barbeque prawns INGREDIENTS
METHOD
100ml creamed coconut juice of ½ lime 2 tbsp soy sauce 2 tbsp sweet chilli sauce, or honey 1 tbsp grated fresh ginger 1 garlic clove, crushed freshly ground black pepper, to season 16 extra-large raw prawns (approx. 300g) shells, removed and de-veined 1 red onion, cut into thin wedges (optional) lime wedges, to serve
ix together the creamed coconut, lime juice, M soy and sweet chilli sauces (or honey), ginger and garlic with a little black pepper. Add the prawns and toss to coat, then cover and marinate in the fridge for a minimum of 2 hours, or preferable overnight. Remove the prawns from the marinade. Thread 1 piece of red onion onto a skewer (if using), followed by a prawn, another of red onion, a second prawn and finally a third piece red onion. Barbecue the skewers over medium-hot coals for 3 minutes, then turn and cook for another 2-3 minutes, until the prawns are pink and cooked through and the spring onions are soft. The skewers can also be cooked under a grill that has been pre-heated to high. Serve with lime wedges.

salmon skewers INGREDIENTS 1 tbsp oregano (optional) 450g thick-cut salmon fillet, skin removed 2 tbsp plum sauce 2 tbsp clear honey ½ tsp grated fresh root ginger ½ tsp soy sauce 2 lemons, very thinly sliced into rounds
METHOD re-heat the grill to high. Cut the salmon into P 1 cm cubes. Beginning and ending with salmon, thread salmon and folded lemon slices onto the wooden skewers. Lay the skewers on a grill pan lined with foil. Mix together the plum sauce, honey, ginger, and soy sauce. Bush the salmon skewers with this glaze and grill, turning occasionally, until fish is opaque throughout, 5–8 minutes. Serve warm.

½ cup chopped parsley ¼ cup chopped basil 2 cloves garlic, crushed 1 cup peanut butter salt and pepper, to season

1 small red onion, finely chopped 1 tbsp olive oil 1 garlic clove, crushed
S auté the onion in the oil for 5-6 mintues, until soft. dd the garlic and cumin, and cook for an extra A minute, then transfer to a bowl.

Add the remaining ingredients, season to taste with salt and pepper and mix throughly. For a finer texture pulse everything in a food processor. Divide the mixture into eight and form into balls and if possible chill for 1-2 hours.

INGREDIENTS 8 oz. cream cheese, softened
I n a bowl, beat cream cheese on low and add in sauce, blue cheese, colby-jack cheese, and green onions. Beat until blended.
½ cup hot wing sauce ¼ cup blue cheese, crumbled ¼ green onions, finely chopped 1 pound chicken breast, cooked and shredded 5 large flour tortillas
Stir shredded chicken into mixture by hand. baking sheet. Bake 10 minutes or until the biscuits are golden brown and the cheese is melted. S pread approximately ¾ cup of mixture on top of one of the tortillas. Roll up tortilla tightly, but without shifting the mixture too much. Repeat with remaining tortillas. Place rolled tortillas on a place and cover with plastic wrap. Refrigerate for 2-4 hours. emove from refrigerator and unwrap. Slice R each rolled tortillas in half and then each half into 3 slices, discarding ends. Place pinwheel slices on serving plate or tray.

home made nachos INGREDIENTS 159g tortilla chips 55g grated cheese 55g grated mozzarella (not the fresh type in water) 20g grated parmesan
SALSA 300g cherry tomatoes 4 spring onions, roughly chopped ¼ red pepper ¼ fresh red chilli (optional) salt and pepper, to season
METHOD irst, make the salsa. Halve the cherry tomatoes F and squeeze out as many pips as possible. Put the tomatoes in a food processor with the spring onions, pepper and chilli, if using. Season to taste with salt and pepper and whiz for about 30 seconds to finely chop (but not purée) the ingredients. Scrape out into a sieve and leave to drain over a bowl for 10 minutes. Pre-heat the grill to high. Cut the salmon into 1½ cm cubes and thread onto the wooden skewers. Lay the skewers on a grill pan lined with foil.

Pre-heat the grill to high and line a baking sheet with foil (or make 4 small foil trays, for individual portions). Spread out the tortilla chips in a single layer and spoon the salsa over. Mix the cheeses together. Scatter any (or all) of the toppings over the tortilla chips then top with the cheese.

METHOD S pray some non-stick spray in the tin. Wrap the dough around the cheese and place them in the muffin tin. Cook at 180°C/370°F. for 11 minutes (or until golden brown). Let them cool for 2 minutes or so, and enjoy!

baked sweet potatoes METHOD
INGREDIENTS 8 medium sweet potatoes, well scrubbed
PARMESAN BUTTER 110g butter, softened 40h grated Parmesan freshly ground black pepper, to season
SWEET CHILLI CREAM SAUCE 110g cream cheese
o make the Parmesan butter, beat the ingredients T together with a little freshly ground black pepper until well combined. Form the mixture into a log shape on a piece of cling film, wrap in the cling film and roll into a cylinder shape. ash together the cream cheese and sweet chilli M sauce. Chill both overnight. rap each potato separately in a piece of foil. W The potatoes need approximately 50-55 minutes baking time, so I prefer to start them off by baking them in an oven pre-heated to 180°C/350°F for 40 minutes before placing them in the white embers of the fire for 10-15 mintes, turning regularly. If you have a large barbecue, you can bake them entirely in the embers of the fire, turning regularly, then start checking if the potatoes are done after 45 minutes.

Unwrap the potatoes carefully and serve with a pat of the butter and a spoonful of the sweet- chilli cream cheese melting in.
cheese bombs METHOD
INGREDIENTS 2 cans refrigerated biscuits
Preheat oven to 200°C / 400°F.
4 oz. Mozzarella cheese, cut into 20 cubes
S eparate biscuits. Place on cube of cheese in the center of each biscuit. Carefully wrap the biscuit dough around the cheese and seal. Place seam side down about an inch apart on an ungreased baking sheet. Bake 10 minutes or until the biscuits are golden brown and the cheese is melted.

½ tsp italian seasoning ½ tsp garlic powder
While the biscuits bake, mix the butter, Italian seasoning and garlic powder together and set aside. emove the biscuits from the oven and R immediately brush with butter mixture. Serve warm.

INGREDIENTS

Spread a bit of caramel sauce on the bread, then top with an ounce of ricotta cheese on both sandwiches. Add a bit more caramel, add the apple slices, and then more caramel and remaining ounce of ricotta for each. Spread the top piece of bread (sandwichside down) with caramel too. rill or cook on each side until bread is golden G brown and the cheese is melted.
strawberry grilled cheese sandwiches METHOD
INGREDIENTS multigrain bread, 8 thick slices 10 ounces of strawberries 10 fresh basil leaves, chopped 6-8 ounces of mozzarella cheese, sliced 2 tbsp olive oil
I n a large bowl, mash strawberries with a fork and stir in chopped basil. Heat an electric griddle or large skillet over medium-low heat. ay a piece of cheese on each slice of bread, L then top with a few spoonfuls of smashed strawberries. Gently pick up 3 slices, brush some olive oil on the bottom, and place them on the griddle or skillet. lace the remaining slices on top, brushing P them with olive oil too. Cook these over lower and slowly so the bread gets perfectly golden and the cheese melts, so let each side cook for about 4-5 minutes.

chocolate star cookies INGREDIENTS COOKIE DOUGH 250g flour 150g sugar 150g butter 40g honey 1 egg yolk 100g dark chocolate, chopped 1 level tsp cinnamon grated lemon zest FOR TOPPING 1 egg cinnamon, to taste
METHOD Start the cookies, combine the flour, the sugar, the diced cold butter, the honey, the egg yolk (save the egg white for later), the finely chopped dark choccolate, the ground cinnamon, and the grated lemon zest in a large bowl. Bring the ingredients together to form a ball, then transfer to a work surface and knead until the dough is smooth and firm. Dust the work surface, with flour and roll out the dough with a rolling oan to a thickness of ¼ inch. Using start-shaped cookie cutter, cut out stars and place on baking trays, lined with parchment paper. Brush the stars with the egg white and sprinkle a pinch of ground cinnamon on each cookie. Bake in a preheated oven at 150°C/300°F for about 12-15 minutes, then remove from the oven and allow the cookies to cool, before serving.
chickpeas INGREDIENTS 2 cups cooked chickpeas 1-2 tsp olive oil ¼ tsp pepper ¼ tsp smoked paprika ¼ tsp garlic powder
METHOD Preheat oven to 200°C/400°F. Place chickpeas on a paper towel and pay completely dry. Remove any loose skins. lace on a baking sheet and mist with olive oil P or oil of choice. Roll around to coat. Sprinkle with seasonings of your choice and toss well to coat. Make sure chickpeas are in a single layer. Bake for 15 minutes, toss well and flip. Let cool and eat!

chewy cookies METHOD
INGREDIENTS
reheat the oven to 170°C/325°F. In a small P bowl, whisk together the flour and baking soda.
2 cups all-purpose flour ½ tsp baking soda 1 ½ sticks (12 tbps) of unsalted butter, browned and slightly cooled 1 cup loosely packed brown sugar ½ cup sugar 1 egg + 1 egg yolk, at room temperature, lightly beaten 2 tsp vanilla extract 1 ½ cups crushed kettle cooked potato chips 1 cup chocolate chips
I n a larger bowl, whisk together the browned butter and both sugars until smooth and no lumps remain. Stir in the eggs and vanilla extract until combined. At this point, switch from a whisk to a spoon and stir in the flour mixture. The dough may be crumbly but you can also bring it together with your hands. Stir in the potato chips and chocolate chips until evenly distributed. Roll the dough into 1-inch balls (or larger) and space them about 2 inches apart on the baking sheet. ake for 12 to 14 minutes, or until the cookies B appear set but not browned. Remove and let cool slightly before eating.
caramel latte popcorn METHOD
INGREDIENTS 7 cups prepared popcorn 3 tbsp unsalted butter, melted 1 tbsp packed light brown sugar 3-4 tbsp of your favorite caramel ½ tsp instant espresso powder
ut the popcorn in a large bowl. Stir together P the melted butter, brown sugar, caramel, salt, and espresso powder in a small bowl. (Use espresso powder to taste. If you can’t find espresso powder, substitute instant coffee granules.) Drizzle the butter mixture over the popcorn and toss gently until combined. Serve immediately or store in an airtight container for up to 1 day.

marshamllow sticks INGREDIENTS medium to large sized marshmallows sprinkles (any kind you have will work) light corn syrupp paper Straws a small brush (preferably a new little paint brush) 1-2 cups powdered sugar
METHOD S tart by cutting your paper straws in half. Then, insert the paper straws into the marshmallow until they are secure. (That is a perfect job for little hands if you happen to always have kids in the kitchen). sing a little brush, paint a very thin line of corn U syrup around the bottom of the marshmallow. Roll the corn syrup coated marshmallow in some sprinkles! Place them on a piece of wax paper (or a surface that won’t stick) and let them dry. Drying time is only about 12 minutes.
sugar cookies INGREDIENTS 2 ½ cups all-purpose flour ½ tsp salt 2 sticks of softened butter (real butter) 1 ½ cups confectioner’s sugar 1 egg 2 tsp baking powder 12 Starbursts
METHOD In a bowl, combine the flour in , salt, and baking powder. ix the softened butter together with the M confectioner’s sugar for about 30 seconds or until fully combined . Add the egg to your butter/sugar mixture. Mix on medium speed for 30 seconds or until fully combined. Little by little, add your “dry ingredients” from step #1 into your mixing bowl. Sprinkle some flour on wax paper, and roll the dough out until it is the desired thickness. Pre heat your oven to 200°C/400°F. sing a cookie cutter or an upside down circular U drinking glass, cut out cookies and place them on a greased cookie sheet (or use parchment paper). Bake the cookies at 200°C/400°F for 5 minutes. Remove them from the oven and place Starbursts on top. Bake the cookies for 3 more minutes.

chocolate dipped pretzel METHOD
INGREDIENTS 1 cup dark chocolate chips (or
ine a cookie sheet with wax paper. Place L chopped almonds in a bowl and get out your pretzel rods. Stir chocolate chips and oil in a microwave safe bowl. Heat on high power in 30 second increments, stirring between each, until chocolate is melted and smooth. Dip each pretzel rod in the chocolate as for as you can in the bowl you’re using. If you want the chocolate to come further up the rod than the bowl allows, use as spoon to paint it up the rod. Tap off the excess chocolate, then place the rod on the prepared cookie sheet. Sprinkle with chopped almonds. Repeat until chocolate is gone. Chill to set. Store in an airtight container for up to 1 week.

Once the peanut butter and the candy are melted together, pour over the popcorn. Stir carefully. Add chopped Oreos and stir once again. Turn popcorn out onto a large cookie sheet lined with a silpat or parchment paper. Let cool until hardened.

There is not one eating plan that is right for everyone with kidney disease. What you can or cannot eat may change over time; depending on how much kidney function you have along with other factors. In addition, if you are following a special diet for diabetes or heart conditions, you will need to continue to follow it as well. People with Kidney Disease may need to control the amount of Protein, Sodium, Potassium, Phosphorus, and Calcium in their diet but if your kidney disease gets worse, you may need to limit other nutrients as well.
HERE ARE FEW TIPS : Protein Your body needs protein to help build muscle, repair tissue, and fight infection. If you have kidney disease, you may need to watch how much protein you eat. Having too much protein can cause waste to build up in your blood. In this case, your kidneys may not be able to remove all this extra waste. The amount of protein you need is based on your body size, your kidney problem, and the amount of protein that may be in your urine. Having said that, you can have an average of 70gm per day.
Sodium Healthy kidneys control how much sodium is in your body. If your kidneys do not work well, too much sodium can cause fluid buildup, swelling, higher blood pressure, and strain on your heart therefore; it is preferable to restrict your Sodium intake such as Salt.
Pottasium Potassium works with the muscles, including the heart. Too much or too little potassium in the blood can be very dangerous therefore, the amount of potassium you need is based on how well your kidneys are working and medications you are taking. Moreover, if your Kidney Function is really bad, do not eat high Potassium foods such as Oranges, Bananas, Dates & Tomatoes.
Phosphorus As the kidney function gets lower, extra phosphorus can start building up in the blood. High phosphorus levels can cause bones to get weaker. Dairy products, Meats and Nuts should be avoided in this case.
Calcium Foods that are good sources of calcium are often high in phosphorus. Your dietitian or healthcare provider will tell you what you need to eat. Calcium supplements are usually needed in this case when the Kidney Function is bad in order to protect your bones from any possible fractures.
To sum up, foods rich in dairy and citrus such as milk, yoghurt, oranges, lemons and tangerine should be avoided along with red & white meat, and dates. On the other hand, apples, vegetables (not including tomatoes), rice, eggs, and a reasonable amount of white meat are healthy for those suffering from Kidney Disease. INGREDIENTS 1 cup unsalted butter, softened ½ cup powdered sugar 1 tsp vanilla 2 ¼ cups flour ½ tsp salt 1 cup mini chocolate chips additional powdered sugar, for rolling
reheat oven to 200°C/3750°F. Line two P cookie sheets with parchment paper. Mix butter, ½ cup powdered sugar, and vanilla with an electric mixer until fluffy. Add flour and salt and mix until the dough comes together. Stir in the chocolate chips. If dough is too soft, chill it until you can work it easily with your hands. Scoop 1 tablespoon balls of dough and place on prepared cookie sheet. Bake cookies for 7-10 minutes until bottoms are just slightly brown. Remove from oven and cool for just a minute, until you can handle them. ill a small bowl with powdered sugar and roll F each cookie in the sugar until coated. Place on a rack to cool. (Once cookies are cooled, you may want to re-roll them in more powdered sugar.)
peanut butter bites INGREDIENTS
METHOD
½ cup peanut butter 1 cup finely ground graham cracker crumbs ½ cup finely chopped peanuts
S tir peanut butter in a medium sized bowl. Stir in graham cracker crumbs. Chill for at least 30 minutes. Scoop tablespoon sized balls of the peanut butter mixture onto a wax paper lined cookie sheet (dough will be soft). Roll into uniformed sized balls. Place chopped peanuts in a small bowl and roll the balls in them to coat. Store in refrigerator; they can also be frozen.

coconut almonds INGREDIENTS 1 cup shredded sweetened coconut 2 cups raw whole almonds 2 tablespoons honey
METHOD lace the coconut in a large frying pan over low P heat. Stir often until the coconut begins to turn golden, then stir constantly until most of the coconut is a golden color. Immediately remove from heat to a bowl to cool slightly. Be really careful when toasting the coconut - it burns very fast and burned coconut smells really bad! lace the cooled coconut in a food processor and P pulse until small shreds remain. Set aside. reheat oven to 180°C/370°F. Place almonds on a P cookie sheet lined with parchment paper or a silpat baking mat. Bake until toasted, about 5 minutes. Do not walk away from the stove, keep an eye on them. While the almonds are toasting, place the honey in a large bowl. When the almonds come out of the oven, immediately place them in the bowl and stir until they’re all coated with the honey. Sprinkle the coconut over the top and stir again to make sure they’re all coated.

S pread the almonds in a single layer on the cookie sheet and let dry for at least 2 hours, breaking them up as needed. They’ll stay somewhat sticky but not clumpy once they’ve set. Store in an airtight container for up to 1 week.

INGREDIENTS 1 bag (about 3.3 ounces) microwave popcorn ¼ cup butter 6 cups mini marshmallows 1 cup mini chocolate chips

You don’t want someone to break a tooth on your dessert. lace your butter in a very large microwave P bowl. Microwave for about 30-45 seconds until melted. dd your marshmallows to the butter bowl. A Stir to coat with the butter. Microwave for 1 ½ minutes, stirring after 45 seconds. Stir to make sure the marshmallows are totally melted. Add your popcorn and stir carefully. Spray your hands with cooking spray. Press the popcorn mixture into the pan, compacting it as much as you can. Let cool completely before slicing.

hot chocolate INGREDIENTS 4 ounces semi-sweet or milk chocolate chips (about ½ cup) 1 cup unsweetened cocoa powder 2 ½ cups powdered sugar 1 tsp salt 1 tbsp cornstarch 1 tsp cinnamon, optional FOR EACH SERVING HOT CHOCOLATE: 2 tbsp hot chocolate mix 1 cup milk (regular, non-fat, almond, soy, or coconut) Whipped Cream or marshmallows, for garnish
TO MAKE THE HOT CHOCOLATE MIX: Freeze the chocolate chips for at least 10 minutes. Pulse the frozen chips in a food processor until they are small crumbles. (If you don’t do this when they are frozen they’ll melt in the processor!) Whisk together crumbled chocolate chips, cocoa powder, powdered sugar, salt, cornstarch, and cinnamon (if using). Place in a plastic bag or airtight container. Makes 4 cups mix. TO MAKE HOT CHOCOLATE: Add 2 tablespoons of mix to 1 cup hot milk (use any kind of milk or soy or amond). Stir, serve with whipped cream or marshmallows.

Blend until combined and pour into glasses. Top with frosting (or whipped cream!) and some extra marshmallows.
