WHAT IS STABILMIX?

any would say it is a “high-density base”, others would call it“an (almost) ready-touse product”, while some competitors might label it an “intelligent rip-off”. In reality these opinions, some correct, the others way off the mark, confirm the genius of Stabilmix, ON THE MARKET a product chosen by consumers far and wide throughout its 45+-year history. FOR OVER For us at Montebianco, however, this was not enough, and so we set ourselves the goal of 45 YEARS improving a product which is already the jewel in our crown, despite the risk of worrying those who have used and loved it for decades! “Used and loved it for decades”: this is a pretty remarkable statement in a world which chews up and spits out new products in one, or at the most two seasons. The longevity of a product is never a chance occurrence, and this applies particularly to Stabilmix! We are always happy to think that Stabilmix has created its own culture, a simple, and at the same time professional way in which to make artisan gelato. While the word “simple” can sometimes be equated with “poor quality”, this is not the case with Stabilmix: those who know it can understand the underlying reasoning and meanings, and ENORMOUS know that any judgement made without having actually tried Stabilmix has no value. In short, Stabilmix represents a production philosophy which allows artisan gelato makers POSSIBILITIES to guarantee the highest quality product to their customers. The new Stabilmix formulation, created for its 50th anniversary, is an exercise in excellence through which we aim to compensate for the only shortcoming with the product pointed out by some artisan gelato “purists”, that is a slightly cold sensation on the palate: the result which we have achieved allows us to guarantee a gelato with a warmer mouthfeel and a soft sensation on the palate, able to satisfy even the most demanding gelato artisans and consumers. Pretty straightforward so far: the results are there for all to see, you just need to try the new Stabilmix 2016! The real innovation comes from a much more ambitious project, which aims to eliminate flavourings from the list of ingredients for the new generation of Montebianco bases, a result which was possible only after months of testing performed at the ILLVA Group’s Research Centre, in collaboration with Montebianco’s R&D department.

Through the use of a new extraction-based technology, we have been able to concentrate high-quality fresh Piedmontese milk to the extent that we have been able to completely eliminate flavourings, giving the product a natural milk flavour. As far as everything else is concerned, it retains the ease of use of traditional Stabilmix, while improving the mouthfeel, giving the sensation of a “warmer” product on the palate. The selection of structural ingredients is also new, with no more hydrogenated fats, but refined ones; at the same time we have taken measures to make the finished gelato pure white. STABILMIX CLASSIC We wish to finish our report with a reference to the product which for over 45 years has met with such great public success as to make it the undisputed star in its sector. It is the forerunner of the Complete Base Mixes, the product which has set Montebianco apart for over 45 years without being subject to any changes, because it has built up such a cult following amongst our customers, almost a “positive dependency�. It is the ideal product/service solution for gelato artisans who have to manage large-scale daily production of gelato. Using Stabilmix allows them to develop customised recipes through correct use of a pasteuriser: the gelato artisan can, indeed, mix together multiple components, including those requiring pasteurisation, to create their own customised formulation which sets them apart from other Stabilmix users.
