UAE New Transit Visa Transit passengers across all the UAE airports will soon be able to step out for a quick tour of the cities, rather than wasting their time seating and waiting for their flights. The UAE government announced their plan for transit passengers to enjoy a day out in UAE under new visa policy. Currently, just over 50 select nationalities are eligible to get a visa on arrival at the UAE airports, which means a majority of the passengers waiting for their connecting flights, have no choice but to remain at the airport’s transit lounge. The new policy aims to enhance transit visa procedures to enable stopover passengers to enjoy a day out in the country. Passengers transiting via any of the airports in the country will be able to obtain entry visas.
The Opening of Fairmont Maldives With the opening of Fairmont Maldives Sirru Fen Fushi in April 2018, AccorHotels introduces the Fairmont luxury brand to an area celebrated for its pristine natural beauty. A seasoned hotelier with over 20 years’ experience, Oriol has arrived on the island direct from a four-year tenure as General Manager for JW Marriott Phuket Resort & Spa. Oriol is a multi-lingual Spanish national and a graduate from the prestigious Ecole Hoteliere de Lausanne in Switzerland. With a solid background in hospitality services, he first entered the workplace in 1994 as Assistant Food & Beverage Manager with Hotel Barcelona Sants. He then joined The Ritz-Carlton Hotel Arts in Barcelona before being relocated to The Ritz-Carlton, Dubai. Oriol moved into a more senior role as Hotel Manager for The Ritz-Carlton Hotel Arts, Barcelona Spain in 2003. This was later followed by a succession of appointments as General Manager for leading golf and spa resorts with The Ritz-Carlton brand in the exotic destination of Sintra, Portugal, and Tenerife, Spain. In 2011, Oriol assumed the role of General Manager at The Ritz-Carlton Osaka, Japan, which has the brand’s largest Food & Beverage operation worldwide, including two Michelin-starred restaurants. Throughout his extensive career with The Ritz-Carlton brand, Oriol was instrumental in the opening of four hotels in Puerto Rico, Germany, Turkey and the USA. Upon joining the Marriott brand as General Manager for JW Marriott Phuket Resort & Spa, Oriol successfully repositioned the property as a leading family resort in Asia. At 6.5 million square feet, the two-year-old mall owns bragging rights to being the largest mall in the Emirates – until that is, the underconstruction Dubai Mall opens its doors in 2009 and claims the title of largest mall in the world. Getting Around in Dubai
The work week runs from Sunday to Thursday, with Friday and Saturday being the weekend. The usual business hours are adhered to in most private enterprises, but government buildings may close around 02.30PM each day.

2. Achievement-Based Travel More people are finding themselves planning what the travel trade calls “achievement trips.” In part, it is because; travellers want more out of a trip than a sightseeing tour. In 2018, more travellers will want to take this a step further as they push themselves to achieve lifelong goals by climbing a mountain - and in doing so, discover something new about themselves. One top destination in this category is Nepal. The Indian Himalayas has much to offer; from stunning scenery to the fascinating culture and out-of-thisworld hiking experience. More specifically, the region of Kumaon, in the state of Uttarakhand, has been completely unspoiled by mass tourism, and its remoteness is increasingly becoming a draw. Another remote outpost gaining popularity is Ladakh - often referred to as Little Tibet - a land of snow-capped mountains, vast barren plateaus, and deep turquoise lakes. Adventure travellers will love a trip to conquer Ausangate - the spiritual “Rainbow Mountain” in the Andes of Peru. Still an undiscovered land mainly due to a challenging trek, starting at over 4,000m and reaching an epic 6,372m, travellers walk through unimaginably stunning terrain that changes from vibrant reds to lush greens, and to snow-laden slopes, hence the name of Rainbow Mountain. This is one of the quietest treks available.

3. Sustainability Gets Interesting Sustainability has been a buzzword in the travel industry for a few years, but we are finally seeing the concept go from theoretical to legitimate practice, with luxury properties and operators around the world adopting increasingly interesting practices. Several vineyards have taken to using animals, as opposed to traditional machines, to pick their grapes and fertilise the ground. Kayotei in Japan, as well as Emiliana in Chile and Vergenoegd in South Africa, use ducks for fertilization purposes. Matetic Vineyard - also in Chile and set to open in 2018 - will be letting llamas and chickens roam between the vines, nibbling on the leaves and fertilising the soil as they go. In a bid to use natural materials, sustainability is literally built into the walls; Baines Camp in Botswana was built using a frame of elephant dung and recycled cans. Jacada Travel is investing in a portfolio of community projects aimed to help fight climate change - the result of which means that 100% of the carbon emissions from trips taken with them are offset (including all flights). Although the travel industry still has a long way to go, sustainability is no longer the theoretical concept we saw a few years ago.

4. Remote Luxury – Crowd-free experiences
Luxury is increasingly being associated with remoteness and disconnectivity. Now, there is a new trend of travellers who are looking to get to remote, off-the-beaten-track locations. It's a great way to disconnect from city life and experience nature to its fullest. Lodges and hotels are being built completely off the map, specifically in areas that have poor phone reception and are more challenging to get to. A few of the most popular remote hotels are Hosteria Helsingfors, Calafate Argentina - explicitly built away from the crowds. Annandale, New Zealand: Here, lodges are so remote, you have two options for food: hire a private chef or you can enjoy the 'We Create, You Serve' programme where breakfast, a picnic lunch and three-course dinner are prepared and left in your fridge for you to simply pop in the oven and enjoy. Midgard, Iceland: built as far away from the crowds as possible so that guests can enjoy the Northern Lights without an iota of light pollution around. Hoanib Skeleton Coast, Namibia: Accessible only by chartered flight, deep in the Namibian desert.

5. Zimbabwe and Zambia - The new hot safari destinations While South Africa is typically considered a favourite go-to for safaris, there is an increase in demand for trips to Zambia and Zimbabwe. In the first half of 2017, Jacada Travel booked more trips to Zimbabwe than in all of 2016, and though historically these countries were booked as add-ons to trips to South Africa, people are increasingly opting to go there as a primary destination. Investment in infrastructure in both countries is also on the rise, spanning from airports to national parks. Liuwa Plains National Park in Zambia, for example, was taken over by African Parks in 2003 and has since seen a massive increase in the animal population there (and a decrease in poaching).

ave you noticed that no matter how loud you turn up your iPod, you can’t block out the traffic noise? Does it no longer surprise you when you look up at the sky at night,and the only “stars” you see are massive electronic advertising billboards competing with office lights from all those people working through the night to avoid the traffic?If so, you live in a big city, and probably need to get away from all that metropolitan madness and fly to the Maldives as I did. The Maldives has been on my must-visit list for a while, and I have been doing researches to find the best place to stay, and that is when I came across the perfect location;Hurawalhi Island Resort.Hurawalhi is an enchanting private island surrounded by a beautiful lagoon, excellent house reef, long stretches of white sandy beach and some of the best snorkelling and diving in the Maldives. The resort also boasts a breath-taking undersea restaurant, and it is basically is a piece of heaven on earth. The 40-minute seaplane flight that took me from Velana International Airport offers the most beautiful view I have ever seen. As the seaplane landed, I was even more stunned by the surrounding landscape. All of the colours were so vivid, from the bright blue of the sky and sea to the dazzling white of the beach and the green of the surrounding hills. My city-
weary eyes were overwhelmed. was the perfect ocean hideaway.

I was escorted to my Ocean Villa; the villa is spoiled with lavish comfort, exclusivity,and mesmerizing views. The villa offers privacy and comfort, and it is also generous in size. It features a contemporary design, the epitome of tropical chic with clean lines, earth tone colours and natural building materials which harmonize perfectly with the surrounding lush, landscaped vegetation on this unspoilt island. The best thing about the villa is that it has the ocean on my doorstep. I loved the private sundeck with chaise lounges and the stairs directly into the sea. Although I have to admit, I never used the stairs as I just jumped into the sea. After the staff left me alone, I sat down and was stunned by just how peaceful and quiet everything was. I had forgotten life could be like this. The only thing I heard was the wind, the ocean and the occasional macaque calling in the distance. That evening, I dined at 5.8 Undersea Restaurant which is the world’s largest, all-glass undersea restaurant. I sat at one of the ten tables located 5.8 metres beneath the lagoon where I enjoyed a scrumptious dinner while being entertained by an exciting natural show of fish swimming around the magnificent surrounding coral reef. It was an experience that I would never forget.

The following morning, after a delightful breakfast, I found out that you would never get bored staying at Hurawalhi Island Resort as there are so many activities offered here. For my first sightseeing of the day, I chose to tour The Manta Trust Marine Biology Centre. The Maldives has the world’s largest known population of reef manta rays. The Manta Trust is a well-known UK based, independent nonprofit organization, whose mission is to advance conservation of manta rays and their habitat through science, research, raising awareness and creating influence by providing education. I found the tour very interesting as I learnt a lot about the marine environment and how to help conserve the natural beauty of coral reefs. Back from the tour, I couldn’t wait to enjoy the clear ocean water, so I grabbed a snorkel to explore the beauty of the undersea world, which isliterallylocated just outside my villa. I was greeted by a spectacular array of magical, iridescent and fascinating sea life: green sea turtles, swarming reef fish, clown fish, soft coral, barrel sponges, all surrounded by a myriad of tropical fish. The next day, I spent most of the day just soaking in the beauty of the resort and its beautiful underwater world. After all the activities, I headed to Duniye Spa for some pampering,and it was exactly what I needed. I had one of the best massages ever at the spa, it was so relaxing,and the skilled therapist knowsprecisely how to loose the knots from my muscles. After the massage, I was so relaxed and just had to take a nap; I could not remember the last time I had time for an afternoon nap. After the massage and rest, I felt so energize and

ready for my next adventure, and when on a night handline fishing. The night handline fishing is a true Maldivian fishing tale, it is one of the simplest, yet most effective fishing methods. As the sun bids farewell to the day, we sail on a boat trying on our luck to catch some fish. It was an exciting experience as I have never tried handline fishing before. It takes a lot of patience and skills to fish, I enjoyed the serenity of the ocean at night, enjoying the waves and the sea breeze. We did not catch anything that night, but I didn’t mind. I was happy enough justbeing in the middle of all that great nature and stillness. For my last evening at Hurawalhi Island Resort, I headed to Aquarium Restaurant, this over-thewater restaurant specialising in fresh seafood, prime beef,and variety of Asian cuisines. I opted to seat al fresco and enjoyed my fresh seafood dinner serenaded by the peace of the surrounding lagoon.It was the perfect end to the perfect holiday, and I know that one day I’ll be back. The time I spent at Hurawalhi Island Resort was extraordinary. It gave me the chance to do nothing, simply stop and smell the roses. I spent much of my stay just soaking in all the luxury, just enjoying life to the fullest. It was my first trip ever to Cambodia, and I was excited to explore Siam Reap and more excited to stay at one of the ‘Bensley Collection.’ “First impressions count.” That saying is indeed true when it comes to Shinta Mani Angkor – Bensley Collection. On arrival at Siem Reap’s International airport, I was fast-tracked through immigration and whisked away to the secluded entrance of the villas. Knowing the importance of sleep, Bill created the fluffiest most comfortable beds imaginable in a room that totally blacks out. Royal Cuisine You will never get hungry staying at Shinta Mani Angkor – Bensley Collection. My absolute private restaurant is Kroya which means “food” in Khmer, Shinta Mani’s heritage inspires this unique restaurant. Kroya offers blends international as well as local product, combining fresh ingredients, native herbs and spices to create innovative, palette pleasing flavours. Looking at Kroya’s menu, you do not need to ask what the recommendation is, as every single dish in here is just delicious. The executive chef Reza Kurniawan prepared a simple menu that is full of flavours. During my stay here, I had fun trying on dishes which never once failed me. While dining here, make sure you try the Tiramisu which is the best Tiramisu I have ever had in my life, delicious is an understatement when describing it. I am not an outdoor person, but while dining at Kroya, I love to seat at one of the Khmer swings, enjoying the gentle breeze while savouring my mouth watering food. Curious about Khmer culinary, I tried the authentic taste of traditional cuisine with Kroya’s 7 set Khmer Tasting Menu which follows the seasons and the local harvest. This set menu is very recommended; each dish is simply delicious. It is evident that both presentation and taste play an essential part here at Kroya. Still curious about Khmer food, the next day, Executive Chef Reza took me to a traditional market which is very interesting. So many fresh

meats and seafood are sold here. The market is very vibrant, and I had fun learning about local produce, herbs, and spices that I have never known before. After the trip to the market, we went back to the hotel and its time for my cooking class. A typical meal of traditional Khmer cuisine consists of a soup, salad, fish course, meat dish, vegetables, and rice. So I learnt how to cook mango salad, fish amok, sour beef soup and sticky rice dumplings. The chefs were outstanding at teaching me how to cook that even for someone who very rarely cooks like me found the cooking class very interesting. Once, the dishes were ready, I then eat them for lunch and enjoyed my own Khmer cuisine. Surrender to the Senses The Shinta Mani Spa is a haven of refuge; it is all about pampering yourself and letting your body, mind, and soul be refresh, and rejuvenate. The therapeutic treatments are based on traditional and modern healing rituals to boost concentration and awareness while reducing stress, and helping you to attain the ultimate balance. The spa has a comprehensive menu to choose from; I tried the Shinta Mani Spa Signature Massage, my treatment room is very spacious and cozy. The treatment started with a foot bath ritual, and then I moved to the massage bed. This 90-minute treatment combines a selection of four aromatic body oils, relaxing, detoxification, contouring, and energizing oil. I surrendered
COVER STORY to the skillful hands of my therapist as she used various special techniques to alleviate pain, reduce discomfort and promote relaxation. The massage was so good that I did something that a journalist isn’t supposed to do during a spa treatment, I fell asleep. With every stroke, my mind drifted into the utter sense of relaxation, the next thing I realized was when the therapist asked me to lay on my back. I don’t know about you, but I usually feel hungry after a spa treatment, so the fresh spring roll that my therapist served with the tea made me happy. I have never felt so relaxed after a treatment. So I decided to book another treatment for the next day. And this time I chose the Traditional Khmer Massage.
The next day, I went back to the spa and so eager for my massage. The Traditional Khmer Massage is an ancient Khmer art of healing that involves applying gentle finger pressure to the body, to reduce the tension in the tired muscle and promotes general well-being. This massage is a little bit stronger than the previous one which is perfect for me as I was so tired and some of my muscles were stiff. A stay at Shinta Mani Angkor – Bensley Collection is not complete without a relaxing and pampering time at The Shinta Mani Spa. At Your Service One of the things that stood out during my stay was the excellent service of the Bensley Butlers. During my stay, I was well taken care of by the

same butler, Peter. Peter was on hand to cater to my every need. No detail was overlooked, and no request was too much trouble to ensure that I had the most pleasant and memorable stay of my lives. From unpacking my luggage to putting on the movie, Peter takes care of every detail. I literarily didn't have to lift a finger. I’ve been in lots of resorts and villas with butler service, but I have never experienced the level of service offered at Shinta Mani Angkor – Bensley Collection. While most butlers are there to cater to your needs, the butlers at Shinta Mani Angkor – Bensley Collection are there to anticipate your needs. During my stay, I did not need to ask for anything, as everything had already been provided. It was almost like Peter could read my minds. The night before we went to Angkor Wat, Peter informed me to have a rather heavy breakfast as I had to walk a lot and need all the energy. It was a hot day when we explored Angkor Wat, I forgot to bring my hat, and he bought me a hat. In one of the spots, we had to climb up steep stairs and wearing hats was not allowed, Peter held my hat and drink so I could climb up more easily. The service here is undoubtedly without peer, and the unexpected personalised touches make Shinta Mani Angkor – Bensley Collection stand out.

Suffice it to say; I had a super time at Shinta Mani Angkor – Bensley Collection. The experience far exceeded all my expectations. The villa, the food, the spa and the service were all spectacular. Open Doors, Open Hearts The best part of staying at Shinta Mani Angkor – Bensley Collection is that we are giving back to the local community. A portion of the daily room rate is donated to the non-profit Shinta Mani Foundation created by the owner, to support health, education and development programmes for the less fortunate in the community. The Shinta Mani Foundation is guided by his philosophy of Open Doors, Open Hearts. Shinta Mani’s community activities began in 2004 with the opening of the Shinta Mani Hotel and Institute of Hospitality on the grounds of Shinta Mani Angkor, a boutique hotel owned by Mr. Sokoun. This innovative program, which received international recognition for its efforts, trained underprivileged Cambodians in aspects of worldclass hotel operations on a free of charge basisproviding them the skills to secure employment and a brighter future. This successful blend of non-profit work alongside the hotel’s award-winning for-profit operations attracted such interest and support that by 2006
Shinta Mani began to explore other ways to give back to the community. They did this by engaging in community development programs targeting rural families. Shinta Mani sought to empower these families through basic assistance in education and livelihood assistance such as home building, water wells, and toilets. Bali was my first love, which I fell in love with when I was still a teenager, and my second love is “Bulgari.” Johnny Depp said, “If you love two people at the same time, choose the second. You will love both. And this time I was eager to rekindle my love for Bulgari. Time to catch the magical Balinese sunset: I headed to a sophisticated and comfortable venue, “The Bar,” which overlooks a stretch of the island’s spectacular cliffs and the Indian Ocean. The curved bar counter in a black resin is modeled after that of the Bulgari hotel bar in Milan, while its main element is a massive stone, sculpted entirely by the forces of nature. The menu offers a refined selection of cocktails, good quality wines, canapés and snacks, all in keeping with the Italian tradition of the Aperitivo. The Bulgari Sangria with chilled red wine, cognac, and triple sec, chopped mixed fruits and sprites are the best things I had at The Bar. After a good night’s sleep, I woke up feeling refreshed and ready for the beach. The pristine white-sand beach located at the foot of the cliff is inaccessible both by land and sea thanks to its protective coral reef. An inclined elevator took me down and then I walked down some stairs to the sand. It was a stunning view of the whitest sand beautifully contrasted against the bluest water. The atmosphere was absolutely serene and divine. All I could hear was the sound of the waves lapping at the shore and the songs of birds flying overhead. I walked on the beach and along the coral reef, home to an amazing array of brightly coloured fish. Everything was so beautiful, just like a true island paradise. I am not the kind of man who loves spas, but a close female friend of mine has always told me about how good the Bulgari Spa is. For me, men aren’t men enough for pedicure, manicure or facial. The spa is no longer pink and floral,

or jasmine and rose-smelling. Even a guy like me could not resist the temptation to be totally spoiled and pampered Bulgari-style. I choose to have a men’s facial and Balinese massage with hot stone treatment. The facial was exactly what I needed after spending almost all my time here on the sand and enjoying Bali and Bulgari at its best. I could feel that my skin was immediately moisturized after the treatment. But what I loved the most was the massage. Warm stones were used in combination with aromatic oils to rehydrate the skin. It felt as if the warm stones stroked away all the tired muscles and tension on my nerves, relaxing both mind and body. The spa room is located on the ocean edge, and just as I enjoyed the treatment, I could feel the sea breeze, enjoying the aroma of the fresh air: Pure bliss … The time I spent at Bulgari Resort Bali was extremely special. It gave me the chance to do nothing but enjoy life. I spent most of my time just soaking it all in; it was exactly during those moments that I was able to realize how precious life is. t had been a very trying time for me with back-to-back business trips and never-ending deadlines. I was feeling a bit worn down and in need of some relaxation and serious pampering Plus, it had been a while since I had a good spa treatment and I was feeling withdrawal pains. Being a spa addict, I’m always on the lookout for new sensations and experiences. To be honest, although there are plenty of spas around, I only like a precious few, one of which is Raffles Spa. Located on the 14th floor of Raffles Jakarta, the Raffles Spa is a sanctuary for the senses. The smell of aromatherapy throughout the spa provides a soothing sensation for the mind. Although it is located right in the middle of a busy metropolis, the moment I stepped in to the spa, it felt like I was in a different world, one where time stood still. Browsing through the spa menu, I was impressed by the extensive range of offerings suited for both men and women. Naturally, only the finest products are used at the Raffles Spa. The treatments are not the only thing that you must try at Raffles Spa. Make sure to come at least 30 minutes early prior to your treatment to experience Hydrotherapy wellness, from humid aromatic heat at the stream room to a unique variety of multi temperature water sequences, combined with soothing warm and cold jets to relax the body at experience showers. My personal favourite is the ice fountain, after being exposed to a warm environment, crushed ice were applied to the limbs to selectively cool the body, the ice were soft and looked very tempting similar to a snow cone that I almost ate them.

I
cannot remember the last time; a restaurant has taken my breath away and left me speechless until I been to Henshin.
Henshin is situated on the top three floors of The Westin Jakarta, from the 67th until the 69th floor, which means that this restaurant is set apart from others with an unobstructed view of the beautiful city of Jakarta. But there is so much more to love about Henshin than the breathtaking view. The food is one aspect of Henshin that makes me think of it as one of (if not) the best restaurants in Jakarta. To simplify it, the food in Henshin is fantastic. Helmed by Chef Hajime Kasuga, a descendant of Japan and a thirdgeneration Nikkei residing in Peru, Henshin serves a distinguished Nikkei Cuisine. Chef Hajime is a promoter of the Nikkei cuisine and is excited to bring the fusion to Jakarta with his team from Latin America. Hajime is an expert when it comes to food, and having been to Henshin numerous times, I have learnt that you cannot go wrong when it comes to choosing from the menu. No matter your choice, it will taste delicious. Some of my personal favourites include Pulpo al Olivo, Edamame Spicy Nikkei, Hajime Platter, Cama, and Arroz con Pato. Focusing on serving an infallible and remarkable Dining, Lounge and Music experience, on the 67th floor, you will be greeted with a lively ambience, decorated with colourful tiles with a traditional pattern and natural stones adorning the bar area. On this level, you can choose to refresh and relax on either the indoor or alfresco bar and lounge area that can accommodate 90 people. With signature music from Henshin’s in-house DJs in the background, guests can enjoy unique Ceviches or Tiraditos and the freshest

sushi and sashimi paired with the best-crafted cocktails made by the restaurant’s mixologist. Stepping up to the 68th and 69th floor you will find the fine-dining area that offers an open kitchen concept that lets the chef connect with each guest for an intimate dining experience. You can opt for cold, hot appetizers before enjoying the wide selection of mouthwatering main courses such as Ceviche Clasico – a marinated fish in lemon and Peruvian chili – and the signature Henshin Roll that combines foie gras, fried shrimp and spicy crab meat roll with unagi and avocado served with sweet and indonikkei sambal.

The resort’s award-winning amenities include gymnasium, main infinity pool, library and meeting facilities, 24-hour reception and invilladining, destination restaurant Di Mare, and a post-modern pavilion serving Mediterranean cuisine with pan-pacific twists with Temple Lounge above. Karma Beach Club is exclusive, though unchecked-in guests are also welcome. Access to the beach club is by a hill tram that traverses 85 meters offthe cliff face. Visitors can relax in the whimsical, cozy environs of a curvilinear bamboo pavilion complete with bar, kitchen, wood-fired pizza oven and lounge seating, which extends to the beach itself. Karma Beach Bali is open for beach picnics, as well as beach activities and water sports. The drive to the Beach club was winding and scenic, and we wondered which village we were heeded to, but a sharp left turn revealed a whole new world. Upon arriving, we walked into the Di Mare Restaurant which presented an unending view of the blue Indian Ocean. We spent a few minutes in a waiting area for the tram to return to the top and take us down to the beach. The waiting area is an overhanging patio the offered a full panoramic view of the

Club and the Beach. It was simply exhilarating, andthe tram ride down to the beach felt like a levitating decent unto the beach. The hill tram was fantastic, a bit scary, but at the same time fun, and the kids loved it. The polite Tram operator hands you over the waiting smiles of the team at the “Beach Club” and unto your reserved seating; hut. We were greeted by the friendly Food and Beverage Director, who welcomed us with the smile of “The Rock” (Dwayne Jonhson). The Menu offered uniquely-Karma Beach options of plethora of irresistible gastronomic delights.Lots of Sea Foods, drinks, Pizzas and many more that catered to the appetite adults as well as those of children. There was something good for each member of the family. The kids couldn’t wait to get in the water, so we quickly ordered them some delicious and cheesy Cheese Pizzas while we spent a few more minutes figuring out ours. We got some Crispy Squids, Tomatoes, and Buratta Cheese for,starters, and the “Vanilla Passion” was a cocktail to remember. The infusion of all three items was spectacular. We enjoyed it. The Main Course was the “Mykonos Platter” served with salads. It was rich in Grilled squid, Meatballs, Mashed Potatoes, Pita bread and three choices of dips. For Dessert, we had the sizzling Chocolate Brownies with ice-cream. And we ordered the Balinese fruit platter as we went down to our sunbeds.

We headed to the Beach to join the kids who were having a full fun time, playing in the sand, building sand castles, and swimming in the ocean. What I loved the most was the cleanliness of the beach sand. The water is so clear that one could pick up shells and sea rocks.The height and frequency of the tides were just perfect, creating just the right volume of waves for guests (kids and adults alike) to paddle on their surfboards and bathe the salty ocean swell. ogyakarta is one of the favorite places to visit in Indonesia, both by domestic and foreign tourists. Not only offering interesting sights, but this cultural city is also famous as a culinary destination which offers a wide range of food, each with its own distinctive taste. Some dishes are unique, and they represent the character of Yogyakarta’s cuisine; those dishes include Gudeg, Bakpia, Sate Kere, Sate Klathak, Bakmi Jowo and Nasi kucing. One of the set menus is Nasi Kucing – a small portion of rice usually with toppings and wrapped in banana leaves. Nasi Kucing can be easily found in Angkringan. Angkringan comes from the Javanese word of “Angkring” which means sit down, Angkringan used to be a pushcart that sells a variety of traditional food and beverages on roads in Central Java and Yogyakarta. Now, Angkringan is very popular in Yogyakarta; it usually has a traditional setting and a very comfortable place where you can

spend a good time with your family and friends while enjoying a wide range of dishes. All the dishes are served in small portions usually a bite (or two) size. The aim is so you can try as many dishes as you want. There are so many Angkringan in Yogyakarta, but I recommend trying Angkringan Gadjah. Although the impression of traditional is very strong in this place, it is also following the trend, and making this place very instagramable. Some spots will make your Instagram the envy of your friends. Some of the most popular spots here include a collection of colorful ancient windows and walls with murals depicting the city of Yogyakarta inside the restaurant. A special discount is also available to guests who upload their photos to their social media while in Angkringan Gadjah. You will never get bored dining here at Angkringan Gadjah. Why? 1. Unique Variety of Tastes There is a wide range of flavours available at Ademuy Gelato; you can choose from up to 24 different flavours available. What I like the most about the flavours is that some of them are truly Indonesian flavours such as Es Teller and Salak. harmawangsa’s Jakarta Restaurant never ceases to amaze guest by offering experiences that can hardly be matched by others. The team at Dhamawangsa Jakarta informed us of the latest dining experience “Friday Barbecue” where a wide selection of barbecue favourites are served alongside the restaurants signature buffet menus, and we just had to go for it. Upon entering the restaurant, we were welcomed by a row of neatly placed traditional–and some even hard to find—Indonesian snacks, sweets, and candied fruits —a row of mouthwatering salads —various flavoured ice cream. We opted to dine at the courtyard area, an open-air setting surrounding a water fountain where diners can enjoy their food in a relaxed atmosphere and nicely lit surrounding of Dharmawangsa’s lush greenery. In the background was the sound of relaxing live musical performance to keep you entertained while enjoying a splendid barbecue buffet spread. After scooping around the displayed fresh meat and fresh seafood selection at the live grill station, we decided on some chicken

breast, red snapper, lobsters, a couple of the impressive looking tenderloin and the organic lamb chops, and informed the servers of our choice. The delicious roasts were prepared à la minute by the esteemed culinary team and were served directly to our table. I must say the seafood was tender and the beef tenderloin and lamb chops were cooked perfectly to our taste. There are also a few of the sate selections which includes sate padang, sate kambing, and sate maranggi or beef satay. After with our main course, we still had little room for some dessert, so we had to try the homemade ice cream. I found the wasabi ice cream to be exceptionally luscious. I will suggest leaving more room to enjoy the wide selection of desserts; blueberry, cherry, and apple pies, mini Crème brulee, strawberry pavlova, and more. Can you tell us a little bit about your role as Executive Assistant Manager of Food & Beverages? I am in charge of the entire F&B Division including all the Restaurants, Bars, Kitchen, Banqueting and many more. I have a fantastic team of over 230 hardworking souls, who everyday welcome and serve our guests with a smile.
How long have you been working in the hospitality industry? As my parents used to have a Restaurant, I was basically born in the Hospitality, so just over 36 years. I joined the hospitality industry because I love the rush that you get when you have completed a 200+ a’la carte service with no complaints, and you know that you will get it right again the next day, while at the same time the entire team works like a Swiss watch. My father has impacted me the most in my career. As long as I can remember, he used to get up at 06.00am to prepare the Breakfast in the Kitchen and was working until closing time, which most days are after 01.00am. His consistency and the fact that he never complained about the little time off he had had truly inspired me. My passion for food started at a very early age when I used to help my dad in the kitchen and later I started my apprenticeship to become a professional Chef. And one day, I hope to open my own restaurant, it is on my bucket list. The problem is, I haven’t found the perfect place for my restaurant yet.
I
first met Severin Huerlimann a few years ago. I remember very well how I was so bored of staying from one hotel to another and thought that nothing could impress me anymore, until one day I checked in at the hotel where he was the executive chef, and he presented me with the best and most memorable welcome sweets ever. Ever since that day I knew that Severin is a man who thinks outside the box, a very creative man who takes food to a whole new level. Severin is now the Executive Assistant Manager of Food & Beverages of Gran Meliá Jakarta, and I sat down with him to learn more about his passion for food and his success story.

What has been your biggest achievement? I have been able to travel and work in many different countries, meet amazing people and learn so much from their culture.
What does success mean to you? How you judge it? Success for me is how each of us feels. Success should not be based on Position, Salary, Status, etc. It should be focused on what inner peace that you have. True happiness for me is the biggest Success. The key reasons for my success is having a balanced life besides the long work hours and a having very understanding wife by my side. Without her, I could not have achieved and got to where I am today.

The unique characteristic that always resonates with me is that there is always an opportunity to experience more and row in this wide-industry. As part of a luxury industry with worldwide spending of US$980B and still rising, I derive motivation from my natural curiosity – challenge the status quo and never rest on your laurels. Never follow a trend; do the best to be the leader. Imitation is the best compliment.
What would you be doing if you were not in the hospitality industry? Honestly, that is a tough question. Hospitality is in my blood and has been in my family for generations. Whether I was an accountant or winemaker, I am certain that I would remain connected to hospitality – with no exceptions.

A Singapore National University graduate, Shu Ping started her career at Ogilvy & Mather Advertising in Singapore, China and Hong Kong offices, developing integrated marketing campaigns for leading global companies in the telecommunication, airline and hospitality industries across the region.

Traditional Thai massage is a unique form of Bodywork that incorporates Hatha Yoga, Acupressure and Reflexology with origins dating back about 2500 years. In Thailand, many agricultural people teach their children massage skills they learned from their parents, in this way Thai massage is passed down as an oral tradition. Thai massage blends styles from Asian neighbours passes through generations. The Thai method uses point pressure, muscle stretching

and compression, done in a rhythmic movement of gentle rocking. In Thai massage, it is not just the hands that are used to free tension from the recipient’s body, but also the feet, forearms, knees and elbows. Thai massage is applied on a mat on the floor, the work is done fully clothed and no oils are required. The massage was very good, and truly recommended especially for weary business travellers, or simply after a busy day shopping. I have to say that the highlight of this trip was definitely the food. Bangkok Marriott Marquis Queen’s Park offers a strikingly diverse selection of exciting dining venues. It offers a choice of restaurants and bars for every palate. I know that Thailand is famous as a culinary destination, but staying at the hotel, you do not need to step out of the hotel to enjoy wide range of international delicacies.

Unlike ordinary business hotels, The Quincy Hotel is very vibrant and playful. The moment I set foot on the lobby I loved the hotel. The lobby was very colourful with unique little touches. The star of the attraction was definitely the dog head shaped pillows on the sofas, that looked like real dogs when you take pictures with the right angle. Every inch of the hotel was worthy of a social media post. The Quincy Hotel is a stylish multi-award winning 108-room boutique hotel. Strategically located in central Singapore at Mount Elizabeth, the hotel is just a five-minute walk away from Orchard Road shopping belt and a 10-minute drive to Central Business District. The Quincy Hotel is the first hotel in Singapore to feature keycard-only access, offering guests an unprecedented level of security and privacy. Like me, you can opt for the hotel’s signature AllClub Benefits, a full-board package that includes a premium king-sized bed draped with feather beddings and 400-thread count sheets, that ensured I had a good night sleep while staying there, complimentary all-day light refreshments, and a complimentary mini bar. The bed was irresistibly comfortable, the view from my bay window seat was absolutely gorgeous, and the room was impeccably designed. All of these ensuring that you have everything you need for a relaxing and pleasurable stay.
At Quincy’s you not only get an impeccably designed room, pampering stay experience and excellent service but you also get to sink in the fragrance of Le Labo’s Santal 33 collection of bath and body amenities. It is the first hotel in Singapore and second in Asia to carry this collection of luxurious bath and body amenities. The Lobby, offers all-day light refreshments between 2.00PM to 6.00PM daily. One of the most beautiful parts of the hotel was definitely the hotel’s glass-enclosed infinity pool which is located on the 12th floor, where you can swim while enjoying a spectacular view of the city. The colour-changing LED lights that illuminate the pool in the evenings are set to mesmerize guests. The hotel also has movie nights, where you can watch a movie al fresco with the view of the city in the background. Staying at The Quincy Hotel was an unforgettable experience, I love the little touches that make such a huge difference in this hotel. I love the fact that this hotel is very unique, playful and vibrant, unlike most boring business hotels. For a truly unique experience, you have to stay at The Quincy Hotel.

Rendezvous Hotel Singapore is housed in a restored colonial building and is inspired by its locale’s vibrant energy and character.
