We have to specify gelato, and not simply ice cream, as the artisan gelato culture cannot be interpreted or even translated: it is the result of a careful selection of high-quality ingredients and the correct formulation of balanced recipes, combined with the artistic capacity for presentation which sets Italian style apart.

LIFE TRAIL OUR PHILOSOPHY

Twenty first-century consumers are increasingly demanding stringent food safety guarantees – their desire to be protected by the food chain is an inalienable right. Gelato parlours have the duty to offer this protection, and companies must take measures to allow all to guarantee the highest safety standards.

With LIFE TRAIL, Montebianco shows that it has taken up the challenge!

LIFE TRAIL is... a commitment which Montebianco has decided to embark on in order to guarantee its customers and consumers a transparent Food Policy based on reciprocal trust, dedicated to continuous research into clean ingredients, in line with healthy diet recommendations.

LIFE TRAIL is... a highly ambitious project which means Montebianco is faced with choices which, in some cases, go against business logic, but will in future allow us to guarantee the best possible solution in terms of ingredients with maximum continuity, depending on the corresponding point in history.

We all make continuous choices which others are forced to follow, first of all our professional customers (gelato artisans or pastry chefs), and as a consequence the end customers they sell to.

LIFE TRAIL will become the ethical and scientific filter for these choices. We know we are not perfect, and this is why we believe in LIFE TRAIL, a philosophy which will impose a technically torturous path on Montebianco, because LIFE TRAIL will be in continuous evolution as long as scientific progress, the Group's continuous research and the curiosity of our professional customers inspire the desire to improve, which represents the real driving force behind it. We already have a series of products which follow the LIFE TRAIL approach, with many more soon to come! As a matter of fact, Montebianco products have been free of artificial flavours for some years now already, we are replacing hydrogenated fats with refined ones, we do not use GMOs, and we have many Gluten Free products; but this is just the start. We are making use of the technical skills of Universities, experts in nutrition and skilled pastry chefs and gelato artisans who have written the history of the profession, and continue to do so, on an international level. We will aim to attain complete traceability for some of the key raw ingredients in order to guarantee the highest quality standards for our food chain. In summary, we wish to live in complete harmony with our customers, and through LIFE TRAIL we will together build renewed and consolidated trust from our shared final consumers.

ARTISAN GELATO: A PLEASURE FOR ALL SEASONS

WHO SAYS THAT GELATO IS JUST A SUMMER TREATE THIS IS ONE OF THE MISCONCEPTIONS WHICH SURROUND THE CONSUMPTION OF ICE CREAM, BUT WHICH CAN BE EASILY OVERCOME. GELATO ICE CREAM APPEALS TO THE CONSUMER'S SWEET TOOTH THROUGHOUT THE YEAR, IT JUST NEEDS TO BE PRESENTED AND OFFERED IN HARMONY WITH THE CURRENT SEASON.

Autumn

Why eat gelato in autumn?

An excellent suggestion comes from a two-time Gelato World Cup winner, Italian member of Relais Dessert, judge on the pasty chef reality show “Chi sarà il più grande Pasticcere?”, and member of the Italian patisserie academy: Roberto Rinaldini. An admirer of Montebianco, having worked with us as a consultant to develop some patisserie lines, here he presents an interesting interpretation based on the quintessential “warm” flavour pistachio, which is ideal in combination with custard flavours and fruit.

Winter Gelato is the top product in Scandinavia!

This should not be a huge surprise, because when the temperature difference between the outside temperature and that of the product is less extreme, our palate is able to better appreciate the range of flavours. Catalan Jordi Puigvert, Professor at the Escuela de Hosteleria in Girona, a consultant for prestigious chocolate companies, and previously pastry chef for michelin-starred restaurants over the world, like Cellar de Can Roca (ranked world's top restaurant in 2015) and Alkimia, and currently a consultant for the development of the Montebianco patisserie range, offers us an intriguing combination of chocolate, nuts and coffee. 10


Spring

Spring is the season which sees an explosion of colours, smells and flavours, and there are few things which express these sensations with the harmony of a good gelato. Frenchman Luc Debove is a former Gelato World Cup winner (2010), pastry chef at the Grand Hotel de Cap Ferrat, but above all MOF Glacier, the highest French honour in the field, awarded only after years of preparations and exams. An ex-professor at the Bellouet Conseill Paris school, founded by the pupil of Auguste Lenotre Chef Joel Bellouet, he presents us with a stimulating and harmonious creation in which hazelnuts play the leading role.

Summer The combination of sun and gelato ice cream

is one of the favourites of those who wish to delight their palates, and it is for this reason that creativity really runs wild in summer without any limitations, stimulating gelato consumers to come up with endless combinations of the hundreds of gelato flavours available. For summer, Montebianco goes the extra mile with a creation which masterfully combines pineapple and mint, created by Athos Perin and Michele Olivetti of Montebianco and Roberto Geraci, gelato maker in Rome and technical consultant to the firm.
