MANAGER'S MESSAGE

DEAR PROVIDENCE MEMBERS, What a year we are having at the Club! The increased activity has been record breaking on many fronts and we thank all our Members for your tremendous support. Our goal of maintaining the Club as your “Safe Haven” has really provided a great atmosphere of happy members and staff. As the world continues to fight the spread of Covid and its variations, McConnell Golf and Providence Country Club will continue to practice the safest protocols possible. One of the really cool things about McConnell Golf you can all be part of is our hosting of the Wyndham Championship every year at Sedgefield CC in Greensboro, NC. I’d like to take a minute to share some insight with you. This great PGA event is well respected by the players as is evidenced by the exciting participation of many top rated players. As part of the McConnell team, we the staff, play a unique role in the execution of the tournament. We recruit our Executive Chefs, Food and Beverage Managers, Culinary and Service teams from all of our McConnell properties. We provide hospitality and food and beverage for thousands of people daily, including all the players, caddies and media. It is a tremendous amount of work but is such a special opportunity for our staff. I would highly encourage all McConnell Golf Members to check out this annual event and take advantage of this unique PGA opportunity. We continue to enhance our hospitality and food and beverage operations. This past year in McConnell Golf with the leadership of our COO, we created and developed our own “McConnell Fine Wine LLC.” We formed this LLC to help us introduce single, small vineyards with innovative wine makers under our own private label, M Signature Series. We chose our specific winemakers based on their ability to produce some of the very best wines from particular regions, their talent to be consistent, reliable and bold in terms of challenging the status quo. This year we have brought on board a tremendous Knollwood Vineyards, Right Bank Red Blend. A spectacular blend of merlot, cab-Franc and cabernet. We also brought in a beautiful pinot grigio from Juslyn Vineyards, harvested from a small lot in Anderson Valley. Unlike Italian grIgios, this wine has silky smooth overtones with rich peach and subtle tropical flavors. Outstanding with light seafood and pasta dishes. My personal favorite is the delicious cabernet we brought in from LPGA star Cristie Kerr. This rich purple wine is velvety smooth with a deep but rounded texture with definite blueberry and subtle spicy notes. Great to drink now but also perfect to hold, as the tannins will only continue to soften as the wine ages. Please note, we offer these very special wines well below normal margins as a benefit to our Members. Don’t miss this opportunity to enjoy these exceptional wines at amazing prices. AGM MESSAGE & EVENTS DEAR MEMBERS, With the summer coming to an end and the fall season in the air, football season is upon us! You will be able to view all of our Carolina Panther football games this year at our West Pavilion area all season long with food and drink specials. We will also be bringing back our monthly Champagne Brunch the last Sunday of the month moving forward. We have some exciting events and activities planned for this upcoming fall season and are looking forward to sharing these experiences with you. We start the month of September out hosting Hank McCrorie, owner of Burly Winery, on September 2nd. I know this is a wine dinner that many of our Members look forward to every year. We then move right in to our Annual Labor Day Weekend Celebration at the pool on Friday, September 3rd with our End of Summer Party and then Monday, September 6th at the pool with a celebration for Labor Day. Both of these events will be full of activities for the whole family to enjoy. We round out the month of September with our annual Men’s Member-Guest “Cates Invitational” Golf Tournament. We are pulling out all of the stops this year to make sure this is an event to be talked about for a long time to come. In October for our more adventurous Members that enjoy the outdoors we have our Annual Father-Child Campout on October 15th. Participants can enjoy unlimited s’mores and a movie on the front lawn. We encourage our Father’s to pitch a tent and enjoy the great outdoors with their favorite little people. For the “better halves” this year we are hosting a Mommy Mixer at the West Pavilion the same night. We hosted our first Blues, Brews, and BBQ event last October and we had such great feedback that we are bringing it back again this year on October 23rd. We finish the month of October with our Annual Halloween Spooktacular this year on Friday, October 29th. We will have haunted hay rides, spooky ghost tours, and of course our monster mash party as well! Our family here at Providence continues to grow at an astronomical rate. So, I would like to let the new Members know as well as remind some of our seasoned Members about some events that we host every week for our Members to enjoy. Wine-Down-Wednesday is held on Wednesday’s of every week. We offer half price bottles of wine on this night for our Members that dine with us in the dining room or bar and lounge areas. We also host our Member Birthday night on Thursday’s every week. Come join us in the dining room or bar and lounge area for a complimentary entrée and dessert of your choice on one of these Thursday nights during the month of your birthday. Our most popular weekly Member event we host happens every Friday night where we offer our $5 Friday appetizer selections. The Chef and his culinary team create three $5 tapas style appetizers for you to enjoy and the bartenders pour $5 glasses of wine and craft $5 cocktail as well. This is an event that I know a lot of our Members look forward to every week and it is always a good time! Keep your eye out for our monthly Spirits and Cigar nights as well which continues to have a following and gain interest. The last Sunday of every month we hold our Champagne Brunch. Our culinary team puts out a beautiful spread of breakfast and brunch items, omelets made to order right in front of you, and of course unlimited mimosa’s! I personally know how difficult it is to find someone to watch the kids when you just want an adult night out. For those parents that want to attend one of our dinners or events we do offer child watch in our Providence Playhouse and generally have a kid’s night out for all of our major adult events. They can have a night out with their friends with their own entertainment and activities while you enjoy yourself too. I hope you all have a great rest of your summer! THE STORY BEHIND THE NAME AND THE OAK TREE

The name for BURLY originates from founder Hank McCrorie’s college football days, when he was dubbed “Burly Bear” by the local paper. The nickname stuck among his teammates and given the bold nature of this wine, is more than a befitting tribute. The oak tree display on the label is not only a symbol connecting the McCrorie’s childhoods – Hank growing up surrounded by the beautiful southern live oaks of North Carolina and Bernice the sprawling live oak trees at the family ranch in Northern California – but also embodies the intrinsic flavors of tannins and oak, balanced by the beauty of its velvety, rich and flavorful layers.

FROM THE LINKS What a great summer it was at Providence, thank you all for making the warmest months of the year enjoyable. Junior Golf participation is on the rise and it’s been fun seeing the game grow with all the families who are playing golf together. I’d like to welcome all of our new Providence Members to the Club, we’re excited to meet you all and help you work on your game. As we head toward the back of the golf calendar we look forward to The Cates Invitational (Member-Guest), Fall Member-Member, and a few other events before we close out the competition calendar with Turkey Trot and Spence Test completing the year in November/December. Hitting fairways this time of year is essential to going low. It’s not uncommon to search for a ball in the rough for a few minutes, or even losing it on some occasions when the Bermuda grass is as long and thick as it currently is. Missing the short grass makes it extremely difficult to hit the ball close to the hole. For the next few months let’s focus on finding more fairways which in turn should help us attack the hole locations more frequently. Let’s take a look at how I try to find the fairway off the tee… First: Play the ball off the inside of your left foot. This will allow you to hit the ball on the upswing instead of hitting down on the ball. During the takeaway, turn your left shoulder behind the ball (under your chin), and keep your left arm straight during the backswing. Second: From the top of your swing, begin the downswing with a solid body turn, try to avoid swinging the golf club with your arms as it can make it difficult to time proper contact. Do your best to rotate your body toward your target on the downswing, this will get you turning in a proper manner. The arms will follow the turn of your body as the momentum should carry the extension toward the golf ball. Focus on keeping your head over the top of your right foot, or just inside your foot. Finally: All of your weight/momentum should be on your lead foot or toward the target as shown. Proper unwinding of the body has allowed me to finish

GREENS AND GROUNDS

PCC GOLF COURSE UPDATE It is hard to believe that it is already September. As we start to step away from the summer rush of trying to keep everything maintained during peak growth, we now transition into a new time of year and a new season. However, this time of year is just as critical if not more critical than all others. Lots of planning and careful time-sensitive and temperature-dependent decisions are made during the fall. On top of dealing with leaf cleanup for the next four months, we will be carrying out processes such as raising height of cut on greens/tees/fairways, Spring Dead Spot fungicide applications for greens, pre-emergence herbicide applications for winter annual weeds, course-wide fall fertility, and overseeding. These things are all part of the plan between now and winter dormancy. Everything that we do this time of year has an impact on how we sustain conditions during the winter and also how we transition OUT of dormancy in the spring. All of these things were actually planned out in 2020 as part of the 2021 agronomic plan. Over the next few months, we will be doing lots of reflecting about how things have gone so far this year and what may need to change for next year. Good things, mistakes, financial adjustments, pesticide program, fertility schedule, and new maintenance strategies going forward will all be taken into consideration for how we plan for next year. One thing that we as a staff always look forward to every year is The Cates Invitational. After having the event last year with no guests, we can’t wait to showcase our golf course in a way that it has never been seen before. I have had the privilege of leading a very talented and ambitious crew this year. I can assure you that this year’s member/guest tournament will be one for the record books. Please be sure to thank the maintenance staff when you see them for a successful year at PCC. I sincerely hope that you have enjoyed the golf course this year. MCCONNELL GOLF NEWS His top 30 effort earned him a check for $41,013 and a spot in the Korn Ferry Tour Finals, the three-event series that determines PGA Tour eligibility for the 2021-22 season. Smalley has made the cut in all five of his PGA Tour starts and earned enough FedExCup points to finish inside the top-200 and qualify for the Korn Ferry playoffs. Smalley joined Sedgefield in June of 2020 and estimates he has played 75 rounds or more on the classic Donald Ross design. “I feel pretty comfortable with the lines on each hole,” he said during the week. “The course is always in really good shape. It’s playing a little different than it usually does for us. There’s a little more runout in the fairways, which has changed a couple of the clubs that I hit off of the tee. KEVIN KISNER WINS WILD 6-MAN PLAYOFF AT THE WYNDHAM CHAMPIONSHIP Kevin Kisner birdied the second extra hole to end a six-man playoff and capture a thrilling 2021 Wyndham Championship at Greensboro’s Sedgefield Country Club. Known as a dogged match-play competitor, Kisner stiffed his approach shot on 18 and calmly rolled in a 3-foot putt. For the victory — the fourth of his career and first since 2019 — the former University of Georgia Bulldog banked $1,152,000.

Smalley enjoyed plenty of local support during the week. Along with his father and his mother, Maria — both of whom have caddied for Smalley throughout his career — his sister, Katie, and numerous friends and playing partners from Sedgefield followed his group and rooted him on. “It was nice to hear their cheers out there,” Smalley said. “I don’t get to play in front of a whole lot of people very often. It’s pretty cool to have people scream at you after you make a putt. To have an opportunity to play a PGA Tour event on your home course is pretty special. I think it helped me out quite a bit. I know my way around. I’ve played out here numerous times, so I felt comfortable on the course. To have that finish was pretty cool.”

Adam Scott shot 65 in the final round to make the playoff. He had a chance for victory on the first playoff hole, but his 4-foot birdie putt never threatened the cup. Kisner and Scott were joined in the playoff by former champion Si Woo Kim, Braden Grace, Kevin Na and Roger Sloan. It marked just the third time in PGA Tour history that six golfers have gone to a playoff. Kisner began Sunday’s final round four shots behind leader Russell Henley, but he birdied Nos. 16 and 17, eventually shooting 66 to reach 15 under and the playoff. “My first playoff win,” said Kisner, who was previously 0-5 in playoffs prior to his Wyndham title. “To be standing here is pretty sweet.” Henley held the lead after the first three rounds. He recovered from a slow start on Sunday to reach 17-under after a birdie on the 10th hole, but the Georgia Bulldog bogeyed three of the next four holes and came to the 72nd hole needing par to stay at 15 under. He fell short of the playoff after narrowly missing a 5-foot par putt. It proved a brutal ending to what had been an otherwise amazing performance from Henley. McConnell Golf member Alex Smalley didn’t quite play his way into the six-man playoff, but the former Duke University star gained plenty more along the way. Playing on his home course, Sedgefield CC, the 24-yearold Smalley carded three rounds in the 60s, including a sizzling 64 on Friday. He responded to the heat of Sunday’s final-round pressure in equally torrid fashion, finishing his day with three straight birdies and a 4under 66. In just his fifth PGA Tour event, playing on a sponsor’s exemption in a fullfield event on the last weekend of the PGA Tour regular season, Smalley finished at 10-under par and tied for 29th.

SEPTEMBER COOKIE OF THE MONTH: PB&J CRUMBLE COOKIES Sean O’Neill - Treyburn Country Club This cookie comes from one of the first kitchens I ever worked in. The Chef there got a new bread maker and we tried out a couple of bread recipes. He found a peanut butter and jelly bread that turned out amazing. We put it on the menu after I made a grilled PB&J on the PB&J bread for lunch one day.The kids loved it and from there we tried just about every PB&J recipe we could. This cookie is one that stood out and was well liked.

INGREDIENTS Cooking spray or butter, for coating the pan 2 Cups All-Purpose Flour ½ TSP Baking Powder ½ TSP Fine Salt 12 TBSP Unsalted Butter, at room temperature 1 1/3 Cups Granulated Sugar 1 1/3 Cups Natural Creamy Peanut Butter (no sugar added), at room temperature 1 Large Egg 1 TSP Vanilla Extract 1 1/2 Cups Concord Grape Jelly, at room temperature 2/3 Cup Coarsely Chopped Salted, Roasted Peanuts (Optional)

DIRECTIONS Arrange a rack in the middle of a convection oven and heat to 325°F on low fan. Line the sides and bottom of a half hotel pan with aluminum foil, then coat the foil with cooking spray or butter; set aside. Whisk the flour, baking powder, and salt together in a medium bowl; set aside. Place the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat on low speed until combined, then increase the speed to medium-high and beat until creamed. Stop the mixer and scrape down the sides and paddle with a rubber spatula. Add the peanut butter and beat on mediumhigh speed until combined. Add the egg and vanilla and continue to beat until completely combined. Stop the mixer and scrape down again. Return the mixer to low speed and gradually add the flour mixture, stopping when the flour is almost incorporated (do not over mix). Remove the bowl from the mixer and fold in the remaining flour by hand with the rubber spatula. Sprinkle 1/2 of the mixture in the baking pan and press into an even layer. Bake until the top is light golden-brown, 15 to 20 minutes. Dollop the jelly over the crust and spread into an even layer as best as you can without disturbing the crust. (Don’t worry if the jelly doesn't spread much, it will melt in the oven.) Sprinkle evenly with the chopped peanuts, if using. Using your hands, crumble the remaining dough into pieces about the size of almonds and sprinkle evenly into the pan. Return the pan to the oven and bake until the top is golden-brown, about 20 minutes more. Remove the pan to a wire rack and let cool completely. To serve, grasp the foil in the middle of the pan and lift the bar cookie slab out of the pan and onto a cutting board. Cut into bars.

OCTOBER COOKIE OF THE MONTH: CHOCOLATE PRETZEL OATMEAL COOKIES Patrick Budniewski - Holsten Hills Country Club Two years ago around Christmas time I had a cookie very similar to this at a holiday party I attended with my Sister’s family in Nashville. It was so good that I had to try to recreate it. I started with my Grandmothers Oatmeal Chocolate Chip Cookie recipe, made a few changes and this is the result. My favorite cookie year round is an Oatmeal Chocolate Chip Cookie and adding the Pretzel and Flaky Sea Salt element just adds another layer of goodness to it. Fresh out of the oven with a glass of milk and you could easily eat the whole plate! INGREDIENTS 1 Cup Salted Butter 3/4 Cup Brown Sugar 1/4 Cup Granulated Sugar 2 Eggs, Whole 1 TBSP Vanilla Extract 1 ¾ Cup and 2 TBSP All Purpose Flour 1TSP Baking Soda 1/2 TSP Cinnamon 1/2 TSP Kosher Salt 1 ½ Cup Old Fashioned Oats 2 ½ Cups Semi Sweet Chocolate Chips 1 Cup Mini Pretzels, crushed ¼ Cup Flaky Sea Salt (for sprinkling)

DIRECTIONS Cream together butter and sugars until combined. Continue mixing, adding one egg at a time until combined. Add vanilla and continue mixing until creamy. In a separate bowl add flour, cinnamon, baking soda and kosher salt. Slowly add flour mixture to egg sugar mixture while mixing on low speed. Add 1/4 of the mixture at a time, scraping down sides making sure to fully incorporate flour mixture. After flour mixture is all combined, add oats and chocolate chips folding them in by hand. Roll dough into 2 Tablespoon size balls. Gently push a few crushed pretzels into each ball and flatten with palm of hand to 1/2 inch thickness. Bake in oven at 350°F for 9 to 11 minutes. While cookies are cooling sprinkle with flaky salt sea salt.
