MOTHS INVADE SORRENTO Sorrento Sailing Couta Boat Club (SSCBC) is a beacon of sailing within the state of Victoria, if not Australia. The SSCBC is a unique sailing club neatly established on the foreshore of Sorrento on the Mornington Peninsula here in Victoria. The summer of 2014/ 2015 sees the SSCBC in conjunction with the International Moth Class Association host to the International Moth World Championships. SSCBC is the home of the famed Couta Boats that used to fish for Barracouta in the late 1800’s and the early 1900’s, a craft made of sea worthy conditions well equipped to plough through Port Phillip heads into the ocean. The Couta Boat which is native to Port Phillip and Western Port is a revered sailing craft throughout the world to all yacht and sailing clubs, hence the attraction to visit the magical waters of Port Phillip for sailing championships. The waters of Sorrento specifically are clear blue, with a healthy marine environment, and unique conditions that challenge even the most accomplished sailors.
MCDOUGALL + MCCONAGHY 2015 MOTH WORLDS: BURLING MAINTAINS CONTROL AT THE TOP New Zealander Peter Burling continued his near-flawless run on Day 5 of the McDougall + McConaghy 2015 International Moth World Championship being hosted by the Sorrento Sailing Couta Boat Club (SSCBC) in Victoria.
10
With one day remaining to finish the World’s off, Burling showed nerves of steel and control to score a second in Race 9 and then won the remaining three races sailed in shifty south-westerly winds on Port Philip. Winds ranged from 15-20 knots with puffs over 25 in the last of the day. Nathan Outteridge (AUS) won Race 9, then finished second, fifth and third for second place overall. “I had a great first two races, I was neck-andneck with Peter (Burling). In the third I had two swims upwind. You go from attacking to a defensive position just like that.” Outteridge, the 2012 49er Olympic gold medallist said. “There’s a heap of guys sailing well. I’ll be happy if I can just hold my boat together. A few big names fell down the rankings because of breakages today,” he said referring to the likes of Scott Babbage (AUS) and Paul Goodison (GBR). Outteridge was contemplating what tomorrow would bring. “Looks like it’ll be 10-20 from the north-west. That means big waves. Anything could happen,” he said, keeping Burling at the forefront of his mind, as is everyone else at the top end of the Championship. Outteridge was contemplating what tomorrow would bring. “Looks like it’ll be 10-20 from the north-west. That means big waves. Anything could happen,” he said, keeping Burling at the forefront of his mind, as is everyone else at the top end of the Championship. The 2012 world champion, Josh McKnight (AUS) maintained the status quo with another good day. He scored 3-3-2-4 results for third place overall.
Of tomorrow and whether Burling could be beaten, McKnight said: “Any of us could bust stuff. Peter Burling can still be beaten. As long as I finish around him and Nathan I’ll be happy.” Just below the top three, Chris Rashley and fellow Brit, Chris Draper have been thrashing it out. The pair has stayed inside the top five consistently and with just two points separating them, they are in fourth and fifth overall respectively. Babbage was third overall, but sailing fast downwind out towards the start area today, the Australian said: “A puff hit me and I ran into a moored Couta boat and did some major damage.” However, he made the third and four races, but dropped out of contention into 17th place. Three women made it into the Gold fleet finals and remain in a tussle for first place in the Women’s Division. Local sailor Samantha England, the 2011 Women’s world champion took the lead from multi-faceted Japanese Olympic sailor Wakako Tabata, with Annalise Murphy (IRE) in third place. The three have remained in front of some of the biggest names in international sailing who are struggling with the highly technical boat, including Sweden’s Freddy Loof and Philippe Presti (FRA). PRO Garry Hosie plans to end the McDougall + McConaghy 2015 International Moth World Championship with four races starting from 1100 hours tomorrow, which will decide the new world champion. WHERE THE FESTIVITIES NEVER END Penang is ver y possibly the only place on ear th where you can find dazzling festivals ever y month of the year and it’s inviting you to experience it! What governs Penang’s uniqueness is mainly the multi-racial communities that have been residing in this Malaysian state for three generations, if not more. With them come the myriad flavours that have catapulted Penang into being one of the best food cities in the world. Although, Penang is much more than just exotic flavours that ignite your taste buds and have them dance. Prettily framing this, due to the multi-cultural factor, are the colourful and immensely memorable festivals that happen all year around in Penang. Due to this, 2015 has been announced as Visit Penang Year. This is when the state will showcase all the festivals – including religious, cultural and arts – that happen each month of the year in Penang. Most will already know of the acrobatic lion dances that happen on Penang’s streets during Chinese New Year in February, the intricate weaving of ketupat during Hari Raya Aidilfitri in July and the unbelievable body piercings that are on display during Thaipusam. However, there are also the more gentle stirrings of sweet rice in round pots over open fire during Ponggal in January and the twice a year stamina-testing sport of the Dragon Boat Festival that attracts teams from all over the world. Besides these, home-grown arts festivals unique to Penang such as the month-long
George Town Festival and the long-running Penang Island Jazz Festival are quickly becoming a sole reason for global travellers to descend on this state around August and December, respectively. Truly, Penang is where the festivities never end and in this year of festivals, the Fabulous February Fiesta sees Thaipusam, the Hot Air Balloon festival where visitors are able to experience hovering above solid ground along with the already robust Chinese New Year celebrations and Tropfest SEA festival that showcases original short films. Then in May, the awesome Penang Anime Matsuri Summer Party is set to be a magnet for fans of this genre from all over the region. Another thing to watch out for throughout the year is the Last Friday, Saturday and Sunday or LFSS programme that happens each month in George Town. Here’s when cultural shows, music performances in Penang Botanic Gardens and interesting walkabout tours happen and most of them are free! So, through January to December of 2015 we look forward to welcoming you with a colourful, if not an unforgettable festival. Penang’s truly ‘Where the Festivities Never End’. Details on these festivals are available at mypenang.gov.my/vpy

food Fasting has never been as tasty and satisfying with 5:2 Lifestyle Researchers and nutritionists alike have touted the lasting health benefits of the 5:2 intermittent fasting diet. Its growing popularity can be attributed to its sustainable and flexible approach to weight loss and well-being. Unlike many other diets that require you to limit your calorie intake everyday, the 5:2 diet allows you to choose which two days of the week are your “fast” days and encourages a normal, balanced diet for the other five days of the week. With over 100 tasty low-calorie recipes, 5:2 Lifestyle is packed with nutrients, tips and strategies to help you integrate the 5:2 diet into your busy life.
5:2 LIFESTYLE Blinis & smoked salmon, Serves 1. Preparation time: 20 minutes, cooking time: 1 minutes Ingredients

2 Tablespoons (20 g/3⁄4 oz) oat bran 1 Tablespoon (10 g/1⁄4 oz) fromage blanc, 20% fat (Alternatively, use quark or yoghurt cheese) 1 Small egg 6 Chives, snipped 2 Drops olive oil 1 Tablespoon (20 ml/1⁄2 fl oz) soy cream, 70 G (21⁄2 oz) smoked salmon Grated zest of 1⁄2 untreated (organic) lemon Total

Authors Delphine de Montalier and Charlotte Debeugny explain how to maximise the benefits of the 5:2 intermittent fasting diet to help you lose weight, keep it off and improve overall health and wellbeing: “The 5:2 diet is not about eliminating certain food groups, eating diet foods or taking expensive supplements.” Adapted to French-style cuisine with plenty of recipe swaps, this book shows how you can eat fresh, flavoursome meals on both Fast Days and Non-Fast Days. 5:2 Lifestyle provides four weeks of sample menus and Golden Rules for non-fast days, as well as comprehensive calorie tables. Most importantly, Delphine and Charlotte have pioneered a unique concept called the “Super 500”: 30 specialised recipes that are 500 calories and under and contain the maximum amount of vitamins and minerals needed for Fast Days. Composed of protein and wholegrain fibre to slow digestion, the 500-calorie meals feature healthy fats and fresh vegetables to ensure all your food is full of texture, colour and taste.
Preparation Combine the oat bran with the fromage blanc, add the egg and whisk together. Then add half the chives and a little salt and pepper. Add the olive oil to a frying pan and wipe it over the base with some paper towel—it’s just so the blinis doesn’t stick and browns a little. Heat the frying pan and pour in the batter, spreading it out to a pancake shape. Cook for 30 seconds on each side. Whisk the soy cream to make it more light and frothy. Lightly season with salt. Serve the blinis with the smoked salmon and cream, sprinkle with lemon zest, the rest of the chives and freshly ground black pepper. Tip: if you don’t like soy cream, you can use light crème fraîche (12% fat) instead, it has the same number of calories.

drink The d’Elena Pinot Grigio is produced from the Angel Gully Vineyard at Clarendon with a small parcel from Lobethal in the Adelaide Hills. Within the wonderful McClaren Vale style, Primo produce a range of Joes Wines and this one is a savoury Pinot Grigio that boasts minerality and elegance. Joe Grilli, Primo Estate’s owner and winemaker, named his Pinot Grigio ‘d’Elena’ as he planted his single hectare of Pinot Grigio vines the week his daughter Elena was born in 1998. Fourteen years later, the vines have developed deep roots in the shale stone soil and produce a savoury style Pinot Grigio with minerality and elegance. The fruit is handpicked and very gently pressed before fermentation in stainless steel. The wine is bottled early to preserve the delicate fruit characters. Best enjoyed young, this wine will drink well for several years. The d’Elena offers fresh citrus fruit acidity and light pear fruit. This wine’s natural acidic balance and savoury mineral length make it the perfect food wine.
TASTING NOTES Top Aussie White, 92 Points The style is very much in the pinot grigio (rather than gris) mould: crisp, lean and taut, with a linear profile and an intense, dry/savoury and appetizing palate. The bouquet is grassy, peppery and lightly floral. A very quaffable dry white. Drink young. Huon Hooke, February 2014
RATINGS 92 points, Huon Hooke February 2014
JOE GRILLI’S TASTING NOTE Bouquet: Light and fresh notes of pear and citrus fruit with hints of minerality. The exuberant aromatics present when young will fade to more delicate notes after a few months in bottle. Palate: Fresh citrus fruit acidity and light pear fruit. Elegant, full mouthfeel with lovely texture. Natural acidic balance and savoury mineral length make this the perfect food wine.
VINEYARD REGION Primo Estate’s vineyard in the McLaren Vale subregion of Clarendon is rocky and steep with predominately shale stone soil. The site rises sharply to 300 metres above sea level. The soil and altitude, combined with an intense viticulture regime, results in a small crop of evenly ripened fruit. A very small parcel of fruit from nearby Lobethal in the Adelaide Hills brings further minerality and subtle perfume to the wine. This truly is small batch, handcrafted Pinot Grigio at its best.
d’Elena Pinot Grigio 2014 by Joe Grilli
VINTAGE CONDITIONS 2014 proved to be a tale of two vintages in one. Warm and dry conditions in the early part of summer led to a smaller than average crop of Pinot Grigio at Clarendon ripening slightly earlier than usual. By contrast, Lobethal a significant rain event in mid-February, delaying ripening and also giving the fruit a distinctive minerality which contrasted the exotic spicy characters of Clarendon.
WINEMAKING The fruit was hand-picked and very gently pressed before fermentation in stainless steel and early bottling to preserve the delicate fruit characters. Harvest 14th February 2014 (Clarendon) 6th March 2014 (Lobethal) Grape Variety 100% Pinot Grigio

review
HYDE STREET HOTEL It’s great to see a tired old run down gaming venue reborn as one of the Wests best gastro pubs. Such is the case with the Hyde Street Hotel (formerly The Vic on Hyde). On the fringe of Yarraville, gone are the squelchy carpets, 80’s decor and the characters that made up its racing clientele. In it’s place is a great selection of craft beers with a changing tap beer and growing wine list, great pub style menu and a killer happy hour on Fridays ($5 schooners!) making this now a great go-to pub in Yarraville. Staff are friendly, attentive and very switched on. Whether it’s having a meal with family or friends sitting casually in the bar or watching the footy on the big screen, it is a very comfortable venue that caters for all types. The food was excellent with an eclectic menu. I started with the Chicken and Duck Liver Parfait with baguette, onion jelly and cornichons and followed through with the Roasted Spatchcock washed down with a Mansfield Pale Ale. All delectable. If you are looking for a gastro pub with character, great food, beer and wine, look no further. The Hyde Street Hotel is on Hyde Street Yarraville.

Ava and Rose Boutique capture the essence of gorgeous, handmade, vintage inspired garments which are fun, flirty, feminine and functional in an exclusive boutique collection that emphasises comfort and quality whilst still looking fashionably chic with limited fuss. The comfortable playsuits, available in size 6-20, are perfect for retro pinup style, cabaret costume or worn as sweetly romantic sleepwear. The concept began in August 2013, by stylist and designer, Suzanne Marambio, who was inspired by the simplicity of vintage fashion and used the middle names of her daughter and god daughter to create the label. After feeling frustrated at not being able to find a functional onesie that didn’t lead to complications of unrobing in the ladies’ room, Suzanne was keen to create her own version of the perfect playsuit which are named after Siren and Sweethearts of the Hollywood bygone era. Using the template of a bodysuit, she added two hidden snap fasteners in the gusset which means you never have to unrobe! To keep the look exclusive, only a small production run are made using locally sourced satin, applique and lace trimmings.

health DON’T GIVE IN Thinking, “I have cheated this morning with one of my meals, I may as well cheat the entire day”, is like saying, “oh no, I’ve chipped my nails, I may as well just peel all my nail polish off”. It doesn’t really make sense, does it?
BE PROUD OF YOUR DECISION TO MAKE THE CHANGE We all have to start somewhere – remain strong. By the end of your first 21 days you would have developed great new eating and training habits, having definitely broken some bad ones!
QUITTING IS NOT AN OPTION
You won’t see results in one day. Sometimes maybe not even in a week. Persistence is vital and consistency is crucial to your success.
KEEP THE BLINDERS ON WHEN IT COMES TO NEGATIVE INFLUENCE Ignore those negative influences, don’t let your work colleagues or friends sabotage your goals your plan by influencing you. Keep focused on your clean and healthy lifestyle. Be proud of your willpower, as that drink and fast food may look good tantalising, but not nearly as good as you’re going to look and feel in your bathers!
YOUR RELATIONSHIP WITH FOOD CAN BE POWERFUL OR DESTRUCTIVE

IDENTIFYING CYBER VULNERABILITIES Please feel free to contact me at john@drydenmediagroup.com twitter@johngdryden | facebook.com/johngdryden | instagram.com/johngdryden | drydenmediagroup
More than ever before, the world is more connected across a myriad of devices, and we are all exposed to it. Yet, for all its advantages, increased connectivity brings increased risk of theft, fraud, and abuse. As individuals are rapidly becoming more reliant on modern technology, we also become more vulnerable to cyber attacks such as Personal and Corporate Security Breaches, Spear Phishing, and Social Media Fraud. Our daily life, economic vitality, and national security all is dependent on a stable, safe, and resilient cyberspace that we access daily. We all now rely on this vast array of cyber networks to communicate, to travel, to power our homes, to run our economy, and to provide personal, business and government services. Yet cyber intrusions and attacks have increased dramatically over the last decade, exposing sensitive personal and business information, disrupting critical operations, and imposing high costs on individuals, corporate and as well the economy. Just look at the recent SONY hacking scandal of late 2014 for the movie – The Interview! Seth Rogen and James Franco ended the year with an amazing review on their performance on a movie that no one has ever even seen. Startling really! Cybersecurity is a shared responsibility, and each and everyone of us has a role to play in making it safer, more secure and resilient, if not for our own sakes, then for the sake of our children.

COLLABORATING TO ENHANCE CYBER SECURITY To address the evolving threats and increased risks of cyber crimes, the Australian Government and associated Cyber Services are constantly engaged directly with public and private partners to enhance cybersecurity. The Federal Government works to promote cybersecurity awareness and digital literacy amongst all Internet users, and there are many additional private services popping up every single day to combat the threat of Cyber Terrorism. A division within the Government also collaborates with the financial and other critical infrastructure sectors to improve network security. Additionally, the Government components such as the ASIO and the respective state base police forces, have special divisions dedicated to combating cyber crime. Private online Cyber Counter Terrorism and Money Laundering companies have leapt into this space at an alarming rate, with no shortage of uptake for experts to expand into this field. The internet and Cyber Fraud is an ever evolving feast, and we cannot afford to bury our heads in the sand, and it is not going away anytime soon.
COMBATING CYBER CRIME ASIO maintains a form of Electronic Crimes Task Forces, which focus on identifying and locating international cyber criminals connected to cyber intrusions, bank fraud, data breaches, and other
computer-related crimes. ASIO’s Cyber Intelligence Section has directly contributed to the arrest of transnational cyber criminals responsible for the theft of hundreds of millions of credit card numbers and the loss of approximately $600 million to financial and retail institutions. ASIO also runs the National Computer Forensic Institute, which provides law enforcement officers, prosecutors, and judges with cyber training and information to combat cyber crime. There are also internal and external divisions of ASIO that work to prevent cyber crime and solve cyber incidents. From the Cyber Crime Section, ASIO identifies sources for fraudulent identity and immigration documents on the Internet. ASIO’s Child Exploitation Section investigates large-scale producers and distributors of child pornography, as well as individuals who travel abroad for the purpose of engaging in sex with minors.
LAW ENFORCEMENT CYBER INCIDENT REPORTING Always feel free to contact your local police or MP to provide information for State, Local, and Federal law enforcement on when, what and how to report a cyber incident to the Government or you can always communicate with the writer of this article John Dryden at john@drydenmediagroup.com and follow on Twitter at @JohnGDryden

2 TRICKY BUSINESS PROBLEMS
BY TANYA LACY
AND HOW TO EASILY SOLVE THEM
Sorry to sound negative, but my whole world is geared to helping people see their blind spots so they can improve. To save you a lot of time energy and pain have a look at this article and see if you can head these off at the pass in 2015. I’d enjoy hearing if this helps you.
It’s like the yelling parent who complains their kids are too noisy. The person who is in authority (or perceived authority) gets modelled. That’s just how we’re wired. So if you’re not getting what you want from your team, have a look in the mirror.
IT’S JUST A JOB TO THEM
If you care, they will care. However they don’t care if you don’t. So if you take your own personal care factor up a notch, see what happens. See what changes. What would it take for you to take your own personal care level up a notch?
Last month, I walked out of a retail store and the business lost a sale because of a staff member behind the desk. The staff member was on the phone and at the top of her voice, complaining to another team member about how often she’s getting requests to send parcels. Possibly code for; “I’m too lazy to do it and I’m avoiding a real conversation with the person I’m upset with”. As a business owner or team leader you may relate to this. For many of your team, the people you rely on each day, (and there are exceptions) it’s just a ‘job’ to them. What does that mean? It means that when they’re at work, they may not be 100% present. Worse still, possibly talking rudely infront of or to your customers. Disturbing? Well it’s not all bad news. Here are a couple of ways to review and navigate similar tricky problems (and their solutions). Let’s see if they apply to your business situation.
#2 THEY WON’T CARE IF YOU DON’T Everything is a mirror in business. You as the leader or team leader set the tone. How you show up in your role will transmit to the rest of the team. People are more savvy than we give each other credit for. We each have an innate way of reading where others are at. So, if as a leader you really don’t care yourself, (yet you are demanding high levels of care from others), that won’t wash for very long. The answer? Earning respect. Earning respect comes via the level of care you show. Not just the level of care you show to the role, but the level of care you show to each individual in the team. Consider these things. Do you use your manners? Do you spell your team’s names correctly? Do you pronounce their names correctly? Do you know approximately how far your team member travels each day to get to work? Do you know how they get to work? When explaining things are you patient? Do you take the time to teach? Do you have a preconceived idea that “there’s no point teaching them because they won’t do it right anyway?” About Tanya Lacy It’s 2015 and Tanya Lacy wants to live in a world where people understand the affect their vibe has on others. She’s an International Business Writer and in 1996 she started her Leadership Development Company. Intercept Experience today specializes in Group & Individual Learning Experiences For Leaders and Company Owners. When she’s not tapping a key board you’ll find her smiling widely, front of room leading a 1-2 day intensive or even a small workshop. With 19 years behind her of playing 24
#1 YOUR PERSONAL VIBE IMPACTS THE WORK ENVIRONMENT Picture this. You walk into the office. You’ve just got off a call in the car to an unhappy client. You’re still processing what the issue was, what they said, how they said it, and the impact of their complaint. You are intensely in your own head. Are you able to switch off? Or, do you carry the problem with you all the way into the office? In this instance, what’s your vibe? What do I mean by vibe? Vibe is the mood you transmit and how others experience you. Here’s an example. A highly experienced pilot explained this to me. If the pilot walks onto the flight deck transmitting a ‘mediocre mood’, the crew feel this and then the passengers have a mediocre flight with mediocre service. If the pilot walks onto the flight deck in a ‘good mood’, the crew feel this and the passengers have a great flight from great service. Does this help you see what I mean by ‘vibe’? Here’s some food for thought. If your team were having an after-work drink, what would they say about you? Please don’t be in denial about this. Deep down, you know they discuss you if you’re the team leader or the boss. How are they describing you to each-other? How are they discussing you? What are their complaints? What are their acknowledgments of you? And how you answer this is where learning how to lift the vibe in your business begins. The good news is, if you can identify these problems, you can now address them. #2 Check the Care Factor #1 Check Your Vibe. Thanks for reading. I hope this serves you and opens up opportunities for you and your workplace.
