CLUBHOUSE NEWS A NOTE FROM YOUR FOOD & BEVERAGE DIRECTOR

A NOTE FROM YOUR DIRECTOR OF CATERING

Greetings!

There has been a buzz in the air around Sedgefield and no I'm not talking about the bees. What’s the buzz you say? The buzz is, it’s busy!

I hope everyone is gearing up for another whirlwind summer. To say that we have been busy is an understatement but I am truly thankful to see all our members enjoying everything the club has to offer. From swimming, sports, and golf, to wine dinners and holiday celebrations, it’s such a heartwarming feeling to see everyone partake in the summer festivities. We are excited for a fun-filled, relaxing summer season full of adventures! A warm welcome to all of our new members and their families who joined Sedgefield Country Club recently. We are thrilled to have you as part of the Sedgefield family. And remember… a little bit of summer is what the whole year is all about!

What a wonderful kick-off we had to our pool and summer season with our Memorial Day celebrations. Many of you came out to bask in the summer sun, enjoy some grille-out classics and putt around the golf course. The Cardinal team whipped out the grill and was treating hungry golfers to a fresh selection of marinated chicken, all-beef hot dogs, and Angus beef burgers. Whether you were at the Cardinal or Sedgefield our Memorial Day celebrations were a great way to get into the summer spirit. Speaking of summer spirit... things have certainly begun to pick up around our clubs. We've had to add additional seating to our Live After Five event to accommodate all the music lovers and foodies that have been joining each Tuesday evening at the Greenside Café.

See you around the clubhouse, Maya

TEN YEAR ANNIVERSARY PARTY SATURDAY, SEPTEMBER 11, 2021 | SAVE THE DATE

As we move into August, I can't help but mention the largest beach party on the PGA TOUR, the Wyndham Championship. We'll be back to normal featuring on-course hospitality and the traditional Wyndham fun! I look forward to seeing you in one of our McConnell Golf suites or relaxing at Slamming Sammy's Pub. As you can see our calendar has been filling up quickly with fun summer celebrations, socials, and dining events. If you have an event of your own you've been thinking of hosting, now is the time. KNOLLWOOD VINEYARD RIGHT BANK RED BLEND I NAPA VALLEY

Thank You for Your Contributions!

Masterfully crafted by renowned winemaker Chris Corley, the 2018 blend of Merlot, Cabernet Franc and Cabernet Sauvignon was exclusively bottled for McConnell Golf. The grape varietals were hand-picked, then destemmed and berry-sorted on the crush pad. The wine was aged in New 1/3 French oak barrels for 26 months. The primary blend was assembled at 12 months, with secondary blending at 18 months, and final blend-strokes being done at 26 months. This blend has dark, luscious aromas and flavors of blackberry, anise with undercurrents of lightly toasted oak and hints of vanilla. There is a hint of pepper, and nice waves of ripe dark berry fruit on the palate. 58% Merlot, 37% Cabernet Franc, 5% Cabernet Sauvignon

SUPERINTENDENT'S CORNER A NOTE FROM YOUR SEDGEFIELD SUPERINTENDENT

A NOTE FROM YOUR CARDINAL SUPERINTENDENT

The warm summertime temperatures are finally here and the Bermuda turf is thriving and aggressively growing. Aerification went very smoothly and things healed up nicely. With the cooler than normal spring this year, the areas (#1 fairway, #4 fairway, #9 fairway, and #10 fairway) where we still have some old Common Bermuda has taken a bit longer to fill in and thicken up. With some extra nutrients and warmer weather, we will start to see these areas improve.

Summer is here and I am very happy with the course conditions. We had a great spring. The weather this spring started off cool and dry so it took longer than normal for the Bermuda grass to really get going. With some much-needed rains and the warm weather, Bermuda is growing nicely and we are getting great definition between the different heights of cut on the course.

Now that the turf is aggressively growing we have started implementing our cultural practices that will provide you with the best possible playing conditions. Each Monday that we are closed we will be lightly verigrooming the greens followed by a light topdressing of fine sand. This process will aid in keeping the grain on the greens to a minimum and improving the ball roll and firmness of the greens. This time of year we also will be lightly topdressing tees and landing zones in fairways to dilute the thatch and also aid in a smoother, firmer surface. Summertime also means that the Wyndham Championship is just around the corner. The contractors that perform the tournament build will have already started by the time you are reading this and it will be the same company as years past which is good as they have normally been as respectful as possible performing all this work while you are trying to enjoy your round of golf. Should there ever be a problem please don’t hesitate to contact me and I will notify the lead foreman performing the work. With the golf course conditions being very good I hope to see many of you out on the course this summer!

Chad Cromer Golf Course Superintendent

We had a very successful aerification the first week of June. During the aerification week, the agronomy team pulled cores on greens, all short cut, and lots of high traffic areas around the course. This was done to help alleviate soil compaction and help with water infiltration. Some of these areas have not been core aerified in years and we are already seeing huge benefits from this practice. Another reason we are seeing better color and a much better stand of rough this year is due to an application that was made back in January. This year we decided to combine our fertility and our summer preemergent into one application. What has normally been done is spraying our pre-emergent and then coming back and fertilizing the course later in the year. However, by doing this it makes it cost prohibitive to fertilize the entire course, so typically only the shortcut has been fertilized. By combining these two applications into one, we were able to apply to the entire course. I am seeing great results from this application and it is something we will continue moving forward. As we are now into summer we are in full maintenance mode. We will still be picking away at different sod projects around the course, but our daily focus is on maintaining the course and providing great playing conditions daily. Hope everyone has a great summer of golf and hope to see you on the course. Ross Jernigan

TEE IT UP AT THE CARDINAL Notice how the club rotates from right to left naturally, without thought. Now try doing this same motion with a ball teed up. No need to have a checklist of thoughts. Just swing the club like you swung the bat. Keep it simple. Not every tip you hear is right for you! For more help with your swing, visit anyone of the Golf Professionals at either Sedgefield or The Cardinal.

A NOTE FROM YOUR HEAD GOLF PROFESSIONAL Hard to believe the year is half over. Feels like we are just getting started, considering life is just now finally getting back to normal. The beginning of the season was surely off to a fast start. May saw the golf course as good as most have ever seen it before. Ross and his team have given us a first-class product with lots of little projects completed along the way. Logan and Jeremy finished up our spring semester of Operation 36 and hosted another session of The First Tee Program. Lots of future Cardinal Members running around the club. Talking about members, The Cardinal has seen 20 new members join the club in the first half of the year. We have a few familiar faces coming back to the club, with the majority being new to club membership. Definitely exciting to see golf is still thriving after the pandemic and the activity level rising around The Cardinal. The month of May was also busy on the course and on the range. Clubs were flying all over the place in May. Members had plenty of opportunities to get fit for some of the newest clubs on the market and many took advantage of those opportunities. Our first Couples Golf event was a huge success with over 40 players participating in this fun event. The Men’s Member-Member resulted in a tremendous shootout with Rob Melhem and Rod Patefield needing an extra hole to hold off the father and son team of Bob and Rob Beasley to take home the crown this year. Our Food and Beverage team delivered a fantastic experience each day for the players. Lastly, we celebrated our fallen heroes with our Memorial Day Tournament. We’d like to thank everyone who participated in this wonderful event to celebrate all of the men and women who paid the ultimate sacrifice for our freedoms. With the calendar turning to June, the golf professionals at both The Cardinal and Sedgefield participated in a golf marathon to raise money for the Folds of Honor Foundation. This charity raises money to award scholarships to children of fallen soldiers. After a collective 800 holes played on June 1st, the club's combined total for the charity was over $25,000. We’d like to thank every member who helped create such a kind donation to the Folds of Honor. We hope to continue this tradition of fundraising for outstanding causes in the future as golf is such a fantastic way to bring us all together. Thank you all for such a great beginning to the season. Hope the second half is as much fun as the first.

SWINGING THE CLUB With YouTube, Instagram, Golf Digest, friends, and The Golf Channel, to name only a few, you can receive golf instruction from about anywhere. With so much information floating around it's hard to know what is right for you. My suggestion is to find the tip that allows you to swing the club with as little effort as possible. Use the club as it was designed allowing the toe of the club to rotate over the heel. Use your body as an anchor point and swing the club around you. Simple drill….Grip the club, stand tall with the club out in front of you. Swing the club as if you were swinging a baseball bat.

COOKIES OF THE MONTH JULY: THE ULTIMATE COOKIE By Chef Ron Gordils - Old North State Club

This past summer while my wife was pregnant she had an occasional sweet tooth. I came across this fun and playful recipe to help fulfill the craving. From the crunch of the cornflake to the great balance of flavor I think it’s a great year-round cookie! I hope you all enjoy it! Cheers from my family to yours! Yield: Approximately 4 Dozen Cookies Ingredients: 1 Cup Unsalted Butter, softened 1 Cup Granulated Sugar 1 Cup Brown Sugar, packed 1 Cup Vegetable Oil 1 Large Egg 1 TSP Baking Soda 1 TSP Salt

1 TSP Vanilla 1 Cup Quick Cooking Oats 3 1/2 Cups All-Purpose Flour 1/2 Cup Sweetened Shredded Coconut 1 Cup Lightly Crushed Cornflakes 1/2 Cup Pecans or Walnuts, chopped

Directions: Note: This dough requires chilling. Cream butter and sugars in the bowl of a stand mixer fitted with the paddle attachment. Cream until light and fluffy. You can also use a hand mixer. Add oil and stir until smooth. Add egg and vanilla, mix until smooth, then stir in the salt and baking soda. Mix in oats and flour until just mixed. Stir in coconut, nuts, and cornflakes. Scoop 2 tablespoon balls of cookie dough onto a cookie sheet covered in wax or parchment paper. No need to spread the balls out, you’re just going to chill them. Cover with plastic wrap and chill for at least one hour. (If you chill longer than 4 hours you may need to let them warm up a few minutes on the counter before baking.) Preheat oven to 350°F. Line cookie sheets with parchment paper or Silpat baking mats. Place cookies 2 inches apart on prepared cookie sheets. Lightly press down with the palm of your hand. Bake for 9 to 11 minutes or until the bottoms just start to turn golden brown. Cool for at least 5 minutes on the cookie sheet before removing to rack to cool completely. Store in an airtight container for up to 5 days or freeze for up to 1 month.

AUGUST: PEACH COBBLER COOKIES Porters Neck Country Club

When the Dog Days of summer are almost over, one thing is prevalent in the Carolinas as we near the return of school and football season. Peaches, peaches, and more peaches! One of the classic dishes utilizing peaches around the house is peach cobbler. This cookie pays tribute to this locally sourced and delicious stone fruit. Stop by a local produce stand, farmers market, or co-op to purchase some. We feel they are best served warm out of the oven. With a glass of milk or scoop of vanilla ice cream, you can’t go wrong! We hope you enjoy these sweet flavor-packed favorites. Ingredients: 1 Cup Unsalted Butter, softened 1 Cup Sugar 1/3 Cup Packed Brown Sugar 1 Large Egg, room temperature 1 TSP Vanilla Extract 1/4 TSP Almond Extract 3 Cups All-Purpose Flour

1 1/2 TSP Ground Cinnamon 1 TSP Cream of Tartar 1 TSP Baking Soda 1/2 TSP Salt 1/4 TSP Ground Nutmeg 1 Cup Diced and Peeled Fresh Peaches

Directions: Preheat oven to 350°F. In a large bowl, cream butter and sugar until light and fluffy for 5 to 7 minutes. Beat in egg and extracts. In another bowl, whisk flour, cinnamon, cream of tartar, baking soda, salt, and nutmeg; gradually beat into creamed mixture. Stir in peaches. Drop dough by tablespoonfuls 2 inches apart onto parchment-lined baking sheets. Bake until set, 14 to 16 minutes. Cool on pans for 2 minutes. Remove to wire racks to cool. Store in an airtight container.
