New You It is that time again when we all make our new year resolutions, but does it really work. Life coach and motivational speaker Merlin Wilde suggests that a different approach should be taken to the changes we want to make for the year ahead.

Yesterday, everybody smoked his last cigar, took his last drink, and swore his last oath. Thirty days from now, we shall have cast our reformation to the winds and gone to cutting our ancient shortcomings considerably shorter than ever.” Slightly pessimistic I agree, but sadly oh so true. The biggest majority of New Year’s Resolutions have gone by the wayside before January is over and most won’t even be remembered six months later. No one can get excited about losing weight because it requires deprivation. It’s a negative response to concerns about appearance, health, etc. The results of weight loss resolutions demonstrate their weakness. The people who succeed at losing weight and maintaining the loss have usually been motivated by a dream much bigger and more positive

It wouldn’t be possible to effect and sustain such a radical change unless the person is motivated by a big dream that is positive in nature. If you’re going to make a New Year’s Resolution this year, make one with a high probability for success. Make a Resolution to develop a life plan. Working with a life plan you’re much more apt to be excited by what the future brings even if you succeed at attaining only a small part of your plan. A life plan should address all areas of your life including ﬁnances, health, relationships, career, spiritual and recreational. While a lot of our focus tends to be on ﬁnancial issues like increasing income or decreasing debt, or health issues like losing weight or quitting smoking, the undeniable truth is that a life lived out of balance isn’t a life of quality at all. If you were going to build a new house and you had this idea for a fabulous master bedroom suite, you wouldn’t rush out and start building the master bedroom. You’d have a complete plan for the whole house which included the Master bedroom suite before you started. When you approach resolutions and goals in the same manner, 8 OCIO magazine

you end up with a much better chance of achieving success. So whatever your plans and aspirations are for the coming year be positive. Fix that medical problem that has been niggling away at you, put your finances in place and gain control of your life. If it is a new sport or hobby you want to start then do it, do not delay any further. Get out and play some golf, if you ride then visit the stables and plan in some time to ride out in the beautiful spanish countryside and enjoy the scenery that mother nature has provided for us all to enjoy. And finally, in amongst all of the dreams and ideas for the year ahead do make sure you find some time for you! Get the new hairstyle, treat yourself to a manicure or massage or simply just promise yourself a long lie in bed on Sunday mornings. Remember this is your one and only life and it is not a rehersal. Latin has an expression for it... ‘Carpe diem’ (seize the day). n

o acabar. Y ahí está el problema, es difícil sacar ímpetu de una respuesta negativa. Siempre es más fácil ir hacía algo que salir de ello. Consideremos una de las más adoptadas--pérdida de peso. A nadie le entusiasma perder kilos porque requiere una privación. Es una respuesta negativa que concierne la apariencia, salud , etc. Los resultados de la pérdida de peso demuestran su debilidad. La gente que lo consigue y mantiene generalmente se han motivado por un sueño más grande y positivo que solo adelgazar. Se ven llevando un estilo de vida más sano. Empiezan a actuar y pensar como gente que están en un buen estado físico. Hay un cambio más radical en la forma de pensar y actuar de la persona de las que se ven con muchas resoluciones. No sería posible de llevar acabo y sostener tal cambio radical a menos que se motive por un gran sueño que de por si es positivo. Si vas a hacer

una resolución de año nuevo este año, haz una, con una alta probabilidad de éxito. Haz una resolución de desarrollar un plan de vida. Trabajando con un plan de vida estarás más entusiasmado por lo que el futuro traiga incluso si solo logras una pequeña parte de tu plan. Un plan de vida debería tocar todos los aspectos de tu vida incluyendo ﬁnanzas, salud, relaciones, carrera, espiritual y recreativo. Mientras que nuestro mayor foco tiende a ser lo económico aumentar ingresos o saldar deudas, o la salud perder peso o dejar de fumar, la innegable verdad es que una vida desequilibrada no es una vida de calidad. Si tenías pensado construir una nueva casa o esa idea de un dormitorio principal, no empezarías la construcción sin antes tener un plano completo de la casa .Cuando te planteas resoluciones y goles de la misma manera, tendrás muchas más probabilidades de alcanzar

el éxito. Asi que cualesquieran que sean tus planes y aspiraciones para el año que viene se positivo. Arregla ese problema médico que te ha estado incordiando, pon tus ﬁnanzas en su sitio y consigue control sobre tu vida. Si hay algún deporte o hobby que quieras empezar hazlo no lo pospongas más. Ve y echa un golf, si montas visita los establos y planea algunos momentos para cabalgar por la bonita estepa Andaluza y disfruta del escenario que la madre naturaleza nos ha dado a todos. Y ﬁnalmente, entre todos los sueños e ideas para el año que viene asegúrate de encontrar tiempo para ti! Cambia de peinado, mímate con una manicura o masaje o simplemente quédate en la cama el domingo por la mañana. Recuerda es tu sola y única vida y no un ensayo. OCIO favourites Kitchen by Nigella Lawson About the book: Each recipe (and there is an awful lot of them!) is well laid out and described and there are a wonderful range of complex and very simple recipes for easy cooking as well as some excellent ideas for easy entertaining. I think what really marks Nigella’s books overall as different from other cooking books, is that she is a self proclaimed cook, not a chef and she positively encourages her readers to enjoy and experiment in the kitchen. This is a great book and excellent value for money! In Our Opinion: This really is a wonderful book - an autobiography through cooking! I really enjoy the introductions she gives to each section and recipe, it’s hard not to feel inspired to cook (and enjoy it) when her enthusiasm radiates from each recipe! Rating: If you love to cook at home this book is a must. Truly fantastic. Where to buy: Bookworld Stores.

En Nuestra Opinión: Es un libro realmente maravilloso – ¡una autobiografía a través de la cocina! Realmente disfruto de las introducciones que le da a cada sección y receta; ¡es difícil no sentir inspiración para empezar cocinar (y disfrutar con ello) cuando su entusiasmo irradia de cada receta! Noah Barleywater Runs Away by John Boyne About the book: 8-year-old Noah Barleywater, an innocent and determined young boy, runs away from home because he wants to experience the world and have adventures. At ﬁrst I thought this was the whole point of the story, and I wasn’t expecting the journey I was taken on, or the conclusion Noah’s tale reached. On his travels through the villages, he meets talking animals, a beautiful tree and an enigmatic old man who lives in an amazing toy shop. During his day with the old man, Noah learns some valuable life lessons, and gains a new friend in the process. In Our Opinion: Reading Noah Barleywater Runs Away is an unusual experience. Quite unlike anything else I’ve read, it’s a work of art. Part coming-of-age story and part fable. Beautiful. Rating: Noah Barleywater Runs Away is a modern children’s classic in the making. En su día con el anciano, Noah aprende valiosas lecciones sobre la vida, y se gana un nuevo amigo en el proceso. Nuestra opinión: Es una experiencia rara leer Noah Barleywater Huye. A diferencia de otros que he leído, es una obra de arte. Es en parte una historia de madurez, y en parte una fábula. Valuación: Noah Barleywater Huye es un clásico moderno. Precioso. 5 top tips for a fabulous family skiing trip T

aking a ski trip takes on a whole new dimension as soon as you start skiing with children but with these simple tips, you can easily enjoy a fun, stress-free family trip to the slopes. The ﬁrst tip is to compromise your expectations and the reality of skiing with children, and perhaps this is the hardest to do if you’re a keen skier yourself. It is probably the most important thing you can do to help your family ski holidays run smoothly. Accept that you will have to make a compromise between skiing with your children on the beginner’s slopes versus your own wish to ski more challenging runs at your own pace. However, with a little careful planning it is possible to do both during the course of your trip. The second tip is to have a plentiful supply of patience. There will be times when your children decide to be unreasonable or are just simply tired after skiing for the 30 OCIO magazine

day. Or times when despite your best efforts, you discover that someone has mislaid an essential piece of ski gear. These challenges are minor in the wider scheme of things, so relax and go with the ﬂow. Sibling rivalries don’t magically disappear during a family ski trip, but they do seem to be easily diverted by skiing. The third tip is to get organised. Getting everyone’s ski gear ready the night before will make the process of getting ready the following morning so much easier. Dry any damp clothes or ski boots overnight and make sure that your children know where to ﬁnd their things. If your children are taking ski lessons, be ready to go skiing yourself just as soon as you’ve taken them to the lesson. A coffee break before you’ve even started skiing may be tempting, but you can ski at your own pace whilst your children are taking their lesson, so it makes sense to make the most of this time. Always book your children’s ski lessons

before you arrive at your ski destination to avoid disappointment. The fourth tip is to ski according to ability when out as a family. If your children are of different ages and abilities, split into two groups and choose a ski lift that either leads to a couple of different runs or has a run that everyone can ski at a different pace. Maybe the more advanced skiers will ski a run twice in the time it takes the beginners, but don’t worry. Everyone will enjoy trying to spot the others, or catch up with them. You can ride up the ski lift together and really feel as if you’re having fun as a family. Finally, the fifth and final tip is to head home at the end of the skiing day before the youngest member of the family gets tired. It is always best to end the day after a good run, with the children wanting to carry on skiing, before tiredness takes hold. Eight Weeks to Super Fitness F

irst, an admission. I like exercise. I am not one of those determined looking creatures you see running at 10pm on a Monday night, but I know I could be. The potential to be a weirdo about exercise is there. I’m fascinated by actor’s accounts of pre-movie body-sculpting tales, of 5am starts, two hour cardio sessions followed by an hour of weight training and brutal diets. I’m even a little jealous.�You see, no one forces you to exercise as an adult, there’s no break for games on a Tuesday afternoon or compulsory bleep tests every new quarter. And even if you’re a workout queen, it’s unlikely you’re burning up the calories of a pre-Iron Man Gwyneth Paltrow or a pre-comeback Elle Macpherson. Why, because we don’t push ourselves, and why, because, well, pushing ourselves hurts. There’s cramp and lactic acid and sweat in bucket loads and the feeling you might throw up (or 40 OCIO magazine

actually throwing up). I work out five times a week ( running, training, pilates etc), so don’t mind looking strong rather than fragile and waif-like (not that I have much choice, it seems that I am predetermined to muscle and you can only do so much against what mother nature intended). Poring, dubiously, over an online video detailing actress Jessica Biel’s punishing exercise regime, I wonder what it would be like to work out nine or 10 hours a week. Is this, actually, the bare minimum that we should be doing to achieve a truly great body? And, if so, can you exercise like a fiend and still be a normal human being? I endeavour to find out. I sign myself over to personal trainer and bionic man Adrian Johnson for an hour and a half, six days a week, for eight weeks. Adrian, a short, tanned, hard-boddied, super-fit fortysomething, is a one-time trainer to Hollywood

superstars such as Madonna, Matthew McConaughey and Gwyneth Paltrow and the only person in Britain trained in Tracy Anderson’s method (a complex series of Pilates based moves combined with cardio). His double pronged attack on the body focuses particularly on the smaller, structual muscles. ‘It means you don’t bulk, or over-train the big muscle groups,’ Adrian Says, ‘and the smaller muscles are the ones that pull your body in, to create the lean look.’ My ﬁrst session in his basement gym in Marbella does not start well. I’ve forgotten my leggings. This I am certain does not happen to Madonna. In the La Cañada Centre shopping for workout clothing, Adrian asks me about my workout routine. When I boast of having run a marathon he doesn’t seem overly impressed, and when we head back to his the gym and begin training, I understand why! n

Incluso me siento un poco celosa . O sea como adulto nadie puede obligarte a hacer ejercicio, no hay la pausa para los partidos el martes tarde o los obligatorios examenes cada nuevo trimestre. Y aun siendo la reina del entrenamiento, es muy improbable que quemes las calorias de una Gwyneth Paltrow o Elle Macpherson. Porque no nos empujamos al limite, porque hacerlo duele. Hay calambres y acido láctico y cubos de sudor y la sensación que vas a vomitar (o igual haciendolo). Me entreno cinco

veces a la semana (corro,entreno,pilates etc), asi que no me importa estar mas bien musculosa que fragil y dejada (no es que tenga mucha elección, pues tengo la musculación predispuesta y no se gana contra lo que dios te ha dado). Mirando, dudosamente un video en el internet que detalla el castigoso regimen de ejercicio de la actriz Jessica Biel, me pregunto como sería entrenar 9 o 10 horas a la semana. Es esto el minimo real que deberiamos hacer para conseguir un cuerpo fantastico? Y si asi es puedes entrenarte como un demonio y seguir siendo una persona normal? No puedo esperar a averiguarlo. Me he inscrito con el entrenador personal aparte de hombre bionico Adrian Johnson, hora y media, seis dias a la semana, por un periodo de ocho semanas.Adrian ,tiene la cuarentena bajo de talla, bronceado, cuerpo duro super en forma, a sido entrenador en Hollywood de gente como

l aspecto más importante que hay que tener en cuenta al hacerse un cambio de look es ser ﬁel a tu propio estilo, asegurándote de elegir un estilo, corte o color que sea adecuado para la forma de tu cara y cuerpo. Siguiendo unas sencillas reglas, tu nuevo estilo hará que se vuelvan las miradas a tu paso. Cara redondeada. Los cortes con ángulos son tu mejor apuesta, ya que contrarrestan la redondez de tu cara. Cortes hasta la barbilla o más largos son la mejor opción, con capas más largas por detrás. Evita alisar el cabello a los lados de la cara – un poco de volumen en la parte de arriba y ondulación por todo el cabello hará que tu cara parezca más delgada y más bonita. Cara con forma de corazón. Al tener la cara más ancha en la parte superior, es mejor mantener el pelo sin volumen por arriba, dándole más relleno por la zona de la mandíbula. Hazte un corte hasta la barbilla con muchas capas en las puntas o péinalas hacia fuera; esto le dará a tu pelo más anchura. O, si preﬁeres el pelo más largo, empieza las capas más largas a la altura de la barbilla, para darle al pelo más cuerpo en la mitad inferior. Mandíbula cuadrada. By followng a few simple rules your new style will have heads turning in your direction. Round face. Cuts that have angles are your best bet. Angular cuts offset the roundness of your face. Chin-length or longer cuts are best, with longer layers in the back. Avoid straightening your hair against the sides of your face – a little height on the top and wave throughout will make your face look slimmer and prettiest. Heart-shaped face. Since you have more width at the top of your head, it’s best to concentrate on keeping your hair ﬂat on top, with more fullness around the jawline. Get a chin-length cut that has many layers at the ends or ﬂip the ends out; this will give your hair more width. Or, if you prefer long hair, start long layers at your chin to give hair more body on the lower half. Si quieres marcar los rizos naturales, déjalo de media melena a largo para dar un efecto más atractivo. Pelo liso. La mayoría de la gente no tiene el pelo liso natural. Siempre se suele tener

un poco de ondulación. Dale un poco de forma a las ondas o bien péinalo liso con secador. Pelo grueso. Todo el mundo envidia el pelo grueso, pero si es demasiado grueso para tu cara, pídele a tu estilista que le quite un poco de volumen para así darle forma. Evita el estilo corto o con media melena, llévalo al menos hasta los hombros con capas. Pelo ﬁno. El pelo ﬁno es estupendo porque es fácil de peinar, pero puede perder a menudo el volumen después de unas horas, y quedarse caído y sin vida. Utiliza productos que den mucho volumen y sécalo con secador desde la raíz, dejando las puntas secar al aire. Siendo los rizos tan populares, no temas probar con una permanente – son ideales para tu tipo de pelo. n

If you’re enhancing natural wave, keep it mid-length to long for the most attractive effect. Straight hair. Most people don’t have

Everyone envies thick hair, but if it’s too dense for your face, ask your stylist to use texturizing sheers or razors to take off some of the weight and help your hair keep its shape. Avoid short cuts or bobs. Instead, wear hair at least shoulder length with layers. Fine hair. Fine hair is great because it’s quick to style, but can often lose any body within hours, and look limp and lifeless. Use high-volume styling products and blow-dry your hair at the root, letting it dry naturally at the ends. Coffee Culture

odern coffee houses are quite a contrast to what Spanish coffee houses used to be like in the late 19th century. Back then, coffee houses were the places where intellectuals, artists, poets, writers and philosophers alike, gathered. The surroundings bristled with good taste and luxurious ﬁxtures. Then, as it still is now, cafés were places to see and be seen, although the atmosphere was more restrained, less casual and more akin to that of a ﬁne dining restaurant. Customers were served by elegant waiters dressed in black tie. Now though, even if a person visited a café alone, it would be impossible to feel lonely. Spanish cafés are boisterous, proving to be a lively backdrop to any conversation, providing a near constant stream of hissing and banging as coffee grounds are thumped out of their containers to be discarded after each cup is brewed. One of the most popular drinks at breakfast, or at any other hour in Spain is 54 OCIO magazine

Because coffee and conversation go hand in hand it is not surprising that coffee bars are the social centres of most villages, towns and cities throughout Spain café con leche. The beverage is served by simultaneously pouring hot, dark coffee and steaming hot milk into a cup. The preparation of the drink can be a source of anxiety for the uninitiated, seeing as how both liquids are carried to the table in giant pots balanced on the same tray. Where the weather is colder, locals prefer a carajillo to get their day started. Self-proclaimed pundits hold that coffee is second only to drinks that contain alcohol as the most popular beverage in the country. Coffee is also a mainstay during the mid morning/early afternoon break known as merienda, where café solo is a ﬁrm favourite for many. Generally, each meal is accompanied or ended with coffee, and of course, it’s needed to get started again after that 2 hour siesta. It’s also an apt way to end a day, especially after a particularly

long and gruelling tapas bar crawl. At the end of a long day, a carajillo comes in handy to revive the spirits. Hardly anyone gets their coffee “to go”; having a coffee is an end in itself. The emphasis is on creating close social bonds, and a café is often the social hub of any given neighbourhood. In Spain, a café isn’t just a convenient rest stop where one orders a coffee and pastry for the simple purpose of refuelling. It’s also a place to watch passers-by, read a newspaper, think, or even make a phone call. Given that many of the cafés also serve decent food, although menu choices may be limited, it is incredibly easy to while away a few leisurely hours just dawdling over coffee like the locals do. Why else would pastries accompany the coffee if not to give a person a reason to linger a little while longer? n

Las cafeterías españolas son bulliciosas, que acaban siendo un animado telón de fondo para cualquier conversación, proporcionando un constante flujo de siseos y golpes a medida que sacan los granos de café de la maquina de café para deshacerse de ellos después de elaborar cada taza. También es una manera acertada para acabar el día, especialmente después de una larga y agotadora rondas de tapas. Al ﬁnal de un día largo, un carajillo viene bien para subir el ánimo. En España una cafetería no es solamente un lugar de descanso oportuno donde uno pide un café y un bollo por el simple motivo de reponer fuerzas. Es también un sitio donde ver pasar a gente, leer el periódico, pensar o hasta incluso llamar por teléfono. When butter and oil are sizzling, add one-sixth of meat and cook for 6 minutes or until well browned on all sides. Transfer to a large plate. Repeat with remaining meat, adding more butter and oil as required. 2. Add mushrooms to casserole and cook, stirring often, until golden. Transfer to a plate and set aside until required. Add bacon, shallots and carrot to casserole. Cook, stirring occasionally, for 5 minutes or until golden. Drain away any remaining oil. Pour wine and consomme into casserole. Bring to the boil, stirring with a wooden spoon to loosen sediment on base of casserole. Return beef to casserole with bouquet garni. Cover and place in oven. 3. Cook for 45 minutes. Remove from oven and add mushrooms. Return to oven, covered, for 20 minutes. Remove bouquet garni and season with salt and pepper. Spoon casserole onto plates, garnish with parsley and serve.

1.2kg chuletón de aguja, quitado la grasa, cortado en cubos de 4cm 1/4 taza de harina 20g de mantequilla 2 cucharadas de aceite de oliva 150g champiñones comunes pequeños 200g bacon, cortado en cubos de 3cm 12 cebolletas 1 zanahoria grande, limpiada y cortada en cubos 1 copa de vino rojo (como shiraz o cabernet sauvignon) 1 1/2 tazas de caldo de ternera 1 ramillete de hierbas perejil, triturado para servir

1. Precalentar el horno a 200°C. Enharinar ligeramente la carne. Calentar una cacerola grande apta para hornos a fuego medio-alto. Añadir 10 gramos de mantequilla y 2 cucharillas de aceite. Cuando la mantequilla y el aceite empiecen a burbujear, añadir un sexto de carne y cocinar durante 6 minutos o hasta que se dore por todos lados. Pasar a un plato grande. Repetir con el resto de la carne, añadiendo más mantequilla y aceite según se necesite. 2. Añadir champiñones a la cacerola y cocinar hasta que se doren, removiendo a menudo. Pasar a un plato y dejar a un lado hasta que se necesite. Añadir bacon, cebolletas y zanahoria a la cacerola. Cocinar, removiendo ocasionalmente, durante 5 minutos o hasta que se doren. Escurrir el aceite. Echar vino y caldo a la cacerola. Poner a hervir, removiendo el sedimento del fondo de la cacerola con una cuchara de madera. Devolver la ternera a la cacerola con el ramillete de hierbas. Cubrir y meter en el horno. 3. Cocinar durante 45 minutos. Sacar del horno y añadir los champiñones. Devolver al horno, cubierto, durante 20 minutos. Quitar el ramillete de hierbas y salpimentar. Verter la cazuela en los platos, poner perejil y servir.
