We trim and slice about one pound of skinned and deboned chicken breasts into thin slices or bit sizes. Then heat oil on a non-stick pan on medium high heat and add the chicken cuts when it is hot. Stir frequently to evenly cook the chicken pieces. Then we combined two tablespoons of soy sauce, one half teaspoon ground ginger, and one half teaspoon of garlic powder in a small bowl. Mix them well and you have your sauce. When chicken is cooked through add the sauce mixture and continue frying till the chicken is tender for six to eight minutes. Then separate them into bite sizes with a wooden spoon. While chicken is cooking, chop two stalks of celery, two medium carrots (peeled) and a medium sized opinion. Then prepare two cups of broccoli florets sliced in half without the stems. Then add the veggies to the pan and an eight ounces can of water chestnuts if you desire, but drain the liquid first. Stir and toss to cook for about five minutes more. While the dish is cooking mix eight ounces of chicken broth with two to three tablespoons of cornstarch and stir until they dissolve well leaving no clumps. Add the cornstarch slurry to the pan and stir continuously until the sauce thickens and veggies are tender. Maybe five minutes for this recipe, but longer if you double the ingredients.
