother Nature. The rooms in Puri 3 are decorated with a clean, contemporary pink colour to illustrate enlightenment and knowledge.

Puri 4 Goddess / Dewi Lhaksmi – Goddess of Prosperity, accentuated by tones of purple that represent royalty, magic and mystery, the rooms and suites in Puri 4 are also complemented by lavishly designed interiors and decorative elements.

Puri 7 Goddess / Dewi Saraswati – Goddess of Knowledge, Spirituality, Arts and Music, Saraswati is one of the most celebrated goddesses in Balinese Hinduism as the sentinel of knowledge, spirituality, art and music. The rooms in Puri 7 feature subtle tones and the colours of orange – the colour of the mustard plant flowers that bloom at the time of her festival in the spring.

t is always a pleasure for me, as an Indonesian, to profile a successful Indonesian at the top of his industry. I Made Merta is one of them. The hospitality industry veteran is at the helm of INAYA Putri Bali. Have worked in hospitality for more than 30 years, I Made Merta has seen the explosion of the tourism industry in Bali and its rapid evolution on the island. He believes tourism on the island will continue to grow, as Bali is one of those rare destinations that offers something for everyone, whether they are visiting the Island of the Gods for business or pleasure. Born and raised in Bali, Merta knows the island inside and out and loves nothing more than sharing his knowledge and love of the island with guests, pointing them to the hidden secrets and beautiful spots beyond the typical tourist destinations. We had breakfast with Merta one morning and were treated to an insider’s look at the island, the places to visit and foods to try, the kinds of things only locals know. I could see how passionate Merta was about the hospitality industry and his love for INAYA Putri Bali. INAYA, the only government-owned hotel in Nusa Dua, was formerly known as Inna Putri Bali and is one of the hospitality pioneers in Nusa Dua. There are, of course, many, many hotels in Bali, but Merta believes that INAYA stands out from the crowd by delivering a truly Balinese experience for all the guests at the resort. The always-smiling faces will make every effort to ensure that your stay is a memorable one. Looking at his curriculum vitae, I was quite impressed by Merta. He is a self-made success story. One of the things that struck me most was Merta’s loyalty, as he has worked with the same company his entire career. That kind of loyalty is very rarely seen nowadays. Merta has spent his entire career working in Inna Hotels in Bali, starting his career in the accounting department, climbing his way to the top position he holds today. His first General Manager position was in 2010 at Inna Kuta Beach. According to Merta, the hospitality industry is not for everyone. To be able to work in the industry a person must always be ready to serve, and serve from the heart. No matter the position, from a cook in the kitchen to a housekeeper, everyone who serves from the heart will deliver the best in their work and will have a successful career. One thing that Merta learnt from the hospitality industry is that you can never stop learning. As the industry moves fast, people who work in the industry must keep learning to keep up.

usa Lembongan is a small island off the southeast coast of the main island of Bali. It is the perfect getaway for those searching for peace and quiet. Nusa Lembongan is far from the hustle and bustle of Bali’s more touristy areas. , This secluded yet mesmerizing island has beautiful beaches and underwater delights.

How to Reach Nusa Lembongan

Just head to Sanur Beach and check out one of the many booths offering day trips to Nusa Lembongan. It’s even easier if you stay at Inna Grand Bali Beach, which is just around the corner. The hotel provides tours to Nusa Lembongan, including water sports and island tours. At eight in the morning, gather near the main pool and then head to the jetty for the boat ride to Nusa Lembongan. A bonus, everyone

is assisted by a personal tour guide. From the moment you gather at meeting point until you get back to the hotel at the end of the day, this personal tour guide will handle everything for you.

Water Activities

It is only 30 minutes to Nusa Lembongan from Sanur. You can start your day on Nusa Lembongan with a marine walk, famously known as sea walker. Wearing a diving helmet, you can explore several metres beneath the sea. For 10 to 15 minutes under the water, you get to feed the fish and watch as they swim around you in schools. It is a great experience, and even better you don’t need a diving license. Your guide will give you instructions and communicate with you through hand signals. The trick is just to relax and don’t panic. If you’re not comfortable being a sea walker, head to the other side of the island and explore

the sea with a little snorkelling. All the gear is provided by the operator. I saw table coral and lots of colourful fish. Just pay attention during stingray season. Make a fun splash with a banana boat ride with friends. It’s fun, you don’t need to get wet and it’s safe for all ages. Life jackets are provided and a guide will accompany you on the boat.

Explore the Island

Done with water activities, passengers will be transferred to the island and spend some time at the beach restaurant. But not for me, because I took the one-hour island tour package to explore some of the highlights of Nusa Lembongan. We took an open-air vehicle called an angkot to explore the beauty of Nusa Lembongan. First stop was Panorama Point, the best spot for capturing the scenery of Nusa Lembongan. We stopped for five minutes and then continued our journey to a seaweed

village. The village was five minutes from Panorama Point, just a little bump in the road. It has a peaceful ambience and is a good spot for photos. The last stop is Jembatan Cinta or Love Bridge. This yellow bridge is made of teakwood and steel and only handles motorcycles and bicycles. This bridge connects to Nusa Ceningan, a small island with beautiful beaches and views. Unfortunately, we only had 10 minutes on Nusa Ceningan to snap some photos and enjoy the views from one of the island’s iconic spots. After that, we headed back to the beach club for lunch and some relaxation poolside. If you still have energy, the tour offers kayaking off the beach. Or maybe you would rather laze on the beach and soak in the sun. At 2pm, we gathered near the jetty to set sail back to Sanur. I’ll see you when I see you again, Nusa Lembongan.

Everything feels slower in Ubud. It lacks the hectic pace of so much of the island and the area seems to shut down at 9pm. This is for people who want to relax with a cup of coffee or tea and a good book, shop for artistic treasures and revel in the simple pleasures of this dreamy idyll.

You can catch life performances of Balinese dances like the kecak, Ramayana, calon arang and barong. And in Pasar Ubud and countless other locations, you can find beautiful Balinese paintings, carvings and other art treasures. Bali is famous for its arts and many people come to Ubud to build their collections. It is not unusual for foreign visitors to come for the painting, dance and culture, and then just decide to stay.

Culinary Paradise

Adventure

People who know Bali know that different areas of the island offer different experiences. If you like clubbing and nightlife but have a limited budget, head for Kuta. If you have a bit more money to spend on such activities, try Legian or Seminyak. Nusa Dua has private beach clubs. But if you are in search of calm and quiet, Ubud beckons.

For a truly authentic taste of Ubud, you must try the pork. One of the best spots is Warung Babi Guling Bu Oka and in particular its famous crispy pork skin. There is, of course, plenty to choose from in terms of Western food, Indian food and more. You can also find lots of healthy options and vegan dining.

Health & Wellness

There are plenty of health and wellness resorts that offer bespoke packages for guests in search of solitude and a deeper connection with their physical selves. Some resorts ensure total solitude for guests, creating their own private spaces, without televisions, the internet and all the other modern distractions. Guests come to shake off the stress of work and traffic and big city woes, seeking to clear their minds and cleanse and strengthen their bodies. How they eat is a big part of that, so the resorts create special menus that help in the detox.

Ubud is the living, beating heart of Balinese culture. As you would expect, there are plenty of museums here, such as the Blanco Renaissance Museum, Arma Museum & Resort and the Puri Lukisan Museum.

But Ubud is not all about the soul. There is also physical adventure to be had, like rafting, cycling and hiking. Go rafting on the Ayung River or hiking at the nearby Mount Batur. There are glorious views to be had from the top of Batur and they are well worth the hourslong trek to the peak. A little further afield from Ubud are a number of great locations for snorkelling, including Padangbai and Blue Lagoon Beach.

Spiritual Experience

A massage in Ubud is often not just about treating the body. Some therapists are also healers. They will pray to the gods, the spirits and universe, making a soulful entreaty on behalf of their clients. It is a spiritual experience. Pura Dalem Segara Temple, in Payangan, provides a Balinese blessing for visitors. It is a blessing ceremony to put aside bad habits and seek the blessing of the gods and the universe.

ali and Kuta are inseparable. Kuta is often the first thing people think of in Bali. Sure, there is Seminyak or Canggu, major destinations for travellers seeking culinary and nightlife offerings. But who can forget Kuta? Kuta is home to countless hotels, restaurants, cafes and bars that seem to be crowded every night. And for those who love to shop, be sure to visit Kuta Art Market, a traditional market perfect for hunting souvenirs.

A Glance at Kuta Art Market

Kuta Art Market (Pasar Seni Kuta) has been around since 1965. Over the decades, the market has grown and now has hundreds of stalls. The market is open from 7am to 8pm. It is strategically located near Kuta Beach, just about 100 metres from the strand. If you are staying at Hotel Grand Inna Kuta, it’s just a 5-minute walk to the market.

Shopping at Kuta Art Market has its advantages. There are long hallways lines with stalls and sellers. Most are fluent in English, making it easier for tourists from overseas to shop and bargain.

Hunting Souvenirs

Kuta Art Market is filled with quality products at reasonable prices, but don’t be afraid to bargain. Some stalls may have set prices, but most are open to some friendly haggling over prices, so both sides come away happy. Kuta Art Market is a great place to find souvenirs, such as cotton T-shirts, Balinese fabrics, which are a favourite with visitors, hats, necklaces, bracelets, rings and traditional trinkets. The market also sells paintings and sculptures, but these are less common than other souvenirs. With so many choices, it’s easy to compare prices. Prices are in rupiah, don’t hesitate to bargain, and happy shopping!

s I have gotten older, I have begun to see the phrase In vino veritas, “in wine, truth,” from a different perspective. It has been some time now that I drank to drop, and now I rather appreciate what I consume. More Indonesians are beginning to feel the same and wine industry has taken notice. As people become more educated and have more disposable income, their lifestyle changes. Many embrace the “wine lifestyle,” which is currently fashionable. It amazes me how the modern wine industry brings connoisseurs to a new level, opens minds with products from places that you might never have thought about, and most of all, gives people a reason to visit a destination just for the heavenly “aqua de vita.” It was thus when my parents and I travelled through Tuscany for a week, visiting one winery after another and experiencing the pinnacle of fine wining and dining. This memory was brought back to life when I was introduced to New Latitude wines, a phrase to distinguish wines made in non-traditional areas such as Europe.

Over the last couple of years, I have seen northern Bali become a grape-growing and wine-producing destination, highlighted by the suitability and potential of Alphonse Lavallée grapes in this tropical paradise. The dry, sunny weather, rich latero-volcanic soil and abundance of fresh water cascading down from the volcanoes create ideal conditions for grape growing in Bali, as well as being a fruitful alternative crop for the farmers in this region. Sababay Winery takes its name from its, Saba, a village in Blahbatuh, Gianyar Regency, famous for Saba Beach. The winery offers New Latitude variants with a distinguished presentation, a new experience for those who appreciate the best in life. The winery is built on two hectares of land and has state-of-the-art grapeprocessing equipment from France, including stainless steel machinery with horizontal and vertical presses, fermentation vessels, automatic bottling line, a laboratory and supporting facilities, the only such equipment in Bali. A one-hour tour of the winery provides perspective on the rich flavour of Sababay


raisins, dark chocolate and a hint of pimento and clove. It is full-bodied, with a fleshy palate, with lingering flavours of berries and cedary oak. This is a well-structured red that will complement saucy dark meats as well as tomato-based vegetarian dishes. Sababay has also a sweet series that features, Ludisia, with brilliant dark crimson red tones and a rich bouquet of apricot, chocolate and cinnamon. Ludisia has a soft and delicate medium-bodied palate with a hint of orange peel. A warm and luscious finish will accompany a wide variety of dishes ranging from red meats served with creamy sauces to desserts. The wine can be served slightly chilled or at room temperature. signature’s wine, Black Velvet, with brilliant dark ruby red tones and a bouquet of ripe berry fruits, plums, roasted oak and hints of nutmeg. It has a light body composition with a savoury palate and long spicy fruit flavours. From Sababay’s reserve series, I was served the Reserve Red Brilliant, which has deep cardinal red tones with a bouquet of ripe cherries,

Sababay has successfully broken the stigma that Indonesia cannot produce wine because of the humid climate. Its vineyard is located in Buleleng Regency, in northern Bali, where rainfall is limited and where hot days and cool nights create a perfect environment for grape growing. Many locations in Indonesia have similar conditions and it is not difficult to imagine Indonesia becoming the leader in Southeast Asia in the production of quality wines.

Story of Rijstaffel

The idea that the Dutch invented Rijsttafel can be traced back to Rijcklof van Goens, a former Governor-General of the Dutch East Indies. But van Goens was no culinary pioneer; he just saw the ritual performed at the court of Sultan Amangkurat of Mataram. Rijsttafel was then adopted by the colonial rulers to show their power and affluence, being served 60 kinds of side dishes in an indulgent procession of pure luxury. The meals were served by jongos (derived from the Dutch for boys) who acted as waiters, dressed in semi-European attire, with holsters and belts. Rijsttafel was also served in Indonesian palaces, especially for official banquets, with female waitresses serving the dishes. Time passed and this fascinating tradition became more popular. Soon the Chinese were

embracing Rijsttafel and the unique dining procession was also making its way from the palaces to more and more Indonesians.

Need to Know

Rijsttafel is derived from the Dutch for rice table. It generally consists of fried rice, rendang, chicken curry, satay with crackers and chili. There is also curry fish with a variety of condiments, sauces, pickles, salted egg, fried bananas and the can’t-miss chicken liver sauce. While the whole dining procession can seem rigid and formal, and be a little intimidating for beginners, don’t let that keep you from experiencing the excitement of Rijsttafel. With so many options and side dishes, it is recommended that every morsel be eaten with a bit of chicken, fish or beef. The idea is for diners to enjoy every flavor on offer. It is the combination of dishes that is the main attraction of the Rijsttafel procession.

Dine With a View For those looking for something other than beach and sun, Jungle Fish is the chance to experience a different side of Bali. Jungle Fish, a stylish Mediterranean restaurant in Ubud, where lush green valleys and mystical rivers create a tropical paradise, has gained fame among visitors and locals. This open-air, split-level restaurant is perched on the side of a mountain overlooking the Osh River Valley. and vegetables, all organic and cooked without MSG. It is truly a meat lover’s paradise. For the second main course, we had a seafood platter of prawns, salmon and squids. There is also an interesting selection of mocktails, cocktails and wines. I had a refreshing passion fruit and tangerine mojito cocktail and a Classic Jungle Green mocktail consisting of kale, parsley, cucumber, green apple, lime and ginger. After we finished our delicious meals and drinks, we headed to the lower level of the restaurant where the bar, deck and swimming pool are located. was captivated by Tokyo from the time I landed at Narita International Airport. After a red-eye from Jakarta, I landed in the morning and continued the journey to downtown Tokyo, which took another 90 minutes. My hotel was in Akasaka and it became my base to explore Tokyo. So, come with me and discover the city originally called Edo.

Iconic Shibuya

It’s not officially a trip to Tokyo if you don’t visit Shibuya. This famous intersection, with its cool spectacle of giant video screens and neon, includes Shibuya Station and the iconic Hachiko statue. I couldn’t help but smile as I walked around this fabulous area. Shibuya lets you know that you are really in Tokyo, as you cross what may be the busiest intersection in the world. Near the intersection is Shibuya Station, a terminal for a number of rail lines, including the JR Yamanote, Saikyo, Tokyu Toyoko, Den’entoshi, Keio Inokashira, Tokyo Metro Ginza, Hanzomon and Fukutoshin lines. This is a prominent downtown area of Tokyo rivalling Ginza, Shinjuku, Ikebukuro and Asakusa. Shibuya is unique, with every street having a completely different atmosphere. Shibuya Centre Street is crowded with a multitude of shops, including youth fashion shops, fast-food restaurants, and game centres, and it is famous as the place where new trends are born and quickly spread among youth nationwide. It is always crowded day and night, mostly with teenagers, and you can get a feel for today’s Japanese fashion trends there.

Not to be missed is Hachiko Square and its statue of the loyal dog Hachiko, who spent nine years waiting for his master outside Shibuya Station. His inspiring story brings many visitors to the square for a picture in front of the statue. Near the statue is a small museum about the statue and Shibuya Station, including a series of photos that show the construction of the station.

Sacred Sensoji Temple

Tokyo is home to numerous temples that are not only places of worship, but also tourist destinations. Sensoji Temple is Tokyo’s oldest temples and one of the most visited spots in the city. Located in Asakusa, Sensoji is receives almost 30 million visitors each year. Sensoji is a Buddhist temple built in the 7th century. Two fishermen brothers found a statue of Kannon, the female goddess of mercy, on one of their fishing trips in the Sumida River. The temple was completed in 645. As you approach Sensoji, you will pass along a street called Nakamise Dori, which stretches from the outer gate to the temple’s second gate. This street is lined with shops selling souvenirs, handicrafts, snacks and trinkets. In the surrounding neighbourhood, you can find man-powered vehicles called Jinrikisha, or pulled rickshaw, which are ideal for exploring Asakusa.


View From the Top

Tokyo Tower is a popular destination, but there is an even more majestic tower in the city. Tokyo Skytree, the tallest tower in the world, displacing Canton Tower in Guangzhou, with a total height of 634 metres. Standing proudly in Sumida district, this multi-use tower is home to a restaurant and observation decks. The colour of Tokyo Skytree is based on aijiro, the lightest shade of the traditional Japanese indigo blue. The colour of Skytree also replicates the technique of indigo dyers, with a hint of blue added to the white, giving it a delicate pale blue glow, like that of white celadon ware. Colours created by indigo dyers represent the legacy of Japanese traditional craftsmanship as conserved in the downtown area housing the tower. Dressed in Skytree white, the tower stands tall against the blue sky in downtown Tokyo and transcends time with eternal brightness. The tower’s highest point, Sorakara Point (floor 450), offers great views of the city.

Day Trip to Kinugawa

Kinugawa, a city outside Tokyo, is famous for Edo Wonderland and Tobu World Square, which

transport visitors back to the Edo era, with its typical villages and depictions of ninja life. To reach Kinugawa, you can catch a trail from Asakusa Station, with the trip taking about two hours. From Kinugawa-Onsen Station, you can catch a shuttle bus to tourist sites. Entering Edo Wonderland, there is a path that will take you to the wooden traditional houses and restaurants and souvenir shops. There are also street performances and live performances in a special arena showcasing ninja action, complete with fighting moves and techniques. Tobu World Square is 10 to 15 minutes from Edo Wonderland, home to the world’s most famous structures in miniature. From Japan there is Tokyo Tower, Tokyo Station, Toshodai-ji Temple, Tokyo Dome, Tokyo National Museum Main Building & Art Gallery and many more. There is also the Empire State Building, the Parthenon, the Leaning Tower of Pisa, the Great Sphinx, Angkor Wat, the Forbidden City and Taj Mahal. 2. Situ Patenggang Once upon a time there was a couple named Ki Santang and Dewi Rengganis. They were so in love and were separated for a long time. Finally, one day they met each other. Dewi Rengganis asked her lover to create a lake along with a boat for them to ride in. According to legend, he formed a small lake called Situ Patenggang. The lake is set amidst rolling hills, surrounded by carpets of green grass and tea trees. Situ Patenggang is about 47 kilometres from Bandung, and if you visit on the weekend you will have to share the area with young people

from Bandung and nearby towns. It is also a good idea to plan your visit to the lake for before noon, because Situ Patenggang, with its elevation of 2,000 metres above sea level, is usually shrouded in a thick fog that comes rolling down the hills in the afternoon. One of the most popular tourist attractions in the area is Pulau Asmara (Love Island) – a place where Ki Santang and Dewi Rengganis met – and Batu Cinta (Love Rock), set in the middle of the lake. It is said that those who step on Batu Cinta and continue to circle Pulau Asmara will be blessed with endless love.

3. Pangalengan When someone asks me about Pangalengan, I think of fresh milk. Pangalengan is a district located 48 kilometres from Bandung and is famous for its fresh milk. But Pangalengan is much more than dairy farming. Pangalengan has traditional villages, natural attractions such as lakes, ponds, hot springs and waterfalls, and it is also famous for tea plantations. Malabar Tea Plantation, near Mount Malabar, is one of

the most famous tea estates and was formerly known as a hill station during the Dutch colonial period. The modern history of Malabar dates back to 1890 when tea cultivation began to move into the highlands of Pangalengan. In 1896, Karel Albert Rudolf Bosscha established the first tea plantation on the slopes of Mount Malabar.


Later, Bosscha would establish himself as the tea plantation supremo, snapping up all the tea estates in the Pangalengan region. He also set up two tea factories around Malabar, one near his residence-slash-office and called the Malabar Tea Factory. The area of these early tea plantations is known for its breathtaking landscapes and views. And for those who want a

taste of the colonial life, Bosscha’s house is open to visitors, where you can enjoy freshly processed tea leaves. Bosscha, who never married, died on 26 November 1928 and was buried among his beloved tea bushes on the Malabar tea estate, as he had requested. His simple tomb is still there, unchanged and unspoilt.

Cerita Awal Rijsttafel Makan nikmat dengan berbagai lauk-pauk dan dilayani belasan pelayan yang siap mengantarkan setiap hidangan satu per satu menjadi salah satu bukti kemewahan dan ekslusivitas sebuah jamuan makan. Rasarasanya tipikal jamuan makan ini seakan mengangkat gengsi dan prestis bagi siapapun yang mencobanya. Apalagi ditambah dengan kaum kompeni yang lazimnya mengadakan jamuan makan seperti ini, makin menambah nilai sosial. Tapi, fakta yang beredar ternyata kaum kompenilah yang menjiplak ritual makan ini untuk kemudian digeser makna dan tujuannya. Asal muasal cerita berasal ketika utusan VOC, Rijkloft van Goen yang melihat ritual ini dilakukan di istana Mataram era kejayaan Raja Amangkurat I (1646-1677). Merasa tertarik dengan segala keunikan yang ditawarkan, Rijsttafel pun diadopsi penguasa kolonial namun dijadikan sebagai media untuk unjuk kekuasaan dan kemewahan dengan misi untuk menyepelekan bangsa yang dijajahnya. Tak tanggung-tanggung, Belanda sampai menghadirkan sekitar 60 jenis lauk-pauk dalam sebuah prosesi. Momen ini dijadikan ajang untuk mempertunjukkan dominan dan keangkuhan kaum kompeni. Ketimpangan sosial pun makin bertambah ketika selama sesi makan akan dilayani para jongos (berasal dari Bahasa Belanda yang berarti anak laki-laki) yang berperan sebagai pelayan dan pengantar makanan. Para jongos ini mengenakan pakaian semi Eropa yang dipadu dengan sarung dan ikat. Ada cerita yang menyatakan bahwa Rijsttafel juga disajikan di istana, terutama saat jamuan resmi di hari kemerdekaan. Konon para sajian makanan dibawa oleh pelayan wanita berkebaya.

Tradisi menarik ini begitu diminati dan terus berkembang. Orang-orang Belanda pun diperkenalkan mengenai ritual ini dalam perjalanan menuju negeri jajahan saat menumpang di kapal-kapal mewah. Ternyata tak hanya kaum kompeni saja yang terpukau dengan cara makan serba ramai dan mewah ini. Golongan Chinese pun tertular akan euphoria Rijsttafel. Seperti diketahui bahwa dalam struktur sosial era penjajahan, kaum Tiongkok menjadi perantara antara Belanda dengan pribumi. Selanjutnya Rijsttafel sendiri mulai menyentuh kaum pribumi dan diperkenalkan sebagai salah satu prosesi makan yang unik dari Indonesia.

Need to Know Rijsttafel berasal dari Bahasa Belanda yang berarti meja nasi. Menu yang disajkian bervariasi. Namun pada umumnya terdiri dari nasi goreng, rendang, opor ayam, sate yang dilengkapi dengan kerupuk dan sambal. Ada juga yang dipelngkapi daging asap, ikan dengan berbagai bumbu kari, saus, acar, telor asin, pisang goreng, dan tak ketinggalan sambal ati ayam. Semuanya diberi bumbu cabai. Dengan prosesi makan yang terkesan kaku, melibatkan aksi dan momen formil, tentu saja akan membingungkan bagi para pemula yang ingin merasakan seperti apa menikmati jamuan ala Rijsttafel. Ada beberapa catatan yang masuk dari sisi historis yang menjelaskan perihal aturan makan dan beberapa hal yang mesti diperhatikan. Cara makan Rijsttafel dengan menggunakan sendok dan garpu. Dengan banyaknya pilihan lauk dan pauk, disarankan agar setiap suap nasi yang dimakan dipadu dengan sedikit ayam, ikan ataupun daging. Tujuannya agar para tamu bisa menikmati segala jenis rasa yang ditawarkan. Kombinasi lauk inilah yang menjadi daya tarik dari prosesi Rijsttafel.

Rijsttafel ala Inna Bali Denpasar Berada tepat di titik nol ibukota Denpasar, tepat di Jalan Veteran 3 Denpasar, Inna Bali Denpasar tampil maksimal menawarkan sisi historis dan arsitektur klasik. Hotel bintang tiga ini dibangun pada tahun 1927 dan menjadi hotel berkelas internasional pertama di Bali. Nama besarnya saat itu membuat beberapa tokoh dunia seperti Ratu Elizabeth, Charlie Chapling, Mahatma Gandhi, Jawaharlal Nehru, juga Soekarno pernah merasakan pengalaman menginap di hotel ini. Di samping menawarkan sisi historis yang tak bisa disangkal lagi, hotel ini pun memiliki daya

tarik yang mulai tersingkirkan, yakni prosesi Rijsttafel. Menu Rijsttafel adalah makanan tradisional yang telah ada sejak hotel didirikan. Sengaja tetap dipertahankan karena nilai sejarahnya juga karena prosesinya sendiri begitu unik dan tak biasa. Di Inna Bali Denpasar, Rijsttafel disajikan di atas nampan perunggu. Pada nampan tunggal, akan tersaji berbagai pilihan masakan seperti sate sapi, ayam goreng, gado-gado, sup, tuna goreng, telur, acar, sambal, sambal mentah Bali dan kerupuk. Persiapan Rijsttafel di sini tidak memiliki aturan tetap atau bisa dilakukan sesuai selera, asalkan nampannya tetap mengandung paduan hidangan seperti daging sayuran, nasi dan sambal. Hal


itulah yang sangat penting, karena menjadi ciri khas sebuah hidangan Rijsttafel. Inna Bali Denpasar memfokuskan pada sup dan ayam goreng. Supnya terdiri dari beberapa bahan, seperti wortel, mentimun, bakso dan tuna. Untuk mempersiapkan itu, semua bahan direbus dalam satu wadah dan kemudian ditambahkan dengan rempah-rempah. Aneka bumbu dan rempah yang digunakan biasanya merupakan kombinasi dari bawang putih bubuk yang kemudian tumis sampai tampak ringan cokelat. Setelah itu ditambahkan dengan garam, merica bubuk, dan bumbu. Sementara itu bumbu ayam goreng menggunakan bahan-bahan khusus seperti

bawang merah, bawang putih dan cabai besar. Semua bahan ditumbuk kemudian ditambah sepotong jahe, lima biji ketumbar dan gula merah secukupnya. Kemudian ditumbuk halus. Pada akhirnya, adonan dikukus dan dioleskan ke ayam goreng. Jika semua proses dilakukan sesuai urutan, tentu saja rasa lezat pasti akan terasa pada masakan.
