A new school year is upon us and as a parent, you are probably having mix feelings of excitement and pressure. Now that summer is over going back to school can be tough for most kids. They feel nervous and scared going through all the new things that will come their way on their first day at school. To ease the strain, we‘ve gathered together the experts in one Back to School Guide.

OVERCOMING SEPARATION ANXIETY For many parents, new Preppies and children returning to school, this can be an extremely tense time of year. The anxiety can arise throughout the holidays, then increasingly loom like an encroaching storm cloud as September arrives. Some try a different path each year towards the first day of school and still arrive at the same place - separation anxiety. BACK TO SCHOOL GUIDE

On several occasions having to extract yourself from an unavoidable scene on the school grounds, fighting back the distressed tears as the incredible rush of guilt can happen all at once. An obvious main concern for many children commencing school is the fear that Mum or Dad won’t come back. Furthermore, the torrent of fears can include:

• What if I don’t know where the toilet is? • What if my friend is not at school? • What if I miss Mum and Dad? • What if the other kids are mean to me? • How will I know when you are coming back? • What happens at lunchtime? So, if yore expecting the unexpected for school this year, these are wonderful tips to make your back to school experience something to look forward to. BE POSITIVE: Talk about going to school as an upbeat experience. Don’t plant worry seeds in your child’s head or allow them to hear your own concerns voiced with others. ARM THEM WITH KNOWLEDGE: Patiently answer all their questions and reassure them it is normal to have concerns of the unknown.


ROLE PLAY: Let your child know what to expect. They pretend to be the parent while you act as the child. Go through all the motions of the first day of school: waking you up, getting you dressed, feeding you breakfast, dropping you off and finally, picking you up. CREATE A COUNTDOWN CALENDAR: Make a chart together that counts down the days until school starts. Not only can your child visualise the time frame, but prompts you to get organised! FIND SOME FRIENDLY FACES: Find one or two other children that will be in your child’s class and set up a play date before school starts. It will give you a chance to get to know some fellow parents and help acclimatise your little one to the new surroundings. GET THE SLEEP SCHEDULE ON TRACK: The long and sunny summer months are conducive to later bedtimes. Gradually get them back on schedule, moving up their bedtime by 15-30 minutes every few days. 7:00 pm is a great sleep time for younger children. When it is time for school to start, their internal body clocks are already adjusted! READ SOME BOOKS: Fictional characters have a way of making difficult situations easy since they always have a happy ending. The stories can give your child a natural opportunity to share any fears and often have key kid-friendly phrases that parents can re-use to reassure their children. Here are a few to choose from: - I Love You All Day Long - The Kissing Hand - Go Home, Mrs. Beekman! - The Night Before Kindergarten DE-STRESS YOUR MORNING ROUTINE: Do as much as you can the night before such as packing lunch boxes, lay out uniforms and find those elusive hats. Be organised! DON’T BE LATE: Set your alarm clock half an hour early to get your own morning preparation out of the way in order to focus on your little student. This alleviates children ‘feeding’ from your own potential stress levels. ENCOURAGE A HELP-SEEKING MENTALITY: Assure your child that all questions may not be answered on the first day, but teachers are there to help. They want to help you so don’t be afraid to ask.

KEEP THE DROP-OFF SHORT BUT SWEET: One of the biggest mistakes parents make is to turn school drop-off into the long goodbye. Give them one last hug, take a deep breath, trust the teachers and walk away. Even if your child starts crying, don’t linger because it will make it worse. CREATE A SPECIAL GOODBYE RITUAL: Whether it is a silly handshake or a simple call and response phrase like, “See ya later alligator/After a while crocodile”. Find something unique to do as you say your goodbyes. A repetitive ritual not only creates a familiar comforting cue, but a firm exit point for you to leave. PACK A PIECE OF HOME: If your child has a comfort item like a little blanket, allow them to include it in the backpack so they’ll have a bit of familiarity that reminds them of you that they can go and look at/ cuddle during the day. NURTURING STATEMENT: As essential it is for adults to ensure their self-talk is nurturing and enabling, your child could use words of wisdom they can recite to themselves. “I can do it and I am brave!” or Winnie the Pooh’s, “I am braver than I believe, stronger than I seem, smarter than I think and loved more than I know.” CELEBRATE AT PICK-UP: At the end of the school day, make sure you are not late (first child, first day, 1 misinterpreted the pick-up time as 30 minutes later whoops!). Then, tell them how proud you are. Ask them what they are looking forward to tomorrow so you can keep the enthusiasm going. BE PATIENT: It will generally take a few weeks before your child fully adjusts to the new school routines. Keep your morning schedule consistent, your goodbyes short and your little student will eventually adjust to school.

From soccer to salsa, gymnastics to guitar lessons, there is an abundance of activities available for little ones today. But what is age appropriate and how do you get most out of your busy schedule? When it comes to kids’ activities, parents today are spoilt for choice. Whatever your child wants to try, there will be a class for it. And though you don’t want to oversubscribe your little one, getting them involved in a regular activity comes with many benefits... and they are never too young to start.

KIDS ACTIVITIES

0-5 YEARS OLD

One of the first activities that kids usually get involved in is swimming. Living in coastal regions, learning to swim is as essential as learning to walk and talk. There are many swim schools around, from those at the local council pool to private lessons. Look for an environment where children aren’t distracted with other classes or movement around the pool and a low pupil to teacher ratio. A non-purpose built pool means children stand on a platform and wait their turn which restricts the movement of the child. A purpose-built pool with lots of different depths of water keeps a class moving; you can have all three beginners moving and gaining confidence rather than going one at a time.

A significant amount of parent participation is expected at most activities until kids are around three years old, so be prepared to join in! And at this age it does not matter so much about the specifics of the activity, its more about trying things out. Look for something that is fun and offers a wide range of movement and co-ordination. Activities at this age are also about getting you (yes you!) out of the house and socialising with other parents in the local community, so choose something that you will both enjoy. This could be an art and craft group, a music and movement session, or a preschool team sport. If you are unsure where to start, many playgroups have visiting activities each week, which is a great way to try different things and meet people at the same time. Alternatively, check in with your local council, where you’ll find a range of creative and sporting activities for babies, toddlers and pre-schoolers.


6-10 YEARS OLD Similar to the pre-school years, the primary years are a time to develop those core skills of strength, co-ordination and confidence. Every child has different likes and dislikes, so it is about doing something they find interesting. So, if they like being outside, try a ball sport; if they prefer being indoors try dance or martial arts. If you are not sure what to choose, try something such as athletics that has a variety of different activities, or an all-round sports programme that rotates through a different sport each week. Testing out a different activity each week might give your child enough exposure to one sport to then move on and concentrate on that sport alone, or he might enjoy staying in the rotation programme... either is fine! If in doubt, keep it varied, keep it fun, and look for activities that grow strength and co-ordination and confidence.

Why kids should play sports? Providing kids with an active life and involving them in sport from an early age is essential. Biological window for co-ordinative abilities gets narrowed as we get closer to puberty. You can’t make your son a competitive gymnast at the age of 15. These abilities need to be stored as they get compassed by aging.

How do you sugest encouraging kids to get involved? Kids don’t listen, they imitate, parents need to be involved in physical activities themselves to encourage their kids to play sport. Moreover, providing support and showing to your kids training has tremendous impact on their spirit and performance. Providing feedback to your kid performance should be sandwiched with positive feedbacks.

What advice do you have for parents choosing an activity? No specialisation from an early age. As soon as kids develop basic cognitive abilities and grass motor skills such as walking and running, they can get involved in structured and unstructured play focused on having fun. Encourage your kids to try variety of sports as each fitness component got a master teacher, swimming for coordination and soccer for agility... After-school activities are great opportunity for exterminating. As the kids go through experience, they develop a passion in a game, by the age of 8 it is time to learn to train..

ANXIOUS CHILDREN Dealing With Your Child’s Anxiety By Sofia de Castro Sousa, Psychologist WHAT IS ANXIETY? We hear the term ‘anxiety’ on an almost daily basis. While our awareness of anxiety has certainly improved in recent years, many families are still unsure of what it really means. In simple terms, anxiety means fear. But a fear of what exactly? Many people experience a range of different anxieties, but what is often misunderstood is that all anxieties relate to the same underlying things - a fear that our most basic needs will not be met.

HOW TO TACKLE YOUR CHILD’S STRESS AND ANXIETY?

Many kids miss school, social activities and a good night’s rest just from the worried thoughts in their head. Many parents suffer from frustration and a feeling of helplessness when they witness their child in this state day in, day out. There is no one-size-fits-all solution for anxiety but there are a plethora of great techniques that can help manage it from today on.

12 SUGGESTIONS THAT I USE IN MY PSYCHOLOGICAL PRACTICE:

Does any of this sound like your child or teen? - Clinging, crying and/or tantrums when you separate - Excessive shyness - Avoidance of social situations - Constant worry - Avoiding situations or places because of fears - Complaints of frequent stomach aches or headaches - Experiencing sudden and frequent panic attacks

1. Encourage your child to face his/her fears, not run away from them

If you answered yes to any of these statements, your child may be experiencing anxiety.

Many times anxious and stressed children can get lost in negative thoughts and self-criticism. They may focus on how the glass is half empty instead of half-full and worry about future events. The more that you are able to focus on your child’s positive attributes and the good aspects of a situation, the more that it will remind your child to focus on the positives.

The first thing you need to keep in mind is: know you are not alone. Anxiety is one of the most common mental health concerns for children and adults, affecting upwards of 20% of children and adolescents over the lifespan.

When we are afraid of certain situations, we often try to avoid them. However, avoidance of anxiety-provoking situations maintains the anxiety. Instead, if a child faces his or her fears, the child will learn that anxiety reduces naturally on its own over time.

3. Tell your child that it is okay to be imperfect Often we feel that it is necessary for our children to succeed in sports, school, and performance situations. But sometimes, we forget that kids need to be kids. School becomes driven by grades, not by enjoyment of learning. If an 85 is good, but not good enough. This is not to say that to strive is not important. It is important to encourage your child to work hard but equally important to accept and embrace your child’s mistakes and imperfections.

4. Schedule relaxing activities Children need time to relax and be kids. Unfortunately, sometimes even fun activities, like sports, can become more about success than they are about fun. Instead, it is important to ensure that your child engages in play purely for the sake of fun. This may include scheduling time each day for your child to play with toys, play a game, play a sport (without it being competitive), doing yoga, paint, have a tea party, put on a play, or just be silly.

5. Model approach behaviour, self-care and positive thinking Your child will do what you do. So, if you avoid anxiety-provoking situations, so will your child. If you face your fears, so will your child. If you take care of yourself and schedule time for your own needs, your child will learn that self-care is an important part of life. If you look for the positive in situations, so will your child. Children learn behaviours from watching their parents. So, when you think about your child’s psychological well-being, think about your own as well.

6. Reward your child’s brave behaviours If your child faces his or her fears, reward this with praise, a hug or even something tangible like a sticker or a small treat. This is not bribery if you establish this as a motivator prior to your child being in the situation. If you reward behaviours your child will engage in them more often.

7. Encourage good sleep hygiene Set a bedtime for your child and stick to that bed time even on weekends. Also have a 30-45 minute bedtime routine that is done every night. This helps your child to transition from the activities of the day to the relaxed state necessary to fall asleep.

8. Encourage your child to express his/her anxiety If your child says that he or she is worried or scared, don’t say “No you’re not!” or “You’re fine.” That doesn’t help your child. Instead, it is likely to make your child believe that you do not listen or do not understand him/her. Instead, validate your child’s experience by saying things like “Yes, you seem scared. What are you worried about?” Then have a discussion about your child’s emotions and fears.

9. Help your child to problem solve Once you have validated your child’s emotions and demonstrated that you understand your child’s experience and are listening to what your child has to say, help your child to problem solve. This does not mean solving the problem. It means helping your child to identify possible solutions. If your child can generate solutions, that is great. If not, generate some potential solutions and ask your child to pick the solution that he or she thinks would work best.

10. Stay calm Children look to their parents to determine how to react in situations. We’ve all seen a young child trip and fall and then look to their parent to see how to react. If the parent seems concerned, the child cries. This is because the child is looking to their parent for a signal of how to react to the situation. Children of all ages pick up on their parent’s emotions and resonate with them. If you are anxious, your child will pick up on that anxiety and experience an increase in his/her own anxiety. So, when you want to reduce your child’s anxiety, you must manage your own anxiety. This may mean deliberately slowing down your own speech, taking a few deep breaths to relax and working to ensure that your facial expression conveys that you are calm.

11. Never give up! Anxiety and stress can be a chronic struggle and often the source of a child’s anxiety changes over time so it can feel as though you are always putting out fires. With repetition of the anxiety and stress management techniques, your child will learn how to lower his/her anxiety level and how to cope with anxiety-provoking situations. The key is repetition so keep it up!

MEET THE EXPERT Dr. Atul Bhaskar – Visiting Pediatric Orthopedic Surgeon at Royal Bahrain Hospital GET YOUR CHILD’S PHYSICAL HEALTH EVALUATED As the vacation frenzy gets over, most mums have a mental checklist about things-to-do as their children prepare for the new term. In addition to preparing their child for the upcoming academic year, it is always best to evaluate your child’s overall health. Whilst we are happy to see our children grow, most of us do not run a check on the actual physical growth aspect. This is when you need to consult a pediatric orthopedic expert, to ensure that their growth spurts and deviations are checked and understood.

MEET THE EXPERT

Dr. Atul Bhaskar, Visiting Consultant – Pediatric Orthopedic Surgeon (FRCS, M.S) at Royal Bahrain Hospital says: “The musculoskeletal system is the most dynamic in children as they grow and a basic screening can detect deviations of growth and allow for early intervention. A note should be made of the child’s height and weight at least every six months to see for any abnormalities in stature and size. Deficiency of Vitamin D3, thyroid and growth hormones can lead to slowing of height. Any subtle skeletal dysplasia will also manifest as gradual decrease in height. Early deviation of weight on the growth chart can signify thyroid deficiency or malnutrition.” As children grow from toddler to adolescents, foot shape, leg alignment and spine curvature changes to accommodate the increase in weight and height. Flat feet is usually seen after age three and can lead to foot discomfort and awkwardness in walking. Occasionally, excessive shoe-wear and skin callosities

can point to an underlying foot disorder. Children with high foot arches, calf thinning or habitual toe walking must be evaluated for underlying neurological disorder. The leg shape changes from bow legs (genu varum) at birth to knock knees (genu valgum) by age 3 – 4. This physiological change occurs as the growing end of the bone (epiphysis) undergoes differential growth around the knee. Any deviation from the physiological normal should alert the parents to seek consultation and detect any underlying growth disorder. Any bowlegs persisting beyond age 4 needs evaluation. As the infant starts to stand, the spine alignment changes from the “C” shape to the “S” shape to accommodate the difference in size of the vertebrae. Every parent should examine their child’s back once in a while to detect changes in spine shape. Any deviation in spine shape, a side curvature or hunch back should be evaluated to rule out scoliosis or kyphosis. Also, child having any scar, dimple or tuft of hair in the mid-line of the back should be seen by a physician. Children are not miniature adults and each child has a unique growth pattern that adheres to a normal physiological alignment. Both growth and development must be monitored in every child at school just as there is screening for vision, hearing and dentition. As growth disorder do not produce any pain, early screening can alert the parents for a more comprehensive assessment. You get to see your friends outside of school, have presents, games, live entertainment and, of course loads of junk. Healthy party-food ideas for kids are a welcome change from all the sugary options that seem to preside at every party.

Instead of filling pinatas with lollies, fill them with plastic game makers or reusable fake coins and hand out one really cool prize at the end. As an alternative to sugar-laden party food, provide sushi or savoury chips, popcorn or fresh fruit. Most of the time kids don’t even notice there’s no lollies! A colourful tablecloth, colourful balloons and streamers serve as festive reminders this is a special day. Kids love homemade cakes just as much as (and usually more than) one you’ve commissioned a gourmet chef to make. So, opt for a simple homemade cake where you can control the ingredients. Don’t feel pressured to present a Pinterest-worthy creation! One handmade with love, along with all its bumps and lumps, will be adored by your child. Serve water, and only water. Kids often don’t realise they’re drinking it and they don’t feel they’re missing out. You can use colourful paper straws, colourful cups or reusable mini-water bottles to make it more festive. You’ve seen hasselback potatoes, but have you seen these wiggly veggie bugs? Cutting mini cucumbers every 1/2 inch or so using the hasselback technique turns them into squirmy caterpillars—and gives you extra places to sneak in more veggies.

Kids love to dunk and dip their food. Homemade hummus is super-easy and cheap to make—and it’s also the reason I hoard cans of chickpeas at home. You can make a basic garlic hummus or, if you have adventurous eaters on your hands, make a festive display of rainbow dips by using different veggies to add vibrant color. Try using beets for pink, red peppers for orange or avocado for green-hued hummus. Fruit in a bowl is fruit salad. But fruit on a stick is a magical rainbow wand that can conjure up unicorns and dragons. For kids’ kebabs, I like to snip off sharp ends with kitchen shears and cut up the grapes so I’m not serving up a choking hazard. Be refreshing. What would happen if you lived by your own compass? If you only served one type of food, like just a sushi platter or just cheese platters? If you served vegetarian or made the simplest cake you can? You can be the change. Demonstrate that kids’ parties aren’t a competition about who has the biggest and the best, but about getting people together, celebrating and feeling part of a community. Help our future generations manage their expectations by building in a little disappointment to your party. Rather than have a lolly in each layer of pass the parcel, why not only provide one prize for each game? How are they going to manage relationships or team or work rejection if they’ve always been the winner?

So, until that age, parents should still get in there and brush with them at least once a day. It is also recommended that be taken children to the dentist from around two years. In this way, trips to the dentist will be familiar and can help develop a positive association with the experience.

Today, there is plenty of mental health support available for kids who need it. For kids under 12 years, seeing a specialist face-to-face is helpful since mental health in these earlier years is incredibly important. Sometimes it is difficult to notice changes in mood or behaviour given how busy family life is, but it is good if parents can take a bit of time to reflect on how the kids are going. There could be many underlying reasons that might be causing a change in their behaviour. It could be the environment, school or home, social relationships, bullying, developmental issues, learning struggles, transitions, change, or family breakdown to name a few possible causes for a child to struggle. Changes to look out for are shifts in sleep patterns, withdrawal, emotional meltdowns or lashing out at others, getting into trouble at school, or just seeming to be more troubled by everyday occurrences.


OCCUPATIONAL THERAPY There are many reasons a child might require the support of an Occupational Therapist (OT). The most well-known is for helping children with fine motor skills and hand-eye co-ordination. However, an OT can also help in many other ways such as sensory processing and sensory regulation, concentration difficulties, coordination struggles, developmental delays, feeding difficulties, friendship and social skills, and simply helping them learn to play. An OT can also work with those children diagnosed with ASD and ADHD, helping them with self-care skills, learning and play skills, as well as work with parents to establish a supportive home environment.

SPEECH PATHOLOGY Far more than simply teaching vocabulary, a speech pathologist works on communication as a whole. From articulating sounds correctly and helping children follow instructions, to non-verbal communication and those who have trouble swallowing food and drink, a speech pathologist can work across a range of cases and ages. Speech Pathologist can assess and treat anyone who experiences difficulty with their language and communication skills, They can see children who present a single articulation error to children with disabilities who require support across a range of communication areas. Children may see a speech pathologist from birth, or in many cases are referred by their school since teachers usually refer the child when they get to kindergarten and a delay is noticed. Signs will include being behind in reading, or show delays in social, speech or language skills. A speech pathologist can also help with children who need alternative ways to communicate as a result of their disability. They work with low-tech and hightech devices as alternative communication systems, such as sign language, symbols and pictures, and iPads. Speech pathology has come a long way in recent years. There is currently a huge push on early intervention as more and more research shows that a child’s early experiences literally shape the way their young brain develops. This is why it is so important to act straight away if you see any signs that your child’s communication development may be delayed.

DIET AND NUTRITION If you have any concerns with your child’s nutrition, a dietitian can help with a range of feeding and diet concerns. One of the main reasons for consulting a dietitian or nutritionist is picky or fussy eating. In other cases, children with more severe eating difficulties possibly linked with sensory difficulties, or a diagnosis such as ADHD and autism. Nutrition is constantly evolving and the recommendations are always changing and there is a lot of conflicting information out there. Basically, an experienced paediatric dietitian will look at the whole feeding environment. What children are eating, how food is prepared, what the family routines are, and then work with you to help you feed your family in the way you want to feed them. Dietitians also consider that each family has their own way of preparing food rather than simply telling them what to do. Though parents might already know what their child wants to eat, having an expert look from the outside and help with the ‘how’ of feeding can be incredibly helpful.

CHIROPRACTIC CARE Chiropractic care is a natural form of healthcare that uses spinal adjustments to correct misalignments and restore proper function to the nervous system. One of the most uncommon facts about Chiropractic treatments is that a child can see a chiropractor from birth. Based on findings, babies can be born with musculoskeletal issues which may go undetected, such as a tight muscles and a sore neck. This may result in babies not breastfeeding properly, they might become irritable, unsettled, favour one side, dislike being changed or become upset during tummy time. PAPAYA FROZEN YOGURT

APPLE BUTTER INGREDIENTS: • 10 medium – apples • 1/3 cup – apple juice • 2 tablespoon – lemon juice • 1/2 teaspoon – vanilla extract • 1/4 cup packed – brown sugar • 1 tablespoon – cinnamon • 1/4 teaspoon – nutmeg • 1/8 teaspoon – salt

INGREDIENTS: • 400g natural or Greek yogurt • 2 tbsp honey • 300g peeled papaya • 1 cup frozen raspberries • 35g cup chopped pistachios METHOD:

METHOD: 1. Core and slice apples and place in crockpot (if you don’t have a high powered blender, you may want to peel your apples to make sure you get a smooth consistency). 2. Add apple juice, lemon juice, vanilla, brown sugar, cinnamon, nutmeg and salt to a small bowl. Whisk together, and pour over apples. 3. Cook on low for 6-8 hours. 4. Allow apples to cool; strain some of the liquid out. Place into a blender (you may need to split it up into smaller portions). Blend until smooth. 5. Store in an airtight container in the refrigerator.

1. Mix the yogurt, honey and vanilla together in a bowl. 2. Line a baking dish with tin foil and pour the yogurt on top.

LEMON & BLUEBERRY MUFFINS BAKED BANANA FRENCH TOAST

INGREDIENTS: • 12 standard – cupcake liners • 3/4 cup – flour, whole wheat

INGREDIENTS:

• 3/4 cup – flour, all-purpose • 3/4 cup – sugar

• 2 medium – banana

• 2 teaspoon – baking powder

• 7 large – egg

• 1/2 teaspoon – salt

• 3/4 cup – milk

• 4 tablespoon – olive oil

• 1/3 cup – honey • 1/4 cup – butter, unsalted • 1 tablespoon – vanilla extract • 2 teaspoon – cinnamon

• 1/8 cup – apple sauce, unsweetened • 2/3 cup – buttermilk • 1 teaspoon – lemon extract • 1 large – egg • 1 cup – blueberries

• 12 slices – bread, whole wheat METHOD: METHOD: 1. Preheat oven to 350 degrees and grease a 9x13 inch pan. 2. Place bananas in a large bowl and use a fork to mash well. 3. Add eggs, milk, honey, melted butter, vanilla and cinnamon. Whisk to combine. 4. Cut the bread into cubes and add to the bowl; gently fold to coat. Spread evenly into your baking dish. Alternatively, you can leave the bread in slices, lay in the pan, and pour the egg mixture over it. 5. Bake for 30-40 minutes or until cooked through. 6. Serve warm with fresh banana slices and maple syrup!

1. Preheat the oven to 400°F. Spray muffin cups lightly with cooking spray or use cupcake liners. 2. Combine the flours, sugar, baking powder and salt in a large bowl. 3. In a small bowl, whisk together the oil, apple sauce, buttermilk, lemon extract and egg until incorporated. (No lemon extract? Use 2 tablespoons fresh lemon juice!) 4. Add the wet ingredients to the dry and mix just until combined. Gently fold in the blueberries. 5. Divide batter evenly among the muffin cups (using an ice cream scoop works great here if you have one!). 6. Bake for 20 minutes or until golden on top and the muffins bounce back when touched. 7. Cool on a wire rack before serving.

BRUSCHETTA INGREDIENTS: • 24 slices baguette • 6 ounce cream cheese, low fat • 1/4 cup pesto • 1 cup cherry tomatoes • 2 tablespoons olive oil • 1 cup, chopped cranberries, raw • 1/4 cup orange juice

INGREDIENTS:

• 1/4 cup honey

• 1 medium carrot

• 3/4 cup arils (seed/juice sacs) pomegranate

• 4 large eggs

• 1 tablespoon orange zest

• 1/4 cup milk • 1 teaspoon cinnamon

METHOD:

• 1 teaspoon vanilla extract

1. Lightly toast slices of baguette in the oven. I put my oven on broil and closely watched my slice, after about 2 minutes they were toasted and I flipped the pieces and let them broil again. Spread a light layer of cream cheese (or ricotta) on each piece of bread. I zapped mine in the microwave to make it a little easier to spread on.

1. Grate carrot; add to a shallow dish. Whisk in eggs, milk, cinnamon, and vanilla. 2. Dip bread one at a time in egg mixture. Place on a large skillet over medium heat; cook both sides until golden brown and the egg is set. 3. Slice into strips; top with nuts and additional coconut and grated carrots if desired. Serve with yogurt and bananas.

2. On half the slices, spread about a teaspoon of pesto over the cream cheese. 3. Slice your cherry tomatoes and toss in olive oil. (You can heat them over medium heat in a sauce pan if you want your tomatoes cooked a little.) Spoon tomatoes over your pesto layer and finish with a pepper! You can also drizzle a little balsamic vinegar over the top as well! 4. On the other slices of bread with cream cheese, you’ll want to prepare your cranberry-pomegranate relish. Place your cranberries, orange juice and honey in a blender or food processor. Run the food processor a few times, you don’t want to make a smoothie! You just want everything chopped. Remove from food processor and stir in pomegranate arils. 5. Spoon over cream cheese layer and top with orange zest!

SWEET POTATOES CHICKEN & CELERY STICKS

INGREDIENTS: • 4 medium sweet potatoes • 1 small onion

INGREDIENTS: • 2 cups chicken breast, cooked, chopped • 3 tablespoon green onion • 1 stalk celery • 1/4 cup Greek yogurt, plain • 1/4 tablespoon mayonnaise, light • 1/2 teaspoon vinegar, red wine • 1/2 teaspoon garlic powder • 1/2 teaspoon salt • 1/8 teaspoon black pepper, ground • 1/4 cup almonds, sliced METHOD: 1. Cook and shred chicken breasts (or grab a rotisserie) - you’ll need about two cups. Slice 4-5 green onions. Wash and chop celery into 3-4 inch pieces. 2. Mix together Greek yogurt, light mayo, sliced green onions, red wine vinegar (or other vinegar/lemon juice), garlic powder, salt and pepper. Add chicken and mix until well incorporated. Cover and refrigerate until ready to use. 3. Top celery sticks with chicken mixture and slivered almonds. Garnish with fresh dill if desired.

• 1 pound chicken, ground, raw • 2 cloves garlic • 1 cup salsa • 2 cups spinach • 1/2 cup cheese, cheddar or colby, lowfat • 2 tablespoon cilantro METHOD: 1. Preheat oven to 350 degrees and bake potatoes until soft enough for a toothpick to stick all the way in. I baked mine for about an hour. 2. In a medium skillet over medium heat, drizzle a little olive oil and add chopped onion. Let cook for 5 minutes and then add ground chicken and garlic. 3. Cook until browned and remove from heat. Stir in salsa. 4. Roughly chop spinach and then add to skillet and stir in. The residual heat from the meat and onions will cook it down. 5. When potatoes are cooked, remove and let cook for a few minutes until cool enough to handle. Cut lengthwise and hollow out using a spoon. Add the parts of the potatoes that your remove from the skins to the skillet. Stir into meat mixture and salt and pepper as needed. 6. Fill potato skins with meat/potato mixture and top with a little cheese.

MUMMY MILK HALLOWEEN MARSHMALLOWS INGREDIENTS: • Parchment paper • Marshmallows • Decorative straws or lollipop sticks • White molding chocolate • 1-2 tablespoons shortening • Multi-colored sprinkles and sanding sugar METHOD: 1. Line a baking sheet with parchment paper. INGREDIENTS: • Milk bottles • Gauze • Craft Bond Glue Spots • Fabric eyes

1. Before party, attach a Glue Spot to each milk bottle, attach gauze to tape, and wrap bottle until it is completely covered. Secure gauze with another Glue Spot. Use a Glue Spot to adhere the fabric eyes under a layer of gauze to make the eyes look as if they are peering out from beneath. 2. When guests arrive, fill bottles with milk and finish with a decorative straw.

2. Insert a straw or stick into bottom (flat side) of each marshmallow and place on baking sheet. Set aside. 3. Melt the molding chocolate according to package directions, then stir in 1–2 tablespoons of shortening to thin out the mixture. 4. Dip each marshmallow into the chocolate and allow excess to drip off. (Be patient: This step is important!) 5. Before chocolate on marshmallow dries, pour the jimmies and sprinkles into small bowls. 6. Roll the chocolate-covered marshmallows in jimmies and sprinkles, then set aside on parchment-lined baking sheet to dry.


SPARKLING PUMPKIN CUPCAKES PUMPKIN PUNCH

INGREDIENTS: • Cupcakes

INGREDIENTS: • 4 cups of ice • 2 cups orange juice, chilled • 2 cups pineapple juice, chilled

• White frosting coloured with orange gel food colouring • Orange cupcake wrappers • Orange sanding sugar or sprinkles • Green M&M’s or Sixlet candies

• 1/2 gallon of orange sherbet • 2 litres lemon-lime soda. chilled

METHOD:

• Ball jars

1. Decorate each cupcake with orange frosting using an offset spatula or with a large star tip and piping bag, starting from the centre top of each cupcake and working out to the sides, to create a swirl effect.

• Decorative ribbon • Vanilla frosting • Sprinkles • Colourful straws METHOD: 1. Before guests arrive, carefully rim each ball jar with a small amount of vanilla frosting. Roll the rim into sprinkles. Tie each jar with a piece of decorative ribbon, using a glue dot to adhere. Finish each jar with a decorative straw.

2. Attach the cupcake wrapper. 3. Over a plate, sprinkle cupcake generously with sanding sugar or sprinkles. Top with green candy in the centre of the swirl to create a “stem.”

• ¼ cup raw walnuts • ¼ cup raw pecans halves • ½ cup shelled pistachios, divided • ¼ cup unsweetened shredded coconut • 1 tablespoon chia seeds • 3 tablespoons unsweetened cocoa powder • 1 tablespoon melted virgin coconut oil • 1 teaspoon vanilla • ¼ teaspoon sea salt • ¼ cup goji berries • 1 tablespoon warm water, if necessary • 1.5 ounces 85% dark chocolate (vegan, if desired) TO DRESS: pistachios, pomegranate, Maldon sea salt

While blending, gradually add more until the ‘ice cream’ has a soft-serve creamy like consistency. 3. Pour into your favourite bowl and sprinkle on your favourite toppings, enjoy!

METHOD: 1. Add dates, walnuts, pecans, only ¼ cup of pistachios to the bowl of a food processor. Process until chunky. 2. Add in unsweetened shredded coconut, chia seeds, cocoa powder, coconut oil and vanilla extract. Process again until mixture is chunky and slightly clumping. If mixture is dry, add 1-2 tablespoons of warm water. 3. Add in remaining ¼ cup pistachios and goji berries and pulse again a few times until pistachios are slightly chunky. 4. Add mixture into a pan lined with parchment paper, pressing evenly towards the sides of the pan. 5. Add dark chocolate to a small saucepan and place over low heat until melted. 6. Pour over the bars, tilting pan so that the chocolate covers the bars evenly. Finger dip to try. 7. Dress the bites with 1 tablespoon of pistachios and pomegranate. 8. Place bites in the freezer for 30 minutes to 1 hour. 9. Once ready to serve, sprinkle with maldon sea salt then cut into 8 squares.


RAINBOW VEGGIES COOL PINK ‘PORRIDGE’ INGREDIENTS: INGREDIENTS:

• 4 large rainbow carrots, sliced • 2 tablespoon olive oil

• Handful of raspberries (wash, drain & dry)

• 1 teaspoon honey

• ¾ cup almond or coconut milk

• ½ squash (cut in chunks)

• A handful of oats

• 2 cloves garlic, minced

• ½ teaspoon chia seeds

• 1/2 teaspoon ground turmeric

• A dollop of Greek yoghurt

• 3 beetroots (scrubbed & peeled)

• Toasted almonds

• Handful of mint to dress • Handful Greek feta cheese

METHOD: 1. Roast berries on lowest heat (140*) for about an hour. 2. Blend half the raspberries with almond milk and soak overnight in the fridge. 3. Add chia seeds, a dollop of Greek yoghurt, remaining berries and toasted almonds.
