alcium is the dominant mineral in our bodies. We can’t live without it, and paradoxically, it contributes to our aging and often untimely death caused by diseases. In Dr. Thomas Levy’s book Death by Calcium, he suggests that dysregulation of calcium as the body’s primary ion channel pump is a major contributing cause of all chronic and degenerative diseases, as well as all cancers. In medical school, during human dissection, the one experience that is unforgettable is the amount of calcium deposited all over the bodies of elderly cadavers. We seem to have a serious problem with absorption and excretion of calcium. It spills out into both intracellular and extracellular spaces all over the body. It can layer and deposit anywhere—in the kidneys, muscles, joints, ligaments, heart, vascular system, lungs and brain. We know the only calcium that our body can actually utilize is in its ionic form. Unfortunately, little to none of our calcium gets converted. As calcium accumulates in the body, it causes osteoarthritis, fibromyalgia, osteoporosis, dementia, vascular and heart disease, autoimmune disorders and neurodegenerative diseases like multiple sclerosis or Parkinson’s. It also influences ADD, autism and endocrine disorders. Anti-orbital ionic calcium (AIC) is the only truly ionic calcium ever developed. When the holiday classic Jingle Bells starts playing in department stores, Americans deck the landfills with extra trash. According to the National Environmental Education Foundation (NEEF), garbage increases by 25 percent between Thanksgiving and New Year’s Day—or about 1 million extra tons each week— including 38,000 miles of ribbon, $11 billion worth of packing material and 15 million discarded Christmas trees. As this waste decomposes, dangerous greenhouse gases such as methane and carbon dioxide are
emitted, adding to the climate crisis. This season, include Earth on the gift list by reducing holiday-related waste. To stop the uptick of mailed catalogs, call stores and request to be removed from mailing lists. Reusable shopping bags are not just for groceries. Bring them to malls and boutiques to cut down on single-use store bags. Wrapping paper, ribbons and bows are beautiful, but create waste. Consider eco-friendly alternatives like towels, tablecloths, scarves and even socks. According to NEEF, an estimated 2.6 billion holiday cards are sold in the U.S. every year. That’s enough to fill a football field 10 stories high. Be kind to the planet by switching to e-cards or making personal phone calls. At the holiday table, use cloth napkins and tablecloths instead of
paper. They’re festive, elegant and best of all, washable and reusable. Forgo plastic cutlery, paper plates and single-use plastic cups, too. An extra dishwasher load is better than bags full of trash, plastic being the worst non-biodegradable culprit. Social-distancing Americans are expected to flock to the internet for gifts. Consider saving the shipping boxes and packing materials for later use or donating them to a mailing center that would be happy to reuse them. The most environmentally friendly gifts eliminate wrapping and shipping altogether. Here are some favorite low-waste ideas: n Charitable donations n Cooking, music, craft or other lessons n Passes to museums or amusement parks n Gift cards for restaurants or bookstores n Music downloads or spa treatments Most towns recycle Christmas trees and process them into mulch for use in parks. ora Tyson’s path to a career in the U.S. Navy was not exactly planned. Upon graduation from Vanderbilt University in 1979 with a degree in English, she received a life-changing phone call from a Navy recruiter. Fast forward 38 years, and she retired from the Navy as a three-star Vice Admiral. Tyson is a role model for a whole generation of women. In 2010, she took command of the George H.W. Bush Carrier Strike Group, making her the first woman to command a carrier strike group. In 2013, she was promoted to Vice Admiral and named Deputy Commander of the United States Fleet Forces Command. When Tyson was installed as commander of the Third Fleet in 2015, she also became the first woman to lead a U.S. Navy ship fleet. At the time Tyson was first commissioned, women had only recently been given the chance for sea duty aboard support and auxiliary ships, and they were not allowed to serve on submarines or combat ships. Despite these limitations, Tyson was able to break the glass ceiling during her Navy career. “I was very fortunate from a timing perspective, in that things opened up for women at the right time in my career,” she observes. “When the opportunity to go to flight school and Navy aviation presented itself, I took advantage of it. I applied and got accepted to flight school,” Tyson explains. “That really opened the door initially, which led to my having the opportunity to command an avia-

tion squadron; to command an amphibious assault ship; to be a carrier strike group commander; and to be a fleet commander. I was the first female aviator to do some of these things, due to law and policy changes which opened the door for women.” The recipient of numerous awards, one of the most meaningful to her is the Humanitarian Service Medal she received for post Hurricane Katrina rescue and relief efforts performed while commanding the amphibious assault ship USS Bataan. This included launching helicopters and picking people off roofs, as well as setting up air traffic control stations at the Superdome for all the helicopters in the area. “It was challenging and surreal because it was so unscripted. We were doing everything we could to help our fellow Americans,” she relates. In light of her many achievements and her role in the Navy as a trailblazing aviator, Tyson is extremely humble. She tends to “hide her light under a bushel”, downplaying her talent and accomplishments. “I was brought up by my parents to be rather humble. I’m not one to toot my own horn. It’s not something I admire in other people, so I don’t do that,” she says. Tyson believes you succeed in this line of work by striving to be the best at what you do, because teams depend on you. She also stresses the importance of relationships and attributes her success in part to her ability to build relationships with her flight crew and others. After 38 years in the Navy, Tyson wants to give back during her retirement. She intends to make an impact in Tucson by volunteering. Her plans include volunteering for two nonprofits that empower youth to build strength of character by learning golf, First Tee and the LPGAUSGA Girls Golf. Tyson has never looked back since she embarked on her career in service to our country and she is passionate about her choice. She comments, “When I think about regrets, none of them are about going into the Navy. I can’t imagine what I could have done that would have been more rewarding. How fortunate I am. So few people have the opportunity to serve their country in uniform. Why me?”
Q&A with Vice Admiral Nora Tyson What are five words that people close to you would choose to describe you? Optimistic, dedicated, honest, patriotic, fun-loving. What qualities do you believe make someone a good leader? Character, integrity, honesty, empathy, dedication and hard work. If you don’t have the respect of those you lead, in my mind, you’re not a good leader. What elements do you think are essential to a thriving community? People caring about each other, having respect for each other, learning from each other and a desire to work together to make the community and the world a better place for future generations. What can we do as individuals to make our community a desirable place? We can help those who may not be as fortunate as you are to enable them to succeed in life. It’s not just about giving them food or money. It is also about giving them what they need to succeed personally and
professionally—instilling values and skills in young people. What do you enjoy most about Tucson? The weather, the beauty of the environment and the people. We like to look at the mountains and cactus. It’s easy to find serenity and calm out here. And we’ve met a lot of nice people. What tips do you have regarding retirement? Do whatever you want to do that makes you happy. Life is short. Learn to say “no”, and don’t overcommit. Take time for yourself. How would you describe your diet and exercise habits? We walk in the morning while listening to audiotapes. We also hit balls or play golf four to five times a week. Our diet is healthy. I can’t tell you the last time I had something fried. We eat a lot of vegetables and fresh food. We’re not big dessert eaters. We do drink red wine. What books do you recommend? A Gentleman in Moscow by Amor Towles;
The Guns of August by Barbara Tuchman; The Source by James Michener; The Splendid and the Vile by Erik Larson. What is your mantra? Don’t go to bed at night until you’ve learned something. Do you have a favorite quote? Yes, this one is read at virtually every Navy retirement ceremony: “I can imagine no more rewarding career, and any man who may be asked in this century what he did to make his life worthwhile, I think can respond with a good deal of pride and satisfaction: I served in the United States Navy.” ~John F. Tucson Offers Many Outlets for Comedians

omedy is a lot like sports in that you can be a spectator, a player or both. There are three basic categories of comedy performance: improv, stand-up and sketch comedy. Locally in Tucson, one can watch and learn how to do all of these. Comedy improv is totally spontaneous theater with no scripts. A comedy improv team will play off of each other to make up scenes, characters and songs. Each player adds to the skit by adding “Yes, and…” The hit show “Whose Line Is It Anyway?” was a popular comedy improvisation show. Started in 2012, the Tucson Improv Movement (TIM) “brings laughter, joy and fun to the southern Arizona community through the art of improvisation.” TIM (TucsonImprov.com) offers a comprehensive program for enjoying online shows and learning how to do comedic performances. In November, they held the Tucson Comedy Arts Festival on Facebook Live with shows in all three categories of comedy.

Yes, and, in addition to these classes, owner Justin Lukasewicz also offers comedy improv team-building activities for groups as professional development. Even online, these fun-filled workplace events help foster better connection, communication, creativity and innovation. Surely laughing on the job will lower stress and improve employee satisfaction. At Unscrewed Theater (Unscrewed Theater.org), a nonprofit comedy company, volunteers perform comedy improv shows for families and adults. Once they open up again, children, teens and adults can take classes and workshops. In stand-up comedy, the comedian develops a routine with funny stories and jokes that has been written and rehearsed for the performance. Beginning comedians often practice in front of live audiences through “open mic” opportunities. Popular stand-up comedians become well known and, then, well paid. In her stand-up comedy class at TIM, funny woman Mo Urban recommends keeping a notebook handy to jot down the comical, interesting and ironic things that we might encounter in everyday life, which can be integrated into a stand-up routine. When players learn how to do stand-up comedy, they need to have a place to practice and perfect these skills. Roxy Merari, comedian and founder of comedy at the Surly Wench Pub on Fourth Avenue, is actively

involved in providing open mic nights for stand-up comedians to go public. Right now, information about virtual shows and sign-ups is available at WenchComedy.com. On the third Wednesday of the month, Merari also hosts a show about Tucson Comedy on local indie radio station KMKRLP (Radio.net/s/kmkr). Others host “All Things Local Comedy” on the other Wednesdays. Linda Ray, of the Tucson Comedy Alliance, says, “Creative and driven as they are, Tucson comics quickly adapted to the virtual world. The deepest cut is not to have a live audience. Audience feedback is the reason folks do comedy to begin with. They literally feed on the feedback to evolve and grow their material and their skills.” Fortunately, there are still a few live open mic shows in Tucson at these venues: KAVA Bar, Country Line Grille, Laffs Comedy Club and Café à la C’Art. Matt Kearney hosts live shows at Brother John’s BBQ from time to time.
Sketch comedy involves scripted acts that are commonly strung together to make a larger show. Each of these acts is a sketch that starts with a comedic idea developed to show some irony or inherent contrast from life. Rich Gary of Keep Tucson Sketchy has this example of inherent contrast: “When a character is in a situation that is strange for him or her to be in—like a construction worker who is a germaphobe or high maintenance. This helps to highlight an exaggeration of something that is weird and amusing.” Keep Tucson Sketchy rounds out the local venues with a place to see and do sketch comedy. Currently, all programs are available online only. Gary was on a public access news team originally. When that program ended two years ago, he and his team reached out to local comedians to form the comedy company. You can catch their COVID Comedy Classic 3 online on December 23 (Instagram.com/KeepTucsonSketchy, Facebook.com/ KeepTucsonSketchy). Putting it all together, the TucsonComedyAlliance.org is the site that lists all the comedy available where Tucsonans can go to laugh locally. In 2021, this will be the place to go to find out about all local comedy events. Search on YouTube and Facebook Live for more local comedy acts. Until then, keep on laughing. Reflexology: A Body Meditation

When a meditating person is carefully monitored, distinct and consistent shifts are observed. Heart and respiratory rates slow much more than during normal rest or even sleep. Vital body functions are more regulated and the brain shows increased alpha waves indicative of a deeply relaxed state. Reflexology, because it is so deeply relaxing, can also induce a slower and deeper respiratory rhythm, a slower heart rate, less muscular tension and an increase in blood flow through the visceral and skeletal muscles, along with a more efficient use of available energy. Interestingly, when the body is deeply relaxed and tension is released, there is a “waking up”—a sense of vitality. The quality of conscious touch through reflexology invites this meditative state. Frequently, clients report a shift from stuck heaviness to free lightness and a mental/ emotional state of complete release and contentment, distinctively different from sleep. Meditation and reflexology are complementary practices that can help us connect to our inherent sense of wholeness, peace and interconnectedness. What the world needs now is more of this.

New Climate Story
Re-Visioning the Script for a Healthier Society and Planet by Linda Sechrist
T
he most familiar form of human activity and the most natural way to describe what happens in our lives is through telling stories. Toddlers listen to stories that have contained the same archetypal characters acting out similar plots for millennia. In literature, folktales and myths all over the world, stories serve the purpose of providing life instructions and answering humanity’s fundamental questions about the nature of existence, such as who we are, where we came from, the definition of our purpose and the nature of our reality. In the 1980s, author and cultural historian Thomas Berry declared that humanity needed a new story that is less destructive and dysfunctional. Berry filled lecture halls, telling attendees, “We are in trouble now because we don’t have a good story. The old story, the account of how the world came to be and how we fit into it, isn’t functioning properly. What once sustained us, shaped our emotional attitude, provided us with life purpose, energized action, consecrated suffering, integrated knowledge and guided education is no longer serving humanity.” As we are discovering globally through hard experience, the old stories of rugged individualism and conquering and dominating the natural world have run their course with grim results. In the last four decades, fragments of a new story have been slowly emerging. Because it isn’t deemed worthy of mainstream media, the public is left in the dark about new, life-instructing stories capable of altering human civilization in positive ways. Were these story fragments woven together in an anthology, chapters on climate, economy, religion, environment, science, politics, medicine, education, conscious evolution and community would constitute a
In Climate: A New Story, writer and activist Charles Eisenstein suggests that we need a new story that makes possible the more beautiful world our hearts know is achievable. The story, which he believes is attainable, calls for people, governments and organizations to embrace a partnership paradigm to protect, restore, regenerate and repair damages to our planet’s natural world, which we call the environment. Using indigenous wisdom, organizations such as the Pachamama Alliance and Bioneers are helping individuals worldwide to recognize that humanity is here to be in service to life. Creating the right conditions for revitalizing life is the opposite of our collective story that views the natural world only as a resource. Eisenstein’s ideas for regenerative agriculture match those described in environmentalist Paul Hawken’s Drawdown: The Most Comprehensive Plan Ever Proposed to Reverse Global Warming. In October, Drawdown Georgia became the first state-centered effort to crowd-solve for climate change, with solutions tailored to Georgia’s unique natural, economic and social resources.

Evolution biologist Elisabet Sahtouris’ stories about science shine a light on the broader perspective of life and science gained from studying multiple worldviews. A scholar of ancient sciences, Sahtouris reminds us that the original purpose of science was to find guidance for human affairs by studying nature. During a recent conversation with Ubiquity University founder Jim Garrison in the online Humanity Rising’s Global Solutions Summit, she says, “We have acted in opposition and made ecology subservient to our economy, using ecology as a set of resources for human economics. When we make our economy fit into nature’s economy, which we call ecology, we’ll have ecosophy, the ‘wisdom of the Earth itself ’ that occurs when a man knows how to listen with love.” Sahtouris teaches corporations about ecosophy’s new view of a conscious universe and a living Earth in which we are co-creators. This, she believes, takes humans out of
fatalistic victimhood so that we can become consciously active agents of our destiny. Lifting the fog of our self-image as consumers of stuff gives humans the rights and responsibilities to live out our full co-creative humanity.
A Global Commons Sharing Solutions
Through the daily sharing of stories with keynote speakers and panel discussions, Garrison increases the momentum of the Humanity Rising movement, which includes Ubiquity University students, program participants and more than 400 organizations that come together as a “global commons” to take counsel and share what they are developing for their own networks. Humanity Rising was launched to try to leverage the crisis of the coronavirus pandemic into an opportunity for human renewal and increase our resilience to future challenges. This new form of reallife competency education delivered in TED Talk-style presentations, moderated dialogues, working groups, blogs, ongoing conversations, group discussions and other interactions provides participants a wide scope of possibilities and activities for working together for global solutions.

If British economist Kate Raworth writes a follow-up to her bestselling book Donut Economics: Seven Ways to Think Like a 21st Century Economist, she’ll certainly add a case study of her consulting work in Amsterdam, where her donut model is now embraced as the starting point for public policy decisions. Amsterdam is the world’s first city to make a commitment to Raworth’s concepts: “Out with the global attachment to economic growth and laws of supply and demand, and in with … what it means for countries, cities and people to thrive in balance with the planet,” as reported in The Guardian. The simple central premise of Raworth’s alternative to growth economics is that the goal of economic activity should be to meet the core needs of all within the means of the planet.
United in Tender Mercy by Michael Bush

urs is a fractured time and place, evidenced by the recent vitriolic election season. Sometimes people seem so divided that we believe our best hope is to be tolerant of others. Is tolerance the best we can do? While tolerance may do no willful harm, neither does it heal. The Divine revealed in Jesus’s teaching and action is one who does much more than tolerate. Luke 1:78 says that God offers loving “tender mercy”. The Hebrew word for “mercy” derives from the word for “womb”. Mercy is about deep connection and profound belonging. This is how Jesus formed a community who were united by tender mercy in their differences—a people knit together in the spiritual womb of love. The differences became part of the strength of the body instead of what divided. Hear the invitation in this season to rest in the tender mercy of the Spirit. Join with spiritual communities to soak in this tender mercy of the Spirit through various opportunities in this season for prayer, contemplation, centering, singing, worship and more, birthing from the womb of love more goodness in the world. to Oneness. “Nature is an embodiment of the divine, and the whole Earth is sacred. Its vast resources are our common heritage entrusted to us,” he says. “Humanity is one family. Having passed through the stage of childhood, humanity is now struggling to leave behind its adolescent ways while taking on new patterns of thought and action in approaching its maturity. Accepting the oneness of humanity as a biological fact, a social necessity and a spiritual reality will lead us further along our journey toward lasting peace.” Atkinson believes global harmony is inevitable when we exercise our obligation to independently investigate reality and stop blindly and uncritically following various traditions, movements and opinions. He says, “I consider this as one of the main sources of world conflict.”
Undivided Wholeness
In a world engulfed by fragmentation, the film Infinite Potential: The Life & Ideas of David Bohm is a healing balm with the potential to overturn our ideas about the world and ourselves. “The core work of David Bohm, considered one of the most significant theoretical physicists of the 20th century, is our essential interconnectedness and undivided wholeness from which we get a sense of our own interconnectivity,” says producer and director Paul Howard. “This realization makes it logical to start taking better care of ourselves, each other and planet Earth.” Howard notes, “David was interested in the nature of thought and consciousness. Realizing that he wanted to develop full expression of his interests, he explored wider domains and investigated different worldviews with sages, philosophers and spiritual leaders such as the Dalai Lama, who called David his ‘science guru’. A lifelong concern with social and political change
led him to develop the Bohm Dialogue, a form of communication aiming to break through our collective modes of habitual thought. He also spent time with indigenous people, searching for a new form of language in which to express his ideas in a more process-oriented way.”
Indigenous Wisdom
While the early church developed and grew in numbers by assimilating the wisdom of the world about it, including paganism, it neglected to assimilate the intuitive ways in that indigenous people knew the natural world, how it functioned and how intimately they were integrated with it. Tribes around the globe have ancient extinction stories that foretold the crises we are collectively experiencing, as well as potential outcomes and possible solutions. In Sacred Instructions: Indigenous Wisdom for Living Spirit-Based Change, Sherri Mitchell (Weh’na Ha’mu Kwasset) tells the story of the Mohawk Seventh Generation Prophecy. “The Onkwehonwe, or real people, rise up and demand their wisdom and way of life be respected and that the natural way of the Earth and way of life be fully restored. Teachings on the indigenous way of life are being sought after, and all that remains is that we work together to restore the Earth to a state of balance and good health,” she says.

trained facilitator of small groups, she has been teaching trauma and stress healing via Zoom calls during the pandemic. Initially, Phelps was concerned about how the levels of intimacy, trust and vulnerability necessary for individuals to develop a sense of cohesiveness and bonding could be formed via computer screens. By using the center’s model of self-care, self-awareness and mutual support that has its roots in indigenous culture, she felt her concern dissipate as group members began to bond quickly. “Our guidelines call for no crosstalking and no interrupting. Confidentiality is sacred. I’m a facilitator and a participant, which most models don’t allow,” says Phelps. She speculates that the success of online bonding might be due to participants feeling safer in their homes with a little extra anonymity, noting, “Not being face-to-face seems to allow people to share more freely. These weird times are creating a commonality and a sense of community connection.”
Conscious Choice
Leah Lamb, a sacred storyteller in Topanga, California, defines her role as a seer far beyond the present moment. In Lamb’s online classes with her storytelling community, she loves sharing quotes by other storytellers such as Rebecca Solnit, “We think we tell stories; but stories often tell us … Too often stories saddle us, and they ride us and whip us onward and tell us what to do and we do it without questioning. The task of learning to be free is to learn to hear them; to question them, to pause and hear silence, to name them and then become a storyteller of your own story.” “In our role of storyteller, we can’t be without understanding that we tell stories about how we are in the world as much as stories tell us how to be in world. Identify and notice your stories, then understand how they are running you, so you can consciously choose your place in them,” advises Lamb, who encourages her students to discover the genius of their own calling. These are only some chapters in the new story that calls for each of us to be aware of the stories we live by, as well as those we tell ourselves and others. ho is experiencing loneliness? It could be we forgot there are ways we can connect with new friends. We have new people who are just waiting to meet us. Because we find ourselves in a time of tests, trials and travails, a spiritual community can offer a portal to meaningful friendships. A spiritual community can offer support and hope in ways rarely found in the “outside world”. This is a time of change, transition and of returning karma. This is a time which is requiring great adjustment. Many people simply are not making the inner changes they need to make to adapt to what is going on in the world and within themselves. But when we are with people who strive for higher consciousness, the like-minded camaraderie can lift us up. A loving spiritual community provides a platform to re-ignite our desire to be a friend to God—to be closer to our Higher self. Now is an opportunity to rise, and it
is the best time to learn how to be a friend of God. Finding the right community can catapult us to greater self-awareness. Now is a great time to find similar hearts and gather to: join in spiritual practices; anchor and expand the light within, especially in our hearts; grow in love, especially in the love of God; receive support and clarity; and learn how to balance karma more easily.
The Mighty God Presence, the Inner Divinity is always present in our heart chakra. And above, we are connected to our Real God Self. For we are divine, we all have a special purpose. Perhaps one part of our purpose is to join with others in a spiritual community. The verb “commune” means “to talk with (God).” The true meaning of community comes from the root of communal. Its inner meaning is “come you into unity”, comm-u-nity or “come you into one-ness”. Jesus mentioned the importance of community when he said, “Where two or more gathered in my name, there am I in the midst of them.” This is an alchemical formula to understand the power of gathering to practice spiritual beliefs: the number of people is squared when all are gathered in one place. Where people gather in spiritual unity, the power of spiritual practice is increased exponentially. This is the true power of community. Community is the gathering of like hearts and minds to advance a cause. The most powerful cause will always be a spiritual cause. Take refuge, then, in each other. For everyone or anyone can be the Church and the spiritual community. The spiritual refuge is a refuge of love—a place to go and find the necessary sustaining of our soul, body and mind. We are Divine. We must claim our Divinity and practice it. The easiest way to grow into our inner divinity is to gather in a spiritual community with like-minded people. The Gift of Yum Homemade Treats Spark Holiday Cheer by April Thompson
G
ift-givers seeking memorable presents while avoiding holiday shopping stress need look no further than the kitchen. Edible homemade gifts make special, welcome treats, help slow down the shopping frenzy of the season and increase creativity in the kitchen. While 79 percent of recipients return some holiday gifts every year, food and handmade items rank in the top 10 treasured gifts, according to Survey Monkey research. Mackenzie Burgess, a Fort Collins, Colorado, dietitian and recipe developer at Cheerful Choices, encourages holiday gift-givers to think beyond the Christmas cookie. One of her go-to holiday gifts, a lentil and brown rice dry soup mix, features colorful dry ingredients layered in a Mason jar and the recipe attached with a pretty ribbon. “This shelf-stable dry soup mix is the perfect, plant-based meal to make on a chilly night, and makes for a unique, affordable and thoughtful gift,” says Burgess, adding that the Mason jars can be repurposed. For a sweet but healthy treat, Burgess offers freezer-friendly energy bites, which can be made in large quantities in advance and frozen or refrigerated, then popped into jars at gift time. These gluten-free, vegan treats can be made with common pantry items, including a base of oats, nut butter and a sweetener like honey or agave, as well as “fixings” such as shredded coconut, dried cranberries or goji berries, chopped nuts, or chia or flax seeds to boost the flavor and nutrition. Natural food coloring can also be added to foster a more festive look. To give a gift a “wow” factor, blogger Shelley Fulton, in Hudson, Ohio, recommends making a themed basket that may include a mix of homemade and purchased items. “You can take your signature spice rub or that homemade soup mix everyone raves about and expand into a gift basket with other products that support the theme, like barbecue tools for the spice rub or a kettle with cute soup bowls and a new ladle for the soup mix,” says Fulton, the creator of Two Healthy Kitchens. For the dog lovers on a holiday list, Fulton suggests making homemade sweet potato dog biscuits, which can be bundled in a dog bed with other canine comforts. 24

Stephanie Hafferty, author of The Creative Kitchen: Seasonal Plant Based Recipes for Meals, Drinks, Garden and Self Care, suggests handcrafted items like infused vinegars, herb salts, herbal tea blends or spice mixes for foodies on the holiday gift list. Infused concoctions can be easily made by steeping a light vinegar like champagne or cider with rosemary, thyme or other perennial herbs, along with a spiraled citrus peel, for two weeks before gifting. “Infused vinegars look so lovely and go with so many winter dishes. They also have the advantage of being antiviral and having the shelf life of a few years,” says Hafferty. Herb-infused olive oils make another gorgeous foodie gift, but Hafferty warns of botulism risk if the herbs are not completely dried beforehand and fully submerged in the oil. “Make this one closer to the time you plan to give it and include instructions to use within a few weeks,” recommends the Somerset, England, author. Unusual spice mixes are another favorite gift of Hafferty’s, which can encourage home cooks to get creative. “Ras el Hanout is a versatile Moroccan spice blend that elevates dishes to another dimension. You can upcycle an old tin and decorate it with images of Moroccan tiles and add a homemade booklet with recipe ideas,” she says. For a hostess gift that will be eaten immediately, Fulton loves making fruit kabob bouquets, made festive by using red and green fruits like strawberries and kiwi cut into holiday-themed shapes like stars and bells. “This is a fun one to make with kiddos,” adds the blogger. If concerned about preparing food items for someone due to COVID-19, Fulton suggests assembling a countertop herb garden or a handmade book of favorite recipes, with a promise to cook together soon. The spirit that goes into holiday giftmaking matters as much as the end product. Holiday Gift-Giving Recipes Lentil Brown Rice Soup yield: 6 servings
If presenting the soup mix as a gift, layer dry ingredients in a Mason jar and print recipe to attach to the jar. 1 cup green or brown lentils ½ cup uncooked brown rice ½ cup green split peas 1 Tbsp Italian seasoning 1 Tbsp dried parsley 1 Tbsp garlic powder ½ tsp ground black pepper 2 large vegetable bouillon cubes (1 cube should be equivalent to 1 Tbsp of granulated bouillon) 8 cups water

½ cup 100% cocoa powder, unsweetened ½ cup coconut oil, melted 2 Tbsp raw quinoa 2 Tbsp maple syrup
Toast raw quinoa over medium-high heat until slightly browned and nutty aroma.

In a small bowl, mix together cocoa powder and melted coconut oil. Stir in toasted quinoa, maple syrup and stevia. Pour mixture onto a plate or sheet pan lined with parchment paper or wax paper. Sprinkle pistachios, dried cranberries, candied oranges and salt over the melted chocolate mixture. Drizzle white chocolate over the top and use a toothpick to create swirl effect if desired. Add dry soup ingredients and 8 cups of water to the same large stock pot (unless starting with this step). Bring the mixture to a boil over high heat. Lower the heat and simmer for 40 minutes, covered with a lid. Taste and adjust seasonings if necessary. Serve with crusty bread and parmesan cheese, if desired.
Energy Bites yield: 12 large bites or 24 small bites
These energy bites are the perfect snack to grab and go. They’re completely customizable and take 5 minutes or less to make. It’s easy to create festive, colored bites for the holidays. Simply add one-quarter cup of oats into a bowl with 15-30 drops of food coloring and give it a stir. Then, simply roll your finished balls in the food-colored oats. 1 cup rolled oats or quick oats ½ cup add-ins (dried fruit, chocolate chips, shredded coconut, chia seeds, ground flaxseed, chopped nuts or a mixture) ½ cup nut or seed butter (peanut butter, almond butter, cashew butter, sun butter) 1 Tbsp liquid (plant-based milk, dairy milk, water, coconut oil) 2-3 Tbsp honey or maple syrup Add oats, add-ins, nut or seed butter, and liquid to a large bowl. Stir to combine. Mixture should be slightly sticky, but still crumbly. Add in honey or maple syrup, 1 tablespoon at a time, to reach desired sweetness. Stir until mixture starts to come together in a sticky ball. If the mixture is still too dry, add in 1-2 more tablespoons of liquid. Place bowl in the freezer for at least 30 minutes to chill, then roll mixture into balls using hands. Store in the fridge until ready to eat or pack into a jar for a gift. Be optimistic about the future. As the New Year approaches, it’s not unusual for people to make resolutions, only to give up down the road. or many of us, the holidays bring the joy of shopping, community and being together with family. For others, this means financial stress, depression and isolation. If we find ourselves feeling down around the holidays, here are some tips to help bring back some cheer.

Don’t take on more than one can handle. While it’s important to make time to spend with friends and family, it’s easy to over-commit, making us feel like we have more obligations than we do

time. Sometimes it’s best to be open with loved ones and reschedule for another time.

Consider the holiday budget. Financial stress is all too common during the holidays. But while we may do our best to stick to our budget during the shopping season, much of the stress can come once the holidays are over and the bills arrive. Be sure to keep in mind the coming months when considering a holiday budget.

Look into free holiday activities. Money can be tight around the holidays, but thankfully there are many festive things to do that are free or low-cost. Visiting other neighborhoods to enjoy other’s decorations, window shopping and getting out to take in the winter weather are all examples of free holiday experiences.

Limit alcohol intake. Overindulging in alcohol is common around the holidays. While it may seem like it’s reducing our stress, it’s important to remember that alcohol is not only a depressant, but also a naked carbohydrate in an extremely refined form.

Create new traditions. It’s common for people to get caught pining for happier
past holidays, especially if one’s current situation isn’t ideal. Rather than long for the past, mix things up by creating new traditions.

Try getting social. This time of year can be especially tough for people without a significant other or family, or whose loved ones live far away. Going to a local bookstore or café for a brief conversation or exchanging smiles has been shown to improve moods.

Get in contact with loved ones. For many of us, the holidays can mean isolation and loneliness. If we’re separated by distance, getting in touch with loved ones is only a phone call, email, text or even a letter away. The holidays are also a wonderful time to patch up fractured relationships.
