What are early tests available to detect kidney damage of Diabetes Mellitus or hypertension before actual deterioration of kidney function? Simple testing of the Micro Albumin in the urine will detect the state of hyper filtration of kidney filters before any effect on the kidneys function. Normally, it is less than 30 mg per day. 30 to 300 may indicate early kidney disease (microalbuminuria).

UMBILICAL CORD STUMP

How to take care of Umbilical Cord Stump of a newborn baby? Taking care of the umbilical cord stump is fairly simple and mainly requires you to keep the part dry and clean. This is a significant change from the earlier process of applying antiseptic liquid or powder, as studies have shown that there is no benefit in using the same. The stump usually falls on its own within 7 to 14 days and you only need to keep the area dry and clean. If the area gets wet, you can soak it with a clean cotton linen. THYROID HORMONE

Is thyroid hormone important for pregnancy and should it be monitored?. Thyroid hormone is very important for fertility, health of the baby and the outcome of pregnancy. During pregnancy, if you have pre-existing hyperthyroidism or hypothyroidism, you will require more medical attention to control such conditions during pregnancy, especially in the first trimester. Occasionally, pregnancy may cause symptoms similar to hyperthyroidism in the first trimester. If you experience palpitations, weight loss, and persistent vomiting, you should contact your physician to diagnose and treat thyroid conditions. Untreated thyroid diseases in pregnancy may lead to serious consequences like premature birth, preclampsia (a severe increase in blood pressure), miscarriage and low birth weight among other problems. It is important to talk to your doctor if you have any history of hypothyroidism or hyperthyroidism so you can be monitored before and during pregnancy and your treatment adjusted if necessary. TODDLER WALKING IN NIGHT

My nearly two-year son is usually a good sleeper. However, recently he has been waking up early hours of the morning for over an hour to sometimes two hours. He is wide awake when this happens and wants to get up. Any advice? As your child is usually a good sleeper, it is highly likely that your recent sleep problems are a temporary presentation due to a developmental leap, like a language explosion for example. Some development stages have a greater impact on sleep than others and a long wakeful period overnight is very often what parents will observe. However, I would also suggest to parents that long wakeful periods overnight may also be indicative of over-tiredness. So I would advise that you ensure that your child is still having a daytime sleep of around two hours and that the nap happens after noon and not before. In tandem with this, I would suggest that bedtime would need to happen within five hours of the nap ending. This can help make sure that your child is not overtired going to bed and that a wakeful period overnight is avoided. Obviously, I would encourage you to examine his diet and outside activity and also any over reliance on television/electronics, as all of these factors too may contribute to the problem described. Dental tips to start school with a healthy smile.

1. Schedule a visit with a pediatric dentist for check-up, cleaning and applying protection to minimize the risk of decay.

Dental care is important all year round, but a back to school checkup is very important after a summer vacation full of ice cream, sugary snacks etc.

2. Treat their cavities before school to avoid absence due to dental pain and the negative effect of cavities on their developmental, social and psychological status.

Even if your child’s teeth look clean and white from outside, dental decay could be hiding beneath and in between the teeth.

3. Buy them new toothbrush and toothpaste of their choice to motivate them brush their teeth and make it a regular habit twice a day for 2 minutes.

hether your child is starting school for the first time, moving to a new school or transitioning from primary school to high school, it will definitely be a big change. The challenges that will be faced aren’t limited to your child, though: this is a change for the whole family. While your child has new surroundings and expectations to become accustomed to, you have new routines and emotional support to provide, and a new school community to join, and your school kid’s siblings might feel the change too.

Heading to school will bring with it lots of new challenges, but it’s sure to be an exciting time for you all. All of us here wish you the best for a smooth transition!

ADJUSTING TO NEW ROUTINES The school year will be filled with routines; it’s the only way to get your child to school on time, keep up with notices and events, and get everything else done as well. The routines you decide to set will depend on many things and it’s worth trying a few different ways that work for you, your child and your family but there are a few tips the experts can offer to get you started on the right track. The first is this: don’t wait until the last minute to try getting a routine going. “Start the routine week before the first day”. advises Susan, who provides guidance to students and parents. “This includes getting a set bedtime and a morning routine established.” Of course, this can be tricky to enforce during the summer holiday, but even a week of a new routine before school starts will set the pace for the year. Your new routine needs a few harsh realities, too. “Ensure your rule includes

no television of a morning or at least until they are up, dressed, breakfast eaten, teeth brushed and bag packed, ready to walk out the door,” advises Susan. “If they are ready early, some television or computer games are permitted but only after they are ready.

THE LUNCH BOX CHALLENGE School lunch boxes can pose an enormous challenge when you’re a new school parent. You need to navigate the world of allergies and food intolerances (those of your child or their classmates), school rules, your child’s food preferences (and perhaps fussiness) and trying to set up your child for healthy eating habits and all with limited time. Oh boy! The number one potential pitfall to be wary of is giving in to the call of too many packaged foods. Danah, advises, “Processed food is so easy and attractive to kids and time-stressed parents, but hidden in these processed foods are

Eating real whole food and ensuring that children receive a balance of carbohydrates, proteins and fats means that the young students won’t experience fluctuating blood sugar levels (highs and lows) and will actually be able to concentrate better in class and may avoid afternoon energy slumps.”

TIME TO BE AN ORGANISATION NINJA There are other ways in which you’ll need to be super organised, too. For starters, says Ghada, “Label everything all clothing, bags, lunch box, drink bottle: everything.” Things are bound to get lost, but hopefully they’ll be returned to you if they’re labelled clearly. Kelly suggests getting uniforms ahead of time, too. “Don’t leave the purchase of shoes until just before school starts,” she says. “It is a good idea if your child has time to walk around at home in their shoes so there aren’t tears and sore feet on the first day.” Being organised can be helpful to your sanity and your child’s coping mechanisms.

SEPARATION ANXIETY

GET INVOLVED

If you think your child is the only one who might experience separation anxiety, well, you might be surprised. Many parents feel really emotional about their child starting school or heading into a new stage like high school, particularly on the first day when it can hit you that your child is gaining new independence. This is okay and perfectly normal but it is important to manage any outpourings of emotion to avoid negatively impacting on your child.

You are now part of a new school community, and this is a great opportunity to help out and meet other parents.

Meeting other parents socially can also be a good way to feel part of the school community. After all, being part of a community builds a sense of belonging.

BE YOUR CHILD’S BIGGEST SUPPORTER If you are a working parent, it can be a good idea to try and arrange a little extra time to be there for your child as they adjust to their new environment. “Take a couple of days leave during that first week,” suggests Ghada, so you can be there for the first day, get to know the teacher, take your little one to school and pick them up. Research has shown that family life has a huge effect on how well your child transitions to school. Your role is to provide a positive, secure and supportive environment that your new child school can rely on. The good news is that it’s likely that you are already doing that but it’s not worth taking this time to reflect on and discuss what this means to you. “It’s a good milestone to think long term and reflect on what’s really important in life,” says Ghada.

M

oving your toddler from a cot to a bed is an important milestone.

There is no “best” time to move your toddler from a crib to a bed. While most little ones begin transitioning to a big kid bed somewhere between ages 2 - 3 ½, there really are no rules about making the switch. Moving from a crib to a bed is a huge transition for little ones that can result in night wandering, new fears, and new insecuritie Heading to school will bring with it lots of new challenges, but it’s sure to be an exciting time for you all. All of us here wish you the best for a smooth transition!

TIME FOR BIG BED

NEW MILESTONE When you decide to introduce this milestone depends on several things. Perhaps your little one has outgrown their cot or has started to climb out of it. Maybe you are potty training and your toddler needs to access the toilet at night, or maybe you have a new baby on the way. If you are expecting another baby then it’s recommended that you

either make the move from cot to bed at least six to eight weeks before, or three to four months after the new arrival. The former will give your toddler enough time to settle in before the new arrival ‘takes over’ their cot, while the latter allows them to adjust to the new baby.

TIME IT RIGHT If your child is also going through another major milestone (like being potty trained, starting playschool or adjusting to a new baby) then moving from a cot to a bed will understandably be a bit trickier. Talking to your toddler in the weeks leading up to the move is an important preparation, as well as emphasising how exciting their new bed will be.

LET YOUR CHILD GET IN ON THE ACTION Once they are familiar with the idea of a bed then you can start taking some practical steps that involve your toddler, like choosing the bed (after you’ve done the groundwork and narrowed them down) and bedding. Allow your child to play an active role in making the transition by allowing him to choose the bed

and new bedding. You want your child to feel as safe and secure as possible. If you already have a cot bed then that’s one buy to tick off your list. If not, you’ll need to decide on whether opt for a children’s bed or a standard single bed. A child’s bed is smaller so will be easier for your toddler to get in and out of, as well as cheaper, and should last until your child’s bed is more practical too.

BED SAFETY A major adjustment for both you and your toddler to contend with is that they are no longer contained at sleeptime and free to get out of bed as they please, so bedtimes and early mornings will inevitably present some child wandering challenges. You’ll no doubt have childproofed their room already, find the right spot in the room — that means away from windows, blind cords, draperies, radiators, heat registers and wall or floor lamps and ensure the floor is clear of anything they can trip over or bump into in the dark. Check joints, screws or other hardware regularly to ensure they are not loose


PRACTISE PATIENCE Your toddler will inevitably get up at bed-time or during the night. If this happens just lead them back to bed, say goodnight and leave the room with minimal fuss or interaction. Try not to engage in conversation or spend too long in the room this way your toddler will quickly tire of getting up after a few nights. It’s important to stay calm because getting angry will only keep your toddler awake for longer as a result of a rush of adrenalin brought on by fear or excitement. When it comes to early morning, this can be even more frustrating as well as dangerous, as your toddler is less likely to be tired may want to explore the house at an ungodly hour. Closing their bedroom door and leaving out some of their favourite toys to keep them occupied might help contain them for a short time. However, if they can open their door then consider using a safety gate in the doorway or reinstalling a stair gate at the top of the stairs and closing/ locking bathroom doors etc. so they can’t access anywhere unsafe. Installing a landing nightlight is also worthwhile Depending on what time they rise, you can either choose to bring them into bed with you for a family snuggle or decide to start the day bit earlier.

CHOOSING A TODDLER BED Start with a toddler bed. Toddler beds are usually the same size as cots, and some cots even convert to toddler beds. They reduce the risk of your child falling out of bed and being hurt. And you can keep using your cot mattress and bedding. Use a single bed. An advantage of a single bed is that it all last a long time, although a single bed increases the risk of injury from falls.

USE A SPECIAL LIGHT AND/OR A WAKE UP CLOCK White noise is especially helpful for drowning out noise and has a calming effect on newborns, toddlers, and preschoolers alike. You can simply download a white noise track from iTunes. You set up the wake up clock for what time your child is allowed to get up. In theory, he/she will not come out of his/her room until the wake-up picture is displayed on the clock (the wake up clocks work well for some children but not others).

BEDRAILS -A NECESSITY? Using a bedrail is entirely your choice but, according to the feedback of our Mums in Bahrain comunity members they are unnecessary. They recommend using a rolled up towel along the edge of the bed under the sheet and putting a few extra pillows on the floor for the first few weeks to break their fall if they do manage to slip off the bed. However, if you would prefer to use a bedrail or inflatable bed guards then remember to take them down once your toddler can climb in and out of bed, as they can often remain up needlessly for long periods.

Your child is toilet training and you want your child to be able to get to the toilet easily during the night.

You’ve decided to move your child out of your bed and into her own bed.

r. Reeti Malhotra, Consultant Dermatologist at Royal Bahrain Hospital clarifies the common reasons behind acne and the various ways to successfully treat the same.

ACNE Acne vulgaris or “pimples” as it is commonly called is a self-limiting disorder of the “oil” or the sebaceous glands. Around 95% of the population has experienced an outbreak of acne at some point in their lives. It is a sign of the onset of puberty. Most people recover by the early twenties; however it is now persisting into the late adult life as well.

SKIN CONDITION

WHAT CAUSES ACNE?

Acne is caused by blocks in pores, (blackheads & whiteheads), excess oil production, infection by a bacteria and a fungal organism in some instances, inflammation and hormonal imbalance like PCOD, which is very common these days. Diet, stress, medication and occupational factors may also cause acne. The areas with higher proportion of oil glands are usually involved like the face, chest and back. It progresses through stages of white/black heads to red spots/pus filled to marks, pigmentation and scars.

WHY IS ACNE WORTH TREATING? Affected individuals are required to wash the areas two to three times a day, with a special cleanser to unblock the pores. Creams containing Vitamin A, acid derivatives, and topical antibacterial agents are used for mild acne. For moderate and severe or unresponsive acne, oral medication is prescribed. They could be antibiotics, oral contraceptive pills or Isotretinoin (Roaccutane), which is a wonder drug for acne. It is capable of curing a large group of people, but has to be taken under strict medical supervision to avoid the side effects associated with it.

MAKING THE CHOICE Choosing the right photographer for your newborn shoot is essential and clearly you need to be doing your research when you are pregnant. “There’s definitely an art to it; you need to be able to handle a newborn baby and you need to be very confident with them,” says Lucy, who has five children between her and her husband, James. “If you have new parents coming into your studio with their newborn baby, if you’re all fingers and thumbs with the baby, they won’t be confident in you. A lot of newborns come in during their first two weeks, so you need a relaxed atmosphere and a very warm studio. I would always put two hours aside for a newborn shoot, because the baby inevitably will need to be fed during the shoot, especially breastfed babies.”

But I had someone in on Saturday who said they had a section and didn’t feel up to coming in until the baby was six weeks old the limbs are getting bigger and you wouldn’t be able to get them into the positions you would have been able to when they were very new, but they are at a different stage and still amazing to photograph. So, what I say to people who think they have left it too late, no you haven’t, they are still your newborns.”

Part of starting a new school year for your child is the need to have the perfect lunchbox to keep them healthy while they are at school. If you are still looking for one, you will be able to find them on these suggested places from other Mums in our community!

KEEP IT SIMPLE Keeping food simple and colourful is the first step in preparing a lunch box for your child. Don’t feel you need to create a different lunch every day… parents are under so much pressure already, so aim to keep it real and keep it simple. We need to remind ourselves to take things back to basics with meat, vegetables, fruit and some nuts or seeds nothing fancy, nothing flashy. Children will soon tell you when they are bored with the same food every day.

WHAT DOES A BALANCED LUNCH BOX LOOK LIKE?

An interesting lunchbox has a variety of different items in it, to provide balanced nutrition and to add variety and choice to hungry, but sometimes choosy, eaters. It is good to include a range of ‘lunchbox staples’ as well as frequently changing exciting options: items such as fruit and vegetables, crackers, meat and dairy choices.

WHAT TO INCLUDE • Vegetables Sticks (cucumber, pepper, celery, carrot) alongside a dip such as hummus • Bite sized fruit (strawberries, raspberries, sliced peaches or nectarines, grapes, satsuma segments). Apples too, but they should have a little lemon juice on them to stop them from going brown. • A simple Fruit Salad can be made by combining several different bite-sized fruits and adding a little orange juice to keep them moist.

• Cooked Meats such as salami, ham, mortadella or pastrami are all good (make sure that the lunchbox has an ice compartment to keep them fresh though). • Fruit Yogurts or Fromage Frais are another great choice to provide calcium and a little natural sweetness. Again, make sure that the lunchbox is kept cold. • Cheese Cubes are also great favourites and often go well with crackers or fruit.

• Bread Sticks and Flat Breads are a great choice, with a soft cheese dip or hummus.

KID-FRIENDLY PASTA SALADS Raise your hand if you have a child who loves pasta! In order to keep the toddler lunchbox varied and full of fresh, vibrant veggies, we have listed below some creative ways to please toddler pasta craving while still serving a healthy, balanced meal.

TOMATO, CHICKPEA, CHEDDAR ANDSHELLS • 1/2 pound whole wheat or gluten-free orzo • 2 large carrots, peeled and chopped • 1/2 cup frozen, defrosted peas • 1/4 cup Parmesan cheese • 1 tablespoon extra virgin olive oil or melted butter • salt to taste METHOD: 1. Cook the pasta. 2. Toss warm pasta with the tomatoes, chickpeas, cheese and olive oil and finally, serve warm or at room temperature.

PEAS, CARROTS, AND ORZO SALAD • 1 cup orzo dry • 2 medium carrot • 1/2 cup green peas, frozen • 1/4 cup Parmesan cheese • 1 tablespoon olive oil • 1/8 teaspoon salt METHOD: 1. Cook the pasta. 2. Then toss warm pasta with the carrots, peas, cheese and olive oil or melted butter and then serve warm.

SOUTH WESTER N PENNE SALAD • 1/2 pound whole wheat or gluten free penne • 1/2 15-oz can black beans, drained and rinsed (about 1 cup) • 1/2 cup chopped red bell pepper • 1/2 cup frozen defrosted or fresh corn kernels • 2 teaspoons lime juice • 1 tablespoon olive oil • 1 teaspoon honey • 1/2 teaspoon salt METHOD: 1. Cook the pasta. 2. Meanwhile, make the dressing by whisking together the lime juice, olive oil, honey and salt. 3. Toss together the warm cooked pasta, beans, pepper, corn and also the dressing. Then serve warm.

BROCCOLI AND EDAMAME SALAD • 1/2 pound 100% buckwheat soba noodles, whole wheat or gluten-free spaghetti • 1/2 cup broccoli florets • 1/2 cup frozen, defrosted, shelled edamame • 1 teaspoon honey • 1 tablespoon extra virgin olive oil • 1 tablespoon sesame seeds METHOD: 1. Start by cooking the pasta. Add the broccoli to the boiling water during the last minute of cooking. Drain the pasta and broccoli. Then set aside. 2. While the pasta is cooking whisk together the tamari, soy sauce, or coconut aminos with the honey and olive oil until well combined. 3. Finally, toss together the warm cooked noodles, broccoli, edamame, and dressing. Sprinkle with sesame seeds, then serve warm or at room temperature.

CHICKEN SATAI

WITH PEANUT SAUCE

Peanut butter is packed full of energy as well as folic acid, calcium and zinc, so dunk in your chicken for a satisfying taste. PS: The whole family will love this child-friendly no-marinade recipe for super easy Chicken Satay Skewers. FOR THE MARINADE: 1 garlic clove, crushed 1 1/2 tbsp lemon juice 1 tbsp soy sauce 1 tbsp runny honey 1 tsp peanut butter (smooth or crunchy) 4 chicken breasts, cut into long strip FOR THE SAUCE:

METHOD: 1. Mix together all the ingredients for the marinade. 2. Flatten the chicken, cover with cling film and carefully bash it with a rolling pin. Cut each breast lengthways into 4 or 5 strips.

1 tbsp vegetable oil 1/2 onion, finely chopped 1/2 tsp crushed dried chillies or 1 tbsp sweet chilli sauce (or to taste) 100gm peanut butter (smooth or crunchy) 75ml coconut milk 75ml water 1 tsp soft brown sugar 8 wooden or bamboo skewers

3. Marinate the chicken for between 15 and 30 minutes. 4. Soak the skewers in cold water for 20 minutes – this stops them from burning or charring when cooking. 5. To make the peanut sauce, heat the vegetable oil in a pan and sautÊ the onion and chillies (if using) for 4 minutes. 6. Add rest of the ingredients (including sweet chilli sauce if using). 7. Bring to the boil, stirring, then cook for 2 minutes until thickened. 8. Pre-heat the grill. 9. Thread the chicken strips onto the skewers and grill for about 4 minutes each side, turning occasionally. LUNCHBOX IDEAS

10. Serve 2 skewers each with some of the dipping sauce.

BROCCOLI AND CHEESE CALZONE 1 package (10oz) broccoli, frozen 1 1/2 cups water 2 1/4 teaspoons yeast, active dry 1/2 teaspoon brown sugar 1 teaspoon salt 2 tablespoons olive oil 1 1/3 cups flour, all-purpose 2 cups flour, whole wheat FOR THE SAUCE: 15 ounce ricotta cheese, part skimed milk 1 ounce Parmesan cheese, grated 1 large egg 1 teaspoon basil, dried 1/4 teaspoon – garlic powder SERVE WITH: 2 cups peaches, canned in own juice METHOD: 1. Thaw broccoli. 2. For the dough: Warm the water in the microwave for about 1 minute. 3. In a large bowl, dissolve the yeast and brown sugar in the warm water and let sit for 10 minutes. Stir the salt and oil into the yeast solution.

CHERRY PIE LARABAR 1/2 cup pecans, chopped 1/2 cup walnuts, chopped 1 cup almonds, whole 1 cup dates, pitted 1 cup cherries, dried 1/2 teaspoon vanilla extract 1/4 teaspoon sea salt METHOD: 1. Add all ingredients to the bowl of your food processor and blend until the nuts are well chopped and a thick “dough” starts to form, about 3-5 minutes of processing. 2. When the ingredients are well incorporated, remove the blade from the food processor. Take 1 large tablespoon of the “dough” and roll it into a ball in between your hands. Repeat with remaining dough. Keep the balls in the fridge for up to a week or in the freezer much longer.

4. Mix in 2 1/2 cups of the flour. Turn dough out onto a clean, well-floured surface and knead in more flour until the dough is no longer sticky. 5. Place the dough into a well-oiled bowl and cover with a cloth. Let the dough rise until doubled; this should take about 1 hour. 6. Punch down the dough and form a tight ball. Allow the dough to relax for a minute before rolling out. Divide dough into 6 equal parts. Roll each part into a circle, about 7 inches across. 7. Mix filling together. Stir in thawed broccoli. Top each half of dough circle with cheese mixture. Fold dough over filling. Pinch edge and press with fork to seal. 8. Place calzones on a cookie sheet. Bake for about 20 minutes at 375 degrees. Cool for 5 minutes. 9. Warm marinara sauce and spoon over warm calzones. Serve with peaches.

BACK TO SCHOOL ENERGY BARS You can’t beat how easy, healthy and simple these energy bars are. Packed with a whole lot of goodies and no nasties that are super kind to little tummy’s. Incredibly easy to make and perfect for mid-morning, mid-afternoon, mid-anything snack to keep your little people healthy and happy too! 2 cups Mejdool dates (Bateel are my top choice of dates!) 1 cup Raw Coconut (or dessicated if it is hard to find freshly grated coconut) 1 cup Sunflower Seeds 1 cup Pumpkin Seeds 2 tbsp chia seeds mulberry’s to dress your bar (optional) METHOD:

1. Mix all ingredients together in an S shaped blender for approximately 2-3 minutes or until your mix forms into a big sticky ball.

2. Place your slab of gooey onto a baking tray which is covered with greaseproof paper. 3. Using clean hands spread the mix so that you have an approximate ½-inch thickness all round. 4. Place in the fridge to cool overnight. 5. Chop into little bars that are nice and easy to hold for little hands.


LITTLE BEARS MORNING PORRIDGE 1/4 cup oats 1/4 cup almond milk or 1/4 cup filtered water 1/2 banana mashed 1/2 fig mashed A couple of fresh dates 1 tsp flaxmeal Pinch of cinnamon METHOD: 1. Stir oats with almond milk or water for 5 minutes until your porridge thickens. 2. Add mashed banana, fig, dates, flax and cinnamon. 3. Pour into a bowl (we used a coconut) and dress with figs and banana.

MILLET RISOTTO This recipe is totally worth all the chopping, grating, whizzing and can be frozen too! 2 beetroots, finely grated 1 cup mllet 3 harlic cloves, finely ficed Celery 3 Sticks 1 Veg Stock (I use kallo organic low dalt) olive oil Apple cider vinegar Home-made pesto (basil, almonds, olive oil, Parmesan) A little black pepper METHOD: 1. Heat a splash of olive oil, cider vinegar, veg stock and diced garlic in a pan & add the finely chopped celery. 2. Add millet and toast a little in the pan before adding boiling water (2 1/2 cups). 3. Add grated beets, in the pan and cover. 4. Cook on a medium heat for approximately 30 minutes. 5. Make sure stir every 5-10 minutes anf add more water if needed. 6. Stir in fresh thyme and pesto. 7. Serve with crumbled feta anf lemon zest. SEPTEMBER / OCTOBER 2017 || WWW.MUMSINBAHRAIN.NET

NICE CREAM PERFECT AFTER SCHOOL SNACK Spinach and sweet cinnamon nice cream topped with Ally’s Kitchen Stories pecan granola, dessicated coconut and freeze-dried raspberry sprinkles. Simply blend a handful of spinach leaves, a ripe frozen banana (peel and slice before freezing) and a pinch of cinnamon and enjoy!

YOGHURT BARK Summertime was made for simple, refreshing, cool snacks. This yoghurt bark is super easy to make, tasty and guaranteed to wow your friends and little people! Winner Winner Yoghurt snack in between breakfast, lunch and dinner! My bark is made with Greek ‘FAGE’ yoghurt or you can make this a vegan version using coconut yoghurt. The best bit you can pick n mix your favourite fruits and crunch! 2 cups of your chosen yoghurt 1 ripe banana mashed 2 tbsp homemade almond butter 4 tbsp faked almonds 2 tbsp fresh coconut 2 tbsp pistachio 2 tbsp cranberry 1 tbsp chia seeds A sprinkle of fresh raspberry’s METHOD:

1. Blend yoghurt, banana and almond butter in a food processor until smooth. 2. Spread your mix on a parchment-lined baking tin. 3. The fun part, a blank canvas ready to be dressed! 4. Drop your remaining ingredients and place in the freezer for a minimum of 4 hours (preferably overnight). 5. Once frozen, break apart into large pieces. 6. Now… eat a rainbow!

VEGETARIAN SHEPHERD’S PIE Vegeterian Shepherd’s Pie that’s loaded with veggies and savory lentils and topped with fluffy mashed potatoes. So flavorful and satisfying that you won’t miss the meat! FOR THE MARINADE: 1 tbsp olive oil 1 carrot, peeled & diced 150gm butternut squash, peeled and diced 1 garlic clove 1 tbsp balsamic vinegar 50gm green lentils, rinsed 400gm chopped tomatoes 2 tbsp tomato puree 1 tbsp sun-dried tomato paste 1 tsp sugar 200ml vegetable stock

METHOD: 1. Preheat oven to 200°C/400°F

FOR THE SAUCE: 500gm potatoes, peeled and cut into chunks 5 tbsp milk 15gm butter 100gm mature cheddar cheese, grated

2. Heat the oil in a large saucepan and sauté the vegetables for 10 minutes until soft. Add the garlic and balsamic vinegar and cook for 1 minute, then add the remaining ingredients and bring to the boil and simmer for 30–40 minutes until the lentils and vegetables are soft and the sauce is thick.

3. Meanwhile, boil the potatoes in salted water for 20 minutes or until tender when tested with a table knife. Drain and mash with milk and butter, then stir in most of the cheddar. Divide the sauce between the ramekins, top with mash and sprinkle on the remaining cheese. 4. Bake for 20 minutes in the pre-heated oven. SEPTEMBER / OCTOBER 2017 || WWW.MUMSINBAHRAIN.NET

SUSHI SANDWICHES The result was these “sushi” sandwiches. They are a fun take on a tuna sandwich crossed with a sushi roll. All you do is flatten your bread, fill it with healthy tuna fish salad, roll it up and then cut it into individual bites. It’s not only delicious, but an exciting treat that will impress your kids, be fun for them to eat and hopefully inspire you to keep thinking outside of the box -- the school lunch box, that is!! 3 pieces of whole wheat sandwich bread 1 xan of runa (I use albacore in water) 1 tsp capers, chopped 1 tbsp mayonnaise (plus more for spreading on the bread)

1/2 tsp dijon mustard 1 cucumber, cut into long, thin sticks 1 carrot, grated

METHOD: 1. Cut the crusts off of each slice of bread and roll out as thin as possible with a rolling pin. 2. Place the tuna, capers, mayonnaise and dijon mustard in a bowl and stir to combine. 3. Place the long side of the rolled out bread closest to you. 4. Spread a thin layer of mayonnaise on each slice of rolled out bread. 5. Thinly spread 1/3 of the tuna mixture onto half of the bread lengthwise. 6. On top of the tuna mixture, arrange some of the cucumber sticks and grated carrot making sure not to over-stuff the roll (a little goes a long way). 7. Starting at the side closest to you (the filled end) tightly roll the tuna/cucumber/carrot mixture up and press to seal into a roll (I dab a bit of mayonnaise across the end of the roll to act as a glue sealing the roll).
