“A lot went wrong for me that morning—I lost my lens cap, tore a hole in my wetsuit while putting it on, realized I forgot my gloves—but holy cow, what I gained from that weekend was everything. I got to swim and hang behind my camera and watch all these strangers become friends. I watched them inspire and empower each other, whoop and holler for each other on all the waves being caught, learn about how the ocean has impacted their lives from creating art to raising awareness for domestic violence…I got to capture all of it, and it changed me…I can’t believe I got to be there to witness it all. [Erica Kruger] is a BEAST. And I didn’t know how many ways a person could bail off their board until I swam in the water next to her and her crazy dismounts!”

Boats Go ‘Afloat’ Again on Lake Union This Month Not only is spring in the air, so is the triumphant return of the Boats Afloat Show, taking place on Lake Union in Seattle from April 28 to May 1. With the tail end of Covid hopefully in sight, the Northwest Yacht Brokers Association (NYBA) has several new events and amenities planned for the show. Located at Chandler’s Cove Marina—soon to be redeveloped by Vulcan as Lake Union Piers, see page 23 for details—the four-day show will include an array of maritime exhibitors showing off their wares as the boating season begins, as well as a stage with live music played throughout the event. This year, the show will feature several new food and beverage options, such as a floating bar and concessions stand from Waterways Cruises.

The company’s 90-foot Olympic Star yacht will sit dockside to offer grab-and-go meals and snack options for show visitors. Twice a day, Waterways will also hold demonstrations by chef Trinity Mack that focus on quick and easy appetizer ideas for onboard entertaining. Attendees will be able to sample some tasty spirits during the festivities, including batch cocktail demonstrations by the international beverage company Diageo, featuring Talisker single-malt scotch whiskey, Ketel One vodka, and non-alcoholic Seedlip cocktails. Also in the works, but not yet confirmed by NYBA, are sailing lessons and boat rides during the show and special live-performance appearances by members of the Duwamish Tribe and the Cornish College of the Arts. The April show, however, is only the opening act for Boats Afloat in 2022. A first-ever fall Boats Afloat show will also take place at Lake Union Piers September 15-18, and will continue every year forward in April and September. Vulcan Unveils Lake Union Piers Plan The venerable Chandler’s Cove, located in the southeast corner of Seattle’s Lake Union since the late 1980s, will soon become Lake Union Piers following a renovation of the maritime property over the next year and a half, according to landowner Vulcan Real Estate. Vulcan, which has owned much of the land around South Lake Union for the last 20 years, said in February that it plans to turn the 8.3-acre property into a more cohesive space for visitors interested in Seattle’s boating history. Located near the Center for Wooden Boats and the Museum of History and Industry, the Piers project aims to establish stronger ties to the Cheshiahud Lake Union Loop trail with enhanced walkways and greenery. Lake Union Piers will also feature numerous public seating areas and 5,700 square feet of space for outdoor events. Local architectural firm Miller Hull Partnership will design the project, with the help of HEWITT as the landscape architect. Abbott Construction will be the general contractor,

Vulcan said. In 2017, Vulcan hinted at plans to demolish four existing structures on the property, but the company later decided to “refresh” the current footprint. The new development will take over about 60,000 square feet of existing commercial space. While some legacy tenants will remain, such as the popular Daniel’s Broiler, Waterways Cruises and Events, and the Northwest Yacht Brokers Association, Vulcan plans to add new tenants in the restaurant, entertainment, and retail sectors, said Robert Arron, Vulcan’s senior director of marketing and leasing. The first, easternmost phase of the project is expected to open this fall, renovating a building that used to house the Novilhos steakhouse and now includes a Seattle Kraken team shop. The other three buildings, Vulcan said, should be ready by fall of 2023, with new boat moorage spaces and improved views from a lakefront promenade. Canada’s Southern Straits Regatta Returns

One of Western Canada’s most beloved boating events, the Southern Straits Classic, is finally returning after a two-year Covid hiatus, most welcome news for Northwest sailors looking to get back to British Columbia racing once again. Scheduled for April 15-17 at the West Vancouver Yacht Club (WVYC), the regatta will be the 52nd such race event across the Georgia Strait. The event, scheduled during Easter weekend, will feature the classic’s signature overnight races of three different lengths: 70, 98, and 145 nautical miles. Southern Straits will also include a shorter inshore course of about 20 nautical miles to be held during daylight hours on April 15. To kick off the festivities, WVYC will hold a morning parade of the boats’ lineup at Dundarave Pier in West Vancouver between 9 a.m. and 10 a.m. on April 15, during which the boats often pass within 50 feet of the pier. The races will begin each day at 10:25 a.m. An estimated total of 100 boats, with up to 800 sailors, will participate this year, the club said. Several hundred spectators are also expected to gather and celebrate with a Lions Pancake Breakfast, live music by the West Vancouver Pops Band, several sponsor displays, and perhaps even enjoy a visit from the Easter Bunny. For new boaters or those looking to refresh their sea safety skills, the WVYC will also offer a one-day Coastal Personal Survival Course before the regatta on April 3rd. Trawlerfest to Tie Up with Anacortes Boat Show

Why settle for one springtime boat show when you can have two? The folks at the Northwest Marine Trade Association (NMTA) used this logic to merge their annual event in Anacortes, WA, with TrawlerFest to form the 2022 Anacortes Boat & Yacht Show featuring TrawlerFest. The combined show will be held May 17-21 this year at Cap Sante Marina. The afloat portion of the show will be overseen by the Anacortes Boat Show, while the staff at Trawlerfest will focus on holding seminars and educational sessions on various boating topics. Management of the show will be partnership between NMTA, Active Interest Media (producer of TrawlerFest), and the Anacortes Chamber of Commerce. NMTA, which also produces the Seattle Boat Show, is the nation’s oldest and largest regional marine trade association, representing more than 600 companies in the recreational boating community. Highlights of the outdoor part of the show will include in-water and on-land displays, with hundreds of boats expected at the marina and other boatyards around Anacortes. Attendees can visit shoreside displays, such as trailer-ready boats, marine accessories, electronics, destinations, and service providers. In the evenings of the five-day event, the show plans to set up rendezvous activities. The Trawlerfest portion of the show will include more than 25 sessions on various topics. The classes will be held at several walkable locations in town. Is Your Fire Extinguisher Up to Snuff ?

As you prepare for the coming boating season, take a look at the portable fire extinguisher you have on board. If its date of manufacture is more than 12 years old, it will no longer meet U.S. Coast Guard (USCG) regulations and must be replaced. The new guideline, effective April 20, is applicable to all disposable, non-rechargeable extinguishers used on recreational watercraft. To check the manufacture date for your fire extinguisher, look on the bottom of each bottle near the Underwriter Laboratory (UL) label. The date will be marked with either a two-digit or four-digit number corresponding to the year it was made. USCG is also changing the nomenclature for boating fire extinguishers, phasing out the old B-I and B-II classifications for newer codes, such as 5-B, 10-B, and 20-B. The numbers of the newer codes correspond with the square footage the extinguisher is designed to cover in the event of a fire. Under the new rules, all vessels that are under 26 feet in length and made before 2017 are still allowed to carry the old B-I or B-II extinguishers, provided they are less than 12 years old. If they are manufactured 12 years ago or older, they no longer meet USCG guidelines and must be replaced with the new 5-B, 10-B, or 20-B codes, depending on the vessel size. Also, boats under 26 feet made in 2018 or newer must carry the new USCG codes as well. Vessels that are 26 feet or longer should carry extinguishers with the 20-B classification, as the 10-B classification does not equal two 5-B sizes. 2022 Hampton Endurance 750-26 With a stunning skylounge, an abundance of luxurious amenities, and a spacious design, the new Endurance 750-26 from Hampton Yacht Group is ready to make her grand debut.

Newly arrived to Seattle, the 26th hull of Hampton Yachts’ 750 Endurance has ample space for entertaining day trips and extended cruising with luxurious accommodations—four staterooms and six heads. First seen in the Bell Harbor Marina during the Seattle Boat Show, the latest 750 includes an upgraded interior décor package from Pacific Custom Interiors, featuring Makore cherry paneling, granite and Corian countertops, and imported fabrics throughout. Designed by naval architect Howard Apollonio, the Endurance’s split-chine hybrid hull offers extra stability and premium performance, even at high speeds achieved via the twin Caterpillar C-18 direct-drive inboards, which produce a combined 2,272 horsepower. The enclosed skylounge up top has a large dining table, an L-shaped dinette settee, a Webasto sunroof, and an aft day head to starboard. Aft of the lounge, the open deck has room for a 15-foot tender. The centerline helm station is equipped with a complete Garmin navigation package, hydraulic power steering, a SeaTorque propulsion system, two Pompanette helm chairs, and a captain’s desk. A starboard stairway leads down to the main deck with an open-design galley, providing unobstructed views all the way to the aft-deck settee. The space is equipped with GE appliances, 38

such as a trash compactor, refrigerator, four-burner electric cooktop, 24” oven, microwave, dishwasher, and garbage disposal. Just aft of the galley is a custom table for up to eight people. Aft of the dining table, the elegant, carpeted salon and bar area is a great place to spread out and relax. Inside the entertainment center is a 49” LED HDTV with a Bose sound bar. The décor package for the Endurance includes an adjustable hi-lo table, two barrel-style chairs, and an L-shaped sofa. Belowdecks, the full-beam owner’s stateroom has a king-size bed, cedar-lined hanging lockers, a 42” LED TV, a stereo CD/ DVD system, and four speakers. The master head features marble countertops, a double sink, and a large shower stall with a Grohe faucet. The VIP stateroom has an island berth and a similarly appointed en suite head and shower stall, while the mid-guest stateroom has a double bed and an en suite head. The aft deck, accessible through a transom door, features a wide swim platform, a shower unit, and access to another day head. Port and starboard wing stations include engine and hydraulic thruster controls and a reverse-image video camera. A cruising settee and teak table, with a built-in refrigerator and 32” TV, provide extra seating space for guests under the overhanging skylounge deck.

Watersports saved Erica Kruger’s life and now she wants to return the favor. The Washington-based Kruger is the founder of a new paddle group known as SEASTR, a program for women looking for support on their journey towards physical and mental well-being. Meeting up on lapping shores throughout the Puget Sound, these women come together to test the waters, paddle out, and feel empowered.

“I want to offer a nice, quiet, safe place where women can have the ability to give themselves a little room to grow,” Kruger explains. “So that they can get out there on a body of water with the wind blowing at 40 knots and feel a little more confident after conquering it.” Since its inception a year ago this spring, SEASTR has drawn in individuals of varying backgrounds; from women who already love the sport to those who are new to paddling, or simply those seeking a community that will lift them up every stroke of the way. And when you meet Kruger herself, it’s easy to see why she has quickly become a lodestar. You could say Kruger was destined for a life on the water from her first breath of salty air. Her dad was a merchant mariner, her mom a master sculler and designer. Kruger herself has worked on oil rigs and supply boats, and she has spent 22 years as a self-made interior yacht and residential designer. Diving and surfing were as much a part of her as her own two hands, but stand-up paddling has only recently become an obsession in the last three years. “I’ve always been an adrenaline junkie,” she admits with a chuckle, “which is actually what initially kept me from paddling.” That all changed on the island of Maui a few years back when a friend introduced her to downwind paddling, a fast-paced

paddle sport where athletes harness the power of the wind, chop, and swells to propel themselves across open water at speeds faster than just their paddle can take them. After that initial introduction in Hawaii, Kruger participated in Salmon Bay paddle races back here at home, then the Gorge Paddle Challenge in Hood River. “It was baptism by fire,” Kruger says with a smile. She was addicted and many of her paddle buddies were gems, but something was missing—female companionship. She didn’t even bother searching around for a female paddling community because, “[I] already knew it wasn’t there. I could feel the hole, I could feel the void.” Here’s the hard truth: water sports are largely male dominated. As an example, the first women’s wetsuits weren’t created until 1960 and options were extremely limited, so women chose to custom make suits until the late ‘80s. Even then, the technology and features in women’s suits severely lacked compared to their male counterparts, therefore damming up women’s access to watersports before they’ve even had the chance to test the waters. Kruger herself is no newbie when it comes to male-dominated industries. As previously mentioned, she grew up in the maritime and seafaring businesses, the latter of which is only 1.2% female according to a BIMCO/ICS 2021 Seafarer Workforce

Report. “Compared to my time on the oil rig, [these Pacific Northwest] races were nothing,” she explains, referring to being the only woman paddling in a Neah Bay race; one of three women in her next race; and being one-half of the only all-woman team to ever complete the Seventy48, a 70-mile, 48-hour paddle-powered race from Tacoma to Port Townsend. (In fact, this very feat is the subject of a new feature documentary entitled “Stand Up” from local filmmaker Carly Vester. The film recently made its world premiere at the Wasatch Mountain Film Festival and will be screening at Surf Ballard in Seattle on May 13, and Broken Branch Surf Retreat in Oregon on May 21, among other spring and summer dates. Bringing more women out on the water is certainly one of the elements that inspired SEASTR, but Kruger’s undying passion for a supportive space stems from a much deeper place. Kruger survived rape as a 17-year-old in high school and sexual assault at age 20 while enrolled in a maritime academy. She eventually checked herself into an all-women hospital for depression and anxiety, and found solace in her group therapy sessions, which created one of the first splashes that would eventually form the wake SEASTR is today. “They don’t let you get away with crap in group therapy.” Kruger explains. “They’re hearing you make excuses or defend your offender, and they’re going to call

you out on it.” In therapy, you can laugh and cry and touch, and she knew she wanted to provide that same sense of safety and belonging on the water. Pivoting from her yachting design work, Kruger finished her 100-ton vessel captain’s license right as the world spiraled into the global pandemic. Drawing on her own personal revelations, she embraced her scars and re-focused her energy into a new business idea—one that would provide an inclusive space where women can explore their uniqueness while achieving their mental and physical goals through paddle sports. SEASTR was born. Today, Kruger offers women-focused, one-on-one and small group, surf and paddle clinics throughout the Northwest all year-long. The meet-ups encompass both flat-water paddling and surfing and are open to all skill levels. For more immersive experiences, SEASTR also offers ten camping-style retreats, each with its own purpose or vibe. For example, her popular Surf Glamp retreats include a two-night getaway where participants slumber in yurt tents, enjoy sunset yoga, and work up a sweat during strength training, in addition to the daily surfing lessons. Some are destination retreats—Baja Sur in the winter, anyone?— but most are local to the Northwest in spots like Westport or on the Olympic Peninsula. Regardless, retreats often bring in guest speakers, yoga teachers, or surf instructors and the like, to complement the restorative time spent out on the water. Kruger will also begin offering “Mom and Me” surf camps late this summer for mothers and their munchkins aged 8 and up.

Yet, despite the professional fulfillment paddling and the women of SEASTR have brought her, Kruger says that something was still missing from her personal life. That is until fate intervened. One day, she stumbled upon Karl Kruger’s essay on the transcendental nature of paddleboarding in Paddling magazine. Karl Kruger is a bit of a Pacific Northwest mainstay in the paddle and maritime world: he is the first to paddle the entire 750-mile Race to Alaska and plans on paddling the 1,900-mile-long route through the Northwest Passage later this year. She shed a few tears as she read about his complicated past and the raw, unfiltered, and heart-breaking moments that made Kruger the paddler he is today. Karl Kruger suffered an abusive childhood with a father who insisted on both violence and a deep connection to the outdoors. He left home at 15 and floated between both coasts surfing, skiing, climbing before earning a degree in environmental science.

He married his college honey, welcomed a daughter into the world, started two businesses, and got divorced, but no matter the challenge, the ocean was always there when he needed it most. The sentiments struck a chord deep within her, she says. “I realized [paddling] is spiritual. I’ve never said anything is spiritual and magical before.” The two connected in person, and a love match was struck. “Suddenly, everything felt right in the world.” The pair recently tied the knot and Erica dropped her maiden name, Whisenant. Now, the Kruger power couple is excited about the joint business ventures that lie ahead. They recently partnered with Seattle Yachts for a program called SEA Beyond where they’ll lead flotillas and practice environmentally conscientious boating in the Salish Sea and Alaska. MARK YUASA previews upcoming bottom fishing possibilities from halibut to lingcod, as well as the first major return of spring Chinook.

Good news, anglers: A bounty of springtime fishing opportunities are about to arrive. In the past few months, we’ve been hyper-focused on winter Chinook options, but now it’s time to pivot to other fisheries that deserve an equal amount of love and attention: the bottom-feeders. Lingcod, Black Rockfish, Kelp Greenling & Cabezon Let’s start off with fishing along the coast. When weather and ocean conditions allow, there should excellent choices here for lingcod, black rockfish, kelp greenling, and cabezon. Lingcod and black rockfish have especially seen a rebound in recent years in abundant levels. Coastal locations off the Columbia River/Ilwaco area, Westport, La Push, and Neah Bay (Marine Areas 1, 2, 3 and 4) are open for bottom fishing all these species now through October 15. The western Strait of Juan de Fuca from the Sekiu River mouth west to the Bonilla-Tatoosh border (Area 4) is also open daily through mid-October for lingcod as well as opportunities to catch certain rockfish species and cabezon. The daily limit is two lingcod per angler with no minimum size limit in Marine Areas 1 to 4. (The eastern Strait of Juan de Fuca and Puget Sound lingcod fishery opens on May 1. Be sure to check the Washington Department of Fish and Wildlife website for specific regulations and what types of fish you can or cannot retain.) Halibut Anglers can also start making plans to pursue the all-mighty halibut in the eastern Strait of Juan de Fuca and Puget Sound (Areas 6 to 10) beginning April 7, and off the coast and western Strait of Juan de Fuca (Areas 1 to 5) beginning May 5. “The Puget Sound area is opening a little bit earlier than in past years and this is exciting to give anglers a jumpstart on the halibut fishery, said Heather Hall, the WDFW coastal fishery manager. “We’ve got some nice recreational halibut catch quotas in all areas open for fishing.” The halibut sport catch quota for all marine areas is 294,786 pounds, up from 279,414 in 2021. (A breakdown shows Area 5 to 10 at 83,210: Area 3 and 4 at 133,847; Area 2 at 68,555; and Area 1 at 19,037.) Halibut fishing in Port Angeles area and Puget Sound (Areas 6 to 10) is open Thursdays, Fridays, and Saturdays only from April 7 through May 21, then Memorial Day weekend, June 2-27, and June 30. At Sekiu/Pillar Point (Area 5), Neah Bay/La Push (Areas 3 and 4) halibut fishing is open Thursdays and Saturdays only from May 5-21, also Memorial Day weekend, and then June 2-25, and June 30. At Westport (Area 2) halibut fishing is open Thursdays and Sundays only from May 5-22, May 26, and if enough quota remains it will be open June 16, 19, 23 and 26. At Columbia River/Ilwaco 70

(Area 1) the halibut fishery is open Thursdays and Sundays only from May 5-22, and May 26, June 2-26, and June 30. Halibut fishing could close sooner in areas if the catch quota is achieved. In all marine areas open for halibut, there is a one-fish daily catch limit and no minimum size restriction. There is a four halibut annual bag limit and anglers must record their catch on a WDFW catch record card. According to a WDFW summary, the 2021 halibut season was fair as most fisheries returned to pre-pandemic operations, although Neah Bay and La Push were still affected by the ongoing pandemic. In Puget Sound, halibut catches in 2021 were lower than expected despite a boost in opportunity compared to previous seasons. Most of Puget Sound opened in mid-April, which was about a month earlier than recent seasons and a three day per week season structure up from two days per week in the past. The lower catch rates in 2021 allowed WDFW to reopen Puget Sound in late summer. Time will tell if the same occurs here in 2022, but keep an eye out. Chinook And if you are still seeking some Chinook, the first major return of spring Chinook is happening right now in the Columbia River, with an improved prediction of 197,000 (143,200 was forecasted in 2021 with an actual return of 152,695). The Lower Columbia mainstem is open daily through April 6 from Buoy 10 to Beacon Rock, plus bank angling from Beacon Rock to Bonneville Dam. Any season extension beyond April 6 is dependent on in-season assessments of the run. The Columbia mainstem above Bonneville Dam is open daily from April 1 through May 5 from the Tower Island power lines below The Dalles Dam up to the Oregon/ Washington border, plus bank angling only between Bonneville and the Tower Island power lines. The daily limit is six salmon, no more than two adults and only one may be a hatchery-marked spring Chinook. Release all wild steelhead and salmon other than hatchery Chinook. The salmon minimum size is 12 inches. Shad retention below Bonneville is also permitted, with no minimum size or daily limit requirements. I’ll see you out on the water soon! Opening Act DOUG HANSEN recaps the premier event on the spring sailing calendar: Corinthian Yacht Club’s thrilling race ‘round Blakely Rock. It is officially spring in the Pacific Northwest and while we certainly have a few more weeks of cold weather ahead of us, we have finally kicked off the official 2022 sailing calendar. The first race of the Corinthian Yacht Club’s Center Sound Series, the Blakely Rock Race does just what it says, taking racers on a course around the iconic rocks at the entrance of Eagle Harbor. Being the first and shortest of the three-race series, the racecourse runs the fleet north to a set mark off the oil tanks near Edmonds and then turns southward to the rocks themselves and then simply back to the start and finish line off Shilshole Bay Marina. Crossing both the shipping lanes and ferry lanes right at the mouth of Eagle Harbor can make for potentially nerve-racking interactions; the very large commercial traffic can throw a wrench in even the most seasoned tactician’s plans for the day. This year, 85 boats took part, which posed its own tactical challenges. But with a strong turnout for the area’s opening race of the season, there were no complaints to be had. Saturday’s forecast called for a blustery day in the high teens with the possibility of the low twenties, which was in keeping with the last few years that saw the race held in high winds. The morning of the race was somewhat confusing as the breeze had subsided, and a pleasant 10-knot northerly wind was gently blowing evenly across the Sound. The anticipated rolling swell from an evening of building breeze was nowhere to be found, and a surprisingly calm sea state greeted racers as they left the marina. Racing got underway a little after 10 a.m. with the higher-rated, slower boats starting first and making their way northward in the increasingly steady breeze. The eyes of skippers and tacticians were glued to the early fleets to see which way boats were going out, and if there were any tips on what side of the course was to be favored. Thus, with a relatively short starting line, it was a game of weighing the benefits of starting at the favored end of the line versus clear air and a clean upwind lane right out of the gate. With the steady breeze firmly established across the Sound, an early clearing tack was not necessarily a death sentence; keeping the boat moving up the course as efficiently as possible was on everyone’s mind. 74

As the clusters of boats from each start began to spread out across the course, faster boats in the later starts overtook the early starts, and the game plan became clear: It was all about speed and sailing minimal distance around the course. With the layers of boats overtaking one another, clear air was at a premium. On the faster boats, it was a constant calculation of whether to foot and power through to the leeward of a slow boat or take two potential painful tacks to step up a lane for clear air. On the other side of the coin, the smaller boats had to decide whether to stick it out in a larger boat’s dirt until they pass or take a down-speed step up the ladder to clear their air. All in all, plenty of complicated fleet tactics at play as the fleet worked its way to the top mark. As is tradition, the traffic problem amplified at the rounding as all 85 boats tried to round and set their spinnakers at essentially the same time. With a decent amount of yelling and a small amount of fending off by at least two boats, things settled into the kite run down to the rocks. The road map to the final leg back to the finish line can be etched into the rocks themselves. Traditionally, you try to round as high and tight to the rocks as you practically can and then stay on port tack all the way until you reach the beach under the Magnolia Bluff. From here, it’s a couple of tacks to capitalize on the starboard tack lift as you near the West Point lighthouse and then tacking into Shilshole Bay as deep as needed to head for the finish boat. Most boats found themselves following this playbook, but those who didn’t had the clear air needed to tack more frequently to work their way back towards the finish. The race wrapped up for the day with all boats finishing the course, and things are looking like they are back on track for a full-fledged racing season in Puget Sound. After all the times were calculated, there were certainly two stand-out performances in the overall results with the J-122 Grace taking the top spot and Joe Grieser and Alex Simanis taking second place on the recently rebuilt Bonita 27 Pell Mell. Both boats absolutely rocketed off the start line and were nearly halfway around the course before the big boats began to overtake them. Certainly, these are two boats to keep on an eye during the rest of the spring series.

Chips Ahoy Featuring meaty bison, fragrant herbs, and semisweet chocolate chips, this easy, elegant chili from JAMES O. FRAIOLI will spice things up this spring. No great Pacific Northwest boating trip would be complete without dropping anchor to have an onshore lunch at one of Washington’s beautiful beaches—tastes and flavors always seem to be more delicious when enjoyed in the great outdoors. Next time you are planning to cast off for a picnic, instead of the proverbial canned beans or freshly caught fish, try this easy-to-follow Chocolate Bison Chili. It will warm your body and soul, and the chili can be made using a Dutch oven over a crackling fire or a stockpot in your galley should it be too drippy to venture beyond the aft deck. This particular chili is from my recent cookbook, New Native Kitchen: Celebrating Modern Recipes of the American Indian, which I co-authored with Chef Freddie Bitsoie, a renowned Native foods educator and former chef at the Smithsonian’s National Museum of the American Indian. Chocolate has a long, sacred history in Indigenous recipes beginning

with the Mayans, Aztecs, and other communities of the Yucatán Peninsula, where cacao beans have always grown wild. Cacao has been integral to Indigenous ceremony and cuisine—from drinks to mole sauces and spice rubs. In 2000, the Chickasaw Nation became the only Native American community to create its own brand of artisanal chocolate; I had the pleasure of visiting Bedré Fine Chocolate several years ago and witnessed firsthand how the company instills their cultural passion into every delicious morsel. This recipe draws on this ancient tradition to create a spicy, savory, herbaceous chili with a hint of that bittersweet goodness. This is the kind of fabulous tasting chili that your friends and family will remember—and ask you to make again and again all wet spring long.

CHOCOLATE BISON CHILI Serves 6 to 8 1 tablespoon canola oil 1 large onion, peeled and chopped 3 cloves garlic, peeled and minced 1 green bell pepper, seeded and diced 3 sprigs fresh thyme 1 bay leaf 1 pound ground bison* Salt and freshly cracked black pepper 1 tablespoon tomato paste 1 teaspoon ground cumin 1 teaspoon ground coriander 2 teaspoons paprika ½ teaspoon cayenne pepper 1 (14-ounce) can diced tomatoes with juice 1 (14-ounce) can kidney beans 3 cups bison or beef stock 1¼ cups semisweet chocolate chips

In a heavy stockpot or Dutch oven over medium heat, add the oil. When the oil is hot, add the onion, garlic, bell pepper, thyme, and bay leaf. Sauté until the vegetables are soft, stirring occasionally, about 5 minutes. Add the bison, season with salt and pepper, and sear the meat while breaking it up with a wooden spoon or spatula. Cook for about 8 minutes. Add the tomato paste and allow the paste to brown but not burn. Add the cumin, coriander, paprika, cayenne, and diced tomatoes. Use the juice of the diced tomatoes to deglaze the bottom of the pot. Add the beans and stock and bring to a boil. (Note: Do not boil hard or for too long or the beans will tear apart.) Allow to boil for about 5 minutes, then reduce the heat to low and simmer. Add the chocolate and

allow the chili to reduce until it reaches a nice stew consistency. Adjust the seasoning, if necessary, then stir to make sure the melted chocolate is evenly distributed. Remove the thyme sprigs and bay leaf and serve immediately. This chili can be refrigerated for three to four days, or frozen for four to six months. *If you can’t find bison, you can substitute with ground beef.
