Walking in the Highland Glens Scotland is famous the world over for its beauty, its friendly welcome and the excellent golf and whisky. On his latest journey Max Kalff, explored the less-exposed part of the land and found some well preserved hidden treasures, beyond the dramatic landscape of the green highlands. Text by Max Kalff

“

What are you doing in Scotland? my travel mate asked when I was enjoying a night-cap and trying to get comfortable on my flight from Singapore to Frankfurt. Yes, not many people, even for this German businessman is aware that Scotland offers more than bagpipes, good whisky and haggish. His question brought me back to another experience when I was attending a private dinner, where one of best Scotland whisky producer introduced its new bottle. The pictures of the highland inspired me to get intimate with it and brought me where I was confronted with such question.

Starring beyond the Granite City Everything I saw since landing in Aberdeen Airport was so worth it, that I was thinking I should take the simple way to reach Scotland instead, through Frankfurt and continued with two flights to reach my destination. Firstly I would like to stay in Aberdeen before strolling around the countryside, but my chauffeur suggested to stay in a country house so that I can experience Scotland with the locals. When I was driving out of Aberdeen, known as Granite City, I saw that the city is supported with a cosmopolitan offerings in terms of entertainments, hotels, business centres and others. The historical buildings also tempted my curiosity but I had to continue my journey. I found that it was a good idea travelling in the winter afternoon ambiance to the deep of Scotland which gives a personal welcome through the jaw dropping highland scenery.

The route through the Scottish pastoral showed the finest agricultural land in the country. Mike, the chauffeur, explained that the trail I was taking from Aberdeen to Edinburg offers only a piece of the whole beauty of Scotland hinterland. He told me that I was lucky to have short visit to Balmoral Castle in my itinerary and also a visit to Lochnagar Distillery, one of the best in the country, would be a wonderful experience for me. I responded by saying I cannot wait to experience it myself. Eventually I found out that I was not staying in a country house as I thought; but instead, a low ceiling stonewall house with chaff roof, it was a Victorian castle complete with a small path way among the trees and a dramatic appearance when my car turned the corner.

Kincardine Estate is a traditional country estate, which is also the Laird's family home and acknowledged as one of Scotland's finest Victorian Castles. Kincardine sits in 3,000 acres of beautiful country estate overlooking the spectacular scenery in the heart of Royal Deeside in Aberdeenshire. The estate carries out a wide range of activities besides farming, forestry, fishing and shooting. The owner stressed that Kincardine try to maintain the atmosphere of a private family home, not a hotel. It does need a minimum number to make a house party concept work though and they are only accepting bookings from groups of six or more. When I realised that I was welcomed as the only one family’s guest, I knew how lucky I am.

Paradise in the Highland My stay in Kincardine Castle enriched my experience about Scottish people. The family informed me that my journey to Edinburg will pass Balmoral Castle and the Royal Lochnagar Distillery. All may execute in a full day tour. First of all I drove down the villages passing through the legendary Dee River to Balmoral. There lies the magnificent valley of the River Dee. Rising high in the Cairngorm Mountains and running east to its mouth at Aberdeen the river flows through some of Scotland's finest scenery. Midway, in the shadow of Lochnagar mountain, lies Balmoral Castle, holiday home of the British Royal family. The existence of the Estate was first recorded in the 1480's, but it only became a royal residence in 1852 when Queen Victoria and her husband, Prince Albert visited the Scottish Highlands, where they fell in love with the scenery and people and decided to buy a home there for private holiday periods. The Estate covers about 20,000 hectares (just over 50,000 acres) acres of heather clad hills, ancient Caledonian woodland, policies and of course the beautiful River Dee is nearby. Over the past 150 years careful stewardship by the owners, The Royal Family, has preserved the wildlife, scenery and architecture which is available for all generations to enjoy. In her journals Queen Victoria described Balmoral as "my dear paradise in the Highlands" - we hope

you will feel the same way about Balmoral once you have visited this most special place. I was allowed to make a short tour around the estate through the legendary Caledonian woodland. Here, my tour guide explained that some of the wood has been preserved and processed to be one of significant element to transform in to a wooden cabinet containing special decanter, which will be presented to the Queen in her 60 years jubilee. Having been questioned about the event, the tour guide informed me that I would get my answer in my next itinerary, which is the Royal Lochnagar Distillery.

The Elixir of Life The distillery really raised my curiosity and to my surprise it is the processing venue for the legendary Johnnie Walker which flashed me back in a blitz on the occasion I experienced in Rumah Imam Bonjol Jakarta. Now I can enjoy this liquid of heaven right from its cask. Royal Lochnagar distillery is situated on the south side of the River Dee close to Balmoral Castle. Age old traditions and craftmanship produce one of Scotland's most exclusive whiskies. During my tour, I was informed that the distillery is the place where the nucleus of big event that will happen in Queen diamond jubilee in 2012 preserved. To mark The Queen’s Diamond Jubilee in 2012, John Walker & Sons, Scotch Whisky Distillers By Appointment to Her Majesty The Queen, has created Diamond Jubilee Blended Scotch Whisky by John Walker & Sons, a unique blend of grain and malt whiskies all distilled in and maturing since 1952, finished in a marrying cask of English oak from The Queen’s Sandringham Estate. Resting at Royal Lochnagar Distillery, on the edge of The Queen’s Balmoral Estate, the marrying casks will be observed closely through this traditional finishing process, which allows the flavours to combine gradually, before bottling on 6 February 2012, 60 years to the day since The Queen acceded to the throne. The story of this huge project did not end in the distillery since it involved parties from other element like Baccarat crystal and silver stopper hand made by premium slivery smith, Hamilton & Inches, based in Edinburgh.

3600 City of the Royal Crown I asked Mike to take me to Hamilton and Inches to pay my curiosity about the decanter that the Scots prepared for their Queen’s 60th Jubilee. Speechless. That is my comment when one asked about this beautiful city. Entering the city, passing through the well preserved antique stone walled buildings just put me in the twilight of time when this city was firstly built as capital of Scotland Kingdom. Hamilton & Inches, Silversmiths By Appointment to Her Majesty The Queen, is Scotland’s leading jeweller and silversmith, independently owned and highly individual. The company has run its own silver workshops, almost the last of their kind, in the heart of Edinburgh since 1866. The Hamilton & Inches craftsmen will fashion a silver collar set with a half-carat diamond for each decanter, as well as a John Walker & Sons Royal Warrant, entwined JW&S monogram and a numbered seal to adorn the crystal. The Britannia silver, chosen for its purity, will bear the Diamond Jubilee hallmark. With streets steeped in history and a thriving cultural scene, the City of Edinburgh offers the perfect balance between all things traditional and contemporary. The city combines the medieval Old Town, the Georgian New Town and award winning modern architecture. Explore Edinburgh at my own leisure; I saw

views that make for perfect picture postcards, mysterious winding streets, elegant terraces and an abundance of shops, bars and restaurants. Edinburgh is a compact city - most of the sights and major tourist attractions are within the Old Town and New Town and are no further than a 15 minute walk apart. Walking along elegant or atmospheric streets is one of the pleasures of the city. There are however, a number of hills to be navigated; for example from Princes Street, up The Mound towards Edinburgh Castle requires some significant legwork, but it's worth it for the views en route. Royal Miles leading to Edinburgh Castle is the city most active street in the city, where not only souvenirs shops and best scenery but also historical spots indulge your eyes. The closes, or narrow alley from below part of city’s hill is here and there at the right side of Royal Miles. Now, the houses in the closes are occupied by students and the city inhabitants. Edinburgh's close proximity to England, and its multicultural, sophisticated population set it apart. Its vibrant pub and club scene, its college population combined with the ever-growing Edinburgh International Festival and action packed list of cultural events, make this a city that is truly.

Romantic Picnic in Paris When it’s warm, there's nothing more romantic than a lovers' picnic in one of Paris' beautiful parks. Text and Photography by Andy Sachs

P

aris and romance — the two go hand in hand. And, hand in hand, couples sit on blankets spread on the grass as they gaze into each other’s eyes with the sun setting over the Seine and the 20,000 bulbs lighting up the Eiffel Tower. Paris is one of the most romantic cities in the world, if not the most romantic, and it abounds in places to snuggle and smooch with your sweetheart. With over a quarter of the total area of the city dedicated to parks, gardens and woods, Paris is the greenest city in Europe. There are over 400 public green spaces within Paris, any of which can be a good spot for a romantic picnic. Enjoying a romantic meal in Paris need not be as expensive as say, dining at the Ritz or Le Jules Vernes. Far from being a date option for

48

MAXX-M

lovers on tight budget, a picnic can be just as unforgettable and romantic as a meal in a finedining restaurant and for a fraction of the cost. It’s the best way to take in the city without feeling like a tourist. Parisians skip restaurants to sip wine, eat baguette and cheese in a picnic. Drinking a glass of wine with someone special is always romantic but things can get even more so as couples enjoy the long evenings sitting under the stars, listening to music, playing the guitar or watching the sun go down and the Eiffel lighting up. Here’s how to put together a romantic picnic and score big points with your date. No culinary skills required: I bet you just let out a sigh of relief! Cheese and wine picnics aren’t meant to be fussy. All you need are the basics: baguette, wine and cheese.

3600

Shopping for Love In Paris, you will likely find a nearby street market quite easily. Almost every neighbourhood has a street market with a bakery, meat, cheese and wine shops, grocery, pastry shop and a chocolate or confectionery shop. Shopping in a local market is by far the best place to find French produce and cheese of excellent quality. Follow the Parisian tradition and shop like a local for your picnic needs while absorbing a slice of Parisian life.

Love Triangle In the triumvirate of picnic essentials, the first essential is bread. The image of a Frenchman with a baguette under his arm shows just how the French love their bread. They consume 10 billion baguettes annually! The bread is an institution in France and its price is regulated.

2019

3600

In residential neighbourhoods, you’ll find a bakery or a pastry shop on every street corner. Choosing where to buy baguette may be confusing. The long queue should help you single out the best boulangerie in town. If you find the word “artisan” on the bakery store, it means that the bread is made within the premises and not brought in from bakeries in the suburbs. The best baguette is called “baguette de tradition.” Baguettes are usually made from flour, water, yeast, sea salt and the remains of the previous batch of dough, known as the “starter.” The result is a mammoth crust protecting a tangysour centre that you can tear into long filaments.

The classic baguette is always a winning ingredient for sandwich-making. For ready-togo sandwiches, you could purchase a sandwich made with a crusty baguette and a slice of meat and cheese. If you want to skip meat, you may spread salted butter or jam instead.

Cheesy Romantic Next on the picnic shopping list is the cheese. France produces almost 400 different varieties of cheese, more than any other country has to offer. This wide selection includes cheeses made from cow’s, ewe’s or goat’s milk, or in combination. From cheeses rind-washed in beer, to creamy Camembert, to Roquefort, to disks of goat’s

ripened cheeses, Brie. Each region’s speciality is made according to centuries-old tradition.

Fine Wine Find Romance When you think of a romantic picnic, do you visualize yourself sharing a large pitcher of beer with your sweetheart? If yes, it is imperative you read on. Wine plays a supporting role in romance. Wine earns romantic merits not only for its taste but for the atmosphere it creates. When you bring along two wine glasses and a bottle of wine, you will inevitably uncork romance. Wine has a way of heightening the sense of passion and emotion.

cheese and brandy-soaked epoisses. Need I continue? France is a paradise for cheese lovers. One can get confused when confronted with the uncountable designations of cheese. With such a long list of cheese to choose from of varying shapes, sizes and tastes even Ratatouille would find it hard to choose. French cheeses have the Protected Designation of Origin, a European Union designation for all the well-established cheeses. Each region has its speciality: Normandy is famous for Camembert; the Loire Valley and Provence for goat’s milk cheeses; the Alpine region for Reblochon and Beaumont; the Paris area for the king of soft-

France is one of the oldest wine-producing countries in Europe. Like cheese, each region has its specialty. The wine regions in France are Alsace, Beaujolais, Bergerac, Bordeaux, Bourgogne, Champagne, Jura, the Loire Valley, Rhone Valley and the Languedoc-Roussillon region. There is a strong relationship between food and wine in France, which explains why some of the best French recipes include wine as an ingredient. There are laws to reduce public drinking in Paris but they are very selectively enforced. While it’s illegal to have an open bottle of any alcoholic beverage in a public park, you may not be reprimanded unless you are clearly drunk or publicly offensive. 2019

Lifetime Partners When it comes to pairing wine and cheese, there are guidelines on what wine pairs well with what cheese. But it all boils down to personal taste — your choice of what goes well together. Consider your personal preferences and that of your date. Pick the cheese and wine that you will both enjoy.

Sweet Ending Indulge in chocolate or a sweet treat to finish off your picnic. The Aztec and Mayan people recognized the aphrodisiac powers of chocolate. The Aztec emperor, Montezuma, drank 50 cups of chocolate a day to enhance his sexual ability. You can purchase some dark delights in one of the city’s legendary chocolate shops. A dark and strong chocolate is great to serve at a wine and cheese picnic. For couples looking for new and exciting things they can do together, having a picnic can be very romantic. But don’t take my word for it. Try it yourself and you might find yourselves spending time cuddled up on a picnic blanket. Enjoy your romantic picnic in Paris. Bon appetit!

The Grand Valley As I stepped into this celebrated valley, I was awestruck by its majestic beauty. A string of soaring mountains looming over a wall of forest, a winding river and tranquil creeks tucked away among emerald fields of sweet potatoes, all dancing beneath the serene blue sky … what a sight to behold! Text and Photography by Nanny Budiman

L

ocated near Wamena, in West Papua, the easternmost island of Indonesia, Baliem Valley is a mythical destination of otherworldly beauty that promises unbelievable rewards for those willing to make the trek. Intrigued, I recently decided to visit. Two friends and I took a flight from Jakarta to Jayapura, the capital of Papua province. From there it was a 45-minute flight to Wamena airport. Our guide whisked us to our hotel, the Baliem Palimo. This is considered the best hotel in Wamena and is functional, but it clearly doesn’t live up to the standards of luxury hotels in Jakarta or Bali. But it is centrally located in downtown Wamena, near several good restaurants and minutes from Jalan Irian, Wamena’s main shopping street, making the hotel a favourite with tourists and visiting Indonesian officials. After checking in, we crossed the street to Blambangan restaurant. Ibu Dewi, the chef and owner, who is originally from Banyuwangi, East Java, greeted us and suggested we try a traditional Wamena delicacy — udang selingkuh, or cheating prawns. The name comes from the unique shape of this Baliem River prawn, which has the body of a prawn by the claws of a crab. Its succulent meat, mixed with Ibu Dewi’s special seasoning and sambal, made this a dish to die for. For the rest of our stay in the valley, we could not resist savouring a plate of the prawns each and every night, cholesterol be damned.

Wamena, which literally means “tamed pig” in the local tribal language, is the capital of Jayawijaya regency. The name is appropriate as pigs are considered the most valuable possession for members of the valley’s tribes. The city lies in the heart of Baliem Valley, and is the gateway for exploring the secluded valley and its tribes’ unique way of life. But be warned, never venture into the valley on your own. There are no trekking maps or signs, making it very easy to get lost, which you really don’t want to do. So always hire a guide. News of this Eden-like valley was first reported to the outside world in 1938 by Richard Archbold, an American philanthropist and passionate explorer. Christian missionaries were soon descending on the area, but were met with much resistance and many were killed. It was some time before tribe members stopped regarding these outsiders with suspicion. But despite the arrival of these missionaries, to this day some of the tribes’ ancient animistic rituals and traditions continue to be practiced.

Situated at 1,600 metres above sea level, the isolated Baliem Valley is surrounded by the soaring peaks of Mount Puncak Jaya (4,884 metres), Mount Trikora (4,750 metres) and Mount Mandala (4,700 metres). Because of these mountain guards, access to the valley is by air only. This helps maintain the area’s exotic sense of isolation, but it also helps explain just why food and other supplies in the valley are so pricey. Baliem Valley has three main tribes: the Dani, Yali and Lani. While the Danis live in the basin of the valley, most of the Yalis inhabit the southeast of the valley and the Lanis live in the west. The tribes have managed to hold onto some of their traditions in the face of modernization’s onslaught, and visitors can still get glimpses of what life may have been like for them before the valley was opened up to outsiders. But most people are fascinated in particular by the koteka, or penis gourds, and sali, weaved dry grass worn by women like a skirt, that are still used by some tribe members. The tribes are also apt farmers, making full use of their fertile pockets of land and abundant rivers to cultivate sweet potatoes, taro, corn and sago palms. Jibama, Wamena’s biggest market, is not far from Palimo Hotel. It features rows of tin-roofed stands filled by farmers from the surrounding villages. A bit farther on, Wouma is a smaller but more charming market. There is an array of fruit such as oranges, pineapples and avocados, ferns, dried flowers and coiled rolls of pungent tobacco, creating an explosion of colours in these vibrant market. In Jibama, we spotted some men crafted necklaces with pig’s teeth, 2019

55

and others were selling koteka and noken, a traditional bag made of naturally dyed threads that women usually carry strapped across their foreheads. And, of course, there were plenty of pigs around. This highly revered animal has great cultural and ritualistic significance for the tribes, including its use as a dowry — four to five pigs must be presented to the family of the bride. It was their astronomical price that made me flinch; a piglet costs around Rp 2 million, or more than US$200, while a mature pig could fetch an astounding Rp 40 million. Tribal tradition allows for polygamy and some of the wealthier men “buy” several wives; some as many as eleven. The social status of men is distinguished by the number of pigs and wives they have. One of the more unique traditions is for tribe members to cut off one of their fingers or to slice their ear as a sign of grief for a death in the family. We saw the results of this tradition in many of the villages we visited. Escorted by a guide and three porters, we roamed the pristine valley, visiting some of Wamena’s more remote villages including Sugokmo, Yetni, Polimo and Kurima. The clear air energized us as we tramped up steep hills and along narrow trails, crossed countless streams on tiny wooden planks or shaky hanging bridges, and passed carpets of green fields and endless trees. Wherever we cast our eyes we saw nothing but picturesque scenery. We also enjoyed our encounters with the local children. We handed out packets of milk biscuits that they gratefully accepted, rewarding us by singing Nahosa Nipase, a local children’s song about a sweet potato. It is hardly surprising their favourite song would be about a sweet potato as it is the staple food for the tribes; they eat it twice or three times a day, with its leaves as vegetable. Our hike up the Napua Hills was particularly spectacular. Protruding mountains paraded before my eyes, each reaching up to touch the milky clouds. We drank in the sunset from the top of the hills, a palette of colours painting the sky. It was stunning.

Our treks to Aikima, Pabuma, Suroba, Dugum, Jiwika and Sumpaima in the northern part of Wamena were less strenuous, as the villages sprawl out in the lowland of the valley. First we headed to the Mabel clan’s honei in Jiwika village, where Wimintok Mabel, a fragile 250-year-old mummy, is housed. It was a bit frightening, so we quickly shook hands with the clan’s chief, Konono Mabel, and drove to Suroba. There we were greeted by Miyagon Kosai, the charismatic chief of the village. He insisted on accompanying us to the next village, Dugum, where he showed us a few interesting spots. The highlight of the trip had to be our visit to Sumpaima. A full mock war performance was being staged in the village by its chief, Yali, and his whole clan. The men strapped on their koteka, smeared their bodies with pig fat and dry mud, adorned their heads with colourful feathers, and accessorized themselves with walimo, a kind of really big necklace made of silver and pigs’ tusks. Then they got down to the business of fighting, or pretending to fight, using long spears and bows and arrows. Following the performance we were ushered to Yali’s compound where his six wives and children greeted us with a local victory song.

The Dani’s honei is made up of round huts with thick thatched roofs. There are rows of honei surrounded by stone walls and gates to prevent the pigs from escaping. Men and women occupy separate honei; women and children are forbidden to enter the men’s honei (pilamo). There’s an elongated honei with several holes in the floor that serves as the clan’s kitchen. We were treated to the Pig Feast, one of the main festivities for the Dani. Fire to heat the stones is made by rubbing a small piece of rattan on a little pile of dry hay. The pig is killed by shooting an arrow into its heart, and then it is slaughtered with a piece of sharp wood. It is then cooked on hot stones together with sweet potatoes and lots of sweet potato leaves. Afterwards, we retreated to Baliem Valley Resort for tea. Located deep within the valley, it is set atop a hill with a stunning panorama of the valley. We were breathless as we watched the sundown from the lobby deck, dazzlingly intense reds and oranges illuminating the valley before the sun disappeared over the horizon. As dusk settled in, we left Baliem Valley for the last time, but our memories of this grand valley and its people will linger on. Yogo (goodbye), Baliem Valley!

The great thing about Lake Macquarie Kayaks is that it’s a mobile hire business, so you can get your kayak or stand-up paddle board delivered to any part of the lake or to your accommodation and they’ll pick it up when you’re done.

Fishing Anglers will be in heaven here. Since commercial fishing was banned you can find species such as mulloway, bream, dusky flathead, tailor, squid, luderick and sand whiting. Lake Macquarie is linked to the sea via the Swansea Channel, which is where you’ll find large schools of Australian salmon over the Winter.

Jet boating (www.skylineaviation.com.au)

Go for a thrill ride along the lake. You’ll travel at up to 42 knots and experience high-speed slides and turns, 360° spins, power brake

stops and fish tails. There’s also the option of extending the trip to open water, travelling along the Swansea Channel and into the ocean where the boat will chop, spin and surf on waves.

Snorkelling and diving (www.snorkelanddivesafariswansea.com.au)

There are shore dives, boat dives, instructorled dives and equipment hire if you know what you’re doing and want to explore on your own. There are also snorkelling courses and they’ll let you in on the best coastal and Lake Macquarie underwater sites to check out.

LAND-BASED ACTIVITIES 4WD You bought that beast of a car for a reason, so make the most of it. Blacksmiths Beach is renowned for being one of the only spots where the closer you get to the tide, the softer the sand becomes. So reduce your tyre pressure to take on those big dunes. Stockton Beach and Nine Mile Beach require permits and Watagans National Park is for serious drivers, with steep gorges and rocky ridges.

Mountain biking (https://hmba.asn.au/)

The Awaba Mountain Bike Park is one of the best in the country, with a 12km loop that is almost all single track. The majority of the track is a dry, smooth, hard-packed surface but it also takes in dense rainforest. Ideal for all levels, beginners won’t have too much issue with it. Seasoned riders will be drawn to the Monkey Face downhill track, a technical descent known for being one of the most challenging in Australia.

Abseiling (www.outandaboutadventures.com.au)

If walking backwards off a cliff is your thing, you’ll want to do it at Gap Creek Falls in Watagans National Park. A 45-metre waterfall is one of the most spectacular things you can take in when you feel like replacing the surety of a footpath with the thrill of a cliff face.

Walking trails (www.nationalparks.nsw.gov.au/things-to-do/ historic-buildings-places/hornby-lighthouse)

One of the prettiest walking tracks is the Boarding House Dam Walk in Watagans National Park. The half-hour circuit takes in

a creek, moss walls, rainforest and the dam. Stop at the picnic area for a rest before heading back to town. The Coastal Walking Track at Wallarah National Park is a picturesque trail; in winter you’re likely to spot passing humpback and southern right whales.

ROMANTIC MOMENTS Watch the sunrise from a beach cave Caves Beach is one of those places that look too good to be true. The best time to explore the caves is at low tide so check the coastal report and get there early. You’ll be rewarded with a sky that runs the gamut of colours from orange to pink to purple as you start the day exploring the sea caves and rock pools.

Camp among the pines Ignore the rest of the world and enjoy the quiet solitude of Watagans National Park as you set up camp among towering pine trees for a night. It’s just you, your love and nature.

Best Family Resort:

The Westin Resort, Nusa Dua, Bali Set against unspoilt white-sand beaches and tranquil turquoise seas, The Westin Resort, Nusa Dua, Bali offers everyone an uncompromising world of luxury and comfort. Leave the outside world behind and allow your senses to be elevated. You have found your place to relax, revive, and experience total renewal. Text by Raynaldo Semuel

I

just love staying at The Westin Resort, Nusa Dua, Bali. Why? It is simply because I know that I can relax, refresh, revive, and experience total renewal. From the moment I set foot in the resort until the time I check out, I know that it will be an experience to stir my soul and replenish my spirit. I have always enjoyed the time I had staying at the resort, so when I arranged a family holiday in Bali, I immediately book The Westin Resort, Nusa Dua, Bali because I know that my family would have a good time staying there. Our experience at The Westin started the moment we set foot in the lobby, we were welcomed by sights, sounds and scents that automatically put our mind and body in a holiday mood. The resort provides travellers with the highest level of comfort combined with the soft touches of Balinese hospitality. Not to mention, every time I hear the word Westin, my mind drifts off to the comfort of the Heavenly Bed. But The Westin Resort is about more than comfortable beds. It’s also the perfect destination for families.

The Westin treats children as precious guests, making sure their holiday will be as special and memorable as yours. My children just love The Westin Kids Club, it is more than just a playground for children, taking on the form of a fully supervised interactive environment offering fun games and educational activities. Set within a quiet garden corner of the resort and shaded by tropical greenery, the Westin Kids Club offers an extensive range of activities from dawn until dusk in secure indoor and outdoor settings. The outdoor playground caters to children between the ages of 4 and 12. Just like mine, your children will have the time of their lives with all the activities that are available for them, such as wall climbing, swimming lessons, a tennis clinic, cycling tours, a golf clinic, snorkelling, canoeing, windsurfing, and much, much more. A mini-zoo is home to fluffy white rabbits, an iguana, and other animals that will give children a heightened appreciation for the precious bounty of Mother Nature.

Children are not the only ones who can enjoy the fun at The Westin Kids Club, with many parents also taking part in the exciting and educational activities, such as star-gazing, which I tried myself. It was quite an experience to look up into the inky night sky and see all those thousands of twinkling jewels, and then to learn more about them and the universe from our guide. If you get lucky you might even catch a falling star streaking across the night sky. The resort also has a room category dedicated to family travellers – the Family Studio, which features two interconnecting bedrooms to accommodate up to five people, catering to the needs of parents with up to three children. The Family Studio also features PlayStation2 and fun board games to keep your children busy and happy.

Accommodation at The Westin Resort, Nusa Dua is all about modern luxury with a distinctive Balinese flair. Each guest room and suite features a flat-screen television, an electronic laptopsized safe, and broadband internet access. One of the best things about staying at The Westin is of course the Heavenly Bed. This is simply the most comfortable bed I have ever slept in. Specially designed for The Westin, the all-white Heavenly Bed will envelop you in comfort and provide you with total body support, lulling you to sleep while making sure you are not disturbed by the movements of your partner. The 10 layers of bedding consist of the pillow-top mattress, finest quality linen with 200 and 250 threadcount sheets, a lightweight goose-down blanket, goose-feather pillows, and a luxurious goosedown duvet that will transport you to another realm. It is the bed that was made to dream in.

Knowing that our children are professionally cared for in safe surroundings, my partner and I can relax and have the opportunity to sample some of the resort’s adult-orientated recreations. We tried the sunrise cycling tour around the Nusa Dua area, which was an enjoyable breath of fresh air after so much time in polluted Jakarta. We took morning yoga classes in the summer garden, which was simply relaxing. And we strolled along the beach, enjoying the feeling of sand under our bare feet and the freedom of, for a short time at least, not having any responsibilities. The Unwind programme at The Westin Bali is not to be missed. Unwind is an enriching experience that helps you settle down from an active day and gear up for a mystical tropical evening in Bali. The Westin’s lobby evolves from day to evening through a variety of subtle sensory cues – everything from music to scent and lighting. Warm, natural lighting is dimmed at the start of the evening, while scented candles are lit and carefully placed around the lobby. This creates an ambience that will ignite your awareness and lift your spirit. At The Westin Resort, Nusa Dua, Bali, every aspect of your stay has been carefully thought through and designed to help you feel calm, relaxed, and a million miles away from the distractions of the everyday world. Some revolution fighters were watching the situation alertly with other children playing cheerfully. The whole scene was the representation of the peaceful life surrounding the Merapi Volcano. A Story Behind a Cup of Coffee Through the centuries, coffee has become increasingly popular, drinking coffee has now become a lifestyle trend. Text by Yana Ghopar

C

offee which was once thought of as beverage for older people, now has turned many “Millennial generation” to coffee-addicts. This has led to the growths and openings of many coffee shops. Starbucks and other coffee chains, along with local coffee shops, are considered necessities in nearly every city. They’re now popping up offering a variety of coffee concoctions. Although Indonesia is not the biggest coffee consumption, according to the International Coffee Organization, Indonesia is in the top 4 countries of the world's largest coffee producer (2017/2018). Indonesia also has a variety of

unique coffee beans characters from its diverse regions, and which also contributes to coffee shop business growing so rapidly in this country. Pour over, cold brew, flat white, single origin, ordering coffee has become more complicated, but also more unique and delicious. Nowadays coffee is not just a market commodity, and it has continue to evolve. The progress of the amazing coffee world leads us from the First Wave to the Third Wave periods.

FOOD First Wave Coffee First wave coffee can trace its roots back to the 1800s, coffee that was both affordable and “ready for the pot”. in this era more focus was put on the packaging innovation, vacuum packaging & instant coffee.

Second Wave Coffee The second wave emerged as the reaction to the “bad coffee” being marketed under the first wave. Coffee enthusiasts expressed a desire to know the origin of their coffee and to understand the unique roasting styles of what will now be called “specialty coffee” beans. This knowledge added to the enjoyment of coffee as an experience, rather than just a beverage. Words like espresso, latte, and French Press became common among lovers of specialty coffee.

Third Wave Coffee The third wave of coffee is characterized by coffee lovers interested in the character of the coffee itself. In this era the term single origin began to appear, the origin of coffee is one of the most important while at the same time indicating that the coffee industry has changed. People all over the world are starting to look for a new variety of coffees and are interested in exploring the aftertaste in every coffee. Body, acidity, bitterness, sweetness, aroma, manual brew and others are vocabularies that often color this "Third Wave". Answering the needs of current coffee lovers, Starbucks is opening its largest destination in Southeast Asia – the Starbucks Dewata Coffee Sanctuary. Coffee stories are contained holistically from “seed to cup”, creating an edutainment experience. Designed as a coffee sanctuary, the expansive 20,000 square foot store beautifully highlights local craftsmanship and culture alongside premium coffee in this one-of-a-kind coffee experience, a sort of “origin-centered version” of the Roasteries, igniting all five senses. The store’s locallyinspired design featuring traditional Balinese craft and Indonesian art, and enjoy the more than 100 Dewata-exclusive handcrafted beverages, food and merchandise, including Cool Berry Tea and the Lavender Latte which is a perfect companion for Milk Pie, try also a fresh Indonesian Fresh Salad, it’s perfectly fit for your diet program.

through a working, 1,000 square foot coffee tree farm. The journey through contemporary Balinese landscaping, passing coffee plants and a de-pulping station before trying their hand at washing, drying and raking green coffee beans. Inside, the expansive Reserve bar offers customers an intimate experience to taste Starbucks Reserve small-lot coffees, while the core bar offers Starbucks signature core beverages. The second floor is the seedling nursery, a greenhouse canopied by panes of glass to create an open-air experience. Here, customers can touch the first stages of the seed-to-cup journey, as well as deepen their understanding of the art of tending to coffee plants alongside a local Balinese farmer. In the adjoining tasting room, customers’ taste buds will come alive as they enjoy coffee as coffee quality professionals do, without a filter – simply coffee and water – to draw out the flavors that set each cup apart. An interactive video wall also available, where you can know more about how coffee is planted, processed, roasted, shipped and brewed into a delicious cup of espresso. Enjoy the euphoria of the authentic third-wave coffee experiences, don’t forget to explore more local coffee shops, some of them have started the third-wave coffee experience earlier than Starbucks, such as Anomali Coffee, Giyanti Coffee Roastery, and many more. The Best Farmstays in New South Wales Take a break away from the city and discover how life is really lived in New South Wales’ rural heartland. Vast cattle stations, charming hobby farms and historic estates across the State now operate as farmstays where you can rise with the roosters, feed hungry lambs, spot native wildlife or simply bask in the serenity. Text by Destination NSW | Photos courtesy of Destination NSW & Hilary Bradford

Mowbray Park Farmstay, Picton Just on the edge of Sydney, Mowbray Park Farm dates back to the early days of European settlement. Over the past 30 years, it’s been redeveloped into a dedicated farm experience for visitors with multiple lodges and cottages, and a full program of supervised farm activities like feeding nursery animals, tractor rides, milking cows and whip cracking. Other activities on offer include horse riding, canoeing, archery, tennis, fishing and mountain bike riding. It’s one of the few properties that’s also open to day visitors.

Kimo Estate, Gundagai Proving that a farmstay doesn’t have to mean roughing it, Kimo Estate is a working 2,800-hectare sheep and cattle farm dotted with luxurious accommodation. The most striking is JR’s Hut, an eco-friendly glampingstyle cabin perched on a rise with 360-degree views of the property. There are no organised farm activities here; instead, it’s a place to unplug, take in the views and marvel at the beauty of the Australian landscape.

Amaroo Cottage Farmstay, Bathurst At Amaroo Cottage, guests are encouraged to get involved with the real (and sometimes dirty) work of running a 760-hectare farm. That means mustering stock, lamb marking,

112

crutching, shearing or drenching, depending on the season. After the chores are done, there’s time to spot the abundant native birdlife or stargaze on skies uninterrupted by artificial light. Accommodation is in a three-bedroom self-contained farmhouse and children under 16 stay for free.

Starline Alpacas Farmstay Resort, Hunter Valley Around 200 alpacas roam the grounds at Starline, a small property set in between the wineries of the Hunter Valley. These animals are known for being placid and won’t kick or bite, so you can walk with them through the fields and let them eat pellets out of your hand. In the late afternoon, baby alpacas (called cria) will happily frolic on the grass. There are more than a dozen cottages and suites on the property, plus a swimming pool, spa, sauna, tennis court and children’s playground.

Ba Mack Farmstay, Mudgee The focus at Ba Mack Farmstay is on connecting children with animals and kids will have the chance to make friends with 300 merino sheep, horses, pigs, dogs, cats and more. They can learn how to groom and saddle a horse, feed the animals and bake scones for afternoon tea in the homestead kitchen. The farm only hosts two families at a time, sleeping in the rustic cottage or a

restored ‘red rattler’ train carriage. If the adults want to head out and sample the vintages at some of Mudgee’s boutique wineries, Ba Mack runs a complimentary Kids Club every afternoon.

Byron Bay Farm Cottages, Byron Bay The 120-hectare Hayters Hill farm has been in the Hayter family for more than 130 years. The property is used for cattle grazing and the family is passionate about sustainable farming and conservation. Six guest cottages now sit on a ridge with sweeping views over the farm and out to the ocean. Collect eggs, walk among the cows and greet the friendly horses, then try kayaking or fishing on the lake, walk through the rainforest gully and look out for more than 70 species of bird found on the property.

Wantana Cottage Farmstay, Hilltops Enjoy the peace and quiet of life in the Hilltops region on this 400-hectare familyrun farm, sleeping in the former jackaroo’s accommodation that has been converted into a three-bedroom cottage. The owners will show you around the property (time permitting) and

at different times of year you can see lambing and shearing. Or head into nearby Boorowa for the country show and picnic races.

Hanericka Farmstay, Wagga Wagga Covering almost 2,500 hectares, the historic Fairfield farm produces wool, lamb, beef and large scale grain crops. It’s also home to the Hanericka Farmstay, a small farmyard that has been welcoming guests for almost 30 years. There’s plenty of hands-on farm work to be done – sweeping out pens, putting down fresh straw, making up milk powder for lambs and collecting eggs. Kids can learn to rise horses, either through the farmyard or in the arena, and there’s a swimming pool and tennis courts on the grounds.

The Cedars, Kangaroo Valley Breakfast time at The Cedars is 8am sharp. Walk over to the main yard and help to feed the sheep, cows, pigs, donkeys, hens and horses all eagerly awaiting their morning

meal. There’s lots of native wildlife as well, including wallabies, echidnas, wombats, kangaroos and two resident wedge-tailed eagles. Follow one of the gentle hiking trails through the bush and cool off with a swim in the creek. Accommodation ranges from a studio yurt to four-bedroom cottages, all set in secluded locations around the property.

Highland Lodge Farmstay, Jindabyne Part farmstay, part ski lodge, Highland Lodge is perched high in the Snowy Mountains just outside the town of Jindabyne. The 65-hectare property is open all year round and guests stay in a three-bedroom farm house or onebedroom suites. The owners are happy to entertain children (while the adults relax by the fire) by meeting the farm animals, collecting eggs, picking vegetables, exploring the fields and playing in the playground. Finish your days toasting marshmallows over a roaring campfire.
