La Vita e Bella
W
e live in a hectic world and, if you are like me, chances are you are spending most of your time working. It is just a fact of modern life. It is a shame because life is much too precious to spend it slaving away at work. Take a holiday and enjoy some time with someone you care about, or simply enjoy some time alone. In this edition, we do just that. We have found the absolute best places in this part of the world to unwind, chill out and pamper yourself like you truly deserve. We call this “The Luxe List,” places where time seems to stand still and you can do anything you want or simply do nothing at all, while being well and truly pampered by serious professionals. My team and I had the luxury of staying at these amazing places, and we learnt the art of doing nothing – simply being. It felt strange at first, having all that free time. But then it hit me, that moments like that, when you take a break and stop, are when you start to understand what the Italians mean by La Vita e Bella (Life is Beautiful). From Jakarta to Surabaya to beautiful Bali, we stayed at and indulged in fivestar pleasure from coast to coast. We had so many wonderful experiences, from cruising along Labuan Bajo to a quiet getaway at one of Indonesia’s most exotic islands. These were definitely times to remember. I quickly became aware of how fortunate I was to be from this beautiful country, Indonesia. From dining by the beach to dining at some of Jakarta’s most exquisite restaurants, each experience was unique and beautiful. I don’t know about you, but I am planning my next holiday now …
Happy reading

Fashion Item Must-Have A scarf is one of the most versatile fashion accessories you can have. It can spice up any outfit and give you a new look. Wear it as a head wrap on bad hair days, over your shoulders to protect them from the glaring sun, around your neck, as a belt, as a swimsuit cover-up, and the list goes on. Buying a scarf is a worthwhile investment because it can be used year-round, so make sure to buy a high-quality scarf that is beautiful and will last. That is a Nani Iro double gauze scarf. Nani Iro scarves are of the highest quality, with hand-painted watercolour prints. These scarves are light and airy, but they can also be used during the rainy season or for extra warmth in cold weather. Double gauze fabrics, a Japanese invention, are two layers of fine fabric held together by a tiny grid of stitches that are virtually invisible. The materials used to make the scarves are imported from Japan and the scarves are limited editions, so the turnaround time for each scarf is about two to three weeks. Travel-Friendly Gadgets Text by Timotius | Photos Courtesy of Apple, Canon & Lenovo
If you are a travel junkie, these are the gadgets that should be in your bag. We highlight gadgets that are easy to use and compact, making them ideal travel companions.
Music Player There’s nothing that can beat an iPod when it comes to music players. The iPod has massive memory capacity and long battery life. When it’s time to sit down and relax, bring out your iPod and punch up your favourite song. And, in my opinion, the best music player for travellers is the seventh generation iPod Nano. The seventh generation iPod Nano, released in 2012, is equipped with 16 GB of internal storage, plenty of size to store all your favourite music. The iPod Nano is a compact 76.5 x 39.6 x 5.4 mm and weighs an airy 31 grams. A fully charged battery is capable of playing music for 30 hours, and it only takes around three hours to fully charge this music player. So, enjoy your vacation with your collection of favourite tunes.
Laptop I know, it’s vacation, but sometimes you have to bring your work with you. You can’t bring along your PC and you don’t want to lug a heavy laptop around the world. This is where a travel-friendly laptop comes in handy. I recommend the Lenovo ThinkPad X220, which comes with a 12.5-inch display that is smaller than the normal laptop but not too small that it will strain your eyes. This laptop weighs around 1.8 kilograms, so it won’t be an extra load for you and your bags. The Lenovo ThinkPad X220 has a 320 GB hard drive. It’s more than enough to back up your photos and video recordings from your travels, and with 4 GB of RAM, you can be sure no programs will crash while you are on the road. You won’t have any trouble opening memory-consuming programs like Adobe Photoshop, Adobe Illustrator, Adobe InDesign and other programs for designers.
Camera Smartphones nowadays can replace the work of digital cameras, unless you are a real photographer. These people will want to bring along a digital camera to capture the moment. For something simple try the Canon PowerShot G1X. This sophisticated package offers more power and quality than the average digital camera, and is also simpler to use than a DSLR camera. The Canon PowerShot G1X offers the same image quality as a DSLR camera, without the slow response of a traditional point-and-shoot. It’s also known for its small size and wonderful image quality. It works best for nature, travel and landscape photography. This premium compact digital camera is not too big, just 116.7 x 80.5 x 64.7 mm, and weighs only 532 grams. The video recording is also great and recorded at high bit rates so it won’t be laggy. So, take your best shot on your next trip.
But the best thing about this laptop is its battery life. It has a battery life of 6.5 hours fully charged, so you will not always be searching for a power outlet. With this laptop your work will be done in no time and you can get back to enjoying your vacation.

Medan

What is the first thing you think about when you hear ‘Medan’? Foodie paradise, Lake Toba, Bataks? Every place has its own unique habits and customs, including Medan. We give you some rules before you visit the North Sumatra capital.

travelling Do’s & Don’ts
Do’s Medan has a new airport, Kualanamu. If this is your first time visiting Medan, you can take the train from the airport to experience the sights of Medan. If you are travelling with friends, a cab is cheaper than the train (the train costs about 100,000 rupiah).
l
Durian, meranti and bika Ambon are amongst Medan’s famous foods. You can find what some say is the best durian on earth at Ucok Durian, on Jalan Iskandar Muda. Jalan Majapahit is famous for bika Ambon and Jalan Kruing for meranti.
l
If you like pork you have to try the Chinese food in the Pringgan area, including the grilled pork on Jalan Darat.
l
Explore old districts of the city like Merdeka Walk and Jalan Ahmad Yani, and visit the iconic restaurant Tip Top there.
l
Don’t forget to visit spiritual places like Al Mashun mosque, Gunung Timur Buddhist temple, Annai Velangkanni Catholic church and Shri Mariamman Hindu temple to experience the rich culture and spiritualism of Medan.
l
Say “Horas,” when you meet locals. The greeting means, “How are you?” It’s a good icebreaker and locals will be pleased that you are making an effort with the language.
l
Explore the second-hand markets around Sambu, Melati and Simalingkar. l
One of the best ways to see Medan by night is on a motorcycle pedicab. l
Don’ts Don’t waste your time arguing with bus drivers. They can be stubborn, so it’s better just to move on. l
Don’t be surprised if locals get excited if you tell them you spent time in Medan as a child or are half-Batak. l
If you have ever been in Jakarta, you likely have seen some really bad driving by bus drivers. Well, lots of the drivers come from Medan and the streets here can make the streets in Jakarta look tame by comparison. If you can drive in Medan, you can drive anywhere. l
If you are shopping in a traditional market like Petisah, Sambu or Melati, dress down or you are likely to find yourself paying more. l
Medan is famous for its spicy food, so take care. You can ask for your chilli on the side to try and keep the temperature down. l
Women, don’t be surprised if local men call you “Ito”. It’s a term of respect for women. l

SWISS’s on-board fun for children includes an extensive range of cartoons, kids’ movies and their own music channel on the SWISS inflight entertainment system, in addition to special meals for children and babies. SWISS has enhanced the fun and entertainment it provides on board for its youngest guests. In addition to its traditional giveaways such as puzzles, colouring books and sticker sets, the airline is giving a Logbook to young passengers aged between 3 and 10. A Day in Vienna
Wien Bien Discover culture, luxury and plenty of milestones to celebrate in Vienna this year. Text & Photos by Nicholas Walton
9am Check in at the city’s most luxurious new hotel, the Park Hyatt Vienna. Part of the new Golden Quarter luxury precinct at the heart of the city’s historic district, and overlooking Am Hof Square, famed for its summer evening theatre renditions and winter Christmas markets, the hotel is housed in the 100-year-old heritage-listed former headquarters of the Austrian Hungarian Monarchy Bank. Many of its bank-era elements have been beautifully retained, from the gold tiles of the former vault-turned-swimming pool, to the main restaurant, named The Bank, to the imposing marble-clad lobby with its revolving door and elegant staircase.

Alternatively, another lavish newbie on the city’s hotel scene is the Palais Hansen Kempinski Vienna, located in another heritage-listed building on the city’s famed Ringstrasse. Housed in a stunning building designed as a hotel to coincide with the World Exhibition of 1873, the Kempinski opened in 2013 and remains one of the most luxurious retreats in Austria. Of the hotel’s 152 rooms and suites, indulge with one of the Ring Suites (ask for one with a balcony overlooking the Ringstrasse), which features a separate living room, elegant soak tub and rain shower, a spacious work desk, and views across one of Europe’s most famous boulevards. This traditional riding school, the oldest of its kind in the world, celebrates its 450th anniversary this year, and attracts visitors from across the globe to its daily performances and training sessions, held in the iconic Winter Riding School, which was built between 1729-1735. Named for the Spanish Lipizzan horses used in performances, the school has its roots in traditional cavalry training. Consequently it only accepted its first female students in 2008 after more than 400 years of history. Better acquaint yourself with the central city with a tour on the Ringstrasse’s iconic tram line. The Ringstrasse celebrates 150 years since its inception by Emperor Franz Joseph I, who built the expansive, tree-lined boulevard in place of Vienna’s 13th century city walls, in a showcase of the grandeur of the Habsburg Empire. Half a century later and the result is a stately road that links a beautiful collection of neo-Classicistic, neo-Gothic, neo-Renaissance and neo -Baroque buildings, from the Austrian Parliament to the State Opera House, the towering City Hall, and the Museum of Fine Arts, all of which are set between sprawling parks and public gardens. You can go it alone with a cost-effective day ticket or enjoy audio-visual guides offered by the multimedia system on the Vienna Ring Tram, which departs from the Schwedenplatz and is the only tram that completes the whole 5.3-kilometer journey without the need to connect. www.wienerlinien.at

Krakow
Timeless elegance; a modern recreation Text and Photos by Hanny Wahyuni
The history! The culture! The cafés and clubs! Hanny Wahyuni reports from the charmed city of Krakow, Poland’s second-largest metropolis, home to numerous Nobel-winning writers and the city where the late Pope John Paul II grew up and where his righteous trail began.

‘S
o tell me, Hanny, why Krakow?’ If I had a dime for every time someone asked me that, I could have paid my return flight from Dubai, and probably had some money left over. Krakow’s appreciation for fashion and the arts, its lively nightlife, rich history and culture, and flourishing economy make it one of Europe’s top travel destinations. A city of majestic architectural monuments, cobbled thoroughfares, cultural treasures, timeless courtyards and priceless artworks, Krakow’s historic centre is the pride of Poland. As it is, today’s Krakow can offer any of the globalized commodities the modern tourist might want, while still maintaining its unique character as Poland’s cultural centre. The city on the Vistula, an ox-bowed river of great beauty, which was Poland’s capital for five centuries, includes a quarter of Poland’s museum resources. A trip to Krakow is an encounter with the most splendid moments in history. Krakow’s Old City, along with Wavel Hill and the district of Kazimierz, was entered into the UNESCO World Heritage List in 1978. It is worth mentioning that this prestigious status has been given to as few as 12 other sites in the world, including the Egyptian pyramids and the Great Wall of China.

Krakow wears its medieval raiment without fuss or complication, as a woman would strap on jewels and fur although she’s only stepping out for a quart of milk. This feisty little town of 800,000 definitely has the stuff: Europe’s largest and arguably most gracious medieval square, the Rynek Glówny; Europe’s largest Gothic altar, by Veit Stoss; the 300-foot-long neo-Byzantine Sukiennice, the Cloth Hall market; the serried Piast and Jagiellonian kings snug in their heavy stone sarcophagi under Wawel Cathedral on the 15-acre Wawel Royal Castle hill. Krakow’s infamous Nazi occupation and the grinding decades of Communist rule couldn’t eliminate all the patrimony. The Nazis unwittingly preserved the city when they chose it as the capital of the General Government in 1939, meaning they didn’t bomb it as they overran Poland. It is extraordinary that the city was likewise not bombed to smithereens by the RAF or the US Air Force after March 1944, when they controlled European skies, considering Krakow was a crucial logistical hub for the Nazis. In January 1945, the city was spared once again as the Russians harried the Nazis out with little resistance – meaning, without the Nazis blowing it up and without the trademark Soviet artillery stomping.
3600 Three times is the charm! By definition, any walk in or around the centre of Krakow becomes a pilgrimage through medieval history. So, despite plenty of questions, I finally stepped out from Krakow-Glowny, the main train station, ready to explore the city in spite of the freezing winter weather. Staying in the Stare Miasto area allowed me immediately to discover the gorgeous city at its best. Guidebooks list more than 300 places to raise a glass or sip a coffee in the Old City alone, where bookshops are almost as numerous as shoes stores and clothing boutiques. Any exploration of Krakow’s Old Town should start with the Royal Route, the historical coronation path of the Polish kings when the city served as the royal capital from the 14th century to the end of the 16th century. Most of the Old Town’s prime sights lay along this route from Florianska Gate to Wawel Castle. A fireman with a brass trumpet had just blown the hourly call from the belfry that towers above the red-brick walls of the Basilica of the Virgin Mary in Krakow’s main square, Rynek Glówny. As I stood in the largest medieval market square in Central Europe, I could feel that historically, culturally and perhaps spiritually, the Rynek and Wawel might be the two most important sights in the country (no offense, Warsaw). Krakow’s Rynek is a 10-acre square and functions as the city’s social gravitation point, lined with cafes
and restaurants, filled with people, pigeons, street performers, musicians and horse-drawn carriages; this square is home to festivals, events, concerts and parades. The buffed and polished 800-year-old square can accommodate some 3,000 people out of doors at the tables of its chockablock cafés. The ornate pastel façades of the surrounding buildings form an operatic backdrop for the hundreds of people hurrying to work or school or the many shops, or simply to loiter in the cafés and bars that line the narrow streets here. It was set out back in 1257 when the city was founded upon the Magdeburg Law. St. Mary’s Church and the Church of St. Adalbert had been erected earlier, which explains their slanting position in respect to the main market square. Later, Cloth Hall, town hall and townhouses were built. In September 2010, Europe’s largest underground museum, measuring 4,000 square metres with a four-metre-deep tourist route with a cutting-edge multimedia show entitled “Following the Steps of Krakow’s European Identity,” was opened beneath the square. Taking centre stage on the Rynek is Cloth Hall (Sukiennice), built in the 14th century. It was effectively the first shopping mall in the world and to this day is still packed with merchant stalls selling amber, lace, woodwork and assorted tourist tat. Feel free to bargain as the vendors might give you a good price, especially if you pay in cash.

3600 Soaring into the sky is the regal St. Mary’s Basilica. It didn’t matter how many times I saw it, the altarpiece, stained glass windows of the nave and starred ceiling of the cathedral took my breath away. After spending almost four hours in the square it was time for me to taste the Krakow delicacies and specialties on offer at the many excellent eateries and restaurants in the city. They were lodged in every available space of the area’s old palatial residences and stately burgher houses – upstairs, downstairs, in those vast ancient cellars. No doubt, the exquisite and picturesque period interiors were a premium. I found a warm, timber-framed, two-level eatery that happened to be one of the most popular on the market square, thanks to a reputation built on Michelin recommendations, friendly service and a cosy atmosphere. If it weren’t for the tourists and all the clinking glasses, I might have thought that I’d actually crashed a Polish wedding party. The menu was classic Polish cooking done exactly the way it was meant to be, with a goose breast to die for and pierogi, commonly translated as dumplings but in fact closer to ravioli, with a variety of fillings: pierogi ruskie – filled with potato and cheese; pierogi z miesem – definitely for meat lovers; and pierogi grzybami – filled with mushrooms. The night was still young and the sparkling vibe in the air made me forget about the freezing weather as I strolled through the area to a local pub. I heard about a place called Wódka Bar, a small bar located at Mikolajska Street near the Old Market, which serves Beluga vodka, the noble Russian vodka with a refined, rich taste. Bottles of gin and vodka were ordered, and the night danced by until we stumbled out of the bar before dawn and wandered through a warren of narrow lanes, our heels echoing on the ancient cobblestones. I left the bar wondering how long the city could maintain the precarious balance between luring in outsiders and supporting its own authentic culture. Prague, swamped by tourists, has seen its languorous beauty transformed in many districts into high kitsch, the result of efforts to please visitors who want Old World charm, cheap beer and Mozart quartets. Sleeping like a baby, I woke up joyfully knowing that more fascinating sites were waiting for me. I decided to start my shoestring journey by visiting the Church of Saints Peter and Paul. The church was erected at the initiative of Piotr Skarga and the Sigismund III Vasa Foundation for Jesuits and the crypt below the chancel includes a silver coffin with the remains of Piotr Skarga. The church was
44
MAXX-M
modelled after the Roman church of II Gesu and has Poland’s longest Foucault pendulum, mounted below the dome, allowing visitors to perceive the earth’s rotational movement around its axis. The church is guarded by the 12 apostles, reproductions of statues from the 18th century. Next to this precious venue is St. Andrew’s Church, one of the oldest structures in Poland. Thick 1.5-metre walls and narrow windows are reminders of the defensive function of the building. The small interior is dazzling with its Baroque splendour, especially the boat-like rococo platform. The treasury includes priceless 13th century relics, a unique mosaic with the Mother of God from the turn of the 12th and 13th centuries and some of Europe’s oldest nativity scene figures dating back to the 14th century. After a few minutes of walking, I reached the famous Wawel Hill, a central place of the Vistulans’ land even before the Polish state emerged. A symbol of national pride, hope, self-rule and not least of all fierce patriotism, Wawel offers a uniquely Polish version of the British Buckingham Palace. The castle, restructured over the centuries, is a mixture of Romanesque, Gothic and Renaissance styles. Visitors can follow two routes around the royal chambers, suite and some of the towers. One of the most dazzling rooms is Parliamentary Hall, also known as Pod Glowami (Under the Heads), for the famous Wawel heads on the ceiling coffers. It is worth seeing the crown treasury, including the ceremonial sword called Szczerbiec. Another site not to be missed in this huge historical compound is the Cathedral. The majestic and dark cathedral interior draws visitors with its royal sarcophagus, silver confession of St. Stanislaus, late Renaissance stalls and the beautiful St. Hedwig Crucifix. The church hosted 37 royal coronations and almost every Polish king is buried here. I was recommended by a friend to climb Sigismund Tower to see the famous Sigismund Bell, weighing 12.7 tons and made from melted cannon barrels. It took 10 people to put the bell in motion and its sound was heard within a 12-kilometre radius around Krakow. It is perhaps difficult for a foreigner to understand the depth of Poland’s attachment to the late Pope John Paul II. To many, including me, his life and work demonstrated an incredible love for mankind and hope for the future. It wasn’t difficult to find traces of Karol Wojtyla’s influence here – schools, streets and even the Krakow-Balice airport have been named after him. There are several monuments to him including a grand statue across the Wawel Cathedral and a bust in the sculpted flowers of Jordan Park.
3600 Looking for an answer to what the city’s future holds, I stopped by Krakow’s museum of contemporary art, Bunkier Sztuki (Art Bunker), a 1970’s architectural catastrophe in poured concrete that sits near the Old City. With its art schools and huge student population, Krakow ought to be far more involved in the avant-garde than it is. Just over a decade out of Communism, Poland still has few private patrons willing to fund the more experimental arts, and artists must instead win the approval of state administrators who dispense meagre grants. Another historical site that one shouldn’t miss when in Krakow is Schindler’s factory in Lipowa Street. I watched “Schindler’s List” when I was in high school and since then I get goose bumps every time people mention concentration camps. To see the history directly is a one-of-a-kind experience. I spent my last day in Krakow by going a couple of blocks south to another scenic downtown district, Kazimierz, famed for its past Jewish quarter and numerous eateries. Moving further to the south is the city’s newly established gastronomic frontier in historic Podgorze town across the Wisla River. Charming. That’s the word to describe this city. The people are friendly and warm, and you get the best of both worlds, witnessing the magnificent history of the city and the bustling modern version of Krakow. Tips are welcome, yet in Krakow only waiters expect extra payment, roughly one tenth above the charged sum, in appreciation of satisfactory service. Leave cash on the table or round up the bill, saying “Raeshty nye chaeba” or “keep the rest.” Sad to leave, I read the comments on my Instagram and Facebook from friends questioning my decision to visit Krakow. I was content that I gave them something to look forward to, and for myself, I managed to cross one of my 2015 resolutions off my list.
Krakow’s Pope John Paul II International Airport has connecting flights from many European destinations; several discount airlines, including EasyJet, serve the city from within Europe. In summer, Poland’s LOT airline flies directly to Krakow from both Newark and Chicago. Krakow is 2 hours and 45 minutes by rail from Warsaw.
WHERE TO STAY Krakow’s Old City has an abundance of boutique hotels along its ancient streets, all of them within a five-minute walk of Rynek Glówny, the massive medieval town square.

The Old Town, with Switzerland’s best-preserved fortifications, is under a preservation order and there are still more than 200 Gothic-style houses to be admired. Walk through Old Town The Old Town of Fribourg is better known as Basse-Ville and offers narrow winding streets to churches, fountains, ancient bridges and medieval buildings, with more than 200 Gothic facades dating from the 15th century. There are also many cosy cafes and warm restaurants throughout the area. Old Town is easy enough to find, just look for the 76-metre-high tower of St. Nicholas Cathedral. Other sights worth noting in Old Town are the Town Hall, the Church of Notre-Dame and the Musée d’Art et d’Histoire.

While in Murten, you have to try one of the best desserts in the region, Nidelkuchen, a very unique cream tart. This pastry is produced exclusively at Aebersold bakery, in the heart of Murten. For three generations, this family has refined the taste, quality and simplicity of this wildly popular and delicious tart.

Estavayer-le-Lac
The next day, we went to the little medieval town of Murten, on the southeast bank of the lake of the same name. Its original appearance has been preserved, with the picturesque alleyways of the Old Town and pleasant, shady arcades. Situated on the language border between French and German, the town has a lovely lakeside
From Murten, we went to Estavayer-le-Lac, settled in prehistoric times, colonised by the Romans, plundered by barbarians, coveted by barons. Thrilling traces of the civilisations that have shaped this region can be found, for example, in the reconstructed Neolithic village of Gletterens and in the nearby Roman museum. Edition 2, 2015

3600 In Estavayer, you can see many signs of its rich history: Savoy Castle from the 12th century, the Gothic abbey church and the cobbled streets. You can walk along the former town walls, where you will enjoy glorious views of the town. It is from Moudon Square that you have the finest panorama over the Jura Mountains to the north of the lake. Numerous rural inns and bars serve regional specialities. There are many footpaths and cycle tracks so you can discover the rural surroundings of Estavayer. The gentle hills in the hinterland form the backdrop for an enjoyable excursion by covered wagon that will ultimately take you to Portalban, a fishing port.
What to Do at Estavayerle-Lac Old Town – A well-preserved Old Town with beautiful medieval buildings. l
Frog Museum – Yes, you read it right, a frog museum. I was surprised when I first heard about it too, but it is a must-see, stuffed frogs arranged in satirical “human” scenes, dating from about 1850. l
Lake Neuchâtel – The largest lake situated entirely within Switzerland’s borders, well provided with ferries that also carry bicycles.
l
Grande Cariçaie – Switzerland’s largest wetland area and a unique paradise for birdwatchers. One of Europe’s finest nature reserves, it extends all the way along the south bank of Lake Neuchâtel. This damp habitat is home to 1,000 plants and 10,000 species of animal, about a third of all the flora to be found in Switzerland and a quarter of all species of animal known in Switzerland. Viewpoints have been set up along the paths, and there are special observation huts in the woods and on the moorland areas for watching birds. You can learn more about them in the two nature centres – BirdLife in La Sauge and Pro Natura in ChampPittet. l
Water-Ski Lift – One of the highlights of the water sports paradise that is Estavayer, with its yachting marina and two bathing beaches. Sailing, surfing and pedalo boating are all popular at the Nouvelle Plage (new beach). One special adventure is to try the water-ski lift: the whole family, including children who can swim, can go water-skiing.

Picture-Perfect Gruyères A picture-perfect medieval town on a small hill with a castle and three totally different museums, Gruyères offers visitors 800 years of regional history and culture. Gruyères stands in the midst of the Fribourg green pre-Alpine foothills. The castle, one of the most prestigious in Switzerland, towers majestically above the medieval town. Castle tours offer a walk through eight centuries of architecture, history and culture. The crane (in French, “grue”) – its heraldic representation – inspired the name Gruyères. Despite the importance of the House of Gruyères its beginnings remain quite mysterious. Nineteen counts are accounted for in the period between the 11th and 16th century. The last of them, Michel, had been in financial trouble almost all his life only to end in bankruptcy in 1554. His creditors, the cantons of Fribourg and Bern, shared his earldom between them. From 1555 to 1798 the castle became residence to the bailiffs and then to the prefects sent by Fribourg. In 1849 the castle was put up for sale and sold to the Bovy and Balland families, who stayed at the castle during summers and restored it with the help of their painter friends. The castle was then bought back by the canton of Fribourg in 1938, made into a museum and opened to the public. Since 1993, a foundation ensures the conservation as well as the highlighting of the building and the collection. While you are visiting the town and its castle, you should also stop at La Maison du Gruyère cheese dairy. No visit to Switzerland would be complete without some cheese. At La Maison du Gruyère, you can learn everything you ever wanted to know about cheese. You can see firsthand how they make their cheese and sample a few varieties.
The City of Art and History
Saint-Maurice is located at the entrance of a pass leading to the upper part of the Rhône Valley. Washed by the Rhone River, this little town full of charm and character spreads out at the foot of a majestic cliff. Deep in the heart of the rock strange secrets lie hidden, buried over time by men and nature. This year is an extra special time to visit Saint-Maurice as the town celebrates the 1,500 jubilee of the Abbey of Saint-Maurice, which dates from the sixth century. It is situated against a cliff, between Geneva and the Simplon Pass, and is best known for its connection to the story of the martyrdom of the Theban Legion,

its original practice of perpetual psalmody and a renowned collection of art and antiquities. The abbey is now the centre of the picturesque village, which was vacated in the mid-20th century and is wholly owned by the territorial diocese. It is a Swiss heritage site of national significance. The abbey has been built and rebuilt over the centuries. Excavations on the site have revealed a baptistry dating to the fourth and fifth centuries, a series of four main Carolingian-era churches built over one another dating from the 5th to the 11th century, and crypts built between the fourth and eighth century. The current church was first built in the 17th century while the tower dates to the 11th century. The Romanesque tower was reconstructed in 1945 to repair damage caused by a massive falling rock. The newly installed carillon is the largest built to date in Switzerland. Pilgrims and travellers have been stopping off at the Abbey of Saint-Maurice d’Agaune for 15 centuries. Founded in 515 by Sigismund, king of the Burgundians, the abbey is celebrating its 1,500th anniversary in 2015. It is the oldest abbey in the West to have been in constant use. Today, its walls still shelter a community of Augustinian monks. A long series of events and innovative projects will punctuate the anniversary year in 2015 to help celebrate this big birthday with the support of UNESCO. The visitor trail is based on light and imagery, the symbols of knowledge and faith. It tells an extraordinary story: that of a miraculously preserved, living religious community that bears sole witness to a spiritual and cultural activity that is not found anywhere else in the western Christian world. The visit starts from the current basilica, which dates back to the 17th century and was restored and enlarged in the mid-20th

century. After the archaeological site, the visit continues with the catacombs and then the abbey treasure. It was once the spiritual centre of the Burgundy Empire and houses one of the richest ecclesiastical treasures in Europe.
Military Fort of Cindey Adventure-lovers will thrill to visit the Military Fort of Cindey. It was my first experience visiting a military fort and I was eager to explore every nook and cranny. Fort de Cindey is a component of Fortress Saint-Maurice, which is in turn one of the three principal fortified regions of the National Redoubt of Switzerland. Fort de Cindey was built between 1941 and 1946 in the Scex cliff face immediately to the west of SaintMaurice to complement the existing Fort du Scex, built earlier in the same cliff. With Fort du Scex, it comprises a fortress complex encased in rock high above the strategic Saint-Maurice valley. The fort was deactivated in 1995 and is now open for public tours during the summer months. Fort de Cindey is arranged along a mined gallery paralleling the face of the Scex escarpment at a distance from the rock face of about 25 metres, with side galleries extending to the cliff face for observation posts and artillery positions. Lateral branches to the interior of the mountain lead to troop accommodations, the command post, ammunition magazines and utility areas. The fort was planned as a mixed artillery and infantry position that could provide supporting fire to the anti-tank barrier across the Rhône Valley at Lavey. Cindey is connected to the adjoining Fort du Scex by the natural caves of the Grotte aux Fées. Routine access to the fort for supplies was provided by an aerial cableway. Although the port has been deactivated, some of the weapons remain in place.

ocated along the snowy white Nusa Dua Beach, Grand Hyatt Bali has long been a symbol of luxury accommodation in Bali. Situated in BTDC – a compound of fivestar hotels in Nusa Dua – Grand Hyatt Bali offers not only rooms and suites but also two luxurious villas – Villa Tamblingan (three bedrooms) and Villa Beratan (two bedrooms). Both villas are located away from other hotel rooms, providing a sense of privacy and tranquillity. And the prime beachfront location means waking up to the sound of waves and drinking in glorious views of the Indian Ocean any time of day. Villa Tamblingan and Villa Beratan feature similar design principles. Both are elegantly decorated with local artefacts and design pieces. Expect a Balinese flair that is light, spacious, yet authentic. The teakwood furniture creates a luxurious yet homey feel. Every detail of the villas has been crafted with a perfect combination of luxury and homeliness, from the comfortable oversize cushions on the sofa to the rustic Balinese ceiling.
One of the luxuries of staying in a villa is the home away from home feeling – a totally different experience compared to checking into a hotel room. That homey feeling can be felt in the layout and facilities of the villas. There are no suitcases and things scattered across the floor thanks to the huge wardrobe. Relax in the living room on the plush sofa and take a nap after a long day on the beach. Sink into a hot bath in the huge marble tub – so huge that it can easily fit a family of four. The canopy bed with King Koil mattress provides a dreamy, snuggly feel. Extend the homey feeling by inviting friends over and entertain them in the spacious dining room, which can seat up to eight guests. Cooking a meal in the villa’s kitchen is simple and convenient. The kitchen is equipped with a microwave, stove, Saeco coffee machine, two-door fridge, sink and tableware from St. James. Another convenience of staying in a villa is the dedicated service given to each guest, starting from check-in, where guests can skip the queue in the lobby and check in at the villa. During the

With five pools to choose from, guests can alternate between private and lagoon pool or even enjoy the waterslide. Each spa villa is fully equipped with a plunge pool, outdoor massage bed and bathtub, spacious bathroom, indoor massage bed and yoga balé. For guests who value privacy, each villa is equipped with a massage bed for in-villa treatments. Kriya offers Balinese and Ayurvedic treatments that are focused on promoting positive wellbeing. Thus the treatments are meant not only to pamper but also to heal, such as the Pijat Cokor massage to release tension and the Katee Basti to relieve lower back pain. All treatments are performed as part of a ritual. First the therapist will start with a foot massage using salt locally sourced from the Kusamba
region, before consulting the guest on the different varieties of massage oil. The oil is soyabased and water soluble, and is light and nonsticky. After the treatment, the guest can make a wish using the golden dream ball and enjoy a sip of herbal tea in the relaxation lounge. Bejana, in Indonesian a traditional culinary vessel, offers a unique mix of five-star flair and a wide range of Indonesian dishes. With its cliff-top location, Bejana features indoor and outdoor seating on three levels. Staying true to its name, Bejana provides guests mouth-watering dishes from different regions of Bali and Indonesia, such as Soto Pesmol, a spiced coconut and seafood soup originally from Jakarta, and Bebek Betutu, a Balinese roast duck in banana leaf. Bejana’s talented mixologists have re-crafted some of Indonesia’s traditional beverages into delicious libations for guests to enjoy. Bajigur, the aromatic warm beverage from

The Culinary Cave concludes with a sumptuous lunch allowing guests to sample the dishes they created with a smile on their faces. taying at New Zealand’s luxury lodges is slow travel at its very best. At each fascinating property, guests delve into the personalities and histories of the properties and their hosts, kick their heels up amidst lavish accommodation, sample the best of local produce, and do so against some of the country’s most stunning landscapes. It’s an increasingly popular way to travel for a new generation of jet set who want to look beneath the skin of one of the world’s most sought-after destinations, especially in the cooler months of May to October when the South Island, decked out in the vibrant colours of fall, offers a brilliant respite from the heat of Southeast Asia. Our driving holiday starts at Otahuna Lodge, on the outskirts of Christchurch, the largest city on the South Island. A historic Queen Anne-style home lovingly reborn, wreathed by 30 acres of stunning gardens, and staffed by hospitality innovators, Americans Hall Cannon and Miles Refo bought Otahuna in 2007 and revived the property. executive chef Jimmy McIntyre, they have created a property that welcomes visitors from across the globe. Its five sumptuous guestrooms, including the magnificent Rhodes Suite, are decked out in ancient woods, bespoke furnishings and subtle yet cutting-edge technology. Chef McIntyre is renowned for his simplistic yet elegant approach to fine dining, a philosophy that places locally sourced ingredients, including 130 varieties of vegetables, fruit and nuts grown in the lodge’s own gardens, front and centre. Each evening his fare is showcased with canapés in the leather-clad lounge, followed by a delectable five-course dinner in the main dining room, a space filled with an imposing dark timber dining table that looks like it should be in a castle. Signature dishes include chipotle prawns with tomato and roasted pepper soup; locally caught monk fish with lemon, vanilla and a saffron risotto; and Canterbury duck breast with quince jus, kumara puree and autumn vegetables, all from the Otahuna gardens or from within 100 kilometres of the property. In remote Pigeon Bay on the Banks Peninsula, we visit New Zealand’s newest luxury accommodation concept, Annandale, a collection of four unique houses, each vastly different from the next, and each spaced a good 30-minute drive across a working farm from the
other, ensuring the ultimate in privacy. We arrive at Seascape, one of the most remote of the four homes, after a 45-minute drive by farm 4x4 along spectacular clifftops that plummet to the mussel beds of Pigeon Bay, the farm’s Black Angus cattle watching our progress. A simple farm track leads steeply down to a remote bay wreathed by a stony beach and rocky headlands. Nestled into the hillside, Seascape is stunning from first glance, a spacious, unashamedly modern villa with a glass façade that makes the most of its stunning surroundings. While there is plenty to do at Annandale, from hiking and biking to cooking classes, most guests come here for the luxurious solitude and the novel “we create, you serve” approach of executive chef Paul Jobin, which means a gourmet dinner and breakfast is cooked, vacuum packed and delivered before check-in, needing just minimal

In our case it’s marinated green lip mussels from a farm across the bay; Cantervalley black lacquer dug leg with banana lychee relish and a scallion pancake; and lemon passionfruit curd and honey macadamia wafers with the farm’s own raspberries. Everything either comes from Annandale’s farm or from producers within 50 kilometres of the property. After dinner my wife, Maggie, and I curl up on a pair of daybeds beside the outdoor fireplace and Jacuzzi, the waters of the bay before us cast in the lingering light of a startling canopy of stars. It’s nothing short of magical. Many travellers visit Oamaru, on the east coast of the South Island, for its colonies of seals and blue and yellow-eyed penguins, but instead we head for the hills, to Pen-y-bryn, a category one historic home nestled in meticulously landscapes gardens overlooking the township. Built in 1889, Pen-y-bryn was bought by Americans James Glucksman and James Boussy in 2010. The historic Victorian home boasts five rather cosy guestrooms, three of which will become suites in September. Like something out of a C.S. Lewis novel, Pen-y-bryn features a near-endless line of beautifully preserved living rooms, dens, lounges and snugs (including one featuring a full-sized billiards table commissioned by the
New Zealand houses of parliament). Filled with beautiful objects d’art from the owners' many years spent in Asia, Pen-y-bryn is a more traditional lodge, where the lines between private home and accommodation option are blissfully fuzzy, and where the Old World hospitality of the owners, married with fantastic local fare, is the major drawing card. A highlight of any stay is dinner, which commences with communal cocktails and canapés by the fire, followed by a five-course dinner in the grand old dining hall. Slow food lover James Glucksman is an Officier Maître Hôtelier in the Confrérie de la Chaîne des Rôtisseurs, the Paris-based gourmet society, and serves up dishes that are not only inventive and delicious but are almost entirely sourced from the lodge’s own gardens, home-made in its kitchens or bought from local suppliers. Combined with the fascinating décor of this historic home, Peny-bryn offers a homely inn open to travellers the world over. ou can’t miss the colonial-style Kunstkring Paleis, located on Jl. Teuku Umar in Menteng, Central Jakarta. The historical building, which celebrated its 100th anniversary last year, was formerly the Fine Arts Circle during the Dutch colonial period in the 1900s, showcasing masterpieces from artists such as Van Gogh and Picasso. That colonial-style artistry and luxury is still very much alive in the architecture and design of Kunstkring Paleis. Tugu Group (the team behind Lara Djonggrang, Dapur Babah and Shanghai Blue) took over the building and transformed it into a stylish restaurant, lounge

and café. There is also an art exhibition space on the second floor, as well as private dining rooms. Guests are greeted by the Diponegoro Room’s exotic entrance of dark wood panelling and Javanese partitions. This is the main dining area, decorated with red and white drapes, wood flooring and stunning golden chandeliers. A large painting depicting the capture of Prince Diponegoro dominates the back wall. As you take your seat, you will hear old jazz songs playing in the background. Overall, the style and atmosphere strikes a stunning balance between the Old and New Worlds.
food review
Kunstkring Paleis offers a menu that mixes authentic Indonesian fare and Western dishes. Start with the delectable Chicken Curry Puff appetizer served in white dessert spoons. If you are dining in a large group, opt for the classic Betawi Grand Rijsttafel (roughly translated as “rice table”), which features 13 different traditional dishes carried out by waiters in pikulan-pikulan Betawi style, recreating the traditional Dutch colonial way of feting guests. The Grand Rijsttafel includes karedok Betawi (uncooked vegetables served with peanut dressing), bebek opor (roasted tender duck in spicy coconut curry) and the sweet and spicy semur lidah sapi Betawi (stewed ox tongue flavoured with cloves, nutmeg and sweet soy sauce). Another crowd-pleaser is the roasted lobster in tomato cognac sauce served with saffron pilaf. It is heavy and worth it! A tantalizing mix of Dutch and Indonesian sweets makes it difficult to decide on just
one dessert at Kunstkring Paleis. The newest addition to the menu is the traditional Dutch appelflappen, a crispy apple pancake with cinnamon and vanilla ice cream on the side. There is also the pisang goreng radja, which is crispy banana fritters with palm sugar and young coconut, another reason to love Indonesian sweet treats. With its rich history, royal ambience and extensive menu, Kunstkring Paleis is the venue to explore Indonesian tastes and traditions. Just ask Victoria Beckham and Ukraine’s President Petro Poroshenko, who dined here during their visits last year. Kunstkring Paleis Jl. its choice of delicious Indonesian dishes. The main dining room at Plataran Dharmawangsa is housed in a traditional Joglo house with a massive chandelier gracing the middle of the room and Indonesian handicrafts providing decoration throughout. As I enter the dining room, the sounds of a piano greet me, adding to the elegant ambience and whetting my appetite. For the appetizer, the waiter suggests Brinjal Chips, which is aubergine chips with chilli, garlic and chicken floss. It is an excellent suggestion. This might be the best brinjal in town, crispy and well spiced, with the chicken floss adding richness to the dish. For me, this is a highlight of Plataran Dharmawangsa.
food review
For the mains, I order the Orak-Arik Ayam Pare, a stir-fried chicken with bitter gourd; Gurame Telor Asin, which is fried Gourami fillet with salty eggs; and Kangkung Belacan, a spicy sautéed water spinach with shrimp paste, ginger, shallots, garlic and eggs. I also have the Ayam Bakar Joglo, a grilled chicken braised with sweet soy sauce, shallots, candlenut and chilli, and the Nasi Goreng Kepo, which is a mellow spicy fried rice with crab and scrambled eggs. The Gurame Telor Asin is a standout with its combination of fried gourami and salty eggs. Another standout is the Nasi Goreng Kepo. Kepo is an Indonesian slang word that means “the people who are always curious and want to know so badly,” and perhaps this dish was so named because you will be curious and want to know so badly what ingredients were used to make the fried rice taste so good.
For dessert, the waiter brought Es Tiga Warna, a blend of carica fruit, kolang kaling, selasih and simple syrup; Onte-Onte, a sautéed banana with caramelized desiccated coconut; and OndeOnde. Onde-Onde typically uses mung bean paste, but Plataran Dharmawangsa uses red bean paste for its filling. Plataran Dharmawangsa is the ideal destination for enthusiasts of Indonesian cuisine. With its exotic setting and exquisite cuisine, Plataran Dharmawangsa truly is an exotic escape in Jakarta.

Enchanting Riva Text by Timotius | Photos courtesy of The Park Lane, Jakarta
O
ne of the best things about the centrally located Park Lane Hotel in Jakarta is their secret weapon – Riva Grill Bar & Terrace. This gorgeous restaurant lets you escape the bother of Jakarta for a moment and hide away in this culinary paradise. Riva Grill Bar & Terrace is located on the first floor of the Park Lane. It consists of a lounge, bar, dining room and outdoor dining space. Riva Grill Bar & Terrace actually has two outdoor areas, one of them facing the street outside, Jalan Casablanca, and the other beside the hotel’s swimming pool. If you are looking for a bit of calm and serenity, ask for a seat near the pool. The first time I entered Riva, I was astonished by their collection of wines in the front room. Some of the wines were set up on a table, along with glasses. It is eye-catching and mouth-watering. Riva has opted for a semi-open kitchen (it’s not really open but diners can follow all the action through the large windows). It is always a pleasure watching the pros in action, as meal goes from pot and pan to plate and then to table, all under your watchful eye. It is a real pleasure. After a little tour of the restaurant, I was seated near the swimming pool and handed a menu, which I immediately pored over. Riva’s menu is divided into From the Sea, From the Farm, From the Garden, and From the Grill & Wood Oven. I started with the Green Spinach Salad, Thai Green Mango Salad and Javanese Oxtail Consommé. The

Green Spinach Salad and Thai Green Mango Salad were From the Garden and the Oxtail Consommé was From the Farm. The Javanese Oxtail Consommé really captured my attention. The oxtail was served along with minced potatoes and carrots, and the waiter then poured the soup from a glass teapot. I finished the appetizers and almost immediately the main course arrived at the table. I had the Braised Lamb Australian Foreshank, Sautéed Salty Prawns, Pan-Fried Barramundi and LowOven Baked Asian Soy Chicken. My favourite was the Sautéed Salty Prawns. I loved its spicy and salty taste, along with the crispiness of the dish. The Pan-Fried Barramundi was also a hit, the yellow root sauce giving the dish a wonderful flavour. I also managed to save space for dessert, the Chocolate Ginger Mousse with Strawberry Sauce and Vanilla Ice Cream. It was the perfect ending to a very good meal. Riva Grill Bar & Terrace is the whole package. You can relax over a delicious meal, away from the hectic pace of the city. And don’t forget that Riva Grill Bar & Terrace has a lounge and bar if you are not quite ready to face the city after your meal. Have an unforgettable dining experience!

ne of the best things about traditional Indonesian food is its homey feeling with every bite you take. Whether you are in the middle of the crowded rush of Jakarta or in some secluded corner of the archipelago, you will have a hard time resisting traditional Indonesian food. That’s one reason Boga Prabu restaurant has opened in the heart of Jakarta, to bring guests the taste of traditional Indonesian food even in the busy metropolis. Boga Prabu is located at Epicentrum Walk in Central Jakarta. The name Boga Prabu comes from the Sundanese language and means “food for kings”. A highlight of Boga Prabu is the Nasi Bogana, an Indonesian rice dish originally from Tegal, Central Java. The rice is typically wrapped in banana leaves and served with side dishes. At Boga Prabu, the sweet-tasting Nasi Bogana is served in banana leaves along with boiled eggs, sautéed tempeh, fried chicken liver, chicken curry and greens.

Along with the Nasi Bogana, we ordered the Nasi Goreng Ikan Asin, which is fried rice with anchovies. This is the perfect choice for fans of hot and spicy dishes, and the taste of the fried rice was made even richer by the anchovies. For an appetizer, we recommend the Tahu Kremes, fried tofu with crunchy chips and mini-sliced fried chillies. Boga Prabu offers Indonesian foods from across the archipelago, including Nasi Kebuli, Nasi Langgi, Nasi Liwet, Nasi Timbel Komplit and Nasi Uduk. There are also traditional snacks like Roti Bakar and Pisang Ijo Makassar. Happy eating!

Love from the Kitchen The Executive Chef at Grand Hyatt Jakarta, Rolf Knecht, talks to us about his life, career and his passion for the culinary arts. Text by Timotius | Photos courtesy of Grand Hyatt Jakarta
112
MAXX-M
profile How long have you been an Executive Chef? What made you first decide to become a chef?
I have been working as an Executive Chef at Grand Hyatt Jakarta for around two and a half years now. Before this, I worked in Canada, Japan, China, and now in Jakarta. Well, the reason I decided to become a chef is because I grew up in a family who works in the hospitality industry. My father was an executive chef in Hyatt. In fact, he opened most of the Hyatts in Asia in the early ’60s. The same goes with the rest of my family. My grandparents were both chefs, my sister works in a hotel and my mother is in the hospitality industry. We are a dynamic family! How did you start your career?
When I finished high school in Switzerland, I wanted to enter a culinary school, but unfortunately there was no culinary school in Switzerland at that time. So, I was offered two options, to enter university or to have an apprenticeship in a restaurant, and me being 15 at the time, I chose the latter. I never looked back; it was the right decision. What is the most interesting thing about your job?
For me, the most interesting thing about being a chef is that I get a chance to meet different kinds of people from different cultures, ages and nationalities every day. Also, I’m not only working as a chef, but I’m also a manager, accountant and in marketing. If all I did was just cooking, I would be bored. What do you think about Indonesian food?
Personally, I like spicy foods and I see that many Indonesian dishes use strong spices and herbs. I am amazed that Indonesia has so many different kinds of sambal. But if you asked what my favourite food is, then it has to be gado-gado. What is your personal culinary style?
My style is simple. I believe that the most important thing is to never change the basic flavours. The tomatoes should taste like tomatoes, the pineapples should taste like pineapples. Don’t ever change the basic flavour in a drastic manner, like changing durian into a sweet candy. What is your new concept for C’s Steak and Seafood?
The concept of C’s Steak and Seafood is not really a new one; it’s the same with every other restaurant serving their products. But what makes C’s Steak and Seafood different is that we use local ingredients for our menu as often as we can, not because I personally find the local products to be unique, but I wanted to support local farmers. Since last year, I started to use local honey and organic tomatoes. The guests were sceptical at first, but when I asked them to try honey and tomatoes from here, they instantly loved it! What kinds of concerns does Grand Hyatt Jakarta have when it comes to its restaurants?
Grand Hyatt Jakarta is always concerned about the quality of the food and the ingredients. Not only Grand Hyatt
Jakarta, but all Hyatt hotels are concerned about this. As with other hotels, Hyatt is also environmentally conscious, such as providing healthy menus and helping those seeking healthier diets to make their own menus. What are the most exciting and the most difficult things about being a chef in Grand Hyatt Jakarta?
The most exciting thing as a chef in Grand Hyatt Jakarta is that as a company and channel manager, Hyatt has supported me to be in touch with the local community and has let me use local ingredients. I convinced them that I’m buying cheap ingredients for a reason; it fits my requirements. Speaking of challenges, my only problem is Indonesia’s strict rules about importing some ingredients. What advice would you give someone who wants to be a hotel chef?
Before you make your decision, I urge you to try and work in a restaurant. You know, there is a big difference between someone who loves to cook and someone who cooks for a living. A lot of people love cooking, but they don’t fancy being a chef. But if you have the experience and actually enjoy working in a restaurant, then you will have no trouble being a chef in a hotel. profile How did you get started?
To be honest, it’s not something that I chose; it chose me. When I was a little kid, I would watch my father cook every Sunday, and slowly from there I began to fall in love with the idea of cooking. My father pushed me to pursue a career as a chef, and I eventually enrolled in culinary school in Florence, Italy and stayed there for three years. The city is the inspiration for my fascination with Tuscany cuisine, which I believe is the hub for all Italian food. Is there a side of Italian cuisine that most people don’t know about?
Italian cuisine is one of the most diverse and richest cuisines in the world, so to pick just one aspect is not easy. However, the myth that every Italian dish uses olive oil is not true. Take my hillside hometown for example, Merate, where it is impossible to grow olives. Instead, we use butter or lard (fat from pigs or ducks) for our everyday cooking. You have had quite an overseas adventure, from Jakarta to Oman to the Philippines and back again. How have you found the experience?
Being a chef is not limited to cooking dishes you are familiar with and my overseas experience has shown me that. I have learned how to make different dishes from different cuisines with different kinds of flavours. I have also learned that the easiest way to learn about a culture is from the way they eat. With food, it is possible to know who your clients are, where they come from and how to deliver what they like. If you dig a bit deeper, you will learn why a certain culture cooks the way they do. For example, farmers in Italy eat slightly crisp dishes since they used slow-burning ovens to cook. Or how rich the Spanish influence is in the Philippines, evident from the myriad seafood dishes. How does Indonesia differ from other countries?
Indonesia has always been different for me because I connected well with the country from the beginning. I visited Jakarta over a decade ago and being back now and witnessing the growth the city has gone through is exciting! However, the changes happening to the city have not changed the people; I still find them deeply rooted to their culture, which is a complete opposite to Italy and one of the reasons I love Indonesia. Can you share with us your plan to revitalize the InterContinental menus?
I want to understand what InterContinental’s visitors want and deliver it to them. I have prepared new menus that will be a nice surprise to our loyal customers, such as Crab Spaghetti and Chestnut Cappuccino Soup. However, there are a certain things that I want to keep intact, specifically the Italian roots in my cooking. I don’t want to go too far and mix things up and end up creating peculiar dishes. My aim is to give visitors real, authentic Italian cuisine that they will remember forever.
Speaking of Italian, what are your thoughts on the rapid growth of Italian restaurants in the city?
On one hand, I am glad Indonesians have been very receptive and curious about my home cuisine; that makes me happy. On the other hand, I am not very keen about the false advertising that has been going around. However, I believe that in the end the decision lies with the people and they know when food is authentic or not. It’s not wrong, of course, to infuse certain flavours into Italian cuisine and try to make it new, but I believe that’s not how it should be done. Share with us one Italian dish that you think would be a hit with Indonesians?
I think the flat ribbon pasta Pizzoccheri would be a tongue pleaser with its simple ingredients of cheese, cabbage, potatoes and garlic. In your eighteen years as a chef, what has been your proudest moment?
I have had many good experiences that I am grateful for. However, one moment does stand out, from when I was in the Philippines from 2010 to 2012. I got the opportunity to set up an Italian restaurant from scratch. The experience was amazing because I could assemble my own team, who were my schoolmates, to fly down there and working alongside them was so special to me. Together, in a period of one year with a team of six, we managed to become one of the top ten restaurants in the country.

When Work Feels Like Home “The familiar surroundings of warm, friendly faces, comfortable beds and linens in the guestrooms, ensuring that all the facilities are running well and genuine service is provided, those are the ways to make a hotel a homey place for guests,” Pria Kunta Biswara said. Text by Ester Pandiangan | Photo courtesy of Samali Hotels Do you have a unique experience you can share with our readers?
We had a group of guests from Canada who were staying at Allium Tangerang and they requested a city tour. They had visited most of the countries in Southeast Asia. One of the places we visited was Taman Mini and it surprised me to see how excited they were to see a miniature version of Indonesia. It was a small thing but it makes you appreciate the wonders of your own nation. How can teamwork affect the success of a company?
Let’s take a vehicle as an example. Every staff member in each department is part of the car’s engine and they need to move simultaneously and dynamically for the car to run well. When it needs to go fast, everyone must move fast together and be in sync. I heard that you love music. What kind of music do you like?

He was the first member recruited when Samali Hotels & Resorts was established in August 2011. “I know most of my colleagues; it connects me to the hotel,” said the music lover.
What should people know about the hotel industry?
What guests should know is that hoteliers are not just doing their job because it is their duty. In the hospitality world, service should come from the heart. That is the secret for hoteliers who wish to keep their guests happy.

I like all kinds of music because I enjoy music not through the lyrics, but through the instruments used in the songs. It’s because I love to play the guitar and keyboards. My everlasting favourite song is "One Day In Your Life" by my favourite singer, Michael Jackson. How do you keep focused and deal with stress at work?
I keep focused by instilling in myself the essentiality of providing excellent service to every guest who comes to the hotel and to always think positively in the face of any challenge. Is there some place you dream of visiting?
Dubai and staying at the Burj Al Arab Hotel, which architecturally looks very modern.

Work Hard & Enjoy Your Job He never dreamt about working in hospitality. wenty-three years later he is General Manager of Hotel Ammi Cepu, Blora, a position he has held since September 2014.
What is your most important responsibility as General Manager?
Keeping the goals on track and leading the team to achieve these goals. What got you interested in the hotel industry?
In the hotel world, there is always something new and you are faced daily with different situations and conditions. I most enjoy meeting different people from different countries and people from other parts of Indonesia, with different cultures, backgrounds and social levels. Have you ever had a ‘unique’ guest, maybe someone a little fussy or had many complaints, and how did you handle it?
You have to be convinced that working in the hospitality industry is basically a business that should create a beneficial relationship for both sides, to create satisfaction and to be respectful to others. The key is to put yourself in their shoes, to verify whether the complaint is reasonable or not, but most important of all is to first listen carefully to guests and then decide how best to deal with the situation. Have you had any unique experiences working in hospitality?
I helped a family from the Netherlands who were staying at Hotel Ammi Cepu and wanted to find their roots in Cepu. They didn’t have much data to go with and no public library was available to search for references. Finally, after all the effort,
we were able to give our guests a big smile and see their happy faces, which is what makes working in the hotel industry worthwhile. What makes Ammi Cepu different from other hotels?
We deliver a whole new kind of service experience in Central Java. Samali’s tagline is HOTS (Harmony of the Senses), which gives us an excellent guide to provide excellent service through all five senses for our guests – sight, sound, touch, taste and scent. Do you have a motto in life?
The words of Wayne Dyer, who said, “What we think determines what happens to us, so if we want to changes our lives, we need to stretch our minds.”

n conjunction with the 20th anniversary of Shangri-La Hotel, Surabaya the luxury hotel hosted its second charity run, Race and Care, earlier this year. The annual sporting event started in 2013 as a social gathering for the hotel’s guests and stakeholders and to give back to the community, with all the proceedings donated to charity. This year’s Race and Care offered something different, with participants invited to create their own race on the hotel’s 2.5-kilometre racetrack for two hours. To add more fun, participants tied green balloons to their wrists and flooded Surabaya’s main road of Jalan Mayjend Sungkono, creating a long line of bright green dots and filling the street with laughter and a sense of togetherness. The charity run started with full-blown force at 6am and was opened by the hotel’s General Manager, Martin Brenner, who welcomed all participants and extended his deepest gratitude for all their contributions. This year, Shangri-La Hotel, Surabaya doubled the number of runners from the 400 in 2013. Mr Brenner said more than 1,000 tickets were sold for the event. “We have more runners than before; almost 1,000 runners joined us on the track, which was fantastic. The cooking class was a hit with media representatives and Allium Hotel staff members, who learned how to create an array of sushi dishes. Samali also took the opportunity to introduce their unique breakfast system EMAB, which stands for Early Morning self-service “Ammi/Allium/Arum/ Azara” Breakfast. EMAB is for early risers and is available from 4.30am to 6.30am, before the restaurant opens the breakfast buffet. Thus I was in Bangui, the capital of Central African Republic, from July to October 2014. Central African Republic is located in the centre of Africa. It is a land-locked country, making the provision of logistics difficult, and the months-long civil war that exploded in 2013 added to the country’s woes. I landed in the country on 14 July 2014, excited about the adventure. I was booked at the Oubangui Hotel, located by the Congo River. The building is showing its age, there was no water a couple of days, and I got trapped in the lift once. Despite all the charms of the Oubangui and the gorgeous view of the Congo River, I moved to the Levy Hotel, which is cheaper and closer to the city.
accommodation in Bangui, a two-floor house I rented with a colleague. There was no electricity between 6 pm and midnight, the water was unreliable and after work I would often find myself sitting on the couch, staring at a candle, my mind free to wander. In the capital of this former French colony, military vehicles are seen everywhere along with international assistance troops. It felt like being in a war zone and it was frightening. On the night of 9th October, we heard gunfire and every house turned off their lights at once. There were some terrifying moments. My colleague, however, remained calm. She told me this was nothing compared to what had happened in her country, Rwanda. I prayed, she prayed, we prayed.
Bangui reminded me of a village in Indonesia, with the damaged dirt roads and orange dust everywhere.
God is good. And amidst the sound of gunfire, I managed to call my sister. War is the worst crime. Religion is misused to divide and separate this once peaceful country. War divides families, cuts blood ties, destroys lovers, and annihilates trust and confidence. And what is behind the war?
Caterpillars are a delicacy and they sell them in bunches, dried or live, at Mpoko market, along the airport road. Wild mushroom, grow everywhere. I loved to cook creamy mushroom soup at my last
From afar, softly yet painfully whispering, “Ne me quitte pas, je ne vais plus pleurer, je ne vais plus parler, je me cacherai là, à te regarder, danser et sourire, et t’écouter, chanter et puis rire.”

Ida Director : Pawel Pawlikowski Cast : Agata Kulesza, Agata Trzebuchowska & Dawid Ogrodnik Earlier this year, "Ida" won the Oscar for Best Foreign Language Film, becoming the first Polish movie to be so honoured. The drama is set in 1960s Poland and tells the story of a Jewish nun, Ida, who embarks on a life-changing journey with her estranged aunt to learn more about her Jewish family and their tragic background. Shot in a crisp black and white, the movie’s biggest asset is undoubtedly its monochrome palette, the perfect background for a soul-searching drama. The cinematography by Lukasz Zal and Ryszard Lenczewski plays an important part in delivering what is a simple story in an engaging manner. The titular character, Ida, beautifully played by debutante Agata Trzebuchowska, is one of those characters you can’t take your eyes off. Her naivety in the beginning of the movie is delicately controlled, and as Ida’s journey unfolds her character gains depth and nuance. Polish film star Agata Kulesza stars as Ida’s alcoholic aunt, Wanda Gruz, another character who demands your attention. The way these two characters become intertwined in each other’s lives is emotional and sincerely told by director Paweł Pawlikowski. In the end, "Ida" is a surprisingly silent, mysterious and sometimes bewildering movie that rightfully deserved all its accolades. (UB)
Two Days, One Night Director : Jean-Pierre Dardenne & Luc Dardenne Cast : Marion Cotillard & Fabrizio Rongione Marion Cotillard won the Academy Award for Best Actress for her performance in "La Vie en Rose" (2007) and has enjoyed a thriving career in Hollywood since. She returns to her roots for the Dardenne brothers’ latest drama, "Two Days, One Night". Shot in Belgium, this heartfelt drama tells the story of Sandra, a young Belgian mother who learns that her co-workers have opted for a significant bonus in exchange for her dismissal. Now Sandra has the weekend, two days and one night, to convince her co-workers to give up their bonuses in exchange for her job back. Will she succeed? Sandra is an interesting character that many will sympathize with, not because of her tragic predicament, but because of the demons she struggles with, revealing a real, fragile human character. This is an honest, heart-wrenching and at times stressful film, a testament to the work of the Dardennes and the mesmerizing performance of Cotillard, which can make you momentarily forget that Sandra is a fictional character. Secret Daughter Author: Shilpi Somaya Gowda 390 pages Published: HarperCollins Indian authors have a unique style that they employ to explore the rich culture of the subcontinent. That style can be seen in the works of Jhumpa Lahiri, Chitra Banerjee Divakaruni and Chetan Bhagat, among others. It is also found in "Secret Daughter", a novel by Shilpi Somaya Gowda. Shilpi creates a space somewhere between Chitra, who is so very Indian, and Jhumpa, whose straightforward writing is more typical of an Indian who has lived abroad, creating in "Secret Daughter" an awesomely likable book. This is a story of two women connected by a daughter. There is Somer, an American woman who really wants a child but is unable to conceive, and Kavita, a poor woman in India who leaves her infant
daughter at an orphanage because of the prejudice that daughters are a burden. Somer has an Indian husband, Krishnan, and with her mother-in-law’s help she and her husband adopt Kavita’s daughter. There is a rich mosaic of life in "Secret Daughter", exploring the joys and pains of life. One of those pains is Somer’s feeling of not being accepted by her family because she is different from her husband and daughter, and Somer’s growing awareness that love may not be enough to unite them. Then there is the story of the adopted daughter, Asha, who as she grows up begins to wonder about her biological parents. And Kavita and her husband finally have a boy but this son in whom they put so much hope is fated to one day disappoint them so much. (EP)
Leaving Time Author: Jodi Picoult 471 pages Published: Ballantine Books Jodi Picoult is known as an author who brilliantly ties up themes, especially family, health and social issues, in books like "My Sister’s Keeper", "Tenth Circle" and "The Storyteller".
Alice, an elephant researcher, disappeared during a tragic accident at her sanctuary. As the years go by, Jenna believes that her mother is still alive and that they will someday reunite and live together.
Yes, we love her books, even if they sometimes feel like they bleed into each other, covering the same ground and chewing over the same themes.
Jenna contacts Serenity Jones, a psychic who specializes in finding missing people, and Virgil Stanhope, a private detective who originally worked on Alice’s case. In the middle of this search for her mother, Jenna discovers Alice’s journal and reads about mother’s passion for elephants and how she met her husband. (EP)
But "Leaving Time" is unlike anything she’s written before. "Leaving Time" tells the story of a 13-year-old girl, Jenna Metcalf, who lost her mother, Alice Metcalf, when Jenna was 3.
