The ‘20s Will Finally Roar Again for Opening Day 2022 The 2020s didn’t quite have a great start, to say the least, but that’s no reason to dampen the coming “Roaring 20s” party in Seattle for the Opening Day of boating season. On May 7, the ‘20s of this century can finally begin on a high note, with the return of Seattle Yacht Club’s annual party and parade. After skipping the 2020 and 2021 festivities due to Covid protocols, the boating community is ready to kick up its heels with a much delayed celebration of recreational boating and traditional host Seattle Yacht Club expects to have a heavy turnout. Admiralette Jan Holbrook said the 1920s were a time of celebration. “Much like today, it was a progressive period in time where culture and lifestyle were evolving and growing in a positive direction,” she said. “We want to channel that as we bring people back together again for Opening Day this year.” The festivities will begin at 10 a.m. with the Windermere Cup Regatta (for more on that, see page 23), then following the Regatta, the traditional cannon blast will sound at noon to raise the Montlake Bridge and begin the two-hour parade of vessels adorned with decorations from the 1920s as they cruise through the Montlake Cut. On the SYC lawn at Portage Bay, a jazz band will play music from the era to get revelers in the mood for flapper dresses and pinstripe suits. A wide array of small and large boats is expected to take part in the parade, including row and paddle boats, antique boats, yachts, and sailboats with spinnakers flying. The Seattle Fire Department will participate with its fire boats sending out clouds of spray to mark the occasion, and to set the musical tempo, two small flotillas of yachts will carry members from the University of Washington and Washington State University marching bands. Vice Admiral Lance Rummel pointed out that 1920, which was the first year the Opening Day event was held in Montlake Cut, also marked the end of the “Spanish Flu” that held the world in its grip a century ago. With Covid finally in retreat, “this is our booming return to tradition with a parade, University of Washington crew races, and enthusiastic spectators,” Rummel said. “It all really resonates, then and now.” For more detailed information about Opening Day events, please visit: seattleyachtclub.org. Windermere Cup Racing Returns to the Cut If a rowing regatta is held, but there’s no one there to watch it, did it really happen? Well, yes, it did in 2021, even though no spectators were allowed. But this year, with Covid concerns on the wane, boating spectators are highly encouraged to bear witness to the return of the Windermere Cup in front of a live audience. Held concurrently with the May 7 Opening Day festivities around Seattle’s Montlake Cut, the Windermere Cup race will have an international feel, with the women’s national team from Great Britain, the men’s national team from the Netherlands, and the men and women’s varsity teams from the University of Washington. More than 800 athletes will compete in the Regatta, including masters, juniors, collegiate, national, International, and Olympic racers. The night before the race, on May 6, the celebration will begin with the 4th annual Party on the Cut, which will feature boats, bites, brews, and bands.

A $25 entrance fee gives spectators access to food trucks, drinks, games, and other fun activities, from 6 to 10 p.m. Attendees can also get sneak peeks at the Windermere Cup racers as they perform mini twilight sprints on the Cut. Live music will also be provided by the band Nite Wave, who will perform the top hits from the 1980s. The party will be held at the northeast corner of the Montlake Cut, near the UW Waterfront Activity Center. The first of two dozen races begin at 10 a.m. on May 7. The races can be viewed along the shores of the Montlake Cut or aboard your boat anchored to a log boom in Lake Washington. Following the races, fans are invited to join the Regatta winners for an awards ceremony and presentation of the Windermere Cup Trophy on the stage located near the video board on the northwest side of the Montlake Cut, near the finish line. Marina Reservations Increasingly Made Online via Dockwa Platform

Summer boating season is almost upon us. Have you made your marina reservations yet? If you have, the chances are increasingly likely that your reservation was made through Dockwa, an online booking platform for marina space. One of Dockwa’s most recent additions is Roche Harbor Marina on San Juan Island. As one of the most popular destinations for boaters in the Pacific Northwest, Roche Harbor’s limited dock space is at a premium in the summer months. As a result, Dockwa, which handles the immense complexity and variability of dock space management, has become a user-friendly option for boaters, much like online airfare reservation services transformed the airline industry 25 years ago. Dockwa co-founder and CEO Mile Melillo said in a letter to his customers in January that the company had recently completed a $30 million Series C venture funding round to expand the company internationally, given that marina bookings through the site had grown by 300% over the previous year’s figures. One of the reasons for the popularity of online bookings has been the Covid pandemic, which has greatly boosted interest in boating as a way to find recreation while social distancing. Melillo also said that the $18 billion marina industry is one of the last to embrace digitization. Many marinas, he said, rely on telephone contact to handle reservations, and several are still cash-only businesses. The platform is one of many players that are emerging in the marina management software segment. Companies like DockMaster, Anchorsoft, EasyPier, MarinaOffice, Harbour Assist, Marina Controller, and many others are beginning to modernize what has been a relatively old-fashioned system. So, if you’re a boater who still needs to reserve space in the San Juans this summer, or at one of the more than 100 marinas in the Puget Sound area, your better bet might be to hop online, rather than play phone tag. Rolls-Royce, Westport Yachts Join to Debut ‘Clean’ MTU Engines in U.S.

Known mostly for producing exceptionally luxurious cars and advanced aircraft engines, United Kingdom’s Rolls-Royce has joined forces with Westport Yachts out of Westport, Washington, to create the new MTU Series 2000 eco-friendly engines, which have recently debuted in the Westport 125 model yacht. The release of the new 16V 2000 M97L in the Westport 125 is to be the debut of the low-emissions engines in a U.S.-built vessel. The MTUs, with an output of 2,600 hp, are designed with an integrated Selective Catalytic Reduction (SCR) system, which drastically reduces nitrogen-oxide emissions. By using the Rolls-Royce technology, the Westport 125 earns the IMO III certification, which will enable it to operate in emissions-protected areas, known as ECA zones, along the U.S. and Canadian coasts, as well as in the North and Baltic seas.

“This is an important milestone for the next evolutionary stage of this engine series, as well as for our efforts to become a provider of integrated sustainable solutions,” said Christof von Bank, director of Marine, Americas, at Rolls-Royce. Daryl Wakefield, president of Westport Yachts, described the MTUs as the “cleanest” marine engines in Westport’s newest motor yacht. “They ensure maximum power, reliability and ease of mind to our customers, who can concentrate on enjoying their yachting adventures,” he said. In addition, Rolls-Royce said it will approve the use of sustainable biofuels, such as synthetic diesel, by 2023 in the MTU Series 2000 and 4000 engines. The British company also said it is building new, CO2-free, fuel-cell systems and methanol engines to help reduce carbon dioxide emissions in the environment. Save the Date: Classic Yacht Association to Resume Bell Harbor Rendezvous

Following the last two years of either nonexistent or severely reduced rendezvous gatherings in the Puget Sound region, the Classic Yacht Association (CYA) said it will resume its annual Bell Harbor Rendezvous in June. The Bell Harbor Marina on Elliott Bay will be the site of the June 18-19 event, which will mark the 25th anniversary of what CYA said is the “largest gathering of classic power yachts in the United States.” Admission will be free to the public, with several of the participating boats open for tours. One of the show’s highlights is the annual bestowing of the Engine Preservation Award, which recognizes the dedication of classic boat owners in maintaining their vessels’ decades-old power plants. While the CYA Bell Harbor rendezvous began in 1997, its origins go back to the Port Ludlow show of June 1983 that featured free moorage for two nights, public viewing, and an outdoor barbeque. With the opening of the new Bell Street Marina in 1996, the CYA event moved to the Seattle waterfront at Pier 66. In most recent years, the event has had more than 40 Pacific Northwest yachts in attendance; the record high was 54 boats in 2006. With the 25th anniversary looming, CYA said it plans to “stuff as many boats as possible into the Bell Harbor Marina.” The CYA show is supported by the Port of Seattle and several sponsors, including Lake Union Dry Dock Company, Haven Boat Works, the Port Townsend Shipwright’s Co-Op, Fisheries Supply, CSR Boatyard, Pacific Fisherman Boatyard, and Canvas Supply. Recycle, Reduce, Reuse Got a derelict boat to ditch? Consider it “gone-zo” thanks to a new biz that takes the hassle out of the haulaway—and even recycles old parts to give them a new lease on life.

“There’s gotta be a better way!” It might be a cheesy, as-seen-on-TV line, but it’s also a thought that crossed Frank Gonzalez’s mind many times over the years when it came to the conundrum posed by the derelict boats he spotted throughout our region. After spending stints as a shipwright, a marina manager, and working for the Northwest Marine Trade Association (NMTA) where the problem came up time and again in meetings, Gonzalez offered his own solution with the launch of Gonzo Boatworks in early 2022, a firm that hauls abandoned or inactive boats out of our waterways—then finds new ways to recycle and upcycle them. “Just because a boat isn’t viable for one owner doesn’t mean that it can’t be usable in another way,” he explains. “If I can provide an easy way for owners to responsibly dispose of their boats and help create a marketplace for the re-usable elements, then perhaps that can help break the cycle of boats just being abandoned.” The process starts with an initial site visit to the boat in question, then Gonzalez figures out the logistics to haul away boats of all sizes, from tenders and dinghies

(starting at $100) to larger cruisers (a 25-to 35-footer costs between $2,000-$3,000). Willing owners can alternatively drop off vessels for a smaller fee. Then, Gonzo Boatworks goes to work, salvaging usable parts to list on their online marketplace and reselling to people seeking hard-to-find specialty parts or cheaper alternatives. The crafty former Microsoft engineer has also been known to transform old furnishings, metal scraps, wood planks, and other onboard elements into custom creations, such as the nautically themed shed he recently built for an owner from the scraps of a beloved boat. And, for vessels that are not quite derelict yet, Gonzo Boatworks re-homes those through their “adopt a boat” program. “Sometimes a boat just needs a little TLC, so we’ll work to find the right caretaker and give them the resources they need so that these vessels can be fixed up and continue to bring joy for just a bit longer.” For more information on recycling a craft, custom projects, or to check out the current adopt-a- boat listings, visit: gonzoboatworks.com

1982 Westport Pacific Shadow II Designed by Ed Monk, stoutly built by Westport Yachts, and available from Worth Avenue Yachts, this classic stunner is beautifully equipped for extended cruising. Known as Pacific Shadow II, this sophisticated 1982 classic was built by Westport Yachts and extensively refitted over the many years it served as a Pacific Northwest charter. Designed by the legendary Ed Monk, the luxury motoryacht is fully equipped with stabilizers for long cruises as far as Alaska, with five luxurious staterooms and ample room for entertaining up to 12 guests. Grand double doors provide an elegant entry to the salon, which is paneled in Hawaiian Koa wood and has a large bar that can serve up to five liquors on tap. The large flybridge has a notable design history. Passenger ferry. Cargo conveyer. Mail carrier. Military transport. Events venue. Excursion vessel. National Historic Landmark. Puget Sound lodestar. This vast and varied resume belongs to one vessel and one vessel alone: The SS Virginia V. The last remaining steamship from the historic “Mosquito Fleet” of ferries that once traversed the Puget Sound and still a frequent sight on Northwest waters, the beloved wooden ship has spent more than a year out of those waters at Pacific Fisherman Shipyard in Ballard. There, she has undergone restorations that have prepared her for the next role—that of a centenarian as she marks the 100th anniversary of her June 11, 1922 maiden voyage next month. WHILE PLANKING WORK WAS UNDERWAY, THE VIRGINIA V FOUNDATION ALSO WORKED TO PRESERVE AND POLISH UP THE VESSEL’S MANY HISTORIC DETAILS.

“She’s tenacious,” states Ed Brown, senior docent at the Virginia V Foundation and the resident ship historian. “She’s been seized by the Federal Marshals twice. She’s been sold at auction. It’s been constant work to find her a job. The ship has had so many owners and careers that really, it’s a miracle that she’s made it all the way here to us today.” But made it she has, thanks to a herculean effort by a consortium of local shipyards, expert boatwrights, and the passionate crew behind her caretaking foundation. This most recent work is certainly not her first—that was way back in 1934. The steamship was damaged in a wind storm while attempting to dock in Olalla,

Washington, and the upper decks were nearly destroyed. The decision to even bother fixing her after the incident was monumental, explains foundation board secretary Doug Weeks, who has been involved with the foundation for over two and a half decades and even met his wife on board. “These boats weren’t really built to last traditionally, maybe 25 years. When they would get old and out of shape, they used to just run them up on the beach and burn them.” Brown concurs; “I think we are eternally lucky that they decided to rebuild it in ‘34. That rebuild then set the stage for the many rebuilds that followed.” In the more modern age, beginning in 1995, the Foundation undertook a six-year, $6.5 million


stem-to-stern restoration; that project included rebuilding the original steam engine, building a new boiler, and reconstruction of the ship’s superstructure. When Virginia V was hauled out for this particular project in February of 2021, the original plan was to work on an area of fungus-related rot in the port bow area of the ship. But once it was out of the water, it was discovered that the rot was more widespread than initially thought and significant portions of the ship’s framing and planking would need to be replaced. Thus began an almost 15-month-long journey. On the business end, King County, The M.J. Murdock Charitable Trust, 4Culture, The Norcliffe Foundation,

The Goodfellow Fund, The Beardsley Family Foundation, and many individuals all responded to the call for help with donations. The Foundation also received federal funds from the National Maritime Heritage grant program, which is administered by the National Park Service. (There will still be a sizeable gap between funds raised to date and the total cost of the restoration work; donations are welcome via the Foundation’s website.) On the technical side, the shipwrights at Pacific Fishermen Shipyard immediately went to work removing and replacing fungus-infected frames, knee, stem, and planking, a process that can only be described as a labor of love.

First, the “new” planks installed by PacFish are anything but new. All milled from old-growth Douglas fir to match the historic wood elsewhere on the ship, they were sourced from small mills throughout the region, from Oregon to the Olympic Peninsula. All told, 57 planks were replaced on the starboard side and 39 on the port side of the ship. The planks, which measure up 40 feet long, were each individually prepared to exacting measurements in the shipyard’s wood shop, then steamed for two hours to soften the wood. When ready, the shipwrights removed the plank and quickly set it in place with metal braces so it could bend into the curved shape of the hull. After the planks were fastened to the ship, other experts applied their old-world skills to “corking” the seams to seal the space between the planks to make her hull watertight. This process involves hand preparing the “oakum”

(hemp fiber) into thin strands which are then pounded into the spaces between the planks. A layer of cement is later applied in the seams. “It’s all very organic and frankly, awe-inspiring,” says Weeks of the Virginia V Foundation, describing the wood details of the ship. “She’s not plastic, not metal, she’s crafted from the earth.” Foundation members and volunteers also pitched in on a bevy of necessary maintenance-related tasks and other projects while Virginia V was in dry dock to help keep her plying the waters in the years to come— an example of just how many care, and care deeply, for the historic steamship and her fate. Docent Brown describes Virginia V as their second home. “This is where I found my calling in life,” Brown says. “I love helping people learn history when they come aboard.” And to hear Weeks describe the antique

steam engine is the stuff of poetry: “Her heart is the engine, and when you look into that boiler, it’s like seeing her heart beat. You feel it, you hear it, that steam engine gives you a sense of a living, breathing thing.” The final “whiskey plank” was installed on the port bow of the ship on March 28, a milestone well worth marking with a traditional celebratory toast after over a year’s worth of restoration work. During the remaining spring months, the shipyard team is continuing the process of corking the seams, painting the hull, and replacing underwater through-hull fittings. Finally, tests and inspections required by the Coast Guard will be conducted and then the engineering crew will ready the ship for operation. The Foundation plans to have her sailing again come summer, the all-volunteer crew welcoming visitors back dockside and on board via several sailings and celebratory events. Mark the calendar for July 15th when Virginia V is set to steam from Seattle to Tacoma, passing by Vashon Island in a

re-creation of one her West Pass ferry routes back in the day. That July cruise is sure to be a full circle moment for the devotees who have steered her through the past two years. “If we were to lose the boat, we’d lose her connection to all that local history and the knowledge she contains in her stories,” says Weeks. “It’s why she’s so important to preserve, that tie to the past is so incredibly valuable.” And Foundation Executive Director Debra Alderman thinks that, with a little luck and a lot of effort, Virginia V may just continue to inspire and delight people for yet another hundred years. “We are just caretakers,” she concludes. “We are proud to contribute what we can to her legacy during our era and then pass her on to the next generation.” >> For the latest updates on the plans for celebrating Virginia V’s centennial, plus information on how to volunteer your time, or to donate to her restoration and preservation, go to: virginiavfoundation.org. 55

Take to the lakes and rig your line for some spring trout with these tips and tricks from MARK YUASA.

May is a spectacular time to get out on the water, especially so, given all the spring fanfare surrounding trout fishing in our Washington waterways. Over the past couple of months, the Washington Department of Fish and Wildlife (WDFW) hatchery staff has been busy trucking millions of trout and planting them in hundreds of lakes across the state’s 39 counties. (Fun fact: Washington state has one of the biggest fish hatchery systems in the world and produces millions of fish annually.) WDFW’S 2022 stocking plan reveals around 2.1-million catchable trout averaging 10- to 12-inches long are heading into lakes and another 147,357 “jumbo-sized” trout weighing 1 pound or more to boost the excitement. Great Lakes In the Puget Sound region, look for a plant of 432,350 catchable trout headed into King, Snohomish, Skagit, San Juan, Whatcom, and Island county lakes. Some of the top lakes in western Washington are Geneva, Meridian, Green, Desire, Steel and North in King County; Heart, Grandy, McMurray and Sixteen lakes in Skagit County; Goodwin, Roesiger, Howard and Serene in Snohomish County; Summit Lake in Thurston County; American and Spanaway in Pierce County; and Mineral Lake in Lewis County. Top lakes in eastern Washington include Rocky in Stevens County; Fishtrap and Sprague in Lincoln County; Conconully Lake and Reservoir and Pearrygin in Okanogan County; Jameson in Douglas County; Williams and West Medical in Spokane County; and Wapato Lake in Chelan County. In central Washington, Columbia River reservoirs like Roosevelt and Rufus Woods are the top destination spots for large-sized rainbow trout and/or Kokanee. In late March, the Colville Confederated Tribes Resident Fish Program stocked 23,157 rainbow trout averaging 1.4 pounds apiece into Rufus Woods, and more plants are planned in May to boost late spring-time fishing. Lake Chelan is another go to spot for Kokanee, lake trout, and Chinook salmon. If you’re traveling by boat to marinas and anchor destination spots around Whidbey Island and San Juan Island County, be sure to pack along the trout fishing gear as each county offers plenty of nearby freshwater options. On Island County, try Cranberry Lake in Deception Pass State Park; Deer, one mile west of Clinton; Goss Lake, west of Langley, or Lone, southwest of Langley. In San Juan Island County, try Cascade Lake in Moran State Park; Egg, on the northeast side of San 68

Juan Island; and, Hummel on north end of Lopez Island. Mountain Lake, 4 ½ miles southeast of East Sound in Moran State Park, gets a decent annual plant of cutthroat trout. For a statewide stocking schedule and planting updates, go to: wdfw.wa.gov/fishing/reports. Tackle the Job • Trout fishing gear is mainly a lightweight, limber rod in the 6- to 8-foot range, and a medium-sized spinning reel with 6- to 8-pound test monofilament fishing line. Add two size 8 or 9 egg sinkers with a rubber bumper tied to a small barrel swivel. Leaders should be 18 to 30 inches in 3- to 8-pound test and a size 8 or 10 egg or worm hook. • The top choice for bait is the soft dough baits like Berkley Power Bait that comes in a variety of colors, shapes, and sizes. Other anglers prefer to use worms, maggots, salmon eggs or scented marshmallows. From a boat, troll a gang-flasher with a bait laced with a piece of scented dough bait or a small spoon, rooster tail, spinner, or a weightless marabou fly. When still fishing from an anchored boat, use a bobber if the trout are lurking near the surface or let your bait hang a few feet off the bottom. You can also cast and retrieve a small spoon or rooster tail. • Freshly stocked trout tend to be located under the surface in 3 to 5 feet of water and will reside in spots where the hatchery trucked unloaded them into the lake. It takes about one to two weeks before they spread out and move into deeper sections of a lake. • Your time spent on the water can also come with special prizes by participating in the WDFW Trout Derby, on now through October 31. Last year, about 55 percent of the tagged trout were turned in for prizes. This season, more than 100 lakes will receive tagged trout and individuals who catch one are eligible for hundreds of donated prizes from participating businesses across the state. Start to Finish That’s a wrap: DOUG HANSEN recounts the thrilling second and third races of this year’s CYC Center Sound Series. The Corinthian Yacht Club Center Sound Series is certainly a focal point on any Northwest racing team’s calendar, and this season did not disappoint. As I wrote in last month’s column, the first race of the series went off without a hitch and was a fantastic day on the water. So, the stage was set, and expectations were high for the second and third races. This year’s series also had an exciting new format. Traditional, pre-set courses were replaced by an option allowing the racing committee to select course routes based on the day’s best conditions in hopes this would minimize last-minute cancellations. For the second race of the series, the newly renamed Center Sound #2 held on March 19, light winds were in the forecast, but a crazy amount of instability in the atmosphere brought in various storm cells as they swirled around the North Pacific. Dark and rainy clouds to the north and clearing sunshine to the south was the indicator of a full-on convergence zone, and it was anyone’s guess which would win. With all of this in mind, the race committee decided to exercise their optional racecourse and send the fleet on a somewhat familiar lap around Blakely Rock, across to Duwamish Head channel mark in Elliott Bay, and then back to Shilshole Bay for the finish. The light northerly wind began to slowly push south and settle onto the course during the run down to the rocks; several boats were able to break away and make big gains on the fleet by sailing in whatever direction that kept them moving. Sometimes this was away from the mark, but it paid off in the long term as they worked towards the Bainbridge Island shoreline. As the fleet rounded and headed towards the Seattle waterfront, the wind began to fill quickly and from the east of all places. Somewhat suddenly, the fleet found itself sailing in 20 knots upwind to the turning Duwamish Head mark off Alki Beach and bearing away to a jib reach back to the finish in the unexpected windy conditions. The third and final race of the Center Sound Series was held on April 2 and the provisional plan this time around was for the fleet to head north. After an analysis of the winds, the traditional course northward to the 74

Scatchet Head mark off the south end of Whidbey Island was in store for the sailors, but with a slight twist. With the potential fading breeze, it was decided to run a scoring gate off Edmonds on the return from the turning mark. Then, if the wind was to shut off, they would be able to score boats as they passed through the temporary set gate mark. As the fleets got underway, the breeze continued to stabilize and even built a fair bit during the initial spinnaker run. A relatively square course, the fleet found themselves gybing back and forth looking for clear air and the best angle to approach the mark. The wind continued to build as the fleet made the way downwind as the faster boats overtook the slow boats who started earlier. The reverse start certainly made things interesting as the whole fleet seemed to converge at the turning mark within the same few minutes. Keeping clear air here after turning upwind proved something to be something of a challenge, but paid off big to those that managed to do so. The upwind beat back to the scoring gate and eventual finish was less straight forward than anticipated, as the breeze began to subside and shift around in the early afternoon. The heavy currents certainly made a difference as boats worked their way northward in the light air and attempted to get into favorable water along the shoreline of Bainbridge Island. Just as it looked like the wind was going to shut off completely, it began to slowly build, and it continued to build into the mid-teens by the time the lead boats were finishing. This made the shortened course gate unnecessary, but still a mark of the course, which caught more than one skipper off-guard as they sailed directly to the finish line. All in all, it was a fantastic season-opening series with sunshine, wind, minimal rain, and awesome racing! After the dust settled and the final scores for all three races were tallied up it was Andy Mack onboard the J122 Grace that won the overall with a commanding score of eight points, ahead of the second-place boat, Dos, skippered by Brad Butler, both outstanding performances coming out on top of the 63 boats that made up this year’s fleet.

Spot On It’s New Orleans meets Northwest: Seize spot prawn season with JAMES O. FRAIOLI’s feisty étouffée served over creamy buttermilk grits. Authentic crawfish étouffée in southwest Louisiana is a way of life. There, when you pick up a bag of the little energetic crustaceans, alive and fluttering around in black mud, no matter how much you rinse them, there always seems to remain a shrouded essence of swamp water. Enter their big cousin, the shrimp. In lieu of crawfish, using big, succulent shrimp—especially from the cold briny depths of the Pacific Northwest—elevates this dish while giving you a pretty authentic N’awlins étouffée, minus the swamp. For those of us who are fortunate to live and play in Washington state, spot prawns are an excellent choice for this southern classic because of their intense buttery flavor and soft lobster-like texture. Spot prawns are also a true Northwest delicacy and, in my opinion, the most flavorful shrimp you will ever eat. When fishing for or purchasing spot prawns,

it’s best to get them live and hold them on ice until ready to use. Spot prawns will only live a few hours, and for the best-tasting prawns, the heads should be removed, and the tails placed in the refrigerator or on ice for no more than a couple days (don’t discard the shells, we’ll need them for this recipe). The tails can also be frozen in a container filled with saltwater, which should last six to twelve months. This rich, spicy shrimp stew is best spooned over the simplicity of Buttermilk Grits and, son of a gun, you’ll have big fun on the bayou! This recipe is from The Tropicale Restaurant Cookbook: Comfort Food for a Modern World. I had the pleasure of collaborating with chef/owner Tony Di Lembo on this award-winning book. (If you’re not familiar, Tony was Barbra Streisand’s personal chef before he left to open the Tropicale.)

Cajun Spot Prawn Étouffée with Buttermilk Grits Serves 8 ½ stick sweet butter 1/3 cup flour 2 tablespoons bacon fat, lard, or olive oil 1 medium onion, peeled and diced 2 stalks celery, diced 1 green bell pepper, diced 1 jalapeño, minced 4 cloves garlic, peeled and minced 1 (14-ounce) can whole tomatoes, chopped, with juice ½ teaspoon cayenne pepper 3 bay leaves 1 teaspoon dried thyme 1 teaspoon Cajun seasoning

3 teaspoons paprika 1 teaspoon celery seed 1 quart Shrimp Stock, recipe follows 2 pounds fresh spot prawns, deveined and shelled (shells reserved), plus 8 whole prawns (in shell) for garnish 3 green onions, sliced ¼-inch thick Tabasco hot sauce, to taste Worcestershire sauce, to taste Sea salt, to taste Black pepper, to taste

In a Dutch oven over medium-low, add the butter and heat until foamy. Whisk in the flour. Reduce the heat and cook over low until the roux is golden brown with a nutty aroma. Remove to a bowl and reserve. In the same pot, add the bacon fat, onion, celery, bell pepper, jalapeño, and garlic. Cook until the vegetables are soft. Add the warm reserved roux and whisk to combine. Add the tomatoes, cayenne, bay leaves, thyme, Cajun seasoning, paprika, and celery seed. Cook for 2 minutes. Whisk in the Shrimp Stock and bring to a simmer. Cook covered, stirring occasionally, for 45 minutes. Add the spot prawns along with the green onions, and simmer until the prawns are just cooked, about 5 minutes. Remove from the heat and season with the Tabasco, Worcestershire sauce, salt, and pepper.

Shrimp Stock

Buttermilk Grits 2 cups quality coarse corn grits, not instant 6 cups water 2 cups buttermilk 3 bay leaves Sea salt, to taste 1 teaspoon fresh lemon juice, to taste 2 tablespoons stick sweet butter In a large container, cover the grits with the water and buttermilk, and soak overnight in the refrigerator. The next day, skim the “scum” from the top and pour everything in a large saucepot. Over high heat, and stirring constantly with a wooden spoon,

bring to a vigorous boil. Remove from heat, cover, and allow to sit for 10 minutes. Return to low heat, uncovered, and add the bay leaves. Cook 45 minutes, stirring often until the grits are tender. Keep the sides of the pot clean with the spoon. When finished, remove the bay leaves, and season to taste with salt and lemon. Stir in the butter until melted. Serve the Cajun Spot Prawn Étouffée spooned on top of the Buttermilk Grits. Garnish each serving with a whole cooked prawn, as desired.

Makes 1 quart of stock 1½ tablespoons olive oil Reserved shells from 2 pounds of spot prawns 1 bottle beer 5 cups water 1 onion, peeled and roughly chopped ½ cup chopped carrots ½ cup chopped celery 5 garlic cloves, peeled 2 bay leaves ¼ teaspoon dried thyme ¼ teaspoon crushed black peppercorns 4 sprigs Italian flat-leaf parsley

In a medium stockpot, warm the oil over medium-high heat to almost smoking. Add the shrimp shells only and stir. When the shells are pink and starting to color, add the beer. Reduce the beer by half, then add the rest of the ingredients listed. Simmer uncovered for 1 hour, or until there’s about 1 quart of stock remaining. Strain and reserve the liquid.
